Christmas Dinner Countdown Early December
❑ Plan the menu (number of appetizers and side dishes). Keep a running list on your refrigerator so you can add or delete items. ❑ Order fresh turkey. If you're buying a frozen turkey, you still have time, but don't wait until the last minute.
Morning of Dinner
❑ Prepare vegetables for side dishes. Clean, peel and cover with water in a pot or cooking dish. Store in fridge or place on stove so they are ready to go. ❑ Chill wine or other beverages in fridge or outside on porch. ❑ Check your running list to make sure you haven't forgotten any dishes.
5 Hours Before
❑ Prepare stuffing, stuff turkey, put into oven and roast. For a 14-18 lb. turkey, roast 4-4½ hours at 325°F.
2 Hours Before
❑ Set out dishes of nuts or munch mix. ❑ Set up coffee pot. ❑ Serve appetizers and beverages as guests arrive.
4 Days Before
❑ Start defrosting frozen turkey in refrigerator. (If turkey is still frozen when you are ready to use it run it under cold water.) ❑ Make a shopping list and purchase non-perishables.
2 Days Before
❑ Buy fresh produce for side dishes. ❑ Make cranberry sauce; a couple of days in the refrigerator will give the flavors time to develop.
1 - 1½ Hours Before
❑ Start cooking vegetables. ❑ Check temperature of turkey at the thigh (the thickest part). If the temperature is 180°F and the juices run clear, the turkey is ready to eat
1/2 Hour Before
❑ Take turkey out of oven and tent with foil for 20 minutes. Carve turkey. Prepare gravy.
Day Before
❑ Set adults' and kids' tables. Assemble serving utensils, dishes and platters. ❑ Pick up fresh turkey.
Dinnertime
❑ Put food in serving dishes and take to table. ❑ Turn on coffee pot, light candles, call guests to table and enjoy dinner!

Buying a Cut Tree D
etermine the size and type of tree you want before going shopping. Also know where in the house it will stand. If it's to be placed in a corner, for example, it need not be perfectly shaped all around. Measure the height of the room and remember to allow for the height of the tree stand.
Types Of Trees There are many types of evergreens sold in the United States for use as Christmas Trees. The most popular are the Douglas Fir, Balsam Fir and Scotch Pine. The firs are the most fragrant.
The Fresh Test To test for freshness, bounce the tree: If it's fresh, only a few needles will fall. (Don't try this with spruce, which normally doesn't retain needles well.) Pull at the needles at the top of a branch: If they pull off easily, the tree is already dry and won't last long in a heated room. Needles should offer resistance to pulling and be resilient if bent. Inquire whether the tree has been dyed to look fresher than it is. Check for yourself by looking at the underside of the needles — if it has been dyed you will see a difference in color.
Putting The Tree Up Until you are ready to put the tree up, keep it outdoors in a cool shaded spot sheltered from wind or indoors in an unheated room. When you are ready to put it up, saw one inch off the bottom of the trunk, preferably on a slant. Place fresh boiling water in the tree stand (one with a generous reservoir) to melt the sap; and replenish as the level goes down. Never let the water go below the bottom of the trunk. Avoid placing the tree near anything that gives off heat, like a fireplace or a television.

Standing Rib Roast With Two Sauces This delicious alternative to the traditional holiday turkey will lend a festive air to your Christmas dinner. 1 (5 lb.) beef rib eye roast 2 or 3 ribs 2 tsp. whole black peppercorns, cracked 4 tsp. fresh thyme leaves, divided 1 c. sour cream 1/4 cup prepared horseradish 1 tsp. sugar 1 T. butter 1 sweet onion, very thinly sliced 1(8 oz.) pkg. sliced fresh mushrooms 1 T. flour 1 cup fat-free, reducedsodium beef broth 1 T. dijon mustard
Heat oven to 350°F. Place meat, fat-side up, in roasting pan. Press peppercorns and 2 tsp. thyme onto surface of meat. Bake 2 - 2¼ hours or until 135°F. Insert probe of instant-read thermometer 2 - 2½" into thickest part of meat to check for doneness. Remove meat from oven. Cover meat with foil; let stand 15 to 20 min. or until medium-rare doneness (145°F). Meanwhile, prepare sauces. Slice meat. Serve with sauces.

These fun-to-make cookies take their inspiration from colorful pieced quilts like the ones Grandmother made and treasured.
Patterns in Paint To make quilt-pattern cookies, roll Sugar Cookie Cutouts dough 1/4" thick. Cut into squares and place them about 1" apart on a cookie sheet. For a pattern, refer to the cookie pictured at right, look for an idea in a quilting book, or design your own quilt block based on a 2½" to 4" square. Remember that straight lines are the easiest to score, using a ruler as a guide, if necessary. You can make larger squares if you wish, but the 2½" to 4" sizes are easier to handle. Use a wooden skewer to score the pattern lines. Paint the cookie quilt block with egg paint using a small art brush and three or four colors of Egg Paint. To create "calico" pieces such as the one in the center of the cookie above, incise a design with the point of a skewer before painting. The design will remain cookie colored and show clearly after baking. When the cookies are baked, the egg mixture becomes shiny and the scored lines separate slightly, resembling the seams of a pieced quilt. After baking be sure to let the cookies cool in the cookie sheet for two minutes so they won't break when removed to a wire rack.
Sugar Cookie Cutouts 1/3 cup margarine or butter 1/3 cup shortening 2 cups all-purpose flour 3/4 cup sugar 1 egg 1 T. milk 1 tsp. baking powder 1 tsp. vanilla Beat margarine and shortening with electric mixer about 30 seconds or till softened. Add about half the flour. Add sugar, egg, milk, baking powder, vanilla, and dash salt. Beat till combined. Beat or stir in remaining flour. Divide dough in half. Cover and chill about 3 hours or till easy to handle.
For cutouts, roll each half of dough on lightly floured surface to 1/8to 1/4" thickness. Using desired cookie cutters, cut dough into shapes. Place 1 inch apart on an ungreased cookie sheet. Bake in 375° oven 7 to 8 minutes or till done. For pressed cookies, form into 1- to 1¼" balls. Flatten slightly; place 2" apart on ungreased cookie sheet. Press with desired tool. Bake in 350° oven about 15 minutes or till done. Cool cutout or pressed cookies on cookie sheet 1 minute. Remove cookies from sheet; cool on wire rack. Makes 36 to 42.
Egg Paint
Paint the cookie quilt block with egg paint using a small art brush and three or four colors of Egg Paint.
Beat together 1 egg yolk and 1 tsp. water in small bowl. Divide mixture among 3 or 4 small bowls. Add 2 or 3 drops of a different food coloring to each bowl; mix well. Paint on unbaked cookies with small, clean paintbrush. If col-
ored mixtures thicken while standing, stir in water 1 drop at a time. One egg yolk makes enough paint for 24 to 30 cookies. Cover egg mixture with plastic wrap between batches of cookies.

Holiday Appetizers ~ To Warm Up A Crowd ~
SEPARATE 2 lbs. chicken wings at joints and discard tips
MIX 1 lb. ground beef with 3 T. barbecue glaze coating mix.
EMPTY 1 pkt. buffalo wing seasoned coating mix into shaker bag. Moisten wings with water and shake off excess.
SHAPE into medium-size meatballs. Shake meatballs in remaining coating mix. Place in foil-lined baking pan and sprinkle with any remaining mix.
SHAKE 3-4 pieces at a time. Place on a foil-lined cookie sheet. Sprinkle remaining coating mix evenly over wings. Bake at 350˚F for 40-45 min.
BAKE at 350˚F for 15 min.

Cherries And Chocolate Fudge 1 (14 oz.) can sweetened condensed milk 1 (12 oz.) pkg. semisweet chocolate chips 1/2 cup chopped almonds
1/2 cup chopped candied cherries 1 tsp. almond extract 1/4 cup pecan halves 1/4 cup candied cherries, halved
Line an 8 x 8 inch square pan with aluminum foil. In a microwave-safe bowl combine sweetened condensed milk and chocolate chips; microwave on high for 1½ minutes, or until chocolate is melted. Stir until smooth. Stir in chopped almonds, chopped cherries and almond extract. Pour into prepared pan and spread evenly. Place pecan halves and cherry halves on top. Cover and refrigerate for 2 hours, or until firm. Cut into 1 inch squares. Store, covered, in refrigerator.

1 tsp. shortening 1 cup semisweet chocolate chips
Preheat oven to 300°F. Cover cookies sheet with aluminum foil, shiny side exposed. Lightly grease foil with vegetable oil spray. Place 3 pecan halves in a Y shape on the foil. Place 1 caramel candy in the center of each Y. Bake just until caramel is melted, about 9 to 10 minutes. Heat shortening and chocolate chips over low heat just until chocolate is melted. Spread over candies and refrigerate for 30 minutes.

Did a celebration around a Christmas tree on a bitter cold Christmas Eve at Trenton, New Jersey, turn the tide for Colonial forces in 1776? According to legend, Hessian mercenaries were so reminded of home by a candlelit evergreen tree that they abandoned their guardposts to eat, drink and be merry. Washington attacked that night and defeated them. The Christmas tree has gone through a long process of development rich in many legends. Some historians trace the lighted Christmas tree to Martin Luther. He attached lighted candles to a small evergreen tree, trying to simulate the reflections of the starlit heaven — the heaven that looked down over Bethlehem on the first Christmas Eve. Until about 1700, the use of Christmas trees appears to have been confined to the Rhine River District. From 1700 on, when lights were ac-
cepted as part of the decorations, the Christmas tree was well on its way to becoming a tradition in Germany. Then the tradition crossed the Atlantic with the Hessian soldiers. Some people trace the origin of the Christmas tree to an earlier period. Even before the Christian era, trees and boughs were used for ceremonials. Egyptians, in celebrating the winter solstice — the shortest day of the year — brought green date palms into their homes as a symbol of “life triumphant over death”. When the Romans observed the feast of saturn, part of the ceremony was the raising of an evergreen bough. The early Scandinavians were said to have paid homage to the fir tree. To the Druids, sprigs of evergreen holly in the house meant eternal life; while to the Norsemen, they symbolized the revival of the sun god Balder. To those inclined toward superstition,

branches of evergreens placed over the door kept out witches, ghosts, evil spirits and the like. Trees and branches can be made purposeful as well as symbolic. The Christmas tree is a symbol of a living Christmas spirit and brings into our lives a pleasant aroma of the forest. The fact that balsam fir twigs, more than any other evergreen twigs, resemble crosses may have had much to do with the early popularity of balsam fir used as Christmas trees.

• 4 T. (1/2 stick) unsalted butter • 1 (10 oz.) bag marshmallows • 1/2 cup light brown sugar • 12 cups popped popcorn • Optional decorations: candy canes, candy spearmint leaves and assorted gumdrops
In a large, heavy pot, melt the butter over low heat. Add the marshmallows and brown sugar and stir until melted. Remove from heat. Place the corn in a large bowl and pour on the marshmallow mixture; toss well. Butter your hands and shape the corn into balls of whatever size you desire. Decorate with optional candy pieces. Set on wax paper to dry.

Unique and Festive Brooch
Vintage Bakelite buckles are often found at flea markets. They can be combined with old buttons in coordinated colors and shapes to make nostalgic-looking brooches to wear on a jacket lapel or at the collar of a high-necked blouse. You'll need two buttons per buckle, one big enough to cover the buckle's holes but smaller than the buckle itself. Glue that button on top of the buckle and glue a smaller button on top of that. 3 cups pecan halves 1½ cups granulated sugar 1 T. ground cinnamon ¼ tsp. ground cloves ¼ tsp. allspice ¼ tsp. ground nutmeg 1 T. vanilla ½ cup water

Great Edible Holiday Decoration & Gift Ideas
Sometimes the best presents and d the h most treasured d ornaments aren’t the ones that last a lifetime — they’re the ones that you can eat! But don’t just bake the same old boring treats for friends and family. This season, give your holiday treats, eats, gifts and décor a colorful twist using richly hued sprinkles, frosting and icing. “I love working with sprinkles because they’re not only delicious, they’re so visual too. Of course you can scatter them over cakes, but you can also swirl them into waffles, ‘embroider’ them on cookies or do any number of creative things with them that look great for the holidays,” says Jackie Alpers, a photographer and author of the new cookbook “Sprinkles! Recipes and Ideas for Rainbowlicious Desserts.” For a beautiful and delicious batch of edible ornaments you can hang on your tree or use to adorn your home, follow this recipe from Alpers for Windowpane Cookies:
Ingredients 1½ cups all-purpose flour 1/2 teaspoon baking powder 1/4 teaspoon salt 1 stick unsalted butter, softened 3/4 cup plus 2 tablespoons sugar
1 egg at room temperature, beaten 1 teaspoon pure vanilla extract
Approximately 1/2 cup various sanding sugars, sorted by color. (Clear hard candies, like Jolly Ranchers can be used instead. Just sort by color into plastic bags, seal and use a hammer to crush the candies into bits.)
Directions
Sift together flour, baking powder and salt. In another bowl, cream butter and sugar with an electric mixer on medium, until light and fluffy. Beat in egg and vanilla. Mix in flour mixture until dough is smooth and firm. Divide dough in half and shape into two 1/2-inchthick disks. Cover them in plastic wrap and refrigerate for 2 hours. Preheat oven to 350 degrees F. Line baking sheets with parchment paper. On a lightly floured work surface, roll dough to a thickness of 1/4 inch. Cut out shapes using a larger cookie cutter and then use smaller cutters to remove “windows” from those shapes. Arrange cookies about 1 inch apart on prepared baking sheets. • Fill cookie windows with sanding sugars or crushed candy pieces.
Bake for 8 to 10 minutes, or until edges start to turn golden, rotating sheets halfway through baking time. Place sheets on wire racks to cool for a few minutes before gently removing cookies with a metal spatula. Let cookies cool completely on wire racks. Store between layers of wax paper to prevent sticking in an airtight container for up to one week. To turn the cookies into
holiday ornaments, use a bamboo skewer or chopstick to poke a hole about 3/4 inch from the top of each cookie before baking. Once baked cookies have cooled, thread 10 inches of ribbon or colorful bakers’ twine through each hole and tie in a bow. Bacon-Wrapped Pork Tenderloin Serve this classy main dish for holiday entertaining with flair. Your guests will be delighted! 5 slices bacon 1 (1 lb.) pork tenderloin 1/4 tsp. cracked black pepper
1/4 cup packed brown sugar 2 T. apple juice 1 tsp. dijon mustard Dash ground nutmeg
Heat oven to 400°F. Wrap bacon around meat. Place in foil-lined pan sprayed with cooking spray; sprinkle with pepper. Bake 20 min. or until internal temperature reaches 135°F when tested in center with meat thermometer. Meanwhile, bring remaining ingredients to boil in saucepan on medium heat, stirring occasionally. Remove from heat. Brush meat with glaze. Bake 10 min. or until done (145°F); cover loosely with foil. Let stand 5 min. before slicing.

HOLIDAY HAPPY S FRO M PRAIRIE FARMS
Coffee Cake INGREDIENTS Batter: 1½ c. sugar 2 c. Prairie Farms milk 3 c. flour Pinch of salt 4 tsp. baking powder 1/2 c. shortening 2 eggs, beaten
DIRECTIONS Pour batter onto a cookie sheet and top with filling.
Filling 1 stick Prairie Farms butter 1 c. brown sugar 4 T. water 3 tsp. cinnamon 4 T. flour
Glaze: Melt 1/2 stick butter and 5 T. cream. Add maple flavoring, salt and 2½ cups powdered sugar.
Filling: Boil filling together until thick and put on top of dough. Add nuts if you wish. Bake at 350°F for 20 minutes.

Lemon Shortbread Ingredients 1¼ cups flour 3 T. sugar 1 T. poppy seeds 1/2 cup butter 1 tsp. finely shredded lemon peel Lemon Glaze Directions Combine flour, sugar, and poppy seeds in a bowl. Cut in butter till mixture resembles fine crumbs and starts to cling. Stir in lemon peel. Form mixture into a ball and knead till smooth. Pat or roll dough on a lightly
floured surface to 1/2-inch thickness. Cut using a 2-inch scalloped cutter. Place cookies 1 inch apart on ungreased cookie sheet. Bake in a 325° oven for 20 to 25 minutes or till bottoms just start to brown. Cool on wire rack. Brush cooled cookies with lemon glaze: Lemon Glaze: In a small bowl combine 1 cup sifted powdered sugar, 1 tsp. lemon juice, and enough milk (about 1½ T.) to make of glazing consistency. Makes 16.
Spiced Shortbread Ingredients 1¼ cups flour 3 T. brown sugar 1/2 tsp. ground cinnamon 1/4 tsp. ground ginger 1/8 tsp. ground cloves 1/2 cup butter Sifted powdered sugar Directions Combine the flour, brown sugar, cinnamon, ginger, and cloves in a mixing bowl. Cut in butter till the mixture resembles fine crumbs and starts to cling. Form the mixture into a ball and knead till smooth. Pat or roll dough
into an 8-inch circle on an ungreased cookie sheet. With your fingers, press to make a scalloped edge. Using a knife, cut circle into 16 pie-shape wedges but do not separate. Bake in a 325° oven for 25 to 30 minutes or till bottom just starts to brown and center is set. Cut circle into wedges again while warm. Cool on cookie sheet for 5 minutes. Remove from cookie sheet; cool on wire rack. Sprinkle cooled cookies with sifted powdered sugar, if desired. Makes 16.

Pecan Shortbread Ingredients 1¼ cups flour 3 T. brown sugar 1/2 cup butter 2 T. finely chopped pecans 1/2 tsp. vanilla Melted chocolate Directions Combine flour and brown sugar in a bowl. Cut in butter till mixture resembles fine crumbs and starts to cling. Stir in pecans. Sprinkle with
vanilla. Form mixture into a ball; knead till smooth. Pat or roll dough on a lightly floured surface to 1/2 inch thickness. Cut into 2x3/4 inch strips. Place 1 inch apart on an ungreased cookie sheet. Bake in a 325° oven for 20 to 25 minutes or till bottoms just start to brown. Cool on a wire rack. If desired, dip one end of each cooled cookie in melted chocolate. Makes 24.
Irish Cream Brownies Ingredients 1¼ cups sugar 3/4 cup margarine or butter 1/2 cup unsweetened cocoa powder 2 eggs 1 tsp. vanilla 1½ cups all-purpose flour 1 tsp. baking powder 1/4 tsp. baking soda 1 cup milk 1 cup chopped walnuts or pecans 1/4 cup Irish cream liqueur or créme de cacao Liqueur Glaze Directions Heat sugar, margarine or butter and cocoa powder in large saucepan over medium heat till margarine melts, stirring constantly. Remove from heat. Add eggs and vanilla; beat lightly just till combined. Combine flour,
baking powder and baking soda. Add flour mixture and milk alternately to chocolate mixture, beating by hand after each addition. Stir in nuts. Pour into greased 15x10x1" baking pan. Bake in 350° oven 15 to 20 minutes or till toothpick inserted near center comes out clean. Place pan on wire rack. While brownies are still hot, use pastry brush to brush liqueur evenly over top of brownies. Cool completely. Spread with Liqueur Glaze. Makes 36. Liqueur Glaze: In mixing bowl combine 2½ cups sifted powdered sugar, 2 T. cocoa powder and 1/4 tsp. vanilla. Stir in 1 T. Irish cream liqueur or créme de cacao. Stir in 3 to 4 T. milk, 1 tsp. at a time, till of drizzling consistency.

Krumkake
1 cup butter, softened 1 cup sugar 4 eggs 1 tsp. rum extract
1 cup all-purpose flour 1 cup potato flour 1/2 cup light cream
BEAT butter and sugar till light. Add eggs and rum extract; beat well. Add flour, potato flour, and cream; mix well. PLACE 1 to 2 T. of batter in preheated krumkake iron. Cook about 1 minute or till lightly browned, turning iron once. Remove from iron; immediately roll into cigar or cone shape. Cool. If desired, just before serving, fill cones with whipped cream. Makes 32 to 48.
Swedish Drommar 1 cup butter 1/2 cup sugar 2 cups all-purpose flour
1 tsp. pulverized baling ammonia or 1/2 tsp. cream of tartar and 1/2 tsp. baking soda
BEAT the butter for 30 seconds. Add sugar and beat till fluffy. Combine flour and baking ammonia or cream of tartar and soda. Add dry ingredients to butter mixture and beat till well combined. SHAPE the dough into 3/4-inch balls; place on ungreased cookie sheets. Using your finger, press lightly in centers of the cookie. Bake in a 375˚ oven for 7 to 9 minutes or till done. If you use baking ammonia, open oven door carefully to avoid. Makes 80 to 90.

9 navel oranges 2 cans (20 oz. ea.) pineapple chunks, drained 1 cup honey 1 cup sweetened flaked coconut 1 to 2 tsp. almond extract Garnish: stemmed maraschino cherries The key to a tasty ambrosia is to completely remove the pith from the orange sections. The bitter-tasting pith is the white part of the orange between the peel and the fruit. Learning to section an orange will also give you a prettier salad. To section an orange: first peel it with a paring knife and be sure to remove the white pith. Second, while holding the fruit over a bowl to catch juices, slice between the membrane and one orange segment, then lift the segment out with the knife blade.
