mayor.) and currency. Really the only other place we revisit and venerate anybody outside of a church is in our sports cathedrals and record books. Curt Schilling was my favorite baseball analyst. Oftentimes he would predict the next pitch, and other times really get you into the mindset of a pitcher. That, however, wasn't enough for him. Somewhere along the way he decided to ridicule transgendered people, and he was fired for that. It doesn't take a brain surgeon to guess that transgendered people were not welcome in the bathrooms of his locker rooms growing up, and while I always espouse the concept of free speech, Schilling's case proves once again that free speech does in fact come with a cost. Schilling had guts when he played, he bled on the mound, but being a baseball analyst simply was not enough for him. Clearly, he was never ready for the bloodthirsty crowd that simply didn't want to hear what he was saying anymore. I hope he gets another shot, but I won't be surprised if he again shoots himself in the foot. For some people, it's never enough.

Blood and Guts Apparently it is now necessary to talk about Curt Schilling. Schilling, as most sports fans remember, was a brilliant pitcher. Without a doubt he belongs in the Major League Hall of Fame. Let me reiterate that: Without a doubt, a Hall of Fame pitcher. Schilling was certainly a guy you wanted on your team, certainly a guy you wanted to take the ball every four or five days. He was a power pitcher and he was a control pitcher, but more than anything he was a gamer. The game I most remember -- and to me, the second greatest exhibition of sport and athleticism -- was the time he had Red Sox doctors staple his foot tendon to the bone so he could beat the Yankees while proceeding to bleed all over the mound that once held Jack Chesbro, Red Ruffing, Whitey Ford, Ron Guidry and Mariano Rivera aloft. Along the way, he served to singlehandedly abolish the ludicrous notion of a "curse" suf-

But times have changed, and maybe we shouldn't be surprised that an athlete like Schilling seems mired in the past. He wouldn't be the first athlete to do so ... that's why they call old memories "glory days." It is very difficult to leave your mark on the world. Nobody knows the name of the architect of the pyramids, for instance, and very few people can name an accomplishment of a politician born just a few decades ago. Many people would be hard pressed to name the presidents carved into Mt. Rushmore, and it'd be otherworldly to find someone who knows who Mr. Rushmore was. speakOUT letters to the editor

I have had it with you people in Washington, Democrats and Republicans alike. Let's be honest for a change. I know it's difficult for you but it is time you woke up and faced the music. The Americans have sent a message and you completely ignore it. Both parties are a bunch of self-serving babies. All you care about is yourselves and saving your party. Well look where that has gotten us in the last twenty-five years or thirty years. We have a deficit of over 19 trillion dollars and climbing every day. We have unfunded liabilities of over 200 trillion dollars, over 94 million citizens who are of employment age do not have jobs, over 100 million are receiving entitlements from the government, over 50 million people are living in poverty and 46 million are on food stamps. Of our citizens who have jobs only 47% of them are full time. There is your report card. All you can think about is yourselves and your party. Well the people have had it with you and they have spoken at the primary polls. It is time you woke up and listened. The country simply cannot take any more of your leadership because you obviously do not

3

The Shoppers Weekly Papers Centralia / Salem Area

have the ability to lead our nation. It is time you got off your high horse and did what is best for the 320 million plus people you were hired to lead. Let's face it, you are for the most part, lawyers and politicians who have miserably failed the American people. You have lied time and time again to them and it finally caught up with you. Lie number one: you report unemployment around 5%. How can you do that? You forgot that once those who are unemployed and their unemployment checks run out, they are no longer included in the rate reported by the Federal Bureau. The more realistic rate is 40%. Lie number two: inflation rate is below 2%. Since when does food and gasoline not count as cost of living? It is not included in the 2% rate. And there are literally thousands of items that companies have lowered the contents of their packaging and left the pricing the same. Here are a few examples: bar of soap used to be flat on all sides now is concave, toothpaste used to be 8.4 oz now is 6 oz, toilet paper is over an inch narrower today and has a larger cardboard core but the prices stayed the same. I call it

inflation by deflation. The list of lies goes on and on but you get the message. The point is when the people no longer believe you it is time to change your ways or else step down. Most of you are owned by big business and you are obligated by taking their bribes to do their bidding. Well for a start, lobbyists and big business donations should be outlawed. There is a lot more that needs to be changed such as big pharma and the FDA in regard to the people's health issues that could not only save lives but would save literally billions of dollars in their medical expenses. Another time on this issue. Larry McCaskey _________________ Send your letters to the editor to: Shopper’s Weekly-Speak Out, P.O. SOUTH CENTRAL TRANSIT RECOGNIZED FOR COMMITMENT AND EXEMPLARY WORK Sheila Niederhofer, Executive Director of South Central Transit, recently received documentation praising them for their commitment, proficiency, budgets, reports, growth and high levels of rider satisfaction. The Illinois Department of Transportation (IDOT) sent a letter commending SCT on their professionalism and adherence to excellence, stating that their ridership has nearly doubled, they have excel-

lent compliance with all federal and state requirements, and their applications and budgets are subm i t t e d a c c u r a t e l y, completely and on time. IDOT went on to thank SCT for being one of the best transit agencies in Illinois. The RTC (Rural Transit Assistance Center) also sent a similar letter along with their assessments of SCT's service performance. It stated, "In summary, South Central Transit's op-

erating and funding numbers are outstanding, indicting an upper tier rural transit system. In addition, SCT had well-balanced rider demographics (general public, seniors, individuals with disabilities)." South Central Transit is located at 100 N. Locust in Centralia and has offices located in Mt. Vernon, Breese, DuQuoin and West Frankfort.

Sandoval FFA Members recently participated in the Section 21 FFA Horticulture Career Development Event that was hosted by the Mt. Vernon FFA Chapter. Â The event is a competitive event in which FFA members test their knowledge and skills in horticulture practices and landscaping. Participants must complete a general knowledge exam testing horticultural principles including plant anatomy, production, marketing, turf, landscape design and maintenance. The third part of the event is where members look at four plants of the same type and place them in order from healthiest to least healthy.

EAGLE LIFE

Ministries by: Cliff Sanders

It’s All Good I remember a funky t-shirt that I used to wear that said, “It’s All Good”. God’s Word assures us that it is all good for those who love the Lord. “And we know that all things work together for good to those who love God, to those who are the called according to His purpose.” (Romans 8:28) In God’s economy, what does it mean, “It’s all Good”? Let’s meditate on Romans 8:28. “AND WE KNOW” — Knowledge builds confidence, generates hope, and guides our pathway into truth and life. The apostle Paul revealed his secret to victory, “For I know whom I have believed and am persuaded that He is able to keep what I have committed to Him until that day.” (II Timothy 1:12) Know that God is able. Know

9

that no person can bring you total fulfillment and satisfy all your needs; only the Lord Jesus Christ can. “THAT ALL THINGS” — This means that God promises to work all things together for good — the good, the bad, and the ugly. In Romans 8:18-25, Paul addresses the subject of suffering. “The sufferings of this present time are not worthy to be compared with the glory which shall be revealed in us.” (Romans 8:18) He shares that hope is realized through perseverance. (Romans 8:25) It’s a principle taught throughout God’s Word. Joseph is a great example of God taking bad things and working them to the good of His children. All things include our mistakes and our sufferings at the hand of others. “WORK TOGETHER” — God works everything together

for our good. Corrie ten Boom liked to use the illustration of a beautiful tapestry. From the backside it looks like a tangled mess of threads, but viewed from the front of the finished work, it is a beautiful masterpiece. Paul also revealed that as we pray in the Spirit God works everything together according to His will and purpose for our lives. (Romans 8:26-27) “FOR GOOD” — God is good and does all things well. He promises to ultimately work everything together for our good. Jesus is the Good Shepherd. In the shepherd’s psalm, David concluded, “Surely goodness and mercy shall follow me all the days of my life. And I will dwell in the house of the Lord forever.” (Psalm 23:6) Joseph told his brothers that what they meant for evil toward him, God worked it for good. (Genesis 45:1-8) A recent post on Facebook said, “Happiness keeps you sweet. Trials keep you strong. Sorrow keeps you human. Failures keep you humble. Success keeps you glowing.” It’s all good — with God. “TO THOSE WHO LOVE GOD” — Those who do not love God move out from under God’s covering. They do not care about God’s purposes. Paul

explains how much God loves us. “He who did not spare His own Son, but delivered Him up for us all, how shall He not give us all things.” (Romans 8:31-39) Do you love God? It’s all good. “TO THOSE WHO ARE THE CALLED” — Paul reveals that God foreknew you, predestined, and called you. (Romans 8:29-30) You can be one of the called out ones. Confess Christ

as your Lord and Savior. (Romans 10:9) What a privilege and joy to be part of the called. It’s all good for the called. “ACCORDING TO HIS PURPOSE” — God has a purpose for your life and a purpose for all the suffering we may go through in our lives. For those who love Him, no sorrows are ever wasted. Paul declares, “Yet in all these things we are

more than conquerors through Him who loved us.” (Romans 8:36-37) Know and remember God has a purpose. (Jeremiah 29:11) Do you love God? It’s all good! Shalom, Cliff Sanders Eagle Life Ministries eagleslife8@gmail.com

So much for the Ryan / Tr ump showdown last Thursday. During the scheduled meeting Ryan was quoted as saying, "Just keep being you!" And now, from what I see, Paul Ryan is circling the wagons and trying to pull the Republican Party together, which is better than what Mitt Romney and a handful of Republican establishment members are doing by trying to come up with an alternative to Donald Trump. Really! If Mitt couldn't beat Barack Obama in 2012, I haven't a clue what he and his groupies are doing now. There have been a couple of names thrown out for the alternative nominee. One was John Kasich and he said, "No!" So much for that! Other names have been Condoleezza Rice, billionaire Mark Cuban, and Tom Coburn, just to name a few. In my opinion, it's too late to derail Trump! Last week and continuing into this week is the big story about Donald Trump posing as his own publicist 25 years ago, which Trump denies. Even if it's true, if that's all the liberal media has they need to give it up. Now on the other hand, there's plenty to talk about concerning Hillary 25 years ago or more. Let's start with her as an attorney in 1975 defending a rapist of a 12-yearold girl. She plea bargained from a possible 30 year sentence down to a 1 year because of a technicality in the chain of evidence, and the possibility the 12 year old might have "encouraged" the attack. Fast forward to Benghazi and the email scandal. And there has been so much in between, like her going after women accused of being involved with Bill Clinton (Talk about a womanizer). So the choice is Trump / Clinton? Clinton/Trump? I'll take Trump! Thank you!

And speaking of women, I keep seeing the national polls about female voters. I find it interesting that of the women I've spoken to or heard from, only about 5% have said they are for Clinton, and when I asked why, the answer is because she's a woman. I can assure them if they're looking at women's issues and her track record, that would be a reason to not vote for her. The only woman Hillary Clinton is for is Hillary herself, and possibly her daughter. I'll give her that much credit. On to the real news last week. Obama's complete over reach on major bathroom issues in our schools leaves public schools in danger of losing their federal funding! What other laws can he play with until his disastrous term is up? In Obama's new directive to schools, it pushes them to allow transgender access to bathrooms. The issue: The wording in this directive is such that students shall be able to use the bathroom, shower room or locker room they claim to sexually identify with. This certainly takes it beyond a transgender issue to a fear and safety issue from those lying to obtain access for other reasons. The way it looks at this point, if schools fail to comply they are in danger of losing federal funding. Thank God there are some governors that are standing up against this dangerous action! This all leaves me wondering what Obama would do if his daughters were in the shower room and a guy walked in. And that's okay if he says he identifies himself as female. Why hasn't the liberal media asked this question about Obama's own two daughters? This all started with North Carolina. Letters went out with guidance on the issues, and it contains an implicit

threat that those not abiding by the Obama administration's interpretation of the law could face lawsuits or a loss of federal aid. This issue flared into a national controversy when North Carolina passed a law in March that made it the first state in the country to ban people from using multiple occupancy restrooms or changing rooms in public buildings and schools that do not match the sex on their birth certificates. This action by the Obama administration, in my opinion, is "baseless and blatant over reach." C ongressman John Shimkus had the following to say in the press release below: “This decree has nothing to do with equality, justice or fairness for students; it’s entirely about furthering a radical left wing agenda of social engineering. President Obama is abusing the power of his office to substitute his preferences for the wisdom and judgement of parents, teachers, principals and local school officials who know their students and communities best. This is the kind of politically correct nonsense that Americans are fed up with, and I will support every viable legislative effort to restore, protect and preserve local control of education. I also call on the state of Illinois and local school districts to help reclaim federalism and reject the national autocracy being thrust upon us.” Until next week. 2016 CONGRESSIONAL ART COMPETITION WINNER, RUNNERS UP ANNOUNCED C ongressman John Shimkus (R, Illinois-15) announced recently that Megan Hodge, a student of John Gabb who attends St. Anthony High School in Effingham, was selected as this year’s Congressional Art Competition winner from the Illinois 15th Congressional District. Megan's winning artwork is entitled "Madame Monarch." “This year’s entries were some of the finest my office has ever received,” said Shimkus. “But among all the amazingly talented students who submitted their work, Megan’s exquisite painting of a Monarch butterfly really stood out to the judges. I extend my heartfelt congratulations to her and all the young artists who participated in this annual contest.” Megan’s winning piece will be displayed for the next year in the pedestrian tunnel that connects the U.S. Capitol with the Cannon House Office Building. The exhibit includes the top student artwork from congressional districts across the country and is seen by hundreds of staff and visitors each day.

Herb, Garlic And Lemon Roast Chicken

2 T. minced fresh sage, or 2 tsp. dried sage, finely crumbled 1 (5 to 6 lb.) roaster or capon About 2 T. soy sauce Salt Freshly ground black pepper Fresh bay leaves, thyme, rosemary, sage, or parsley sprigs for garnish Preheat oven to 375°F. In small bowl, combine butter, lemon zest, garlic, thyme, rosemary, and sage; blend well. Reserve. Wash chicken and dry thoroughly, inside and out, with paper toweling. Beginning at neck opening, slip fingers between chicken skin and flesh and loosen skin on one side of breast, leaving skin attached at cavity opening. Using fingers in the same way, work under skin of thigh and leg, leaving skin attached at end of leg. Loosen skin on the other side of chicken in the same way. Insert most of the lemon-and-herb butter under skin with one hand, using other hand to distribute butter evenly from outside. Rub remaining flavored butter inside cavity. Pull skin at neck over opening and skewer it or sew it with heavy kitchen thread to back of chicken. Tie legs together with cotton string. Rub entire outside surface of chicken with soy sauce, then sprinkle to taste with salt and pepper. Place on rack in roasting pan and roast, uncovered, 10 min. Reduce heat to 350°F and cook, basting with pan drippings every 15 min., until juices run clear when thickest part of thigh is pierced, about 1 hour and 20 min. to 1 hour and 40 min. (or 20 min. per lb.) total cooking time. Remove string, stuff cavity opening with fresh herbs, and serve hot or at room temperature. Skim and discard fat from pan juices and pass at the table. Serves 4.

Frying Chicken Perfectly Every Time

Use only for chicken parts that are battered and seasoned, or dredged with flour, before cooking: Deepfat frying uses enough cooking fat to submerge the chicken. Frying can also be done in fat that is no more than 1/2" deep. Be sure the fat is at proper temperature before adding chicken. This immediately "seals" the chicken, preventing absorption of too much of the fat. Heat vegetable or olive oil, a combination of oil and butter (butter alone will bum unless it is clarified first), or lard (if your arteries can handle it) until hot enough to brown a cube of bread quickly. Add chicken pieces, a few at a time, and cook until crisp and brown on each side, about 10 minutes total. Reduce heat so oil simmers briskly and cook, turning chicken once, until done but still juicy inside, about 20 minutes more.

Chicken Paprika

2 T. unsalted butter 2 T. vegetable oil 1/4 cup chopped onion 1 garlic clove, minced or pressed 2 T. sweet Hungarian paprika, or to taste 1½ cups peeled, seeded, and chopped fresh ripe tomatoes, or canned Italian-style crushed tomatoes with their juices 1¼ cups homemade chicken stock or canned low-sodium broth

6 boned and skinned chicken breast halves, or 12 boned and skinned chicken thighs 1/3 cup all-purpose flour 1/3 cup light cream (half-and-half) or heavy cream 1/2 cup sour cream 1 T. sherry Salt Freshly ground black pepper 3/4 lb. flat egg noodles, cooked al dente Sweet Hungarian paprika for garnish Minced fresh parsley for garnish Heat butter and oil in heavy skillet over medium-high heat, add onion and cook until soft, about 5 minutes. Stir in garlic and cook 1 to 2 minutes. Add paprika, tomatoes and chicken stock; cover and cook 10 minutes. Reduce heat to simmer, add chicken, cover and cook until tender but still moist inside, about 30 to 35 minutes. Remove chicken with slotted spoon and keep warm. Combine flour and light cream in small bowl and stir to mix well. Stir this mixture into simmering stock and cook, stirring, until thickened, about 10 minutes. Stir in sour cream, sherry, and salt and pepper to taste; heat until well blended but do not boil. Serve sauce over chicken breasts and al dente noodles. Garnish with parsley. Serves 6.

Barbecued Chicken, Louisiana Style

BARBECUE SAUCE: 1/4 pound (1 stick) butter 1 cup finely chopped onion 1 bottle (18 oz.) high-quality hickory-flavored or hot barbecue sauce 1 bottle (5 oz.) steak sauce 1/4 cup Worcestershire sauce

2 T. soy sauce, or to taste 3 T. honey, or to taste 1 T. brown sugar, or to taste 2 lemons, quartered 3/4 cup freshly squeezed orange juice ––––––––––––––––––––––––––––– 3 (2½ to 3 lb.) fryers, quartered 1/4 cup vegetable oil To make sauce, heat butter in heavy saucepan over medium-high heat and saute onion until soft, about 5 minutes. Add barbecue sauce, steak sauce, Worcestershire sauce, soy, honey, brown sugar, lemons and orange juice. Bring to boil, reduce heat to low, and simmer until mixture is thick and flavors are well blended, about 30 minutes. Remove and discard lemons. Prepare moderate charcoal fire in a grill with a cover. Place chicken quarters in large stockpot with enough water to cover barely. Bring just to simmer over mediumhigh heat, then remove chickens and drain well. Brush chicken quarters with vegetable oil and place over coals, turning to sear both sides. Move seared chicken to outside edge of grill, cover grill, and adjust grill air vents so they are only one-quarter open: Turn chicken and brush generously with sauce about every 10 minutes. Cook chicken until tender, about 1 to 1½ hours for breast quarters and 1½ to 2 hours for dark meat. Add soaked hickory, pecan, or other aromatic woods to fire to create smoke during cooking, if desired. Reheat any unused sauce and serve with chicken. Serves 6 hearty appetites, or 12 modest eaters. 2ND ANNUAL CENTRALIA VFW SHOP WITH A COP CAR SHOW

The Centralia VFW Post 2055 held its second annual shop with a Cop Car Show on Saturday, May 14. Shop with a Cop is a program that raises money throughout the year with the help of other organizations and allows

local children to go shopping with Centralia police officers to buy gifts for themselves or their family members during the holiday season. Awards were given out for the top 20 cars.

ARIES (March 21 to April 19) A once-harmonious relationship appears to be hitting some sour notes. Spend some time together to see why things have gone offkey. What you learn might surprise you. TAURUS (April 20 to May 20) You feel a need to make some changes. Good -- you can do it on a small scale (some new clothes, for example), or go big and redecorate your home and/or office. GEMINI (May 21 to June 20) Control your tendency toward early boredom. A situation in your life might be taking a long time to develop, but patience pays off. Stay with it. CANCER (June 21 to July 22) You might feel that you’re on an emotional roller coaster this week. Don’t fret; just ride it out and let things settle down. A Pisces shows understanding. LEO (July 23 to August 22) Do something different for once -compromise. A stubborn stand on an important issue proves counterproductive. You need to be open to new ideas. VIRGO (August 23 to September 22) A friend offers advice that you perceive as an act of betrayal. But before you turn against the messenger, pay attention to the message. LIBRA (September 23 to October 22) A year of riding an emotional pogo stick finally settles down.

Use this calmer period to restore frayed relationships and to pursue new opportunities. SCORPIO (October 23 to November 21) Your words can sting, so be careful how you respond to a friend’s actions. A calm approach could produce some surprising facts. SAGITTARIUS (November 22 to December 21) Be careful about whose secrets you’re being asked to keep. They could impose an unfair burden on a straight arrow like you. CAPRICORN (December 22 to January 19) While you prefer taking the tried-and-true course in life, be adventurous this week and accept a challenge that can open new vistas. AQUARIUS (January 20 to February 18) Your strong sense of justice helps you deal with a jobor school-related situation. Stay with your principles. A Sagittarius emerges as a supporter. PISCES (February 19 to March 20) You need to build a stronger on-the-job support system to convince doubting colleagues that your innovative proposals are workable. BORN THIS WEEK: You might not say much, but you’re capable of extraordinary achievements. You are a loyal friend and a devoted family person. © 2016 King Features Synd., Inc.

DEAR P AW ’ S CORNER: I read your recent column about a young boy who was afraid of dogs, and I would like to suggest some help to him, or anyone who is fearful of an animal. My dog Hannah and I have worked with many children to help them get over their fears. Hannah is a therapy dog. She is awesome! The children (and some adults) she has worked with are now petting other dogs. We work through our local H.S.S. Lollypop Farm in New York. I’m sure this young man can find a

DEAR D.: Fantastic idea! Therapy dogs are increasingly becoming an important part of our society and play an indispensable role in many people’s lives. Typically, therapy dogs visit with people for a short time each day or week to help relieve stress, provide emotional support, ease loneliness or grief ... or help people overcome their fear of dogs. A great place to start learning more about therapy dogs is at the Pet Partners website, which gives information about the services that therapy dogs can provide, and can help match patients with dogs in their area. If you’re a pet owner whose dog has a great disposition and is wellsocialized, volunteering
