CAKE: 1 cup sifted cake flour 1 teaspoon baking powder 3/4 cup unsalted butter, softened 1 cup granulated sugar 1/2 teaspoon vanilla FILLING: 1/2 cup unsalted butter, softened 1/3 cup confectioners' sugar ICING: 2-1/2 cups confectioners' sugar 3 tablespoons boiling water 2 tablespoons lemon juice
June Cake 1 cup ground blanched almonds 6 egg whites 1/4 teaspoon cream of tartar 1 cup ground blanched almonds
1/2 cup lemon verbena jelly or lemon marmalade 1-1/2 cups confectioners' sugar 1/2 cup chopped pistachio nuts
To make Cake: Preheat oven to 350°F. Butter and flour 2 8x1/2-inch layer-cake pans. Line pans with waxed paper. Butter and flour paper. In small bowl, combine cake flour and baking powder. Mix well and set aside. In large mixer bowl, cream 3/4 cup butter at medium speed of electric mixer. Gradually add granulated sugar, beating until light and fluffy and scraping sides of bowl often. Beat in vanilla. Gradually fold in 1 cup ground almonds. Set aside. Wash beaters. In small mixer bowl beat egg whites with cream of tartar at high speed of electric mixer until stiff but not dry. Gently fold into butter mixture. (Mixture will look curdled.) Fold in 1 cup ground almonds and flour mixture. Evenly divide batter between pans. Bake at 350°F 25-28 minutes until cake pulls away from sides of pan and center springs back when lightly touched. Cool 10 minutes in pans set on rack. Remove cakes; cool on rack To make Filling: In medium bowl, cream 1/2 cup butter at medium speed of electric mixer. Add 1/3 cup confectioners' sugar, beating until light and fluffy. Slowly beat in jelly until blended. To make Icing: Measure 2-1/2 cups confectioners' sugar into another medium bowl. Gradually beat in boiling water and lemon juice at medium speed until smooth. Add 1-1/2 cups confectioners' sugar, 1/2 cup at a time, beating until mixture is thick enough to spread. To assemble: Arrange 1 cake layer on serving plate. Spread with filling. Top with second cake layer. Spread icing on top and sides of cake. When icing is almost set, sprinkle with chopped pistachios, pressing gently into icing. Yield: 8 to 10 servings
Heart Cookies
These simple, delicious, heart-shaped cookies are perfect on a bright June day when the roses are in bloom, especially served on the front porch with tea. COOKIES: 2-1/2 cups all-purpose flour 1/2 teaspoon salt 1 cup unsalted butter, softened ICING: 2 cups confectioners' sugar

1/4 cup milk
To make Cookies: In medium bowl, stir together flour and salt. Set aside. In large mixer bowl, cream butter and granulated sugar at medium speed of electric mixer until light and fluffy. Beat in egg until blended. Gradually beat in flour mixture at low speed just until blended. Divide dough in half. Form each half of dough into a disk shape on plastic wrap. Wrap and refrigerate 2 hours. Preheat oven to 350°F. Roll out dough 1/8 inch thick on floured surface. Cut into 21/2 - inch heart shapes. Arrange 1 inch apart on ungreased cookie sheets. Bake at 350°F for 7 to 8 minutes until cookies start to brown lightly To make Icing: While cookies are baking, sift confectioners' sugar into medium bowl. Stir in milk to form runny consistency If desired, add food coloring to tint icing. Spread icing on hot cookies. Cool iced cookies on rack placed over waxed paper. In Memory of
Terry and Rhonda Hatcher O
n May 30, 2016 Centralia and surrounding communities suffered a great loss when Terry and Rhonda Hatcher died in a motorcycle accident on Route 37 north of Kell.
Rhonda Renae Hatcher, age 49, was a marketing consultant at The Shoppers Weekly Papers for over fifteen years, and Terry Dean Hatcher, age 50, was a press operator at Graphic Packaging International for 20-plus years. The loss that the community is suffering during this difficult time is hard to express. The number of lives that this couple has touched is hard to quantify. Not only has The Shoppers Weekly Papers lost an experienced and dedicated marketing professional, and Graphics Packaging a skilled and committed worker, but every individual member of these staffs has lost a close friend and confidant — a member of our own families. One young woman has lost both mother and father in one horrible instant. Others have lost a daughter, a son, a sister, a brother, an aunt, an uncle and more. Countless souls have lost two wonderful friends. The community has lost two dedicated people who were not content to sit back and not be a part of their community. Whether it was Balloon Fest Committee or Halloween Parade Committee or many other community happenings, a Hatcher was always pitching in. Rhonda Hatcher was a rare woman. One in a billion, you might say — someone who always put others first. She was always the type to bravely rush in head first whenever there was a crisis. She was not afraid to stand up for other people, and did so often. If she saw some injustice, she was not shy about confronting it and trying to set it right. Not only a fierce friend, but a fierce mother as well — she adored her daughter Chelsi, and often expressed how much she missed her since she resides in Florida. Both parents were so proud of their daughter, an Air Force veteran. When Chelsi would come home for a visit, Rhonda, especially, would get giddy with the anticipation of seeing and hugging her baby girl again. Everyone who knew Rhonda enjoyed seeing these two together and understood that she was truly the happiest when Chelsi was near. How Rhonda lived and appreciated life can best be observed and remembered when you look at how she adored her elderly parents, both
who are suffering from Alzheimer’s Disease. Even though they are both living in extended care homes in a different town, Rhonda traveled to visit them daily to talk to them, to feed them, to make sure they were getting the best care and make sure that they knew every day that they were loved. Every day. They were such an important part of her life that it was impossible not to see if you spent any time around her. After nine, ten or eleven hour days at work, oftentimes spending exhausting days on the road, she still made time to love and appreciate the parents who nurtured her. Rhonda returning to her parents the nurturing love that she received growing up was beautiful to see and beautiful to understand. Terry Hatcher was adored by his wife and daughter and was one of those guys who was easy to befriend. Always ready with a quick wit or a word of wisdom, Terry never hesitated to help you out if you needed it. If you needed to borrow a mower, needed something hauled or needed a tree trimmed, Terry was there to help you out. This hard-working U.S. Navy veteran will be missed by countless people whose paths he’s crossed. Rhonda and Terry both loved their pet dogs, all four of them! She had a soft spot in her heart for all dogs and this showed most when she’d go to great lengths to rescue abandoned dogs and foster them while she tried to find homes for them. Not one to turn her back on these helpless furry friends, she thought that every one of them deserved a good home where they would be loved. Rhonda and Terry both loved to ride motorcycles. When her health allowed, it wasn’t uncommon to see her roaring up to the The Shoppers Weekly office on a Saturday on a Harley in full leathers. On days when she was “stuck in the office” she’d look up from her desk longingly when the familiar rumble of a motorcycle faded into the distance. It didn’t help that there was a huge picture window right in front of her desk on those beautiful spring days when people started getting their bikes out. “Wind Therapy” she called it. While it is hard to express the enormous empty space left behind by these two, those of us who are left behind can take a little comfort in knowing that these two people were in our lives and every one of us are better off for it. Even though they were taken away from us too early, we will smile when we remember the good times we had together and maybe, try to live our own lives a little closer to the example that these two have set.

GIRL SCOUT GOLD AWARD RECIPIENT, NURSE AND GOOD SAMARITAN Since 1916, Girl Scouts have been making meaningful, sustainable change in their communities and around the world through their Girl Scout Gold Award projects. The Girl Scout Gold Award, the highest honor a Girl Scout can earn, acknowledges the power behind each recipient’s dedication to not only empowering herself, but also to making the world a better place for others. As the Girl Scout Gold Award celebrates 100 years of girls changing the world, Girl Scouts of Southern Illinois (GSSI) will highlight some of our shining stars who exemplify the greatness of this award. Jennifer Thole from Trenton, IL grew up knowing the importance of health care. Her mom is a nurse and Jennifer herself was working as a nurse assistant in high school. When contemplating her Girl Scout Gold Award project, it was a natural fit for her to choose a project related to health care. Jennifer brainstormed some ideas and decided to develop a health fair for kids that focused on making smart food choices, staying active and proactively combatting diabetes. Jennifer’s Girl Scout Gold Award project was titled Sugar and Spice is Not Always so Nice. Jennifer got the ball rolling by setting up meetings with the Diabetes Educator and Dietician at her local hospital. She took the knowledge she had gained and developed a health fair in which parents and their children could learn more about healthy and easy after school snacks, fun exercises and games, calculating body mass index and visual representations of sugar amounts in various candies and sodas. Jennifer’s project was a great success. After graduating from Mater Dei High School in
2009, Jennifer continued to pursue the health care field. She graduated from Quincy University Blessing-Rieman College of Nursing in 2013. Today, she is a nurse in the Intensive Care Unit at Anderson Hospital in Maryville, IL. One of the requirements of the Girl Scout Gold Award is that the project must fill a need in the girl’s community. “Giving back” has always been one thing Girl Scouts, especially Girl Scout Gold Award recipients, excel in. Jennifer didn’t stop “giving back” once she completed her Gold Award. In fact, her project not only paved the way for her career but also for how she is now able to be of service to others. This spring, Jennifer was part of a team that went on a surgical mission trip to Bohol, Philippines. This team spent 12 days in Bohol where they performed 115 surgeries ranging from goiter removals to hernia repairs to hysterectomies. “The people there have so little yet are so grateful for everything,” said Jennifer. “It was the most eye opening experience I have ever had,” Jennifer added. The Girl Scout Gold Award recognizes a Girl Scout's commitment to excellence as she develops skills

To earn the Girl Scout Gold Award, a Girl Scout Senior or Girl Scout Ambassador must design and carry out a project that fulfills a need within a girl’s community, creates change, and is sustainable. The project must be completed with a suggested minimum of 80 hours of work. Only about 5 percent of eligible girls earn the prestigious Gold Award. “You will not regret doing it, but you will regret NOT doing it,” are words of advice Jennifer offers to Girl Scouts who
want earn the highest award in Girl Scouting. “It will be a lot of work but you never know the networks you may build and the things you will learn that will shape your future,” adds Jennifer.

Fan into Flame Astronomers refer to stars that have burned out and now wander in space, forever cold, darkened, and alone as wandering stars. Jesus warned a church that once burned brightly, the church of Laodicea, “I know your deeds, that you are neither cold nor hot. I wish you were either one or the other! So, because you are lukewarm, neither hot nor cold, I am about to spit you out of my mouth . . . So be earnest and repent!” (Revelation 3:14-22) Paul instructed young Timothy, “For this reason I remind you to fan into flame the gift of God which is in you through the laying on of my hands.” (II Timothy 1:6-8) It is vital to keep the fire of God blazing within you. Left unattended, a fire will go out. What is your spiritual state? Don’t be like a wandering star, fan God’s fire into a burning blaze. GOD IS A CONSUMING FIRE! “Therefore, let us be grateful for receiving a kingdom that cannot be shaken, and thus let us offer to God acceptable worship, with reverence

and awe, for our God is a consuming fire.” (Hebrews 12:28-29) Moses encountered God at the burning bush. The bush burned with fire, but was not consumed. God told Moses to take his shoes off, for he was standing on holy ground. (Exodus 3:5) Jesus rebuked the Laodicea church for they said, “I am rich and have become wealthy and have need of nothing.” (Revelation 3:17-18) They didn’t know they were “miserable, poor, blind, and naked.” Worldliness puts out the fire of God. Jesus gave the remedy – obtain “gold refined in the fire . . . and white garments of righteousness.” The fires of testing and adversity purify and fan the flame of God’s fire within us. GOD IS A CONSEC R AT I N G F I R E . Timothy was called and consecrated to be an elder by “the laying on

of hands” of the apostle Paul. (II Timothy 1:7) Every believer is called and consecrated to be a servant of God. Don’t let God’s gifting lie dormant. Fan it into flame by being obedient to the Holy Spirit. “And we are witnesses to these things, and so is the Holy Spirit, whom God has given to those who obey him.” (Acts 5:30-32) GOD IS A CAPABLE FIRE. Young Timothy didn’t think he had the capacity to fulfill God’s call. But the fire of God empowers and makes one capable. “For God did not give us a spirit of timidity, but a spirit of power, love, and selfdiscipline.” (II Timothy 1:7) Recently this post was on Facebook, “God can take the seemingly impossible and make it possible – keep praying.” GOD IS A COMMUNING FIRE. The psalmist made this revealing statement, “My heart was hot within me, while I was musing, the fire burned. Then I spoke with my tongue.” (Psalm 39:3) As we meditate on God’s Word and commune with Him in prayer, the fire of God is fanned into flame. Jesus revealed
His heart to a lukewarm church. “Behold, I stand at the door and knock. If any man hears my voice and opens unto Me, I will come into him and sup with him and he with Me.” (Revelation 3:20) Always talk to God before you start your day. GOD IS A “CRAZED FIRE”. He is crazy in love, fervent, wild, and zealous for His creation. The fire of the Holy Spirit will give you passion to witness His love to a lost world. (Acts 1:8) “So do not be ashamed to testify about our Lord . . . but join me in suffering for the gospel, by the power of God.” (II Timothy 1:6-8) The other day I took two of my grandchildren fishing; five-yearold Emily Joy caught two largemouth bass. The Trump-Sanders Two-Step The upshot of the Bernie Sanders and Donald Trump phenomena is that both parties are moving to the left. Sanders’ and Trump’s styles and effects are very different — the rumpled, oddball lecturer in Socialism 101 vs. the boastful, power-tie-wearing business mogul — but they have worked in tandem to ensure that the center of gravity in this fall’s presidential election will be further to the left than it has been in decades. By seizing the initiative in their race from the beginning to what looks like an increasingly bitter end, Bernie Sanders has made Hillary Clinton, the cautious inheritor of a family political legacy built on centrism, into the mouthpiece of a watered-down version of his left-wing populism. No matter how much Bernie Sanders hates the banks, Hillary Clinton despises them just as much (past paydays notwithstanding). In effect, Sanders and Trump have executed a squeeze play on the M a d a m S e c r e t a r y.
Sanders pushed her to the left on trade and Social Security in the primary, when she disavowed the Trans-Pacific Partnership that she helped negotiate and embraced increasing Social Security benefits. She probably won’t be snapping back to the center on those issues in a general election because it would open her up to Sanders-like attacks from Donald Trump. If the grass-roots movement that Sanders has built will pressure Democrats all the way to the Philadelphia convention and beyond, Trump has arguably done more to pull the country’s politics portside. He has, for now, managed to do what the Democrats and the media have been attempting for most of the Obama era: to kill off the tea party as a national force. By dividing it, eclipsing it and making its animating concerns of limited government and constitutionalism into afterthoughts, Trump has neutered a heretofore potent vehicle against Big Government. With or without Sanders, the Democrats were going to drift in a more progressive direction. It was far from inevitable, though, that the Republican Party would de-emphasize its opposition to growth in the size of government. That is entirely the doing of Trump.
The irony is that an era of Republican politics characterized by insistence on doctrinal purity and anger at Beltway dealmaking is ending with Trump at the helm of the GOP. It’s a little like the agitation of the French Revolution, all aimed at achieving more liberte, egalite, fraternite, concluding in the rule of Napoleon Bonaparte. However ideologically indistinct Trump was during the primaries, he has gotten fuzzier since becoming the presumptive nominee. The lazy line on Donald Trump is that he’s a farright populist. Not at all. He’s a centrist populist. The key to moving the GOP to the center wasn’t high-minded scolding about its tone and unreasonableness, as Jon Huntsman, John Kasich and Jeb Bush all attempted, but an extremely combative tone and a few signature unreasonable positions. Once Trump established his reputation as a bomb-thrower, it didn’t matter that he was to the left of everyone else in the field. B e t we e n S and e rs moving Clinton further from the center and Trump moving the GOP toward it, the socialist and the mogul have forced American politics to take a collective step to the left.
