Summer Fruit Desserts

The first day of summer was last week. Summer in our house calls for patio dinners and fruit desserts. Enjoy the recipes below.

Strawberry Patch Shortcake

1 quart fresh strawberries, sliced 1/4 cup sugar

Topping: 1 cup heavy cream 3 T. sifted confectioners' sugar

Shortcake: 2 cups all-purpose flour 1/4 cup sugar 1 T. baking powder 1/2 tsp. salt 1/3 cup unsalted butter 3/4 cup milk 1 egg 1 egg white 2 T. sugar

Vlasic Pickles All Varieties Garnish: Whole fresh strawberries 16-24 Oz. Jar

Combine sliced strawberries and 1/4 cup sugar; stir gently. Cover and refrigerate 2 hours. Lightly grease two 9" cake pans; set aside. To make shortcake dough, combine flour, sugar, baking powder and salt in large mixing bowl; cut in butter until mixture resembles coarse meal. Preheat oven to 450°F. Combine milk and egg; beat well. Add to flour mixture, stirring with fork until soft dough forms. Pat dough out evenly into cake pans (dough will be sticky, so moisten fingers with water). Beat egg white until stiff peaks form. Brush surface of dough in each cake pan with beaten egg white. Sprinkle each layer with 1 T. sugar. Bake 8 to 10 minutes or until golden brown. Remove shortcakes from pans and let cool completely on wire racks (layers will be thin). To make topping, beat cream with electric mixer on high speed until foamy; gradually add 3 T. confectioners' sugar, beating until soft peaks form. Place 1 cake layer on serving plate. Spread half of whipped cream over layer and arrange half of sliced strawberries on top, using slotted spoon. Repeat procedure with remaining cake layer, whipped cream (reserve a little for garnish), and sliced strawberries. Garnish top of shortcake with reserved whipped cream and whole strawberries. Yield: 8 servings.

Summer Peach Cobbler Pastry: 1⅓ cups all-purpose flour 1/2 cup solid vegetable shortening 1/2 tsp. salt 2 to 4 T. cold water

Filling: 7½ to 8 cups sliced fresh peaches 1/2 tsp. ground cinnamon 1½ cups sugar 1/4 cup unsalted butter or margarine, melted 1/4 cup flour 1½ tsp. vanilla extract

To make pastry, combine flour and salt; cut in shortening with pastry blender until mixture resembles coarse meal. Sprinkle 2 to 4 T. cold water, 1 T. at a time, evenly over surface, stirring with fork until all dry ingredients are moistened. Shape into ball; chill. To make filling, combine peaches with other ingredients in Dutch oven; set aside until mixture forms syrup. Bring peaches to boil; reduce heat, and cook, uncovered, 8 to 12 minutes, or until peaches are tender. Spoon peaches into greased 11x7x2" baking dish. Preheat oven to 475°F. Roll out dough to 1/8" thickness on lightly floured surface and cut into l" strips; arrange in lattice design over peaches. Bake 15 minutes, or until golden. HUMANE SOCIETY BENEFIT RIDE ODIN WOMAN’S NAME DRAWN FOR QUILT The Centralia Humane Society No Kill Shelter will hold a benefit ride on July 9, with sign up from 10 a.m. till noon at Fairview Park in Centralia. Meet pets available for adoption at the park before the ride and at Arizona Joe's after the ride. Cost is $10 per person. An auction will be held at 6 p.m. A band will perform from 7:30 p.m. till 12:30 a.m.

ON BEHALF OF VETERANS TRIBUTE PROJECT

“It’s beautiful, and the eagle laid in it is very nice.” That’s what Jane Smith said as she accepted the quilt, “The Eagle Soars Over the Stars and Stripes”, from members of the Lakeside Quilters and Veterans Tribute Committee. Smith, who is from Odin, had her name drawn from the more than 12,000 tickets sold for this year’s raffle benefiting the Tribute located on the main campus of Kaskaskia College. Raffle Chair, Dr. Dee Boswell, said this year’s raffle is the most successful in the three years the Tribute has been hosting the drawing bringing in more than $13,000 for the project which honors veterans with connections to the counties of Bond, Clinton, Fayette, Marion and

Washington. Boswell noted the Tribute has raised over $33,000 through the three quilts the Lakeside Quilters have made for the project to raffle over the past three years. In addition the quilters have prepared special quilts that have been presented to more than 30 area Purple Heart recipients in the past three years. At one hundred-twentysix inches by one hundred inches, “The Eagle Soars Over the Stars and Stripes” is the largest quilt made by the group for the Tribute. It took the group more than three months to make, and several members were on hand to present it to Smith. The group isn’t wasting any time though. They are now talking about what to do for another quilt

WORLD ELDER ABUSE AWARENESS DAY RECOGNIZED Midland Area Agency on Aging observed WEAAD on June 15, 2016 by wearing purple in honor of making the community aware of Elder Abuse in the five county region it provides service to. Did you know that every day 10,000 people turn 65 in the US alone? That trend is going to continue for nearly the next 20 years. Our demographics are shifting, and we will soon have more elder people in the US than ever before. At the same time that the population is growing, we know that a startling number of elders face abusive conditions. Every year an estimated 5 million, or 1 in 10, older Americans are victims of elder abuse, neglect, or exploitation. And that’s only part of the picture: Experts believe that for every case of elder abuse or neglect reported, as many as 23.5 cases go unreported. WEAAD serves as a callto-action for individuals, organizations, and communi-

The International Network for the Prevention of Elder Abuse and the World Health Organization at the United Nations (UN) launched the first World Elder Abuse Awareness Day (WEAAD) on June 15, 2006 in an effort to unite communities around the world in raising aware-

ness about elder abuse. WEAAD is in support of the UN’s International Plan of Action acknowledging the significance of elder abuse as a public health and human rights issue. Locally Midland Area Agency on Aging designates a provider agency that has staff that are trained to investigate reports of Abuse, Neglect, and Exploitation. SWAN, the provider agency, has offices located in Flora, Mt. Vernon, and Effingham. Staff housed in these offices cover all five counties that Midland Area Agency on

Aging serves. These counties are: Clay, Effingham, Fayette, Marion and Jefferson. The reports of abuse continue to rise in our region every year. The uncertainty of the Illinois State Budget has a direct effect on the ability to investigate these reports. LOCAL CHEER SQUADS ARE NATIONAL CHAMPION AND THIRD PLACE WINNERS Studio 50 Gym, Dance and Cheer Center of Sandoval, Illinois took two cheer squads to compete at the AAU National Cheerleading Championships held in Springfield, IL on May 21. The Mini Level 1 squad was the 2016 National Champion in their division and received National Champion jackets. The Junior Level 2 squad placed third in their division. These athletes competed in six invitational meets and a state meet prior to the National Championships. At each meet they competed against 3-10 squads. Both teams are pictured here. Studio 50 Gym, Dance and Cheer Center says they are very proud of their students' hard work and dedication, qualities which come from their participation in group sports. In the news last week: • The Senate Democrats demonstrate rebellious behavior. • The Supreme Court ruling on Obama's illegal immigration. Senate Democrats showed stunning and unruly behavior on the House floor, chanting, "no bill, no break" and waving pieces of paper with the names of gun victims. They continued their protest even as lawmakers voted on a previously scheduled and unrelated measure to overturn a veto by Barack Obama. The gun protest sit-in began last Wednesday as Democrats demanded votes on gun control bills. Disrespectfully, they shouted down House Speaker Paul Ryan when he attempted to restore order as their protest stretched into the night. Ryan attempted to ignore their childish outbursts and behavior, pounding his gavel over the Democrats' shouting. Shame! Shame! Shame! After that the Democrats started singing "We Shall Overcome" and then the Democrats said they would stay until the Republicans yielded to their demands to hold votes on the bills to strengthen background checks and prevent people on the no fly list from getting guns, in the wake of the Orlando massacre. Ryan dismissed the protest as "nothing more than a publicity stunt," and publicity they got. In an interview with CNN, Speaker of the House Paul Ryan made it clear there would not be a vote and said, "We're not going to take away a citizen's constitutional rights without due process."

Although cameras were turned off, their unprofessional behavior was broadcast to the world from the Democrats' cell phones and feeds were picked up by C-Span. And even after being asked by Security to clear the floor, Nancy Pelosi said, "That's not going to happen." Remember Ms. Pelosi? She's the brain dead Democrat that actually said on the Obamacare bill in the middle of the night, "Let's vote on this bill so we can find out what's in it." At one point Pelosi said the sit-in would continue "until hell freezes over." What a rocket scientist. In the end, the security check did take places, involving five agents and a dog, as the House Democrat leader continued to speak. I personally couldn't help but wonder if the Republicans had behaved in such a manner, what would the outcome have been! Over all, more than 170 Democrats took part in the sit-in, with Illinois Senator Dick Durbin joining in at one point. The bottom line on this issue is under the current administration there is no telling what could happen if this bill did pass. Could it give Barack Obama more freedom to wreak havoc with the American people as he has the last seven years? The reality is that the Democrats can continue to talk the talk, but they have no end game strategy, and the fact is, the Senate has already defeated the measure they're calling for. The House is focused on eliminating terrorists, not the constitutional rights of law abiding citizens. I guess the Senate Demo-

crats think that stunts on the floor will change that! However, as the two sides raced on, staff brought in food, pillows and even sleeping bags. What a side show, all on taxpayer dollars! And as the sit-in continued, the Democratic Congressional Campaign Committee used the opportunity to fund raise, with Pelosi telling supporters, “I need 6,000 gifts in the door during tonight's sit-in. Will you pitch in $1?” And some call this leadership. You might; I don't! To me the focus should be on immigration. Case in point, the shooter of the 49 innocent murdered and wounded victims in Orlando, Florida. The shooter's dear old dad supports the Taliban and hates gays. He is exactly the kind of immigrant you would hope to deny the priceless privilege of coming here, not to mention the shooter's wife. Even though it's apparent she wasn't an innocent bystander she still hasn't been arrested. The fact is criminals will always find a way to get the gun of their choice, or the weapon of their choice, whether it's a bomb, a knife or whatever. In my opinion, in most of these mass shootings the outcome could have been different if some of the victims had carried concealed weapons. On to the Supreme Court. The Supreme Court handed down a significant blow to Obama's immigration policy, enacted after Congress did nothing. The court was deadlocked last Thursday on an immigration plan implemented by Obama that shielded millions of undocuContinued on page 16

VETERANS PARADE GRAND MARSHAL

Last Thursday Centralia Mayor Tom Ashby and Centralia Veterans Affairs Committee member Earl White joined former marine Roy Aarons at Centralia City Hall to announce he had been chosen as the 2016 Centralia Fourth of July Veterans Parade Grand Marshal. He then tried to sell me a tube of “special” toothpaste that cost $9! Plus it smelled like canned chicken. What is the point if brushing isn’t going to freshen her breath? Can I just buy regular toothpaste from the drugstore? Sign me — Angry in Iowa DEAR ANGRY: The No. 1 reason not to use “regular” toothpaste made for humans on a pet is because it contains fluoride, which can be fatal to pets if ingested.

And because your dog will swallow all toothpaste being used on her teeth, that is a problem. Why brush? Healthy teeth and gums don’t just preserve her teeth, they can prevent heart disease. So, knuckle down and buy a dogspecific toothbrush and toothpaste, either from the vet or the pet store. Or, you can even make your own baking sodaand bu l lion-b as e d recipe. To brush your dog’s teeth, hold her securely and place a little bit of doggy toothpaste on the brush (you can use a cotton ball on puppies and small dogs, to start). Let her taste it, then cradle her muzzle and lift one side of her lip. Place the brush against her gums and gently sweep downward.
