Centuries ago the peach was so rare and costly a commodity in Europe (it had to be imported by way of Oriental trade routes) that gardeners across the continent developed techniques to grow it themselves. No such problem existed in America. It's a matter of fact Thomas Jefferson proudly wrote to a friend, "We abound in the luxury of the peach, there being as fine here now as I've ever seen anywhere." When I did a lot of canning, July was the month for peaches. When this sweet succulent fruit was ripe enough, then it was off to the kitchen. One secret my grandmother gave me — among a million other lessons on life — was when canning peaches you need to put a peach seed or two in each jar. She said the reason was to keep them from turning brown and keep them as fresh as the day they were picked. And like always, she was right! Some of my favorite recipes are below.

3 cups peeled, thickly sliced peaches 2 T. honey Shortcake: Sweet Biscuit Dough (made with nutmeg)

1 T. lemon juice

1 tsp. granulated sugar

Cream Topping: 1 cup heavy cream 2 T. confectioners’ sugar

1/4 tsp. ground nutmeg Fresh mint sprigs for garnish

In medium bowl, toss peach slices with honey and lemon juice to coat. Cover and refrigerate until serving time. Preheat oven to 425°F. On floured surface, roll out biscuit dough 1/2-inch thick. Cut in six 3-inch rounds with a biscuit cutter. Arrange biscuits 1 inch apart on baking sheet. Sprinkle tops with 1 tsp. sugar. Bake at 425°F for 12 minutes until golden brown. Cool on rack. Whip cream with confectioners’ sugar and nutmeg to stiff peaks. Cover and refrigerate until serving time. To serve, split biscuits in half horizontally. Place bottom halves of biscuits on 6 dessert plates. Reserve a few peach slices for garnish. Spoon remaining sliced peaches atop biscuit bottoms. Top with a dollop of whipped cream and then the biscuit tops. Garnish with spoonfuls of whipped cream, reserved peaches, and mint sprigs. Yield: 6 servings.

1¾ cups all-purpose flour 2 T. sugar 2 tsp. baking powder 1/2 tsp. baking soda 1/4 tsp. salt

1/4 tsp. freshly grated nutmeg or ground cinnamon 3 T. shortening 2 T. unsalted butter, cut in small pieces 3/4 cup buttermilk

In large bowl, combine flour, sugar, baking powder, baking soda, salt, and spice. Mix well. With a pastry blender or 2 knives, cut in shortening and butter until mixture resembles coarse meal. Stir in buttermilk to form a soft dough. Turn out on well-floured surface. Knead gently with fingertips about 10 strokes until smooth. Do not overwork dough or biscuits will be tough. GIRL SCOUTS SERVING VETERANS On June 4, the Girl Scout Troop #8653 gathered at the Mt. Vernon's Sportsman's Club to help serve local Veterans. The girls assisted with serving the meal, refilling drinks, and cleaning up the picnic area. The girls learned about the importance of our Veterans. The group discussed how veterans have served in many different wars over time, and how they've protected many people. The girls were blessed by meeting a World War II Veteran, Jake Hayes of Mt. L ast Tues day Hous e Republicans concluded a two year investigation into the 2012 terror attacks in Benghazi with an 800 page report (http:// benghazi.house.gov/NewInfo) that blames politically motivated bureaucratic delays for failing to prevent or stop the deadly attacks that claimed the lives of Ambassador Chris Stevens, Information Officer Sean Smith, and two CIA operatives, Glen Doherty and Tyrone Woods, both former Navy Seals. As reported in USA Today, this report added new details to the findings of seven previous congressional inquiries and is expected to be used to question Hillary's leadership in the fall. And so it should be. Hi l lar y C linton was Secretary of State when the Benghazi attacks occurred. It was reported that Clinton was planning a trip to Libya later in the year of 2012.This forced diplomats to stay at the poorly protected outpost despite the deteriorating security in the region, which in fact, Hillary Clinton had been advised of numerous times, including by p e r s on a l e m a i l s f rom Ambassador Stevens expressing concern for his and others' safety, which was virtually ignored. The recent report also found that despite Barack Obama and Leon Panetta's orders to deploy military support, nothing was sent to Benghzai. The last two Americans were killed at least eight hours after the attacks began. In earlier findings on the Benghazi attacks, it was reported that troops were ordered to stand down even after they prepared to assist these Americans. At this point we may never know the full truth about what happened. But what I do know is Hillary Clinton, then Secretary of State, dropped the ball and contributed to the lies Susan Rice told on a number of Sunday morning talk shows.

Rice said these attacks were about a protest over a video even though Hillary Clinton and the Obama administration knew this wasn't about anything except a planned terrorist attack on Americans. It has also been reported in the past that Hillary Clinton emailed her daughter Chelsea as the attacks were going on and told her it was a terrorist attack. So what does Hillary have to say after these latest findings? She said, "No one has thought about or lost more sleep over the lives we lost in Benghazi than me." I find that statement offensive. We lost four brave American men who had mothers and fathers, wives, children, grandparents, aunts and uncles, along with friends. How dare Hillary Clinton make such an unfeeling statement, especially when her actions said it all; she did nothing to save or protect these young men. She continued to say, "It's time to move on." I'm sure she wishes to, but for many of us, especially the families of these brave men, they can't move on until they get answers. Last week I listened to an interview with Patricia Smith, Sean Smith's mother, one of the Americans that lost their lives. Mrs. Smith said, "Hillary is a liar." And it's definitely not time to move on. She went on to say Hillary "put these people in harm's way and did nothing to protect them," and she wants Hillary to answer for it. She also stated that at the funeral of her son, Sean, along with other victims she was told by Mrs. Clinton that she would get back to her with answers but she never did. And speaking of Attorney General Loretta Lynch, it just so happens that on Monday of last week she met with Bill Clinton when their planes were just by coincidence at the Pho enix Sky Harb or International Airport in Phoenix, Arizona. The Attorney General and former President met aboard a private plane. Really! At this point, even Democrats are having issues with the Attorney General's meeting with the former President while his wife is under federal investigation. There are laws for us to follow. The Clintons have their own set of laws called no laws. If the above isn't a conflict of interest, I don't know what is! But in Hillary's own words, "What difference does it make?" Last but certainly not least, last week there was another bloody attack. This one is thought to have been carried out by a Russian, Uzbek and Kyrgyz, and was reportedly planned by ISIS leadership. The latest count of injured and dead at the Istanbul Airport is 42 lost lives and more than 230 hurt. The attacks were carried out by three individuals that blew themselves up. Until next week. Rare is the athlete who has not had the misfortune of suffering a muscle cramp. Muscle cramps can range from the relatively minor nuisances that can be worked out in a matter of minutes to the more severe cramps that can sideline athletes for an indeterminate period of time. According to the U.S. National Library of Medicine, muscle cramps are often the byproduct of an overused or injured muscle. When a muscle cramps, that muscle is involuntarily contracting, and that contraction can be very painful. Because athletes tend to repeat their motions when performing exercises, it’s not uncommon for athletes to cramp up from time to time. But even men and women who live sedentary lifestyles can suffer from muscle cramps, which the NLM notes could be triggered by alcoholism, hypothyroidism or kidney failure. Women may suffer muscle cramps when they

are pregnant or menstruating. Certain medications may also cause muscle cramps. Men and women concerned about muscle cramps should read the potential side effects of their medications carefully or speak directly with their physicians before taking any medicines that may cause muscle cramps. The online medical resource WebMD notes that medications such as Lasix, a diuretic used to remove fluid from the body, and Crestor, a statin prescribed to adults with high cholesterol, can cause muscle cramps. While dehydration and electrolyte depletion has long been linked to exercise-associated muscle cramps, researchers have been questioning, if not disputing, that link for many years. A 2008 study from South African researchers published in the British Journal of Sports Medicine did not support a link between exerciseassociated muscle cramps and dehydration or electrolyte depletion. Muscle cramps tend to be painful and can occur in the legs, hands, arms, or abdomen or along the rib cage. When cramps occur below the waist, such as in the calf muscle, it can be difficult to stand up. Treating muscle cramps Muscle cramps require immediate treatment so sufferers can alleviate the pain and/or discomfort cramps can cause. Massaging the cramped muscle or applying ice or heat can alleviate the cramp and its associated pain.

Calf or hamstring cramps may be alleviated by putting weight on the affected leg and bending the knee slightly. Such cramps may also be treated by sitting or lying down with the affected leg straight out and pulling the foot toward the head. To treat quadriceps cramps (those that occur in the front of the thigh), hold onto to something steady and pull the foot of the affected leg back toward the buttock. Preventing future cramps One of the most effective ways to prevent future cramps is to listen to your body when it’s sending you signals that it is fatigued. Overused muscles are vulnerable to cramps, so remember to include rest in your exercise regimen so muscles have time to recover. If your body feels overtaxed or fatigued before or during a workout, skip the workout or stop it immediately to reduce your risk of cramps or injury. Deficiencies in certain vitamins can directly or indirectly lead to muscle cramps. While the reasons behind the link between thiamine, pantothenic acid and pyridoxine deficiencies and muscle cramps is unknown, speak with your physician about how to include these vitamins in your diet if you have been experiencing muscle cramps. Cramps can be painful and derail athletes. Learning to prevent cramps can protect athletes and ensure they are not sidelined from their favorite activities.

UNDERSTANDING THYROID CANCER Many people have detected lumps or swelling in their neck, only to visit their physicians and learn they have thyroid cancer. Though thyroid cancer is uncommon, the American Cancer Society estimates that more than 62,000 new cases of thyroid cancer will be diagnosed in the United States in 2015. And while the death rate from thyroid cancer is low compared with most other cancers, it is the most rapidly increasing cancer in United States. Such a reality only emphasizes the importance of learning about thyroid cancer and if there is anything you can do to lower your risk. What is the thyroid? The thyroid is a butterfly-shaped gland in the front part of the neck that is made up of two main types of cells. Follicular cells use iodine from the blood to make the thyroid hormones that help regulate metabolism. Excessive thyroid hormones is de-

scribed as “hyperthyroidism,” which can cause irregular heartbeat, difficulty sleeping, nervousness, hunger, weight loss, and feelings of being too warm. Hypothyroidism occurs when a person has too little of the thyroid hormone, which can cause fatigue and weight gain and may lead to a person slowing down. The thyroid gland also is made up of C cells that produce the hormone calcitonin, which helps control how the body uses calcium. What is thyroid cancer? Thyroid cancer occurs when cells in the thyroid gland grow abnormally and out of control. Papillary carcinoma is the most common form of thyroid cancer, accounting for roughly 8 out of 10 instances, according to the ACS. Papillary carcinomas typically grow very slowly, but they often spread to the lymph nodes in the neck. As common as papillary carcinomas are with regard

to instances of thyroid cancer, they are rarely fatal. Follicular carcinoma is another form of thyroid cancer. Follicular carcinoma does not usually spread to the lymph nodes and is more common in countries where people do not get enough iodine in their diets. The prognosis for follicular carcinoma is very good, though slightly less so than papillary carcinoma. Hürthle cell carcinoma accounts for about 3 percent of thyroid cancers and is a variant follicular carcinoma. Hürthle cell carcinoma is harder to find and treat than other forms of thyroid cancer. Additional types of thyroid cancer include medullary thyroid carcinoma, anaplastic carcinoma, thyroid lymphoma, and thyroid sarcoma. Risk factors for thyroid cancer The following are a handful of risk factors that increase a person’s risk of developing thyroid cancer.

What a powerful presence of God filled the chapel as I ministered at the county jail. As I gave an opportunity for the inmates to share what God was doing in their life, a young man with tattoos on his arms and a radiance about him, raised his hand and asked, “Do you believe that God speaks in dreams? Last night I had a dream and saw the word FAITH in large letters suspended on the wall. Suddenly it exploded and I was knocked off my bed and found myself kneeling, crying out to Jesus to come into my life, forgive me and be my Savior.” What was the catalyst that powerfully changed that young man’s life? Faith in Christ. We are given the secret to victory in our life. “For whatsoever is born of God overcomes the world: and this is the victory that overcomes the world, even our faith.
