With everyone racking their brains about the perceived problem of shrinking NFL T V ratings, we now get to shift our focus to the flawed NCAA playoff rankings. But why stop there? There are plenty of things in the sporting world that need to be addressed. Here are a few I will toss out there: 1. Tim Tebow needs to try out for every major sport. This is a no-brainer. Everyone knows that Tim Tebow is a superior athlete and a virtuous Christian. That is why he must always be set up for martyrdom, so we can talk about how teams don't understand the righteous talent they are sitting on. It doesn't matter that he's only hitting .149 for the Mets' fall instructional league team, he probably sells more jerseys than most of the Mets big-league players combined. ties. 4. Pete Rose and Alex Rodriguez need to do postgame analysis for every baseball game. When A-Rod isn't namechecking Andy Pettite (which almost never happens) or using multisyllabic words, Pete Rose is there to make fun of him or tease him about Derek Jeter's inspiring play. The matchup of those two plus Frank Thomas is a thing of beauty. You can just picture a bunch of drunken FOX execs coming up with the idea ... "No! Wait! Pete Rose has to wear a bow-tie!" then still going with the idea the next morning. 5. The Cubs needed to lose the World Series. The world needed the Cubbies to lose. They were the last team clinically proven to break hearts. Look at what happened to Red Sox fans. They used to be the quirky losers, now they're just obnoxious without the charm (Fenway Park notwithstanding). Look at how miserable hockey fans are having been robbed of the joy that was chanting "1940" to Ranger fans. Oh well, Wrigley Field is still only place where singing "take me out to the ballgame" in the vocal style of Daffy Duck can be considered cool (but only when Bill Murray does it). Pity the anti-Trump protesters thronging the streets of American cities. Apparently, no one ever told them that they live in a geographically, economically and ideologically varied nation, and that about half of its inhabitants might support a Republican candidate for president. They mistook the country for the campus of Oberlin College. The news that it actually isn't arrived with the force of a thunderclap on Nov. 8. The shock of Donald Trump's election has occasioned tears, rending of garments and days of protests showcasing the rank infantilism of the American left. Prior to the election, liberal commentators obsessed over Trump's rumblings about not accepting the outcome and worried about his supporters lashing out. But the specter of Republican mayhem was always farfetched. When was the last time that GOP protesters ran

youth, whom it mistakes for the shock troops of the future. A party that considers it forbidden to say "all lives matter" because it will offend the enforcers of political correctness is a party that is going to have trouble appealing to Middle America. One anti-Trump protester was seen the other day holding a sign reading "Your vote was a hate crime." It's hard to imagine a better distillation of the coercive smallmindedness that prevails on college campuses. This attitude ensures a state of perpetual shock and outrage at the lived reality of a continental nation of more than 300 million free men and women. The anti-Trump protests aim to associate the president-elect with chaos and delegitimize him from the outset. But it is fully in Trump's power, so long as he doesn't show irritation or anger, to see that they backfire. One petulant tweet aside, he has struck a unifying tone, while it is his adversaries who are unhinged. Trump's critics are certain that he is the champion of a blinkered worldview. But the election and its aftermath show that it is the self-styled citizens of the world who need to get out more. Rich Lowry is editor of the National Review.

Tea-party rallies were famous for their orderliness -- participants in a massive rally on the Mall in Washington, D.C., even picked up their own trash. It is left-wing protests that invariably devolve into law breaking, and so it was that the same kids who think Donald Trump is too divisive were soon smashing windows and throwing projectiles at police in behalf of their supposedly more open-minded vision of America. The level of self-awareness of the protesters isn't high. Some hold signs reading "This is what democracy looks like." It is true that the right to peaceful assembly is a key aspect of any liberal democracy (even if some protesters need to work on the "peaceful" part), but as an illustrative exercise in democracy, you can't beat the national election that has so outraged anti-Trump protesters. They have now adopted the slogan "Not my president," a phrase that the day before yesterday the left considered a racist slur when hurled at President Barack Obama. The post-election mayhem could be written off as the work of an unruly fringe, if it weren't that the Democratic Party is so beholden to the sensibilities of its cosseted

The Power of Thanksgiving Ten lepers broke protocol and approached Jesus. They begged Jesus to show mercy and heal them. Jesus instructed them to go show themselves to the priest and as they went, they were instantly healed! One, a Samaritan, returned and fell at the feet of Jesus with thanksgiving. Jesus said, “’Were there not ten cleansed? But where are the nine? Were there not any found who returned to give glory to God except this foreigner?’ And he said to him, ‘Arise, go your way. Your faith has made you well.’” (Luke 17:11-19) All ten were healed. I wonder why Jesus told the leper who returned, “Your faith has made you well.” Could it be that Jesus was referring to his inner man? Thanksgiving brought faith for healing of spirit, soul, and body. (III John 1:2) As we look at scripture consider the power of thanksgiving. THANKSGIVING MAKES ONE A MORE POSITIVE AND HAPPY PERSON. Paul instructs us to couple prayer with thanksgiving. “But in everything by prayer and supplication with thanksgiving let your requests be known to God.” (Philippians 4:6-7) We recently faced an expensive repair bill for our vehicle. It was stressful not having the available funds on hand, but when I applied thanksgiving with prayer God filled my heart and mind with His peace and assured me that He would meet the need. THANKSGIVING AND PRAISE, BRINGS YOU I N TO T H E PRESENCE OF GOD. The psalmist tells us, “Enter into His gates

with thanksgiving and into His courts with praise. Be thankful to Him and bless His name.” (Psalms 100:45) What joy to come into His presence. THANKSGIVING CHANGES YOUR ATTITUDE AND RELEASES THE POWER AND PRESENCE OF GOD INTO YOUR SITUATION. One of my life verses that has taken me through many dark valleys and mountains is I Thessalonians 5:18, “In everything give thanks, for this is the will of God in Christ Jesus for you.” David said, “I will bless the Lord at all times; His praise shall continually be in my mouth.” (Psalm 34:1-3) This includes the good times and the bad times. Thanksgiving will bring the presence, the peace, and the power of God into your situation. If it doesn’t change your circumstances it will certainly change you. The universal question asked in most American households on the Friday morning after Thanksgiving is, "What am I going to do with all this Turkey?!" In our house, in true cajun tradition of never throwing anything away,

Leftover turkey and sausage gumbo gives you the answer, and not just in November, but any time you have a large left over bird! • 1 leftover turkey or other large bird (smoked is wonderful) • 1-3 celery ribs, chopped • 2 medium bell peppers, chopped • 2-3 cups medium roux (See recipe below)

• 2 pounds smoked pork sausage, sliced 1/2 inch thick • 1 cup chopped parsley • 2 cups chopped green onions • tobasco sauce to your liking • salt, to taste

Pull as much meat off the turkey as you can. Place the carcass in a large stockpot and add water to cover. Bring to a boil over high heat, reduce heat to medium, and let simmer 1 - 1-1/2 hours. Remove the carcass and discard. Add the celery, onions and bell peppers and gradually stir in enough roux to make a medium-heavy gumbo (it should drip from a spoon without clinging). Stir in the salt, peppers, and sausage and let simmer for another hour. Add the turkey meat and let cook 15-20 minutes more. Remove from the heat, stir in the green onions and parsley, and serve in large bowls over rice. Serves 6 - 8.

Quick Roux Place the flour in a large plastic bowl that is easy to handle. Place the oil in a large heavy skillet over very high heat. Once it has begun to smoke heavily, whisk in a little flour — you must use a whisk for this method, because a spoon will not break up the lumps fast enough. The flour will begin to brown immediately. Continue to add flour. The idea is to control the temperature of the oil and therefore the darkness to which the flour cooks as it hits the oil, with the rate at which the flour is added. The faster you add the four, the less the flour will cook. So for a peanut-butter-colored roux you'll be adding the flour a lot faster than for a dark roux. One the roux has reached the desired color — using this method, any color will take only about 10 minutes — remove it form the heat and cool.

Microwave Roux Place the oil in a large microwave-proof bowl. Place it in a microwave oven set on high for about 10 minutes — until a bit of flour dropped in sizzles. Stir in the flour and continue to microwave at medium setting, stirring every 3 - 4 minutes. Peanut-butter-colored roux will take 20 - 30 minutes, medium 40 - 45 minutes, dark 60 - 70 minutes. Note: It is very important to use the largest bowl you microwave will hold, because the roux will rise as it microwaves until the flour has reached its cooking temperature. I have to admit there are times I substitute roux with filé that can be found in most grocery stores. Just follow the directions! Serve gumbo alongside or over steamed rice. *** My suggestion is, if you haven't used a roux – use filé. Thanksgiving! DID YOU KNOW? According to the Food Network, thawing a frozen turkey takes several days. The popular food-based television channel says it can take roughly four to five days for a frozen 20-pound turkey to fully defrost. Thanksgiving hosts who plan to cook turkeys that weigh more than 20 lbs. should afford their turkeys even more time to fully defrost. The Food Network also recommends that cooks who want their turkeys to have crisp skin leave the bird uncovered in the refrigerator overnight. The

time it takes to cook a turkey depends on whether or not the bird was purchased fresh. The Food Network advises cooking fresh turkeys for 10 to 15 minutes per pound in a 350°F oven, while frozen turkeys need roughly 20 minutes per pound at 350°F. And while stuffing is a Thanksgiving Day staple, the Food Network recommends going easy with the stuffing. Turkeys that are not densely stuffed will cook more evenly than turkeys whose cavities are overflowing with stuffing.

HOST A TURKEY-FREE THANKSGIVING Low in fat, high in protein and an inexpensive source of iron, zinc, potassium and B vitamins, turkey makes a healthy addition to a person’s diet. Turkey also tends to be the star of the show on Thanksgiving and other holidays. Even though turkey can be a delicious addition to any holiday table, some people prefer to buck Thanksgiving tradition from time to time and divert focus from the golden gobbler. Even though turkey may b e s y n ony m ou s w it h Thanksgiving, hosts and hostesses should not shy away from serving something different. In fact, turkey may not even have been on the menu for the first Thanksgiving. Thanksgiving dates back to New England in November 1621, when newly arrived Pilgrims and the Wampanoag Indians gathered for an autumn harvest celebration. It’s reported that pilgrims went on a “fowling” mission in preparation for the threeday feast. Although wild turkey was plentiful in the region, ducks, geese, passenger pigeons, and swans were common ly consume d. Historians at Smithsonian say

documents refer to wildfowl and venison as foods appearing at the first Thanksgiving, but turkey was not mentioned. Home chefs can take a cue from those first pilgrims and choose less traditional offerings this Thanksgiving. The following are some ideas that are reminiscent of the first Thanksgiving. • If the flavor is more palatable, don’t hesitate to select another bird to grace the Thanksgiving table, such as a goose or even a chicken. Some people find turkey meat to be too dry, despite all of the different preparation methods. Chicken or goose may be more well-received and just as versatile. • Don’t overlook the possibility of serving fish and other seafood. Colonists and the Wampanoag probably ate eel, lobster, clams, and mussels. The average Thanksgiving dinner table today looks quite different from the one the Wampanoag Indians and Pilgrims gathered around centuries ago. EASY THANKSGIVING IDEAS Thanksgiving is a holiday to give thanks and share special moments with family and friends. While the original Thanksgiving might have taken place during a time when food was sparse, nowadays Thanksgiving often involves excessive amounts of food, with more food ending up in the garbage than in celebrants’ bellies. T h e Un ite d St ate s Department of Agriculture projects that Americans will throw away more than 200 million pounds of edible turkey meat this Thanksgiving holiday. And Thanksgiving typically ushers in a period of wastef u l n e ss , a s t h e U. S . Environmental Protection Agency says American households produce roughly 25 percent more trash between Thanksgiving and New Year’s Day than during the rest of the year. Reducing waste is a worthy goal year-round, but especially so during the holiday season. And accomplishing that goal can be done without sacrificing holiday traditions. • Use fine china when serving meals. Thanksgiving provides an opportunity to serve meals on fine china and use the silverware that has gone unused instead of disposable plates and utensils. In addition to adding a touch of elegance to meals, reusable china and silverware is less wasteful than paper plates and plastic utensils. Cloth napkins and other table linens are also more eco-friendly than paper napkins. • Decorate using natural items. Scour the great outdoors for all-natural center-

piece materials or other items that can be turned into wreaths and garlands. Vases filled with pine cones and acorns make for beautiful, inexpensive and festive decorations. • Shop locally and organically. When shopping for Thanksgiving dinner, choose local produce, poultry and grains whenever possible. Resist the urge to buy more than you need as well. Skip some of the less-popular dishes that are used only to make the table seem full. Buy a small turkey or think about only serving turkey breasts, which tend to be the most popular cuts of the bird. Use reusable shopping bags to carry items home and reduce waste even further. • Light candles and reduce energy consumption. During the meal, eat by candlelight and turn off lights in other areas of the home that are not in use. Rather than turning on the television, take the party outdoors and play a game of football on the front lawn. • Have a local Thanksgiving. Start a new tradition and invite nearby friends and family over for the holiday instead of traveling long distances. According to Use Less Stuff, a resource for eco-conscious men and women, if each family reduced gasoline consumption by one gallon (roughly 20 miles), they could reduce greenhouse gas emissions by one million tons. • Send home the leftovers. Send each guest home with some leftovers if you have any. This way the refrigerator isn’t left full of items that will end up uneaten.
