Over a hundred Christmases have come and gone since 8 year old Virginia O'Hanlon, after being told by her friends there was no Santa Claus, went to her father in desperation for the truth. Instead of answering, he told her to take her question to the experts on everything: the editor of the local newspaper, The Sun. So, Virginia took pen in hand and posed the eternal question of childhood, desperate to know the truth, she wrote, "Please, sir, tell me the truth, Is there a Santa Claus?" I'm sure the editor, Francis P. Church had no intention of composing a classic essay in inspirational literature that September afternoon in 1897 when he sat down to answer a little girl's pressing concern, but that is exactly what he did when he answered her letter.

"Yes, Virginia, there is a Santa Claus." For what kind of world would it be not to believe in the Spirit of Santa Claus and the Holiday Magic of Christmas. We hope you enjoy this year's Holiday Magic magazine. We wish you and yours the merriest of Christmases but most of all to remember the reason for the season!

Directions Preheat broiler. Mix stuffing mix and hot water in medium bowl; cover. Let stand 5 min. Remove stems from mushrooms; chop stems. Cook and stir mushroom caps in 3 T. butter in large skillet until lightly browned. Arrange in shallow baking dish. Add stems and peppers to skillet; cook and stir until tender. Stir into stuffing. ROAST BEEF DINNER with Yorkshire Pudding and Port Merlot Pan Sauce

Roast Beef and Port Merlot Sauce Ingredients 1 boneless beef top sirloin roast (6 -7 lbs.) 2 cups Merlot, dry Kosher salt and freshly ground black pepper, as needed 1 oz. olive oil 6 to 8 garlic cloves 2 cups beef broth, low sodium 2/3 cup port wine 2 T. butter Directions Preheat oven to 250°F. Trim meat of any heavy fat cover in excess of 3/8 inch and any visible cartilage on bottom of roast. Some fat is essential for self basting the roast as it cooks. Season all sides of roast with salt and pepper. On stove top, heat heavy iron Dutch oven or deep skillet, add olive oil and garlic. Brown all sides of beef roast approximately 4 to 5 minutes each side. Place roast in pot in oven. When

internal temperature reaches 110°F (approximately 60 to 80 minutes), turn oven up to 500°F and continue until internal temperature reaches 130°F. This will provide a medium rare product with a nicely browned exterior and take up to 15 additional minutes. Remove roast from oven, transfer to a tray and allow it to rest approximately 20 minutes. While roast rests, a pan sauce and Yorkshire pudding can be prepared. Pour off and spoon all excess fat from the pan. Reserve hot for Yorkshire pudding. Heat pan with remaining juices on medium-high heat, add merlot and reduce by half. Add stock and port. Scrape all browned fond (browned bits of food) from the bottom and sides of the pan. Reduce to about one cup. Strain and remove garlic. Add butter and serve. Yield: 12 servings

Yorkshire Pudding Ingredients 3/4 cup beef fat rendered from roast 1¾ cups flour 3/4 teaspoon salt 1½ cups milk 3 eggs, room temperature Directions Preheat oven to 500°F. In mixing bowl combine flour, salt, and milk. Blend with wire whisk. Add eggs and blend well. Scrape sides and bottom of bowl with rubber spatula and continue to whip until batter is smooth. Let batter sit at room temperature for an hour. Preheat large muffin tins or 3/4 cup glass baking cups in oven with 1½ T. beef fat in each tin or cup. Pour approximately 1/3 cup of batter into each cup. Bake 20-25 minutes or until pudding rises well above level of tins or cups and begins to brown on tops and edges. Reduce heat to 350°F and bake an additional 10 to 15 minutes. Serve immediately. Yield: 8 servings

Vanilla Praline Cheesecake

Ingredients 66 vanilla wafers, divided 1¼ cups sugar, divided 1/4 cup (1/2 stick) margarine or butter, melted 3 pkgs. (8 oz. each) cream cheese, softened 1/2 cup sour cream 1 tsp. vanilla 3 eggs 25 caramels, unwrapped 3 T. milk 1/2 cup pecan pieces, toasted Directions Heat oven to 325°F. Finely crush 50 wafers; mix with 1/4 cup sugar and margarine. Press onto bottom of 9-inch springform pan. Stand remaining wafers around edge, pressing gently

into crust to secure. Beat cream cheese and remaining sugar in large bowl with mixer until well blended. Add sour cream and vanilla; mix well. Add eggs, 1 at a time, beating on low speed after each just until blended. Pour over crust. Bake 45 to 50 min. or until center is almost set. Run small knife around rim of pan to loosen cake; cool before removing rim. Refrigerate 4 hours. Microwave caramels and milk on high 1 minute or until caramels are completely melted, stirring every 30 seconds. Cool slightly. Pour over cheesecake; top with nuts. Yield: 16 servings

Snowy White Chocolate Crescent Cookies

Ingredients 1½ cups all purpose flour 1/3 cup cocoa powder, unsweetened 1/2 cup salted butter, softened 1 cup white sugar 1 tsp. pure vanilla extract 1 large egg 1/2 cup confectioner’s sugars

Directions Preheat oven to 325°F. In small bowl, combine flour and cocoa. Mix well with wire whisk and set aside. In medium bowl, cream butter and sugar with electric mixer on medium speed. Add vanilla and egg, and beat until light and smooth. Scrape down

sides of bowl, then add flour and cocoa mixture. Blend on low speed until fully incorporated. Dough will be dry and crumbly. Shape a level tablespoonful of dough into a 3½-inch log. Slightly bend the log to form a crescent shape. Form remaining dough into crescents and place on ungreased baking sheets, 1 inch apart. Bake 15-17 minutes or until outside of cookie is hard but center remains soft. Cool on pan 2-3 minutes, then transfer to flat surface to cool a few minutes more. While still warm, roll cookies in confectioner’s sugar until coated. Yield: About 2½ dozen

Surprise-Filled Cookies Ingredients 2½ cups all-purpose flour 1/2 tsp. baking powder 1 cup butter, softened 1 cup granulated sugar 1 large egg 2 tsp. vanilla extract 1 cup fruit jam or jelly Powdered sugar for dusting Directions Preheat oven to 300°F. In medium bowl, combine flour and baking powder. Mix well with wire whisk and set aside. In another medium bowl with electric mixer, cream butter and sugar. Add egg and vanilla, beating on medium until smooth. Add flour mixture and blend at

low speed until thoroughly combined. Dough will be firm. Scoop tablespoonfuls of dough, roll into 1-inchdiameter balls, and place on ungreased baking sheets, one inch apart. With the small end of a melon baller, scoop out the center of the dough balls to make a small well. Do not scoop all the way through the cookie. Place 1/2 tsp. of jam in the center of the well. (Place scooped-out dough back into mixing bowl to use to form more cookies.) Bake 22-24 minutes or until golden brown. Transfer to cooling rack and dust with powdered sugar. Yield: 4 dozen

Everyone Loves Banana Bread. It's a Down-To-Earth Sort of Gift.

Prep Time 10 min. Total Time 50 min. Servings: 20 servings or 5 loaves, 4 servings each

This Christmas, give Mini Banana Bread as gifts! They'll love receiving a loaf of Mini Banana Bread and you'll love that it takes less than an hour to make.

What You Need

1 pkg. (2-layer) yellow cake mix 1 pkg. (3.4 oz.) Jell-O Banana Cream Flavor Instant Pudding 4 eggs 1 cup water 1/4 cup oil

1 cup mashed fully ripe bananas (about 3) 1/2 cup chopped walnuts

Make It

Heat oven to 350ยบF. Beat first 5 ingredients in large bowl with mixer until blended. Add bananas and nuts; mix just until blended. Pour into 5 foil mini loaf pans sprayed with cooking spray. Bake 40 min. or until toothpick inserted in centers comes out clean. Cool completely.

Party Roll-Ups Prep: 10 min. | Total: 2 hr. 10 min. ½ cup (half of 8 oz. tub) chive & onion cream cheese spread ¼ cup crumbled reduced fat feta cheese 4 spinach-flavored flour tortillas (10 in.) 6 oz. smoked salmon, thinly sliced 1 cup baby spinach leaves MIX cream cheese spread and feta cheese until well blended. Spread evenly onto tortillas; top evenly with salmon and spinach. ROLL UP tortillas tightly; wrap individually in plastic wrap. Refrigerate at least 2 hr. or overnight. REMOVE plastic wrap just before serving. Cut each roll-up crosswise into 12 pieces. Arrange on serving plate. Makes 16 servings, 3 roll-ups each. * Try substituting ham or turkey as a salmon alternative.

Savory Parmesan Bites Prep: 15 min. | Total: 30 min. 1 1 2 1 ¼

pkg. (8 oz.) cream cheese, softened cup grated parmesan cheese, divided cans (8 oz. each) refrigerated crescent dinner rolls cup chopped red pepper cup chopped fresh parsley

PREHEAT oven to 350˚F. Mix cream cheese and 3/4 cup of the parmesan cheese with electric mixer on medium speed until well blended. SEPARATE crescent rolls into 8 rectangles; press perforations together to seal. Spread 3 Tbsp. of the cream cheese mixture on each rectangle; top with red pepper and parsley. Fold long end of dough up over filling to center; fold up again to enclose remaining filling. Cut each into 4 equal size squares. Place seam sides down on baking sheet. Sprinkle with remaining ¼ cup of parmesan cheese. BAKE 13 to 15 min. or until golden brown. Makes 32 servings, 1 piece each. * Substitute 1 jar (12 oz.) roasted red peppers, drained and chopped, for the red pepper.

Holiday Spritz Cookies INGREDIENTS 2 c. all-purpose or cake flour Pinch of salt 1/2 c. sugar 1 egg 1 tsp. vanilla extract 1/2 lb. Prairie Farms unsalted butter, softened Toppings: Colored sugars Sprinkles

DIRECTIONS Preheat oven to 350°F. Whisk together flour, sugar and salt in a large bowl, then add egg and vanilla extract. Mix together.

Divide into three, and if desired, add food coloring to each for three different colored cookies. Using a cookie press, choose decorative disc and fill with dough. Press cookies through press onto cookie sheet, leaving some space between. Sprinkle with colored crystal sugars or sprinkles. Bake cookies 10-12 minutes, just until bottom edges are only beginning to brown. Let cookies cool on cookie sheet 1-2 minutes, then cool completely on a wire rack. Store in an airtight container.

RUM FRUIT PUNCH Combine in a large bowl 1 can frozen fruit punch concentrate, 1 can frozen orange juice concentrate, 1 can frozen lemonade concentrate (6 ounces each), 1 quart (or liter) rum, and 2¾ quarts cold water. Stir well and sweeten to taste with grenadine. Chill with a block of ice. Pour into 8-ounce glasses packed with ice. Garnish each with pineapple spear, orange slice and maraschino cherry on a skewer (optional). Makes about 22 servings.

FISH HOUSE PUNCH - A PHILLY TRADITION

Combine in a punch bowl, 1 block of ice, 1 quart orange juice, 1 quart grapefruit juice, 1 quart (or liter) Rum. Stir to blend. Garnish with sliced oranges and grapefruit. Makes about 26 servings.

In a large punch bowl, stir 1 quart (or liter) rum, 1 quart cold water or tea, ½ pound superfine sugar, 1 pint lemon juice, 1 pint brandy, and 2 ounces peach brandy until sugar is completely dissolved. Float a large block of ice in the bowl and allow about 2 hours, stirring occasionally, for mixture to season. Serve in punch glasses. Makes about 36 servings.

Put in a festive tin, Peanut Brittle makes a great holiday gift!

Ingredients: 1 cup white sugar 1/2 cup light corn syrup 1/4 teaspoon salt 1/4 cup water 1 cup peanuts 2 T. butter, softened 1 tsp. baking soda -------------------------------------------------------Grease a large cookie sheet. Set aside. In a heavy 2 quart saucepan, over medium heat, bring to a boil sugar, corn syrup, salt, and water. Stir until sugar is dissolved. Stir in peanuts. Set candy thermometer in place, and continue cooking. Stir frequently until temperature reaches 300° F, or until a small amount of mixture dropped into very cold water separates into hard and brittle threads. Remove from heat; immediately stir in butter and baking soda; pour at once onto cookie sheet. With 2 forks, lift and pull peanut mixture into rectangle about 14 x 12 inches; cool. Snap candy into pieces.

Christmas In The New World It is thought that the very first Christmas celebrated in the New World occurred when Columbus's ship, the Santa Maria, struck a sandbar on Christmas Day, 1492. Rescued and brought to shore by natives of the island later known as Santo Domingo, he celebrated the feast of the Nativity by naming the village he founded La Navidad, "the Nativity." But Christmas did not get off to a very good start in the New World, since the Puritans frowned on any and all celebrations. In New England in 1659, celebrating Christmas was forbidden by a law that read: "anybody who is found observing, by abstinence from labor, feasting, or any other way, any such days as Christmas Day, shall pay for every such offense five shillings." Of course, all that changed with the great influx of European immigrants who reached our shores in the eighteenth and nineteenth centuries. The United States is one of the great melting pots of the world, and it follows that Christmas is celebrated in widely different styles among Christian Americans and even among non-Christians who often enter gleefully into a kind of secularized spirit of the season. Most Christmas traditions in the United States can be traced to the folk-ways and customs of the home-

lands of those who have come here. Nevertheless if America lacks a large number of truly distinctive Christmas traditions, it has certainly demonstrated a flair for synthesizing the diverse traditions of the many ethnic groups that live here It was an American, a New York clergyman named Clement C. Moore, who by writing ''A Visit from St. Nicholas" virtually defined the modern notion of Santa

Claus as a jolly, bearded fat man with eight reindeer to pull his sleigh. And of course it was the drawings of the famous political cartoonist, Thomas Nast, which brought that notion visually alive. Two particular elements of the traditional European Christmas to which Americans have taken with special vigor are gift giving, and decorating the Christmas tree. Gift giving at Christmas time has become an almost obsessive preoccupation for Americans, with special merchandising promotions beginning now early in November and reaching a peak in the last weeks before the holiday itself. No matter how often-or earnestly the "commercialization of Christmas" is decried, it remains a phenomenon upon which large parts of the American economy are largely dependent. The idea of a lighted and decorated Christmas tree, which was brought to the New World by German settlers, has become perhaps the most central emblem of the season's festivities, even in desert areas where traditional evergreen trees are not readily available. Framed Christmas Card Ornaments Transform your vintage Christmas Cards into cherished keepsakes that you can display on your tree. For each ornament, you will need a vintage Christmas card, craft glue, acrylic refrigerator photo frame, cardstock, scrapbook paper (optional), 1/4"w silver foil tape, brown satin ribbon, and assorted embellishments (pictured are brown checked ribbon, charms, tags, a jingle bell, and a brad). 1. Cut a saying and images, including a background image, from the card. 2. Trim the background image to fit inside the frame, glue it to cardstock,

and add scrapbook paper photo corners, if desired. Glue the saying and remaining images to the background image. Insert the background image in the frame. 3. Remove the paper baking and wrap the foil tape around the edges of the frame. 4. For the hanger, cut two 6" lengths of brown ribbon. Glue one end of each length to the back of the frame and knot the loose ends together. 5. Embellish the frame as desired.

Sky High Brunch Bake Ingredients 1 pkg.(17.3 oz.) frozen puff pastry (2 sheets), thawed 6 eggs 1 cup ricotta cheese Dash hot pepper sauce 2 pkg.(10 oz. each) frozen chopped spinach, thawed, well drained 4 slices bacon or 1/4 cup bacon bits 1½ cups shredded mozzarella or cheddar cheese 1 cup chopped red peppers

Directions Heat oven to 400°F. Unfold puff pastry sheets and roll out one sheet to about an 11-inch square and one to about a 12-inch square. Line bottom and side of greased 9-inch springform pan with 12-inch pastry sheet. Beat eggs in medium bowl with wire whisk until well blended. Reserve 1 T. egg; set aside. Add ricotta cheese, pepper sauce and spinach to remaining eggs; mix until blended. Layer half each

of bacon, cheese, spinach mixture and red peppers in pastry-lined pan. Repeat layers. Place remaining pastry sheet over mixture; fold and tuck pastry edges into pan to enclose filling; pinch edges together to seal. Brush top crust with reserved egg; cut slits in crust to permit steam to escape. Bake 45 to 55 min. or until golden brown. Cool 10 min. Run small knife around edge of pan before removing. Yield: 12 servings
