AARP SMART DRIVER COURSE IN SALEM The Kaskaskia College Department of Industrial and Continuing Education will offer an “AARP Smart Driver Course” course at the Salem Education Center. The class will be held on Tuesday and Wednesday, Feb. 28 and Mar. 1, 2017, from 8:30 a.m. to 12:30 p.m. The registration number for this class is LLI 7608 SA01D. The AARP Smart Driver course teaches valuable defensive driving skills and provides a refresher of the rules of the road. Since 1979, the course has helped over 14 million drivers learn proven safety strategies and tips for how to adapt one’s driving to com-

KC SPORTS AREA GIRL SCOUTS ROBOTICS TEAMS ASSOCIATION EXCEL AT STATE TOURNAMENT TRIVIA NIGHT Three Girl Scouts of The Kaskaskia College Athletic Department and Sports Association will host a Trivia Night on Saturday, March 18 at the Breese American Legion located at 575 N. 2nd St. in Breese. Doors will open at 6:00 p.m. and trivia will start at 7:30 p.m. Emcee for the night will be Mike McManus. Trivia teams are being sought at $25 per person. Teams can have 6-8 at a table with a maximum 8 players per team. Groups may bring in snacks and a cash bar will be available. Must be 21 to attend. Participants are encouraged to bring their own snacks and to decorate their table. Best decorated table will receive a gift. Cash prizes for top teams will be awarded. Southern Illinois Robotics teams excelled during competition among 64 teams competing in the FIRST LEGO League (FLL) Central Illinois State Tournament at University of Illinois in Champaign-Urbana on Saturday. FLL is a robotics program for 9 to 14 year olds which is designed to get children excited about science and technology, as well as teach them valuable life skills. Along w it h pro g r a m m i n g robots, teams are also evaluated on an elaborate research project, as well as how well they demonstrate FLL Core Values, which include teamwork, collective learning, active participation and gracious professionalism. After practicing and preparing for months, teams meet at regional qualifying tournaments to be graded on the three elements, with top teams advancing to state competition. Girl Scouts of Southern Illinois Team results are as follows: GIR! from Staunton won the Research Award, which FLL states “recognizes a team that utilizes diverse resources to formulate an in-depth and comprehensive understanding of the problem they have identified.

From day one President Donald J. Trump has made it clear he is going to keep America safe, so he put a ban on seven countries for a limited time. Those countries are Iraq, Iran, Sudan, Syria, Libya, Somalia and Yemen. Keep in mind these seven countries are the same countries pinpointed by Barack Obama and Congress, and justifiably so, in my opinion. Under the law and according to the Constitution, Trump is within his legal authority as the President to institute this ban through an executive order. But on Saturday U.S. District Judge James Robart, appointed by George W. Bush, as a "so called judge" overturned the ruling, or should I say paused it. The White House said the Justice Department would challenge the judge's ruling, and that procedure has already started. I remember Obama's statement about executive orders, "I have the power of the pen and phone." You've got to love it! Where was the outcry over Barack Obama's executive orders? Our immigration policies must be put in place. Illegals are flooding into this country in record numbers. Cross the borders of Iran illegally and you will end up in jail for 20 years; otherwise you will be shot. And keep in mind that three former Presidents have put bans on illegal immigration in recent history; they were Jimmy Carter, Bill Clinton and Barack Obama. As reported in the Los Angeles Times, Obama invoked it 19 times, Clinton 12 times

and George W. Bush 6 times. I am in agreement with Donald Trump who said, "When a country is no longer able to say who can and who cannot come in and out, for reasons of safety and security — big trouble." This President is a President for all the people, and in my opinion, he has the right to respond to his critics. Yet the left is straining to create the impression that the ban was a Muslim ban. In fact, it was not. Had it been, I would have been against it! The ban was placed on unstable countries. Because of past unstable activity, it would have and should have included Saudi Arabia, Turkey, and Egypt, as well as Pakistan, a very Muslim country, proving once again by Trump's actions this was not a Muslim ban. Nor should any have been banned for the Muslim reason. Donald Trump has not once said this is a Muslim ban. These are words that came out of the mouths of Nancy Pelosi, Chuck S c hu m e r, E l i z a b e t h Wa r r e n , a n d o t h e r Democrat leaders as well as the flaming liberal media. The left's favorite words have b e come Muslim ban, racist, sexist, and classism. It's interesting I haven't heard these words from the right, who for the most part, appear to be happy with what Donald Trump has done. The only objection I have to this ban is those which were here with visas and green cards (less than 300 across the country) should

have not been held back. However, within 10 to 12 hours they were allowed in. I've waited that long in a terminal, but I'm not saying I liked it. In case some don't get it — and many don't — we are in a very dangerous place in this country, in more ways than one. Paul Ryan said of the ban, "What is important is Donald Trump's administration is taking steps to reinstate the ban legally." Unfortunately, as long as the Democratic Party has people like Nancy Pelosi and the Elizabeth Warrens — the old guard — they will continue to shoot themselves between the eyes and self destruct. And these Republican sweeps will continue across the country, sadly taking down some of our — and I do mean our — best leaders, just because they are on a Democratic ticket. Everything has become too political, even on Super Bowl Sunday. For example, the commercial from Budweiser Beer was about an immigrant. The key word is legal immigrant. Our ancestors came to America legally, and so it should be today. In closing, on a lighter note for the Super Bowl commercials, I'm buying a bottle of Mr. Clean tomorrow. Until next week. Cornish Game Hens With Brown Rice Stuffing

4 Cornish game hens (about 1 lb. each) 1/2 tsp. salt (preferably coarse) Pinch of pepper

STUFFING:

1 T. butter 2 shallots, or 1 small white onion and 1 clove garlic, minced 1/4 lb. fresh mushrooms, sliced lengthwise 1/2 tsp. curry powder

1/4 tsp. curry powder 1/4 tsp. ground ginger

1/2 cup brown rice 2 T. raisins 1 cup plus 2 T. chicken broth 2 tsp. grated orange peel

TO FINISH:

2 T. butter Juice of 1/2 orange 2 T. oil 1 egg yolk 1/4 cup dry white wine or apple cider Thaw Cornish hens if frozen. Combine salt, pepper, curry and ginger. Rub all over hens to season. Prepare stuffing: Heat 1 T. butter in large skillet; stir in shallots and mushrooms and cook briefly, then stir in curry powder. Add rice and saute over medium heat about 2 min.. Stir in raisins and broth. Cover skillet and bring to boil. Reduce heat and simmer about 30 min., until rice is almost tender. Add grated orange peel; fluff rice. Spoon stuffing into cavities of hens, pulling a mushroom slice over the opening. Secure legs, trussing with white thread. Heat remaining butter and oil in large skillet. Add hens, one at a time, turning to coat and glaze all sides. Place glazed hens on rack in roasting pan; baste with wine. Cover loosely with foil and roast in preheated 375° oven about 30 min.. Uncover and baste with drippings and orange juice; reduce temperature to 325° and bake another 20 to 30 min., until tender and golden. Reduce temperature to 150° and hold until ready to serve. Just before serving, strain drippings into small saucepan. Beat egg yolk with a little of the hot drippings, then return to pan and heat, stirring, to thicken slightly — do not boil. Place birds on large platter. Spoon some sauce over birds, and garnish with watercress. Serve remaining sauce separately. Makes 4 servings.

2 T. butter 1 small white onion, finely chopped 1/4 lb. fresh mushrooms, sliced, or 1 (3 oz.) can sliced mushrooms 3 lbs. fresh small peas, shelled, or 1 (10 oz.) pkg. frozen tiny peas, thawed

2 T. chicken broth or liquid from canned mushrooms Salt and white pepper to taste Broad lettuce leaf

In saucepan or skillet, heat butter and saute onion and mushrooms about 3 min., turning to glaze. Add peas, broth, salt and pepper. Cover vegetables with broad lettuce leaf, then cover pan. Steam about 4 min., shaking pan to cook evenly. Discard leaf before serving. Makes 4 servings.

Avocado With Cherry Tomatoes

2 ripe avocados 12 cherry tomatoes, halved 1 small head Boston or curly leaf lettuce 1/2 cup salad dressing Use ripe avocados which yield slightly to pressure. (To hasten ripening, place avocados in a brown paper bag.) Shortly before serving, slit avocado skin lengthwise into fourths; pull back skin to peel. Cut each avocado lengthwise in half, twisting to release pit. Cut each half into 4 lengthwise slices. If desired, arrange lettuce leaves on each salad plate. Place 2 pairs of avocado slices, wide ends up, on leaves to form heart shape. Fill "heart" with cherry tomatoes. Spoon salad dressing over and serve. Makes 4 servings.

Sieve cottage cheese or whirl in blender or food processor. Beat together with cream cheese and salt. Add cream and beat until mixture is smooth. Turn mixture into 4 individual heart-shaped baskets or porcelain coeur dishes lined with moistened cheesecloth (or use 1 large basket or coeur dish). HEARTS AND LOVE ARE INTERTWINED Hearts and Valentine's Day are forever intertwined. One of the most recognizable symbols of love is the modest heart, and hearts adorn candy boxes and cookies while paper hearts are pinned to doors or windows as a symbol of Valentine's Day. Young valentines may share candy hearts printed with silly sentiments. A symbolic heart bears no resemblance to an anatomical heart, and yet it is used to represent the deepest feelings of affection a person can share. Some may wonder just how the emo-

tions of love became tied up in the shape of a heart, even though it's widely known that the brain, and not the heart, governs affections. In ancient times, people believed that the heart was the center of all human emotions. Since the heart is prominently located in the center of the chest and the middle of the body, it became the cornerstone of human feelings. Love is considered to be one of the most profound and strongest human emotions, therefore it was reasoned that the feeling must emanate from the heart.

Surprisingly, the heart has not always been the only organ associated with love. During the Middle Ages, the heart was deemed a useless organ. Followers of the Greek physician Galen theorized that the liver actually was the seat of the soul and love. The first depictions of a symbolic heart date back to the 11th century, when the heart was drawn to resemble a pinecone held upside down with the point facing upward. The scalloped heart that is more familiar today first arose in the early 14th century. Around the

same time, the heart was depicted with the point facing downward and the indentation at the base. Naturally, as time passed and more was learned about human anatomy, it became obvious that the brain was the seat of all emotion and thought processes. However, as the brain was something intangible in a living body in ancient times, and the beating heart could be much more readily monitored – with a pulse rate speeding up when a person is excited or aroused – it's easy to see how the

link between the heart and love has endured. Although the human heart is not bright red like symbolic hearts, that was the color chosen. Red has long been associated with passion, so it made sense to depict the heart in a bright red hue. Many other theories have been offered regarding the symbolic heart and its representation of love. While there's no definitive correlation between love and hearts, the heart has become an accepted symbol of the emotion and the season of romance.

HOW TO MAKE YOUR CUT FLOWERS LAST LONGER What would Valentine’s Day be without a beautiful bouquet of flowers? In addition to chocolate, cards and dining out, flowers — particularly roses — are among the most popular gifts. According to a survey by the National Retail Federation, 58 percent of American men and 16 percent of American women were projected to buy flowers for Valentine’s Day 2016, spending a total of $1.9 billion. Similar spending is predicted for in 2017. Flowers of all shapes, sizes, colors, and aromas can make popular gifts this February. Prolonging the life of beautiful blooms is a priority for those who want their Valentine’s Day arrangements to endure for as long as possible. Florists and other experts differ with regard to the best methods of preserving flowers. Here are some ideas to try. Trim Stems Before Immersing In Water The natural emollients and sap in the stems of flowers may cause a film to form over the bottom of the stem after it is initially cut. This can reduce the flower’s uptake of water. To alleviate this, cut the stems once the flowers are home. A 45-

degree angle allows for the absorption of the most water. You can recut them at each water change as well. Clean Vases Of Bacteria Be sure that vases or other vessels you use to hold flowers are completely clean. Bacteria can cause the flowers to decompose prematurely. Use a diluted bleach-and-water solution to clean vases thoroughly between uses. Watch Flower Placement Sunlight and heat may dry out the blooms. Prolong the life of flowers by placing them in the darkest, coolest area of the home. Treat The Water To preserve flowers, do your best to reduce bacteria, provide a food source for the flowers and manage the pH so that the uptake of water will continue to be strong. Sugar can be an adequate food source. Gardenista, a floral arrangement and gardening resource, tested a variety of methods for preserving flowers and found much of the same results across the board. These included vinegar and sugar, conventional flower food, bleach, aspirin, and a penny. The bleach, aspirin, copper

penny, and vinegar work as antibacterial agents. The sugar and the plant food help nourish the blooms. In the trials, most of the blooms remained strong for three to four days. Purchase Immature Blooms Although many desire an arrangement of all opened flowers, bouquets that have some closed buds

or those that are just beginning to peek out will likely last longer than bouquets that have already bloomed. Redemption’s Call Redemption is the encompassing theme of the Bible. Jesus answered redemption’s call in His mission to the earth. The Merriam-Webster Dictionary defines redemption as “the act of redeeming, to recover property by discharging an obligation, to ransom, free, or recue by paying a price.� Oswald Chambers wrote that the reality of the Christian life finds its power in redemption. “Jesus Christ came to redeem the whole world and to place it perfectly

whole and restored before the throne of God.� To live in freedom, you must understand and experience redemption’s call. Consider these aspects of redemption. THE PROPHECY OF JOB’S REDEEMER. We hear the gospel of redemption in possibly the oldest book in the Bible, the book of Job The wealthiest man of his generation lost everything including his health. Through his suffering, Job received one of the greatest revelations of all time when he declared, “For I know that my Redeemer

lives and He shall stand at last on earth, and after my skin is destroyed, this I know, that in my flesh I shall see God.� (Job 19:2526) Job had the hope of eternal life because he had a redeemer. Job prophesied of Christ who would pay the redemption price by laying his life on the cross as the supreme sacrifice for our sin. Christ indeed lives as the Resurrection and the Life. THE PRECIOUS PRICE OF REDEMPTION. Just as the Jews were enslaved by Pharaoh in Egypt and needed a deliverer, so mankind has been enslaved by sin and death and in need of a redeemer. Psalm 49:5-9 paints the picture of the precious cost of redemption. “Those who trust in their wealth and boast in the multitude of their riches, none of them can by any means redeem his

brother nor give God a ransom for him – For the redemption of their souls is costly.� The New Testament reveals the precious price of redemption. “Knowing that you were not redeemed with corruptible things, like silver or gold, f rom you r ai m l e ss conduct . . . but with the precious blood of Christ, as a lamb without blemish and without spot.� (I Peter 1:18-20) There are two sides to the coin of redemption here. We were redeemed “from� and redeemed “to� or “through Christ.� (Romans 3:24; 6:4; I Peter 3:18; Hebrews 9:12, 22) After my grandma Rose answered redemption’s call, she took her grandchildren to church. It was in children’s church where I was first exposed to redemption through the pastor’s wife’s story of

“Tommy’s Lost Sailboat�. Tommy was sailing his toy sailboat when the string broke and the sailboat drifted away and was lost. He searched everywhere for it without success. One day he saw his sailboat sitting in the window of a store. He went in and discovered it had a price tag on it for way more money than he had to buy it back. Tommy worked hard and sold what he had and was finally able to purchase his lost sailboat. What joy he had in his heart when he could once again take his boat home and sail it. He loved and appreciated it even more. That story explained what redemption is all about to my young mind. Jesus paid the ransom price to redeem us and it was costly. THE PRINCIPLE OF FAITH IN REDEMP-

TION. The apostle Paul taught us in his epistles that no amount of our works could ever free us from the law of sin and death. Only faith in Christ’s redemption can free us. (Galatians 3:1214) THE POWER OF REDEMPTION’S HOPE. Job declared his hope of eternal life because his redeemer lived. Jesus gave us this assurance, “Now when these things begin to happen, look up and lift up your heads, because your redemption draws near.� (Luke 21:28) This refers to our full redemption. Is Your Pet Ready for Air Travel? DEAR PAW’S CORNER: I just read the letter from a reader who's been asked to return a cat to its original owner. I hope that if they send the cat back, they don't send it by air! Animals are put in the airplane's baggage compartment, which is not heated. I recently was on a plane with a seat display showing the outside temperature as 70 below zero. — Sarah S., via email DEAR SARAH: I'll probably hear otherwise from a few readers, but transporting pets on aircraft is fairly safe, and they are not exposed to sub-zero temperatures while in the cargo hold. Of course, we've all

heard about pets that were injured or died while being transported, so I looked into this claim. According to Pets Express, one of several companies that specialize in transporting animals via commercial aircraft, "Air travel is as safe for pets as it is for people. Your pet will travel in a special cargo compartment [which is] both climate controlled and pressurized for your pet's safety and comfort. It is on the same air circulation system as the cabin." That said, traveling as cargo is not for every dog and cat. Pets that are elderly, easily stressed or have existing medical conditions can be at risk of developing health problems or even dying during transport. Many airlines prohibit certain breeds — particularly brachycephalic animals that have restricted breathing such as Bulldogs or Chow Chows, and even Burmese cats.
