Bailee Dykstra, Levi Brown and Mika Taylor The Section 21 FFA Public Speaking Career Development Event was recently hosted by Kaskaskia College's Agriculture Department staff and students. Three Sandoval FFA members took part in the event. Mika Taylor and Levi Brown participated in the Extemporaneous division. In the Extemporaneous Public Speaking CDE, participants are given 30 minutes to deliver a speech on one of three assigned agricultural topics. Students must learn to think on their feet and develop an argument quickly and persuasively. Sandoval freshman Bailee Dykstra participated in the FFA Creed divi-
sion. Students must present the FFA Creed from memory and answer questions about its meaning and purpose. The event boosts self-confidence, develops their ability to communicate in a powerful, professional manner. FFA members who demonstrate outstanding speaking and communication skills are enhancing their ability to lead and be successful in the work place. FFA‘s mission is to dedicated to making a positive difference in the lives of students by developing their potential for premier leadership, personal growth and career success through agricultural education.
COMMUNITY COLLEGES SIGN CAREER AGREEMENT The Illinois Community College Board (ICCB) announces that all 39 community college districts across the state have signed on to participate in the Comprehensive Agreement Regarding the Expansion of Educational Resources (CAREER Agreement). This agreement allows community colleges to share the career and technical education (CTE) programs of each institution and provide students with access to programs that might otherwise be unavailable to the student in his or her home community college district. “The CAREER Agreement capitalizes on the finances, facilities, equipment, and personnel of each college to expand student access to degree and certificate programs in high demand career and technical education fields,” said Dr. Karen Hunter Anderson, executive director of the ICCB. “The fact that all 39 districts have signed on to participate in this voluntary agreement
reflects the system’s commitment to providing affordable, accessible educational opportunities for students.” Under the terms of the agreement, students may take advantage of CTE programs offered at any other Illinois community college if the program is not offered in their home district. The students benefit by paying the resident tuition and fee rates, despite living outside the community college district. The agreement also eliminates charges assessed to the student’s in-district community college when a student enrolls pursuant to this agreement at a community college outside his or her district. The Illinois Community College Board is the state coordinating board for community colleges. Illinois is home to 48 community colleges in 39 districts and has the third largest community college system in the nation serving nearly 850,000 residents each year in credit and non-credit courses.

A NEW BEGINNING The founding of the Methodist Children's Home of the Southern Illinois Conference began in the heart of an orphan boy, Dan W. Hopkins, who later became a Methodist preacher and served as a supply pastor. He was orphaned at the age of 10 and grew up with a desire to do something for children who were underprivileged as he had been. The home was officially opened on the first of February, 1913. The methods in child care have undergone a great many changes since the home first came into being. There was a time when it was considered that the more children who could be crowded into an institution, the greater the service of that institution. We now know much more about the needs of care. So from 1913 to today there have been many changes, added services, huge growth, and caring for and toward the communities served by United Methodist Children's Home which is no longer totally an orphans home. But today, big things are happening, although the same faith based organization offers the same services with plans for serving hundreds more in 2017. In 2016 United Methodist Children's Home served 1,000 people — children, families and adolescents. But today as Dr. John Shadowens, President and CEO said so appropriately in his opening speech on Thursday, March 30 at the Drury Inn in Mt. Vernon when the announcement was made, with all new beginnings comes name change. The board recently met and voted unanimously to change the name to Spero Family Services, Hope • Help • Healing. As said by Spero Board Member Tony Wielt, "It is so much more than a children's home yet for many of us in Southern Illinois when we hear the name United Methodist Children's Home that's what we think. Frankly, the name was not descriptive enough of the body of work that we do." The new brand is a name that is rooted in God’s love and promise of an abundant life. “Spero” is the Latin word for “I hope” from the phrase “While I

The new agency logo, a stylized anchor, is rich in imagery and meaning. The top of the anchor is a cross; at the bottom a sparrow’s head –its wings intertwined with the anchor. This represents the very heart of agency’s mission and values. The rising anchor is a symbol for Hope. - “We have this hope as an anchor for the soul, firm and secure.” Hebrews 6:19. When a ship’s anchor weighs, or is raised up, it signals the beginning of a new voyage, a new adventure. The strong and enduring tradition and affiliation with the United Methodist Church also remains the same. This new name opens more doors for support, and allows the people throughout Southern Illinois to become more aware of the full array of services available in addition to the youth homes in M t . Those other services include outpatient counseling services with locations in 6 counties throughout the region; a Foster Care program, a Youthbuild program to help teens get their HSE/ GED and learn a trade, parenting support, an on campus school, a nursefamily partnership program that helps first-time mothers, transitional living, and Bright Start, a faithbased childcare center in Mt. HEIGHTS FINANCE The Presidency in Crisis! That was the introduction going into Meet the Press on Sunday. I guess that's what the liberals like Chuck Todd call fair and balanced! I certainly don't. At a press conference last week a CBS reporter questioned White House Press Secretary Sean Spicer and literally put words in his mouth, with Spicer calling him out on it! The last two months have been totally crazy. And what the Democrats as well as the Republican establishment are seeing is Trump supporters aren't buying in, but only getting stronger! Why aren't we talking about what the President is doing? Like what he's doing to help the American people, even with all the roadblocks the rocket scientists in Washington and the liberal media are throwing out! Chuck Schumer is jumping up and down against the vote next week for Supreme C our t nominee Neil Gorsuch. I predict he will be confirmed. He's more than qualified, with an excellent track record. At this point there is a majority that will vote for this nominee. It was Schumer that changed the rules that he's upset about now, I think, in 2013. Now he wants to change them back! Schumer's complaint is
that Neil Gorsuch is conservative. Imagine that; he's replacing Justice Antonin Scalia. The bottom line is Schumer doesn't have the votes to filibuster. Schumer's prediction is Neil Gorsuch won't be confirmed as a Supreme Court Judge. My prediction is he will. No matter what, it will be lively this week in the Senate. The big question is: It's 70 days in and where are we in the Trump Presidency? Frankly, if I were a House Democrat I would be very nervous in 2018. The last thing this is, in my opinion, is a Presidency in crisis. On to the Russians. Former FBI Agent Clint Watts says the Russians are still at it, waiting for the U.S. to crumble from within. He said on Meet the Press," The Russians were (and are still involved) on a state to state basis! What was interesting was he said they pushed for Trump as well as B ernie at times. Hmmm! Let's see. Russia wanted Bernie to win in the primary against Hillary and Trump to win in the general against Hillary. Maybe now it's coming to light. It was discussed years ago that then Secretary of State Hillary Clinton was "involved in the last Russian election" against Putin. Maybe this
whole Russia thing is they were paying Hillary back! If the Russians are involved John McCain says it's an act of war! Is he beating the war drums? The bottom line is the majority of the American people were fed up and are still fed up. Our elected officials, both Democrat and Republican, need to start doing what they're supposed to do, start working together and get things done. Prime example: There is no reason American citizens can't have access to a healthcare plan that works. Instead of being concerned about Obama's legacy, sit down and get it together.And if they had the same insurance (Obamacare), they would fix it! In closing, I've gotten a number of calls about a book I mentioned last week, The Art of the Deal, written by Donald Trump. The most important chapter to read is Chapter II. 4 eggs, separated 1 cup freshly squeezed orange juice 1/2 cup sugar 1 cup heavy cream 1 cup bourbon (optional) 1/2 cup light cream 1/4 cup orange liqueur (optional) Freshly grated nutmeg 1/2 tsp. finely grated orange peel Beat egg yolks and sugar until thick Beat in bourbon and liqueur. Stir in orange peel and orange juice, then stir in heavy cream and light cream. Beat egg whites until stiff but not dry; fold into the orange juice mixture. Pour into a chilled punch bowl and sprinkle nutmeg over the top. Makes 12 servings (3 oz. each).
Easter Ham
1/2 fully cooked ham (5 to 6 lbs.) 1/2 tsp. ground ginger 1 cup pineapple juice 1 can (10 oz.) mandarin orange 3/4 cup light brown sugar sections, drained 2 tsp. dry mustard Whole cloves Prepare ham for baking as directed on label. (For extra succulence, bring ham to boil in large saucepan of water; drain.) Place ham on rack in roasting pan and bake in preheated 325° oven 1 hour. Remove from oven and, with knife, score fat in scallop pattern. Combine pineapple juice, sugar, mustard and ginger in small saucepan. Bring to boil and cook, stirring, until slightly thickened. Baste ham with some of juice mixture. Increase oven temperature to 425° and bake ham 10 minutes. Remove from oven and center a mandarin orange section in each scallop, securing with a clove. Brush ham all over with juice mixture and bake 20 minutes longer, basting frequently. Makes 6 to 8 servings (with leftovers).
Herb-Scrambled Eggs
8 to 12 eggs 2 to 3 T. chopped fresh herbs (parsley, chives, 1/2 to 3/4 cup light cream tarragon) or 1 T. dried mixed herbs 1/2 tsp. salt 1/4 cup butter Pinch of pepper Beat eggs with cream, salt, pepper and herbs. In large skillet, heat butter until bubbling (do not let butter brown); pour in egg mixture. Cook over low heat, using spatula to stir set portions of egg in from sides – do not overcook. Makes 6 to 8 servings.

2 pkgs. active dry yeast 1/2 tsp. vanilla 1/2 cup warm water 1/2 cup honey 1/2 cup warm milk 1/2 tsp. salt 6-1/2 cups flour 1 cup sugar 4 eggs plus 2 yolks, beaten 2 T. salad oil 1 cup butter, melted Confectioners' Sugar Glaze 1/2 cup raisins (recipe below) Dissolve yeast in warm water in large bowl. Add milk and 1½ cups of flour; stir until smooth. Cover and let rise in warm place until doubled in bulk, 3 hours or more. Beat down dough. Add remaining ingredients except Confectioners' Sugar Glaze, beating in remaining flour gradually. Knead in bowl until dough is smooth and elastic. For baking pans, use 2 tall, 1 lb. coffee cans. Grease pans and fit each one with collar of greased brown paper (this will add height to bread). Fill pans 2/3 full of dough. Cover and let rise in warm place until doubled in bulk, at least 1 hour. Bake in preheated 375° oven about 1 hour or until well browned. Cool in cans 10 minutes, then remove to rack. When cool, spread with Confectioners' Sugar Glaze, allowing some to drizzle down sides.
Confectioners' Sugar Glaze
1 cup confectioners' sugar 4 tsp. heavy cream 1/2 tsp. vanilla Combine all ingredients and beat until smooth. NOTE: Kulich is a traditional Russian Easter food. For easy buffet service, remove the cap from the Kulich and cut the bread crosswise into rounds. Re-form and top with the cap. Q: When I was a youngster growing up in Illinois, I was quite the fan of Rin-TinTin. I ate Nabisco Shredded Wheat since the company sponsored the television series. I have the "Adventures of Rin-Tin-Tin" board game and the magic brassring set. I am not interested in selling, but I have wondered what they might be worth. Incidentally, I had a dog that I named Rin-TinTin. — Carl, El Paso, Texas A: Warner Brothers introduced The Wonder Dog in 1923, and the talented German Shepherd became an instant star and generated so much money that
he actually saved the studio from bankruptcy. Rin-TinTin starred in 19 films for Warner Brothers between 1923 and 1930. He was also featured on both radio and television. Your board game is valued in the $50 to $150 range, depending on condition, according to Ted Hake, author of the "Price Guide of Character Toys." Washington decided that the bill would have resulted in a higher number of representatives than that proscribed by the Constitution. • On April 3, 1860, the first Pony Express mail, traveling by horse and rider relay teams, simultaneously leaves St. Joseph, Missouri, and Sacramento, California. Ten days later, the westbound rider arrived in Sacramento, beating the eastbound mail packet by two days. • On April 8, 1916, at the Boulevard Race in Corona, California, an early racing car careens through a barrier and into a crowd after a wheel breaks, killing the driver and two others. CITY WIDE SPRING CLEANUP WEEK The City of Centralia would like to announce that this year’s spring city wide cleanup event is scheduled for this week, Monday, April 3 through Friday, April 7, 2017. This curbside pickup service is provided by the City of Centralia Public Works Department. Participation is limited to single-family residences, town homes, condominiums and apartments that do not exceed four units per building. All items are to be placed on the curb by 6 a.m. on the assigned pickup day. Any item(s) not longer than 5 feet or more than 50 pounds left at the curbside at any of the above defined residential units will be picked up

The Trinity and the Cross I’ve always viewed St Patrick’s Day as a harbinger of spring. St Patrick is the patron saint of Ireland. As a young man, Patrick was captured by raiders off the coast of England and was sold as a slave to a farmer in Ireland. Patrick prayed that if God would help him escape and get back to his family in England, he would serve God all the days of his life. Patrick did escape, took a ship back to England, studied for the priesthood, and returned to Ireland as a missionary.

Legend says that Patrick used a cross to drive all the snakes out of Ireland and miracles followed his ministry. To teach his many converts about the Trinity of the God-head, Patrick used the threeleaved shamrock to demonstrate the Father, the Son, and the Holy Spirit as the great three-in-one. (Ephesians 2:1-3) “But because of His great love for us, God, who is rich in mercy, made us alive with Christ.” (Ephesians 2:4-8) Through the cross we have been raised up in heavenly realms with Christ. (Ephesians 2:6) Through the cross of Christ, the Father has a wonderful destiny for you. (Ephesians 2:10) Through the cross we have been reconciled to the Father, “brought near by the blood of Christ.” (Ephesians 2:13) In the cross, Jew and Gentile have access to the Father by one Spirit. In the old covenant of only the high priest could enter with blood into the presence of God. In the new covenant of the blood of Christ, through the “veil of His flesh”, all believers have access to God! (Ephesians 2:16-18) The Holy Spirit honors the blood. Through the cross both Jew and Gentile become one new man. Our body becomes a temple for the Holy Spirit to dwell in. (Ephesians 2:22) THE OBEDIENCE OF CHRIST TO THE CROSS. “And being found in appearance of a man, he humbled himself by becoming obedient to death – even death on a cross! Therefore, God exalted him to the highest place.” (Philippians 2:6-11) In the Garden of Gethsemane,

Yet not as I will, but as you will.” (Matthew 26:36-44) Isaiah prophesied of Gethsemane, the cross, and the resurrection. “Yet it was the Lord’s will to crush him and cause him to suffer and, though the Lord makes his life an offering for sin . . . After he has suffered, he will see the light of life and be satisfied.” (Isaiah 53:1011) Because Jesus was obedient to death on the cross, God has exalted Him and given Him the name above all names, “that at the name of Jesus, every knee shall bow; and every tongue confess that Jesus Christ is Lord, to the glory of God, the Father.” (Philippians 2:10-11) When you see that shimmering shamrock of St Patrick’s, let it remind you of the work of the trinity and the cross. GIVE BLOOD AND HELP SAVE LIVES THIS SPRING Eligible blood donors of all blood types are encouraged to give blood through the American Red Cross this spring to help ensure a sufficient supply for hospital patients. Donated blood is perishable and must constantly be replenished to keep up with hospital patient need. Red blood cells are the blood component most frequently transfused by hospitals and must be used within 42 days of donation. Eligible donors can give red blood cells through either a regular whole blood donation or a Power Red donation, where available. Power Red donors give a concentrated dose of red blood cells during a single donation, allowing them to maximize their impact. During this type of donation, red blood cells are separated from other blood components, and the plasma and platelets are safely and comfortably returned to the donor. While donors of all blood types are encouraged to give blood, type O, A negative and B negative donors are urged to give Power Reds if they meet the additional eligibility criteria. Type O negative is the universal blood type and can be transfused to patients of any blood type in an emergency. Similarly, type O positive can be transfused to Rh-positive patients of any blood type. Types A negative and B negative can be transfused to Rh-positive or negative patients. Power Red donations help ensure a stable supply of these critical blood types. Whole blood can be donated every 56 days, up to six times a year, and Power Red donations may be made

eople who see dermatologists for the skin condition psoriasis should not take the presence of joint aches and pains lightly, as the two things might be connected. The National Psoriasis Foundation notes that psoriasis is a precursor to psoriatic arthritis in 30 percent of patients. What is psoriatic arthritis? Psoriasis is an autoimmune condition that affects the rate of skin cell reproduction. People with psoriasis may experience redness, itchiness and raised bumps (plaques) of skin on various areas of their bodies. Psoriatic arthritis is a chronic form of arthritis that typically occurs in people with skin psoriasis, but also can be present in those without the skin condition, but particularly among those who have relatives with psoriasis. The American College of Rheumatology says that psoriatic arthritis typically

affects the large joints, especially the lower extremities, distal joints of the fingers and toes and the back and sacroiliac joints of the pelvis. Early recognition, diagnosis and treatment of psoriatic arthritis are crucial to relieving inflammation and preventing permanent joint damage. Symptoms Symptoms of psoriatic arthritis can develop gradually or quickly, and some symptoms can be severe. THE ROLE INSULIN PLAYS IN THE BODY
I
nsulin plays a key role in metabolic functions in the body. People with diabetes have an intimate knowledge of insulin, particularly if they do not produce enough naturally. However, the rest of the public may be less knowledgeable about the role of insulin and its impact on overall health. Insulin is produced in the pancreas of the human body. Its most important function is the way it interacts with glucose (blood sugar) to allow the cells of the body to use that glucose as energy. Insulin can be viewed as a type of key that unlocks the cells and enables glucose to enter. The pan-
creas senses when there is a spike in glucose in the bloodstream and reacts by producing insulin. According to the Hormone Health Network, insulin also works to ensure the liver stores excess glucose so that it is not actively in the blood. Stored glucose is called glycogen. This glycogen can be converted into fat when it is needed. Insulin also affects other metabolic processes, such as the breakdown of protein or fat. If insulin is not being produced in the right amounts, the result is high blood sugar, or hyperglycemia. Chronic hyperglycemia is the hallmark of diabetes mellitus.
Complications of high blood sugar include damage to the nervous system, kidneys, eyes, and the extremities. Type 1 diabetes occurs when the pancreas fails to produce enough insulin. Supplementation with insulin will be necessary to avoid drastic changes in blood glucose levels. When a person has type 2 diabetes, cells fail to respond to insulin properly. This is referred to as insulin resistance. As the disease progresses, a lack of insulin may also develop. Typically with this type of diabetes, excessive body weight and not enough exercise are the culprits in insulin re-
sistance. Eating a healthier diet and becoming more physically active can help reverse the condition. Too little glucose in the blood (hypoglycemia) can make a person feel irritable, tired or confused. Low blood sugar can lead to loss of consciousness. That is why it is crucial that blood sugar concentrations remain relatively stable. Without insulin, the body could not effectively make use of the energy obtained through eating and drinking. Insulin helps unlock cells so that glucose can be used to its full potential.

HOW WOMEN CAN PROTECT AGAINST OSTEOPOROSIS

bone disease that occurs when the body loses too much bone, makes too little bone or both, osteoporosis can be debilitating. According to the National Osteoporosis Foundation, osteoporosis is responsible for two million broken bones each year, a figure that experts predict with rise to three million by 2025. While anyone can suffer from osteoporosis, women are more likely than men to develop the disease. Studies suggest that while up to one in four men age 50 and older will break a bone due to osteoporosis, one in two women age 50 and older are likely to suffer such a fate. The NOF notes that osteoporosis is often referred to as a silent disease, with many people not even realizing they have it until they suffer a fracture. Because of the silent nature of os-

teoporosis and their increased vulnerability to it, women may want to take the following measures to protect themselves against this potentially debilitating disease. • Include ample calcium and vitamin D in your diet. The NOF notes that calcium and vitamin D are both vital to building strong, dense bones when you’re young, and both calcium and vitamin D keep bones strong and healthy as the body ages. Women age 50 and younger need 1,000 milligrams of calcium each day, while those 51 and older need 1,200 milligrams each day. Calcium-rich foods include dairy products like low- or non-fat milk, yogurt and cheese. Women age 50 and younger need between 400 and 800 international units (IU) of vitamin D each day, while those age 50 and older need between 800 and 1,000 IU each day. The

When you call and they say they have a waiting list on litters they have and a waiting list on the unborn, more than likely you are looking at a puppy mill. If the breeder has 30 puppies, it's definitely a puppy mill. 6. Vaccinations. Puppy mills do not like to spend money. That being said, more than likely the parents may not be vaccinated (always ask). Puppies have probably not been not vaccinated or there are so many they've been done twice. 7. Beware of breeders making promises. If you have a certain mix and they promise that the dog will have a certain type of quality of one breed or the other, steer clear. 8. Cleanliness. Puppy mill puppies will likely have a smell like a kennel and they have poor coat quality. 9. Breeders should care enough about what happens to a puppy that she / he should have a contract protecting you both. 10. Too young. There is a certain age you are allowed to take a puppy from his/her mother. If the breeder lets you take them before time, more than likely it's because they
do not want to have that extra expense. Neglect is one other form of abuse. It is the failure to provide basic care required for an animal to thrive. According to the Animal Legal Defense Fund, at first glance cases may seem less egregious than a single brutal act of violent abuse, but severe neglect can mean extended periods of extreme suffering resulting in permanent injury or even death. The Animal Legal Defense Fund maintains a database of criminal cases in the U.S. It was reported to their organization 30% of cases that they tracked was animal neglect, often associated with human neglect. This could mean the elderly, or young children, or other dependents. Neglect could also include handling animals on a large scale as the puppy mills mentioned earlier, or hoarding animals. We as a community need to put a stop to the cruelty of animals. They cannot speak for themselves. We are responsible for those who are unable to defend themselves. April may be set aside for the awareness of animal cruelty, but we as human beings should always be the voice of those that cannot be heard.

As it's been said over and over, even though there are people in the world working on prevention of animal cruelty, every 60 seconds an animal is abused, according to the ASPCA (American Society for the Prevention of Cruelty to Animals). And for every animal abused, there are many more dumped by uncaring owners as well as irresponsible people who don't have their dogs and cats spayed and neutered. Many of these precious puppies and kittens don't have happy endings. No one works harder to prevent these unforgivable situations from happening than The City of Centralia with the help of Bobby Patton II and the kind, dedicated people at the Centralia Animal Shelter including Kim Abbott, the shelter manager. So what does the Centralia Animal Shelter do? To start with, it's realistic for me to say the facility is as close to a no-kill shelter as it can come. These hardworking, dedicated people, along with Jean Lloyd, have saved thousands of innocent lives with the help of monetary donations from business and local residents. The breakdown of statistics from 2016: There were 624 cats and dogs taken in by the Centralia Animal Shelter. Out of those 624 animals, 470 were adopted and went to rescues. That's 75%. 121 were returned to owners, at 20%. The last 5% were euthanized. These dogs and cats were
beyond help either because of severe injury or illness or because they were deemed dangerous and beyond rehabilitation. At the end of 2016, 95% were placed with loving, caring families or in rescues waiting for their forever homes. So if you're like me, an animal lover and activist, my time and money is going to the Centralia Animal Shelter. And I'm not alone, starting with a $10,000 donation by the late Mrs. Wilson Estate (husband, Jerry Wilson) to pay for a badly needed addition to be completed in 2017. Thanks also to Borowiak's IGA in Centralia for the donation of thousands of dollars worth in cat and dog food, including treats; thanks to Buchheit for dog and cat food donations; and thanks to Wal-Mart for their weekly donation of food. Than ks to many schools in Centralia. In addition, thanks to the residents of the area that donate everything from paper towels to dog food and cat food. Some donate gas cards to help transport animals to rescue centers as well as to veterinarian visits, plus make cash donations for spaying and neutering. All the above is still greatly needed, and your help for the animals is appreciated. And thank you to those like Mrs. Jerry Wilson and others that have left money from their estates to carry on their love for the innocent dogs and cats that need and deserve a loving forever home.
