LOCAL WOMEN RECEIVE PRESTIGIOUS STATE AWARDS Two local women were honored at the recent state convention of the Illinois Federation of Business Wo m e n ' s C l u b s i n Champaign Illinois with their most prestigious award — Outstanding Working Women of Illinois. Pastor Anita Munden and Judge Jo Beth Weber were presented the awards at the federation's banquet to honor them on Saturday May 6, 2017. Both have had distinguished careers in their respective working life as well as furthering their education and raising families. Both have succeeded in careers that are male dominated. Pastor Munden started her career in teaching math and physics. She then went on to get her Master's Degree in accounting embraced the new computer age and rose through the ranks to become the Benefits Supervisor of a large company. In this job she traveled throughout the country. Finally, she followed her heart and calling, went to seminary and became a pastor in the Methodist Church. Since then she has served throughout central and southern

Illinois. She is currently the pastor of First Methodist Church in Centralia and the Methodist Church in Irvington, Illinois. Judge Jo Beth Weber is well known in Mt. Vernon and Jefferson County for her work with providing opportunities for offenders through the creation and support of both the Youth Court and the Drug Court. Both give offenders the opportunity to change their lives through strict compliance and cooperation. Judge Weber is a lifelong Jefferson county resident. She received her undergraduate and legal degrees from universities in Illinois and has spent her legal career in Illinois mostly in Jefferson County. She was the first
woman to be elected to her judicial district and has greatly modernized and improved the system. She is active in Jefferson County organizations and activities. The Illinois Federation of Business Women's Clubs was pleased to honor these two outstanding working women. Both, along with their husbands and the judge's children, attended the banquet to receive their awards and each gave a short speech talking about their careers and what it took to succeed. Judge Weber was the invited speaker to the Post Convention Board meeting of the federation and emphasized the need for perseverance in the face of negativism to attain success.

LOCAL LAW ENFORCEMENT EXECUTIVE ATTENDS PROFESSIONAL DEVELOPMENT PROGRAM Chief Brian Atchison of the C entralia Police Department is one of several law enforcement executives from across the state to participate in the course Enduring, Surviving and Thriving as a Law Enforcement Executive, hosted by the Illinois Law Enforcement Training and Standards Board Executive Institute. The orientation for new police chiefs was held May 22-25, 2017, in Springfield, Illinois. This new chiefs’ of police orientation presents concepts, strategies and information that will guide the law enforcement executive in managing and leading
the organization effectively. Chief Atchison received training on a variety of subjects including legal issues, managing critical assets, mentoring, strategic planning, leadership development and political realities. Founded in 1991, the Illinois Law Enforcement Training and Standards Board Executive Institute guides the professional development of managers and leaders in the law enforcement community. Kyle McCarter said at the end of the 2017 spring session, “I have some awfully bad news for the people of this state. The fight for power and the unconcern for the citizens continues. There is no desire to deliver a balanced budget that respects the taxpayers. Instead, the political games continue. All they proposed were new programs and punishing tax increases.” In my opinion, starting with Gov. Bruce Rauner, I believe he is trying to solve the State’s problems in four years, and Speaker of the House Michael Madigan isn’t willing to give an inch. Prior to the vote the House Democrats shoved unacceptable wants into the budget and the Republicans couldn’t and wouldn’t create more problems for this already close-to-bankrupt state! More on this in next week’s column from Rep. John Cavaletto. Next up, Kathy Griffin, who is the perfect embodiment of what the modern left believes and is, sad but true. As far as the head shot (let’s call it that) which I found disgusting and deplorable as so many of us did, let me assure everyone that had it been the head of Barack Obama I would have found it every bit as
deplorable and disgusting. Now this “sicko” is crying crocodile tears because Donald Trump, his wife and his grown children ruined her career. Guess what, she ruined her own career. In Ms. Griffin’s own words, she said, “He broke me,” referring to Trump. If this isn’t a flaming leftist statement I don’t know what is! It’s never their fault! And yes, she apologized, rolling her eyes! And now she’s hired an attorney, Lisa Bloom, to sue. Really! For What! Even Trump’s harshest critics (like Chelsea Clinton) joined Trump himself on Twitter in decrying the sight. Yet according to Ms. Griffin she’s the victim. Again, this is a prime example of Hollywood living in a bubble. However, this isn’t just going on in Hollywood; look at New York as well as Chicago. On to the Paris Accord. In my opinion, the Paris Climate Accord was another example of Washington entering into an ag re e me nt t h at put America at a disadvantage and was a benefit to other countries. In Trump’s own words, leaving the American worker and taxpayers to absorb the cost in terms of lost jobs and lower wages. In other words, it leaves the U.S holding the economic and financial burden, not to mention the cost to us was a vast fortune.
The bottom line is the Paris Accord is very unfair to us. Just one of the highlights of the Paris Accord was that the current agreement blocks the development of clean coal in America, but China was allowed to build hundreds of additional coal plants, and India will be allowed to double its coal production by 2020. Does this make sense? India can double coal production yet we are supposed to get rid of ours. In the long run, the accord didn’t eliminate coal jobs; it just transferred those jobs to foreign countries. Enough is enough. Hate Trump or love Trump, the Paris Accord is full of what I pointed out above, and it took a responsible leader to stand up and say so! Plus NO responsible leader could have signed an agreement like the Paris Accord that — simply put — left America at a tremendous disadvantage. Trump said, “I was elected to represent Pittsburgh, not Paris.” So while many liberals are jumping up and down, Trump is following through on his campaign promises to America. Until next week. Father's Day is just around the corner. Why not plan a dinner that he'll remember! What man doesn't love meat loaf? Below is our recipe for a prize winning meat loaf, but be sure to use excellent quality ground meat for the best results. The perfect sides just for Dad: Baked potatoes or scalloped potatoes because either can cook in the same oven with the meat loaf along with Dad's favorite veggie. For dessert try Mocha Pudding with Coffee Cream. What Dad wouldn't appreciate this special meal!

2 lbs. ground meat, preferably a combination of beef, pork, and veal 1 cup milk 1 cup fresh bread crumbs or uncooked rolled oats (any kind except "instant") 1/2 cup chopped parsley
1/3 cup finely chopped onion 1 egg, lightly beaten 2 T. chili sauce or tomato ketchup 2 tsp. prepared white horseradish 1¼ tsp. salt 1/4 tsp. freshly ground black pepper
Preheat the oven to 375°. Combine all the ingredients in a large mixing bowl. Using your clean hands, work the mixture until it is well combined and all the ingredients are evenly distributed. Pack into a 9x5-inch loaf pan, smoothing the top to an even level. Bake in the preheated oven until the meat loaf is nicely browned on top and the meat juices no longer run pink in the center when pierced with the point of a sharp knife, about 55 to 60 minutes. Remove any grease that has accumulated in the bottom of the pan with a bulb baster or by pouring it off. Cut into 3/4-inch slices and serve. Yield: 6 servings.

1 large onion, sliced thin (about 1 cup) 1½ T. butter 1 large clove garlic, minced 1½ lbs. all-purpose potatoes, peeled and sliced thin

Preheat the oven to 400°. In a large skillet, saute the onions in 1 T. of the butter over medium-low heat until the onion begins to soften, about 3 minutes. Add the garlic and saute about 1 minute more. Place the onion mixture in a shallow 2-quart baking dish or gratin dish. Add the potatoes, add salt and pepper, and toss gently until well combined. Use a spatula or large spoon to spread the potatoes in an even layer in the baking dish. Pour the cream over the potato mixture. Use a food processor to make crumbs from the bread and sprinkle evenly over the potato mixture. Dot with the remaining 1/2 T. of butter. Place in the center of the oven and bake 10 minutes, then lower the heat to 350°. Continue to bake until the potatoes are tender, the crumbs are richly browned, and the mixture is bubbly, about 35 to 40 minutes. Serve directly from the baking dish. Yield: 6 servings.

2/3 cup granulated sugar 1 T. cocoa 1½ T. cornstarch 1 tsp. instant coffee, preferably instant espresso Pinch of salt 3 cups milk 2 eggs COFFEE CREAM: 3/4 cup chilled heavy cream 2 tsp. confectioners' sugar
2 egg yolks 1 cup (6 oz.) semisweet chocolate chips or 6 (1 oz.) semisweet chocolate, squares, chopped 1 T. butter 1 T. coffee-flavored liqueur (optional) 2 tsp. vanilla extract 1/2 tsp. instant coffee, preferably instant espresso
To make the pudding, combine the sugar, cocoa, cornstarch, instant coffee, and salt in a heavy saucepan. Slowly stir in the milk and bring to a boil over medium heat, stirring constantly. In a small bowl, whisk together the eggs and the egg yolks . Whisk in a small amount of the hot milk mixture to temper the eggs, then whisk the egg-milk mixture back into the saucepan. Cook over low heat, stirring constantly, until the mixture is the consistency of a medium-thick cream sauce and heavily coats a spoon, about 5 minutes. Remove the pan from the heat and add the chocolate and the butter. Stir until the chocolate is melted and the mixture is smooth. Stir in the liqueur and the vanilla. Pour the pudding into six individual dessert dishes or stemmed glasses or 1½-quart bowl and refrigerate until firm, about 1 hour. To make the coffee cream, combine the chilled cream and the instant coffee and stir until the coffee dissolves. Whip the cream, adding the confectioners' sugar as the cream thickens. Serve the mocha pudding topped with a large dollop of the coffee cream. Yield: 6 servings. NOTE: The pudding may be made ahead and covered when cold. RED CROSS CALLS FOR NEW DONORS TO PREVENT SUMMER BLOOD SHORTAGE The American Red Cross urges those who have never given blood before – as well as those who haven’t given recently – to make an appointment to give blood or platelets now and help sustain a sufficient community blood supply this summer. While the need for blood is constant during the summer months, the Red Cross experiences a drastic decline in new donors. Nationwide, about 32 percent fewer new blood donors, and 41% fewer in Illinois & 39% fewer in Missouri, came out to give last summer than during the rest of the year. Additionally, many schools where blood drives are held – and where new donors give – are not in session, and current donors often delay giving due to summer vacation plans. While about 38 percent of the population is eligible to give blood, less than 10 percent of those eligible actually do. The blood donation process takes about an hour with the actual donation only taking about 10 minutes. Whether new to donating blood or a lifelong donor, the Red Cross offers helpful tips for an enjoyable donation

I recently stopped in at McDonald’s and saw the wife of a friend of mine. I asked her how her husband was doing. I was shocked to hear that he had a foot amputated and was in a rehabilitation facility. I was somewhat embarrassed because, even though I consider him a friend, I was not aware of the ordeal he had been through. We have various levels/circles of friends. It’s not always possible to have close fellowship with all our friends. Even Jesus, while on earth, had an inner circle among all his friends. I have some exciting news! Because of Jesus’ blood shed on the cross, things have significantly shifted, for now every believer in Christ Jesus
can have free, open access into the presence of God and cultivate an intimate friendship with God. (Revelation 3:20) Before Jesus ascended back into heaven, he assured his disciples that he would not leave them as orphans, but would send another helper — the Holy Spirit. (John 14:15-17) What a wonderful privilege has been afforded us that, through the blood of Jesus and fellowship of the Holy Spirit, we can be a friend of God. The Holy Spirit reveals the wonderful “deep things of God” with his friends. (I Corinthians 2:9-10) Consider these aspects of developing a close, personal friendship with Jesus. In John 15 Jesus gives us a treatise on the ultimate friendship. C O N N E C T IO N . A l l friendships must have some connection. The connection may be work, school, community, church, or one of the tightest connections of all — family. But the most intimate and enduring connection of
all is a spiritual connection. Jesus said, “I am the vine, you are the branches, he who abides in me and I in him bears much fruit, for without me you can do nothing.” (John 15:5 -8) The life connection Jesus reveals is fellowship with the Living Word and prayer. PROTECTION, Jesus demonstrated the love of a true friend. “Greater love has no one than this, than to lay down one’s life for his friends.” (John 15:11-14) Jesus laid down his life for you. Oh, what a friend! He promises to protect his sheep. (John 10:116, 27-30) Jesus was betrayed by his friends, but he loved them to the end. The prophet Zechariah gave us a prophetic insight into Christ’s friendship. “‘What are these wounds between your arms?’ Then he will answer, ‘Those with which I was wounded in the house of my friends.’” (Zechariah 13:6) The cross demonstrated Jesus’ great sacrifice. AFFECTION. Friends love one another. Jesus revealed the depth of his love. “As the Father loved me, I also have loved you; abide in my love . . . Greater love has no one than this, than to lay down his love for his friends.” (John 15:9-14) Friends are loyal. Jesus said, “If you love me, keep my commandments. (John 15:10) Do you love Jesus? Show and tell him. ELECTION. We typically choose our friends. Jesus calls

(John 15:1617) The theological term is election. “Therefore, as the elect of God, holy, beloved, put on tender merc y.” (Colossians 3:12; Titus 1:1; Romans 11:15) In the gospel of Luke, we see a powerful example of election in the story of Zacchaeus, a rich tax collector, who wanted to see Jesus as he passed by. When Jesus saw him, he s aid to him, “Zacchaeus, make haste and come down, for today I must stay at your house.” (Luke 19:5) Zacchaeus and Jesus had dinner together. Jesus was criticized because he was friends with tax gatherers and sinners. Zacchaeus repented of sin and became a friend of Jesus. Jesus said to him, “Today, salvation has come to this house . . . for the Son of Man has come to seek and to save that which is lost.” (Luke 19:1-10) How sweet it is — to know you are chosen. The old hymn summarizes it well: “What a friend we have in Jesus, all our sins and griefs to bear! What a privilege to carry everything to God in prayer! O what peace we often forfeit, O what needless pain we bear, all because we do not carry everything to God in prayer!”

Improving flexibility is a goal for many athletes, whether they’re daily exercise devotees or weekend warriors. Taking steps to improve and maintain flexibility has numerous benefits that can pay dividends for athletes of all ages. Ac c o r d i n g t o t h e Harvard Medical School, well-stretched muscles more easily reach their full range of motion. That ben-
efits athletes by improving their performance, and it can also improve daily life for non-athletes by making it easier to reach, bend or stoop to perform everyday tasks. As beneficial as being physically flexible can be, many people, no matter how hard they try, struggle to improve or maintain their flexibility. Fortunately, there are some ways that
devoted men and women can improve their flexibility and enjoy all of the benefits that increased flexibility provides. • Choose the right activities. Harvard Medical School notes that activities that lengthen and stretch muscles can help active men and women reduce their risks for injury while potentially preventing back pain and issues that may affect their balance. When done correctly, yoga can improve balance and flexibility. In addition, numerous studies have linked yoga to additional health benefits, such as stress reduction, that can make people less tense, thereby improving their flexibility. • Drink more water. Drinking water helps to prevent tightness and muscle cramps. In fact, tightness or muscle cramps in the large muscles of the leg may be indicative of the early stages of dehydration. Drinking plain water is the most effective way to stay and remain hydrated. Don’t count coffee, tea or sports drinks as water, as such beverages many contain caffeine. Caffeine is a diuretic, and while diuretics cause the increased passing

If it’s been awhile since you last worked out, resist the temptation to push yourself when returning to the gym. means reducing the amount of weight you lift and decreasing the resistance during cardiovascular exercises. Putting too much strain on muscles that have been sedentary for an extended period of time can cause aches, pains and even injury. Muscle tightness also may develop if you go too hard too quickly, greatly reducing flexibility. • Get up and go. Poor flexibility may be a byproduct of your lifestyle. Men and women who live sed-
entary lifestyles are less likely to enjoy the full range of motion from their muscles than those people who are more active. Get off the couch when spending time at home, and if you work in an office, take routine breaks to stand up and walk around. Poor flexibility can be painful and inconvenient, but there are many ways for men and women to improve their flexibility and, as a result, their quality of life.

LIFESTYLE CHANGE GOALS The American Psychological Association recommends that men and women interested in making lifestyle changes begin by making realistic short- and long-term goals and then starting small. Unrealistic short-term goals can compromise people’s efforts at making positive changes, ultimately derailing their efforts. But realistic short-term goals can pave the way to realizing the loftier longterm goals. For example, the APA recommends that people who set a long-term weight loss goal of 20 pounds begin by aiming to lose one pound a week. Accomplishing that shortterm goal can give people the confidence and satisfac-
tion they need to propel them toward achieving their long-term goal. The APA also advises that men and women who want to change unhealthy behaviors do so one unhealthy behavior at a time, unless several unhealthy behaviors are putting their overall health in imminent danger. Quitting smoking and
eating healthy requires considerable effort and dedication, and individuals may encounter problems when they try to do too much at one time. As a result, the APA recommends waiting until one new healthy behavior has become routine before attempting to change another unhealthy behavior.

Few health problems are as prevalent as back pain. The American Chiropractic Association says that 50 percent of working Americans admit to having back pain symptoms each year. Bone and Joint Health Canada states that as much as 80 percent of people experience back pain at least once in their lifetime. Back pain can be so significant that it results in a loss of function that impedes daily activities. In fact, according to the 2015 Global Burden of Disease report, back pain is the single leading cause of disability in most countries. Back pain can be a complex issue. According to data complied by TheGoodBody.com, only one in 10 people learns the primary cause of their pain. That’s because many things, including muscle sprains or joint irritation, can contribute to back pain. Other factors that may contribute to back pain include arthritis, stress, obesity, or diseases of the internal organs. A sedentary lifestyle can be a major contributor to back pain. Nearly half of Americans who experi-

Qi Spine, a clinic that gathered data from 1,300 people who said they deal with spine-related pain, found that half the participants with sedentary jobs had lower back pain. Standing, moving around and taking breaks from the desk can help alleviate pain. • Lose weight. The spine is vulnerable to effects of obesity. Extra weight in the abdomen may pull the pelvis forward and strain the lower back, states the A m e r i c a n O b e s it y Association. Losing weight can reduce that strain on the lower back, thereby reducing pain. Back pain is a frequent complaint and compels many people to visit their doctors. Exercise, maintaining a healthy weight and strengthening core muscles can go a long way toward keeping the back healthy and pain-free.

High blood pressure is a big problem. According to the U.S. Centers for Disease Control and Prevention, roughly one in three adults in the United States has high blood pressure. In Canada in 2014, slightly less than 18 percent of Canadians ages 12 and older reported being diagnosed with high blood pressure. While such figures might be frightening, Johns Hopkins Medicine notes that there are some simple and natural ways for people to lower their high blood pressure. • Opt for heart-healthy foods. Instead of foods that are high in sodium, eat a diet that is rich in whole grains, fruits, vegetables, and lean proteins. Check labels before buying prepared foods at the grocery store, as many such foods
Dairy allergy vs. lactose intolerance Dairy allergies and lactose intolerance are often thought to be the same thing. While each condition can produce a number of similar symptoms, their origins are quite different. According to the Center for Food Allergies, an allergy is an immune system response that results in inflammation and tissue damage. An allergy to dairy may cause an array of symptoms, from abdominal discomfort to ear infections to joint pain. Lactose intolerance is a deficiency in the enzyme lactase, states the IBS Treatment Center. Lactase is required to digest lactose, the sugar present in milk and dairy products. If a person has a lactose intolerance, symptoms may include bloating, pain and cramps, gas, and diarrhea, depending on how much lactase the body makes. Sometimes those who never had a problem with dairy prod-
ucts can develop lactose intolerance or a dairy sensitivity later in life. Because eliminating lactose from one’s diet will not treat a dairy allergy, thousands of people have to seek alternatives to the dairy products they enjoy. Dairy can be found in whey protein powder, milk, cheese, butter, casein protein, and even in soups, candy and breads. It’s important for all people to read product labels before buying foods, but especially important for those with dairy allergies to do so. Dairy alternatives Acceptable dairy alternatives are introduced every day. Historically, many of these products are soy-based, but nowadays there are rice-, almond-, oat-, hazelnut-, and even coconut-based alternatives on the market. These products are available as milks, butters, yogurts and cheeses. Some dairy alternatives have

fewer calories and less saturated fats than dairy products, but they may not have as much protein as dairy. Therefore, beefing up protein consumption through other foods may be necessary (try quinoa cereal and cashew milk for breakfast). Also, look for dairy alternatives that have added calcium, especially if you get the bulk of your calcium from milk products. A newer dairy alternative is showing promise. While not high in calcium, hemp milk made from water and cannabis seeds is rich in heart-healthy omega-3 fatty acids. Hemp milk is a good vegan source of protein. Hemp also doesn’t contain many complex sugars that can lead to stomach upset. Rest assured that hemp milk does not contain the psychoactive component of marijuana. Neighbors Battle Over Dog's Backyard Habits DEAR PAW’S CORNER: I've been letting my dog out in the backyard for years to do his business. Lately, my new next-door neighbor has been complaining to me about the smell coming from my backyard. I haven't noticed anything; I think he just doesn't like my dog. Now he's threatening to call the city. What can I do to stop this harassment? — Annoyed in Altoona, Pennsylvania DEAR ANNOYED: I'm not in a position to judge this situation. However, I can tell you that in warm weather, the smell of fresh
dog poop carries quite a long way. If your neighbor is trying to enjoy a nice spring morning in his backyard at the same time your dog does his business, the two are bound to cross aromatic paths. Try to listen to your neighbor and get more details on when he notices the smell. Is the odor constant, or just for a few minutes? Would it be possible to compromise by letting your dog out an hour earlier in the morning or later at night? On another note, are you picking up after your dog? If not, waste can quickly litter your backyard to the point that you can't enjoy it either, for fear of stepping in poo. It's also a terrible fertilizer: Dog poop and urine have high levels of nitrogen, which yellows and eventually kills grass. If your back yard has clumpy tufts of grass or no grass at all, your dog's poop may be the reason. As far as calling the city, whether it takes action
