few years ago in late spring, I arrived at the farm and as I pulled into the circular driveway, I spotted what looked like shining rocks on the gravel. Upon closer inspection, I realized the shining rocks were three eggs. Wondering what kind of bird would lay their eggs on rocks without any kind of nest and worrying that unsuspecting folks might not spot the eggs, I pulled a bench over them to protect them from the dangers that might prevent these baby birds from hatching. Soon after, a tiny bird appeared that looked like a seagull and sounded like one as well, and she placed herself on her unborn babies and was quite content. As I approached, another bird quickly came swooping in, screeching, and landed nearby. Immediately it started running away from the nesting bird, dragging its wing as if it was hurt badly. Then, after my attention was turned away from the eggs, concerned about the injured bird, it took flight! I soon realized this was an instinctive act of a protective father. It didn’t take long to share my concerns about the tiny family with Kent Niermann from The Feed Bin who told me about the amazing bird called the Killdeer. He also told me that this unusual bird’s hatchlings arrive running as they break their way out of the shell under mama’s and papa’s watchful eyes. And true to Kent’s word, I was able to catch this amazing experience that not many get to see. Nature never ceases to amaze me and now each late spring and summer I listen to the sounds of the Killdeer and realize Mother Nature can take care of herself. We humans can learn so much by simply watching and listening to God’s miracles, the killdeer beingg just one of them..

Many Americans have fond recollections of the backyard grape arbors of their youth. This modern version is more stylish and less traditional, but it has a charm all its own, for a time all its own. Construct the basic frame for each side by attaching 2” x 4”s to the 4” x 4” vertical posts with nails or 6-inch lag screws. Add lattice panels. Position each side of arbor in desired area and locate and dig post holes. Seat the 4” x 4”s in holes and fill with alternate layers of gravel and earth. Build the top framed lattice panel and cut top end supports as shown below. After nailing end supports to top panel, lift top onto vertical structures and fasten with nails or lag screws. Add optional seats if desired. Use bricks or gravel underneath the arbor so path doesn’t get muddy.

chool may be out for summer, but as a parent, you can ensure there are plenty of opportunities for your children to learn new things throughout the vacation. Start with something fun, practical, and vital to health and wellness. According to the Centers for Disease Control and Prevention, childhood obesity has more than tripled in the past 30 years. But you can fight this trend with a hands-on lesson in nutrition. Gardening is a great way to bridge the summer learning gap and promote a healthy lifestyle. Not only will you be improving your family’s nutrition by incorporating fresh fruits and vegetables into your

meals, you’ll be exposing your children to a subject they may not learn about in school. Families everywhere are encouraged to learn together while gardening. Here are several tips to help you learn in the garden: • Involve your children in the process of picking out what type of plants to grow. Then develop fun, nutritional meals together, such as veggie pizza and fruit salad. • Bugs are cool! Get your kids excited and curious about crucial garden critters with library books, Internet sites, your local science center, videos and bug games. • Read stories about gardening with your children. Make a scrap-

book about the experience of growing your garden. • Emphasize gardening and nutrition lessons in your home, too. Get your kids watering the house plants and making sure they have enough sunlight. Teach your kids what is compostable and have a discussion over dinner about where all the food on their plate comes from, not just what you’ve grown yourself. Expose them to a wide variety of new fruits, vegetables, plants and seasonings. The fruits and veggies you harvest will be delicious, but your child’s knowledge will be the most important thing you grow in the garden this summer. n

Grilled Shrimp with Homemade Barbecue Sauce

barbecue sauce and grill for 3 to 4 minutes on each side. Brush with more sauce just before serving.

Cook Time: 40 minutes Yield: 4 servings

Homemade Barbecue Sauce: Wrap bacon slice around the bunch of thyme and tie with kitchen twine so you have a nice bundle. Heat about 2 tablespoons oil in large saucepan over medium heat. Add bacon-wrapped thyme and cook slowly for 3 to 4 minutes to render the bacon fat and give the sauce a nice smoky taste. Add remaining ingredients, give sauce a stir and turn heat down to low. Cook for 20 minutes to meld flavors. Once sauce is done cooking, remove thyme bundle and discard. Take about 1 1/2 cups of sauce and reserve for serving alongside shrimp. Pair with sweet potato puffs or try grilling waffle cut sweet potato seasoned fries.

Grilled Shrimp: 16 large jumbo shrimp 1/2 cup olive oil Kosher salt Fresh ground pepper Homemade Barbecue Sauce: 1 slice bacon 1 bunch fresh thyme Extra-virgin olive oil 2 garlic cloves, chopped 2 cups ketchup 1/4 cup brown sugar 1/4 cup molasses 2 tablespoons red or white wine vinegar 1 tablespoon dry mustard 1 teaspoon ground cumin 1 teaspoon paprika (or smoked paprika if available) Shrimp: Use a pair of scissors or paring knife to slit backs of shrimp and remove the vein. Combine shrimp and olive oil in bowl and toss evenly to coat. Cover and keep refrigerated until ready to grill. Prepare homemade barbecue sauce. Prior to heating, spray grates of large outdoor grill using PAM® Grilling, specially formulated for no-stick performance at higher temperatures. Next, heat grill to medium-hot. Season shrimp with salt and pepper and place on grill. Baste with homemade

The Fourth of July has been a federal holiday since 1941. Though that may seem like a long time for the country to wait to celebrate the independence it declared in 1776, the tradition of the Fourth of July, often referred to as Independence day, dates back to the dawn of the American Revolution and the adoption of the declaration of Independence on July 4, 1776. Since then, July 4th has been recognized as the dawn of American independence, and celebrations that included fireworks and parades can be traced back to the 18th century. On July 4, 1777, the city of Philadelphia, which would become the first capital of the United States

of America, held the first annual commemoration of American independence, and exactly one year later George Washington ordered that all of his soldiers be offered double rations of rum to commemorate the anniversary. In 1781, Massachusetts was the first state to make July 4th an official state holiday, and the day was actually declared a federal holiday by the U.S. Congress in 1870. However, that declaration did not grant a paid holiday to federal employees. That benefit came in 1941, which is why that year is now recognized as the first year when the Fourth of July officially became a federal holiday.

(12 oz.) pound cake, cut into 10 slices 1⅓ cups blueberries, divided 2 pkg. (8 oz.) cream cheese, softened 1/4 cup sugar 1 tub (8 oz.) whipped topping, thawed SLICE 1 cup of the strawberries; set aside. Halve the remaining 3 cups strawberries; set aside.

STIR boiling water into dry gelatin mixes in large bowl at least 2 min. until completely dissolved. Add enough ice to cold water to measure 2 cups. MEANWHILE, line bottom of 13 x 9-inch dish with the cake slices. Add sliced strawberries and 1 cup of the blueberries to thickened gelatin; stir gently. Spoon over cake slices. Although warm-weather cooking may call to mind backyard barbecues, there is much more to seasonal dining than charbroiled frankfurters and beef patties. Taking a fresh approach to cooking can yield a number of new and innovative meals.

Cool down

When the temperature is high, few people want to fill their stomachs with heavy, hot foods. Instead of cooking up a batch of stew, reinvent recipes for a warm-weather spin. For example, experiment with chilled soups. Borscht is a beetbased soup of Eastern European origin that is very often served cold. Other vegetables or fruits can be pureed and served as a cold summer soup. Gazpacho, a Spanish tomato-

based soup, is the most widely known cold soup. However, cucumber- and avocado-based soups and creamed vegetable soups also can be enjoyed chilled.

Embrace salads

While salads may be relegated to side dishes for most of the year, they tend to take center stage when the weather is warm. The addition of fresh berries, grapes or raisins can lend a different flavor to salads. Think about topping salads with grilled fish or chicken to add more substance to salads serving as entire meals. Rather than using heavy dressings that may end up covering the delicate flavors of lettuce leaves and other greens, use vinaigrettes made from citrus fruits to add both sweetness and tartness to dishes.

Savory sandwiches

Who says sandwiches are only for lunch? When the weather is warm and families are busy hurrying here and there, sandwiches make for fast and portable meals. Grilled vegetables paired with grilled mushrooms can make hearty, satisfying sandwiches that are relatively low in calories. Previously grilled chicken can be shredded and turned into chicken salad when mixed with Greek yogurt and apple cider vinegar. Even standard cold cuts can be given a new twist when turned into cold-style reubens by being topped with cole-slaw or chilled sauerkraut on gourmet slices of herbed bread.

Pastas / casseroles

Much as warm-weather soups can be served cool, so can pastas

and casseroles. Pasta is a versatile food that can be paired with traditional salad ingredients or mixed with vegetables or dressings to make a variety of different dishes. Baked casseroles can be served at room temperature for pot-luck meals in the yard or brought along when visiting friends and family. Chunks of mushrooms, summer squash, eggplant and garlic can be sauteed and baked together to make a hearty and flavorful vegetable casserole.

Seafood

Lobster, shrimp and clams can be harvested from the coast and then cooked on the grill or over an open fire. “Margarita” Dip

Recipe This cool and creamy dip is a refreshing treat for a hot summer day. Serve it with fresh or grilled fruit. Prep: 10 min. | Total: 1 hr 10 min (incl. refrigerating)

1 pkg. [8 oz.] cream cheese, softened 1/4 cup frozen limeade concentrate, partially thawed 2 Tbsp. orange juice 1/2 cup thawed whipped cream topping BEAT cream cheese, limeade concentrate and orange juice in medium bowl with electric mixer on medium speed until well blended. Gently stir in whipped topping; cover. REFRIGERATE at least 1 hour. SERVE with cut-up fresh fruit and vanilla wafers. Makes 13/4 cups or 14 servings, 2 Tbsp. each. JAZZ IT UP: Serve in a wide-brimmed margarita glass. Dip rim of glass in sugar before filling with dip
