Favorite Mexican Salsas

OPEN TO SERVE OUR HOMETOWN. MONDAY – FRIDAY • 9:00 AM – 7:00 PM SATURDAY • 9:00 AM – 8:00 PM SUNDAY • Noon – 5:00 PM

Now is the time to make the most of the season. It's easy to turn summer produce and seasonings into Mexican salsas that add robust flavors to favorite dishes. A few of my favorites are below.

Salsa Verde 10 tomatillos, diced 1/2 cup chopped Spanish onion 1/4 cup minced fresh cilantro or parsley

2 jalapeno peppers, seeded and minced 2 tsp. lime juice 1/2 tsp. salt

Combine all ingredients; cover and chill. Serve with chips, seafood, or chicken. Yield: 2 cups.

Garden Salsa 1/4 lb. fresh green beans 2 ears fresh corn 3 medium tomatoes, diced 1/4 cup olive oil 1/4 cup diced green pepper 1/4 cup diced purple onion

2 T. minced fresh basil or 2 tsp. dried whole basil 1 T. lime juice 1 tsp. salt 1/4 tsp. freshly ground pepper 2 cloves garlic, minced

Wash beans, and remove strings. Remove husks and silks from corn. Place beans and corn in boiling water to cover. Return water to boil; cook 4 minutes. Drain and immediately cover vegetables with ice water. Let stand until cool; drain. Cut corn from cob, and cut beans into 1/4inch pieces. Combine beans, corn, tomatoes, and remaining ingredients, stirring gently; cover and chill. Serve with chips, fish, chicken, or over toasted French bread. Yield: 4 cups.

Fresh Tomato Salsa 5 medium tomatoes, diced 1/3 cup tomato sauce 1/4 cup finely chopped purple onion 3 cloves garlic, minced 1 to 2 small jalapeno peppers, seeded and minced

2 T. minced fresh cilantro or parsley 1 T. minced fresh oregano or 1 tsp. dried whole oregano 2 T. lime juice 1 tsp. salt

Combine all ingredients, stirring gently; cover and chill. Serve over toasted French bread or with chips, fish, or chicken. Yield: 3⅓ cups.

Mexi-Corn Salsa 5 ears fresh yellow corn 1 medium tomato, diced 1 small jalapeno pepper, seeded and minced 1 clove garlic, crushed 1 (4 oz.) can chopped green chiles, undrained

1/4 cup sliced green onions 2 T. olive oil 2 T. white vinegar 1/2 tsp. salt

Remove husks and silks from corn. Place ears in boiling water to cover. Return water to boil; cook 4 minutes. Drain and immediately cover ears with ice water. Drain corn, and cut from cob. Combine corn and remaining ingredients, stirring gently; cover and chill. Serve salsa with chicken or pork. Yield: 3 cups.

Peach Salsa 1/2 tsp. minced fresh ginger root 5 peaches, peeled, chopped, and divided 1/4 cup minced green onions 1½ T. sugar

1/2 tsp. dry mustard 1½ T. lime juice 1/8 tsp. salt 1/8 tsp. white pepper

Combine ginger root and 1/4 of peaches in container of electric blender; process until smooth. Combine remaining peaches, pureed peach mixture, green onions, and remaining ingredients, stirring gently; cover and chill up to 4 hours. Serve with ham, pork, chicken, or seafood. Yield: 2½ cups.

Double Chile Salsa 2 cups chopped tomatoes (about 1 lb.) 1/2 cup finely chopped onion 1/3 cup chopped green pepper 1 (4 oz.) can chopped green chiles, drained

1 T. seeded, chopped jalapeno pepper 1/2 to 1 tsp. hot sauce 1/8 tsp. garlic powder 1/8 tsp. seasoning salt

Combine all ingredients, stirring gently; cover and chill at least 2 hours. Serve with chips, fish, or chicken. Yield: 2 cups. *** If you have a favorite recipe and want to share it with us, just send it in c/o The Shopper's Weekly, P.O. This week I couldn't seem to keep my mind in the world of politics. It all seems so unimportant when I look at Hurricane Harvey and the destruction it left in its path in Texas and Louisiana. B oth Kat r ina and Har ve y brought our country to its knees with concern and sorrow for our fellow Americans. Many volunteers have already come to the aid of Texas and Louisiana, with more arriving daily to help, from aiding with rescues to starting the process of recovery. Thousands have experienced the loss of their everyday lives. Many will never be able to return to the home that they found comfort in, as well as their businesses and jobs, and the realization is probably just now setting in after the shock. The saddest stories are of the loss of lives of family members, friends and neighbors, not to mention the grief of some having to leave their family pets behind. I'm heartbroken for all those affected by one of the worst national disasters this country has ever seen, if not the worst. As the days, weeks and months go by, the need will become greater and greater. Each of us can contribute as America comes together to help, no matter what party you are connected to. To start with, I believe in the great power of prayer and have witnessed firsthand the results! However, along with prayer, there are other ways each of us can contribute to our fellow

Americans in desperate need. Below are only a few of the things we can all do locally. Along with the thousands of volunteers, emergency crews, and those that distribute meals and cleanup supplies — people that are already on the ground — at the present time the Red Cross is focused on deploying registered nurses and trained volunteers. One way you can help is through financial donations that can be made by visiting redcross.org, calling 1-800RED CROSS, or texting the word "HARVEY" to 90999 to make a $10 donation. The Red Cross also needs blood donations. The need for blood is constant and the Red Cross currently has an urgent need for blood donations across the country due to a summer decline in blood donors and blood drive sponsors. In Texas, they are closely monitoring their blood supplies amid this ongoing disaster. With dangerous widespread flooding in Southeast Texas, all blood collection organizations in the U.S. are making efforts to meet patient blood needs and to ensure a sufficient blood supply in storm affected areas. Blood donations are always encouraged and the Red Cross stands ready to provide blood products as needed. A regional company also helping is South Central Transit. They are offering a program where you can ride free till Friday, September 8 with a donation of goods like new and

unopened shampoo, soap, toothpaste, paper towels, band-aids, baby wipes, diapers, household cleaning supplies such as bleach and laundry soap, trash bags, mops, buckets, work gloves or human ready to eat food (nonperishable items only). No shoes, clothes or any textile items will be accepted. During the Texas Relief program you can help stuff a bus! For more information please call them at 800660-7433 or visit them on facebook or at www.south centraltransit.org. You can also donate through the Salvation Army by sending a check to Salvation Army, P.O. Box 664, Centralia IL 62801. To make sure that your dollars go to help Hurricane Harvey victims, simply put in the memo area "Hurricane Harvey," then every dime will go towards helping in Texas and Louisiana. There are many ways you can help and so many have already done so, like Christy Jordan, along with daughter Brandi, who collected goods and then headed for Texas last Sunday with donations received when Christy started a grass roots campaign. To all that are helping, God Bless You! Until next week. To comment on this or any column in The Shopper’s Weekly, please mail to: Editor, P.O. Box 1223, Centralia IL 62801, email to info@theshoppersweekly.com or drop it off at the office on 301 E. Broadway. In order for your letter to be considered for publication, you must provide your signature and an address and phone number where you can be reached. Although 16 years have passed, we remember the events of September 11, 2001 as if they happened yesterday. On this day of mourning and remembrance, we pause to pay tribute to the police, firefighters and first responders who made the ultimate sacrifice to save others and to all of the September 11th victims whose lives were cut short. Their memories live on in our hearts and our history, and we wish their loved ones comfort and peace at this difficult time and always.

We Will Always Remember.

T

housands of people were directly affected by the terrorist attacks of September 11, 2001. Millions more were glued to their televisions as they watched the news coverage of the attacks in New York, Washington, D.C., and rural Pennsylvania. The former World Trade Center site was decimated by the attacks. The Twin Towers of the World Trade Center were part of the New York skyline for more than 40 years. The World Trade Center spanned 16 acres and opened to the public on April 4, 1973. Including the two towers that fell, World Trade Center Building 7 and many other surrounding businesses were ultimately demolished. While 2,977 people perished in the 2001 attack, many find it miraculous that so many others were able to evacuate and escape death. After the iconic towers fell, thoughts turned to the best ways to commemorate the memories of the people lost on 9/11, as well as the heroism that took place on that fateful September day. Out of the rubble came The National September 11 Memorial and Museum. Millions of people have visited the memorial, which opened to the public on September 12,

The memorial portion was the first to open and includes twin reflecting pools that are each nearly an acre in size and feature the largest manmade waterfalls in North America. The pools sit within the footprints of where the Twin Towers once stood. The names of every person who died in the 2011 and 1993 attacks are inscribed into bronze panels along the edge the pools. In the memorial plaza, visitors will find trees harvested from locations within a 500-mile radius of the WTC site, and additional trees coming from locations in Pennsylvania and Maryland. Visitors will also see the “Survivor Tree,” which was recovered from the rubble at the World Trade Center site in October 2001. According to The National September 11 Memorial and Museum Foundation, the museum serves as the country’s principal institution concerned with exploring the implications of the events of 9/11, documenting the impact of those events and exploring the continuing significance of September 11. The underground museum has many dif-

3 Objects of Fruitfulness It excites me each fall to see a bountiful harvest gathered in across our great nation. A farmer expects a harvest. A gardener anticipates the abundant produce from his labor. An orchard keeper expects a bountiful harvest from his fruit trees. Jesus went up to a fig tree expecting figs. When he saw the fig tree was barren, he cursed it and it immediately dried up and died. God expects fruit from his children. As I was speaking at the county jail, a young man raised his hand and asked me, "Are you saying that all I have to do is believe and my sins will be forgiven and I will go to heaven?" I replied, "Yes! And no. Yes, the Bible makes it clear

that salvation is by faith alone in the finished work of Christ on the cross. (Ephesians 2:8-9; John 3:16) But we are commanded to bring forth fruits of repentance." (Matthew 3:1-8, 10) God not only expects fruitfulness in believers, but gives us the power to be fruitful Christians. Eight times in John 15 Jesus referred to fruit. The number eight is the number of new beginnings, of resurrection, of a new creation. In John 15 Jesus gives us three objects necessary for fruitfulness in our lives. THE VINE! Jesus said, 'I am the true vine and my Father is the gardener." (John 15:1 NIV) Jesus' followers were very familiar with the vineyard. The vine bore life to the branches. In the Old Testament, Israel, who had rebelled and forsaken God, was referred to as "a wild vine." The psalmist prophesied that God would bring "a vine out of Egypt." (Psalm 80:8) Isaiah prophesied of the coming Messiah, "That day

Wednesday, September 6, 2017 there shall be a root of Jesse." (Isaiah 11:10) In the 1800s some Italian and Greek settlers traveled west to California by covered wagon bringing their precious grape vines. Several years ago, I visited my wife's family in Northern California. As I took a walk, I saw the fruitful vineyards that were planted over a century ago by the Italian and Greek settlers. The vineyards are still bearing fruit today. The vine gives life to the branches. Jesus is the true vine. He is the true light. He is the true bread of life. Are you connected to the vine? Paul said, "Christ in you, the hope of glory." (Colossians 1:27) THE BRANCHES! "I am the vine, you are the branches. If a man remains in me and I in him, he will bear much fruit. Apart from me you can do nothing." (John 15:5-6) Jesus gave us the secret of fruitfulness. As branches we must simply "abide in the vine!" Stay connected to Jesus. The branch doesn't grit its teeth, squirm, twist, or turn; it just abides. What does it mean to abide in Jesus? To abide is to be in constant fellowship. (Revelation 3:20; I John 1:7) Three things can cause the branches of a vine to become fruitless: through running to the leaves, diseases like blight, or old age — they will wither and die. God's Word gives the solution, "For

if these things be in you and abound, they make you that you shall never be barren nor unfruitful in the knowledge of our Lord Jesus Christ." (II Peter 1:8) Keep going after Jesus. (II Peter 1:5-7) Keep him in focus. How do we remain in Jesus — the vine? The living Word of God and prayer keeps us connected to the vine. (John 15:5-7) THE GARDENER! Jesus said, "And my Father is the gardener." (John 15:1 NIV) The New King James Version calls him "the vine dresser." Look at the important work of the vine dresser. (John 15:1-2) He takes away or cleans off every branch that does not bear fruit. We are washed with the water of the Word of God. (John 15:3) He prunes us. God loves us too much to leave us alone. Are there some things in your life that God wants to prune from your life to make you more fruitful? Submit to his care. Remember that without Jesus, the vine, we can do nothing! (John 15:5) These three objects will make you fruitful: the vine, the branches, and the gardener. "By this my Father is glorified that you bear much fruit; so, you will be my true disciples." (John 15:8) Shalom, Cliff Sanders Eagle Life Ministries eagleslife8@gmail.com

THE RISK FACTORS FOR MELANOMA A form of cancer that develops in the pigmentmaking cells of the skin known as the melanocytes, melanoma is a relatively rare form of skin cancer. According to the American Cancer Society, melanoma is more dangerous than basal and squamous cell skin cancers, which are the most common types of the disease, because it is likely to metastasize if not detected early. No one is invulnerable to the potential threat posed by melanoma, though some people are at greater risk of the disease than others. The following

are some of the risk factors for melanoma, courtesy of the Skin Cancer Foundation. Sun exposure Exposure to the sun can increase a person’s risk factor for various forms of skin cancer, including melanoma. The SCF notes that blistering sunburns suffered in early childhood especially increase a person’s risk of developing melanoma, though sunburns later in life also can increase that risk. In addition, people who live in places that get substantial sunlight, such as Florida and Hawaii, tend to

develop more skin cancers than people who live in areas with less sunlight. Tanning booths and beds also increase exposure to ultraviolet rays, which increase one’s melanoma risk. Moles The more moles a person has on his or her skin, the greater his or her risk for melanoma. There are two types of moles: normal moles and atypical moles. Normal moles are small, brown blemishes or beauty marks that appear in the first few decades of life. Many people develop such moles. Atypical moles known as “dysplastic nevi”

YOUR SUCCESS IS OUR GOAL

can be precursors to melanoma, and people with such moles are at greater risk of developing the disease. It can be difficult to distinguish between normal and atypical moles, though the SCF notes that atypical moles that itch, bleed, crust, ooze, swell, or are elevated from the skin might be in particular danger of becoming melanomas. Atypical moles that are bluish-black in color or become persisting open sores are also at greater risk of becoming melanomas. Skin type People with fair skin are at greater risk of various

types of skin cancers, including melanomas. Such is also the case for people with light-colored hair and eyes. Weakened immune system People whose immune systems have been compromised are at greater risk of developing melanoma than those whose immune systems are working at full strength. Chemotherapy, organ transplant surgery, excessive exposure to the sun, and diseases such as HIV/AIDS can weaken the immune system. Family history The SCF notes that roughly 10 percent of people diagnosed with melanoma have a family

member who also has been diagnosed. People whose mother, father, siblings or children have developed melanoma are considered to be in families that are prone to melanoma. In fact, each person with a first-degree relative who has been diagnosed with melanoma has a 50 percent greater chance of developing the disease than someone with no such family connection. Melanoma is a potentially deadly form of skin cancer. People with a family history of the disease or those who spend substantial time in the sun should be especially vigilant about protecting their skin.

WHEN WEIGHT LOSS MAY BE WORRISOME Dieting is a way of life for many people. The Boston Medical Center says an estimated 45 million Americans go on a diet each year, spending $33 billion annually on weight loss products. The figures are close to $7 billion in Canada. However, for one segment of the population — the elderly — weight loss can be a sign of something wrong. The Mayo Clinic says that malnutrition is a serious health concern among seniors. Inadequate nutrition can result in weight loss that has far-reaching health effects. These include a compromised immune system, which increases the risk of infections, poor wound healing and muscle weakness that can result in falls and fractures. Malnutrition also can lead to further disinterest in eating, which only compounds a weight loss problem. Weight loss and loss of appetite are common among seniors, particularly those with dementia. Learning to recognize weight loss signs in the elderly can help others act promptly to correct the problem. According to senior care advocate and placement center A Place for Mom, the senior population is at risk of malnourishment for several reasons, including: • lack of energy to cook, • specific health conditions that impact ability to prepare or acquire meals, • lack of appetite attributed to decreased taste bud function or depression,

• inability to afford quality foods, and • side effects of certain medications. Unfortunately, malnutrition is a very common, yet w idely undi ag nos e d, problem among seniors. If a friend or loved one has visible bones under the skin; loose dentures; loose rings on fingers; has dropped clothing sizes; or is leaving food on his or her plate, they may be suffering from malnourishment. Concerned loved ones can take several steps to determine if their friend or family member is malnourished. • Observe loved ones' eating habits at home to see how they are eating. Routinely check the refrigerator and pantry to see which foods your loved one is eating. In a nursing home setting, check with a nursing administrator to see how mealtimes are going. • Speak with doctors to

see if weight loss is a side effect of medications or another health concern. Bring up any concerns you have about malnutrition. • Provide finger food or easy-to-manage foods for seniors who have lost dexterity so they're still able to feed themselves. • Encourage foods that are fortified with nutrients. Supplementation with nutritional shakes can help fill the void. • Make meals social events so that the concept of gathering around the table for food is fun. • Mild or moderate exercise can stir up one's appetite. Walking or chair-based exercises can help make people more interested in food. • Introduce new foods that can whet the appetite. Weight loss can benefit some people. But among the elderly, weight loss may be a byproduct of malnutrition.

According to the U.S. Centers for Disease Control and Prevention and the U.S. Environmental Protection Agency, there are no safe levels of lead. Lead is particularly harmful to children’s health. Exposure to lead can stunt children’s growth while also contributing to behavioral and learning problems. Anemia, reduced growth of fetuses in pregnant women, cardiovascular effects, and reproductive problems also are side effects of lead exposure. Many people once came into contact with lead via lead-based paints, which have been banned in the United States for consumer use since 1978. But lead also can be lurking in water supplies. The EPA

says that between 10 and 20 percent of instances of lead exposure can be traced to contaminated water. Homes built before 1986 are the biggest risk factors for lead plumbing. As of January 2014, all newly installed water fixtures, pipes and fittings must meet new lead-free requirements. But within the United States, public water suppliers and existing homes do not need to retrofit. The National Drinking Water Advisory Council found around 7.3 million lead service lines currently deliver water to customers. Homeowners can request testing through their local water supplier or conduct certified home tests.

Anxious Dog Needs Socializing DEAR PAW’S CORNER: No matter what I do, I can't get my 1-year-old shorthaired pointer, "Blue," to act appropriately around other dogs. I tried taking him to the dog park a few times since adopting him, but he becomes hard to control after seeing dogs on the other side of the fence. How can I socialize my dog? — Frustrated in Cincinnati DEAR FRUSTRATED: At the risk of being blunt, forget about the dog park for a while. Blue needs to be able to respond to

basic commands like "sit" and "stay," and he needs to remain calm in situations with other dogs. Neither of these things is happening when you take him to the dog park. Blue's behavior suggests he's worried about the situation that you're taking him into. Who are those dogs? What is this place? Is it safe? He doesn't know, and he doesn't know what to do, and he's acting up. You must find what Blue's anxiety triggers are. Chances are he is getting stressed well before he reaches the park. How do you do this? Teach Blue a basic command, like "sit" or "lie down," until you are confident Blue will do it immediately. Later, on your walks, give him this command. If he responds well, he's probably calm and focused, which is good. If his response falters or he doesn't obey

ILLINOIS BICENTENNIAL KICKOFF AT KASKASKIA ISLAND As part of the Celebration for Illinois’ 200th Birthday Celebration in 2018, all 102 counties in Illinois have been asked to name a liaison to “Illinois 200: The Bicentennial Celebration.” Marion County native, Mark Decker, has been

named to this position by County Board Chairman, Erwin Hahn. Decker is currently serving as the chairman of the Salem Historical Commission and has been a member of the Marion County Genealogical &

Historical Society in the past. Decker is a former board member of the Friends of the Vandalia Statehouse which is now merged with the Vandalia Historical Society. His volunteer activities with that group included raising

money to help repair the Vandalia Statehouse windows and support the Annual Christmas Gala at Illinois’ oldest state capitol building where noted Illinois figures like Abraham Lincoln and Stephen Douglas walked the

actual floors of that historic building. He also assisted with the convention of the Association of Lincoln Presenters held in Vandalia in 2015. “I am honored to be selected to represent our county for the Illinois Bicentennial and look forward to working with the various historical groups, museums, chambers of commerce, tourism boards and civic organizations around the county to promote our part of Illinois history over the past 200 years,” said Decker. The first event was held over the weekend at Kaskaskia Island where the first state capital was located. Governor Bruce R auner and Lt. Governor Evelyn Sanguinetti were on hand to help begin the 100 day countdown to a year-long celebration beginning December 3. The program included church bells ringing at 9:00 a.m. at

the Immaculate Conception Church, Presentation of Colors by the VFW 3553 & American Legion Post 487 and a gun salute by a reenactment group portraying French soldiers from that time period. There was a tour of Pierre Menard Home and special exhibits at the Fort de Chartres State Historic Site where the oldest building in Illinois is located. Currently, there is a video contest under way for high school and college students called “Something To Learn About Illinois History.” Students are asked to submit a 45-second to 60-second self-made video highlighting some part of Illinois history. 100 winners will receive two tickets to see the musical “Hamilton” in Chicago on December 3, 2017. To learn more about the contest, students may go to the web site https://illinois200.com/ celebrate/projects/.

ARIES (March 21 to April 19) A change that you’d hoped for is down the line. But you still need to be patient until more explanations are forthcoming. Continue to keep your enthusiasm in check. TAURUS (April 20 to May 20) Your social life expands as new friends come into your life. But while you’re having fun, your practical side also sees some positive business potential within your new circle. GEMINI (May 21 to June 20) Your workplace situation continues to improve. Look for advantages you might have missed while all the changes were going on around you. That trusted colleague can help. CANCER (June 21 to July 22) Resist the urge to hunker down in your bunker until things ease up. Instead, get rid of that woe-is-me attitude by getting up and getting out to meet old friends and make new ones. LEO (July 23 to August 22) Now that you’re back enjoying the spotlight again, you should feel re-energized and ready to take on the challenge of bringing those big, bold plans of yours to completion. VIRGO (August 23 to September 22) A former friend would like to repair a relationship you two once enjoyed. Your positive response could have an equally positive impact on your life. Think about it. LIBRA (September 23 to October 22) Resist making impulsive decisions. Stay on that steady course as

you continue to work out workplace problems. Be patient. All will soon be back in balance. SCORPIO (October 23 to November 21) You might feel confident about taking a promising offer, but continue to be alert for what you’re not being told about it. Don’t fret. Time is on your side. SAGITTARIUS (November 22 to December 21) People dear to you might be planning a way to show appreciation for all you’ve done for them. Accept the honor graciously. Remember: You deserve it. CAPRICORN (December 22 to January 19) Congratulations. Your selfconfidence is on the rise. This could be a good time to tackle those bothersome situations you’ve avoided both at home and at work. AQUARIUS (January 20 to February 18) You feel obligated to return a favor. (Of course, you do.) But heed advice from those close to you and do nothing until you know for sure what’s being asked of you. PISCES (February 19 to March 20) Your loving reassurance helped revive a once-moribund relationship. But be wary of someone who might try to do something negative to reverse this positive turn of events. BORN THIS WEEK: You are a wonderful matchmaker who can bring people together to form long-lasting relationships. © 2017 King Features Synd., Inc.
