Ask and you shall receive. Who hasn't heard that one? And so it is with Southern Cooking. So here it goes: The request for a good potato soup recipe has been filled! Try one of the recipes below and enjoy!
If you want something different, this house has personality! Country Potato Soup Potato soup is a classic farm dish and is made in many different ways: without meat, or with bacon, ham, or sausage. This one is rich and creamy, and flavored with bacon. I find it an immensely comforting soup. Makes 4 to 6 servings. 8 slices lean bacon 1/4 cup chopped celery 1/2 cup chopped onion 2 medium potatoes, peeled and cut in 1-inch cubes (about 3 cups) 2½ cups water 1 bay leaf 1/2 tsp. salt
1/4 tsp. grated nutmeg, rounded 1/4 tsp. dried marjoram, rounded (optional) 1/4 tsp. celery salt 1/4 tsp. black pepper 1 cup milk 1 T. Worcestershire sauce 2 T. finely minced fresh parsley
Chop bacon coarsely. In deep soup kettle, saute bacon, celery, and onion over medium heat until onion is golden, about 5 minutes. Add potatoes, water, and seasonings; bring to boil over high heat. Reduce heat and simmer, covered, for 15 minutes or until potatoes are tender. Mash potatoes slightly — about one-quarter of the cubes should still be whole. Remove bay leaf. Add milk, Worcestershire sauce, and parsley, and bring again to boil. Serve hot.

Plain Potato Soup This is a good solid potato soup as well as a base for Clam Chowder or Corn Chowder. The ingredient amounts will depend on your appetite or your crowd size. White potatoes, cut into bite sizes Whole milk Salt
Pepper Celery Butter (about 2 T.)
Cover potatoes with enough water to cook down until potatoes are soft. Add celery, salt, pepper and butter. Cover with milk. You can substitute celery salt for celery. Simmer until smooth and creamy. Note: Instead of water, you can use chicken broth for extra flavoring.

Salt Pepper 2½ cups milk, plus more if needed
Peel and chop potatoes. Discard tops and bottoms of green onions. Mince remaining pieces. Add potatoes and onions to medium saucepan and cover with water. Boil on high until potatoes are well cooked. Remove and drain water. Add milk and mash until smooth, leaving a few chunks for a hearty texture. Add more milk a dash at a time. Season to taste and return pot to stove, stirring frequently, for 2 or 3 minutes. Serve with additional green onion for garnish. A few weeks ago I wrote about Hurricane Harvey's devastating effect on Texas and Louisiana. The same holds true for Hurricane Irma. I said the problems that people would face would last long after the hurricanes dissipated. I recommended that we could help through the Red Cross and Salvation Army. But I received a letter this week from Mr. and Mrs. Ralph Swarthout of Dix, Illinois, who recommended another organization that always steps up when needed, and that is International Disaster E m e rge n c y S e r v i c e (IDES), and I couldn't agree more. Thanks for the suggestion. On to their question, "What can we do to help get term limits in Springfield and Washington?" My answer is, eventually people have to start voting these lawmakers out. A prime example is Illinois State Speaker of the House Michael Madigan. But the problem is whomever goes against him, their district isn't going to get help; therefore, their constituents become disenchanted and they aren't re-elected. It's all a vicious catch-22. I truly believe having no term limits in place is one of our biggest problems, and I wish I had a better answer. On to healthcare. Last week Bernie Sanders pushed again for a single payer plan to replace Obamacare. He asked, "Why are we the only
major country in the world to not cover all its citizens?" My question to Sanders is, "Why are we the only major country in the world to cover illegal immigrants?" Could that be part of the problem? If I interviewed him I would certainly ask that question. And no, the liberal media hasn't asked and nor will they! On to DACA and the Dreamers, which consist of approximately 800,000 to a million people. These are people that were brought to the U.S. as small children. I believe Trump is trying to figure out a way to give them legal status but cut it off there. The problem is, if there isn't a cutoff, the problem will c ont i nu e, a lt hou g h Donald Trump has said, " T h e re w i l l b e no amnesty." So what's Trump doing? In reality, he's giving Congress another chance. As Rich Lowry, editor of The National Review said, "The president goes out of his way to minimize disruption for current DACA recipients. The administration will stop accepting new applications for the program but will continue to consider two-year renewals for recipients whose status is expiring between now and March 5, 2018." That's a six-month window for Congress's own solution before anyone's status is changed.
And frankly, as Rich also said, this is basic civics. Congress writes the laws. I think the bottom line is Trump is using DACA to get what he wants, that being the wall. It's a bargaining chip. Read his book, Art of the Deal, Chapter 2. Now on to another pressing problem: North Korea. Each president since Bush has recognized there is a serious threat. However, this administration could be different, with my mind going back to the Bay of Pigs. Is this administration considering military options against North Korea? Anything we do is to sacrifice South Korea, a grave concern of mine. I would hate to sit in Trump's seat on this one. He's damned if he does and damned if he doesn't. But the reality is, in time a decision will have to be made! In closing, let me assure you my household personally boycotted the 69th Emmy awards. I chose not to spend the evening watching an antiTrump rally. Welcome to the shallow world of Hollywood. Until next week. RED CROSS ENCOURAGES BLOOD AND PLATELET DONATIONS DURING NATIONAL PREPAREDNESS MONTH As the American Red Cross responds to wildfires and historic hurricanes, eligible donors are reminded that giving blood or platelets during National Preparedness Month in September is one way to help ensure the Red Cross is prepared to respond to patient emergencies across the country every day. Hurricane Irma has forced the cancellation of dozens of Red Cross blood drives in the Southeast, resulting in more than 2,100 uncollected blood and platelet donations. Natural disasters like hurricanes can disrupt blood drives and prevent donors from giving, but hospital patients still depend on lifesaving transfusions. Volunteer blood and platelet donors are the only
source for blood products needed by hospital patients. Individuals in parts of the country unaffected by Hurricane Irma are encouraged to give blood or platelets to help ensure a sufficient blood supply. All blood types are currently needed. Appointments can be made by using the Blood Donor App, visiting redcrossblood.org or calling 1-800-RED CROSS. To help reduce wait times, donors are encouraged to make appointments and use RapidPass® to complete their pre-donation reading and health history questions online, on the day of their donation, from a computer or mobile device at redcrossblood.org/rapidpass. POND DEDICATION AT PERE MARQUETTE STATE PARK Pere Marquette State Park will host a dedication ceremony and grand opening on Friday, Oct. 6 at 11:30 a.m. f o r t h e p a r k’s n e w Educational Fishing Pond. The public is invited to the ceremony to help celebrate the completion of the project. The new fishing pond will be used at the annual Two Rivers Family Fishing Fair every June, as well as for other park interpretive programs and Urban Fishing Program events. The new pond is located just outside of the Visitor Center in front of the Log Cabin at Pere Marquette State Park. The pond was construct-
ed thanks to the support of individual and corporate donors. The Phillips 66 Wood River Refinery was the primary donor for the project. Monsanto, Friends of Pere Marquette State Park Foundation, and another sponsor who wishes to remain anonymous also were major donors for the project. The Illinois Department of Natural Resources Division of Fisheries provided funding to pay for aerator and pump services and supplies for the pond. Total Lawn Care, Inc. of Jerseyville was the contractor for the project. Other project partners include:

Making Your Mark for the Kingdom Mark Twain was one of the most colorful and gifted writers of the 19th century. A former riverboat pilot, he took his pen name, Mark Twain from the way boatmen would mark the depth of the river to avoid the shallows rife with sandbars and rocks. Mark Twain made his mark on American literature. Believers in Christ are called to make their mark for the kingdom of God. To make your mark apply these teachings of Jesus from the Gospel of Mark chapter 11 to your daily life. THE PRACTICE OF PRAISE. Jesus fulfilled prophecy when he sent two of his disciples into a village to borrow a donkey for Jesus to ride into Jerusalem in what is referred to as the Triumphal Entry. (Mark 11:1-10; Zechariah 9:9) When the throng of people saw Jesus riding into Jerusalem, they hailed him as king and strew their cloaks and palm branches before him as they shouted, “Hosanna to the Son of God.” As Jesus went into the temple, even children began crying out in praise to him. The Jewish

leaders became indignant and told Jesus to forbid them. Jesus said, “Yes, have you never read, ‘out of the mouth of babes and nursing infants you have perfected praise.’” (Matthew 21:16; Psalm 8:2) Praising people make their mark for the kingdom of God. Praise gives glory to God, enables you to practice his presence, keeps you filled with the Holy Spirit and is a spiritual weapon against the enemy. (Psalm 100; 149; Ephesians 5:18-19) THE POWER OF FAITH. Men and women of faith make their mark for the kingdom of God. Before Jesus went into the temple he saw a fig tree. Expecting to eat some of its fruit, he saw that it was bare of figs and declared, “’Let no fruit grow on you ever again.’ Immediately the tree withered away.” (Mark 11:18-19) When the disciples saw what happened to the tree, they were amazed. But
Jesus wanted to teach them a vital truth, “’Assuredly I say to you, if you have faith and do not doubt, you will not only do what was done to the fig tree. But also if you say to this mountain, ‘Be removed and be cast into the sea’, it will be done. And whatsoever things you ask in prayer, believing you will receive.’” (Mark 11:22; Hebrews 11) Do you want to make your mark for the Kingdom of God? Have faith in God. (Mark 11:22) THE PRIVILEGE OF PRAYER. Jesus went into the temple and saw the money changers and merchants who were taking advantage of the worshippers. He made a whip, overturned the tables, and drove the scoundrels out. He taught them saying, “Is it not written, ‘My house shall be called a house of prayer for all nations. But you have made it a d e n o f t h i e v e s .’” (Matthew 11:15-17) The kingdom of God advances through the prayers of believers. The old hymn “What a Friend” says, “What a privilege it is to carry, everything to God in prayer.” Scripture teaches us the power of praying in the Spirit. (Ephesians
6:18; Romans 8:16-17; Jude 20) My six year old granddaughter will lay hands on people at church or anyplace and pray the prayer of faith for them. She is making he r mark for t he kingdom. But don’t forget this truth that I saw today on Facebook, “The purpose of prayer is not just to receive what you asked for, but to strengthen your relationship with God.” When Jesus taught on prayer, he almost always included the necessity of forgiving others. “And whenever you stand praying, if you have anything against anyone, forgive him, that your Father in heaven may also forgive you your trespasses. But if you do not forgive neither will your Father in heaven forgive your trespasses.” (Mark 11:26) It is a privilege to be involved in the work of God and advancement of his kingdom through prayer.
