Sadly, Woody never made it; he passed away the day before the appointment. All of my surviving cats were diagnosed with feline leukemia. Because of my insistence on being cheap, I shortened all of my cats' lives. If they had been vaccinated regularly, they likely would never have gotten sick even if they accidentally escaped the house.

GIVE THANKS FOR GOOD HEALTH BY DONATING BLOOD THIS HOLIDAY SEASON The American Red Cross encourages people to share their good health this holiday season by donating blood for patients in need. Mike Healey’s son was born prematurely, weighing 3 pounds, and immediately needed blood. “I gave blood the next day and have done it 56 times since then,” he said. Though Healey’s son spent his first 49 days of life in the neonatal intensive care unit, he has thrived and is now a healthy, 10-year-old little league baseball player. “I will never forget whoever selflessly gave blood for my son.” A decline in donations occurs from Thanksgiving to New Year’s Day when donors are busy with holiday activities and travel. However, patients don’t get a holiday break from needing lifesaving transfusions. In fact, every two seconds, someone in the U.S. needs blood. By giving blood or platelets, donors may give patients more time – and more holidays – with loved ones. GIRL SCOUT SHELTER HELPERS Our community came together and helped support the Jefferson County Animal Shelter. A collection was taken by Girl Scout Troop #8653 at the Travel Center of America in Mt. Vernon. On November 3, eleven local residents from four different counties compl e te d t he i r Maste r Naturalist training at CaseHalstead Library in Carlyle. The new grads will be considered interns until they have completed their first 60 hours of volunteer service through the Master Naturalist program. At that time they will join the ranks of the other 26 active Master Naturalists in Bond, Clinton, Jefferson, Marion and Washington Counties. New graduates from

Jefferson County include Eric Gockel, and Gordon Wurth. The Master Naturalist program is still relatively new to Extension, with this being just the fourth time training has been offered. The training program provides science-based educational opportunities that connect people with nature and help them become engaged environmental stewards. Topics covered during the training classes cover a wide range of areas including: botany, environ-

mental ethics, archeology, climate, forestry, grassland ecology, geology, prairies, mammals, birds, reptiles, insects and aquatic systems. The sessions also include hands on activities and field trips. Master Naturalists share natural resource information with the public and assist with conservation and restoration activities in their home communities. The next Master Naturalist training will be offered in the fall of 2018.

2018 ILLINOIS FISHING TOURNAMENT APPLICATIONS BEING ACCEPTED BY IDNR GIFT CARDS: WHAT YOU SHOULD KNOW Fishing tournament organizers can begin applying for 2018 tournament permits on November 1, 2017. Applications can be submitted to the Illinois Department of Natural Resources through IDNR fishing tournament online accounts and through the I Fish Illinois website at https://www.ifishillinois. org/tournament/index.php. Catch results from 2017 tournaments must be

entered before fishing clubs and tournament trails will be allowed to request tournament dates for 2018. Applications are reviewed on a first-come, first-served basis. “The Illinois DNR is grateful for the compliance that our tournament anglers have shown with this process of online tournament applications and reporting,” said Dan Stephenson, fisheries chief for the IDNR. “We also

salute the staff at the Illinois Natural History Survey, which oversees the tournament permit system.” Tournament fishing is extremely popular in Illinois. For 2017, nearly 3,000 applications for fishing tournaments were received. The catch data submitted by tournament organizers is vital information needed for the management of the waters they fish.

VETERANS PROGRAM ON THE BERLIN WALL On Saturday, November 11 at 2:00 p.m. in the Schweinfurth Museum at the Historical Village Chris Lyons will offer a unique, personal perspective on the fall of the Berlin Wall. He was a pilot for the United States Air Force in Germany during this symbolic time in world history. Learn

One of the lesser-known roles of the Illinois State Treasurer’s Office involves gift cards. Some unused gift cards after a certain period of time are considered unclaimed property. As such, the value of these cards is surrendered to the treasurer’s office. There is big money in these cards. Barron’s reports that shoppers purchased $130 billion in gift cards in 2015. However, the surrendering of these cards to the treasurer’s office means that someone has been deprived of their use. That is why the Treasurer’s Office offers the following advice: • Know that the two most common types of cards are retail gift cards and bank gift cards. Retail gift cards only are redeemable at the specific retailer or restaurant that issued the card. Bank gift cards, which carry a payment network

such as American Express or Visa, can be used at any location that accepts that specific brand. • Resist the urge to save the card for a rainy day. Doing so may increase the likelihood that some of the card’s value will be consumed by fees. Instead, use the card and set aside an equal amount of cash for a rainy day. • For example, consider that while money on a typical gift card cannot expire for at least five years, depending upon the circumstances, inactivity fees can begin in as little as 12 months. Therefore, it is possible that inactivity fees could consume the cash value of a card before the five year window has expired. • When purchasing a gift card, buy from a known and trusted source. Be wary of online auction sites. Read the fine print to de-

termine if there are shipping or handling fees. • Consider the company’s location and reputation before purchasing. A retail gift card for someone who does not live near a store’s location might not be convenient. Also, a store that files for bankruptcy or goes out-of-business might not accept a gift card. • Treat a gift card like cash. If lost or stolen, report it to law enforcement. Contact the card’s issuer to determine if a replacement card is possible and at what cost. Today, the state treasurer’s office holds more than $2 billion in unclaimed property. Odd-Shaped Objects Sometimes Part of Set Strange antiques and collectibles with mysterious shapes and unknown purposes sometimes are part of a larger piece. Mysterious wooden wheels with wooden spokes and about a 45-inch diameter were popular in the 1950s. They were hung on a wall as a decoration or put flat in a flowerbed. Each section between the spokes was planted with a different herb or flower. The wheels were copied in giftware catalogs but were never identified as part of a "walking" spinning wheel used to spin woolen yarn. A curved "bowl" shaped

like part of the border of a circle is sometimes sold at an antique shop. The bowl usually is made by important porcelain companies and it seems to be a bargain. It is part of a set of four crescent-shaped bowls and one round bowl that fit together to make a circle. The curved bowls held foods like olives, pickles and sauces or several types of vegetables with sauce in the round center bowl. Most sets were made with the five bowls and a lid for the center piece. Once a piece broke, the set couldn't be used. But the pieces still were attractive when used alone. A set made by Coalport porcelain in the Imari

Dear Cathy, I was sorry to read that you were not going to be writing your column. I understand why you probably need a break, with all the upstate political idiots. It is hard to get people to vote Mike Madigan and his bunch out when he is giving all the loafers and nonworkers a free paycheck. tax rate hikes in the last six years. It hasn’t helped Illinois’ bottom line. Excessive taxation, spurred by government’s unrelenting determination to grow and overspend, is taking a huge toll on business expansion and job creation. As I previously reported here, the non-partisan Tax Foundation’s 2018 State Business Tax Climate report ranked Illinois 29th among the 50 states and the District of Columbia for tax burden. We slipped six positions from the previous year. The Foundation ranks Illinois 36 for corporate taxes, 35 for sales taxes, 42 for the Unemployment Insurance Tax, and 45 for property taxes. This is bad news for employers. It’s a roadblock to growing a business and job creation. A week ago in this column, I told you about a report by the Illinois Policy Institute (IPI) that shows Illinoisans experience the largest loss of income (31.1%) to income and property taxes of any of our surrounding states. Is it any wonder that Illinois continues to trail its neighbors on job creation? Actually, we are seeing job losses, according to IPI. The Institute recently reported, “The September metro jobs report follows statewide numbers that showed one of the worst months for payroll jobs since the Great Recession.â€?  Citing information from the Illinois Department of Employment Security, IPI adds, “Illinois businesses lost jobs in eight metro areas, with the largest losses coming in Danville‌ Elgin‌Rockford‌and Champaign.â€? Their report does indicate job increases in six metro

areas, including Kankakee, the Carbondale-Marion area, and Bloomington. And, the report also indicates that more than 11,000 jobs were added to the Chicago-Nap er villeArlington Heights Metro, but that raises an interesting observation by IPI: “Without those Chicago-area gains, the state would have suffered twice as much job loss in September‌The data is indicative of a growing divide between the Chicago area supported by big business and a highly skilled population and the rest of the state. While Illinois has been successful at keeping large businesses and carving out special deals for select companies, it has forgotten that small businesses and entrepreneurs create the most jobs.â€? The answer to our job creation and economy problems is not more, unaffordable government. We have enough proof that higher taxes, coupled with overregulation, and bloated government, stifles opportunity and prosperity for Illinois citizens and businesses.  Second Week of Veto The second and last week of the fall Veto Session starts Tuesday, Nov. 4. There are a number of issues, in bill form, positioned for possible action. Those issues include licensing for medical personnel, nursing home regulations, the environment and the Second Amendment.  They Never Give Up The supporters of restricting our gun rights never give up. The recent mass shooting in Las Vegas was a despicable act, but no one has offered any realistic proposal that would have prevented that heinous act by an individual clearly bent on killing and maiming as many people as possible. Yet, new anti-gun legislation has been filed at the State Capitol. One more law means nothing to criminals

The Shoppers Weekly Papers Mt. Vernon Area or those with the intent to commit an evil act. The recent terrorist attack in New York City that killed eight and wounded 12 pedestrians is proof. It wasn’t by firearm. It was a rented truck. Poised for possible Veto Session action is legislation that would impose new regulations, higher fees, and more government red tape on the sale and ownership of firearms. These proposals would make it more costly to own and possess firearms and make it more difficult for gun shops to operate and stay in business. Other proposals would ban some firearm accessories while others could put current law-abiding citizens in a position of violating laws with felony penalties because of the firearms and equipment they own. Taking away our ability to protect ourselves and our families — with more firearm restrictions — benefits criminals and harms us. We have an inherent right to self-defense. It is our duty and obligation to protect our lives, our families and our property. The erosion of any of our unalienable rights, as outlined in the Bill of Rights, is an erosion of all of our rights. They are rights granted to us by the Creator, not the government and are therefore not the government’s to give or take away. The southern kitchen is a hive of activity starting weeks before Thanksgiving and staying busy until after New Year's Day. There are Thanksgiving, Christmas, and New Year's festivities to plan for family gatherings as well as the parties in between. The aromas coming from the kitchen start now and last through New Year's, from turkey and dressing to cookies and fancy desserts. Turkey and Dressing with Giblet Gravy

1 (12 to 14 lb.) turkey 1/4 cup unsalted butter or margarine, melted

1½ tsp. salt Turkey Dressing (recipe follows) Giblet Gravy (recipe follows)

Preheat oven to 325°F. Remove giblets and neck from turkey; reserve for gravy. Rinse turkey with cold water; pat dry. Sprinkle salt over surface of turkey and inside cavity. Tie ends of legs to tail with string or tuck them under flap of skin around tail. Lift wing tips up and over back and tuck under turkey. Brush entire bird with melted butter. Place turkey, breast side up, on rack in roasting pan. Insert meat thermometer in meaty part of thigh. Roast 4 to 5 hours, or until meat thermometer registers 180° to 185°. Baste with pan drippings every hour. If turkey gets too brown, tent top with aluminum fop. After turkey has baked 3 hours, cut string or band of skin holding legs to tail. When done, let turkey stand 15 min. before carving. Serve with Turkey Dressing and Giblet Gravy. Yield: 14 to 16 servings.

Cool; crumble corn bread into large bowl. Add crumbled white bread. Set aside. Combine onion and celery in small saucepan. Add 3 T. chicken broth. Cook over medium heat until vegetables are just tender; add to crumbled corn bread mixture. Stir in poultry seasoning, white pepper, sage, garlic powder, salt and pepper. Add enough remaining broth for dressing mixture to hold together, adjusting for desired moistness (add up to 4 cups broth for moist dressing; less for drier dressing). Spoon mixture into lightly greased 13x9x2" baking dish. Bake at 350°F. for 30 to 45 min., or until dressing is lightly browned and set. Yield: 8 servings.

Giblet Gravy

Giblets and neck from 1 turkey 1 small onion, chopped 1 stalk celery, chopped 2 hard-cooked eggs, chopped

1 tsp. salt 1/2 tsp. black pepper 2 T. cornstarch 1/4 cup water

Cover giblets and neck with 3 cups water in small saucepan. Bring to boil; cover, reduce heat, and simmer 1 hour, or until giblets are tender. Drain, reserving broth, and discard turkey neck. Chop giblets and return to broth in saucepan. Add onion, celery, eggs, salt, and pepper. Bring to boil; reduce heat, and simmer, uncovered, 30 to 45 min. Combine cornstarch and 1/4 cup water, stirring well; stir into broth mixture. Bring to boil; boil 1 min. Serve hot. Yield: 2½ cups.

Honey Glazed Ham

1 (6 to 8 lb.) smoked, fully cooked bone-in ham half Glaze: 2/3 cup firmly packed brown sugar 1/3 cup sugar 1½ tsp. ground nutmeg

1 tsp. ground cloves 1/2 tsp. ground cinnamon 1/2 cup honey

Preheat oven to 325° F. Remove hard outer skin from ham, leaving thin layer of fat; place ham, fat side up, on rack in shallow roasting pan. With sharp knife, score fat in diamond design; insert meat thermometer into ham, making sure it does not touch fat or bone. Bake ham 1 hour and 15 min. Remove ham; leave oven on. Combine sugars and spices, stirring well. Brush ham generously with honey. Pat brown sugar mixture over honey, coating ham thoroughly. Return ham to oven, and bake at 325° F. for 30 to 40 min. or until meat thermometer registers 140°F. He could dance and move, but when he threw a punch, he would rear his arm all the way back and launch it like a howitzer, swinging from his heels with vicious intentions. Firpo was game, and knocked Dempsey through the ropes late in the round. Dempsey would go on to win in two, but he lost his share of the purse. Many years later, after the two had retired, Dempsey met up with Firpo in Argentina, where Firpo handed him an envelope with instructions to open it after he boarded his flight home to New York. Dempsey opened the envelope to find $20,000 in cash. How great is that?

LaMotta vs. Robinson VI — Round 11 They called Jake LaMotta "Raging Bull" for a reason: He constantly charged forward. He was a brawler in every sense of the word; he had a killer left hook and a granite chin. In 109 fights, the man never went down. Sugar Ray Robinson had never lost a professional fight until he met LaMotta, with LaMotta winning on points in their second meeting. Sugar Ray was every bit the guy you've heard so much about — he truly was the greatest pound-for-pound fighter ever. In their famed "St. Valentine's Day Massacre" in Chicago, the 11th round stands out for me. They traded punches the entire time, and LaMotta kept charging. Robinson would win by TKO two rounds later. Ali vs. Foreman — Round 8 George Foreman had destroyed Joe Frazier twice, and he was the angriest, scariest guy you ever saw when he met Ali in "The Rumble in the Jungle." Ali set the specifications for the fight, demanding a larger ring and elastic ropes that allowed him to basically lounge against them as Foreman banged away in what is now referred to as "the rope a dope." By the 8th round, Foreman had nothing left, and Ali put together a championship flurry that floored Foreman to regain his title.

Encountering God The life of Moses was remarkable. He was born into slavery but raised in a palace. When Moses came of age, he killed an Egyptian, was misunderstood and rejected by his own people the Jews, and ran for his life into the desert wastelands. For 40 years he herded sheep in the backside of the desert. One ordinary day Moses encountered God at a burning bush that changed his ordinary life into an extraordinar y adventure of knowing and pursuing the presence of God. In Exodus 3 we can gain insight from Moses’ burning bush encounter with God that can change our life into an abundant life of knowing and pursuing the presence of God. LOOK FOR GOD IN THE ORDINARY. “Now Moses was tending the flock . . . and he led the flock to the far side of the wilderness and to Horeb, the Mountain of God.” (Exodus 3:1) In the desert you are separated from distractions. It’s a hot, dry place. In the desert, Moses saw a burning bush. “There the angel of the Lord appeared to him . . . Moses

saw that though the bush was on fire, it did not burn up . . . When the Lord saw that he had gone to look, God called to him from within the bush, ‘Moses, Moses.’” (Exodus 3:3-4) Moses saw ordinary bushes every day, but this bush was not ordinary. Many p eople miss Jesus because they are only looking for the ordinary. David was enabled to kill the giant with an ordinary slingshot. Moses had an ordinary shepherd’s staff that God made extraordinary. Moses could have walked by the bush. God was waiting to see if he would look and draw near. “Draw nigh to God and he will draw nigh to you.” (James 4:8) Centuries later, Moses and Elijah appeared with Jesus on the Mount of Tr a n s f i g u r a t i o n . (Matthew 17) But the disciples missed seeing who Jesus was until God spoke from heaven revealing the Son of God. Seeing Jesus makes all

the difference. LISTEN TO THE VOICE OF GOD. God spoke to Moses out of the burning bush. Moses chose to listen. “’Here I am ,’ Mo s e s s ai d.” (Exodus 3:4) Later the boy Samuel heard the voice of God speaking to him. That God encounter called Samuel to be a powerful prophet of God. Several years ago, a great violinist, Joshua Bell, decided to dress as a homeless man and perform for tips in a Washington, DC subway station. People rushed by. A few dropped coins in his violin case. Many heard the music as they rushed by, but only a few stopped to listen. It’s easy to write off the ordinary and overlook what’s right in front of us. In the desert you can hear God if you will slow down, look, and listen with a “hearing ear.” God spoke from heaven, “This is my beloved Son in whom I am well pleased. Listen to him.” (Matthew 17:5) LO O SE YOU R S A N DA L S F R O M YOUR FEET. God told Moses not to come any closer to the burning bush, but to loose his sandals from his feet, “For the place you are

standing is holy ground.” (Exodus 3:5) God is holy. A true encounter with God will require repentance from sin. John the Baptist came out of the desert preaching the gospel of repentance. (Matthew 3:1-6) LO CATE GOD’S PLAN AND PURPOSE FOR YOUR LIFE. God called Moses to go back to Egypt and lead his people out of slavery into the promised land. An encounter with God will help you locate and develop God’s call on your life. (Jeremiah 29:11-13) LEARN OF JESUS. Moses asked God what his name was. God revealed himself as the “I AM.” (Exodus 3:13-15) What a surprising name. In the gospel of John, Jesus revealed himself as 7 great I AMs. A true encounter with God will reveal Jesus. While praying one day, I was drawn to a poster on the wall that said. “JESUS . . . As a result of the fighting, most signs of natural life had been obliterated from the region, leaving behind mud and not much else. The only living thing to survive was the poppy flower, which bloomed with the coming of the warm weather the year after fighting in the region had ceased. Poppies grow in disturbed soil and can lie dormant in the ground without germinating. Without the war, they may have never come to the surface. John McCrae, a doctor serving with the Canadian Armed Forces, was moved by the vision of poppies flowering in Flanders and wrote a poem titled "In Flanders Fields." After the poem was published, it rec e ive d i nte r nat i ona l acclaim, and the poppy became a popular symbol of those lost in battle. Men traditionally wear the poppy on the left side of the chest, where a military medal would be placed. Women wear it on the right side because that is where a widow would wear her husband's medals. Remembrance Day is celebrated every year, providing people humbled by the sacrifices of soldiers an opportunity to remember those soldiers' efforts to secure freedom.

he origins of Veterans Day can be traced to the ending of World War I nearly a century ago. Known at the time as “The Great War,” World War I officially

ended on June 28, 1919 with the signing of the Treaty of Versailles in France. But the fighting had actually ended seven months earlier when an armistice between the

Allies and Germany went into effect on November 11, 1 9 1 8 . T h e f o l l ow i n g November United States President Woodrow Wilson declared November 11 “Armistice Day” in honor of the cessation of the hostilities, and the day became a federal holiday in 1938. That

act was amended in 1954 after veterans service organizations, in recognition of the efforts of soldiers who fought in World War II, asked that the day be renamed “Veterans Day” so it honored all soldiers and not just those who fought in World War I.

Veterans Day is the perfect time to pay your respects to the soldiers who sacrificed so much for you and your country. They may not have known us, but they fought for us. They fought for our freedom. They fought for our rights. Honor, respect and thank them forever.
