LaMotta vs. Robinson VI — Round 11 They called Jake LaMotta "Raging Bull" for a reason: He constantly charged forward. He was a brawler in every sense of the word; he had a killer left hook and a granite chin. In 109 fights, the man never went down. Sugar Ray Robinson had never lost a professional fight until he met LaMotta, with LaMotta winning on points in their second meeting. Sugar Ray was every bit the guy you've heard so much about — he truly was the greatest pound-for-pound fighter ever. In their famed "St. Valentine's Day Massacre" in Chicago, the 11th round stands out for me. They traded punches the entire time, and LaMotta kept charging. Robinson would win by TKO two rounds later. In the words of LaMotta, "We fought so much I felt like we were married."

Wednesday, November 8, 2017 When the round was over, the fans were literally screaming and on their feet applauding so wildly it sounded like Beatlemania. Probably the best fight ever, and the first round was an instant classic.

Ali vs. Foreman — Round 8 George Foreman had destroyed Joe Frazier twice, and he was the angriest, scariest guy you ever saw when he met Ali in "The Rumble in the Jungle." Ali set the specifications for the fight, demanding a larger ring and elastic ropes that allowed him to basically lounge against them as Foreman banged away in what is now referred to as "the rope a dope." By the 8th round, Foreman had nothing left, and Ali put together a championship flurry that floored Foreman to regain his title.

Dempsey vs. Firpo — Round 1 Before Jack Dempsey went out of his corner, his cornerman told him that he had bet his share of the purse on a first-round k no ckout. Incens e d, Dempsey went out like a crazed lunatic, throwing bombs and knocking Luis Firpo all over the ring. To see the "Manassa Mauler" punch was an incredible sight. He could dance and move, but when he threw a punch, he would rear his arm all the way back and launch it like a howitzer, swinging from his heels with vicious intentions. Firpo was game, and knocked Dempsey through the ropes late in the round. Dempsey would go on to win in two, but he lost his share of the purse. Many years later, after the two had retired, Dempsey met up with Firpo in Argentina, where Firpo handed him an envelope with instructions to open it after he boarded his flight home to New York. Dempsey opened the envelope to find $20,000 in cash. How great is that?

• On Nov. 8, 1895, in his lab in Germany, physicist Wilhelm Conrad Rontgen becomes the first person to observe X-rays while testing whether cathode rays could pass through glass. Rontgen received numerous accolades for his work, including the first Nobel Prize in physics in 1901. • On Nov. 9, 1938, German Nazis launch a campaign of terror against Jews in Germany and Austria. The violence was dubbed "Kristallnacht," or "Night of Broken Glass," for the countless smashed windows of 7,500 Jewishowned establishments. On November 3, eleven local residents from four different counties completed their Master Naturalist training at Case-Halstead Library in Carlyle. The new grads will be considered interns until they have completed their first 60 hours of volunteer service through the Master Naturalist program. At that time they will join the ranks of the other 26 active Master Naturalists in Bond, Clinton, Jefferson, Marion and Washington Counties. New graduates from Jefferson County include Eric Gockel, and Gordon Wurth. The Master Naturalist program is still relatively new to Extension, with this being just the fourth time training has been offered. The training

Master Naturalists share natural resource information with the public and assist with conservation and restoration activities in their home communities. The next Master Naturalist training will be offered in the fall of 2018.

Encountering God

had an ordinary shepherd’s staff that God made extraordinary. Moses could have walked by the bush. God was waiting to see if he would look and draw near. “Draw nigh to God and he will draw nigh to you.� (James 4:8) Centuries later, Moses and Elijah appeared with Jesus on the Mount of Transfiguration. (Matthew 17) But the disciples missed seeing who Jesus was until God spoke from heaven revealing the Son of God. Seeing Jesus makes all the difference. LISTEN TO THE VOICE OF GOD. God spoke to Moses out of the burning bush. Moses chose to listen. “’Here I am,’ Moses said.� (Exodus 3:4) Later the boy Samuel heard the voice of God speaking to him. That God encounter called Samuel to be a powerful prophet of God. Several years ago, a great violinist, Joshua Bell, decided to dress as a homeless man and

The life of Moses was remarkable. He was born into slavery but raised in a palace. When Moses came of age, he killed an Egyptian, was misunderstood and rejected by his own people the Jews, and ran for his life into the desert wastelands. For 40 years he herded sheep in the backside of the desert. One ordinary day Moses encountered God at a burning bush that changed his ordinary life into an extraordinary adventure of knowing and pursuing the presence of God. In Exodus 3 we can gain insight from Moses’ burning bush encounter with God that can change our life into an abundant life of knowing and pursuing the presence of God. LOOK FOR GOD IN THE ORDINARY. “Now Moses was tending the flock . . . and he led the flock to the far side of the wilderness and to Horeb, the Mountain of God.� (Exodus 3:1) In the desert you are separated from distractions. It’s a hot, dry place. In the desert, Moses saw a burning bush. “There the angel of the Lord appeared to him . . . Moses saw that though the bush was on fire, it did not burn up . . . When the Lord saw that he had gone to look, God called to him from within the bush, ‘Moses, Moses.’� (Exodus 3:3-4) Moses saw ordinary bushes every day, but this bush was not ordinary. Many people miss Jesus because they are only looking for the ordinary. David was enabled to kill the giant with an ordinary slingshot. Moses

Many heard the music as they rushed by, but only a few stopped to listen. It’s easy to write off the ordinary and overlook what’s right in front of us. In the desert you can hear God if you will slow down, look, and listen with a “hearing ear.� God spoke from heaven, “This is my beloved Son in whom I am well pleased. Listen to him.� (Matthew 17:5) LOOSE YOUR SANDALS FROM YOUR FEET. God told Moses not to come any closer to the burning bush, but to loose his sandals from his feet, “For the place you are standing is holy ground.� (Exodus 3:5) God is holy. A true encounter with God will require repentance from sin. John the Baptist came out of the desert preaching the gospel of repentance. (Matthew 3:1-6) LOCATE GOD’S PLAN AND PURPOSE FOR YOUR LIFE. God called Moses to go back to Egypt and lead his people out of slavery into the promised land. An encounter with God will help you locate and develop God’s call on your life. (Jeremiah 29:11-13) LEARN OF JESUS. Moses asked God what his name was. God revealed himself as the “I AM.� (Exodus 3:13-15) What

a surprising name. In the gospel of John, Jesus revealed himself as 7 great I AMs. A true encounter with God will reveal Jesus. While praying one day, I was drawn to a poster on the wall that said. “JESUS . . . The southern kitchen is a hive of activity starting weeks before Thanksgiving and staying busy until after New Year's Day. There are Thanksgiving, Christmas, and New Year's festivities to plan for family gatherings as well as the parties in between. The aromas coming from the kitchen start now and last through New Year's, from turkey and dressing to cookies and fancy desserts. Southern Cooking will be split into three parts over the next three weeks, starting with this week's main dishes, moving on to side dishes next week, and followed by desserts the third week, so enjoy!

Turkey and Dressing with Giblet Gravy

1 (12 to 14 lb.) turkey 1/4 cup unsalted butter or margarine, melted

1½ tsp. salt Turkey Dressing (recipe follows) Giblet Gravy (recipe follows)

Preheat oven to 325°F. Remove giblets and neck from turkey; reserve for gravy. Rinse turkey with cold water; pat dry. Sprinkle salt over surface of turkey and inside cavity. Tie ends of legs to tail with string or tuck them under flap of skin around tail. Lift wing tips up and over back and tuck under turkey. Brush entire bird with melted butter. Place turkey, breast side up, on rack in roasting pan. Insert meat thermometer in meaty part of thigh. Roast 4 to 5 hours, or until meat thermometer registers 180° to 185°. Baste with pan drippings every hour. If turkey gets too brown, tent top with aluminum fop. After turkey has baked 3 hours, cut string or band of skin holding legs to tail. When done, let turkey stand 15 min. before carving. Serve with Turkey Dressing and Giblet Gravy. Yield: 14 to 16 servings.

Corn Bread: 2 cups cornmeal 1/3 cup all-purpose flour 1 T. sugar 1 tsp. baking powder 1/4 tsp. baking soda

1/4 tsp. salt 2 cups buttermilk 3 eggs, beaten 1 T. vegetable oil 1 T. vegetable oil or bacon drippings

Combine cornmeal, flour, sugar, baking powder, soda, and salt in large mixing bowl. Add buttermilk, eggs, and 1 T, oil, mixing well. Preheat oven to 450° F. Place 1 T. oil or bacon drippings in 10" cast-iron skillet. Place skillet in oven 3 to 4 min. Tilt pan evenly to distribute oil or drippings; pour batter into pan and bake 25 to 30 min. Cool; crumble corn bread into large bowl. Add crumbled white bread. Set aside. Combine onion and celery in small saucepan. Add 3 T. chicken broth. Cook over medium heat until vegetables are just tender; add to crumbled corn bread mixture. Stir in poultry seasoning, white pepper, sage, garlic powder, salt and pepper. Add enough remaining broth for dressing mixture to hold together, adjusting for desired moistness (add up to 4 cups broth for moist dressing; less for drier dressing). Spoon mixture into lightly greased 13x9x2" baking dish. Bake at 350°F. for 30 to 45 min., or until dressing is lightly browned and set. Yield: 8 servings.

Giblet Gravy

Giblets and neck from 1 turkey 1 small onion, chopped 1 stalk celery, chopped 2 hard-cooked eggs, chopped

1 tsp. salt 1/2 tsp. black pepper 2 T. cornstarch 1/4 cup water

Cover giblets and neck with 3 cups water in small saucepan. Bring to boil; cover, reduce heat, and simmer 1 hour, or until giblets are tender. Drain, reserving broth, and discard turkey neck. Chop giblets and return to broth in saucepan. Add onion, celery, eggs, salt, and pepper. Bring to boil; reduce heat, and simmer, uncovered, 30 to 45 min. Combine cornstarch and 1/4 cup water, stirring well; stir into broth mixture. Bring to boil; boil 1 min. Serve hot. Yield: 2½ cups.

With sharp knife, score fat in diamond design; insert meat thermometer into ham, making sure it does not touch fat or bone. Bake ham 1 hour and 15 min. Remove ham; leave oven on. Combine sugars and spices, stirring well. Brush ham generously with honey. Pat brown sugar mixture over honey, coating ham thoroughly. Return ham to oven, and bake at 325° F. for 30 to 40 min. or until meat thermometer registers 140°F. The funds will be used to purchase a Road Grader for the Township of Odin. This Road Grader will replace the Township's existing equip-

A BIG DAY FOR TAX REFORM C ong ressman John Shimkus (R, Illinois-15) praised the introduction of H.R. 1, the Tax Cuts and Jobs Act, which will bring much needed reforms to the tax code for the first time in more than 30 years. “Today is a big day,” Shimkus said. “My friend, Chairman Kevin Brady (R, Texas-8), and his Ways and Means Committee have put together a simpler, fairer, flatter tax code that will put more money in my constituents’ pockets and support a growing, thriving economy for all Americans.” The Tax Cuts and Jobs Act maintains the 39.6 percent top rate for highincome Americans, but lowers rates and simplifies tax brackets for low- and middle-income families. By nearly doubling the standard deduction, from $6,350 to $12,000 for individuals and $12,700 to $24,000 for married couples, the bill will shield twice as much of an individual or family’s annual earnings from federal taxes. “Almost 80 percent of my district takes the standard deduction,” Shimkus said. “Under this new plan, that number will only go up. This means that my constituents will keep more of their hard-earned paychecks, and will be able to easily file their taxes themselves, instead of having to hire a tax professional.” In addition, for thousands of Illinois farmers and small businesses, the Tax Cuts and Jobs Act provides relief from the “Death Tax” by immediately doubling the current exemption, and ultimately repealing this

misguided penalty within six years. The bill allows businesses to immediately write off the full cost of new equipment, and protects the ability of small businesses to write off the interest on loans. Lastly, corporate taxes under the bill would fall from 35 percent (the highest rate in the industrialized world) to 20 percent, and special-interest loopholes and incentives that reward companies for sending jobs overseas are eliminated. Real World Examples from the Office of the Speaker: Family of Four Making $59,000 Per Year Steve and Melinda have two children in middle school and are living secure middle-class life—but budgets are tight. With tax reform, they’ll get some much-needed breathing room financially. As a result of lower tax rates, a significantly larger standard deduction, and an enhanced Child Tax Credit and Family Flexibility Credit, Steve and Melinda will see their total tax bill drop from $1,582 to only $400. That’s a tax cut of $1,182 they can use for whatever is important to them, whether it’s paying bills, purchasing a new refrigerator, or putting away savings for the future.

Single Mother Making $30,000 Per Year Cindy has a fulfilling job and a promising career path as an assistant manager at a local restaurant. She works hard to support herself and her 11-year-old daughter, but most days Cindy feels like she’s barely getting by much less getting ahead. With the Tax Cuts and Jobs Act, relief is in sight. Come Tax Day, Cindy will receive a tax refund of more than $1,000 as a result of the bill’s lower tax rates, larger Child Tax Credit, and Family Flexibility Credit. This is more than $700 larger than the refund she receives today, offering a more meaningful reward for her hard work as she raises her daughter and pursues her own professional aspirations. Firefighter Making $48,000 Per Year Alan is a young firefighter in the community he has called home his entire life. He enjoys the job and has chosen it as his profession just like his father and grandfather did before him. The Tax Cuts and Jobs Act will allow him to see even greater reward for his hard and selfless work. Under this legislation, Alan will pay a top marginal tax rate of just 12% instead of the 25% top rate he pays today. Additionally, he’ll see nearly double the amount of his paycheck protected from taxes because the bill significantly increases the individual standard deduction from $6,350 today to $12,000. In the end, Alan will see his total tax bill go down from $5,173 currently to just $3,872—a total tax cut of $1,301.

colors by the Beckemeyer American Legion Post #1227, and the performance of the military service songs by the KC Blues under the direction of Lynda Marshall. Pastor Tommy Henegar is the founder and director of the Centralia Youth Workcamp, the chairman of the Centralia Community Benevolence Association, and chair of the

Such tasks won’t take much time but can make a world of difference to veterans. • Offer professional services free of charge. Professionals who want to help veterans can offer their services free of charge. Accountants can offer to prepare veterans’ tax returns for free, while attorneys can provide legal advice to veterans who need it. Contractors can help disabled veterans by offering to make alterations to their homes for free or at cost. • Employ social media to help local veterans. Many people who want to help local veterans might not be able to do so more than one day per week. But some veterans may require daily assistance. Men and women can start a locallybased Facebook group for fellow members of their community who want to pitch in to help local veterans. Such a group can make it easier to share information and arrange help for veterans in need. Many veterans return home from serving overseas in need of help. Offering such help can improve veterans’ lives while letting them know their efforts and sacrifices are appreciated.

ilitary personnel are unsung heroes whose sacrifices for their country make it possible for hundreds of millions of people to enjoy freedoms that many people across the globe do not have. In recognition of those sacrifices, many people want to show their appreciation to both active and retired serv i c e m e n a n d w om e n . Fortunately, there are many ways to do just that. Pitch in at Home According to the United States Department of Defense, the United States military currently deploys active duty personnel in nearly 150 countries. Many of those troops are separated from their families for months at a time, and that separation can make things difficult for their loved ones back home. If a neighbor’s spouse is deployed overseas, offer to help around the house. Whether it’s mowing their lawn, dropping their kids off at school or inviting the whole family over for dinner one night each week, such gestures can go a long way toward easing the burden faced by spouses of deployed military personnel. Send Gifts to Active Personnel Servicemen and women on active duty do not enjoy many of the luxuries that tend to be taken for granted back home. But men and women who want to show their appreciation can send care packages to

active personnel serving overseas. An organization such as Operation Gratitude (operationgratitude.com), which to date has sent nearly 1.3 million care packages to active personnel, sends care packages filled with snacks, entertainment, personal hygiene products and handmade items. This provides active personnel a taste of home while also letting them know their extraordinary efforts are appreciated and not forgotten. Volunteer at a Veterans Hospital Unfortunately, many servicemen and women return home from their deployments with injuries or health conditions that require long-term care. By volunteering at veteran hospitals, men and women can help veterans overcome their injuries and provide much-needed help to staff at hospitals that could use a helping hand. Visit volunteer.va.gov for more information. Make a Financial Donation For those who want to support servicemen and women but don’t have much free time to do so, financial donations can go a long way toward improving the quality of life of active and retired military personnel. orld War II veterans are truly a dying breed. According to the Veterans Administration, approximately 492 World War II veterans die every day. Unfortunately, with these men and women die the stories and accounts that have never been written down, captured on film or told to grandchildren. As a result, World War II and the “greatest generation” that lived it, will soon seem as distant to today's young people as the Civil War is to my generation. But to those lives it has touched, directly or indirectly through loved ones, it will remain as large as life. My grandfather, Jerry Pinkowski, (1915-1993) was 26 years old when America entered World War II. He was considered 'unfit for service' due to a childhood injury to his arm that healed incorrectly. But with the Army’s need for personnel being what it was at the time, they accepted him along with many other “limited” service men. He served as a mechanic in the 347th Ordnance Depot

Company which was eventually attached to General George S. Patton’s famous Third Army. Although Grandpa got the “express tour” of Europe while chasing after Patton’s racing armored columns, he still found time to take photographs. Lots of them! Unfortunately, it was only through these photos that I was able to learn much of the details of my Grandpa’s service during the war. Like many World War II veterans he was pretty closed-lipped about his experiences in the war, and my family really wasn’t aware of the treasure trove of photograph negatives he had stashed away until after he lost his battle with cancer in 1993. I regretted not finding out more about the places he'd been, the things he'd seen, and the people he knew. I had missed the golden opportunity to hear my grandpa’s first-hand accounts, but the one thousand photographs that he left behind told a story all their own. photograph collection. Casually at first, then later becoming more and more serious about unravelling the mysteries contained on the celluloid. The photos’ subjects are varied and range from ordinary everyday scenes of him and his comrades working, to 13th century gothic cathedrals surrounded by crumbling ruins. In 2000 I published some of them on a website called Lost Images Of World War II, inviting visitors to offer their identifications and observations about the photos. That project springboarded me into more extensive research where I’ve been able to retrace Grandpa’s tracks across Europe, and also talk with the very few surviving members of his unit that I could find. In August of 2011, I launched a new, more detailed website which features several hundreds of Grandpa's photos along with summaries, analyses and modern day photo comparisons. The new website can be seen at www.lostimagesofww2. com I urge all World War II veterans to write your memoirs. Tell your stories. Show your old photos to your family while you can still tell the stories behind them. Shining through in those stories will be the values and traditions of a time when sacrifice was commonplace, valor was all-in-a-day's-work and truck drivers, college students, farm boys, and carpet store owners were heroes. Through loved ones, the struggles of our Nation during the war have touched my life, and I know that my grandfather played an important part. I understand the sacrifices that my grandfather made, and the ones he was willing to make during a time when hundreds of thousands made the ultimate sacrifice. This selfless attitude is characteristic of American veterans—past and present. We must never forget those who went before us and made life in America as it is today possible.

Don't Risk Pets' Lives: Vaccinate DEAR PAW’S CORNER: The letter from a reader wondering if it's worth it to vaccinate his indoor cats ("Do Indoor Cats Need All Those Shots?") hit a nerve with me. Years ago, I had five totally indoor kitties. And like his cats, mine loved to perch on the windowsill. I'd never bothered to keep up with all of their shots, because they never went outside and so wouldn't be exposed to other cats — so why deal with the expense? You can guess what happened: The window s c re e n p opp e d out

somehow, and my cat "Woody" fell out into our side yard. Once we discovered the "escape," we got him back into the house, but sadly, it was not fast enough. As time went by I noticed all of my cats were showing signs of illness, so I made an appointment with the veterinarian. Sadly, Woody never made it; he passed away the day before the appointment. All of my surviving cats were diagnosed with feline leukemia. Because of my insistence on being cheap, I shortened all of my cats' lives. If they had been vaccinated regularly, they likely would never have gotten sick even if they accidentally escaped the house. That's a fact I can never, ever change. Please don't think like I did.
