Banana Bread Minis

1 pkg. (2-layer) yellow cake mix 1 pkg. (3.4 oz.) Jell-O Banana Cream Flavor Instant Pudding 4 eggs 1 cup water 1/4 cup oil 1 cup mashed fully ripe bananas (about 3) 1/2 cup chopped walnuts

Make It

Heat oven to 350ºF. Beat first 5 ingredients in large bowl with mixer until blended. Add bananas and nuts; mix just until blended. Pour into 5 foil mini loaf pans sprayed with cooking spray. Bake 40 min. or until toothpick inserted in centers comes out clean. Cool completely. This Christmas, give Mini Banana Bread as gifts! No More Boring Elves It's a simple story: A scout elf hangs around your home, gathering evidence for your child's spot on the naughty/ nice list and reports it back to Santa overnight. Like most elves, he enjoys shenanigans. From its humble 2005 beginnings as a self-published Christmas tale by Carol Aebersold and her daughter Chanda Bell, "The Elf on the Shelf" has become an epic Pinterest-fueled phenomenon of cheery parents creating Christmas magic for cherished tykes. At its best, it's one more tool in the arsenal of Mom and Dad to reinforce good behavior while showing off their own creativity. At its worst, it's the source of shame or guilt provoked by Facebook posts or preschool comparisons. Even the most super of supermoms stalls sometimes. Never fear. Here are 20 tips to Elf on the Shelf like a pro, and a few ways to get out of a jam if you forget.

OTHER WAYS TO ELF: ★ Catch a Junior Buddy (from the movie "Elf") enjoying proper Elf nutrition by sticking to the four main Elf food groups: candy, candy canes, candy corn and syrup. Leave the movie out to watch together. ★ Elves love to dress up as characters from your favorite TV show. ★ Your Elf could get acrobatic, up high walking the tightrope, like at the circus. ★ Let your Elf channel his inner art-gallery director by hanging the kids' crafts and drawings in the hallway, along with a few of his own. ★ Your Elf might like to borrow Barbie's sunglasses and other accessories to get in some tanning time on a windowsill.

INVOLVE THE OTHER TOYS: ★ Have a boy Elf go on a classic date with Barbie. Perhaps a lovely picnic. ★ Boys will be boys. Watch your Elf get captured by small soldiers. ★ Game night is on when your Elf enjoys a board game with stuffed animals. ★ Your Elf can stay in Santa's good book by reading to the baby dolls. ★ Color a masterpiece with your art materials.

GADGETS AND SUCH: ★ True story: Elves need to limit their screen time. Catch yours passed out after playing video games all night. ★ Books are cool, but so is reading on your kindle. Just make sure your Elf saves the page you were on ... ★ Are there phones at the North Pole? Your Elf can't resist sending a few selfies and text messages (to family, of course) on your smartphone. ★ It's popcorn time! There's nothing better than staying up late watching movies — Christmas movies, that is! ★ If you aren't practicing enough (with your sports equipment/musical instruments), maybe your Elf will take a turn.

IN THE KITCHEN: ★ Nobody loves making cookies more than an Elf. Maybe he'll even spell out your initials in chocolate chips. ★ Breakfast prep is a snap when your Elf gets involved. I'll bet it involves candy canes. ★ You might find your Elf head first in the sugar bowl... ★ ...or holding a piece of rock candy in the freezer. ★ On a cold night, he's sending a message when he preps a tray of hot chocolate (with marshmallows!)

IF THE ELF DIDN'T MOVE 1. Is he stuck? The cardinal rule of Elf on the Shelf is that you must not touch the Elf. If so, Mom or Dad may have to use tongs or other instruments to unstick the Elf. 2. Did your child misbehave? If so, he's probably doing them a favor by not reporting back to Santa. Just remind your child to be extra helpful and kind so that he'll have something good to report tonight. 3. Is he sick? We all feel run down sometimes. Give him the night off and let him get some rest. IF YOU TOUCHED THE ELF 1. Write an apology letter. A remorseful heart will bring magic back in a flash. 2. He needs a dose of Vitamin C — cinnamon, that is. Sprinkle some near him and let it do its work. 3. Sing Christmas carols.

ROAST GOOSE WITH SAGE AND ONION STUFFING 1 8- to 10-pound goose 1/2 teaspoon salt 4 tablespoons butter 1 large onion, finely chopped 2 stalks celery, finely diced Liver from the goose 5 cups fresh bread crumbs 4 fresh sage leaves, chopped or 1 teaspoon dried sage 1 teaspoon salt Freshly ground black pepper 1 large egg Preheat oven to 400°F. Remove giblets from the goose. Pull away any loose fat from inside the body cavity. Rinse the goose under cold running water and pat dry with paper towels. Sprinkle with salt inside and out. In a skillet, melt the butter and saute the onion until it softens but does not brown (about 10 minutes.) Add the celery and the goose liver and saute about 10 minutes longer until the liver is just firm. Remove the liver and mince it. In a large bowl mix the butter, onions and celery together with the bread crumbs. Mix in the minced goose liver and the sage. Season with salt and pepper. Beat the egg and stir it in.

Stuff the goose with the bread-crumb mixture. Truss it and sew or skewer the cavity closed. Pull the neck skin down and under the back and fasten with skewers or toothpicks. Prick the skin of the goose all over with a skewer or sharp fork.

Place breast side up on a rack in a roasting pan. Roast for 15 minutes at 400°F, then lower the temperature to 325°F and turn breast side down and cook for 2 hours. At the end of 2 hours, turn goose breast side up

again and cook another 2 hours. Test for doneness by pricking the leg close to the body. Juices should run clear. Remove from oven and let stand for 15 to 20 minutes before carving. Yield: 8 servings.

How Washington Irving Won the War on Christmas By rich Lowry

B

ack before there was cable TV, Washington Irving won the war on Christmas. The great early American writer had an outsized role in giving us Christmas as we know it. A little background, according to "Christmas in America: a History," by Penne Restad. Back in merry old England, Christmastime in the 17th century was merry indeed, a raucous affair that incurred the displeasure of the Puritans. When Oliver Cromwell took over, his Puritan parliament suppressed Christmas with a zeal that would have made the American Civil Liberties Union blush (you were

looking for trouble if you decorated your church, or closed your shop, or preached on the birth of Jesus). Puritan distaste for the holiday traveled over the Atlantic. John Winthrop of Massachusetts Bay had no use for Christmas. Other settlers in other colonies, depending on their origin and their religion, had differing attitudes, and the celebration was a motley affair for much of early American history. In some places, it wasn't celebrated at all. Then, it steadily began to take hold, and Washington Irving, the literary genius who gave us "Rip van Winkle" and "The Legend of Sleepy Hollow," helped define it. Not only

did Irving write about a pipe-smoking, wagon-riding, gift-dispensing St. Nicholas, he delineated a Christmas celebration of irresistible charm and enduring appeal. In the early 1820s, Irving published five enormously popular Christmas stories about his visit to Bracebridge Hall in England. They lament how "old games and customs" around the holiday have been lost, but they are preserved at Bracebridge. Through the haze of nostalgia, a recognizable Christmas shimmers through. There's the rush of gift-laden travelers. Irving describes a stagecoach crowded with passengers who "seemed principally bound to the mansions of relations or friends to eat the Christmas dinner." The coach "was loaded also with hampers of game, and baskets and boxes of deli-

There's the anticipation of the kids. Irving delights in the "little rogues" who are "returning home for the holidays in high glee, and promising themselves a world of enjoyment." There's the holiday revelry. Irving recounts "the old games of hoodman blind, shoe the wild mare, hot cockles, steal the white loaf, bob apple and snapdragon: the Yule log and Christmas candle were regularly burnt, and the mistletoe, with its white berries, hung up to the imminent peril of all the pretty housemaids." There's the magic of Christmas Eve. That night Irving hears villagers playing music outside his room: "The

sounds, as they receded, became more soft and aerial, and seemed to accord with quiet and moonlight. I listened and listened — they became more and more tender and remote, and, as they gradually died away, my head sank upon the pillow and I fell asleep." There's the Christmas Day feast. Irving reports that "the table was literally loaded with good cheer, and presented an epitome of country abundance, in this season of overflowing larders." Irving's is a Christmas of "tender and inspiring" church services and of the gathering of family members at home, "that rallying-place of the affections," where returning children "grow young and loving again among the endearing mementoes of childhood." Of course, this is all achingly aspirational. Irving's Christmas never quite was and never quite will be, but it is a vision of what the holiday should be. "Of all the old festivals," he writes, "that of Christmas awakens the stron-

Pumpkin Spice Cheesecake INGREDIENTS Crust: 2 cups graham cracker crumbs 1 stick Prairie Farms unsalted butter, melted Filling: 2 pounds cream cheese, four 8 oz. packages, softened 16 oz Prairie Farms sour cream 2½ cups sugar 1 tsp. salt 6 large eggs, room temperature 15 oz. pure pumpkin, 1 can 4 tbsp. Prairie Farms Pumpkin Spice Milk DIRECTIONS Preheat oven to 325 degrees F. Grease a 10-inch springform pan with a butter wrapper and wrap the bottom with tin foil. In a large bowl mix together the graham cracker crumbs and melted butter. Press the crumb mixture into the bottom and up the sides of the pan. Bake for about 15 to 20 minutes, then remove from oven and set aside to

cool. In an upright mixer use the paddle attachment to beat the cream cheese and sour cream until smooth. Then slowly add sugar and mix well. Set aside 1 cup of cheesecake mixture. Then add the pumpkin, eggs, vanilla, 1 teaspoon salt and pumpkin spice milk and mix until just combined. Pour pumpkin cheesecake mixture into the cooled crust. Place your pan into a roasting pan and fill halfway with water. Bake for about 30 minutes then top with plain cheesecake topping. Return to oven and cook for an additional hour, then turn off the oven and leave the cheesecake in the oven for about an hour. Remove from oven and out of the roasting pan and let cool to room temp. Cover and refrigerate for at least 8 hours or overnight. Remove cheesecake from springform and top with dollops of Prairie Farms whipped cream.

HOW TO BAKE A

HONEY-GLAZED

Serves at least 10, depending on size of ham Ingredients 1 large ham, ideally bone-in and spiral-cut, with no added water or juices 1 cup honey 2 tablespoons unsalted butter 2 tablespoons brown sugar 2 tablespoons balsamic vinegar 2 teaspoons Worcestershire sauce Equipment Roasting pan with rack Aluminum foil Chef's knife Saucepan Pastry brush Instructions 1. Heat the oven to 275°F and line the roasting rack with several long pieces of foil. These should be large enough to wrap up and around the ham. 2. Place the ham cut-side down in the pan. Take the ham out of its wrappings and place it in the pan. 3. Use a sharp knife to score the skin of the ham into a crosshatch pattern. Slice long lines into the skin (not into the meat itself) and then slice back the other way to form a crosshatch pattern. This makes

the ham a little prettier, and it will also help your glaze permeate the skin later in the baking process. 4. Fold the foil up around the meat. 5. Fold the top of the foil together to seal as well as possible. This foil pouch is meant to keep the ham from drying out in the oven. 6. Bake for 2 to 2½ hours. Put in the oven to bake, well-wrapped in foil, and go about your business. The ham doesn't need any attention or checking until at least 1½ hours have passed. 7. Make the glaze: Combine the honey, butter, and sugar in a pan and stir over medium heat until the sugar is dissolved and the butter is melted. Stir in the vinegar and Worcestershire sauce. Turn off the heat and set aside.

9. Glaze the ham. Once the ham hits 120°F internally, turn up the oven to 425°F. While the oven is heating, remove the ham from the oven and ease the foil away and out of the pan. Warm the glaze again if necessary to make it easy to spread. Use a pastry brush to liberally apply the glaze all over the skin of the ham. 10. Bake the ham for 10 minutes. Bake the ham for 10 minutes at the higher oven temperature, then remove it from the oven and turn the oven up to BROIL. 11. Brush with glaze one more time, then broil. Brush the ham with the honey glaze one more time, then put back in the oven under the broiler for about 3 to 5 minutes (keep an eye on it, though, and remove if it begins to smoke). This will give a crisp edge to the skin.

8. Check the temperature of the ham. After about 1½ hours, check the temperature of the ham in the thickest part of the meat, avoiding the bone. The ham is fully cooked already, so you are just checking to see if the inner part of the ham is warm yet. If the ham has reached an internal temperature of 120°F, move on to the next step. If not, seal it back up in the foil and put it back into the oven.

12. Remove from the oven, slice, and serve. Remove the now-glazed ham from the oven. Cut the slices away from the bone, and serve.

CHEWY SUGAR COOKIES Ingredients

2¾ cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon baking powder 1 cup softened butter 1½ cups white sugar 1 egg 1 teaspoon vanilla extract 3 to 4 tablespoons buttermilk Sprinkles or colored sugar, for decorating

Roll rounded teaspoons of dough into balls and place on an ungreased cookie sheet. With a brush or fingers, moisten the top of each cookie with the remaining buttermilk and slightly flatten the top of each cookie. Sprinkle with raw sugar or colored sprinkles. Bake for 8 to 10 minutes or until slightly golden. Let stand for 2 minutes before removing to cool on a rack.

Preheat oven to 375 degrees F. In a small bowl, stir together flour, baking soda, and baking powder. Set aside. In a large bowl, cream together butter and sugar until smooth. Beat in the egg and vanilla. Gradually blend in dry ingredients. Add enough of the buttermilk to moisten the dough and make it soft, not wet.

Christmas In The New World It is thought that the very first Christmas celebrated in the New World occurred when Columbus's ship, the Santa Maria, struck a sandbar on Christmas Day, 1492. Rescued and brought to shore by natives of the island later known as Santo Domingo, he celebrated the feast of the Nativity by naming the village he founded La Navidad, "the Nativity." But Christmas did not get off to a very good start in the New World, since the Puritans frowned on any and all celebrations. In New England in 1659, celebrating Christmas was forbidden by a law that read: "anybody who is found observing, by abstinence from labor, feasting, or any other way, any such days as Christmas Day, shall pay for every such offense five shillings." Of course, all that changed with the great influx of European immigrants who reached our shores in the eighteenth and nineteenth centuries. The United States is one of the great

melting pots of the world, and it follows that Christmas is celebrated in widely different styles among Christian Americans and even among non-Christians who often enter gleefully into a kind of secularized spirit of the season. Most Christmas traditions in the United States can be traced to the folk-ways and customs of the homelands of those who have come here. Nevertheless, if America lacks a large number of truly distinctive Christmas traditions, it has certainly demonstrated a flair for synthesizing the diverse traditions of the many ethnic groups that live here. It was an American, a New York clergyman named Clement C. Moore, who by writing ''A Visit from St. Nicholas" virtually defined the modern notion of Santa Claus as a jolly, bearded fat man with eight reindeer to pull his sleigh. And of course it was the drawings of the famous political cartoonist, Thomas Nast, which brought that notion visually alive.

HOLIDAY POPCORN BALLS Ingredients

No-stick cooking spray 1/2 cup popping corn 4 cups miniature marshmallows, divided 1/4 cup butter, divided 15 drops green food coloring Coarse colored sugar and candy canes or gum drops, optional

Spray large bowl, rubber spatula and piece of waxed paper with cooking spray; set aside. Pop kernel corn according to package directions. Remove all unpopped kernels and place half of popped corn (about 2 quarts) in bowl. Place 2 cups marshmallows and 2 tablespoons butter in microwave-safe bowl; microwave on HIGH 45 seconds or until marshmallows melt and mixture blends when stirred. Stir in food coloring. Pour marshmallow mixture over popped corn in
