STRATEGIES TO AVOID HOLIDAY WEIGHT GAIN Staying fit during the holiday season can be quite challenging, even for the most ardent fitness enthusiasts and disciplined calorie-counters. Between Thanksgiving and New Year’s Day, many people are offered a wide assortment of foods, beverages and other indulgences — typically in mass quantities. According to researchers at Stanford University, although the average person only gains around one pound during the holiday season, quite frequently that pound sticks around, and those extra pounds add up year after year. As a result, it doesn’t take too many years of holiday bundt cakes to gain a considerable amount of weight. Holiday season weight gain is not unique to the United States and Canada. Investigators at Tampere University of Technology in Finland tracked weight gained in the United States, Germany and Japan during those coun-

tries’ festive times and found that each country’s par ticipants gained weight, particularly during the holiday season. Annual holiday weight gain can contribute to weight-based problems such as obesity, heart disease and Type 2 diabetes. The holiday season might not be the best time to start a diet, but holiday eating does not have to derail healthy lifestyles. The following are ways to avoid holiday weight gain and still enjoy all of the parties, adventures and time spent with friends and family. • Focus on festivity instead of food. When hosting holiday festivities, make the bulk of the celebration about an activity rather than food. If guests are focused on fun, such as a sing-a-long, dancing or tree-trimming, they may be less likely to overeat. • Don’t show up starving. Eat a light, healthy snack before participating

in any holiday revelry. Hunger pangs may drive one straight to the buffet table. • Survey your options prior to eating. Guests should scope out the food choices and then make the smartest selections possible. Avoid creamy sauces, greasy foods and those that are heavy on

cheese. Fill up on vegetables and then you won’t feel bad about splurging on a dessert. • Go sparingly on alcohol. People seldom realize how quickly beverage calories can add up. A 12 oz.glass of beer has about 150 calories, a 5 oz. glass of red wine has about 125 calories and a 1.5 oz.

shot of gin, rum, vodka, whiskey, or tequila has about 100 calories. Furthermore, alcohol lowers inhibitions, so you may be more likely to overindulge in extra spirits or food when intoxicated. • You can’t buy back calories with exercise. Putting in a marathon

exercise session the next day probably will not undo the damage done from overeating the night before. Maintain a consistent workout schedule all through the holidays. Holiday weight gain is not inevitable for those who take control and exercise discipline.

LIHEAP CHILD PSYCHOLOGY CLASS DECORATES FOR FESTIVAL OF TREES EVENT PROGRAM Students enrolled in Dr. HELP WITH Jeannie Mitchell's Child HEATING BILL Psychology class at Rend Crosswalk Community Action Agency, headquartered in West Frankfort, will be administering the Low Income Home Energy As s i s t a n c e P ro g r a m (LIHEAP) for Franklin, Jefferson and Williamson Counties. The program provides financial assistance to eligible households to help pay a portion of their winter heating bills. Eligibility is based on gross income for the thirty days beginning with the date of application and is $1,508 for one person household, $2,030 for two person households, $2,553 for three person households and $3,075 for four person households. Also, you must be the customer of record (COR) at your utility company. The first step in receiving assistance is to visit the outreach site in your county and make an appointment so an application can be made at a later date. It is recommended that only one person per household come to make an appointment. This will make the line shorter and should provide faster service. Also, any eligible household that is disconnected from their utility or who is at or below 25% on a delivered fuel and can not get a delivery on their own may qualify for re-connection assistance. Christmas Cookie Centerpiece Follow the recipes for Chocolate Gingerbread Cookies and Christmas Sugar Cookies as directed except increase the flour by 1/2 cup in each recipe. (Since the cookies are going to be handled a good deal, a firmer dough is preferable but the cookies will still be good to eat.) Be sure to cut a variety of shapes: bells, stars, Christmas stockings, Christmas trees, Santas. Before baking, make a small hole at the top of each cookie. Bake cookies as directed in the recipes. When cookies are cool, decorate with Decorating Icing, white or tinted. Using a waxed paper cone or a decorating tube fitted with a writing tip, fill in the features or outline the shapes made by the cutters. If desired, decorate with silver dragées. With beaded dressmakers' pins, attach cookies to a styrofoam cone. (The one pictured on the opposite page is 12 inches tall and 7 inches in diameter at the base.) Start the pinning with the bottom row of cookies; then move to the row above, arranging the cookies so they overlap slightly. To make the tree more festive, fill in spaces with little red bows and holly leaves. Split red Hall Sheen ribbon into narrow strips and make bow loops. Cut holly leaves from green Hall Sheen ribbon and stick onto the underside of the bow at an angle. Attach the decorations to the tree with dressmakers' pins. NOTE: You can also use these cookies as decorations on a tabletop Christmas tree. Thread ribbon through the holes and tie cookies onto the branches.

Cream butter; gradually add sugar, beating until light and fluffy. Beat in egg, then molasses. Sift together remaining ingredients and stir in, mixing until well blended. Chill 1 hour. On a floured surface, roll out dough until 3/16 inch thick. Cut with cookie cutters and place on a greased baking sheet. Bake in a preheated 350° oven 7 minutes. Remove from sheet immediately and cool on a wire rack. Decorate as desired. Makes about 4 dozen 2-inch cookies or 2 dozen large cookies.

Decorating Icing 2 cups confectioners' sugar Food coloring (optional) 1 egg white, lightly beaten Mix sugar and a spoonful of egg white in a small bowl; beat until smooth, gradually adding more egg white to reach the desired

consistency. Beat in coloring as desired. To use, fill a waxed paper cone or a decorating tube fitted with a writing tip with some of the icing. This icing is ideal for outlining cookies or for "drawing" features and designs of your own. Makes about 1 cup. NOTE: This icing can become stiff very quickly so make only one batch at a time and keep bowl covered with a damp cloth.

Christmas Sugar Cookies 3/4 cup butter, softened 1/2 tsp. salt 1 cup sugar 1/8 tsp. ground nutmeg 1 egg 2 T. milk 2 cups flour 1 tsp. vanilla 1 tsp. baking powder Cream butter; gradually add sugar, beating until light and fluff y. Beat in egg. Sift together flour, baking powder, salt and nutmeg; add to creamed mixture alternately with milk and vanilla to form a stiff dough. Wrap in waxed paper and chill 1 hour. On a floured surface, roll out the dough until 3/16 inch thick. Cut into desired shapes with holiday cookie cutters and place on an ungreased baking sheet. Bake in a preheated 400° oven 6 to 8 minutes or until golden. Remove to wire rack to cool. If desired, decorate with decorating icing. World Cup Time Is Now for America Thirty-one nations have booked a ticket for the 2018 World Cup, to be held in Russia next year. Most conspicuously absent in this year's tournament besides Italy (which missed the cut for the first time since 1958 and has the nation in mourning)? The United States of America. Don't blame any sort of collusion either — the United States has been paying plenty of lip service to world football (or soccer or whatever you want to call it) over the past few decades, but our continued inability to mount any sort of push for the championship on the men's side remains a constant annoyance for the American sports fan. (Our women, however, continue to rock.) As of this writing, 30 countries have secured their place to join host nation Russia in next y e a r ' s t o u r n a m e nt : Australia, Argentina, Belgium, Brazil, Colombia, Costa Rica, Croatia, Egypt, England, F r a n c e , G e r m a n y, Honduras, Iceland, Iran, Japan, Mexico, Morocco, Nigeria, Panama, Poland, Portugal, Saudi Arabia,

Senegal, Serbia, South Korea, Spain, Sweden, Switzerland, Tunisia and Uruguay (New Zealand vs. Peru played after we went to press). For those of you who missed it, America soiled the sheets in the Caribbean when it came time to qualify, a bloodbath that saw Coach Bruce Arena, the man who was supposed to bring European sensibility to our roguish American ways, quit the scene entirely. Now, America once again sits on the precipice, questioning its desire to rebuild. Does it blow everything up? Or is there enough there to build upon, enough to believe in. Call it American exceptionalism, but it's time for Team America to really put their heads back down and think back to our own culture when it comes to dominance and change. What would John Wooden do, for instance? Or Knute R o c k n e ? O r Vi n c e Lombardi? Or George S. Patton? For years we've been focusing on building a program — a well of players. Well, that time has come. We have a great soccer structure in place. All we need now is a champion. Once again, America

will be on the outside looking in during the 2018 World Cup, and it's more than past time for this countr y to start to compete in great ways. It's time to start thinking about winning the World Cup, and the time to begin has to be now. For those of you expecting to see a little history, know that defending champion Germany is the bookmakers' favorite to win the World Cup, followed by Brazil, Spain, A r g e nt i n a , Fr a n c e , B elgium and then England. Reading the Bible for all it’s Worth Solitary confinement is not a fun place to be. It’s not all that solitary and can be a noisome place of sheer pandemonium wrought with curses and taunts of fellow inmates. While having a conversation with an inmate in solitary, I asked him if he would like to have a Bible. He replied no, he had already read it. I found his reply very puzzling. Many people, Christians included, claim to have read the Bible. But their lives seem to be unaffected by it. I replied to the inmate, “It’s one thing to read the Bible — it’s another thing to let the Bible, God’s holy word, read you.” “For the word of God is living and powerful and sharper than any two-edged sword, piercing even to the division of soul and spirit, and of joints and marrow and is a discerner of the thoughts and intents of the heart. And there is no creature hidden from his sight, but all things are naked and open to the eyes of him to whom we must give account.” (Hebrews 4:11-13) If you will listen to the living Word of God, it will read your mail, it will discern

your inner most thoughts, renew your mind, and give direction to your life. Recently I saw a book entitled “Reading the Bible for all it’s Worth.” I haven’t read the book, but let’s consider some ways to read the Bible for all it’s worth and have a daily, life changing encounter with God. Precede each of the following with READ THE BIBLE. A S T H E H O LY WORD OF GOD. The Bible is not a novel or a historical narrative of mere men. “All scripture is given by inspiration of God and is profitable for doctrine, for reproof. For correction, for instruction in righteousness . . .” (II Timothy 3:16) Realize you are reading the holy, living Word of God. EXPECTING GOD T O P E R S O NA L LY SPEAK TO YOU. God is an up close and personal God and he has a personal word for you. In the pages of the Holy Bible the Holy Spirit will reveal Jesus, the Son of God.

Both the Old and New Testaments point to Jesus and his love for you. David had a passionate hunger and thirst for God’s Word. In Psalm 119 he describes his longing and need for God’s Word. Jesus describes God’s desire for a personal relationship with his children with the picture of the Good Shepherd and his sheep in John 10. “My sheep hear my voice, I know them, and they follow me.” (John 10:27) As you read the Bible, expect God to speak to you personally. I N P R AY E R F U L MEDITATION. Biblical meditation is to ponder and think on God’s Word. ( Joshua 1:8; Psalm 104:34; 119:97, 99, 148) Ask yourself questions such as, “What is God saying to me?” “How do I apply it and put it into practice?” “What do I see about Jesus?” Ask the Holy Spirit for illumination. AS A STUDENT OF GOD’S WORD. Have an overall view of biblical doctrine and sound teaching. “Study to show yourselves approved unto God, a workman that needs not to be ashamed, rightly dividing the word of truth.” (II Timothy 2:15) Doing topical

studies with a concordance can help you read scripture on a certain topic or word. IN SUBMISSION AND OBEDIENCE. It’s not how much of the Bible you read, but how much of God’s Word do you obey and put into practice. Jesus compared this key as making a difference between being a wise man/woman or a foolish man/woman. (Matthew 7:21-17; Isaiah 1:19) AND PRAY THE SCRIPTURES BACK TO GOD. Personalize the passages and, in prayer, claim the promises or ask the Holy Spirit to actualize them in your life. AND SING AND SHARE THE SCRIPTURES WITH OTHERS. “Speaking to one another is psalms and hymns and spiritual songs, making melody in your heart to the Lord.” (Ephesians 5:18-20) What you sing about reveals your heart. Allow the living Word to flow out of you as a lifegiving river. As you read the Bible for all it’s worth, you will walk out of solitary confinement into the light of freedom in Christ.
