Father and daughter, James and Janin Powers of Centralia are working together this year when they both enrolled in the Kaskaskia College Carpentry Program. James Powers served nearly 12 years of active Duty in the army as a Combat Medic. During that time, he was deployed 15 months to Iraq and then did two more tours in Afghanistan. After his last tour, the family decided to buy a house in the states after serving overseas for ov e r n i n e y e a r s i n Germany. According to James, “We were searching for lakeside property and

found a home in Centralia. I was Medically Retired in August 2015 and we moved here”. Janin Powers enrolled in KC right after high school and was active in the softball program her freshman year and now is a member of the Blue Angels basketball program. She enrolled in the Carpentry program 18 months before her dad and they both say they are thrilled to be studying this program together. James says, “Due to the many deployments, field exercises and schools I had missed my kids growing up. I retired and suddenly realized they were grown. It is

a rude awakening when you figure out that of the ten years in Germany I was gone for over four and a half of them. I cannot get that time back but at least I can be there now doing something constructive with my daughter that we both enjoy. If I am lucky, my son will begin studying Carpentry also”. Both father and daughter say that Kaskaskia is one of the few schools that offer an Associate Degree in Construction Science and the fact that it is only a fiveminute drive to class is merely a bonus. “We are both receiving a quality education and learning

something new every day”, says Janine. “My plans are to hopefully transfer to SIUE or SIUC and study business to hopefully one day open my own shop”. James says, “After completing the program, I am certainly looking forward to becoming self-employed. I also have an interest in attending an architecture school and finish my bache l o r ’s d e g r e e i n Architecture”. Both father and daughter feel that the KC Carpentry program is amazing. They say, “Instructor Pete Donnelly is a great teacher and always takes the time to explain everything and patiently gets the knowledge across”. “Anyone that is willing to learn can finish their first two years at KC, the trade skills acquired in the Carpentry program not only help getting into the union but also shortens the time towards becoming a j ou r n e y m an i n t h i s trade. The carpentry trade is in dire need of carpenters so work is likewise guaranteed as long as a person works hard and shows up on time,” says James. He adds, “Enrolling in this program with my daughter has been a fun journey. It’s time well spent and we are both not only getting a great education, but having fun doing it together”.

KC Winter Baseball Clinics Held

The Kaskaskia College Baseball Program recently held two baseball clinics for players in grades 5-8 on January 13. The camps were conducted by KC head coach Mitch Koester, Assistant Coach Matt Ellenbest and former players Jay Voss (former St. Louis Cardinals pitcher). A Pitching Clinic was held

CCYC /NAACP Wall Of Fame Honor The CCYC and the NAACP have joined together in a joint effort to honor individuals in the City of Centralia and surrounding community that has made a difference within the community. Nominations for the NA AC P / C e nt r a l i a Community Youth Center Wall of Honor to honor local and / or former residents that have made a difference in the community are available. For many years the NAACP has honored various individuals within the city that has made contributions to the

development and betterment of the city. Those names are on permanent displayed at the Wall of Honor located at the Youth Center 1224 East Rexford. Nominations are open for any individual that has made a difference. Individuals honored will be presented to the public at the annual NAACP Banquet and honored individuals will receive a wall plaque in honor of the recognition and a permanent plaque will be mounted on the Wall of Honor at the Centralia Community Youth Center.

No one will be considered for the Wall of Fame Honor without first being nominated. The nomination shall be presented to the committee for review, consideration and final selection. There will be a maximum of seven inductees in one calendar year with one coming from each category or a minimum of one individual coming from a single category. Vandalia To Celebrate Lincoln’s Birthday Vandalia Statehouse State Historic Site will celebrate Abraham Lincoln’s birthday with a special event on Saturday, Feb. 10. The free party, a tradition at the site since 1973, runs from 1:00-3:00 p.m. Local historian Dale Timmerman will lead visitors in songs such as “America” and “The Battle

Hymn of the Republic.” Kevin Kaegy from the Bond County Historical Society will deliver a presentation at 1:00 p.m. on Lincoln and his connection to slavery here in Illinois. Vandalia Statehouse is the oldest surviving capitol building in Illinois. It served as the state capitol from 1836 to 1839. It is

Laura Myers Is Republican Candidate For Illinois State Representative Laura Myers, a rural Greenville resident, is a Republican candidate for State Representative in the 107th District. She is an AFSCME employee with the Illinois Department of Corrections and is currently a Staff Development Specialist at the IDOC Training Academy. Myers has worked at Vandalia, Graham, and Centralia Correctional Centers. She earned her Associate’s Degree from Kaskaskia College, Bachelor’s Degree i n Hu man R e s ou rc e Management, and Master’s Degree in Business Administration. Myers is a conservative, Christian, and pro-life. She is a strong supporter of agriculture, veterans, law enforcement, first responders and the right to unionize. “I will uphold the United States Constitution and its Amendments, particularly the Second Amendment. It has been under attack for many years, and we must protect our right to bear arms.” Myers believes that supporting the middle class is one of the top issues. She intends to do this by sup-

porting agriculture, small business, and union membership. She believes that worker’s compensation insurance needs to be lower to relieve the burden on small businesses. “To create a pro-business environment, we must act in ways that support middle class citizens. To do this, we must lower taxes, deregulate business, and create free markets. We must also help local governments attract good-paying jobs. If we don’t attract and maintain good paying jobs in the area, then the amount of expendable income available to be spent in local stores will diminish.” Myers volunteers at Greenville VFW Post 1377. Super Bowl Party Dinner Super Bowl is next Sunday, February 4. Don't ask me who's playing, but if you're one of those who have a party, why not serve up piping hot fried chicken, with potato salad and baked beans. Yummy! That makes it worth having a Super Bowl party. Add some festive paper plates and napkins with colored plastic folks — of course, guest choice, the color of their pick.

Fabulous Fried Chicken 1 (2½- to 3-lb.) frying chicken, cut into 8 parts 2 cups buttermilk or clabbered milk 1/8 tsp. Tabasco Vegetable oil for frying

3/4 cup all-purpose flour 1/4 cup cornmeal (yellow or white) 1 tsp. salt 3/4 tsp. freshly ground black pepper

Place chicken pieces in large bowl and pour buttermilk or clabbered milk and Tabasco over Shopper's Weekly Staff Photo chicken. Turn pieces so they are evenly coated with milk. Cover bowl and let chicken soak in refrigerator at least 2 hours but no longer than overnight. Turn pieces once or twice. Borowiak's IGA is ready for Super Bowl Sunday. Stop by and see Store Manager Phyllis's When ready to cook chicken, pour off and discard soaking milk. Heat about 1/2' of vege- creative display. It will put you in the mood for Super Bowl Sunday February 4. table oil in 2 large frying pans (preferably cast-iron skillets) set over medium-high heat. Combine flour, cornmeal, salt, and pepper in paper or plastic bag and shake damp chicken pieces in seasoned flour. Shake off as much excess flour as possible so the coating won't be too thick. When oil is hot, arrange chicken pieces in single layer in skillets and fry, uncovered, until crusty, deep golden brown, and meat is no longer pink near bone when checked with point of sharp knife. Regulate heat so chicken does not burn. Cook breast and wing pieces about 18 minutes; thighs and drumsticks about 22 minutes. Remove chicken with tongs and drain on crumpled paper towels. Serve hot, warm, or at room temperature. If chicken has sat for more than 2 hours at room temperature and has gotten soggy, it may be somewhat recrisped in a 400° oven. Arrange in single layer on baking sheet and heat, uncovered, 10 minutes. Yield: 4 servings. Note: If buttermilk is unavailable, make clabbered milk by adding 2 tsp. lemon juice to 2 cups whole milk. Let stand at room temperature about 15 minutes.

Golden Pancake House Ribbon Cutting

New New-Potato Salad 3 T. minced shallots 3/4 tsp. salt or to taste 1/8 tsp. freshly ground black pepper or to taste 1/4 cup minced parsley 1 T. snipped chives

Scrub potatoes. Leave whole if small. If larger, cut into 2" chunks. Cook in boiling salted water until just tender when pierced with metal skewer or point of sharp knife, about 20 minutes. Drain, and when cool enough to handle, slice potatoes about 1/8" thick. Place warm potato slices in large bowl and toss with olive oil, wine, and vinegar. Set aside until potatoes are tepid and liquid is absorbed. In small bowl, whisk together sour cream, mustard, shallots, salt, and pepper. Pour dressing over potatoes and toss gently so it evenly coats them. Sprinkle minced parsley and chives over salad and gently toss again. Taste for seasoning, adding more salt and pepper if necessary. Serve salad tepid or chilled and sprinkled with some additional parsley if desired. Yield: 6 servings.

North Sedgwick Grange Baked Beans 1/4 tsp. salt 1/8 tsp. freshly ground black pepper 1 (16 oz.) can cooked white beans, drained 1 (16 oz.) can cooked red beans, pink beans, pinto beans, or kidney beans, drained 1 (16 oz.) can small lima beans, drained or 1 (10 oz.) package small frozen lima beans, cooked 3 to 4 strips bacon

Preheat oven to 350°. In large skillet, sauté onion and garlic in butter over medium-low heat for 3 minutes until softened. Add chili sauce, maple syrup, water, rum, vinegar, Worcestershire sauce, mustard, curry powder, salt, and pepper to skillet and bring to simmer over medium heat. Cook about 2 minutes to blend flavors. Put beans in deep 2-quart casserole (not shallow baking dish), pour sauce over them, and stir gently to combine. Beans will look very soupy at this point, but sauce thickens a lot as it cooks. Lay 3 or 4 strips of bacon over top of casserole and place in preheated oven. Bake 1 hour, or until sauce is bubbly and bacon is cooked. If bacon is not crisp enough, run casserole under broiler about 1 minute to brown. Beans should have plenty of sauce. If they look at all dry, add up to 1/2 cup water as they finish cooking. Yield: 6 to 8 servings. *** Until next week, Au Revoir! —Elizabeth Fenton

(Revelation 3:20) Paul prayed, “Now may the God of Peace himself sanctify you completely and may your whole spirit, soul, and body be preserved blameless at the coming of our Lord Jesus Christ.” (I Thessalonians 5:16-24) BE COUNTED WORTHY.
