She spoke about her newly released book “Living in The Shadows, Life After Rape and Incest” and how important is it for people to stand in solidarity against sexual assault. Illini Fighting Hunger is a meal packaging program that allows 4-H members and their families to help provide meals to their local food pantries. In my absence I've certainly not been without thought of where our county is, nor have I been disillusioned with Donald Trump, as some on the left have suggested. But I've been totally disgusted with the left going deeper down the rabbit hole. As the weeks have gone by, my desire to write how I feel has grown stronger as the insanity continues, and what better timing than the first State of the Union address for Donald Trump, especially hearing what I consider one of the best State of the Union speeches

showing their totally unAmerican attitudes. He pointed out the growth in jobs. After years of stagnant wages, they are now on the increase. Employment of blacks and Hispanics is up. Small business confidence is way up. The stock market has reached an all-time high. Tax reductions are in effect for everyone, meaning more take-home pay. 1/2 cup granulated sugar 1 tsp. vanilla extract 3/4 cup all-purpose flour 3/4 tsp. double-acting baking powder Pinch of salt Unsweetened whipped cream as an accompaniment
Preheat oven to 375°F. Spread pecans on baking sheet and toast until dark brown and fragrant, about 5 to 6 minutes. Set aside to cool. Reduce oven temperature to 350°F. Place butter in 9" skillet with ovenproof handle or in 9" layer cake pan. Set pan over low heat on top of stove to melt butter. Raise heat to medium, stir in brown sugar, and cook, stirring, until sugar is dissolved and mixture is bubbly. Remove from heat and stir in 1 T. of the bourbon. Peel peaches by plunging into boiling water 1 minute and then slipping off their skins. Thinly slice peaches and scatter slices in even layer over brown-sugar syrup. Set aside while you make cake. Place cooled pecans in work bowl of food processor with 1 T. of flour. Process by pulsing motor on and off until nuts are finely ground. Pecans may also be finely chopped by hand. Set aside. Beat eggs and granulated sugar with electric mixer until very light and almost tripled in volume, about 5 minutes. Stir in remaining 1 T. bourbon and vanilla extract. Sift flour, baking powder, and salt into a bowl. Add ground pecans and toss to combine well with flour. Sprinkle flour mixture over the beaten eggs and gently but thoroughly fold the two together with rubber spatula. Pour cake batter over peaches, smooth top, and bake in center of preheated oven 30 to 40 minutes, or until cake has set and cake tester inserted in center comes out clean. (If using cast-iron skillet, check cake after 30 minutes since it will cook faster than one baked in an aluminum layer-cake pan.) Run sharp knife around edge of cake to loosen sides. While still warm, invert cake onto serving platter. Leave pan on the cake a few minutes and then lift off. Serve warm or at room temperature, topped with a dollop of whipped cream. Yield: 6 to 8 servings. Note: Cake may be made earlier in the day and held at room temperature. Leftovers are delicious for breakfast.
Double Lemon Loaf
2/3 cup milk 1 T. lemon juice 2 cups all-purpose flour 1 T. double-acting baking powder 1/2 tsp. baking soda 1/4 tsp. salt
1/4 tsp. nutmeg 8 T. butter, softened 1¼ cups granulated sugar 3 eggs 1 tsp. vanilla extract 2 T. grated lemon zest
Soaking Syrup: 1/3 cup lemon juice 1/2 cup granulated sugar
1 tsp. slivered or coarsely grated lemon zest
Butter 9x5" loaf pan. Line bottom with wax paper or baking parchment and butter the paper. Flour pan, knocking out all excess. Preheat oven to 350°F. Combine milk and lemon juice and set aside 5 minutes. (Lemon juice will "clabber" milk, thickening and slightly curdling it, to make sour milk.) Sift together flour, baking powder, baking soda, salt, and nutmeg; set aside. With electric mixer, cream butter and sugar until light and fluffy. Beat in eggs, one at a time, then beat on high speed 1 minute. Beat in vanilla extract and grated lemon zest. With mixer on low speed, add flour mixture, alternating with sour milk, in 3 additions. Beat until smooth but do not overmix. Turn batter into prepared cake pan. Smooth top evenly with rubber spatula and bake on center rack of preheated oven until skewer inserted in center comes out clean, about 55 to 60 minutes. Meanwhile, make the soaking syrup. Heat lemon juice, sugar, and lemon zest in small saucepan over medium heat, stirring until sugar dissolves. Let cake cool in pan 10 minutes. Begin spooning hot syrup (rewarm syrup if necessary) over warm cake in the pan. As cake absorbs syrup, spoon more of it evenly over top until all syrup is used. (It may seem like a large quantity of syrup, but the cake should absorb it all.) Let cake cool to room temperature in pan. Run sharp knife around edges of cake to loosen it. Invert cake onto plate, peel off paper, and turn it right side up. Wrap well in plastic wrap and refrigerate at least 3 hours to allow for easier slicing, or as long as 3 to 4 days. Bring to room temperature before serving. Cake may be made ahead and frozen for up to 1 month. Yield: 8 to 10 servings. Note: Remove lemon zest with a vegetable peeler and cut it crosswise into thin slivers; or use the specially designed zesting tool available in kitchenware shops; or grate on the large holes of a grater. Flu-Fighting Tips To Keep You And Others Healthy
Sniffles, sore throat, fever, and aches and pains may accompany a number of illnesses, but during the wintertime such symptoms are typically indicative of influenza. Throughout much of North America, flu season peaks between December and February.
But flu season can occur anywhere from October to March, advises the U.S. Centers for Disease Control and Prevention. The flu is contagious and can sideline people for extended periods of time. The CDC says that each year one in five Americans gets the flu. Taking steps to fend off
the flu can help men and women and the people they routinely come in contact with. Foods Food can be used to fend of the flu. Common foods that many people already have in their pantries can be powerful flufighters. Garlic, for
example, contains compounds that have direct antiviral effects and may help destroy the flu before it affects the body. Raw garlic is best. In addition to garlic, citrus fruits, ginger, yogurt, and dark leafy greens can boost immunity and fight the flu, according to M o t h e r N a t u r e ’s Network. The British Journal of Nutrition notes that dark chocolate supports T-helper cells, which increase the immune system’s ability to defend against infection. A study published in the American Journal of Therapeutics showed that carnosine, a compound found in chicken soup, can help strengthen the body’s immune system and help fight off the flu in its early stages.
Flu Shot And Medications Annual flu shots administered in advance of flu season can help protect people and their families from getting the flu. The U.S. Food and Drug Administration says that, in select situations, antiviral medications — which are usually prescribed to treat the flu and lessen symptoms — can reduce the chance of illness in people exposed to influenza. Many over-the-counter medicines can alleviate symptoms of the flu, but cannot fend it off. Stop Germ Proliferation Germs can be spread easily between persons through direct contact and indirect contact with surfaces sick individuals have touched. The Harvard Medical School notes that researchers discovered that people who practiced yoga for at least 30 minutes once a week
for at least four years gained less weight during middle adulthood than those who did not. That might be linked to additional research that found people who practiced yoga were more mindful eaters than those who did not, making them less likely to overeat, eat when sad or stressed or eat in response to certain cues, including the smell of food. Isaiah prophesied of the Messiah as a “lamb led to slaughter” and “He bore the sins of many.” (Isaiah 53) John the Baptist introduced him as, “The Lamb of God who takes away the sin of the world.” (John 1:29) John gives us a glimpse into heaven where innumerable multitudes worship Jesus saying, “Worthy is the Lamb who was slain to receive power and riches and wisdom, . . . and honor and glory and blessing!” (Revelation 5:8-14) Bow before the Lamb of God who is worthy of all praise! THE LION OF JUDAH. Jesus is revealed as the Lion of Judah. (Revelation 5:4-5) He is not Sweet Baby Jesus — he arose from the dead, victorious over death, hell, and the grave. He is the Son of David who will reign as
King of Kings. The book of Revelation describes him returning from heaven with the saints and the armies of heaven riding white horses. In C.S. Lewis’ book “The Lion, the Witch, and the Wardrobe”, the children encounter Aslan, the great lion who is a picture of Jesus Christ. “’Ooh,’ said Susan. ‘I’d thought he was a man. Jazz and Blues to Kick Off the Spring Carl Sandburg Songbag Concert Series Sally Weisenburg and Don Berbaum will bring jazz and blues to the Carl Sandburg Songbag Concert on Sunday, February 11 from 4 p.m. to 6 p.m. at the Carl Sandburg State Historic Site in Galesburg. A team both personally and musically since the mid1970s, Weisenburg and
Berbaum perform music from many categories in addition to jazz and blues. The music they select has more to do with quality than the category. Sally’s vocals are always the focal point of their performances. Don’s playing on the guitar and harmonica provide inspirational coloring for her

Hobby Classes Abound At RLC This Spring Rend Lake College has a hobby class for everyone this spring with focus on building street rods, painting, cross stitching, crocheting, golfing, writing, and watching the stars. Classes will run through May. Check out the Fun with Acrylics class taught by instructor Sharon Corn. No painting or drawing experience is needed for participants to create their own masterpiece on a 16-by-20 stretched canvas. Students will paint birds in February, bicycles in March, and flip flops in April. The class costs $15, plus a $10 supply fee per session, and is designed for those age 10 and older. Classes will meet on the following dates from 6 – 9 p.m. in the Learning Resource Center, Room 103, on the Ina campus: Tuesday, Feb. 13; Tuesday, March 13; and Tuesday, April 10. Two hands-on classes are set for February and March. Counted Cross Stitch for Beginners will teach the basics of cross stitch, including how to start and end threads and creating patterns. Instructor Tiffany Hulsey will help participants create their own cross stitch bookmark during the class, which is designed for those age 7 and older. The popular Principles of Street Rodding class is taught by instructor Jody Martin. In this class, participants will learn the basics of building a safe street rod by working on a 1939 Chevy Coupe.
