2018 Senior Homestead Renewal And Assessment Freeze Forms Mailed Mark Miller, Marion County Supervisor of Assessments, announced recently that the 2018 senior citizens homestead renewal forms and senior assessment freeze forms have been

mailed. Senior citizens who are 65 years of age or older in 2018 and are owners of record, responsible for paying property taxes and who occupy the property as

their principle residence are eligible for the senior homestead exemption regardless of income. This is a $5,000 reduction in assessed value. If you have not signed up, please do so at the Supervisor of Assessments office. Senior citizens with a total household income of $65,000 or less are also eligible for the senior homestead freeze exemption. If you have not received your forms within the next few weeks, you may obtain them by coming to Room 101 at the Marion County Courthouse, or by contacting the Supervisor of Assessments office at 5483853. First time applicants must apply in person in the office.

In my absence I've certainly not been without thought of where our county is, nor have I been d i s i l lu s i on e d w it h Donald Trump, as some on the left have suggested. But I've been totally disgusted with the left going deeper down the rabbit hole. As the weeks have gone by, my desire to write how I feel has grown stronger as the insanity continues, and what better timing than the first State of the Union address for Donald Trump, especially hearing what I consider one of the best State of the Union speeches since Ronald Reagan and witnessing the deplorable fifth-grade behavior of Nancy Pelosi, Chuck Schumer, and the rest. I believe Donald Trump has done an incredible job in his first year considering the crazy opposition he has faced since day one. Over the last year, as he stated in his address, we have faced great tribulation, from gunfire and loss of life on the Las Vegas Strip to floods and hurricanes. He continued by saluting American

heros, garnishing standing ovations from the right while the left made fools of themselves by showing their totally unAmerican attitudes. He pointed out the growth in jobs. After years of stagnant wages, they are now on the increase. Employment of blacks and Hispanics is up. Small business confidence is way up. The stock market has reached an all-time high. Tax reductions are in effect for everyone, meaning more take-home pay. (It may be crumbs to Pelosi, but it means food on the table for American families.) In April it will be the

last time you will file taxes on the old system. The insane ACA (Obamacare) will no longer be able to penalize many. Small businesses can now flourish under new tax reform. Turning to the center of the future, Trump said "Faith and Family" and "In God We Trust!" This statement brought down the house. He then turned to the automotive plants and to growth in the coal industry, as well as exciting progress that is happening every day from generic drugs to patient care experimental opportunities and reducing the price of prescription drugs. I personally ques-

tion anyone who has said this man has done nothing, in spite of the left. He concluded by pointing out, "We have finally turned the page on unfair trade." His focus is to rebuild industry and infrastructure. In looking at the left — e.g., Nancy Pelosi, among the other useless legislators — as he spoke, I found them disgusting. There was much more said, from pointing out the corrupt MS-13 gang of thugs to saluting our veterans, military and first responders (and still the left sat unphased), as well as addressing illegal immigration while some of the left booed. So sad. After listening to CNN, MSNBC, and the rest, I found the reviews to be fake as usual. The State of the Union response was given by Joseph P. Kennedy III (D-MA). It was apparent he studied under Elizabeth Warren. Now you know what's wrong with him. With their actions, it could have cost them the midterm elections. Until next time.

Special Valentine’s Day Menu — APPETIZERS —

Dusted Portabella Mushrooms - Large Portabella mushroom cap sliced and dusted in our house seasoned breading. Sea Scallops - Three jumbo U-10 deep sea scallops pan seared and served atop a strawberry-champagne reduction

1/2 cup granulated sugar 1 tsp. vanilla extract 3/4 cup all-purpose flour 3/4 tsp. double-acting baking powder Pinch of salt Unsweetened whipped cream as an accompaniment

Preheat oven to 375°F. Spread pecans on baking sheet and toast until dark brown and fragrant, about 5 to 6 minutes. Set aside to cool. Reduce oven temperature to 350°F. Place butter in 9" skillet with ovenproof handle or in 9" layer cake pan. Set pan over low heat on top of stove to melt butter. Raise heat to medium, stir in brown sugar, and cook, stirring, until sugar is dissolved and mixture is bubbly. Remove from heat and stir in 1 T. of the bourbon. Peel peaches by plunging into boiling water 1 minute and then slipping off their skins. Thinly slice peaches and scatter slices in even layer over brown-sugar syrup. Set aside while you make cake. Place cooled pecans in work bowl of food processor with 1 T. of flour. Process by pulsing motor on and off until nuts are finely ground. Pecans may also be finely chopped by hand. Set aside. Beat eggs and granulated sugar with electric mixer until very light and almost tripled in volume, about 5 minutes. Stir in remaining 1 T. bourbon and vanilla extract. Sift flour, baking powder, and salt into a bowl. Add ground pecans and toss to combine well with flour. Sprinkle flour mixture over the beaten eggs and gently but thoroughly fold the two together with rubber spatula. Pour cake batter over peaches, smooth top, and bake in center of preheated oven 30 to 40 minutes, or until cake has set and cake tester inserted in center comes out clean. (If using cast-iron skillet, check cake after 30 minutes since it will cook faster than one baked in an aluminum layer-cake pan.) Run sharp knife around edge of cake to loosen sides. While still warm, invert cake onto serving platter. Leave pan on the cake a few minutes and then lift off. Serve warm or at room temperature, topped with a dollop of whipped cream. Yield: 6 to 8 servings. Note: Cake may be made earlier in the day and held at room temperature. Leftovers are delicious for breakfast.

1/4 cup pecan pieces 6 T. butter 1/2 cup packed light brown sugar 2 T. bourbon 3/4 pound peaches 1 T. all-purpose flour 3 eggs

Escargot - Broiled Helix Escargot in a Wine, Garlic, Herb and Butter sauce. Served with Sourdough for dipping. Shrimp Cocktail - Eight cocktail shrimp served with lemon and our own spicy Cocktail sauce.

2/3 cup milk 1 T. lemon juice 2 cups all-purpose flour 1 T. double-acting baking powder 1/2 tsp. baking soda 1/4 tsp. salt

1/4 tsp. nutmeg 8 T. butter, softened 1¼ cups granulated sugar 3 eggs 1 tsp. vanilla extract 2 T. grated lemon zest

Soaking Syrup: 1/3 cup lemon juice 1/2 cup granulated sugar

1 tsp. slivered or coarsely grated lemon zest

Butter 9x5" loaf pan. Line bottom with wax paper or baking parchment and butter the paper. Flour pan, knocking out all excess. Preheat oven to 350°F. Combine milk and lemon juice and set aside 5 minutes. (Lemon juice will "clabber" milk, thickening and slightly curdling it, to make sour milk.) Sift together flour, baking powder, baking soda, salt, and nutmeg; set aside. With electric mixer, cream butter and sugar until light and fluffy. Beat in eggs, one at a time, then beat on high speed 1 minute. Beat in vanilla extract and grated lemon zest. With mixer on low speed, add flour mixture, alternating with sour milk, in 3 additions. Beat until smooth but do not overmix. Turn batter into prepared cake pan. Smooth top evenly with rubber spatula and bake on center rack of preheated oven until skewer inserted in center comes out clean, about 55 to 60 minutes. Meanwhile, make the soaking syrup. Heat lemon juice, sugar, and lemon zest in small saucepan over medium heat, stirring until sugar dissolves. Let cake cool in pan 10 minutes. Begin spooning hot syrup (rewarm syrup if necessary) over warm cake in the pan. As cake absorbs syrup, spoon more of it evenly over top until all syrup is used. (It may seem like a large quantity of syrup, but the cake should absorb it all.) Let cake cool to room temperature in pan. Run sharp knife around edges of cake to loosen it. Invert cake onto plate, peel off paper, and turn it right side up. Wrap well in plastic wrap and refrigerate at least 3 hours to allow for easier slicing, or as long as 3 to 4 days. Bring to room temperature before serving. Cake may be made ahead and frozen for up to 1 month. Yield: 8 to 10 servings. Note: Remove lemon zest with a vegetable peeler and cut it crosswise into thin slivers; or use the specially designed zesting tool available in kitchenware shops; or grate on the large holes of a grater. 100th Day Of School Celebrated At NHCS January 31 was the 100th Day of School at New Horizon Christian School in Centralia. The students in Judy Flexter's first grade class brought projects they had made with 100-like objects, and brought 100like things in a container. They also dressed up the way they thought they might look when they are 100 years old. They paraded in the gym with the aid of canes and walkers. During the day they made a paper chain with 100 links for the next year's class to use for the countdown, played Bingo, strung 100 fruit loops on a string for an edible necklace and had place mats

The popularity of yoga has grown considerably in the 21st century. But while women have embraced yoga en masse, men have been more

percent were men. While those figures might have risen in recent years, anyone who has recently visited a yoga studio can attest that the partici-

pants in many classes remain overwhelmingly female. That’s unfortunate for men, who could be benefitting from practicing yoga in myriad ways. • Yoga can protect against muscle imbalances. Yoga requires various muscle groups to work together to perform certain exercises. This can reduce the risk of muscle imbalances that can develop when men design workout routines that target specific muscle groups. • Yoga can improve flexibility. When performed correctly, various yoga exercises improve flexibility. For example, the big toe pose can help men and women lengthen and strengthen their hamstrings, while the downward facing dog pose stretches various areas of the body, includ-

Health Sayings And Their Origins Language is shaped by many different influences. Over time, certain phrases become part of the vernacular and are spoken to signify how one acts or feels, including phrases about health and well-being. Some phrases may inspire curiosity as to their origins. The following health-related phrases have some interesting backstories.

“Fit As A Fiddle” The phrase “fit as a fiddle” is often used to describe someone who is very healthy and full of energy. But what does fitness have to do with an instrument, anyway? Ac tua l ly, ver y litt le. According to The Phrase Finder, “fit” didn’t originally mean healthy. It was actually used to represent the words “suitable and seemly.” Therefore, something that is fit as a fiddle would mean it was suitable for its purpose.

Now “fit” frequently refers to one’s physical shape, and the phrase has evolved. “Survival Of The Fittest” Again, the word “fittest” initially did not represent physical strength or wellbeing. Rather, in this phrase, attributed to Herbert Spencer and later to Charles Darwin, fittest referred to those who were best suited to their environment, or

How To Overcome Workout Fatigue Regular exercise provides a host of immediate and long-term benefits. Those who exercise regularly can maintain healthy weights while reducing their risk for illnesses such as cardiovascular disease and diabetes. While exercise can make people more energetic throughout the day, some might find themselves battling fatigue during their workouts. Muscle fatigue is a normal side effect of exercise, but people who are experiencing difficulty getting through their workouts due to fatigue may benefit from the following strategies.

• Eat a balanced diet. The Hospital for Special Surgery in New York City advises that a well-balanced diet that includes complex proteins, fruits, vegetables, and carbohydrates can help men and women combat workout fatigue. People who are working out in an effort to lose weight may think that combining exercise with a diet low in carbohydrates can help them achieve their goal more quickly. However, the HSS advises people dealing with workout fatigue to increase the amount of carbohydrates they eat. Doing so will help muscles maintain their glycogen levels, which are de-

pleted during exercise. According to the HSS, carbs should account for between 40 and 60 percent of aerobic athletes’ caloric intake, and between 30 and 35 percent for anaerobic athletes. • Eat before and after a workout. Early risers who like to exercise first thing in the morning might develop muscle fatigue if they workout on empty stomachs. The HSS recommends eating a light meal or snack roughly two hours before exercising, and then eating again within one hour of finishing a workout. Doing so provides some energy during a workout and helps muscles broken down during exercise refuel and repair. • Stay hydrated. Hydrating during a workout helps replace the water and nutrients that are lost through sweat. Muscles that are not hydrated during a workout and throughout the rest of the day are susceptible to fatigue. • Use proper form when exercising. Improper form can lead to injury and/or muscle fatigue. Men and women who cannot adhere to proper form when working out may need to reduce the amount of weight they’re lifting. As activities are performed using proper form, people may find

they’re building muscle without growing fatigued. As workouts progress, weight can be added. • Give the body time to recover. Whether it’s more time between sets of repetitions or an extra day off between workouts, a fatigued body might just need more time to rest and recover. Aging men and women must recognize that they might not be capable of pushing themselves as hard as they once did and should adjust their workouts accordingly. Fatigue is a formidable foe for exercise enthusiasts. But such exhaustion can oftentimes be overcome with a few simple strategies.

“An Apple A Day Keeps The Doctor Away” Many believe this phrase to be a helpful rhyming device to remember to eat healthy food to maintain good physical health. However, according to Snopes, the first known version of this proverb comes from Wales in 1866

and stated, “eat an apple on going to bed, and you’ll keep the doctor from earning his bread.” Other sources trace the phrase to ancient Rome. Apples can have many health benefits, but no research has confirmed that eating an apple daily will safeguard individuals from any particular illness. A 2015 study published in JAMA Internal Medicine did find that people who ate an apple required fewer prescription medications than those who did not.

Sweet Baby Jesus One can learn much about a person during a crisis situation. Recently, while undergoing some medical tests at a clinic, I collapsed to my knees. I heard one of the staff exclaim, “Sweet Baby Jesus!” I remember thinking, “He’s not sweet baby Jesus – He is Lord!” I later asked my son and daughter-in -law if they had ever heard that expression. They replied that it came from the movie “Talladega Nights: The Ballad of Ricky Bobby.” At dinner the father-in-law asks Ricky Bobby to pray a blessing over the meal. Ricky Bobby prayed to Sweet Baby Jesus. He likes to think of Jesus as a sweet baby wrapped snuggly in a warm blanket all neat and fuzzy. That’s how many people want to view Jesus — nice, neat, cozy, and powerless. Who is the real Jesus?

“Jesus said to him, ‘I am the way, the truth, and the life. No one comes to the Father except through me.’” (John 14:6) Many, like Ricky Bobby, espouse a philosophy that there are many ways to God. Jesus made it very clear that that is a false assumption. The moment you adopt a philosophy that cannot be traced back to Jesus, you set yourself up for disaster. Jesus is so awesome that the Word of God gives a multitude of names of Jesus that only begins to reveal his glory and power. Consider and experience some of the wonderful aspects of the person of Christ. THE LOWLY JESUS. Jesus described himself as meek and lowly. But do not make the mistake of thinking meekness is weakness. “Come to me, all you who labor and are heavy laden and I will give you rest. Take my yoke upon you and learn from me, for I

am gentle and lowly in heart and you will find rest for your souls.” (Matthew 11:28-30) The Son of Man came to identify with our struggles. (Hebrews 4:1416) An old song says, “There’s not a friend like the lowly Jesus! No not one! No not one None else could heal all our soul’s diseases. No not one! No not one!” THE LAMB OF GOD. Isaiah prophesied of the Messiah as a “lamb led to slaughter” and “He bore the sins of many.” (Isaiah 53) John the Baptist introduced him as, “The Lamb of God who takes away the sin of the world.” (John 1:29) John gives us a glimpse into heaven where innumerable multitudes worship Jesus saying, “Worthy is the Lamb who was slain to receive power and riches and wisdom, . . . and honor and glory and blessing!” (Revelation 5:8-14) Bow before the Lamb of God who is worthy of all praise! THE LION OF JUDAH. Jesus is revealed as the Lion of Judah. (Revelation 5:4-5) He is not Sweet Baby Jesus — he arose from the dead, victorious over death, hell, and the grave. He is the Son of David who
