Students From Area FFA Chapters Attend 212° Conference Several areal FFA chapter members attended the annual 212° conference in Collinsville, on February 9 and 10, 2018. This conference is an activity of the National FFA Organization made possible by title sponsors as a special project of the National FFA Foundation. This two-day event is focused on student development and helps FFA members become aware of all aspects of personal growth. Students attended

sessions on mental, emotional, physical, and social growth, and leave this experience with a personal plan for self-improvement. This event also includes a dance along with other, engaging group activities. The conference was generously sponsored by the Energy Transfer Partners. 212° — the temperature at which water boils — focuses on taking students to the boiling point of per-

sonal leadership. At 211°, water is extremely hot, but just one more degree gets us to the next level. FFA makes a positive difference in the lives of students by developing their potential for premier leadership, personal growth, and career success through agricultural education.

Pork Tenderloin With Orange Marmalade 1½ T. coarse-grained mustard 1 clove garlic, minced 1/4 tsp. dried whole rosemary 1/4 tsp. pepper 1 (1 lb.) pork tenderloin

1/4 cup low-sugar orange marmalade, divided Vegetable cooking spray 1/2 cup water 1/4 cup ready-to-serve, no-salt-added chicken broth Combine first 4 ingredients; set aside. Trim fat from tenderloin. Slice tenderloin lengthwise, cutting almost to, but not through, outer edge. Spread mustard mixture in pocket; press gently to close. Tie tenderloin securely with heavy string at 2" intervals. Spread 2 T. orange marmalade over tenderloin. Place tenderloin on rack coated with cooking spray. Place rack in broiler pan; add water to pan. Bake at 325° for 40 to 45 minutes or until meat thermometer inserted into thickest portion of tenderloin registers 160°. Combine remaining 2 T. orange marmalade and chicken broth in saucepan; cook 2 to 3 minutes or until thickened. Slice tenderloin; spoon sauce over slices, and serve. Yield: 4 servings (161 calories per 3 oz. serving).

Creole-Style Pork Chops 4 (4 oz.) lean, boneless top loin pork chops (3/4" thick) Vegetable cooking spray 1/2 cup chopped onion 1/2 cup chopped celery 1/2 cup chopped green pepper 1/2 cup chopped sweet red pepper 3 large cloves garlic, crushed

1 (8½ oz.) can whole tomatoes, undrained and chopped 1/2 tsp. hot sauce 1/4 tsp. pepper 2 cups hot cooked rice (cooked without salt or fat) 1 tsp. cornstarch 1/4 cup ready-to-serve, no-salt-added chicken broth

Trim fat from chops. Coat nonstick skillet with cooking spray; place over medium-high heat until hot. Add pork chops, and brown on all sides. Remove from skillet. Coat nonstick skillet with cooking spray; place over medium-high heat until hot. Add onion and next 4 ingredients; saute until tender. Remove 1/2 cup vegetable mixture from skillet; set aside. Add tomatoes, hot sauce, and pepper to skillet. Return pork chops to skillet; cover and cook 15 minutes, turning chops once. Stir reserved 1/2 cup vegetable mixture into rice; spoon onto serving plate. Arrange pork chops on top of rice. Combine cornstarch and chicken broth; add to vegetable mixture in skillet. Cook over medium heat, stirring constantly, until mixture begins to boil; boil 1 minute, stirring constantly, until mixture is thickened. Spoon over chops. Yield: 4 servings (368 calories per chop with 2/3 cup rice mixture).

Oven-Barbecued Pork Roast 1 (3 lb.) boneless rolled top loin pork roast 3 large cloves garlic, sliced 1 tsp. coarsely ground pepper 1/2 tsp. dried whole sage 1/2 tsp. dried whole thyme Vegetable cooking spray 1 cup sliced onion 1/2 cup ready-to-serve, no-salt-added chicken broth

1 (8 oz.) can tomato sauce 1/4 cup chili sauce 1/4 cup reduced-calorie catsup 1/4 cup cider vinegar 1/4 cup lemon juice 3 T. low-sodium Worcestershire sauce 2 T. brown sugar 2 tsp. Dijon mustard 1/2 tsp. paprika 1/8 tsp. red pepper

Remove strings from pork roast; trim fat, and retie roast securely with heavy string at 2" intervals. Cut deep slits in roast, and insert garlic. Combine pepper, sage, and thyme; rub over surface of roast. Coat nonstick skillet with cooking spray; place over medium-high heat until hot. Add pork roast and brown on all sides. Add onion; saute until tender. Add chicken broth; bring to boil. Transfer to 9" square pan. Bake roast, uncovered, at 350° for 30 minutes. Combine tomato sauce and remaining ingredients in medium saucepan. Bring to boil over medium heat; pour sauce over pork roast. Bake additional 35 minutes or until meat thermometer inserted in center of roast registers 160°. Slice roast; serve with sauce. In the news last week, Trump made good on a campaign promise and imposed tariffs on imported steel and aluminum. However, he's already stepped it back. For instance, Canada is now exempt as well as Europe and other allies like Australia. China isn't exempt, as usual. They're cheating, but what's new. The tariffs will go into effect in approximately ten days. Nearly half the GOP House members and others breathed a sigh of relief after the exemptions were reported. Already the coal industry has turned a corner. And this week, one to watch is the current race in Pennsylvania. Trump traveled to campaign for his guy Rick Saccone, in a special House election.

He's running head to head with his Democratic opponent Conor Lamb. This is a state that used to be a heavy steel manufacturer. Let's see if the steel tariff helps his friend. One thing is for sure, Trump waited till the last minute to climb up on the stump in support of Saccone. On to the porn star / Trump scandal. Frankly, folks, I'm pretty sick of all the finger pointing, and I think enough is enough. Take the current Trump accuser who goes back to years ago. It's apparent this affair was consentual and let's face it, this is just another finger pointer. And no, I don't think sexual abuse is okay, and I, for one, would fight for justice when the case is real. So in the case of Stormy Daniels' alleged

affair, the point is WHAT! Enough said. I find this as laughable as the finger pointing coming out of Hollywood. On to an important subject: Election Day. Primary elections will be held next Tuesday, March 20 across the state of Illinois. I encourage everyone to get out and vote. That's your American right, and many have made the ultimate sacrifice for our freedom to exercise that right! Until next time. The Open Door Have you ever felt that things have been denied you? Perhaps your dreams, desires, hopes, and opportunities for influence seem to be shut up tight, locked, barred, and deadbolted. I have good news for you. There is one who has the key of David, he “opens and no one can shut; he shuts, and no one can open.” His name is Jesus and he made this promise to the church of Philadelphia about 2,000 years ago. “See, I have set before you an open door.” (Revelation 3:7-8) Apply these characteristics of the church of Philadelphia and God will set before you an open door. THE CHURCH OF PHILADELPHIA was one of the seven churches of Asia that John was instructed to write a letter to in the book of Revelation. Philadelphia was one of two churches of whom Jesus had no condemnation for.

Interestingly, only the church of Philadelphia and Smyrna still exist today. The citizens of Philadelphia had their city and homes destroyed many times by earthquakes, but they persisted. Philadelphia means brotherly love. Jesus publicly declared his love for this church. THE KEY OF DAVID. Keys are vital to lock and unlock doors. Jesus has the key of David. “He opens, and no man shuts and shuts, and no man opens.” (Revelation 3:7) Keys speak of authority. Jesus, the prophesied Messiah, came through the lineage of King David and, one day, will be seated on the throne of David in the city of David. He is “holy and true” which are attributes of deity. In ancient times when athletes won a victor’s crown they were given the key to the city. Jesus won the victory when he died on the cross for the sins of the world and arose victorious over death,

Wednesday, March 14, 2018 hell, and the grave. He has the key of David and gives that key to believers who overcome. (Matthew 16:1619; Mark 16: 17-18) THREE KEYS TO AN OPEN DOOR. Jesus revealed why he set before this church an open door. Key one: “For you have a little strength.” (Revelation 3:8) The “little strength” was not an indication of spiritual infirmity or weakness, but of fewness in number. It was a small church. God delights to manifest his power through the little. Little David killed a giant; little Gideon led a ragtag band of 300 to defeat the army of the Midianites; Jesus used a little lad’s lunch to feed a multitude of over 5,000 people. God will open a door of influence to use people with short arms to reach out to the hungry, hurting, and hopeless. Key two: Keep his Word. (Revelation 3:8) Be obedient to Jesus and His Word. Jesus said, “You are my friends if you do whatever I say.” (John 15:14) A young Christian was asked by his pastor how he became such a mature believer in such a short time. He held up his red-letter Bible and said, “I just read the red and do the red.” Key three: “Don’t say ‘No’ to Jesus.” (Revelation 3:8) I like this translation

from the NIV. The NKJV says, “You have not denied my name.” I can’t imagine saying “no” to Jesus. But multitudes say no to Jesus and deny his name. If you don’t say “no” to Jesus, he will set before you an open door. THE BLESSINGS OF AN OPEN DOOR. The rewards of keeping Jesus’ words are out of this world. Not only will you be able to be an influencer for the kingdom of God, but you have his promise of escaping the judgement of God that’s to fall on the unrepentive inhabitants of the earth. (Revelation 3:10-12) God will make you a “pillar” in his temple and have his new name written on you — signifying you belong to him and he belongs to you. (Song of Solomon 6:3) What a heavenly and beautiful tattoo you will wear. An open door begins by opening your heart's door to Jesus. “Behold, I stand at the door and knock. Plans Underway For NHSC Annual Dinner Auction Me m b e r s o f Ne w Horizon Christian School's PTF are busy making plans for this year's Dinner Auction, which will be held on Saturday, April 7. Doors will open at 5:00 p.m. Hors d'oeuvres will be served. Dinner is at 6:00 followed by comedy. They have outgrown their gym at New Horizon so this year's NHCS Spring Dinner Auction will be held at the Centralia Jr. High School.

Help Patients Rebound By Giving Blood

In March, while basketball teams are fighting for the chance to be crowned champions, patients battling cancer and other illnesses are fighting for their lives. The American Red Cross is asking blood donors to help patients rebound by making a lifesaving donation this spring. Middle school basketball player Olivia Stoy received blood and platelet transfusions during treatment for T lymphoblastic lymphoma. With the help of blood and platelet donations, the 14- year-old has returned to the basketball court and, more importantly, beat cancer. “We are so thankful that the blood products were available to Olivia for the almost two years of her treatment. They have made it possible for Olivia to regain her strength and get back to doing the activities she loves,” said Megan Stoy, Olivia’s mother. Donors of all blood types are needed to help ensure that the Red Cross can collect more than 13,000 blood and platelet donations needed every day for patients like Olivia. Giving blood takes less time than it takes to watch a single basketball game.

Congressman Shimkus Announces Annual High School Art Competition C ongressman John Shimkus (R, Illinois-15) is now accepting entries for the 2018 Congressional Art Competition. The contest is open to high school students in the 15th Congressional District. Entries are due by May 4. “This is an annual competition that we are pleased to participate in,” Shimkus said. “The winning artwork from my district will be displayed in Washington, DC, in a tunnel that connects the Cannon House Office Building to the

Capitol. Thousands of staff and visitors will see the artwork each day.” Acceptable mediums include: paintings, drawings, collages, prints, photographs, computer-generated art, and mixed media. Artwork must be two-dimensional, no larger than 26 inches by 26 inches by four inches including the frame, cannot weigh more than 15 pounds, and must be original in content. Entry forms and a full list of guidelines are available at shimkus.house.gov/art.

The winning entry will be chosen by a panel from the district, and the winner will also be displayed on my website and Facebook Page. Indian Toy Cradle Many American Indian tribes almost lost their culture by the 1960s because of 19th- and early 20th-century U.S government rules. American Indians could be removed from their land, resettled on reservations and even have their children sent to special boarding schools to be taught a new way of life. The children were punished if they continued to practice their ceremonies or speak their native language. Children from the Potawatomi tribe went to either a boys' or girls' boarding school, where they learned English and a trade. The American Indian Religious Freedom Act passed in the 1970s led to the end of the boarding schools and the beginning of efforts to bring back the Indian culture. A recent auction sold a toy Indian cradle decorated with beads and silver buttons, but holding a European porcelain-headed doll. It was made by Millie R. Hall, who lived at a Potawatomi boarding school in 1900, an important historic source for a handmade doll. It sold for $11,070. *** Q: I'd like to know the value of a violin that is about 100 years old. The inscription inside reads "Copy of Antonius Stradivarius, made in Czechoslovakia." What is it worth? A: Antonio Stradivari (1644-1737) made violins, violas, cellos and other stringed instruments at his workshop in Cremona, Italy. Fewer than 600 of the original Stradivarius violins still are in existence, and they sell for several million dollars each. Thousands of copies have been made and don't sell for high prices. Your violin was made after 1918, when Czechoslovakia was created. Recently, a violin like yours that included the case sold for

Jealousy Disrupts Doggie Household DEAR PAW'S CORNER: My two dogs, "Jake" and "Albie," are normally real sweethearts. But over the past few months they have been increasingly nasty to one another. Jake is five years older than Albie, who the shelter told me is about four years old. If Albie sees Jake lying in the sunny corner of the kitchen, he growls and barks. Jake will growl and bark right back. Last week they came very close to fighting. What can I do to stop this once and for all? — Gerry in Las Cruces, New Mexico DEAR GERRY: Dust off your dog-training manual — you're going to need it. Basic commands like "sit," "stay," quiet" and "leave it" are very helpful in defusing a situation between two housemate dogs. Sometimes dogs exhibit jealous behavior for no apparent reason; other times something has changed in

the household, and therefore the overall dynamic — a new roommate, new pet or new baby; shifting the furniture around; or even decorating for the holidays. Whatever the cause, you must re-establish order. Your dogs need to know that no matter what else has changed, you're still head of the house. Make sure that you show no favoritism. When it's time for treats, both dogs get treats (and only if they're both sitting calmly). When one is curled up in his doggie bed, the other should be, too. Take them for longer walks to burn off more energy, and work with them on basic commands. What if this doesn't stop their behavior? People Really Are Allergic To Cold DEAR DR. ROACH: Is it possible to be allergic to the cold weather and temperature changes? My son is 23 years old, and when he goes out in the cold, he breaks out in hives. What can he do? — K.R. ANSWER: This sounds exactly like cold urticaria, which isn't an allergy, but is similar in some ways. Doctors may test this by placing an ice cube (in a plastic bag with water) on the skin (usually the forearm) for five minutes, then watch the skin as it rewarms. If a hive develops (with raised skin and redness), that confirms the diagnosis. Cold urticaria can be associated with some infections (Lyme disease, hepatitis and HIV, among others) and with celiac disease. People with cold urticaria need to worry about systemic reactions. Avoiding cold (especially swimming in cold water) is critical, but even cold beverages can cause a serious systemic reaction, including swelling of the mouth and throat. Even anaphylaxis, a life-threatening collapse of the circulatory system, can develop. Many people with severe cold urticaria carry an epinephrine auto-injector in case of emergency. Antihistamines, such as loratadine (Claritin) and cetirizine (Zyrtec), are the best pharmacologic treatment. Experts in cold urticaria include allergists and dermatologists. *** DEAR DR. ROACH: Whenever someone is ill with most diseases, they are usually prescribed a drug or a medicine, or a pharmaceutical product. Why is it that cancer patients are treated with "chemo," or

ANSWER: To be honest, I was confused too, until medical school, where I learned that "chemotherapy" is just another word for a drug or medicine intended to treat a condition. We just normally reserve the term for drugs used to treat cancer. Although we tend to think of the side effects of chemotherapy as horrific, and some certainly are the most toxic substances we ever use, they vary widely in how well they are tolerated. *** DEAR DR. ROACH: In August I had open repair of my right rotator cuff. I was told it was a severe tear with bone and tendon involvement. I am 67, and the recovery has been a long one. If you can believe it, even with physical therapy and pain management, I am still uncomfortable at times. I have a stupid question that I hope you can answer. Ever since surgery, I have had to sleep on my unaffected side. Is it OK for me to finally try sleeping on my right side? I don't have another appointment at the orthopedic office. I am embarrassed, as it is one question I haven't asked. — C.V. ANSWER: It's not a stupid question at all. I don't think you will damage the surgery repair by sleeping on the shoulder now, and you certainly can try it to see if it feels uncomfortable.
