OPINIONS
With Lizzie
Spring is here, thank goodness! In most years spring begins to tease us for a few days in February. Not so this year, but hopefully it won't be long before the breezes whisper in the trees, the sky turns a gentle blue and the bulbs hiding in the garden shoot forth with their beautiful vibrant colors. The days begin to stretch, allowing precious hours to enjoy the outside spring days, but its also time to enjoy some delicious spring dishes. Some of my favorite vegetables and salads are below.
Garden Perfect Salad
2 envelopes unflavored gelatin 2 cups boiling water 1/4 cup lemon juice 1/4 tsp. salt 1 (15¼ oz.) can crushed pineapple, drained 1 (2 oz.) jar diced pimiento, drained
1/2 cup cold water 1/4 cup sugar 1/4 cup cider vinegar 1 cup grated carrots 3/4 cup finely shredded cabbage 1/3 cup chopped green bell pepper
Combine gelatin and 1/2 cup cold water in a medium bowl; add 2 cups boiling water, stirring until gelatin dissolves. Add sugar, lemon juice, vinegar, and salt; stir well. Chill until the consistency of unbeaten egg white. Gently fold carrot, pineapple, cabbage, green pepper, and pimiento into gelatin mixture. Pour gelatin mixture into a lightly oiled 5-cup mold. Cover and chill until firm. Unmold to serve. Yield: 6 servings.
English Pea Salad
2 (17 oz.) cans English peas, drained, or 3 (10 oz.) pkgs. frozen tiny green peas, thawed 1 (4 oz.) jar diced pimiento, drained 1/2 cup mayonnaise 1/4 tsp. white pepper
2 cups finely chopped celery 1 (8 oz.) can sliced water chestnuts, drained 1/2 cup chopped green onions 1/2 cup sour cream 1/4 tsp. salt
Combine peas, celery, water chestnuts, pimiento and green onions in a large bowl. Combine sour cream and mayonnaise, stirring well. Add sour cream mixture, salt, and pepper to vegetables; toss gently to coat. Cover and chill thoroughly. Yield: 6 to 8 servings.
New Potatoes in Cream Sauce
12 new potatoes 3 T. all-purpose flour 1/2 tsp. salt 1 cup milk
1 T. chopped fresh chives 3 T. unsalted butter or margarine 1/4 tsp. white pepper 1/2 cup half-and-half
Wash potatoes; pare a 1-inch strip around center of each potato. Place potatoes in a large saucepan; cover with water and bring to a boil over medium heat. Cover, reduce heat, and simmer 15 to 20 minutes, or until potatoes are tender; drain well. Melt butter in a heavy saucepan over low heat; add flour, salt, and pepper, stirring until smooth. Cook 1 minute, stirring constantly. Gradually stir in milk and half-and-half; cook over medium heat, stirring constantly, until thickened and bubbly. Pour over potatoes; sprinkle with chives. Yield: 4 servings. *** If you have a favorite recipe and want to share it with us, just send it in c/o The Shopper's Weekly, P.O. Editor's note: Last week after press time we learned that the shooter at Great Mills High School in Great Mills, Maryland, Austin Wyatt Rollins, shot himself; he was not shot by the armed officer. I'm going to try to set the record straight this week. If I've heard it once I've heard it a thousand times, an AR-15 rifle is an assault weapon. An AR-15 is not an assault weapon as much as the left would like everyone to believe it is. It's illegal for an individual to own a full automatic weapon unless they have a special license from the federal government, a Class 3, or if it's grandfathered in. So where does the confusion come in? It comes in from the word assault, and most people think AR stands for assault rifle. It stands for ArmaLite after the company that developed it. The fact is, the AR-15 is a semi automatic rifle; every single pull fires one round. The military assault weapon is an M4, or an M16 in the old days, that looks like an AR-15. So here's a good example: We all know what a Hummer looks like, but the civilian Hummer is different than the military Hummer. These days everyone seems to have an opinion on the NRA and the right to own and bear arms, challenging the Second Amendment. A few weeks ago I voiced my opinion on guns, and I will continue to believe guns aren't the problem. I listed what I view as the problems, from bad parenting, the lack of Christianity in the home, and violent video games, to the total lack of morality in our once Christian country that believed in Christian values and the Ten Commandments. And let's not forget the lack of funds for treating mental illness, as well as our educational system failures. Although not in all cases, I realize there are wonderful schools and great teachers, but I've seen situations of bullying not just by students but by teachers as well. Is that an excuse for school shootings? Absolutely not! But add it all up and there is the problem. I've also suggested some possible solutions. So how do we fix it? I can assure you, it's not to tear the Constitution up, but rather to address the real issues and
start there to fix the problems. But in order to do that, we have to start working together. On to Rich Lowry, the editor of the National Review. The Teenage Demagogues All you needed to know about student activist David Hogg's speech at the "March for Our Lives" in Washington, D.C., was that he affixed a price tag on the microphone to symbolize how much National Rifle Association money Sen. Marco Rubio took for the lives of students in Florida. The stunt wasn't out of place. Indeed, it perfectly encapsulated the braying spirit of the student guncontrol advocacy in the wake of the Parkland, Florida, school shooting. These young activists are making our public debate even more poisonous and less civil, and are doing it as teenagers. They are precocious that way. The Stoneman Douglas students experienced a horrific trauma. No one can deny their grief or blame them for being impassioned. And allowance has to be made for the fact that they are teenagers, who universally believe that they know better than their hapless elders. Yet none of that excuses their scurrilous smears of the other side in the gun debate. The student activists presume that there is a ready solution to mass shootings that everyone knows, and the only reason why someone might not act on this universally accepted policy is malice or corruption. This makes the other side the equivalent of murderers. In a video interview with The Outline, David Hogg said that the NRA and its supporters "want to keep killing our children." Not that they inadvertently enable people who carry out school shootings via misconceived policy, but they themselves kill children and want to keep doing it. Lest he be misunderstood, Hogg added, "they could have blood from children spattered all over their faces and they wouldn't take action because they will still see those dollar signs." In accusing their opponents of being bought off,
the students deny the sincerity and legitimacy of supporters of gun rights. They treat the Second Amendment as an inkblot on the Constitution, and dismiss all counterarguments as transparent rationalizations. This juvenile view of the gun debate ignores Supreme Court jurisprudence, the genuine support of the NRA by millions of people and the serious, practical objections to gun-control proposals, and it removes all possibility of a middle ground. Tellingly, it is Marco Rubio who is the foremost object of the ire of the students, when he has been notably open and accommodating. He showed up at the CNN town hall to get abused, and has shown remarkable forbearance in handling political attacks that are shameless blood libels. He sponsored incremental school safety legislation that is becoming law, and for his trouble he is deemed a moral monster who doesn't care how many people have to die as long as he gets a few more campaign contributions. Maybe all of this can be written off as the work of overenthusiastic, underinformed 17-year-olds. But the student activists aren't acting alone. They are promoted and praised by adults who should know better. Since the kids serve a useful purpose in promoting gun control, though, it is practically forbidden in much of the media to dissent from anything they say. It was hard to believe that our public debate could get even more sophomoric. The student activists are here to say, Yes, it can. © 2018 King Features Synd., Inc.
Editor's Note: In closing, the final opinion is, a protest of our youth didn't happen on its own, although I realize some parents helped. However, my belief is, behind the curtain there's more to this, possibly including Michael Bloomberg, an activist for gun control. Also, some well-known celebrities, the who's who of the old Clinton gang. Until next week. To comment on this or any column in The Shopper’s Weekly, please mail to: Editor, P.O. 4-H Club Community Service For Southern Illinois Honor Flight The Texico Stars, a Jefferson County 4-H Club, made 100 drawstring backpacks for the Southern Illinois Honor Flight. The bags will be given to veterans making the trip on April 24 to Washington, DC visiting the war memorials honoring their service and sacrifice. The bags were presented to Southern Illinois Honor Flight volunteers, Ed Smith and Larry Maham at the Texico Stars 4-H Club meeting on Monday, March 19, 2018. “4-H takes pride in honoring our community through service projects,” says Ramona Girtman, Jefferson County 4-H program coordinator. “Community service is at the core of our 4-H program”. The idea to make drawstring bags came from something Mary Ann Dagg, Texico Stars Club Leader, saw on TV. She brought the idea to the club members and they voted to take on the project. It took the club a few meetings to complete, but the members sewed each bag and included a special note to the recipients thanking them for their service and wishing them a safe trip. According to club president, Raquel Minor, “It was a great opportunity to give back to people who have served our country — even through a small gesture such as these bags.” She also explained that
it was more than a community service project for the members, “it was also a chance to learn life skills. I used an iron for the first time in the process of making the bags.” The Texico Stars are one of ten 4-H clubs in Jefferson County. In 4-H, members learn new skills like working together as a team, and making decisions. Members “learn by doing,” leading activities while practicing skills they’ll need in school and careers. Jefferson County 4-H offers a variety of ways for youth ages 8-18 to learn new skills through experiential learning opportunities; such as multi-project clubs, Special Interest Clubs, educational enrichment programs and STEM programming offered to schools and other youthserving organizations. Working in every county in Illinois, 4-H impacts the lives of 200,000 youth each year through sustained learning. Illinois 4-H empowers and prepares all Illinois youth for success by providing opportunities where they learn, practice and demonstrate skills needed for home, career and global citizenship. University of Illinois Extension is the flagship outreach effort of the University of Illinois at Urbana-Champaign, and is based in the College of ACES. If you or your child

How Do I Know He Lives? The touchstone of Christianity is the resurrection of Jesus Christ from the dead. The apostle Paul reasoned with those who did not believe in a resurrection. “And if Christ be not raised, your faith is in vain and you are yet in your sins . . . But now is Christ risen from the dead and become the first fruits of them that slept.” (I Corinthians 15:17, 20) Years ago, my grandfather asked me how I knew that Jesus arose from the dead. Instantly, the refrain from the old hymn “He Lives” came to mind. “You ask me how I know He lives? He lives within my heart.” The life changing experience of millions of Christ’s followers can’t be denied. But consider some of the many proofs of Christ’s resurrection. THE PROPHESIES OF THE RESURRECTION.
Jesus’ first coming, birthplace, crucifixion, and resurrection were all foretold by the prophets in precise detail. We also have many types foreshadowing the resurrection such as Aaron’s almond br a n c h t h at b u d d e d . (Numbers 17:1-10) Jesus said that Jonah’s experience was a type of his resurrection. “For as Jonah was three days and three nights in the belly of the great fish, so will the Son of Man be three days and three nights in the heart of the earth.” (Matthew 12:40) David prophesied of Christ’s resurrection. “For you will not leave my soul in hell (Sheol — the grave); neither will you suffer your Holy One to see corruption.” (Psalm 16:10) Jesus foretold his death and resurrection numerous times. “Destroy this temple and in three days I will raise it up.” (John 2:19, 21) THE PROOF OF THE EMPTY TOMB. What con-
Wednesday, April 4, 2018 vinced the disciples of Christ’s resurrection to such a degree that they would willingly suffer a martyr’s death for the sake of Christ? The empty tomb is the greatest evidence. When the women went to the tomb of Jesus early on the first day of the week, they discovered the stone had been roll away and the tomb was empty. They ran to tell the disciples. When John and Peter ran to the tomb, they discovered Jesus was not there, but his burial clothes were there and the cloth covering his head was folded up lying by itself. John looked in, “And he saw and believed.” (John 20:1-9) What did he see that made him believe? The empty tomb and the grave clothes and the head covering. THE PERSONAL ENCOUNTERS OF THE RESURRECTED CHRIST. The gospels record 12 instances of Jesus’ appearance to individuals after his resurrection and, on one occasion, he appeared to over 500 people at one time. Jesus also appeared to Paul on the road to Damascus, where he had a life changing conversion experience. When Jesus appeared to the disciples he showed them the nail prints in his hands and feet. Throughout
history, millions of people have come into a personal experience with the risen Savior. THE POWER OF THE RESURRECTION. The apostle Paul summed up his life goal and purpose. “That I might know him and the power of his resurrection and the fellowship of his sufferings.” (Philippians 3:10) His resurrection power dwells in every believer. Paul tells us that the same Spirit that raised Jesus from the dead will quicken our mortal bodies. (Romans 8:11) The power of his resurrection transforms lives. (I Corinthians 4:20) How do I know he lives? There are many convincing proofs of the resurrection. The greatest proof, I believe, is described in the hymn “He Lives” — “You ask me how I know he lives? He lives within my heart. And he walks with me and he talks with me and he tells me I am his own.” “But as many as received him, to them he gave the right to become children of God, to those who believe in his name.” (John 1:12-13) HE LIVES! Strategies To Get Kids To Exercise Exercise is an important component of a healthy lifestyle. That’s not just true for adults, but for children and teenagers as well. Parents concerned about their kids living sedentary lives may have more to worry about than they know. According to a 2017 study published in the journal Preventive Medicine that analyzed data from the National Health and Nutrition Examination survey from 2003-2004 and 2005-2006, 19-year-olds spent as much time being inactive and sedentary as 60-year-olds. Getting kids to be more active may be especially difficult for today’s parents, who must contend with the internet, social media,
tablets, smartphones, and other distractions as they try to encourage their kids to unplug and spend more time being physically active. But parents can try various strategies to get kids off the couch and exercising. • Set a positive example. Kids, especially young children, often try to emulate their parents. Parents can capitalize on kids’ desire to be like mom and dad by exercising in front of their children. Young children may not be ready to lift weights or run on the treadmill, but parents can embrace kid-friendly exercises, such as walking and cycling. Invite kids along for daily bike rides or go for family walks around the neighborhood after dinner.
• Park the car. Kids don’t need to know they’re exercising in order to be more physically active. In lieu of driving to the bank or pharmacy, parents can leave the car at home and ride their bikes alongside their children when running errands. If possible, parents can walk youngsters to and from school rather than driving them. • Choose friend-friendly activities. Adults employ the buddy system as a means to motivate themselves to keep exercising, and that same principle can apply to children, who might be more excited about physical activity if their friends are joining them. Team sports provide chances to exercise with friends, as do organiza-
Strength Training Tips For Teens Many young people begin strength training regimens as teenagers. When done in conjunction with cardiovascular training, strength training is part of a balanced exercise regimen that can help teenagers develop strong, healthy bodies. But strength training carries some risk, and teenagers should exercise caution as they begin strength training. • Always exercise under supervision. Many teenagers begin strength training through their participation in scholastic sports. That means they’re likely to be supervised by coaches and trainers. But those who have no such supervision should only perform strength training while under the supervision of their parents, trainers or another adult. Adult supervisors can advise teenagers on the proper form when strength training and make sure youngsters are not overexerting themselves. • Don’t turn strength training sessions into competitions. Often teenagers prefer to exercise in groups. While group exercise sessions can be beneficial and keep kids motivated, teenagers should not turn such sessions into competitions. Doing so may encourage teenagers to lift more weight than their bodies can
ARIES (March 21 to April 19) Resist a confrontation with that irksome person. The matter will soon blow over anyway. Meanwhile, channel your high Arian energy into areas with more positive potential. TAURUS (April 20 to May 20) The innovative Bovine finds a creative way to resolve a sensitive domestic problem by midweek. A former colleague returns with an intriguing business suggestion. GEMINI (May 21 to June 20) An unexpected critical statement from someone you trust could catch you momentarily off guard. But you soon recover your equilibrium and rise to the challenge. CANCER (June 21 to July 22) You might feel you can handle a new project on your own. But advice from someone with experience could help you avoid possibly costly as well as time-consuming obstacles. LEO (July 23 to August 22) Waiting for others to make decisions is difficult for the take-charge Lion. But by week’s end, you should hear news that will help you regain control of the situation. VIRGO (August 23 to September 22) Your superjudgmental side could dominate the week unless you try to keep it in check. Otherwise you risk offending people, including some who are very close to you. LIBRA (September 23 to October 22) Expect more information to come out about that possible career shift.
handle, increasing their risk for injury. • Stop if something feels off. Teenagers should stop strength training immediately if they feel any pain, popping sounds or other symptoms of injury or discomfort. Athletes can speak with a team trainer while teens who are not working out with a team can speak with their parents and physicians. Teens should explain symptoms in full, giving honest answers when trainers or physicians ask about levels of pain. Stopping a strength training session at the first tweak or sign of something extraordinary can prevent serious injury. • Don’t strength train too much. Muscles need time to recover from strength training sessions, so teenagers should limit their strength training sessions to about three times per week. Strength training on back-to-back days can contribute to injury in young athletes, so teenagers should give their bodies at least one day off between weightlifting sessions. • Use light weights at first. Teenagers may not know where to begin in regard to how much weight to lift. The medical resource WebMD advises teenagers avoid heavy weights when
Meanwhile, your loving concern helps someone close to you get through a worrisome period. SCORPIO (October 23 to November 21) Despite an occasional setback, workplace pressures should continue to ease through most of the week. This would be a good time to plan that long-delayed trip. SAGITTARIUS (November 22 to December 21) The sage Sagittarian quickly recognizes an opportunity when she or he sees it, especially if it’s one you’ve been planning for. Take aim and go for it. CAPRICORN (December 22 to January 19) The Sea Goat’s unique insight guides you as you check out a questionable situation. Your efforts should prove rewarding for you and your many supporters. AQUARIUS (January 20 to February 18) You might want to pace yourself a bit more. Rushing could lead to serious slip-ups. Take more time to check out details you might otherwise overlook. PISCES (February 19 to March 20) The best way to resolve those remaining problems is to ask others for help. They’ll be happy to do so, especially when you agree to share the credit for a job well done. beginning strength training sessions, instead choosing weights they can easily lift 10 times, with the last two repetitions being increasingly difficult. Weight can then be slowly increased as teens gain strength and feel no pain. tions like the Boy Scouts of America and the Girl Scouts of America. But even inviting a child’s friend along on a family hike or bike ride may make such activities more fun for kids. • Give gifts that encourage physical activity. Kids might want the latest device or video game for their birthdays, but parents also can give gifts that encourage youngsters to be physically active. Bicycles, rollerblades, ice skates, and sports equipment are just a handful of potential gifts that may compel kids to exercise more. Childhood obesity is a significant problem, with the 2015-2016 NHANES

The Mt. Vernon Rotary Club in partnership with the Mt. Vernon West Rotary Club, joined forces to work on the Lifeboat Al liance playg round remodel — adding a deluxe new playground set for the shelter families, along with two benches, and a small swing and slide set for toddlers and babies. The project began with the help of Jax Asphalt and Ryan Wellmaker (a Mt. Vernon Club Rotarian) to remove fencing, old grass and old mulch, then adding new mulch. The Rotarians then met for a work day on a chilly morning last November. The team gathered around a set of directions and tried to make sense of a very complex project, and in the end the Lifeboat staff helped complete the assembly of the
last few parts, along with a few of their board members. Overall, the work day was a success. “It was a great honor to help a local organization such as Lifeboat. Their old playground contained old, broken swings and ultimately wasn’t being used by the families. The parents didn’t even have a place to sit and watch their kids play. Rotary knew this project was a much needed upgrade to the facility to help families enjoy their time together during what is typically a stressful time to begin with. We had a great time working on it together,” stated Sandy Sinnett, Mt. Vernon Club President. The Rotary groups assembled again last weekend to complete the project, adding new picnic tables
for the families, planted flowers and added a few potted plants to give the playground some color. “The new playground is beautiful, and Lifeboat couldn’t be more grateful to both Rotary clubs for honoring us with a place our families can laugh and play together. Thank you to all who helped with this proj e c t ,” s t at e d Je n Mc C a r t hy, L i f e b o a t Executive Director and Mt. Vernon Rotar y Club member. The Mt. Vernon Rotary Club was chartered in 1920 and its members encompass a variety of professions within the community. The Club meets Tuesdays at noon at the ELKS Lodge, located at 1107 Jordan Street, Mt. Vernon. Visitors are always welcome.

Here Are The FACTS!
IGA’s own beef buyers are on the market constantly selecting only “Top Rail” beef for our stores. Only three out of ten choice steers meet our rigid specifications. This super beef is called “TableRite” to distinguish it as the very finest beef money can buy... Yet, because of IGA’s united buying power, it costs no more than ordinary beef you can get at “other” stores. TableRite beef is only available at your favorite Hometown Proud Borowiak’s IGA!
