Kaskaskia College Theatre Guild Presents “Tales Of The Witch, The Wolf, And The Bridge Troll” The Kaskaskia College Theatre Guild proudly presents “Tales of the Witch, the Wolf, and the Bridge Troll” in the KC Jane Knight Auditorium, We d n e s d a y a n d Thursday, April 18 and 19 at 7:00 p.m., and Sunday, April 22 at 2:00 p.m. This is the eleventh spring in a row that the KC Theatre Guild has put on a play aimed at children and families. Director David Quinn has written seven of these plays including this one. The plot involves Ariel, Rapunzel, Cinderella, Alice, the Mad Hatter,
and Little Red Riding Hood running from a witch, the big bad wolf, Cinderella’s stepmother, and the Queen of Hearts. The play runs approximately one hour and is family friendly. The play will also be performed for area grade schools on Wednesday and Thursday, April 18 and 19 at 9:00 and 10:30 a.m. each day with over 2,300 students coming to the special weekday matinees. Centralia SINA Members Learn The History Of The Shoppers Weekly Centralia SINA met at the C ent ra li a R e cre at ion Complex April 5. President Mike Chambers began the meeting with the Pledge and prayer by Jay Luse. Mike spoke of new happenings in Centralia and upcoming events. Carl Mecum reported that the Central City Lions Club has the smoked pork loin dinner coming up on May 6 and that Don Beaty is asking for advertisements for his 50th class reunion program booklet. Bud Davis introduced the speaker, John Stuehmeier from the Shoppers Weekly. John began his program by telling the history of the paper. The paper will be celebrating their 30-year anniversary in September. It was his wife Cathy that had the idea of beginning a paper. At this point Cathy has had over 50 years experience in the media world. Both Cathy and John have a history in radio, so the paper began on the ground floor of the present Centralia
radio station. The next location for the paper was the building south of its present location. The paper’s present location is on the corner of Poplar and Broadway. John showed the members the front page of a copy of the paper. It has a cross and its meaning is, “By the grace of God go we.” John also showed the members the first computer that they used at the paper. Girl Scouts Name Outstanding Graduating Scholars Girl Scouts of Southern Illinois (GSSI) is pleased to announce that two excelling Girl Scouts, Kaitlyn Barnett and Lydia Fulton, have been s ele c te d as its 2018 Outstanding Graduating Girl Scout Scholarship winners. The girls were recognized April 7 at GSSI’s annual All That Glitters Ceremony held at the Double Tree in Mt. Vernon, Illinois. GSSI’s Outstanding Graduating Girl Scout Scholarship is awarded to the Girl Scouts who demonstrate extraordinary leadership in the Girl Scout movement, in school and in their community. also received her CounselorIn-Training, Volunteer-InTraining, Service to Girl Scouts, and Community Service Awards. Kaitlyn is currently a senior at Triad High School in Troy and plans on attending Southeast Missouri State University where she would like to complete a double major in Historical Preservation and Biology, with a focus in Environmental and Ecological studies. Her dream job would be working as a Park Ranger for the National Park Service. “Even though, all these awards are something to be proud of, it is not the pin that I am proud to earn. It is the skills and the empowerment from others in the Girl Scout community, that makes me
feel proud to be a Girl Scout,” said Kaitlyn. Lydia Fulton is a Girl Scout Ambassador who has been a Girl Scout for 12 years. During her Girl Scout career she earned her Bronze, Silver, and Gold Awards, making her a Trifecta recipient. She also served on the GSSI Board of Directors as an Ex-Officio member for two years and as a mentor for one. Lydia plans to pursue a biology major with a focus on cognitive science. Her long term plan is to become a physician. “Because of my experiences as a Girl Scout, I feel well-equipped to face my future. I want to do great things, and Girl Scouts has given me the tools to do just that,” said Lydia.
ROE 13 To Offer Licensure Assistance Ron Daniels, Regional Superintendent of Schools for Regional Office of Education (ROE) 13, is pleased to announce a series of licensure open houses to assist educators who renew a license in 2018. Due to the large number of renewals this year, Daniels finds it essential to provide additional support to area educators. All open houses run
from 3:30 to 5:00. Dates and locations are as follows: Clinton County — Carlyle ROE office — April 23 and May 9; Jefferson County — Mt. Vernon ROE office — April 30 and May 8; Marion County — Hawthorn School in Salem — April 18 and April 26; Washington County — Nashville Elementary (enter through east doors) — May 7 and May 15.
Open houses are for administrators, teachers, and p a r a p r o f e s s i o n a l s . Educators should bring their ELIS log in credentials as well as a valid debit or credit card. One of the most powerful slogans of the Revolutionary War was “An Appeal to Heaven.” The “pine tree” flag with this motto was affixed to ships, cannons, and flag staffs of the colonial forces. John Lock, a 17th century Briton, who historians say originated the slogan, wrote in his “Second, Treatise of Government”, “Where the body of the people or any single man, is deprived of their right, or is under the exercise of a power without right and have no appeal on earth, then they have a liberty to appeal to heaven, whenever they judge the cause of sufficient moment.” Historians say the slogan, “An Appeal to Heaven,” wasn’t referring to prayer. The forefathers of the American Revolution knew and publicly proclaimed that without God’s intervention, the cause would fail. As the Declaration of Independence was being drafted and
signed, Benjamin Franklin called on the Continental Congress to pray for God’s divine favor and intervention. The signers of the Declaration of Independence made an appeal to heaven. Biblical precedent reveals the power of an appeal to heaven by prayer in numerous scriptures. Moses interceded for the rebellious nation of Israel before God destroyed them with judgement. God stayed his destruction. When the Amalekites came against Israel, Moses, Aaron, and Hur went to the top of a hill. Aaron and Hur helped Moses keep his weary arms uplifted with his rod of authority until Israel in a valley below prevailed over their enemies. (Exodus 17:10) An appeal to heaven saved the day. The apostle Peter was thrown into prison by King Herod. He was facing possible execution. But the church gathered together and prayed. (Acts 12) Are you facing seemingly insur-
mountable circumstances? Consider Peter’s miraculous release. Appeal to heaven. PETER’S CHAINS. Peter was thrown into prison, guarded by four squads of soldiers, and chained between two guards. God doesn’t promise us a rose garden. A righteous and just cause will always have opposition. Jesus said that if the world hated him, they would also hate his followers. Do you have friends in chains? Appeal to heaven. PETER’S REST. Peter was facing possible execution, but he was sleeping like a baby between two soldiers. I doubt if he had access to a “My Pillow,” but Peter had the rest of faith. “There remains therefore a rest for the people of God.” (Hebrews 4:1-10) PETER’S INTERCESSORS. Peter was in peril, but we have this account, “But constant prayer was offered to God for him by the church.” (Acts 12:5) Prayer makes all the difference in the world. We have many promises pertaining to the power of prayer. Jesus said that if two or three agree together about anything, whatever they ask in his name would be done. (Matthew 18:19) He taught about persistent prayer. (Luke 11:5-13) Jesus said the prayer of faith could move

And in between, Speaker of the House Paul Ryan (R-WI) announced he was stepping down and had no plans of running again. And last — and in my eyes the least — came James Comey's book. It was a busy week in the world of politics. On to what I perceive as the most important. It came Friday night when the U.S., alongside its allies, the U.K. and France, took out three chemical plants in Syria. This took place only after the U.N. Security Council had met five times since Syrian leader Bashar al-Assad once again used chemical weapons on his own people. The strikes took aim at the heart of Syria's chemical plants, successfully destroying them. Now Assad's ability to use chemicals to commit genocide in this manner has been greatly diminished. Make no mistake, chemical warfare is a danger
to us all. Stepping back, under Barack Obama Assad did the same thing, crossing Obama's red lines more than once. Trump drew the red line and meant it. Obama believed Russia's guarantee that Syria would get rid of chemical weapons by destroying them, in Putin's own words. And sadly, under Obama, Assad was given "chance after chance." Was Obama naive in trusting the Russians? Who knows! So will Putin of Russia and Assad of Syria take last Friday night's actions seriously? I can only hope so. I can only say what Assad has done is an assault on all of humanity and no leader of any country should find his behavior acceptable, and that includes Iran and Russian. Sadly, Syria has been in a civil war for the last seven years, and Assad's actions are not only affecting his own people but the entire Middle East! One thing is for sure, in closing on this subject. I question what good is the United Nations? But to be sure, in my opinion, when Donald

Bill of Rights Day” in the State of Illinois. Officially known as “The Servicemen’s Readjustment Act of 1944,” and signed into law by President Franklin D. This year, November 4, 2018, will be the 75th Anniversary of that dinner meeting at the Salem American Legion, Luther B. Easley Post 128, when eight Legionnaires sat around a dinner table and discussed what should be done for returning soldiers from World War II. This legislation would amend the State Commemorative Dates Act and provide that the 4th day of November of each year to be observed throughout the State as a day in recognition of the landmark legislation that provided benefits to World War II veterans, and would serve as the basis of future legislation to extend benefits to all who serve in the United States Armed Forces. House Bill 4954 now goes to t he f u l l Hous e of Representatives for consideration.

Trump says to Syria and Russia that enough is enough, we're locked and loaded. He means it! I pray it doesn't come to that. Next up is the FBI raid a week ago on Monday on Michael Cohen's law office and residence. Cohen has been President Trump's private attorney for the last decade or more. Allegedly, the FBI was searching for information on real estate dealings. Others suggest it had to do with, again, Robert Mueller's "witch hunt" on Russian collusion, while others said it took place to find out how Stormy Daniels was paid to stay silent about her alleged affair with Trump a decade ago. Although there was a search warrant issued, there is such a thing as lawyer-client confidentiality, and I question, does this set a precedent? As I recall, attorney-client privilege was used when this issue came up with Hillary Clinton when it was suggested a subpoena could be issued on her attorney! But the reality is it was
reported the reason this search was done on Cohen is because Mueller suggested it! Too bad someone didn't suggest the same with Hillary Clinton. Yet I'm the first to say, "We have a rule of law in this country." It's too bad it never applied to Bill and Hillary Clinton. Up next, Speaker of the House Paul Ryan (R-WI) will step down before midterms and announced he has no plans to run again. Some suggest this will hurt the Republican Party during the midterms in November. I will say the only thing that will hurt the Republicans is the Republicans, and the way some of them are behaving, it's possible. The midterm is theirs to lose. Time will tell. And last and the very least is James Comey's new book, A Higher Loyalty: Truth, Lies, and Leadership. In his new book he calls for ethical leadership. But my question is, does he live up to it? The answer is no! If I were to write a book about Comey, I'd title it The Bad Cop. The book is full of cheap shots, showing Comey's arrogance and doing nothing but trying to sell a book and maybe a movie. For my take on it, the book is a waste of money. This guy was the director of the FBI and leaked information to the press, then lied about it. I think that says it all. Until next week.

Sandoval FFA Member To Receive State FFA Degree At State FFA Convention Recently, one Sandoval FFA member competed for her State FFA Degree. This degree is an honorable prestige in Illinois. Only a small percentage of Illinois FFA members ever have the chance to obtain it. To be eligible to receive the State FFA Degree from the Illinois Association, the member must meet the following minimum qualifications: 1. Have received the Chapter FFA Degree. 2. Have been an active FFA member for at least two years (24 months) at the time of receiving the State FFA Degree. 3. While in school, have completed the equivalent of at least two years (360 hours) of systematic school instruction in agricultural education at or above the ninth grade level, which includes a supervised agricultural experience program. 4. A student after entering Agricultural Education must have earned at least $1,500 or worked at least 750 hours in excess of scheduled class time in a supervised agricultural
experience program. 5. A student after entering Agricultural Education must have productively invested at least $1,000. 6. Demonstrate leadership ability by: a. Performing ten procedures of parliamentary law. b. Giving a sixminute speech on a topic relating to agriculture or the FFA. c. Serving as an officer, committee chairperson or participating member of a chapter committee. 7. Have participated in the planning and completion of the chapter Program of Activities. 8. Have participated in at least five different FFA activities above the chapter level. 9. The member's local chapter must certify that it has held not less than twelve (12) meetings during the preceding twelve (12) month period. 10. Be in the upper 40 percent of the class in scholarship or have an average of a 2.5 on a 4.0 scale in all school subjects during the entire period of application for the State FFA Degree. 11. Much has changed in the kitchen in the last 100 years. However, there are still many of us that love to cook. It's no longer necessary to spend hours slaving over a hot stove. I tripped onto a menu in an old collection of cookbooks that I wanted to share, an early 1900 typical Sunday dinner menu. It included: Oven-fried chicken, mashed potatoes and gravy, buttered peas and carrots, cabbage salad, homemade buns with butter and strawberry jam, sweet pickles, apple pickles, beet pickles, fruit compote, raspberry pie, baked custard pie and coffee. I couldn't help but wonder how much time it took on the day of the meal, not counting the time it took to kill and cut up the chicken, and can the sweet pickles, apple pickles and beet pickles. And there was no such thing as running to the grocery store for a quart of raspberries for the pie. Need I say more? Fast forward to the present time. Last Sunday, dinner at our house was a tender pork shoulder that cooked on low 10 hours in the crockpot, cauliflower topped with cheese, fresh baby carrots with basil from last year's herb garden, mashed potatoes and gravy, and dessert from the store. But while thumbing through some of my old time favorite recipes, I couldn't resist sharing some. First is Roast Pork, calling for what else but a six to seven pound shoulder of pork or a five to seven pound pork loin. Next is Mom's Zesty Pork Chops, and last is Scalloped Potatoes.

1 (6- to 7-lb.) shoulder pork roast or 1 (5- to 7-lb.) pork loin bone-in roast 2 cloves garlic, slivered 1 T. rubbed sage
1/2 tsp. salt 1 tsp. black pepper, freshly ground 1 tsp. dried thyme or 1 T. fresh thyme 2 medium onions, sliced
Sauce or Gravy: 1/4 cup pan drippings 3 T. flour
2 cups hot water
Trim excess fat from meat; wipe dry. With point of knife, make slits every so often in meat; insert garlic. Mix sage, salt, pepper, and thyme together. Rub seasonings into meat, coating completely. Let stand 20 to 30 minutes (can be done ahead). Cover and refrigerate several hours or overnight. Preheat oven to 350°. In roasting pan, over high heat, sear roast, fat side down, until brown on all sides. Or broil at 550° until brown on both sides. This takes about 5 to 6 minutes each side. Place roast, fat side up, on rack in roasting pan. Strew onions around meat. Roast uncovered in oven for 30 minutes. Cover, continue to roast about 1½ hours, or until meat thermometer reads 170° (approximately 30 minutes per pound total cooking time, or about 3 hours in total or according to personal preference). Remove roast from pan; rest on warm platter 10 to 15 minutes. To Make Sauce or Gravy: Pour off all but 1/4 cup pan drippings and fat. On top of stove, over moderately high heat, add flour to pan. Cook, stirring constantly, until it is color of brown paper bag. Whisk in hot water; continue stirring until mixture comes to a boil; boil 1 to 2 minutes. (If lumpy, pour through strainer into sauceboat.)
Mom's Zesty Pork Chops 6 loin chops, 3/4" thick 2 T. vegetable oil 1/2 tsp. salt 1/2 cup maple syrup 1/2 cup hickory flavor ketchup 2 T. lemon juice
2 tsp. worcestershire sauce 1 large tart green apple, cored and cut into 6 thick slices 1 T. cornstarch 1/3 cup cold water
Trim and score edges of meat. Wipe dry. Heat oil in large skillet with lid or electric frying pan over medium high heat until hot. Brown chops on each side; drain off oil. Season with salt to taste. In small bowl, combine syrup, ketchup, lemon juice, and Worcestershire sauce. Reserve 1/2 cup mixture; pour remaining mixture over chops. Cover. Bring to boil, reduce heat, and simmer over low heat 25 minutes. Place an apple slice on each chop; top with reserved sauce. Cover and simmer 25 minutes longer. Remove chops to warm platter. Blend cornstarch with water and stir into sauce in skillet. Cook, stirring constantly, until sauce comes to a boil. Boil 1 minute. Pour sauce over chops.
Scalloped Potatoes 8 to 10 large baking potatoes 2 cups heavy cream 1/2 cup half-and-half
1 tsp. salt 1 tsp. black pepper, freshly ground 2 T. butter, cut into small pieces
Preheat oven to 350°. Peel and thinly slice potatoes. (This may be done in food processor.) Place potatoes in large heavy saucepan. Pour cream and half-and-half over potatoes, adding more if necessary to nearly cover. Season with salt and pepper. Over moderate heat, stirring every so often to keep from sticking to bottom of pan, cook potatoes, uncovered, 20 min., or until mixture starts to thicken. Pour hot potatoes into large, generously buttered baking/serving dish. Dot top with butter and bake approximately 45 min., or until potatoes are tender to point of fork, and top is brown. Let stand 10 min. before serving. This dish can be done ahead.
