5th Annual Locust Street Historical Fair The Fifth Annual Locust Street Historical Fair was held last Saturday from 10 a.m. to 2:00 p.m. along the 100 and 200 blocks of Locust Street in a celebration of the history of Centralia, Illinois. Walking tours were conducted and presentations were given on several historic buildings. The Civil War

Reenactors of Marion County set up cannons outside the Centralia Area Historical Museum. Several actors portraying past Centralians were dressed in historic costumes. The Artisan Guild of Southern Illinois gave weaving, spinning and pottery demonstrations and displayed some of their

Marion County Drug Court Graduation Marion County Drug Court Program held their 11th graduation Friday, May 4. They had two graduates, Cindy Britt and Matthew Stines. The Drug Court Program started in 2011 and had their first graduation in May 2013. Since then they have had 41 graduates with a 70.8% success rate after they graduated. State Representative John Cavaletto (R-Salem) announced that one of the schools in his district, Centralia Junior High School (grades 5-8), applied and was granted a biodiversity field trip grant for $1,765.42 in 2018. This privately funded program will assist more than 9,800 students from 35 counties around the state in learning about Illinois’ natural heritage. “I am pleased to know that students from Centralia Junior High will get a chance to visit Touch of Nature Environmental Center in the Shawnee National Forest to learn about nature and conservation,” commented Rep. John Cavaletto, a member of the Environment Committee. “I was fortunate to spend some summers in that area in high school and college and have very fond memories,” Cavaletto added. Gov. Bruce Rauner and the Illinois Department of

Natural Resources (IDNR) announced $107,000 in Biodiversity Field Trip Grants for this year to be coordinated by the Illinois Conservation Foundation (ICF). The grants will pay for 148 field trips in 2018 and offer Illinois students more opportunities to learn about the wealth of species and habitats in our state. "We are pleased to be able to support learning outside the classroom with these grants. This program allows students to visit locations throughout the state to see firsthand what they've been learning about in the classroom," IDNR Director Wayne Rosenthal said. "Our future conservation leaders need the opportunity to experience Illinois' natural resources in-person." Centralia SINA Members Learn About The Centralia Humane Society

The Southern Illinois Networking Association (SINA) meeting was called to order by President Mike Chambers. The Prayer and the Pledge was led by Jay Luse. The meeting began with President Chambers asking about new happenings in the community. SPERO will be hosting their When Hogs Fly event on May 19 at Mt. Vernon Airport. Mike introduced the Speaker Danny Mays with the Humane Society. Danny brought with him his Lab, Mollie, and told about how he rescued her years ago. He is a volunteer board member for the Humane Society. Mays spoke about the history of the Humane Society. Lilo Quick and family began the Humane Society in 1978. Regular meetings were held originally at Hardees in Centralia. Danny noted that the Quick family has been a great supporter of the Humane Society and continues to be to date. He

also noted that Judith Joy has been a great supporter. He noted that the Humane Society is a no kill shelter. It is self funded by donations and fundraisers. It takes approximately $6,000.00 per month to run the shelter. Danny also noted that when the animal's owners pass away the animal needs closure just like a human does. There are funeral homes that will allow pets to come and see their owners at the funeral home. In 2006 the new shelter was purchased. Danny noted that they keep the shelter full with dogs and cats, but it's very hard to find all of the animals safe and loving homes. The cost of adopting an animal is $125.00 for a full grown dog and $75.00 for a puppy; $40.00 for a full grown cat and $60.00 for a kitten. Before adoption the animals are checked to make sure they are healthy and are micro chipped. Mays stated that they are always in need of donations

Peter and the Holy Spirit What transformed Peter from a brash, impulsive fisherman, who denied his Lord three times, into a bold apostle full of the power of God? First, Peter was an eyewitness of the resurrection of Christ. Second, the outpouring of the Holy Spirit on the day of Pentecost. (Acts 2) Third, God rearranged his life and attitudes by breaking down prejudice in his heart. As you read the book of Acts, you will discover Peter’s relationship and ongoing reliance on the Holy Spirit. Consider these aspects of the person and power of the Holy Spirit that can empower and energize your life. PETER AND THE POWER OF THE HOLY SPIRIT. The day of Pentecost is viewed by many to be the birthday of the church. In obedience to the Lord, 120 believers waited in an upper room in prayer

until God fulfilled his promise to pour out his Spirit. All the believers began to speak in other tongues and Peter preached a message that brought over 3,000 to Christ. Later God rearranged Peter’s heart and sent him to Cornelius’ home and the Gentiles also received Christ and were filled with the Holy Spirit. (Acts 10) Peter preached to the Jewish authorities saying, “We are witnesses of these things and so is the Holy Spirit, who God has given to those who obey him.” (Acts 5:32) The gift of the Holy Spirit to empower the believer is available to all who will ask and receive. (Acts 1:8; Luke 11:13) PETER AND HIS PERSONAL RELATIONSHIP WITH THE HOLY SPIRIT. At a critical time in the life of the early church, Peter was given direction in what to do. We see how the Holy Spirit is a person, of the God-head, who can be lied

to. “Ananias, how is it that Satan so filled your heart that you have lied to the Holy Spirit . . . You have not lied to human beings but to God.” (Acts 5:3-4) The Holy Spirit is God and can be grieved, resisted, and quenched. The Holy Spirit speaks, teaches and leads. He sanctifies and empowers. We can have communion and fellowship with him. Partner with the Holy Spirit. PETER AND THE PERFORMANCE OF THE GIFTS OF THE SPIRIT. It seems that most often the manifestations of the Holy Spirit in Peter’s life were the gifts of healing and miracles. The lame beggar was healed instantly. (Acts 3) “The apostles performed many signs and wonders among the people . . . As a result, people brought the sick into the streets and laid them on mats . . . so that at least Peter’s shadow might fall on some of them as he passed by.” (Acts 5:12-16) Did healing and miracles cease with the death of the apostles? No. Paul urged believers to desire earnestly the gifts of the Spirit. (I Corinthians 12) The Holy Spirit is still working where he is welcomed and obeyed. (Mark 16:17-18) PETER AND THE SPIRIT’S PRESENCE IN PERSECUTION. Peter and the apostles were thrown in jail

many times and persecuted for their faith in Christ. They were miraculously released from jail. (Acts 5:17-33, 40-41) Jesus said that those who are persecuted would be blessed. (Matthew 5:10-12) The easy road will not get you there. It is not difficulty that can defeat you, it’s having to face it alone. The Holy Spirit abides with you always. (II Corinthians13:4) PETER AND THE PASSION OF THE HOLY SPIRIT TO PROCLAIM THE GOSPEL. Scott Hagan, president of North Central University in Minneapolis, MN said, “Patience is not the enemy of passion.” The apostles were flogged and warned not to teach or preach in the name of Jesus. But the Holy Spirit gave a burning passion to them, “Day after day, in the temple courts and from house to house, they never stopped teaching and proclaiming the good news that Jesus is the Messiah.” (Acts 5:41-42) Like Peter, make the Holy Spirit your Senior Partner. 618-495-2617 Impeach! Impeach! Impeach! That's the open hate talk of the left targeting Donald Trump. Is all this a conspiracy? It makes one wonder as it's been going on since Day One of President Donald Trump's presidency. What I find interesting is when someone tells me he should be impeached and I ask why, the comment I get each and every time is that he's unfit! Of course, my next question is, "In what way is he unfit?" Again, I get nothing other than what is speculation, and of course, what they perceive as Trump's motives. A prime example is the interference in the 2016 elec tion using t he Ru s s i an C o l lu s i on theory. So going back to impeachment just for a minute, let me say a President can't be tried

and impeached based on: 1) The other side thinking that he's unfit, just because. 2) What the other side thinks is his motive. 3) Who he fired, no matter what the other side thinks is his motive. All this has been going on, as I said earlier, since he was elected. By who? The far left, the Democratic Establishment — including some in the FBI, CIA, and DOJ — and the Republican Washington Establishment. I watched Meet the Press last Sunday. I found it interesting the topic was still Stormy Daniels, as Chuck Todd interviewed her attorney, Michael Avenatti. And when Todd asked of the lawsuit, "Why now?" no clear answer was given. Seriously, I don't think she was worried about

her reputation. She made that herself. And so the interview went in circles, encompassing a number of issues, including Mueller, which left me wondering what Mueller had to do with Trump's activities a decade ago. Then, in my opinion, Stormy's attorney laid a bombshell. One of the issues at the bottom of all this garbage coming to the surface is this quote from the attorney, "We need to decide if he (referring to Trump) is fit to serve as president." All of a sudden Stormy's actions against Trump became crystal clear. The purpose is to impeach! Any good attorney will tell you actions while in office are impeachable, motives are not impeachable. But the fact remains, I'd rather question a lie

about Stormy Daniels than listen to lie after lie from the Obama Administration. For one, Susan Rice went on every Sunday morning talk show saying that the attack on the post that killed four Americans including Ambassador Stephens was a protest that simply got out of hand! I rememb er Benghazi. Do you? In my opinion, that was an offense. The motive was to mislead the American people after taking no action to save Americans in harm's way while the people in power sat and watched it in real time, when in fact, there was help close enough to intervene that was ordered to stand down. In my opinion, these actions were impeachable. So with all that said, keep in mind the reason Donald Trump is the President now is because of the prior behavior of the past administration. The real news this week is: • The Iran Deal deadline comes up this week. • A decision has to be made on where the Kim /Trump summit will be held. Both of these are positive news, worthy of reporting. That's why the liberal media ignored these talking points. The truth is, Donald Trump's approval rating is improving daily. And a point to remember is that only 17% of the American citizens trust the government to do the right thing. And that poll was pre-Trump! Until next week. Chicken Breasts In Phyllo Pastry 1 cup mayonnaise or salad dressing 2/3 cup chopped green onions 3½ T. fresh lemon juice 1 small clove garlic, minced 3/4 tsp. dried whole tarragon 8 chicken breast halves, skinned and boned

1/4 tsp. salt 1/8 tsp. pepper 16 sheets commercial frozen phyllo pastry, thawed Butter-flavored vegetable cooking spray 3½ T. grated Parmesan cheese

Combine mayonnaise, green onions, lemon juice, garlic, and tarragon in small mixing bowl. Set mayonnaise mixture aside. Sprinkle chicken breasts with salt and pepper. Place one sheet of phyllo pastry on sheet of plastic wrap; spray evenly with cooking spray. Place another sheet of phyllo on top; spray with cooking spray. Spread about 3 T. mayonnaise mixture on both sides of 1 chicken breast; place breast diagonally in one comer of stacked pastry sheets. Fold corner over breast; fold sides over, and carefully roll up in pastry. Place seam side down in ungreased 15"x10"x1" jellyroll pan. Repeat procedure with remaining phyllo, cooking spray, mayonnaise mixture, and chicken breasts. Spray tops of pastry bundles with cooking spray; sprinkle with Parmesan cheese. Bake at 350° for 40 to 45 minutes or until chicken breasts are done. Serve immediately. Yield: 8 servings.

Marinated Asparagus Medley 2 lbs. fresh asparagus 1/3 cup chopped fresh parsley 1/3 cup sliced black olives 1/3 cup sliced stuffed green olives 1 (2 oz.) jar diced pimiento, drained 2 T. sliced green onions 1½ cups vegetable oil 1/2 cup red wine vinegar 2 tsp. lemon juice

1 tsp. Worcestershire sauce 1 T. dried whole basil 2 tsp. coarsely ground pepper 1 tsp. dried whole oregano 1/2 tsp. garlic powder 1/2 tsp. salt 1/4 tsp. sugar Bibb lettuce 12 to 16 large cherry tomatoes, sliced

Snap off tough ends of asparagus. Remove scales with vegetable peeler or knife, if desired. Cook asparagus, covered, in boiling water 6 to 8 minutes or until crisp-tender. Drain. Place asparagus in shallow dish. Arrange parsley, olives, pimiento, and green onions over asparagus; set dish aside. Combine oil and next 9 ingredients in jar. Cover tightly, and shake vigorously; pour marinade over asparagus. Cover and chill 8 hours. Line plates with lettuce leaves. Remove asparagus-olive mixture from marinade; arrange on lettuce. Place sliced tomatoes on lettuce. Yield: 8 servings.

Chocolate-Mint Cheesecake 2 cups chocolate wafer crumbs 1/4 cup sugar 1/4 cup butter or margarine, melted 4 (8 oz.) pkgs. cream cheese, softened 1 (3 oz.) pkg. cream cheese, softened 1⅔ cups sugar 5 eggs 1/3 cup green creme de menthe

1 T. vanilla extract 1/2 cup butter or margarine 3/4 cup cocoa 2¾ cups sifted powdered sugar 1/2 cup milk 1½ tsp. vanilla extract Garnish: chocolate marble leaves (directions below)

Combine first 3 ingredients; firmly press mixture evenly over bottom and 2" up sides of 10" springform pan. Bake at 325° for 7 minutes, and cool. Beat cream cheese at high speed of electric mixer until light and fluffy; gradually add 1⅔ cups sugar, beating well. Add eggs, beating just until combined. Stir in creme de menthe and 1 T. vanilla. Pour into prepared pan. Bake at 325° for 1 hour and 15 minutes (center may be soft but will firm when chilled). Let cool to room temperature on wire rack. Melt 1/2 cup butter in small saucepan; add cocoa, and stir until smooth. Remove from heat, and cool. Pour chocolate mixture into small mixing bowl; gradually add powdered sugar alternately with milk, beating at medium speed of electric mixer until smooth. Stir in 1½ tsp. vanilla. Spread mixture over top of cheesecake. Garnish, if desired. Yield: 10 to 12 servings.

Chocolate Marble Leaves To garnish Chocolate-Mint Cheesecake; paint and swirl candy coating on lemon balm mint leaves. The leaves curl gracefully because they are placed on a rounded object to cool. For the chocolate marbled leaves, select 12 to 14 nonpoisonous leaves such as mint, or rose. Wash leaves, and pat dry with paper towels. Place 1 oz. vanilla-flavored candy coating in a 6 oz. custard cup; microwave at medium (50% power)1 to 2 minutes or until coating melts, stirring after 1 minute. Stir a small amount of green paste food coloring into coating. Place custard cup in a shallow pan; pour hot water to a depth of 1/2 into pan, if desired, to prevent coating from hardening quickly. Set aside. Place 1 ounce chocolate-flavored candy coating in a 6 oz. custard cup. Microwave at medium 1 to 2 minutes or until coating melts, stirring after 1 minute; place cup in pan of water, if desired. Using an artist's brush, coat tops of leaves with green coating. Place three small dots of chocolate-flavored coating on leaves; using the tip of a wooden pick, draw lines through dots to create a marbled effect. Place leaves over a banana or other rounded object; let coated leaves stand at room temperature until coating cools and is firm. Reverse colors on remaining mint leaves. Grasp leaf at stem end, and carefully peel leaf away from coating.
