Korean War Veterans Honored By Peggy Johnson

The Shoppers Weekly published an article Wed, June 20 about the Korean War. In the article was a list of local fallen Korean soldiers. Ann Chappell, who is on the Centralia Veterans Committee, saw the article and got in touch with the Centralia American Legion. They found five Korean War veterans that were laid to rest in Elmwood Cemetery. Ann and her husband Jerry, along with Stella Schilling with the Elmwood Commission & Advisory Board, Margaret Hays with DAR (Daughters of the

American Revolution), and Bev Virobik, also with DAR, placed a flag and a wreath to honor each one of these soldiers on Monday, June 25. Ann was able to contact a first cousin to one of the soldiers, U.S. Army PVT Charles Pokojski, who died in Korea at just 19 yeas old (Oct. 15, 1933 – Dec. 23, 1952). Stanley Pokojski and his wife, Doris, attended the honoring of Charles. Stanley said that Charles had no more than finished training than they sent him to Korea to the front lines. Doris said,"His sister told

me that the enemy threw a grenade and Charles threw himself on it." The other honored Korean soldiers at Elmwood Cemetery were Orville L. Watts, Earl L. Copple, Roland E. Mitchell, and Elza E. Mitchell. Ann Chappell said the Veterans Committee needs more donations to help replace the flags that have been lost, stolen and deteriorated over the past five years. SINA Members Updated On Community Activities

The Southern Illinois Networking Association met at the Centralia Recreation Complex on June 28 with 15 members in attendance. President Mike Chambers began the meeting. Tina Suarez said the Centralia Rotary will have an auction on August 4 at the Elks Club. The proceeds will go toward batting cages at Rotary Park. Myra Bartlett gave an update on chamber news and happenings. She invited all to attend the summer concert series at the Carrillon Tower each weekend. There will be music, and food will also be available. Watch for future dates throughout the summer. Vicki Edwards gave a program at the June 21 SINA meeting on the Dog Park coming to Centralia. Plan on purchasing 50/50 tickets for equipment and other needs for the park. Also mark your calendars for the Dog Park Quarter Auction on July 22 at the VFW to support the future dog park. speaker for the meeting. He began by giving an update on his first year as chamber director. It has been a very productive year for him and the community. The Chamber partnered with Centralia BPW in hosting four classes on Leadership with great turnout. They are looking to host more classes in the future. Marcus wants to help all community organizations add more young community members to their membership to get them involved. The education committee has also worked on a science fair and real world challenge. Mr. Holland gave updates on the bridge closures in our area and is working closely with IDOT to let all know the best way to detour once the projects begin. He is looking into bringing more businesses and people to Centralia and other surrounding towns,

and spoke about how many people come into town on Amtrak. He also gave an update on the Balloon Fest this year. They are still looking for craft vendors and help at the entrance gates. If you would like to be a craft vendor go to the chamber website and fill out an application or contact the chamber office. Marcus and the chamber are partnering with Damon Harbison with SSM, George Evans with Kaskaskia College, and Tom Ashby and Dan Ramey with the City of Centralia. There will not be a SINA meeting on July 5. Future Presentations are Dennis Krupp on July 12 and Judge Erika Sanders on July 19. Virtual Reality Roadshow Coming to the Centralia Regional Library C ent ra lia Reg iona l Library District is excited to announce the “Lazerware Virtual Reality Road Show” is coming to the library at 515 East Broadway in July. This free program will provide customers with an opportunity to experience the ultimate in Virtual Reality (VR) equipment & applications. Participants will be able to choose between a variety of games, educational apps, field trips and adventures, including, but not limited to: • Google Earth VR – Walk through Tokyo, around the Eiffel Tower or

through the Grand Canyon • Ocean Rift – An underwater VR Safari. Swim with Manatees, Sharks, or Whales…even Dinosaurs • The Body VR – Journey Inside the Body to Learn about Cells and Anatomy • TiltBrush – Draw, Paint and Animate in a 3-Dimensional Workspace • VR Museum of Fine Art – Experience the World’s finest Art and Masterpieces The VR Experience will run from Monday, July 2 through Sunday, July 8 and will be set up downstairs, next to the circulation area. Paul Ferguson Serves As Grand Marshal For 2018 Fourth Of July Veterans Parade Centralia Mayor Tom Ashby in coordination with the Centralia Veteran Affairs Committee announced last week that Mr. Paul Ferguson had been chosen as this year’s Grand Marshal for the 8th annual 4th of July Veterans Parade. Mr. Paul Ferguson enlisted in the U.S. Army on January 11, 1943 at 18 years old and was assigned to security detail at Smyr na Air B as e in Tennessee guarding B-24 bomber aircraft. Centralians Don Geary and Clyde English, B-24 pilots, were stationed at Smyma at the same time. He was later transferred to infantry training. He was sent to Scotland in December 1944 on the Queen Mary along with 18,000 troops for service in Europe. After arriving in Scotland, he was transported to England by rail riding in one of the WWI 40/8 railcars which is the symbol of the 40 & 8. He was attached to the 8th Infantry Division of the First Army, commonly known as the “Golden Arrow” Division in February 1945 under the command of General Omar Bradley. He served in two major battles — the Ruhr Pocket in March 1945 and the Battle of Central Germany at the Elbe River in April 1945 where they met the Russians which generally concluded hostilities in Europe. Ferguson participated in the capture of 185,000 Germans who were taken to Lubeck, Germany to help rebuild the country. He returned from Europe in July 1945 and was assigned to Ft. Leonard Wood for training to participate in the invasion of Japan. The war in the Pacific ended in August so he was transferred to Key West Florida where he was discharged on February 28, 1946 and returned to Centralia. To quote Mt. Ferguson, "I served first in the Air Force, then in the Army, and lastly with the

pain and/or discomfort cramps can cause. Massaging the cramped muscle or applying ice or heat can alleviate the cramp and its associated pain. Calf or hamstring cramps may be alleviated by putting weight on the affected leg and bending the knee slightly. Such cramps may also be treated by sitting or lying down with the affected leg straight out and pulling the foot toward the head. To treat quadriceps cramps (those that occur in the front of the thigh), hold onto to something steady and pull the foot of the affected leg back toward the buttock. Preventing Future Cramps One of the most effective ways to prevent future cramps is to listen to your body when it’s sending you signals that it is fatigued. Overused muscles are vulnerable to cramps, so remember to include rest in your exercise regimen so muscles have time to recover. If your body feels overtaxed or fatigued before or during a workout, skip the workout or stop it immediately to reduce your risk of cramps or injury. Deficiencies in certain vitamins can directly or indirectly lead to muscle cramps. While the reasons behind the link between thiamine, pantothenic acid and pyridoxine deficiencies and muscle cramps is unknown, speak with your physician about how to include these vitamins in your diet if you have been experiencing muscle cramps. Cramps can be painful and derail athletes. Learning to prevent cramps can protect athletes and ensure they are not sidelined from their favorite activities.

Encourage A Love Of Physical Activity In Youngsters

Parents who resolve to exercise with their children may find their youngsters more receptive to the daily physical activity they need to promote long-term health.

According to the United States Department of Health and Human Services, children and adolescents should engage in physical activity for 60 minutes or more each day. While fulfilling those requirements might not have been a problem for kids who grew up before the dawn of the Internet, nowadays kids are spending less time playing outside and more time on their computers or other devices. That reality is problematic for parents who want their kids to embrace physical activity thanks to the positive impact that exercise can have on kids’ physical and mental wellbeing. Parents hoping to instill a love of physical activity in their youngsters

may find that taking a more active role by exercising with their kids is an effective way to get them off the couch and away from their computer screens. • Turn errands into exercise opportunities. Many parents take their children along with them when running errands. When such errands don’t necessarily require the use of a car, consider riding bicycles instead. Kids who otherwise don’t enjoy errands may now find them more fun, all the while fulfilling their daily recommended quotas for exercise and spending quality time with their parents. • Include kids in your own athletic pursuits. Parents might not be able

to take younger kids along with them to the gym, but that does not mean your youngsters must be excluded from all of your athletic pursuits. If you have any upcoming athletic activities or challenges on your schedule, such as a new recreational sports season or community fun run or 5K, let kids tag along as you train or practice. Parents of adolescents can inquire at their local gyms if they offer discounted memberships to teens. If so, take kids along with you on trips to the gym so they learn the value and benefits of daily strength and conditioning exercises. • Make more time to play. Parents may already have busy schedules, but finding time to play with

their kids is a great way to get youngsters to embrace physical activity. Kids might be reluctant to shoot hoops in the driveway if no one is willing to join them, but they will likely be far more willing to do so if mom and dad are willing to play with them. This is not only a good way for parents to ensure their kids get enough exercise, but also a great and fun way for moms and dads to make time for physical activity. • Recognize that physical activity does not have to mean organized sports. Some kids have no interest in team sports while others do not have the athletic ability to compete after a certain age. Parents who want their kids to exercise more should recognize that there are plenty of ways to be physically active that do not involve organized team

• Get out of the sun the moment you first feel irritation. Your skin may not be red, but irritation may be the first indication that you are being burned by the sun. • Take cool baths or showers to relieve the pain and heat in the skin. Cool, damp towels also can do the trick. • Use a moisturizing lotion with aloe vera. Avoid moisturizers with petroleum, as they will lock in heat. • The American Academy of Dermatology notes that sunburn may lead to dehydration. Drink plenty of water to keep your body well hydrated. • Blisters may occur if sunburn is particularly

He said he "feared the day would come when people would be more loyal to their party than their country." I fear that day has come. On to the new mouthpiece of the extreme liberals and the Democratic Party, Maxine Waters. Just after the extreme liberal action against Press Secretary Sanders and her family being asked to leave the Red Hen Restaurant in Virginia — which I found disgraceful, but who expects anything sane out of these people? — U.S. Rep. Maxine Waters got on the stump, and through a statement encouraged and incited violence and encouraged protestors to continue booing and harassing Trump supporters. She continued to say let's stay on

They should be confirmed by the midterm election, which I see as no problem. Even though the Democrats will do all they can to block it, it will get done. And speaking of midterms, as the extreme Democrats are doing a great job of destroying themselves, Trump has done a great job, and if it's about the economy, the Republicans should take it hands down. That's my early prediction. We very well may have been broken up since the first jail cell was built. American prisons do not have family prison cells for incarcerated criminals who have children. These criminals are American citizens. It is obvious that the media and Democrats do not care about breaking up American families. They must believe that illegal alien children are more important than American children. It would be great if intelligent Americans would remember the current media and Democrat theatrics when the time comes to renew their news subscriptions or vote.

see the greatest economy this country has ever seen under the current president. And I truly believe there's never been a base in this country like the current Trump base. On to the shooting of five innocent employees of the Capital Gazette in Washington last week. Last Thursday it was business as usual that day at the Capital Gazette. Just like any newspaper office, they were busy trying to hit a deadline. There were usually 11 people in that office. That day six were on vacation; five were killed, ranging from the ages of 65 to 34, much like our staff. All were beloved by their coworkers, family, friends and most likely their community as they sat on different boards, commissions, members of Chamber of Commerce, as well as other clubs and organizations to help their communities. I simply haven't much to say on this except this has rocked my soul to the core. I keep these fellow reporters, editors and sales reps in my thoughts and prayers, and I ask each of you to join me. Running The Race I have run a few races in my life and I have won a few and lost a few. I know the agony of defeat and thrill of victory. The writer of Hebrews pictures the believer’s journey to heaven as an athlete running a race. It’s the race of life. The race of life is not a sprint, but more like a marathon. The victor’s crown is not necessarily to the swiftest, but to those who endure and cross the finish line. The Holy Spirit reveals the key to running the race of life and gaining the victor’s crown. “Wherefore, seeing we also are compassed about with so great a cloud of witnesses, let us lay aside every weight and the sin which does so easily beset us and let us run with patience the race that is set before us. Looking unto Jesus, the author and finisher of our faith; who for the joy that was set before him endured the cross, despising the shame, and is set down at the right hand of the throne of God.” (Hebrews 12:1-2) Jesus finished his race in victory. How do we finish our race with victory? First — lay aside every weight and sin that would slow you down and entangles you. (Hebrews 12:1) Second — look to Jesus, the author and finisher of our faith. Keep your eyes on Jesus. Third — endure

your cross as Jesus endured his. Run the race with patience and perseverance. Let us focus on the vital key to running the race victoriously. Keep your eyes on Jesus! DON’T LOOK BACK. Keep your eyes on Jesus and his work on the cross for you. Centuries ago the peach was so rare and costly a commodity in Europe (it had to be imported by way of Oriental trade routes) that gardeners across the continent developed techniques to grow it themselves. No such problem existed in America. It's a matter of fact Thomas Jefferson proudly wrote to a friend, "We abound in the luxury of the peach, there being as fine here now as I've ever seen anywhere." When I did a lot of canning, July was the month for peaches. When this sweet succulent fruit was ripe enough, then it was off to the kitchen. One secret my grandmother gave me — among a million other lessons on life — was when canning peaches you need to put a peach seed or two in each jar. She said the reason was to keep them from turning brown and keep them as fresh as the day they were picked. And like always, she was right! Some of my favorite recipes are below.

Peach Shortcake 3 cups peeled, thickly sliced peaches 2 T. honey Shortcake: Sweet Biscuit Dough (made with nutmeg)

1 tsp. granulated sugar

Cream Topping: 1 cup heavy cream 2 T. confectioners’ sugar

1/4 tsp. ground nutmeg Fresh mint sprigs for garnish

In medium bowl, toss peach slices with honey and lemon juice to coat. Cover and refrigerate until serving time. Preheat oven to 425°F. On floured surface, roll out biscuit dough 1/2-inch thick. Cut in six 3-inch rounds with a biscuit cutter. Arrange biscuits 1 inch apart on baking sheet. Sprinkle tops with 1 tsp. sugar. Bake at 425°F for 12 minutes until golden brown. Cool on rack. Whip cream with confectioners’ sugar and nutmeg to stiff peaks. Cover and refrigerate until serving time. To serve, split biscuits in half horizontally. Place bottom halves of biscuits on 6 dessert plates. Reserve a few peach slices for garnish. Spoon remaining sliced peaches atop biscuit bottoms. Top with a dollop of whipped cream and then the biscuit tops. Garnish with spoonfuls of whipped cream, reserved peaches, and mint sprigs. Yield: 6 servings.

Sweet Biscuit Dough 1¾ cups all-purpose flour 2 T. sugar 2 tsp. baking powder 1/2 tsp. baking soda 1/4 tsp. salt

1/4 tsp. freshly grated nutmeg or ground cinnamon 3 T. shortening 2 T. unsalted butter, cut in small pieces 3/4 cup buttermilk

In large bowl, combine flour, sugar, baking powder, baking soda, salt, and spice. Mix well. With a pastry blender or 2 knives, cut in shortening and butter until mixture resembles coarse meal. Stir in buttermilk to form a soft dough. Turn out on well-floured surface. Knead gently with fingertips about 10 strokes until smooth. Do not overwork dough or biscuits will be tough. Yield: Six 3-inch or fourteen 2-inch biscuits. Pastry: 1¼ cups all-purpose flour 1/2 cup ground almonds 2 T. confectioners' sugar 1/4 tsp. salt

Peach-Almond Tart

Filling: 4 cups peeled, sliced peaches 2 T. orange juice 1/2 tsp. almond extract 1 T. cornstarch 3 T. granulated sugar

6 T. unsalted butter, cut in small pieces 1 egg yolk 3 T. ice water 1/4 cup sliced almonds 1 T. granulated sugar 2 T. unsalted butter, cut in small pieces

Combine flour, ground almonds, confectioners' sugar, and salt in large bowl. With a pastry blender or 2 knives, cut in 6 T. butter until mixture resembles coarse meal. Whisk egg yolk and water together in small bowl. Add to flour mixture, tossing with a fork until all is moistened. Gather dough into a ball. Form dough into a disk shape. Wrap in plastic wrap and refrigerate at least 30 minutes. On a lightly floured surface, roll out dough to 12-inch circle. Fit into 10-inch tart pan. Trim edges. Cover and refrigerate 1 hour. Preheat oven to 425 ° F. Line pastry with double thickness of foil. Fill with dried beans. Place on baking sheet. Bake at 425° for 15 minutes. Remove foil and beans. Continue baking pastry shell 3 to 5 minutes until lightly browned. Cool on rack. Preheat oven to 375°F. In large bowl toss peaches with orange juice and almond extract. In small bowl, combine cornstarch and 3 T. sugar. Mix well. Sprinkle over peach mixture and toss gently to combine. Arrange peach slices in concentric circles in cooled tart shell. Drizzle with any juice left in bowl. Top with sliced almonds and sprinkle with remaining 1 T. sugar. Dot with 2 T. butter. Bake at 375°F for 45 to 50 minutes until peaches are tender and juices are bubbling near center. Serve warm or at room temperature.
