Centralia Rotary Club Honors Longtime Member By Cathy Stuehmeier

On Monday, July 9, 2018 the Centralia Noon Rotary gathered to honor a friend to all and long time Rotary member for his outstanding service to our local community. The purpose of this meeting was to present our friend Nate Rothschild with the prestigious honor of lifetime honorary membership in the Centralia Rotary Club. Tina Suarez, president of the Centralia Rotary Club, presented Mr. Rothschild with a resolution recognizing him for his distinguished, meritorious service in the furtherance of Rotary ideas within the Greater Centralia Area for over 40 years of service including serving as Rotary President during the 1986 – 1987 year. Mr. Rothschild founded Mars Sales and Equipment Co. He worked tirelessly with the Centralia of Commerce. He was one of the founders and a board member of the Centralia Historical Society, and he oversaw this labor of love for many years. He served his country in the military during WWII in the U.S. Army.

Centralia Ballon Fest Searching For Impersonators

“Ambition is a dream with a V8 engine.”

This year’s Balloon Fest will feature contestants singing and impersonating their favorite artists. “With the success of last year’s Elvis Impersonator Contest, we are expanding the search to all artists! I know we’ll have an Elvis and a Johnny Cash, but will Cher, Michael Jackson, or Britney Spears show up?” asks Marcus Holland, Executive Director of the Chamber of Commerce. On Saturday, August 18, the Balloon Fest Impersonator Singing Contest will be held under the family picnic tent from 10:30 a.m. to 1:00 p.m. Contestants can provide music on CD or select from a list songs via karaoke. “We want to thank Jack Graham State Farm Agency, for sponsoring this contest. Because of his sponsorship, there are cash prizes for best vocal talent, best impersonator, and best overall p e r f o r m a n c e ,” s a y s Holland. Someone has said, “To err is human — to forgive is divine.” We all have times of failure in our life. When Jesus was arrested, put on trial, and crucified, most of his followers deserted him. Three times Peter denied even knowing Jesus before a little servant girl. He wept tears of repentance and God forgave him. But, like so many, Peter had a difficult time forgiving himself. After Jesus arose from the dead, he met Peter and the disciples on the shore of the Sea of Galilee and the divine son of God reached out his arms of love and restoration. Let’s learn how Peter recovered from humbling failure as we observe his actions in John 21. REPENT of failure. Peter wept tears of repentance when he realized he had denied his Lord. Judas sold Jesus out for 30 pieces of silver, but he didn’t repent. God is always merciful to those who sincerely repent of sin and failure. “Repent therefore . . . that your sins may be blotted out, so that times of refreshing may come from the Lord.” (Acts 3:19) RETREAT with fellow believers. Retreat means to withdraw. Jesus would pe-

riodically retreat with his disciples to a solitary place to be refreshed. Soon after the risen Lord had appeared to his followers, Peter said, “I’m going fishing.” (John 21:1-3) The other disciples replied, “We’ll go with you.” Jesus has ordained that his followers do life together. This is called church. We need one another for full recovery. Life’s experiences are more fun when you can share them with others. The body of Christ strengthens and supports one another as they worship the risen Lord. REACT in faith and obedience to the word of the Lord. The disciples had fished all night and came up empty. (John 21:5-6) Life doesn’t always come out as we expect it to. Jesus shouted out to them from the shore. “Cast your nets on the right side of the boat.” When they obeyed, they had a miracle catch. What a surprise! I love the word serendipity. It means, “the faculty of making happy and unexpected discoveries by accident.” I believe God delights in giving us serendipitous moments of delight, to help us in the recovery process as we learn to react in faith. RUN to Jesus — not away from him. Peter had

been running from Jesus, living in condemnation. When he realized it was Jesus on the seashore, he jumped out of the boat and swam to Jesus. Our human tendency is to avoid Jesus in our failures. But recovery requires the very opposite. Run to Jesus! (James 4:6-8) In every battle, God is teaching you to run to the cross and cry out to him for deliverance. REFRESH yourself by feasting with Jesus. When the disciples got to the shore, they saw Jesus had a fire going and had bread and fish for them. Breakfast with Jesus is the breakfast of champions. An old hymn says, “’Come and dine,’ the Master calleth, ‘come and dine;’ You may feast at Jesus’ table all the time.” Jesus has his living word to give life and renewal to those who will come to his table. REJOICE in the risen Lord. “They knew it was the Lord.” (John 21:10-14) When you know the living Savior, no one can dissuade you, nothing can defeat you. Ancient Job declared in his suffering, “I know my redeemer lives.” (Job 19:25) RECOMMISSIONED. Three times Jesus asked Peter, “Peter, do you love me? . . . Feed my sheep.” (John 21:12-14) Jesus was renewing, reinstating and recommissioning Peter. Rest assured, God is not done with you. God specializes in recovery and restoration. “If we confess our sins, he is faithful and just to forgive us our sins and to cleanse us from all unrighteousness.” (I John 1:9) REFOCUS on your mission. (John 21:19-22) Peter questioned Jesus about John’s assignment. Jesus told him to mind his own business. “You follow me,” Jesus said. We all have different callings and gifts. Don’t look at others — refocus on Jesus and your own mission. Recovery continues when we live as if Jesus is returning soon. He is! Follow Jesus.

Another whirlwind week. Let me start with President Trump's pick to fill Justice Kennedy's seat, Brett Kavanaugh, who has an impeccable background. Already, the Senate Democrats have outlined a strategy for the Kavanaugh confirmation fight. It's amazing how quickly the far left stopped jumping up and down on the issue of child separation and open borders. Anything to destroy the Trump agenda. The bottom line is there are 50 GOP votes and 49 Democratic votes available. I can't see one Republican voting no, and as it stands, there are at least three Democrats leaning toward Kavanaugh. The sad thing is there are some good conservative Democrats that will take a hit for the craziness going on from the far left. In my opinion, the job of a Supreme Court Justice is to uphold the Constitution and not to make laws. The reason the far left is going crazy is they don't want judges to follow the law; they want them to rule in their favor. On to the Russian meddling. Last week Robert Mueller indicted 12 Russian military officials for the DNC hacking. The crime: They allegedly targeted 300 people affiliated with Clinton's campaign and Democratic political organizations including Clinton's campaign chairman, John Podesta. Once inside, they searched key words like "Trump" and "Benghazi" — among others — so they could steal the most damaging files. Hmmm. Maybe they have the 33,000 emails — some classified — that Mrs. Clinton destroyed! The Russians, I'm sure, wanted voting data, and the indictment alleges that. At one point the Russian hackers, only identified as Organization One, responded that they believed that Trump had a slim to no chance of winning against Clinton, so they focused more on primary Democratic candidates Bernie Sanders and Hi l lar y Clinton, the favorites to win. The hackers used a variety of fake names online, including American names. In other words, they stole personal information successfully. All this happened prior to 2016 under President Barack Obama, and Obama was informed! And he did nothing, absolutely nothing. U.S. Deputy Attorney General Rod Rosenstein said last week of the indictments, "There are no Americans involve at this time," which I found interesting. Saying "at this time" left an opening for "more to come." And to that I agree, because in researching the indictments section, it shows the Russians interacted with several Americans. There was at least one U.S. Congressional candidate, a lobbyist who received information on Democratic donors. There were also WikiLeaks and a journalist, among others. So do I believe Mueller's investigation will continue? You bet! In conclusion, last Friday's hacking indictment will ser ve one major purpose, to shine a light on Russian officials attempting to harm American democracy! Did Putin know? In my opinion, yes; he's a man that makes everything his business. On to President Trump's meeting with Vladimir Putin. What does Putin

want out of this meeting on Monday, July 16? In my opinion, he wants legitimacy on the world stage. The Democrats have come out strongly against the meeting between Trump and Putin. The Republicans have stayed almost silent. One thing for sure is Putin appreciates strength. He's gotten by with bloody murder under past administrations. He's invaded three of his neighbors. Syria is an example of what a horrible man he is and demonstrates what he's gotten by with. And there's so much more. So, do I think Trump should cancel? I refer back to what I've heard a hundred times, "Keep your friends close and your enemies closer." Trump is no fool, so with that said, I'll leave it there. Last but not least, for anyone who watched the hearings of Peter Strzok, the lead FBI investigator, the evidence was overwhelming that there was bias against Trump. The audience had to find it disgusting, of course. Strzok rejected accusations of anti-Trump

I found it hard to watch, not only with Strzok's display of arrogance, but that he hardly answered one question, with the Democrats' help as they constantly interfered during the whole proceeding. The bottom line is Strzok's texts alone show what he is: A liar, a cheat, and un-American. Yet keep in mind, Congress still hasn't gotten documents from the FBI that they've requested, thousands upon thousands of documents! The solution at this point: Donald Trump needs to declassify the documents. Then there will be no recourse but to release them. A quote to remember: "The trouble with Socialism is that eventually you run out of other people's money." — Margaret Thatcher Until next week.

Spanish Tapas A trip to Spain will introduce you to the rich traditional tapa. A tapa is an appetizer or snack in Spanish cuisine and translates to a small portion of any kind of Spanish cuisine. Tapas may be cold or hot. The recipes below are a mixture of vegetable and vegetarian dishes that are delicious bites to eat in their own right, and others are great side dishes.

Zucchini Fritters With Pine Nut Dipping Sauce 1 lb. baby zucchini 3 T. all-purpose flour 1 tsp. paprika 1 large egg

2 T. milk Corn oil, for shallow-frying Coarse sea salt Pine Nut Dipping Sauce

Pine Nut Sauce: Scant 2/3 cup pine nuts 1 garlic clove, peeled 3 T. Spanish extra virgin olive oil 1 T. lemon juice

3 T. water 1 T. chopped fresh Flatleaf parsley Salt and pepper

Make the Pine Nut Sauce first. Place pine nuts and garlic in food processor and process to form a puree. With motor still running, gradually add olive oil, lemon juice, and water to form a smooth sauce. Stir in parsley and season to taste with salt and pepper. Transfer to serving bowl and reserve until required. To prepare zucchini, cut them on the diagonal into thin slices about 1/4" thick. Place flour and paprika in plastic bag and mix together. Beat egg and milk together in large bowl. Add zucchini slices to flour mixture and toss well together until coated. Shake off excess flour. Heat corn oil in large, heavy bottom skillet to a depth of about a 1/2". Dip zucchini slices, one at a time, into egg mixture, then slip them into hot oil. Cook zucchini slices in batches in single layer so they do not overcrowd skillet, for 2 minutes, or until crisp and golden brown. Using slotted spoon, remove zucchini fritters from skillet and drain on paper towels. Continue until all zucchini slices have been fried. Serve zucchini fritters piping hot, lightly sprinkled with sea salt. Accompany with a bowl of dipping sauce. Serves 6 – 8.

Bring large pan of lightly salted water to boil. Add cauliflower florets, then reduce heat and simmer gently 5 minutes. Drain well, then refresh under cold running water and drain again. Beat egg and milk together in bowl until combined. Gradually whisk in flour and 1 tsp. salt. Meanwhile, heat vegetable oil for deep-frying to 350-375°F or until a cube of bread browns in 30 seconds. Dip cauliflower florets in batter and drain off excess, then deep-fry, in batches if necessary, for 5 minutes, or until golden. Drain on paper towels, then serve immediately in warmed bowls with Tomato & Bell Pepper Salsa. Serves 4 – 6.

Battered Shrimp & Cilantro Dip 12 raw Mediterranean shrimp 1 egg 1/2 cup water Generous 3/4 cup all-purpose flour Cilantro Dip: 1 large bunch of cilantro, coarsely chopped 3 garlic cloves, chopped 2 T. tomato paste 2 T. lemon juice

1 T. grated lemon rind 1½ T. sugar 1 tsp. ground cumin 5 T. olive oil

First make cilantro dip. Place cilantro, garlic, tomato paste, lemon juice, lemon rind, sugar, and cumin in food processor or blender and process until combined. With motor still running, gradually add olive oil through feeder tube until fully incorporated. Scrape into bowl, then cover with plastic wrap and let chill until required. Pull heads off shrimp and peel, leaving tails intact. Cut along the length of the back of each shrimp and remove and discard the dark vein. Rinse under cold running water, then pat dry with paper towels. Whisk egg with the water in small bowl. Gradually sift in flour and cayenne, whisking constantly until smooth. Heat vegetable oil in deep-fat fryer or large pan to 350-375°F or until a cube of bread browns in 30 seconds. Holding shrimp by tails, dip them into batter, one at a time, shaking off any excess. Add shrimp to oil and deep-fry for 2-3 minutes, or until crisp. Remove with slotted spoon and drain well on paper towels. Serve immediately, garnished with orange wedges. Hand round cilantro dip separately. Serves 4.

Pickled Stuffed Sweet Peppers 7 oz. Cuajada cheese, Queso del Tietar or other goat's milk cheese 1 T. finely chopped fresh dill

14 oz. pickled sweet peppers or pimientos del piquillo, drained Salt and pepper

Cut cheese into pieces about 1/4" long. Slit sides of sweet peppers and deseed, if you like. Stuff peppers with cheese. Arrange stuffed peppers on serving plates. Sprinkle with dill and season to taste with salt and pepper. Cover and chill until required. Serves 6. *** Until next week, Au Revoir! —Elizabeth Fenton

SINA Meets At Centralia Area Historical Museum The SINA program on Thursday, July 12, 2018 was held at the Centralia Area Historical Museum. The Museum Director Allison Austin provided information about the museum and the initiatives that it will be undertaking throughout the year. The emphasis of the museum is public awareness and education, and they are striving to market the museum to the public in local areas as well as tourists. The pro-

grams will focus on getting information out to the public and to the schools regarding the eclectic collection of artifacts in the museum. The Board is currently promoting a fundraiser to restore the CN caboose, and they will continue with fundraising and giving campaigns into the future. Youthbuild Program Now Accepting Applications The YouthBuild program of Marion and Jefferson Counties is currently taking applications for youth between the ages of 17 and 24 years old in need of their high school equivalency (HSE) diploma. Applications can be submitted from now until Aug. 13, 2018. Each YouthBuild cohort is 6 months in duration. Transportation can be provided. At the end of the cohort an additional 12 months of aftercare is pro-
