I was fortunate I was taught early on by a mother, grandmother and great grandmother that knew the art of canning and pickling. The art of canning has changed very little in the last 200 years. Below are some basic instructions as well as some recipes to inspire you. Go ahead and try your hand at it; there's nothing more satisfying than looking at your efforts lined up on the shelves.

1. LEARN IT. When using the most up-to-date information, canning is safe and satisfying. The USDA Guide to Home Canning and the Ball Blue Book are two easy-to-follow resources for canning how-to. 2. CHOOSE IT. Fruit and vegetables just at their peak of ripeness are best for canning. Produce that is overripe, bruised, or spoiling won't taste as good and could promote dangerous bacterial growth. 3. PLAN IT. Rather than attempting to preserve huge quantities all at once, try to keep canning projects manageable and safe by packing only about eight jars of food per each canning session. 4. STORE IT. Thoroughly rinse and dry all sealed jars before placing in the pantry. Any questionable seals and non-USDA-recommended jars should be reserved only for short-term refrigerator storage. 5. MONITOR IT. Label jars to help ensure food safety. Include the food type and canning and expiration dates. Perfect Strawberry Preserves 4 cups small strawberries (2 pints), washed and hulled

1½ T. cider vinegar (5-percent acidity) 4 cups sugar

Make the preserves: Combine strawberries and vinegar in a large saucepan. Bring the mixture to a boil over high heat, shaking the pan occasionally, for 3 minutes. Add the sugar and bring to a full boil. Continue to boil for 6 minutes, occasionally working the pan in a circular motion. Remove from heat, cover, and allow to stand overnight. Process the jam: Sterilize eight 1/2 pint jars and keep hot. Bring the strawberry mixture to a boil over high heat and ladle into the hot jars, leaving 1/4 inch headspace. Securely cap each jar and process using the boiling-water canning method for 10 minutes. Store in a cool, dark pantry for up to 1 year. Makes 8 half-pint jars.

Bread & Butter Pickles 2 lbs. pickling cucumbers (about 16), sliced into 1/2-inch rounds 2 T. kosher salt 2 cups cider vinegar (5-percent acidity) 1 cup dark brown sugar 3/4 cup sugar

2 tsp. dill seed 2 tsp. black peppercorns 2 tsp. mustard seed 1/2 tsp. ground clove 1/2 tsp. allspice berries

Make the pickles: Toss the cucumbers and salt together in a colander and let drain for 90 minutes. Rinse cucumbers thoroughly in cold water, drain, transfer to 2 clean one-quart jars, and set aside. Combine remaining ingredients with 3/4 cup water in a large saucepan over medium-high heat. Heat until sugar dissolves and mixture just comes to a boil-about 10 minutes. Pour hot liquid over the cucumbers until completely covered. Allow the mixture to cool to room temperature, cover, and refrigerate for up to 2 months. Makes 2 one-quart jars.

Make the relish: Cut the corn off the cobs and scrape the corn milk from the cobs. Place the corn, its milk, and all remaining ingredients in a large stockpot and bring to a boil over high heat. Reduce heat to medium low and simmer for 10 minutes. Process the relish: Sterilize 6 one-pint jars and keep hot. Pour the hot corn relish into the hot jars, leaving 1/4 inch headspace. Remove any air bubbles, securely cap each jar, and process using the boiling-water canning method for 15 minutes. Cool jars, check for proper seals, and store in a cool, dark place for up to 1 year. Open Air Artist Captures The Moment

Meet Spencer Meagher, plein air artist. The French phrase plein air means “open air” and is used to describe artists who do their work on location instead of inside a studio. Meagher has called Southern Illinois his home for thirty years. For the past decade, he has painted scenes in our local communities and sold them through his website and art events. On the day of this interview, the subject of his painting was Dancing Girl by Alexander Zeitin, a sculpture of a leaping woman on the grounds of Cedarhurst Center for the Arts. “We don’t want to create a photograph of her,” Meagher explained. “We want to create an impression. We want to capture the moment.” He rinsed his

brush and proceeded to paint and chat. His interest in plein air art began when he attended an art show in Indiana, where he was surprised to find more than 120 artists displaying this type of work. Meagher was captivated and started setting up his easel in the throb of everyday life. “You get to see someone’s community with fresh eyes,” he said. “People are amazed at what we see that they had never thought of as being beautiful.” People are amazed, and interested in learning the technique. He currently teaches weekly classes in Mt. Vernon, but he has also been approached by artists in Italy and Croatia, inviting him to teach workshops abroad.

Jefferson County Historical Society Working To Restore Past Lieutenant Governor's Grave There is a lot of history in Mt. Vernon’s Old Union Cemetery. Established in 1820, it is the final resting place of many of Jefferson County’s pioneers and early historical figures. Prime among these are the graves of two Lieutenant Governors of Illinois – Zadok Casey who was elected in 1830 and Stinson Anderson who took office in 1838. But while Zadok Casey’s grave plot is dominant in the cemetery with a large tombstone and a wrought iron fence, Stinson Anderson’s grave site is hardly noticeable. In fact, his grave marker for many years was lost to sight as it had fallen down and was

hidden by brush. The Jefferson County Historical Society is working to restore Stinson Anderson’s grave site and bring his historical importance to the notice of the people of Jefferson County and Mt. Vernon. Members of the historical society located his grave stone, but found that it had broken in such a way as to be impossible to be fixed and reset. Therefore, the society is purchasing and installing a replacement stone. The original 1857 marker will be displayed inside the Schweinfurth Museum and Interpretive Center adjacent to Old Union Cemetery on North

Trump says there's never been a president as tough on Russia as he has been, it's not just rhetoric, but is the truth. This administration has been tougher on Russia than any president in the post-Cold War era. In military spending alone, Trump sought to add $1.4 billion for Fiscal Year 2018 to the European Deterrence Initiative, a military effort to deter Russian aggression. That's a 40% increase from the last year of the Obama administration. This president also agreed to send lethal weapons to Ukraine, a step Obama resisted. Trump also gave our forces in Syria more leverage to engage with Russian troops. The Trump administration has also imposed sanctions on dozens of Russian government officials. Trump has aggressively promoted U.S. energy exports. And just last week, even though Trump's actions speak louder than words, he said, "If we could develop a relationship which is good for Russia, good for us, good for everybody, that would be great." And to that I agree. And who would disagree, except the far left, who have been upset since Trump won, without Russian interference as much as the left would have you believe. Trey Gowdy III, a former

federal prosecutor serving as the U.S. Representative from South Carolina, said last Sunday morning he has not seen one shred of evidence of collusion and that this President has not colluded with Russia and neither has anyone else. Going back to what Trump has said all along, "This is nothing more than a witch hunt." On to the new mouthpieces of the Socialist Democratic Party, Bernie Sanders and Alexandria Ocasio-Cortez. When I say that, trust, I'm not putting all democrats in that category. There are still, fortunately, some conservative democrats left. So less than four weeks after stunning the political establishment in a New York House primar y, 28-year-old s o cialist Alexandria Ocasio-Cortez and her sidekick, former presidential candidate Bernie Sanders stepped on the national campaign stage from New York to the Heartland. Their platform is pure socialism, pointing out "change is tough," when it comes to what they stand for, like forgive all student loans, get rid of ICE, open borders, free housing for all, ending capitalism, and medicare for all. In my opinion, they should both go to Venezuela. Welcome to the far left! I wonder what our founding fathers would think. I know what I think, and it's not printable. In closing, the 2018 election is just over 100 days away. If the far left keeps it up, they'll give this one away, especially when the 28-year-old socialist, Ms. Cortez continues to look and sound like an idiot. Her latest comment was, "The reason the unemployment rate is so low is everyone has two jobs." Someone needs to muzzle her. Until next week. there are many ways to God and that one does not need the cross to make it to heaven. Some churches have taken down all emblems of the cross so as not to offend visitors or seekers. Many preachers never mention the cross of Christ in their sermons. The devil must be smiling with glee, for he hates the cross. The Bible reveals that without the shedding of blood there is no remission of sins. (Hebrews 9:22; Matthew 26:28) The cross is the central theme of the Bible. The apostle Paul preached and wrote of the cross perhaps more than any other person. Consider these aspects of the cross. THE PREACHING OF THE CROSS. Paul

The Cross I have a beautiful cross in my office. It was given to me by a friend in Texas, who had carved it from a mesquite tree. One day, to my dismay, I noticed a pile of white power-like substance around the base of the cross. I swept it up, but a few days later there was another pile. I called my friend Dub Hayes, who owns a pest control company, and asked him about what could be happening to my cross. He explained that no doubt there was a certain beetle that was eating on it from the inside out. He offered to stop by and treat it for me. There are many enemies of the cross. The so called emerging church teaches that

declares, “For the preaching of the cross is to them that perish foolishness; but unto us which are saved it is the power of God.” (I Corinthians 1:17-18) Fancy speech, fables, and folly can’t save a sin sick soul, only the preaching of the cross of Christ can. Only the precious blood of Jesus could purchase our redemption. (I Peter 1:19) THE OFFENSE OF THE CROSS. The cross is an offense to the world. (Galatians 6:11) The scriptures say, “Christ has redeemed us from the curse of the law, being made a curse for us: for it is written, cursed is everyone that hangs on a tree.” (Galatians 3:13) Jesus bore the shame and curse of sin

for all men. (Isaiah 53:5) Many wear a cross around their neck, but I ask you, do you know the man who died on that cross for you? THE GLORY OF THE CROSS. I tremble at this verse, “But God forbid that I should glory save in the cross of our Lord Jesus Christ, by whom the world is crucified unto me and I unto the world.” (Galatians 6:14) The cross changes everything – EVERYTHING! The old hymn “Near the Cross” says, “In the cross, in the cross, Be my glory ever . . .” THE DEATH OF THE CROSS. “And being found in fashion as a man, he humbled himself and became obedient unto death,

even the death of the cross.” (Philippians 2:7-8) Do you understand what price Jesus paid for your salvation? The death on the cross. Don’t just wear a cross, we are called to be crucified with Christ to our flesh and to daily bear our cross as his disciples. (Galatians 2:20; 5:24; 6:14; Romans 6:6) THE PEACE OF THE CROSS. “And having made peace through the blood of his cross, by him to reconcile all things to himself.” (Colossians 1:20) Peace with God is yours only through faith in the blood of Christ shed on the cross. We find shadows and prophetic types of the cross all through the Old Testament. One such example

is the law of the cleansing of a leper. The cleansed leper was to come to the priest and bring two birds (probably doves) with him. One bird was slain and then cedarwood, scarlet, and hyssop was to be sprinkled with the blood under running water, as well as on the live bird. The live bird was then released. What a vivid image of the atonement and cleansing of the cross. (Leviticus 14:117) Do you know the one who died on the cross for the sins of the world?
