Rotary Membership Foundation Seminar Rotarians from across southern Illinois gathered for the Foundation and Membership Seminar sponsored by Rotary District 6510 on July 28 at the Crossroads Community Hospital in Mt. Vernon, Illinois. In attendance, members of The Rotary Club were introduced to many new ideas as well as plans for the upcoming Rotary year. Current District 6510 Governor Janice Alka applied Rotary’s theme of “Be the Inspiration” to this event. Guest speaker Past District Governor Carl Chinnery discussed using the Rotary Foundation to strengthen membership as well as the importance of eradicating polio. District Membership/Retention coordinator Mary Harvey focused on tips regarding how to grow and keep members while District Foundation Director Lanny Lenker talked about Rotary Foundation donations as well as the fight against Polio. Lanny also awarded the clubs that applied for grant projects this year their checks from the District. District 6510 has awarded almost $50,000.00 to clubs this year in Southern Illinois.

Area Boy Competes In Sr. Honda Championship Ten-year-old Braxton Davis, son of Ben and Chelsey Davis of Centralia, recently continued his quest for the Sr. Honda Championship as he had a two-day race weekend. Last Saturday six cars started and he finished third in his feature. In Sunday's heat number one Braxton started seventh and fin-

ished second. In heat number two he won. With the two heats scored together, that put him on the pole position for the feature, with seven cars scheduled to start. Braxton took off and never looked back, bringing home his fifth feature win for the 2018 year.

A Fine Swine BBQ & Pizza Opens In Mt. Vernon On Tuesday, August 21, the Mt. Vernon community welcomed A Fine Swine BBQ & Pizza to the neighborhood. After experiencing great success with the original barbecue restaurant in New Baden, owner David Stidham has ventured further east with his award-winning recipes. Located at 330 Broadway (formerly Papa John’s), the team of A Fine Swine plans to put the pizza ovens to creative use, developing even more signature flavors.

Hopefully, the new school year has begun to settle in for all! Last week we did easy, healthy meals for the family and have had requests for more. So here we are again with some more of my favorites.

Chicken Mozzarella

Crowds enjoyed live music and much more. All proceeds from the event were earmarked for the Wounded Warrior project.

6 oz. ditalini pasta or other 1 medium zucchini (about 8 oz.), small macaroni halved lengthwise and thinly sliced Shopper's Weekly Staff Photo 1/2 tsp. dried thyme 1 cup coarsely diced red onion 1/2 tsp. dried basil 1/4 cup defatted chicken broth 1/8 tsp. salt 1/4 cup water 1/8 tsp. garlic powder 1 can (10 oz.) red kidney beans, 1/8 tsp. crushed red pepper flakes rinsed and drained 8 oz. thin-sliced chicken breast 3 oz. shredded part-skim mozzarella cutlets, cut into strips cheese 1 tsp. olive oil 1 T. chopped fresh Italian parsley 2½ cups halved cherry tomatoes (optional) Bring a covered medium pot of water to boil over high heat. Add pasta, return to boil and cook 5 to 8 minutes, or according to package directions until al 'dente. Drain in colander and set aside. While pasta is cooking, in a cup, crumble together 1/4 tsp. thyme and 1/4 tsp. basil with salt, garlic powder and red pepper flakes. Sprinkle seasonings over both sides of chicken strips. Brush large, heavy nonstick skillet with oil and heat over medium- high heat. Add chicken strips and saute about 2 minutes per side, or until lightly browned and cooked through. Transfer cooked chicken to clean plate. Add tomatoes, zucchini, onions, broth, water and remaining 1/4 tsp. thyme and 1/4 tsp. basil to skillet, and toss to blend well. Simmer, tossing frequently, Shopper's Weekly Staff Photo 4 to 5 minutes, or until tomatoes have collapsed and vegetables are tender. Add beans and simmer 2 to 3 minutes, or until heated through. Stir in drained pasta. Place chicken on top of pasta and vegetables; pour any chicken juices that have collected on plate over chicken and sprinkle with cheese. Remove from heat, cover and let stand 3 to 4 minutes, or until cheese is melted. Sprinkle with parsley, if desired.

6 oz. elbow macaroni 1/2 tsp. freshly ground black pepper 1/3 cup chopped fresh cilantro 1 medium green bell pepper, diced 1/4 cup hot or medium salsa 1 medium yellow or red bell pepper, 3 T. reduced-fat sour cream diced Grated zest of 1 lime 2 oz. shredded sharp Cheddar cheese 2 T. fresh lime juice 1/2 cup sliced scallions 1 tsp. ground cumin Bring a large covered pot of water to boil over high heat. Add pasta to boiling water, return to boil and cook 7 to 9 minutes or according to package directions until al dente. Drain in colander and rinse under cold running water; drain again. While pasta is cooking, in salad bowl, whisk together cilantro, salsa, sour cream, lime zest and juice, cumin and black pepper. There are five keys that help me memorize and activate scriptures: 1) Read and listen to the scripture; 2) Ruminate or meditate on the scripture passage; 3) Re-imagine the scripture in your mind; 4) Remember or memorize the scrip-

ture; 5) Repeat the scripture verbally and often. Repetition is a key. Repeat the scripture as a prayer. The Lord’s Prayer contains six petitions – three concerning the holiness and will of God and three in taking our personal needs to God. We should not pray The Lord’s Prayer in a ritualistic or rote manner, but as a model guideline in how and what to pray for. Pray these six petitions. OUR FATHER IN HEAVEN. (Matthew 6:9) We put our focus on God as our heavenly Father who loves us and cares for us. He desires an intimate personal relationship with his children. He delights in giving them gifts and meeting their needs. (Luke 11:9-13) HALLOWED BE THY NAME. Prayer involves worshiping God for he is worthy. To “hallow” his name is to revere his glorious name and praising and exalting his name. This is how the psalmist David

instructed us to enter into God’s presence. (Psalm 100) THY KINGDOM COME. (Matthew 6:10) A friend of mine wears a t-shirt that reads – “Bringing Heaven to Earth”. Heaven invades earth when we pray. We pray for the spiritual manifestation of the kingdom of God in hearts, lives, and situations. We also pray for the kingdom of God to come to earth with its ultimate fulfillment in the future, when King Jesus comes to rule and reign on earth. THEY WILL BE DONE. (Matthew 6:10) We must sincerely desire and pray that God’s will be done in our lives and on the earth. (Matthew 6:33) Pray that God’s will as revealed in the Word of God be done (i.e. salvation, healing, and preaching the gospel throughout the world.) OUR DAILY BREAD. Jesus taught us to pray for our daily needs trusting our heavenly Father to supply them. (Philippians 4:19) FORGIVE US OUR SINS AS WE FORGIVE. (Matthew 6:12) In prayer, we confess our sins and ask forgiveness. (I John 1:9) We must also forgive those who have harmed us. Jesus said, “For if you

forgive men their trespasses, your heavenly Father will also forgive you: But if you forgive not men their trespasses, neither will your Father forgive you.” (Matthew 6:14-15) On the cross Jesus prayed for those who crucified him, “Father, forgive them; for they know not what they do.” (Luke 23:3) Forgiveness is vital to your physical health, spiritual health and eternal destiny DELIVER US FROM EVIL. (Matthew 6:13) Satan plots evil against God’s children. We must not forget to pray for God’s deliverance and protection. (Psalm 92; Matthew 12:18) FOR THINE IS THE KINGDOM AND THE POWER, AND THE GLORY. (Matthew 6:13) We should begin and end prayer with thanksgiving, giving glory to God for answered prayer. Remember the true proof that you believe in prayer is that you actually pray. Never underestimate the power of prayer. One small prayer can change your life. Pray the Lord’s Prayer every day. It will transform your life.
