W
ayne Turett, the founder and principal of the New York City-based Turett Collaborative Architects TCA, has been known to design apartments with a fair amount of razzle-dazzle. He once installed a curved stainless
steel slide in an East Village duplex. Another time he accompanied the owner of an Upper East Side condo to a town high in the Swiss Alps in search of a stone destined for a thirty-foot-high interior wall. Yet it wasn’t until a few years ago that Turett finally created a home of his own. The project began when he chanced upon a piece of land for sale in Greenport. Turett is a committed sailor and he and his wife had kept a weekend retreat in that town for years. On learning that the nearly half-acre property stretched all the way down to the water and had its own dock, he made an offer without delay. It was 2014 and although he didn’t know it at the time, he would spend the next four years working on the project in fits and starts during time carved out of his architecture practice. Designing an apartment building or drawing up plans for a gut renovation is one thing; creating a house from the ground up is quite another. Houses, Turett notes, have a special appeal for architects ‘because they are like sculptures.’ Indeed, the interior of the 2,400-square-foot two-story and cellar structure has a sculptural quality. Tellingly, it has no razzle-dazzle whatsoever. ‘My personal taste runs toward the minimal,’ says Turett, who imbued the house with a Scandinavian aesthetic. That sense of style comes through in his design choices, in the oiled wide-plank pine floors, in the palette

of neutral colors, and in the absence of ornament. The space reflects the intangibles that Turett and his family care about: loads of natural light, durability, and a sense of comfort and ease (no one ever worries about scratching a kitchen countertop in his house). They also enjoy low heating and cooling bills that average about $150 a month and regular infusions of fresh air thanks to the passive house techniques and mechanical ventilation system that Turett incorporated into the design. An airtight building envelope, proper insulation, and the careful placement of windows — to inhibit solar gain in summer and encourage it in the winter — helped to create an ultra-efficient house.

They also offer several stations: a sushi station with custom maki and hand rolls, taco station, dumpling station, slider station, macaroni and cheese station, and, naturally, a raw bar station boasting local clams and oysters. PLATED SIMPLY Chef Tom Schaudel, his daughter Courtney, and hospitality guru Adam Lovett are behind this Mattituck-based catering company, which can execute small and large events. Menus are customizable, but a sample from a recent event offers basil-basted corn-onthe-cob, Dijon and dill-scented new potato salad, mustard-glazed roast salmon, hot dogs and hamburgers, maple-bourbon barbecue ribs, and warm apple crisp with cinnamon gelato. The catering company also offers cocktails, like the Kentucky Sangria, made with Jack Daniels, Mathilde peach, lemon juice, homemade cinnamon syrup, and Malbec.

f you spend any time around flowers in a garden you’ve probably noticed bees and butterflies flitting around them and stopping to sip their nectar. They are also performing an essential service for us – when they visit flowers pollen grains stick to them and get transferred to the next flower they visit – that’s pollination, and it’s essential for many plants to produce the fruits, vegetables and nuts that we eat. According to the Pollinator Partnership (visit their website, www.pollinator.org) bees, butterflies, birds, beetles, bats and some small mammals are responsible for bringing us about one-third of our food. It is estimated that 75% to 95% of all the flowering plants on the planet need help with pollination. Pollinators have become endangered – the biggest threats include loss of habitat as the native plants they depend on are replaced by highways and streets, lawns and plants imported from other parts of the world that aren’t food sources for pollinators here.

Include a variety of plants in your landscape – flowers in different colors that bloom at different times in spring, summer and fall. Red flowers are attractive to hummingbirds – which not only help to pollinate them but are also delightful to watch. Even if your garden is in pots, tubs or window boxes on your deck or patio, it can still attract pollinators. Plant the flowers in clumps, not just one or two, and include a variety of flower colors and shapes. Try not to use pesticides on your property, or at 26
Dill is a classic in sunny herb gardens – its fine-textured leaves are versatile in the kitchen. Pollinators are drawn to the flat clusters of flowers that appear in summer, and eventually produce the seeds we know in the kitchen as dill seed. Goldenrod blooms in late summer and fall – you’ve probably seen it growing wild along the roadside. Varieties suited to flower gardens are pretty companions for asters and chrysanthemums. In the garden give goldenrod a sunny spot. Lavender is loved for its fresh fragrance. It grows 1 to 3 feet tall and produces wands of tiny purple blossoms in midsummer – heavenly planted in masses alongside a path. Purple Coneflower, or echinacea, bears daisylike purple-pink flowers with bronzy brown centers that slowly elongate and look like pincushions. In a sunny welldrained spot it blooms through much of the summer.
The website of the USDA (US Department of Agriculture) recommends some ways to support the pollinators that are essential to our food supply: Add some plants to your landscape that support pollinators by producing pollen and/or nectar. Trees and shrubs such as blueberry, cherry, plum, dogwood, willow are some examples. Try to include them in your landscape, and grow some of the plants described below in your garden.

Here are some plants to grow in your garden to help pollinators: Beebalm produces summer flowers with bracts in shades of red, pink, purple and white atop tall, straight stems lined with pairs of aromatic green leaves. Black-eyed Susan is a summertime classic in East End gardens. The daisy-like flowers can be orangey gold to a rich golden yellow, depending on the variety, with a prominent round center that is dark brown in most varieties. Sweet Alyssum is a popular edging for flower beds, pots and windowboxes, where its clusters of tiny white flowers tumble over the edges. Plants bloom from spring to fall, attracting pollinators and beneficial wasps that prey on aphids and other pests. Thyme, a favorite in herb gardens and kitchens, grows about 6 to 12 inches high, and creeping thyme can go between paving stones in a sunny path. Plant thyme in sunny, well-drained soil. Yarrow’s flat-topped clusters of tiny flowers bloom atop tall stems in summer, in bright gold, soft yellow, pink, white, red and burnt orange. These sun lovers can tolerate hot, dry conditions in average soil.

A HISTORY OF PROHIBITION AND SPEAKEASIES ON THE EAST END BY ALICE PHILLIPS
W
hat could be the connection between the Canoe Place Inn in Hampton Bays, Claudio’s in Greenport, East Quogue’s Stone Creek Inn and Tweed’s Restaurant in Riverhead? Each of these storied East End foodie institutions were once illegal speakeasies during Prohibition, procuring, distributing, and serving illegal liquor. The East End of Long Island played an interesting role in the history of Prohibition in the United States. The temperance movement — the movement towards limiting or prohibiting the sale and consumption of intoxicating beverages and liquors — took firm footing on the East End early in the 19th century. Leaders of the Presbyterian Church, meeting in Aquebogue in 1811, adopted a pastoral position supporting temperance; the non-sectarian Sag Harbor Temperance Society was formed in 1829 with the goal of banning the sale of all “ardent spirits”. The Sag Harbor Temperance Society was thereafter joined by the Total Abstinence Temperance Society in 1838 and the Young Men’s Total Abstinence Temperance Society in 1841. By mid-century, close to 25 percent of the population of Sag Harbor supported temperance. Temperance societies sprung up across the United States, many faith-based with enormous political power and influence. Prohibition became the law of the land in January 1919 when Congressman Andrew J. Volstead, backed by evangelicals and temperance reformers, introduced the 18th Amendment to 28
the U.S. Constitution (often called the “Volstead Act”), which defined intoxicating liquors as any beverage containing more than one-half of one percent alcohol. Enter the rumrunners, bootleggers and lawbreakers, smuggling liquor from oceangoing supply vessels waiting in international waters just three miles off the East End shoreline (later changed to 12 miles). Small, fast boats called rumrunners (often owned and operated by local fishermen and farmers) would race out to these supply vessels, load up whatever they could carry and head for the East End’s numerous bays and coves while often evading the Coast Guard, police, and other law enforcement officials. The smuggled booze was sent on by waiting truck to New York City or transferred by secret doors to some of the more famous East End speakeasies.
Bootleggers boated in under the building and passed the liquor through the trap door, some of which was served in the upstairs speakeasy, with its peephole and secret password. Similarly, the Canoe Place Inn of Hampton Bays boasted secret trapdoors and subterranean tunnels for hiding liquor. In July 1921, a major fire destroyed the Canoe Place Inn; it was reconstructed in 1923 and remained a favorite destination throughout the rest of Prohibition. Likewise, the Stone Creek Inn (originally the Ambassador Inn) located in East Quogue was a popular speakeasy, its location on a remote creek making it a perfect location for receiving illegal hooch. The speakeasy inside Riverhead’s J.J. Sullivan Hotel — now the site of Tweeds Restaurant & Buffalo Bar — was reportedly never raided, as it was frequented by Tammany Hall leader “Boss Tweed” and his cronies. The speakeasy was hidden behind a barber shop operating on the first floor of the building. Liquor was moved through a series of trapdoors and dumbwaiters to the waiting patrons.
