Grilled Summer Vegetables and Quinoa Salad Some of the top favourites of all summer vegetables feature in this healthy dish. Vegetables with a low water content, such as bell peppers, give you the best results when grilling. Not only does grilling vegetables give them an irresis@ble texture and delicious taste, it is also the best way to prepare them in order to retain most of their health benefits. Whereas frying or boiling vegetables causes them to lose their nutrients. This colourful combina@on of quinoa and vegetables makes for a perfect side or even a main meal. I personally recommend it as a chilled meal on a hot day, it will certainly hit the spot! By Thembe Mvula
Uganda, A L and o f B eauty
Uganda is know for it’s beau@ful scenery, gorilla safaris and the place where the @p of Nile begins to flow, and the list of lakes in Uganda is endless from Lake Albert to the famous Lake Victoria mee@ng the River Nile. The Signature S.O team travelled out to Uganda to discover all of this beauty and we definitely found what we were looking for. Riding the Buda-‐Buda’s in the city of Kampala, to the hot Northern sun of Gulu and Kitgum, we definitely experienced what it’s like to live he life of a Ugandan. Our primary mission was to find out what this beau@ful country had to offer the world without any interference of the West. Visi@ng schools, youth centres and the local community we were able to see the problems that Uganda was facing from talking to children, head teachers, chari@es volunteers. The cultural, poli@cal and social issues can cause problems in Uganda but with good organisa@on and planning Uganda could be heading in a great direc@on, helping the children of Uganda. It is also a land that could use the help of others to embrace a country as great as Uganda, a rich country which is almost untouched can enjoy the riches of their own land despite any issues that occur. This is something, the country is des@ned to experience in the coming years and in the future. A place that is peaceful, while being in Uganda you definitely get to see how sustainability is key to the country con@nuing in its strive for excellence and sustainability is and has been key to Uganda’s economic rise. Recipe of the Month By Editor Cheyenne Dwyer-‐McDowall Seasoned Mackerel & S@r Fry Vegetables (Serves 4) Ingredients: 3 tbsp Olive Oil 1 tbsp of Bu\er 4 small whole Mackerel, gu\ed and cleaned. Part boiled Vegetables of your choice and s@r fry oil Seasoning: (You can choose your own, bringing your own flare to it) 1 Small Red Chilli, sliced evenly 1 Garlic Clove, chopped finely 1 Red Onion, cut finely 1 tbsp of Honey Mixed Herbs (Oregano, Thyme, Rosemary, Coriander) Sea Salt Pepper
Method 1. Mix all seasoning together with Olive Oil and leave to set for 15 minutes. 2. Set the oven to 200C for 7 minutes. 3. Within the 5 minutes (so you need to be quick now!) bu\er a glass or ceramic oven dish. 4. Massage the seasoning into the Mackerel, leave for 2 minutes and then place the Mackerel in the oven for 15 minutes (depending on how cooked you want it) 5. Put the S@r Fry Oil in a pan for 1 minute to heat 6. Place the mixed vegetables in the pan with a tad of mixed herbs for flavour and cook for 5 minutes 7. Everything is now done! Now it’s @me to eat, enjoy!
Summer Sorbet Anyone? Summer desserts should be all about refreshing, colourful and exci@ng flavours that are simple to prepare. As a die-‐hard dessert lover and transi@oning vegan, I was ini@ally apprehensive about my new choice of diet as I was afraid it would limit my sweet tooth indulgences. However, I’ve been pleasantly surprised, discovering that nature has such healthy and tasty dessert which we know as fruit. I know what you might be thinking, how dare you compare mere fruit to a generous slice of cheesecake? But, I assure you there’s no dessert as refreshing and ideal for summer as fruit sorbet! They’re great pale\e cleanser and a chilled change from fruit salad as dessert. Why not take a challenge to try out different flavours for this summer? By Thembe Mvula
