There’s nothing the USA does better than a spot of good old-fashioned territorial rivalry. Boston and New York have baseball, the East Coast and West Coast have rap, but when it comes to North Carolina, our ‘beef’ isn’t music, it’s the literal kind— barbecue

Forget politics, forget sports rivalries, this is the real deal. We’re talking whole hogs versus pork shoulders, vinegar versus tomato, and enough smoky goodness to make you salivate. When it comes to barbecue, folks in North Carolina don’t just know how to fire up a grill—we practically wrote the rulebook.

So, how to settle the fieriest of culinary debates? Why, by consulting North Carolina’s best pitmasters and smokehouses, of course.

EAST V. WEST: A TALE OF TWO BARBECUES

Rewind to the early 1800s and Eastern North Carolina barbecue was all about the whole hog, served with a vinegar-based sauce, peppers, and a dash of lard or butter—classic and tangy.

Meanwhile, in Lexington, Piedmont, things were cooking along the same lines until Sid Weaver opened his barbecue stand in 1919.

He broke tradition and switched things up by cooking just parts of the hog (like loins and shoulders) and throwing in tomato ketchup,

thanks to the newfound availability of Heinz’s iconic red condiment.

By World War II, the barbecue battle lines were drawn. Eastern fundamentalists clung to their vinegar-based tradition, while Piedmonters flaunted their fancy, ketchupenhanced version. Each side claimed their barbecue was the best and thus the great North Carolina barbecue debate was born.

Fast-forward to today, and the rivalry is still alive and sizzling. No doubt you have your own opinion on which style reigns supreme.

HYPE OR HOGWASH?

Is there a meaningful merit in all this barbecue rivalry? Or is it all just, well, hogwash? If the diverse and purist approaches of these modern-day smokehouses are anything to go by, it’s a pleasing mixture of both.

Found in Dillsboro, Waynesville, and Franklin, Haywood Smokehouse’s three locations are almost as Western North

Carolina as you can get. But for owner, Will Beasley, his approach to barbecue is not limited to its locale. “We pick what we like from each region,” says Beasley, emphasizing his eclectic take on barbecue.

“The only meat we cook with sauce is our baby back ribs, typically served on Saturdays. We prefer them that way. However, for our pork butt, we steer away from the traditional Eastern Carolina vinegar style.”

If its popularity is anything to go by, Haywood is doing something right.

Ranked #1 on Yelp’s Top Brisket Spots in the US and Canada, Haywood draws hungry carnivores from across state lines: “We actually have people who drive over from Knoxville just to get lunch,” says Beasley.

Heading down southwest to Highlands, Highlands Smokehouse takes a more purist approach. With over 20 years in business, (and the proud owner of the largest underground pit in the country),

this roadside smokehouse certainly doesn’t like to mess with good, honest tradition.

“Our cooking style is more Western North Carolina,” says owner Bryan Lewis who bought the smokehouse four years ago. “We use hickory and oak to smoke our meats. We do brisket, pork, chicken, half chicken, ribs, and sausage, but don’t do the whole hog. The only deviation from our Western North Carolina style is our brisket, which is more of a Texas style.”

With a long heritage as a smokehouse, Cashiers Valley Smokehouse was given a new lease of life when owner Brien Peterkin took over in 2020. He has witnessed firsthand the smoky battlegrounds where folks passionately defend their regional style. “It’s funny because everyone thinks their local style is the best,” he laughs. “When we first opened, our customers would claim to know what good barbecue was because they were from Kansas City or so-and-so.”

THE GREAT SAUCE DEBATE

One of the biggest differences between Eastern and Western North Carolina barbecue is, of

course, the sauce. Picture vinegar and tomato sauces squaring off in a tangy, sweet showdown. That’s where the real magic happens, with each sauce claiming its place in barbecue lore—one sharp and tangy, the other rich and sweet. For our smokehouse friends, however, they choose to remain democratically neutral.

Thanks to Cashiers Valley Smokehouse’s proximity to neighboring states, Peterkin explains how his barbecue joint draws from their culinary influences to create sauces that embody the flavors of those regions.

“We’re in a unique area where we border Georgia and South Carolina,” says Peterkin. “Our sauce range features a sweet tomato red, which comes from Georgia. We have a mustard sauce that’s a South Carolina style and a vinegar sauce that would be your traditional Western North Carolina.”

Located at Cashiers Farmers Market, On the Side’s pulled pork sandwiches are the stuff of local legend. But does it adhere to one style? “We have visitors who ask whether we’re eastern or westernstyle barbecue,” says On the Side’s Miranda Crawford. “By offering several sauce options we help them to customize their meal to their preferences. Plus, a variety of sides like collard greens, baked beans, pasta salad, coleslaw, and macaroni and cheese keep everyone happy.”

On the Side even takes saucy inspiration from their beloved canine: “Our newest option is a white barbecue sauce we’ve named Rauce Sauce,” Crawford shares enthusiastically. “It’s named after our golden retriever, Rauce, who is adored by guests at On the Side and Cashiers Farmers Market.”

Back at Haywood Smokehouse, it continues its crowd-pleasing agenda with a finger-lickin’ array of condiments. “We do an Eastern-style barbecue sauce, which is more vinegar-based,” says Beasley. “An Eastern-style vinegar-based barbecue sauce, a mustard-based Western Carolina sauce, and a ketchup-based Kansas City-style sauce. We also have a strawberry chipotle and an SOB, which is a kicked-up version of that!”

Despite its traditionalist way of barbecuing, Highlands Smokehouse recognizes its broad customer base and caters to each and every palate. “We have travelers and locals from across

the country and the Southeast,” explains Lewis.” We therefore offer a variety of regional sauces. Our top four are Smoky Tex-Style, Sweet and Smokey, Carolina Vinegar and Carolina Mustard.”

THE SMOKING PROCESS: LOW AND SLOW WINS THE RACE

Sauces aside, Eastern and Western North Carolina barbecue touch tongs over a common philosophy: good barbecue takes time. Whether it’s a whole hog or a pork shoulder, the smoking process is all about patience and precision.

The type of wood used in the smoking process also plays a crucial role in the final flavor. Hickory and oak are the go-to North Carolina choices, providing those unmistakable robust, smoky notes that complement the rich meat.

Beasley sheds light on the Haywood Smokehouse process, which is truly a labor of love: “We close Sunday and Monday then come in on Tuesdays to fire up the smokers. They’re both on until Saturday night. Our pork butts and our briskets will cook overnight, anywhere from 12 to 18 hours.”

Given the fact that Highlands Smokehouse has the biggest underground pit in the States, they’ve got an epic dedication to the craft. “We’ve got an old grandfather pit downstairs,” says Lewis. “It’s a blocking tunnel pit and takes a while to get it heated up. It works by circulating heat and smoke through a series of chambers, allowing the meat to cook slowly and absorb that rich, smoky flavor we’re known for.”

THE VERDICT: WHO WINS?

So, which is better: Eastern or Western North Carolina barbecue? The truth is, it’s all a matter of personal preference. Some folks swear by the tangy bite of Eastern Carolina vinegar sauce, while others can’t get enough of the sweet, smoky goodness of Western Carolina’s tomatobased sauce.

And let’s not forget that both styles have their own unique charm and tradition. Whether you’re enjoying a whole hog roast in the East or savoring a perfectly smoked pork shoulder in the West, you’re partaking in our rich culinary heritage, which has been perfected over generations.

WHAT’S NEW AT THE BASCOM

There’s never any shortage of things to see and do at The Bascom. With a rich and storied history from its inception in 1985, it has evolved over the years to provide a central home for the visual arts in Highlands. The center, which moved to its current campus in 2009, has continuously served its community with a rigorous schedule of educational and social enrichment. In a testament to The Bascom’s potential for future growth and ever-expanding possibilities, this past summer witnessed the unveiling of new opportunities and the refurbishment of the property’s long-standing centerpiece: the Will Henry Stevens Bridge.

REDEDICATION OF THE WILL HENRY STEVENS BRIDGE

Over the years, visitors at The Bascom have found themselves enchanted by the antique, covered bridge leading onto the picturesque campus. This iconic feature dates to the 1800s. It was moved from its original home in New Hampshire and installed at the center’s entrance in a nod to the property’s rural farming heritage. Works by the bridge’s namesake, Southern modernist painter Will Henry Stevens, can be seen in The Bascom’s exhibition From the Lowlands to the Highlands , on display in the Bunzl Gallery through January 11, 2025.

With the exception of the nails in its floorboards, the bridge is composed entirely of wood— 1,500 trunnels and dowels join the parts in an intricate construction process that is said to outlast concrete bridges. Since the bridge’s installation in 2008, staff members have steadfastly monitored its condition and stability. Renovations began in 2023 to shore up the

structure and ensure its continued presence as a cherished local landmark.

The rededication ceremony, held in July 2024, celebrated the completion of the repairs, the generosity of The Bascom donors, and the reopening of The Bascom’s main entrance. The Will Henry Stevens Bridge will continue to stand as a remnant of the past and a promise to the future of the arts in Highlands.

Born in Columbus, Georgia, Matt’s early years were shaped by two significant influences. His love for the outdoors, cultivated during his time in the Boy Scouts, and the creative pursuits of his mother and aunt, whose twin passions for interior design and crafting with natural materials nurtured Matt’s artistic instincts.

During his years at the University of Georgia, Matt’s artistic path took a serendipitous turn. While working at the university bookstore, he happened to stumble across a book on traditional basket weaving. The spark was immediate. His first attempts at the craft began with the kudzu vines endemic to the area, resulting in simple yet elegant baskets that his friends and classmates quickly snapped up as last-minute Christmas and birthday gifts.

For the next 15 years, basket weaving remained a hobby for Matt, a creative outlet he pursued alongside his work. It wasn’t until 2009, when he relocated to Asheville, North Carolina, that Matt took the courageous step of turning his passion into a full-time career. Asheville’s vibrant arts scene provided the perfect environment for Matt to evolve as an artist. Setting up shop in the River Arts District, he began producing woven sculptures that embodied the rustic elegance of the Plateau.

Matt’s work is deeply rooted in the natural beauty of our community. He uses locally harvested bark, vines, and branches to create pieces that are both visually striking and environmentally conscious. Some of his most extraordinary works are his commissioned pieces, crafted with materials gathered directly from the client’s land. Like soldiers standing to attention, roll after roll of rugs line up in perfect rows along the walls of Bounds Cave’s Rug Gallery. Piles rise high in corners, and almost every inch of the space is filled with color and texture.

What can people expect to find when walking into the showroom for the first time? “We have a wide range of styles, from traditional Persian patterns to contemporary designs,” explains Judy. “For instance, we have rugs that are perfect for mountain homes, with earthy tones and textures that blend seamlessly with natural surroundings. On the other hand, we also offer vibrant, modern pieces that can make a bold statement in any room.”

UNPICKING RUG DNA

For those keen to immerse themselves in the world of rugs, what are the key things to know? And how does one begin to navigate the thousands of designs and patterns? “Each country has its own distinctive style and technique,” explains Judy. “For instance, in Turkey—which has a rich tradition of rug making—the names of the rugs often come from the villages where they were made.”

The intricate craftsmanship involved in every rug is astonishing. Judy dives right into the rugs’ DNA, from the dyes to the finishing process. “Unlike many modern rugs that use chemical dyes, we have hand-knotted Indian rugs dyed using traditional methods with expensive rare flowers. For instance, green comes from indigo, and yellow comes from saffron. Only this natural dyeing process can give the rug an unmistakable depth and character that chemical dyes can’t replicate. Each batch of wool absorbs the dye slightly differently, creating subtle color variations that add to the rug’s beauty.”

How long would a rug like this take to be made?

“Typically, they take three to four months to complete, depending on the quality. It starts with dyeing wool in large stone pots with fires underneath them. Then, the wool is hand-knotted on a vertical loom by a team of weavers. Each knot is meticulously tied, following a detailed design known as a cartoon.”

TRANSFORMING MOUNTAIN INTERIORS, ONE RUG AT A TIME

Using their discerning eyes, Judy and Mark have sourced and supplied rugs to some of the area’s most tasteful homes. “We work with both interior

designers and homeowners,” says Judy. “We have a lot of clients who come in with their interior designers. They pick out the rugs they want based on the designer’s vision. It’s always interesting to see how different designers incorporate our rugs into their overall design concepts.”

And is there a style or trend that locals prefer? “Preferences vary. Some like traditional patterns, while others prefer more contemporary designs. We went through a phase where everything was gray and white, but now color is making a comeback. In terms of mountain styles, something rugged would work well, in colors that can be seen out the window.”

FINDING YOUR PERFECT RUG

When it comes to choosing the perfect rug for a room, Judy emphasizes the importance of tying the room together.

Imagine a room where the warmth of a fireplace dances with vibrant colors. Judy’s advice? Don’t overlook this connection. “There’s so much color in fireplaces,” she explains, nodding to the challenge of harmonizing decor with such a focal point. “If you don’t tie into that fireplace, [the room] is never going to seem quite comfortable.”

For Judy, choosing the right rug can be decided can be decided by considering your intentions.

Are you in it for the long haul or for short-term trends? “The main thing you should consider when purchasing a rug is your taste and lifestyle. If a rug is purchased with the intention to keep it for a lifetime and adjust your decor to suit the rug, buy one that you see as a piece of art. A beautiful, classic rug can be used in just about any decor. However, if changing your decor often and following trends is your priority, I would opt for a rug that suits that trend.”

Can rugs work as investment pieces that will appreciate in value over the years? Judy doesn’t recommend it. “If you are looking to invest in rugs, one that is hand-knotted may increase in value, but I wouldn’t advise buying a rug for that purpose. Finding a rug that appeals to your personal taste should be your main motivation for buying.”

FROM AMERICAN HEIRLOOMS TO HADJI JALILI TREASURES

What makes the Bounds Cave’s Rug Gallery collection so extraordinary is Judy and Mark’s open-minded approach to sourcing. Judy explains that they don’t just sell rugs from rugmaking countries. “We try to get into anything we can in any country that we can. For instance,

we have old English needlepoints, too. We generally look for a blend of aesthetics, quality, and cultural importance.”

With such a globally sourced array of rugs, does Judy have any particular styles or individual rugs that are her most treasured? “American hooked rugs have a special place in our collection,” she enthuses. “They were often made by women using leftover rags, which makes each one unique. We have one that is very special to me; it was made by a ten-year-old girl in the 1930s who won a state fair competition.”

While much of Judy and Mark’s portfolio sits around the three-to-four-figure mark, there is a handful of statement rugs that truly dazzle. One of Tabriz’s most famous rug design families, Hadji Jalili, crafted exquisite rugs in the late 1800s. These were the kinds sought after by the wealthiest collectors in Europe and America.

“We acquired a modern Hadji Jalili from the 1990s, made by a great-grandson using the original designs passed down through generations. Each knot was tied by hand, taking over a year and a half to two years to complete. It’s truly a labor of love and skill. The Hadji Jalili rugs are

famous for their intricate designs and use a lot of silk. A truly antique Hadji Jalili Tabriz that was made by the family can go for seven figures at Christie’s or Sotheby’s.”

MILLION DOLLAR MASTERPIECES

With rugs seemingly a high-numbers game, what have been some of their biggest ticket finds?

“We’ve sourced rugs that can fetch anywhere from $250,000 to $5M, depending on their rarity and historical significance. Recently, we had a client looking for a very specific rug. I managed to find it for them, and although I didn’t sell it for millions, the price tag was still substantial. It’s incredible how these rugs hold such immense value for collectors and enthusiasts alike.”

WONDERS DOWN UNDER WONDERS DOWN UNDER

The entire continent of Australia is a wonderland of rare sights: Kangaroos, koalas, platypuses and other animals that only live there; a giant, untamed countryside known for its harsh weather and terrain; and the diving site to top them all, the Great Barrier Reef. While Sydney, or another city, often serves as a base to take in the urban atmosphere and world-famous beaches with a quick venture into the wild, these off-the-beatenpath experiences will have travelers seeing all that Australia is in a new light.

TRACK THROUGH THE OUTBACK BY TRAIN

The fabled Australian outback stretches across the remote and expansive interior of the continent.

The Ghan , an all-inclusive luxury train just as momentous as the land it intersects from north to south, has been crossing the “Red Center” since 1929, taking its name from the route used by Afghani cameleers in the 1800s. The list of creatures of the Great Barrier Reef is long (25 percent of known marine species live there), but frequent sightings at Reefworld include sea turtles, clownfish, giant clams and Maori wrasse, over-six-foot-long fish with bumpy heads and giant lips known as the “big, friendly puppies” of the reef, who follow divers and snorkelers around. For a view from above, helicopter rides over the famous Heart Reef are also available.

SHAKING THINGS UP

ROASTED LOBSTER TAIL WITH SAUCE AMERICAINE

• 1 cup chopped celery

• 1 cup chopped carrots

• 1 large onion peeled and halved

• 4–5 heirloom tomatoes

• 1 chopped red pepper

• ½ cup white wine

• 1 cup brandy

• 1 cup roasted red peppers

• 2 cups lobster stock

• 2 quarts heavy cream

• ½ cup chopped sage

• Salt and pepper to taste

FOR SAUCE

Preheat oven to 375° F. Place celery, carrots, onion, heirloom tomatoes, and red peppers on a sheet tray. Drizzle with olive oil and season with salt and pepper. Roast vegetables for 30–40 minutes. Set aside.

In a large stock pot, reduce white wine and brandy by 80%, then add roasted vegetables, roasted red pepper and lobster stock. Reduce for 15–20 minutes on medium to high heat.

Add heavy cream and simmer for 20–30 minutes on low heat. Turn off heat and add sage, salt and pepper. Add everything to blender and blend to a smooth consistency.

FOR LOBSTER

Preheat oven to 400° F. Drizzle lobster with olive oil and season with salt and pepper. Roast for 8–10 minutes and serve over pappardelle tossed in the sauce Americaine.

Standing at six foot nine, Chris Duffy is undoubtedly the tallest real estate broker on the Highlands-Cashiers Plateau. He’s no stranger to the question, “How’s the weather up there?” The answer: The weather in the mountains is temperate and lovely—and Duffy is perhaps a degree or two “cooler” than average.

Born in Germany, Duffy grew up in Washington D.C. and spent 22 years living in Ottawa, Canada, before settling in Highlands. In 2017, he took a chance on the area when he answered the local radio station’s call for a morning show host. Having never visited before, he embraced the gamble and quickly fell in love with life on the Plateau. In 2019, Duffy left the radio station but decided to remain in Highlands. Armed with his real estate license, he jumped into the industry with both size-14 feet.

Because he towers over the rest of the town’s residents, it’s easy to spot Duffy as he strolls the streets of Highlands. Yet his love for the town and its special way of life looms even larger. During the off-season, my nights are busy as the in-game P.A. announcer for Highlands High School basketball; this is my eighth season, and it’s one of the most rewarding things I do. When my neighbors aren’t around, I also struggle to play the bass, trombone, and drums.

DO YOU HAVE A FAVORITE FESTIVAL OR SPECIAL EVENT ON THE PLATEAU?

I especially love all the arts and crafts festivals, like the Mountaintop Rotary Festival in Highlands and those held on The Village Green in Cashiers and Sapphire Valley. They do a fantastic job showcasing local and regional artists, and I enjoy knowing that the objects you bring into your home are made by people whose stories you can learn. I also look forward to the Dahlia Festival each year and all the great events at The Bascom.

OUTSIDE OF THE PLATEAU, WHERE DO YOU LIKE TO TRAVEL?

I traveled extensively in the past, but now I live where others vacation. I love it here so much that it’s hard to feel motivated to leave. If I were to create a travel bucket list, Japan, Singapore, and Vietnam would top the list. Growing up with a Foreign Service dad, I spent a lot of time

in Warsaw, Poland, and Buenos Aires, Argentina, and I long to return to them.

WHAT GOALS ARE YOU WORKING ON IN 2024?

The paradox of life as a realtor is that while the job offers a lot of flexibility, it’s also very chaotic. I’m working on carving out time from the chaos to pursue some hobbies that I’ve set aside over the past several years.

WHAT ADVICE WOULD YOU GIVE TO A PROSPECTIVE BUYER STARTING THEIR HOME SEARCH ON THE PLATEAU?

Step one: Call me. While this area might seem small geographically, it encompasses a myriad of distinct communities. Buying a home on the Plateau isn’t just about the house itself; it’s about the lifestyle you’re seeking.

Clients are often amazed at the differences between Sapphire, Cashiers, Glenville, and Highlands, even though they’re all just a short drive from one another. Spend some time here to experience the various environments and get a solid idea of the life you want to lead. I’ll show you around and help you become familiar with everything the area has to offer. Before entering real estate, I didn’t work in sales, and I still don’t consider myself a salesperson. For buyers, my goal is to teach them about our

lifestyle, help them find a house they fall in love with, and then facilitate the transaction. For sellers, I focus on conveying what makes their homes special and what they enjoy about living there. This approach helps attract prospective buyers who are passionate about the property and motivated to make it their own.

There’s a difference between selling and marketing: we market your house, and your house sells itself.

I had a client with whom I had a long-term relationship, and they suddenly needed to move for health reasons. As you can imagine, selling their home was an emotional process for them. However, I was able to get their home under contract in one day and manage the transaction from start to finish, so they didn’t have to deal with any additional stress. I was grateful to be there for them when they needed my assistance.

While some aspects of the Plateau lifestyle may evolve, the natural beauty of this area is certain to endure. That’s what has captivated so many, including myself, and is the one truly timeless feature of this place.

If you’re partial to a beer, have you ever been brave enough to tackle a stein?

Measuring a full liter, the traditional German beer glass is more than double a stateside pint serving. With Oktoberfest’s libations and lederhosen looming large on the horizon, now is a good time to raise a stein in celebration.

These iconic vessels weren’t always the dimpled, oversized pint glasses you find today. Once adorned with intricate designs and topped with pewter lids, steins are steeped in centuries of tradition, craftsmanship, and Black Death–defeating power.

MEDIEVAL ORIGINS:

PRACTICALITY MEETS ART

The story of beer steins begins centuries ago in medieval Europe—specifically, in what is now Germany. Back then, sanitation was a luxury, drinking water was unsafe, and the bubonic plague was running rampant. Thus, beer—a boiled beverage—was a safer alternative. Initially, these early beer vessels were simple, practical mugs made of stoneware (“stein” means “stone” in German) designed to keep beer cooler for longer periods and prevent contamination.

As craftsmanship evolved, so did the beer stein. Around the 14th century, European potters started producing stoneware vessels that were not only functional but also charmingly ornate. These early steins featured

intricate designs—some by Renaissance artists— and sturdy handles. Motifs included biblical and historical scenes, often adorned with cobalt blue glazes.

THE RISE OF THE PEWTER LID

One unmistakable feature of traditional beer steins is the pewter lid. This addition came about during the time of the Black Plague in the 16th century, when it was believed that the disease could spread through the air. To protect themselves, beer drinkers began using lids on their steins, which could be opened and closed with a thumb lever.

This practical measure not only kept out bothersome bugs and debris but also added a touch of uniqueness to each stein, as craftsmen began to personalize them with engravings and embossment.

FROM PERSONAL UTILITY TO CULTURAL ICON

By the 19th century, beer steins had become indelibly intertwined with Bavarian culture and identity. Each stein could tell a story—whether of regional or familial pride or of celebration. For noble German families, porcelain and silver steins were status symbols upon which the household crest or shield was engraved. For the less well-heeled, glass or pewter steins with enameled folk art were common; these displayed scenes from everyday life or pictures of regional landmarks.

The cultural significance of steins peaks in Oktoberfest, the legendary beer festival that originated in Munich in 1810. During Oktoberfest, beer steins have always taken center stage.

Festivities kick off with the ceremonial tapping of the first keg, after which liters upon liters of beer are poured into steins and eagerly consumed. With its capacity to hold generous portions and a rich historical resonance, the giant stein has become a symbol of camaraderie and conviviality.

A RATHER MODERN STEIN RENAISSANCE

Perhaps spurned by the 21st-century explosion of craft beer and microbrewing culture, there has been a resurgence of thirst for traditional beer steins—both as collectibles and as functional items. Discerning sippers and trendy taprooms have rediscovered a penchant for the hefty, dimpled tankard, while passionate collectors and enthusiasts seek out vintage and artisanal steins.

For the global community of collectors, these receptacles can hold some serious value. Earlyera steins are the most expensive, with one 18thcentury sterling silver version selling for over $2,200 in 2022. Early 20th-century Art Nouveau–style steins can fetch a few hundred dollars, while ultra-rare World War II–era military steins can command over a thousand.

BUYING STEINS

If you fancy acquiring a classic German stein, how do you ensure it’s the real deal? In the late 19th century, the Merchandise Marks Act of 1887 was passed, which mandated that any authentic German beer stein made after 1887 was marked with “Made in Germany” on its base.

Naturally, pewter lids will darken over time, so the darker the lid is, the older (and more valuable) it may be. Traditional German brands that still make authentic steins include KING, Thewalt, Zoeller & Born, and Zimmerman. Although one liter is the traditional stein size, you’ll be able to find capacities ranging from 0.25 to an epic 2.5 liters.

So, the next time you raise a stein at Oktoberfest or enjoy a cold brew with friends, take a moment to appreciate the rich history behind this beloved tradition. Each sip connects you to centuries of craftsmanship, community, and celebration—a history that continues to unfold with every clink and reminds us of the enduring bond between beer lovers across the globe.

INTO THE WOODS

TO PISGAH NATIONAL FOREST

As residents of the Highlands-Cashiers Plateau will attest, North Carolina has no shortage of natural beauty. Just a short drive down Highway 64 to Brevard brings day trippers to the stunning scenery of the Pisgah National Forest, where over 500,000 acres of lush landscapes, towering trees, and whitewater rivers span a dozen counties from Transylvania all the way to Watauga. Numerous famous landmarks draw visitors from far and wide, such as Mount Pisgah, Mount Mitchell, Grandfather Mountain, the Biltmore Estate, and The North Carolina Arboretum.

Motorists on the Blue Ridge Parkway enjoy a bird’s eye view of the park, and the extensive trail system offers an immersive experience. Even parts of the Appalachian Trail wind through this ancient forest.

In the late 1800s, Gifford Pinchot and George Vanderbilt implemented the nation’s first forestry management plan on the Biltmore Estate grounds in Transylvania County. Later, Pinchot’s successor Dr. Carl A. Schenk created the Biltmore Forest School. In 1914, the area was acquired by the federal government to be managed as public lands, forming Pisgah National Forest, and in 1968 a portion was designated the Cradle of Forestry. Today, the Pisgah National Forest encompasses three districts: the Pisgah, Grandfather, and Appalachian Ranger Districts.

Visitors from the Highlands-Cashiers Plateau can access the Pisgah District less than an hour away in Transylvania County. Here, you can explore the Forest Discovery Center, which houses interactive exhibits about forestry and conservation history.

The center also offers guided tours, nature trails, and educational programs that provide insight into the significance of sustainable forest management. A terrific screen break for visitors, young and old, this part of the park frequently attracts parents and grandparents who wish to inspire a love of the outdoors in their children.

The Blue Ridge Parkway, “America’s Favorite Drive,” provides a delightful diversion with breathtaking views of the surrounding mountains and valleys.

The 469-mile scenic highway traverses an exciting range of terrain across North Carolina and Virginia and features an incredible number of well-known tourist attractions along the way. One of the most popular stops within the Pisgah District is Looking Glass Rock Overlook, where sightseers marvel at the iconic granite monolith rising from the forest floor.

Pisgah also boasts an extensive network of trails for both hiking and biking and the park is renowned amongst seasoned mountain bikers as one of the most challenging and rewarding trail systems in the country. The famous Art Loeb Trail, a strenuous 30-mile route, crosses some of the highest peaks in the region, such as Black Balsam Knob and Tennent Mountain. Those who take up the challenge are rewarded with panoramic views of the surrounding wilderness, making the trail a favorite among avid hikers and backpackers.

For those seeking a less arduous adventure, the Bent Creek area south of Asheville features 30 miles of beginner and intermediate hiking and biking trails. The Bent Creek Trail provides an easy hike to Lake Powhatan, a popular recreation area featuring a campground and public beach. The 5.5-mile round-trip loop takes about two hours to complete by foot and is perfect for families or those with canine companions. It is also beloved among bird watchers, so make sure to bring a pair of binoculars.

Those who dare to explore will find numerous waterfalls in Pisgah Forest, each offering a unique and enchanting experience. From trickling trailside streams to the thunderous roars of mighty rivers, waterfalls great and small can be viewed from the roadside, reached by short

walking paths, or discovered on long hikes deep into the forest.

Sliding Rock presents one of Pisgah’s most popular attractions, daring visitors to experience the thrill of a 60-foot natural water slide into the chilly pool below. This family-friendly spot is a hit during the summer months, providing a fun and refreshing way to cool off. Why not bring a picnic and spend the day lounging beside the river, enjoying the delighted squeals and laughter of brave swimmers taking the plunge?

For a more secluded swim, head up onto the Parkway and take a hike to Skinny Dip Falls. From Looking Glass Overlook at Milepost 417, cross the Parkway and look for an unmarked (though well-traveled) trail

at the side of the road. A short hike takes you past the Dragon Tree, said to be a Native American trail tree, and through a forest of rhododendrons and ferns to the rushing Yellowstone Prong River. Here, multiple waterfalls spill into a crystal-clear pool, perfect for an afternoon of natural recreation.

For those who choose to adventure by car, Looking Glass Falls stands as a beacon of raw beauty just off US Highway 276 north of Brevard. The 60-foot cascade offers a stunning view from the roadside and is easily accessible by a short stairway. It provides the perfect photo opportunity without the athletic exertion required by other, more remote area attractions.

From hiking and biking to outreach and programming, the Pisgah National Forest strikes a delicate balance between conservation and recreation. Every tree is carefully recovered from sustainably managed Mexican forests and plantations, ensuring that the surrounding ecosystems remain unharmed. FROM RAW TO REFINED

It’s hard to pinpoint a signature Taracea aesthetic. Using rare and fine woods such as encino, fresno, guanacaste, teak, milpa, palografico, and yukas, Taracea crafts each item with a distinct vision, embracing the unique texture and color of each material.

Be it a roughly hewn coffee table whose surface is a raw tree trunk slice or a smoothly cut and polished mid-century-style loveseat, each Taracea piece embodies its own distinct look and feel. Indeed, the only commonality is the exquisite craftsmanship and deep respect for wood.

With its natural imperfections and organic shapes, Taracea’s Luna collection brings a touch of the wilderness into your spaces, each knot and grain telling the story of the tree’s life. In terms of inspiration, what comes first — the wood or the design? “We select the wood first and then create designs based on it,” explains Taracea. “That way, we can always highlight the beauty of each chosen log. The texture, color, and grain patterns of the wood inspire our designs, allowing the natural characteristics of the material to guide the creative process.”

SUPPORTING SUSTAINABILITY IN EVERY GRAIN

Sustainability is not merely a practice at Taracea; it is a philosophy ingrained in every step. “From sourcing materials to production processes, we prioritize eco-friendly practices. We use non-toxic finishes and adhesives, minimize waste through efficient production techniques, and recycle or repurpose leftover materials. Additionally, our facilities are designed to reduce energy consumption, and we use 100% solar energy in all our processes.”

Taracea collaborates with sustainably managed forests throughout Mexico, empowering small landowners to preserve these vital landscapes. Their own plantations further contribute to carbon reduction, reinforcing the brand’s dedication to nurturing the environment. “Most of the woods we use aren’t commercially available; therefore, we are using materials that would end up being burned or never used,” assures Taracea. This harmonious relationship with nature ensures that each creation is not only a work of art but also a testament to environmental stewardship.

The transformation of these noble woods into exquisite furniture begins at Taracea’s mill. Here, each log is meticulously processed, coaxing out its inner elegance and worth. Some woods, stretching over 100 inches wide or embedded with metal and concrete waste, pose significant challenges. Yet, Taracea’s innovative techniques and custom tools rise to meet these obstacles, allowing them to unveil the hidden splendor within even the most rebellious logs.

Once milled, the wood is dried in Taracea’s kilns, monitored both locally and remotely from Italy.

This crucial phase, which can take up to three months for thick slabs, is designed to eliminate internal tensions that might otherwise cause future cracking or splitting. By the end of this process, each piece emerges stable and ready to be transformed by the hands of master craftsmen.

The final touch in Taracea’s creation process is where true artistry unfolds. Skilled artisans breathe life into each piece through timehonored techniques. But how does the brand balance centuries of woodworking tradition with cutting-edge design? “Our artisans are experts in techniques passed down through generations, ensuring that each piece is crafted with precision and care,” explains Taracea. “Yet, at the same time, our design team stays attuned to current trends and incorporates modern elements into our collections.
