EDITOR’S LETTER
A
t the beginning of 2020, our team began prepping for the fourth issue of the Simply Audree Kate Edit. We planned to shoot the entire magazine in Miami, but we unexpectedly canceled the trip due to COVID-19 and the stay-at-home order. At first, I considered canceling the entire issue all together, but we pushed back our deadlines and became creative with shooting everything in my small New York apartment. (You won’t want to miss the BTS footage!) We used flowers (courtesy of The Love Of Flowers NYC), fruit, and my living room plants as props. We hung up sheets on my wall (the amazing tie-dye sheets were made by a previous Audree Kate Studios styling intern, Kate March - @undonebykate), and we transformed my space into a faux Miami resort, sans beach. We challenged ourselves creatively with editorial-type poses and concepts, photographed more content than we ever have for a magazine, and I am confident that this is our best issue yet! The Simply Audree Kate Edit has become one of my favorite projects throughout the year, and I am beyond proud and grateful for my team, who has helped me put this magazine together for all of you. The past few months have been emotionally exhausting, to say the least. Every single one of us has been deeply affected by what is currently going on in the world—from Coronavirus, the Black Lives Matter movement, elections, and not to mention some of us lost jobs or had to close our businesses. Audree Kate Studios and Simply Audree Kate were hit extremely hard as New York-based businesses in the rapidly shifting fashion and media industries, and I was in shock when I temporarily closed my office on March 16th, downsized my staff, and had an empty work schedule. It was my first time in almost five years of not really knowing my next move or work contract. I am not sure what the rest of 2020 will hold for us, but playing dress up for a few days, allowing myself to be creative, and pretend I was on a beach in Miami made me believe that change is good. Change is needed. This is a time for us to challenge ourselves, our routines, the systems at hand, and move forward with ‘ganas’ (a Spanish saying my Dad always told me growing up, which translates to “having guts” or the desire/want for something.) Have the ‘ganas’ to keep moving forward, wake up each morning with the intention to do better than the day before, and remember that you’re not alone. I am grateful for you and sincerely thank you for reading the Simply Audree Kate Summer 2020 Edit; I hope this issue will bring some much-deserved joy to your summer!

I like to expedite my summer tan with help from self-tanners. It’s quick, easy, and most importantly, I avoid sun damage. I love the St. Express Bronzing Gel because it goes on evenly, long-lasting and looks super natural.
Jergens Natural Glow Instant Sun Sunless Tanning Mousse

If you’re on a budget (holla!) this Jergens is a great alternative to St. Tropez. I used this tanning mousse while shooting this magazine and I was very impressed with the pigment, even coloring, and how it easily built throughout a week while applying it after my shower.

Ice Roller
Ice Roller
This was the best skincare tool I purchased in the past year. I keep the roller in my freezer door, and every day after my morning routine, I roll this under my eyes and cheek area to de-puff my face while I make my lemon water and coffee.
I love using my jade roller as a little mini spa treatment at night before going to bed. Use the roller with oils, serums, masks and moisturizer to help the products penetrate deeper into your skin. Roll over your face in outwards and upwards directions for lymphatic drainage and lifting of your skin.
Gua Sha Facial Lifting Tool Gua Sha tools have a multitude of benefits. It relieves facial and jaw tension, promotes a brighter complexion, and visibly lifts and contours the face. I also use this tool for lymphatic drainage and I work the stone upwards to lift; the smaller curve is meant for the cheekbone and undereye area, while the larger/concave curve is for cheeks and jawline.
Eyebrow Razor I use these eyebrow razors for various parts of my face—eyebrow maintenance, lady mustache and even sometimes those pesky nose hairs. I also recently started “shaving” my face with this tool to get rid of dead skin, baby hairs, and to minimize acne scars. It’s similar to dermaplaning but significantly cheaper! Make sure you watch a Youtube tutorial before shaving your face.

Skin Blemish and Acne Extractor Tools I am guilty of picking at my skin and popping zits, which leads to scars and irritation. Since I couldn’t get a facial treatment the past few months, and had several quarantine breakouts, I bought these extractor tools to help! These are similar tools that my aesthetician mother uses, and they can help remove blackheads and put pressure to get rid of stubborn blemishes. It’s less invasive (and cleaner) than using your fingers.
Makeup Brush Cleaner I’ll be the first to admit that I hate cleaning my makeup brushes. I’m guilty of going way too long and normally cleaned them with my hands or an exfoliating pad. I recently splurged on this electronic wand and WOW! My brushes have never been cleaner and it took a fraction of the time to clean. This machine and cleaner are under $20 and so easy to use.
Foot File and Callus Remover Wearing sandals every day during the summer can do a number to your feet. I love keeping this foot file in my shower for routine heel and foot treatments between pedicures.

If there is one thing that needs to be on your skincare shelf this summer, it’s sunscreen. Sunscreen should be a skincare priority every day, but especially during the summer months. We’re breaking down 5 common myths about sunscreen, and Anneke Knot, my dear friend and Beauty Editor, is sharing her SPF tips with you! Plus, you can shop some of our favorite SPF and skincare products.
SPF stands for Sun Protection Factor. The number tells you how long the sun’s UVB rays would take to redden your skin if you apply the sunscreen exactly as directed compared with the amount of time without sunscreen. So, if you use an SPF 30 product, it would take you 30 times longer to burn than if you used no sunscreen.

First and foremost, sun protection is paramount. Don’t get me wrong I love feeling the rays on my skin, especially af ter the long New York winter, BUT UV damage is so not worth it in the long run. Laying out without protection is like stomping on the accelerator headed to wrinkle -ville. Not to mention, more than 5 sunburns doubles your chance for melanoma. Next time you hit the beach, make sure you are prepared. When picking an SPF, make sure to get one that is SPF 30 or above. Yep, those 10s and 15s are not doing the trick. SPF 30 gives you the dermatologist recommended level of protection. Though summertime is when we typically think about protecting our skin, wearing SPF should be a year round practice. Find one that you love wearing and apply as the last step of your routine ever y morning. Trust me, you’ll see results.

This summer we’re trying to get our hair off our neck and backs, and a messy top knot is the easiest hairstyle to do the trick. I slicked my hair into a high pony and braided sections of my hair into multiple braids, and then just twisted and pinned them with bobby pins.

When it comes to beating the heat and humidity, I often opt for the lightest amount of layers as possible and focus on breathable undergarments. I swap out my padded underwire bras (that just harbor sweat) for lace bralettes and cotton bras. I focus on lace and super thin cotton underwear that won’t show under a thin sundress, and my ultimate secret weapon? Bandelettes. I am no stranger to horrible chafing during the summer, so I always opt for dresses that I can layer Spanx or bike shorts underneath. I recently discovered Bandelettes and they changed my life. Sweating is a nerve issue, and it’s proven that food can promote good nerve health. Spaghetti with Crispy Zucchini & Lemon
RECIPE BY GOT ROOM FOR MORE
Serves: 2-3 People
Ingredients • 2 Medium Zucchini • 1/2 Lbs of Thin Spaghetti • About 1.5 Lemons (medium size) • 2 Large Eggs • 3 Tablespoons Heavy Cream • 1/2 Cup of Grated Percorino Romano Cheese (or Parmegiano Reggiano), plus more for garnish
• Salt & Pepper
(ideally pepper you grind from a grinder)
• Extra Virgin Olive Oil • Chopped Fresh Chives or Parsley for Garnish
Instructions 1. Preheat your oven to 375F. 2. Leaving the skin on, slice your zucchini with a mandolin or a sharp knife into thin round slices. Drizzle extra virgin olive oil on a sheet tray (you may need more than one to ensure you don’t crowd the pan). Lay the zucchini on the tray in one layer and then drizzle the top with more olive oil. Grind a little black pepper over the top and then place the trays in the oven. 3. While the zucchini is in the oven put up a large pot of salted water on the stove to boil. 4. Cook the zucchini about 15 minutes or until golden brown and the edges are slightly crisp. Remove from the oven and set aside. 5. In a small bowl beat together the 2 large eggs, heavy cream, grated cheese, a dash of salt and about 1/2 teaspoon of freshly ground black pepper. Set aside. 6. Using a vegetable peeler, remove two 1.5 inch long strips of lemon zest. Thinly slice each strip lengthwise into thin strands; set aside for serving. Finely grate remaining zest, you want 1 teaspoon of the finely grated zest in total. Next, squeeze the lemon (may take 1.5 lemons) and reserve 2.5 Tablespoons of juice; stir the 1 teaspoon of fine zest into the juice and set aside. 7. When the water is boiling add the thin spaghetti and cook according to the instructions on the box (roughly 7 minutes). Drain the pasta but be sure to reserve 1 cup of the starchy pasta water and set it aside. 8. While the pasta is piping hot and off the heat, using tongs or a spork to toss the pasta with the lemon juice mixture. While you are stirring quickly, add the egg/cheese mixture and make suer everything is nicely coated. The heat of the pasta will allow the egg mixture to cook and become a creamy texture. using tongs gently toss in 3/4 of the crispy zucchini. 9. Plate the pasta into your serving bowls and then top each dish with more grated cheese, cracked black pepper, a small sprinkling of the thin strips of zest and the remaining zucchini Chips. You can also add some nice freshness with a sprinkle of fresh parsley or chives.

Mexican Street Corn Avocado Toast RECIPE BY GOURMET GAB
Prep time - 5mins. Total time - 6mins.
Ingredients
Cook time -1min. Serves: 2 pieces
• 2 slices bread, toasted until golden brown • 1 avocado • 1 cup charred corn (I usually find it in the freezer section)

Instructions
2 tablespoons Greek yogurt 1 green onion, sliced 2 tablespoons cilantro, chopped, plus extra for garnish 1 lime, cut in half salt and pepper to taste 2 tablespoons crumbled feta (cotija or queso fresco)
• Chili powder • Red pepper flakes
1. Defrost the charred corn by heating in microwave with a little bit of water for 1 minute. Drain the water and dry off the corn. 2. Mix the corn, Greek yogurt, green onion, cilantro and half of the lime juice with a generous pinch of salt and pepper. 3. Cut the avocado in half and remove pit. Scoop avocado halves into a bowl. Squeeze the other half of lime into bowl and add two pinches of salt. Mix until avocado is spreadable, but a little chunky still. 4. Spread half of avocado mix on each piece of the toast, then top with the corn salad and crumbled feta. Sprinkle chili powder, red pepper flakes and cilantro for garnish.
Jalapeño Cilantro Hummus RECIPE BY GOURMET GAB
Prep time - 5mins. Serves: 2cups Total time - 5mins.
Ingredients • • • • • • • •
1 can garbanzo beans, drained and rinsed 2 jalapeños 1 bunch of cilantro 1 tablespoon tahini 1 clove of garlic 1 lemon, juiced 1 teaspoon salt ¼ teaspoon black pepper
• ¼ cup olive oil, or more as needed
Instructions 1. Cut the jalapeños remove the inner seeds to decrease the heat of the peppers. (Leave seeds in one jalapeño if you like spice!) 2. Add seeded jalapeños and all ingredients to a blender or food processor. Pulse or blend on high until smooth. If texture is too thick to blend easily, add another drizzle of olive oil or a teaspoon of water to smooth. 3. Serve with crackers, pita bread, naan or vegetables. Enjoy!
Lemon PoppyPound Cake RECIPE BY GOT ROOM FOR MORE
Ingredients • 2 sticks unsalted butter, softened
• Juice of one small/medium lemon
• 1/4 cup vegetable oil (or canola)
• 2 tablespoons poppy seeds
• 1 1/2 cups granulated white sugar • 4 eggs at room temperature • 2 cups cake flour, sifted
(not self rising, I like Swan brand in the red box)
Glaze • 1 cup confectioners sugar, sifted
• 1/4 teaspoon baking soda
• 1 1/2 tablespoons lemon juice
• 3/4 teaspoon salt
• 2-3 tablespoons cream
• 1/2 cup sour cream • 1 teaspoon vanilla • 2 teaspoons lemon extract • Zest of 1 Lemon
(half and half or milk)
• Pinch of salt • 1/4 teaspoon vanilla bean paste 1/8 teaspoon fresh vanilla bean seeds or 1/4 teaspoon vanilla extra also works!
(use a microplane or a fine zester)
Instructions Make the cake: 1. Preheat oven to 325 degrees F. Spray an 8x4-inch loaf pan with nonstick cooking spray and line with parchment paper; allow excess to overhang edges of pan. ( You can also just butter and flour the loaf paN but the parchment paper makes it easy to just pull the cake out.) Set aside. 2. Whisk the cake flour, baking soda, poppy seeds and salt together in a large bowl. Set aside. 3. With electric handheld heaters or stand mixer fitted with a paddle attachment, beat the butter and vegetable oil on high speed in a large bowl until smooth and creamy, about 1 minute. Add the granulated sugar and beat on high speed for 2 minutes until creamed. Scrape down the sides and up the bottom of the bowl as needed. 4. With the mixer running on low speed, add the eggs one at a time, then beat in the sour cream, lemon juice, lemon zest, lemon extract and the vanilla extract. Beat on medium-high speed until combined. 5. Scrape down the sides and up the bottom of the bowl as needed. With the mixer running on low speed, slowly add the dry ingredients just until combined. Turn the mixer up to high speed and beat for 10 seconds to rid any large lumps. Do not overmix! 6. Pour the batter into prepared loaf pan and bake for 45 minutes (can take up to 1 hour.) The cake is done when a toothpick inserted in the center comes out *mostly* clean. A couple moist crumbs may remain. 7. Remove cake from the oven and allow it to cool for about 30 minutes in a wire rack. Then remove from the pan and set aside as you make the glaze. Note, you want the cake jsut slightly warm to the touch when you glaze it, this will help get the right distribution. If it’s too hot however it will melt the glaze too much and it’ll be a mess. Make the glaze: 8. Whisk all of the glaze ingredients together and pour over slightly warm cake. You want the glaze to be fairly thick and opaque but pourable. Add more cream or milk as needed, it can vary. Right after you glaze the cake feel free to garnish with more lemon zest and or poppy seeds! 9. Allow cake to cool completely before serving. Slice and enjoy! 10. Wrapped in parchment and plastic wrap the cake should last on your counter at least 5 days or you can rightly wrap it and freeze it for another day!
Throughout quarantine I’ve put on my bartender hat and tested out some new cocktails! My new favorites have been a red sangria and a dirty martini. I’ve also perfected my go-to ‘skinny’ margarita and Aperol Spritz. I’m sharing my recipes with you for your next happy hour!
Dirty Martini Ingredients: • 2 1/2 ounces gin or vodka • 1/2 ounce dry vermouth • 1/2 ounce olive juice Garnish: 2 green olives
Directions: 1. Add all the ingredients into a shaker with ice and shake. 2. Strain into a chilled cocktail glass. 3. Garnish with 2 olives.
Red Sangria Ingredients: • • • •
1 bottle red wine 1 c. orange juice 1/2 c. brandy 1 orange, sliced
• 1 apple, sliced • 1 peach, sliced • 1 (12-oz.) can seltzer
Directions: 1. In a large pitcher, mix together wine, orange juice, brandy 2. Mix fruit into the pitcher 3. Refrigerate until ready to serve (preferably 2 hours) Top off with seltzer before serving.

Quarantine put a pin in most of our summer travel plans, but instead of jet setting to a tropical beach, we’re turning to one of my blogger besties, Camille of Charmed By Camille who has mastered quarantine travel: Isolation road trips. Camille is based in Los Angeles and has spent her weekends adventuring around California with her husband and snagging some travel-envy photos. She’s inspired me to see what is just a car ride away! No need to pack a passport, but grab your favorite playlist and camera, because it’s road trip time!

Probably just like a lot people, I started out “okay” when it came to COVID-19. In the beginning of all of this, the country, businesses, and individuals all thought it would be a couple of weeks and then we’d be fine. Obviously, you know how this story ends. As the weeks went on, days began to blur together. I found myself trying to figure out a way to differentiate the weekend days from the weekdays. One Saturday, I felt so antsy and suggested to my husband, Matt that we take a drive up the coast and head north about 1.5 hours from Los Angeles to Santa Barbara. We really didn’t have any plans; we just figured we would take a drive, put the windows down, and enjoy the change of scenery from the road. Creating content was not the initial idea when we started this little isolation road trip. In fact, I was so over sharing at-home content that I didn’t plan to bring my camera until after I got ready. I finally felt a little bit of excitement putting on real clothes and knowing we were going somewhere, even if the plan was to stay in the car. By the time we got to Santa Barbara, I felt so refreshed. It was exactly what my brain didn’t know it really needed. I felt so much better. There are a lot of different quotes out there about how changing your perspective, you can change things. But in this instance, perspective literally was everything. We were doing the same things in Santa Barbara (driving and ordering takeout) that we were doing in LA. The only difference is I wasn’t in LA.

Matt and I both decided that each Saturday we’d find somewhere else to go. And it’s done a few things for us including: • Made Saturday feel different and more special than the other days of the week. • Was the small thing we looked forward to each week, even if the rest of that week left us feeling unmotivated. • We were able to still feel like we “got a vacation” even for a day, from our cars. • Gave us a reason to get dressed! • Allowed us to spend time together – although we’ve both been home for months together, this broke up our routine from work life and home life that has become so blurred due to offices closing. • We got to experience our destinations in a unique way; new spots we’ve just never made time for and old spots we could enjoy without any rush to get home… all without traffic. • Revived my creative energy for new content, not only for the fashion aspect but for me to take photos of the world around me.
I shared our Santa Barbara trip on my Instagram stories just because I was finally excited to share something other than a skin care routine, a new cabinet I organized, etc. I got positive feedback from followers and a handful of messages with intentions of taking a small road trip, too. And in some way, for anyone else who was feeling antsy and stifled just like I was, they were able to, be part of our road trip and mentally escape, too. Since our first trip, we’ve gone to Palm Springs, Ojai, Solvang, San Luis Obispo, Laguna Beach, and picked fruit and Underwood Family Farms. As places continue to re-open, I think we will probably still take these road trips. Perhaps not every weekend, but I think as life becomes more “normal” again, it’ll be more important than ever to remember the moments we were able to create amidst a global pandemic. My mission for Fashion Fundamentals has always been to create positive change in the fashion industry, and offer resources to every type of student — no matter their race, age, educational background or geographical location. Student Diversity programs have helped me in my career, and I want to give back in any way I can to future students entering the fashion industry. When I was in college, I was selected for Hearst’s Diversity Internship Program. I was one of five students, and I was placed at Redbook magazine for a paid editorial internship. I would not have been able to afford to live in NYC without this paid internship, and most likely I would never have gotten the chance to move there after college either. I have been forever grateful for the people and mentors I met throughout this experience; it was a catalyst for starting Fashion Fundamentals for other students. I studied marketing and journalism at Arizona State University and I never had a formal fashion industry internship. I came from a hard-working blue collar family, and New York City and the fashion industry were foreign concepts to my parents. I desperately wish I had a mentor, a community of like-minded students, and readily available resources to learn about the industry when I was a student. When worldwide protests sparked at the end of May following the death of George Floyd in Minneapolis, we started seeing some small changes in the fashion industry due to the Black Lives Matter movement. I announced on my Instagram pages that for the months of June and July, I would be offering free registration to all Black community members. When I originally started Fashion Fundamentals in 2017, I dreamed of one day starting a scholarship program, a.k.a. Fashion Fundamentals Foundation. Over the past couple of months, it has become so clear to me that this scholarship program needs to be for diverse and underrepresented communities within the fashion industry. The Hearst Diversity Internship Program changed my life and my career, and I hope I can do the same for someone else. TH E S U M M E R E D I T 2020

The Fashion Fundamentals Foundation Scholarship will run twice a year (starting in January and July), and I will select five students to enter the program.
