It is said that love is patient, love is kind. Love is definitely kind, but 2020 put a test to love being patient.

An Intimate Wedding Ceremony
eddings in 2020 had to make drastic changes. Some couples postponed their marriage into 2021. Some held a virtual ceremony. And some cut the guest list down to an officiant. The effects of those changes are still lingering into 2021. But according to the wedding planning website TheKnot.com, wedding planning is still happening—in fact, 52 percent of couples have booked or hired a vendor since the onset of the pandemic. Most couples say their vendors were understanding of the unique situation and accommodating to new requests or updates. We found our favorite wedding venues in Kansas City to see what 2021 weddings will look like. The good news is we’re making our way down the aisle to normalcy.

ater. Built in 1928, the historic theater is the venue’s largest space and features an open floor plan, stage, video wall, and customizable lighting. Once COVID-19 restrictions are lifted, it can hold up to 480 people. Until then, virtual weddings are no problem, too. Uptown Theater also offers three additional spaces for a micro-ceremony or reception. The Broadway Room is noted for its arching bay windows and hardwood floors. The Valentine Room is a loft design with a spacious floor plan, cocktail bar, and crystal chandeliers. And the Cabaret Room is Uptown’s intimate space with a capacity of 100 people. The Cabaret is also a popular spot for a ceremony. But don’t wait to book. Venues are working with couples and being accommodating as we push through uncertain times. “We’re currently open for tours and have implemented COVID-19 cleaning guidelines, and we run our ozone air purifiers every night,” Alia Johnson, director of events at Uptown Theater, says. “2021 is filling fast!”
The Vow Exchange has been, and always will be, focused on micro-weddings, with hopes to get back to the full 50 to 75-person capacity in 2021. The Vow Exchange uses two event spaces. One is located in quaint downtown Liberty and the other is located in the excitement of downtown KC in the Crossroads. Virtual weddings are also available for up to 99 people.

The Crossroads salon seats 50 guests comfortably with candlelight and floral decor providing a warm, gorgeous yet modern setting. The chapel joins the dozens of restaurants and cocktail lounges in the heart of Kansas City. The Chapel on The Corner in downtown Liberty has 1920s vintage roots, with wall-to-wall 12-foot arched windows, floor-to-ceiling sheer drapery, and vintage skyscraper fixtures. Set

on a quiet corner of the family-friendly small town Liberty Square, the chapel is perfect for couples looking for an intimate wedding celebration with room for up to 70 people. Kathryn Hogan is the owner of The Vow Exchange. She got the idea while planning her tenth wedding anniversary vow renewal in Las Vegas. “As it turns out, there are dozens of couples who are not interested in planning or paying for a large wedding,” Hogan says. And

Cedar Valley Forest in DeSoto, Kansas, is an 80-year-old Christmas tree farm that offers over 40 acres of towering oak trees, cedars, and a picturesque pond. 2020 was not open for Christmas trees as Cedar Valley reserved the time to accommodate the 2020 weddings that had to rearrange their wedding day plans. Cedar Valley Forest continues to put weddings first in 2021.
Offering the outdoors as a ceremony or reception site proved to be an asset in 2020. The breathtaking views are nestled alongside Cedar Creek stream that shows the natural beauty of Kansas. There are two ceremony sites, one with a wooded backdrop complete with the ambiance of a running stream nearby, and another ceremony site nestled between two large oaks. The Cottage is designed for your home away from home with a separate bridal suite and groom’s room (you can even stay overnight, if you wish). When COVID-19 restrictions are lifted, Cedar Valley Forest offers The Barn indoor event space for up to 250 people. An outdoor patio party is also available.

USING CULINARY MEDICINE TO BOOST HEART HEALTH WRITTEN BY JACKIE WOODS
It’s no secret that nutrition is an important part of good health. A balanced diet rich in fruits and vegetables, lean protein, and whole grains helps maintain an optimal weight and prevent disease. Some people are now taking this idea a step further by learning which foods will best maximize health based on their personal medical history. In other words, the foods we eat and how we prepare them may prove to be our best medicine—an idea referred to as culinary medicine. Defined by The American College of Lifestyle Medicine, culinary medicine combines nutrition and culinary skills to help people maintain health and prevent and treat disease. With culinary medicine, a person’s diet is customized with foods and beverages that will best restore well-being based on their medical conditions. It is a supportive nutritional program used in conjunction with your current medical care. Lisa Markley, MS, RDN, is culinary medicine director at AdventHealth Shawnee Mission. She works to determine how a person’s food choices influence metabolism, immune function, and the development and treatment of chronic conditions. “My goal is to help patients make connections between dietary choices and health conditions so they can gain the culinary confidence and nutrition know-how to incorporate more health-supportive foods into their diets,” says Markley. “Nourishing food is foundational for good health and culinary medicine demonstrates that it’s possible to care for yourself safely, effectively, and enjoyably using something as simple as good food.” February is American Heart Month, so we asked Markley to share how
culinary medicine can help improve heart health. “When you cook and eat at home, you’re able to have more control over exactly what’s going into your meal and the techniques used to prepare it,” says Markley. “For example, you have more control over the amount of salt, sugar, and types of fat in your food.” Markley notes that eating out can be tough when you are focusing on heart health because many foods prepared in restaurants are high in sugar as well as salt and trans and saturated fats.
“We tend to get the most trans fats in our diets from deep-fried options,” says Markley. “We don’t normally use deep-frying as a frequent cooking method at home, but fried foods are ubiquitous on restaurant menus.” It’s best to plan ahead before eating out. Go online to read the menu and nutrition information so you can find the best options. If you’re focusing on heart health, it’s important to know how the food is prepared. “Opt for items that are baked, grilled, or roasted versus deep fried,” says Mark-

Steaming retains most of the vitamins and minerals in our food and roasting in the oven is a great way to deepen flavors. While sautéing is an easy cooking method, be sure to use a healthy oil. A good choice is avocado oil, which can tolerate higher heat without oxidizing or smoking in the pan, or extravirgin olive oil if you are sautéing at a lower heat. Another option is to steam-sauté with a small amount of water or low-sodium broth instead of oil. T
he touch of a hand during hands-on healing treatment can do one of three things: export energy from the therapist, import energy or information from the recipient, or both. It is one thing to have treatment when the therapist is merely following an impersonalized and routine protocol designed for the generic client—the therapist starts at the head, travels to the feet, and never notices any of your individualized pain and sensitivities. It is quite another thing to have a healer lay hands on you. A healer’s hands listen to the energy your body is communicating. They feel your pain—not empathetically, but physically feel your pain—through touch. Their hands then migrate toward your pain to help you release it and let your body heal itself. This is what a true healer does, and it is what I experienced at Midwest Myofascial Release Center.

With myofascial release, one is looked at as a unique individual. One-on-one sessions are personalized, incorporating a wide range of therapeutic massage and movement techniques designed to restore healthy function. “Myo” refers to muscle and “fascia” is the connective tissue surrounding each muscle, like a three-dimensional spider web. The fascia is the only part of the body that goes
everywhere. Nerves end. Muscles end. But fascia exists everywhere in the body. From a layman’s perspective, it is called myofascial release because physical and/or emotional pain and trauma can become trapped in the body in our fascia. We then carry that pain with us. This unique therapy helps find that energy trapped in the fascia and release it, thus creating the opportunity for our bodies to restore themselves to health. We then have the freedom to live in a painfree body that is able to function at its optimal level of health and well-being.
Getting Out of My Own Way My 60-minute session was one of healing and synergy. The therapist observed my posture and my inflammation with her eyes and hands. She then took all of that information and let her hands travel to the parts of my body that needed healing and release. For me, that was my left side. Having had

ACL reconstruction on my left knee and ankle ligament reconstruction on my left ankle, my left leg was carrying the trauma of two surgeries, and needed attention. She then worked on the left side of my upper back and shoulder. I have an area in my left shoulder blade which I call my “spot” because I always have pain there. My therapist’s hands found that spot immediately and worked on it. What relief! The only negative part of my experience was that it had to end. I arose from the table feeling relaxed. I was breathing differently—more deeply, releasing bodily stresses with each exhale. I felt at peace. Energy that was once blocked was now flowing freely within me.

f there is ever a day in a person’s life where one wishes for total control and things to be executed perfectly, it’s their wedding day. Months or years of preparation go into the planning of a wedding. Brides and grooms endure hours of exhaustive preparation, agonizing over each and every choice and detail, all in hopes of creating a dream-come-true wedding day for themselves and their guests. What isn’t wanted? Unpredictability. Last minute changes. Last minute cancellations. Last minute anything! But with COVID-19, engaged couples must expect the unexpected, plan for the unplanned, and adopt a “go with the flow” mentality.
Downsize, Individualize, & Have a Sense of Humor How does one attempt to control the uncontrollable? One strategy is to downsize the numbers: hence, the birth of the micro-wedding. Guest lists that once included 100 people now include 10. 200 guests are down to 15. Because there are fewer guests, brides and grooms have the budget and time to truly spoil the few guests who attend their micro-wedding. Welcome boxes have become a trend for 2021 weddings. A welcome box is given to your guests upon arrival to your wedding with the intention of making guests feel special and seen.

The box may contain items like hand sanitizer, face masks, wedding programs, and favors. Brides and grooms can be very creative with the items they choose to put in the welcome boxes, individualizing them for each guest or party of guests. It is an opportunity to personally connect with each and every guest without having to be physically present. Food at weddings has become very individualized as well. There is less communal sharing of food via hor d’oeuvres trays, buffet dinners, or wedding cake tables. Buffets have been replaced with plated, served, individual dinners. Large wedding cakes have been replaced with small mini cakes served on individual plates. Hor d’oeuvres are no longer served on communal trays and are now served on individual plates as well. One of the elements of a wedding the pandemic has not changed is the bridal gown. The gown has always been the centerpiece to a wedding work of art. Emily Hart of Emily Hart Bridal in Overland Park has showcased many of the bridal gown trends for 2021 in her latest collection. “At Emily Hart, we know that finding and purchasing the perfect wedding dress is an experience that is to be cherished and remembered,” says Hart. “We are honored to share this special moment with our guests.” Their team works hard to unite each

For the bride who wants her dress to be a bit edgy, low backs and cutouts are trending. For 2021, small has replaced big. Intentional has replaced over-the-top. Social distancing has replaced receiving lines. Yellow gold has replaced white gold. Color has replaced white and black. Outdoor has replaced indoor. Individualized meals have replaced communal meals. And quality has replaced quantity. But, most importantly, a sense of humor has replaced the need for perfectionism. COVID-19 has taught the wedding community that one must always remember to keep a sense of humor … even if it’s your wedding day, even if you desperately want everything to be perfect, even if you are constantly forced to adapt to a global pandemic. A sense of humor is critical not only on your wedding day, but throughout your marriage.

Who said you have to wear a dress? ;) If a dress isn’t your style, maybe a chic little jumpsuit is your perfect match! If pants don’t feel like you either, don’t panic because there’s 101 ways to spice up a wedding dress. Maybe a blush or champagne colored gown is more you? Perhaps a daring high slit to show off your gorgeous legs? A sheer bodice to show some skin in a spicy and unique way? The list truly goes on and on... My personal favorite trend you should consider is a detachable overskirt, like the Catalina gown from my Emily Hart Collection. With a style like her you can walk down the aisle with maximum drama, and then POOF! - remove the skirt and show off your curves with a new silhouette, and serve a whole second (and equally jawdropping!) look for the reception.

There’s no right or wrong number of shops to visit when you’re looking for your dress. It’s a lot like dating: When you found your person, you stopped dating. You didn’t think “Oh no, I really wanted to date 5 people before I found the one” So if you find your dress at the first shop, GREAT! If you find it at your fourth shop, also GREAT!! But just like you stopped dating when you found your boo... When you find your dress, you should stop shopping.

I am SO proud of you for making the decision that was the best fit for you and your love. I know 2020 presented way more impossible decisions, hard questions and planning than you bargained for. o one said going to the gym was easy.

The country is still in the grip of a global pandemic, and out-of-breath crowds at a gym is probably not the healthiest setting. Jacory Marshall, owner of Traveling Trainers based in Lenexa, Kansas, learned that social distancing and avoiding crowds is actually good for his business. Traveling Trainers brings personal training to you, wherever that may be. “When COVID-19 hit last year, it made me push for virtual training,” Marshall says. “I had plans to go virtual anyway, but last year kicked it in gear.” Training sessions are done through Zoom, and are live with one

Gracing the 14th floor atop the Reverb Apartment complex in downtown KC, The Mercury Room brings a unique and decadent cocktail experience unlike any other. SIMPLYkc sat down with general manager Kyle Bennett to chat about this delightful new taste haven.
How did you decide on the location for The Mercury Room? Reverb’s management team wanted to use the 14th floor for some amenities, and they approached us based on their appreciation of The Monarch Bar in the West Plaza and Verdigris in Leawood. The “us” is Exit Strategy, owned by David Manica, Christian Moscoso, Dominic Petrucci and Brock Schulte. We then toured the space, and as soon as our team at Exit Strategy saw the room with the unbelievable view, it was a done deal. From the

initial conversation to the concept, design, build, and open took right about a year.
What can guests expect at the establishment that can’t be found elsewhere? Strategy director of training Dominic Petrucci and his brother Tom Petrucci, beverage director and head bartender, curated our cocktail menu, which sets us apart. They put their best foot forward with The Mercury Room, and it sets a tone for what is to come. Our goal is to push the boundaries with ingredients, preparation, and presentation. If you look at our menu you find many components you wouldn’t expect to be in a cocktail, or some you have never even heard of before. The experience includes a $30 cocktail of your choice from the menu, which features a palate cleanser bev-
erage and a small bite as well. Tax and gratuity are also included in the $30.
We seat about 20 guests at a time, which is part of our venue’s exclusive appeal. It’s a hands-on approach to service and is reservation-based only.
What kind of small bites are offered with the specialty drinks?
The dress is cocktail or black tie, business to formal; gentlemen have a collar or jacket on. We have a shared expectation between our guests and staff. Dressed in striking white suits with white vests, The Mercury Room’s discreet team ensures the guests feel immersed in a luxurious experience.
Michael Corvino of Corvino Supper Club prepares small bites—it’s a creative collaboration. For instance, right now we are featuring a mixed-seed cracker with lemon marmalade and Maldon Salt, a black garlic shortbread cookie, and scallion Nori with apple butter puree and toasted hazelnut. These items are one or two bites— they are versatile in flavor so they don’t compete with specific cocktails but provide a textural breakup.
Many of the guests’ unforgettable experiences include celebrating special occasions, whether an anniversary, birthday, or celebrating with friends who are in town for a visit. We have been open only a few months, and three marriage proposals have already happened in the room!
What is your strategy for customer experience? Michael Moscoso is our hospitality director, and he is focused on attention to detail, reservations, and customer experience. Our guests are greeted upon arrival, then take an elevator to
the 14th floor to find an 800-squarefoot space with breathtaking views of the city and a small patio. Over 9,000 LED light bulbs and black floors add a visual element to further the lavish feel.

BEING A PARENT TO OUR KIDS
OR BEING THEIR FRIEND— CAN WE BE BOTH? WRITTEN BY REBECCA FISCHER
O
n the long list of things that the pandemic has complicated over the past year, parenting has to be at or near the top. The coronavirus has introduced a whole new set of worries regarding one of the toughest jobs out there: being a parent. According to a national poll from December*, parents’ top concerns about the effects of the pandemic on their children are: 1. How much time children are spending on screens and social media 2. I f their child is being bullied or cyberbullied 3. If their child could be in danger while online. Other concerns include increases in unhealthy eating habits and a lack of physical activity, as well as worries over racism, depression, and the risk of suicide.
Will being buddies help?
The survey supports what we already know: parents are feeling more over-

whelmed than ever when it comes to their kids. Kids are feeling the strain too, even the small percentage who seem to prefer school at home. For so-called “helicopter parents” (or those who tend to hover over their children and over-parent, such as by completing tasks for them, or at least very closely supervising), the pandemic has been particularly challenging. Parents who are over-involved in their children’s lives tend to be perfectionistic, shows a new study in the journal Couple and Family Psychology: Research and Practice. They’re applying the same skills that helped them succeed in school and work to their role as a parent. But this doesn’t usually lead to success in parenting. It’s well documented that children who are over-parented are more likely to suffer from psychological distress, narcissism, poor adjustment, alcohol and drug use, and other behavioral problems. Anxious adults might also over-parent because they tend to parent with
risk-aversion in mind—they ruminate on the bad things that could happen and focus on avoiding them. It’s easy to see how the stress we’ve all faced over the past year could trigger the response to over-parent. But trying to be friends with your child isn’t the best response either. While great in theory (what kid doesn’t want more friends in their life?), it can backfire in practice. Parents who aim to be buddies with their kids by being permissive often find it hard to enforce rules and standards. Some might share too much with their children as well, which can add to kids’ own stress. In fact, sharing “intimate confessions” with our children often misses the mark. In a recent study of adolescent girls, more detailed disclosures from moms were not linked to greater feelings of closeness in their daughters.
Meeting in the Middle
The solution lies in being a parent first and a friend second. Or it could come
down to redefining what a friend is, according to the author of “Should Parents Be Friends with Their Kids?” in Parenting Science Magazine. “Parents can build close, personal relationships with their kids and still remain responsible adults. Not every friendship is based on sharing equal status,” says author Gwen Dewar, PhD. Dewar goes on to say that a parent can choose to enforce limits and avoid stressing out his kids with his own worries, while also sharing qualities of friendship with his children, like mutual loyalty, trust, and respect. Dads and moms might go about this by: • Talking to their kids about their kids’ own thoughts, hopes, ideas, and feelings • Treating their kids as individuals with minds of their own • Sharing parts of their own “mental life” that help their kids see them as human beings, without stressing them out (“I’m disappointed that we couldn’t go to the beach this year too, but it’s im-
portant that we do everything we can to keep ourselves and others healthy right now”). This is consistent with studies on parenting styles and techniques such as “mind-minded parenting,” secure attachments, inductive disciplining, and authoritative parenting. Dewar compares this kind of friendship to the friendship an employee might have with a good boss. There is mutual respect, they care about each other and trust each other, they enjoy each other’s company, but there are times when the boss has to enforce rules, as well as keep some feelings and information to herself. “Is it worth it? I suppose it depends on your personal characteristics and cultural beliefs,” Dewar says. “But studies on Western kids are generally supportive of the rational, friendly, authoritative approach to parenting.” * Source: CNN, “Here are parents’ top 10 concerns during the pandemic,” Dec. 22, 2020.

Is Sunless Tanning Safe? What exactly are spray tans? Sunless at-home tanning products include active tanning agent dihydroxyacetone (DHA). When DHA comes into contact with your dead skin cells on the outermost layer of skin, the result simulates a tan and usually lasts for several days. DHAs are the only FDA-approved sunless tanning ingredient for external application to the skin. The FDA states that DHA “shouldn’t be inhaled or applied to areas covered by mucous

membranes, including the lips, nose or areas around the eyes because the risks of doing so are unknown,” (according to the Mayo Clinic).
Take a Test Run. If this is your first time using sunless tanning products, you may not want to jump straight into a professional spray tan. Instead, grab your mask and head to your local drugstore (or power up your laptop for some online shopping). It’s likely your store will feature a wide variety of products for you to choose from, including lotions, serums, mousses, towelettes, and liquid drops. Make sure to do some research before you hit the aisle and test on a small patch of skin before applying.
Bring in the Professionals— Literally! Need a quick glow ASAP? Don’t panic-apply 30 layers of product. It’s time to bring in the big guns! Tara Green, owner of TanTara Mobile Airbrush Tan answers all of our at-home inquiries.
“Since the COVID pandemic, I have made many changes to my in-home service visits,” Green shares. “I have gone to sanitizing all equipment between appointments using a fresh tent, which is wiped down with anti-bacterial wipes and switched outside between clients.” Green also uses disposable paper in the bottom of each tent, disposable hairnets, sticky feet, and a face mask and surgical gloves during each service. When it comes to pre-tan prep, you don’t want to do too much. Green explains the same preparation goes for whether you are using self-tanning products or getting a spray tan from a professional—that includes exfoliating no later than 24 hours in advance of your spray tan and showering no later than four hours prior. “The reason the 24-hour exfoliation is important is when you are exfoliating your skin, you’re also removing the skin’s essential amino acids, which can take 24 hours to regenerate after an exfoliation,”
Green explains. “Since a spray tan is nothing more than a chemical reaction in the amino acids of your dead skin cells, you need those amino acids to replenish so you don’t come out streaky or patchy and so the spray tan has something to interact with. Otherwise your tan may not process well at all.” However, showering fewer than four hours prior to your spray tan is the most common mistake Green sees. “Water is slightly alkaline and knocks off the pH balance of your skin,” Green explains. “After a shower, it takes approximately three to four hours for your skin to return to its normal pH level. For clients who don’t have time to properly prep their skin, I do have professional skin prep products I use on every single client so their results are guaranteed every time.”
Golden Rules Clean skin will get you the best results. “Bar soaps and moisturizing shower gels can leave heavy, waxy barriers on your
skin and prevent the absorption of your tan,” Green explains. “Products like deodorant, lotion, makeup, and moisturizers—even conditioner from washing your hair—can be enough to prevent the proper absorption of your tan.” Exfoliate! Exfoliating anywhere from 48 to 24 hours in advance of your tan can help provide you with the best results, helping your tan last, on average, 10 days. Protect Your Tan. One of Green’s favorite products to recommend post-tan is Hempz lotion or products like Baby Bum and mineral-based sunscreens. Since spray tans do not include any sun protection, you should always wear a topical SPF as well, she notes. And if you’re dreaming of a romantic night relaxing in the hot tub, skip out. Water is a natural exfoliant. “The more you are exposed to water post-tan, the worse your tan will be for the wear,” Green says. “And any time your skin is wet you should pat it dry—never rub.”

Diane Joy Bender has had a passion for hair since she was young. Finding ways to fuel this desire wasn’t difficult. She played with the hair on her dolls and styled any wigs she could get her hands on. After high school she began college, but the courses didn’t resonate with her. Having never forgotten this passion for hair, she made her way to cosmetology school. Years later, Bender hit a bump in the road when she learned she had breast cancer. “When I was first diagnosed at age 34, I did not know a soul who had ever had breast cancer. I was an anomaly in my family as well,” says Bender. This was a challenging and confusing time in her life that encouraged her to make some changes. She decided to go back to school and finish her communication degree. This allowed her to advocate for women in countless ways. One experience she looks back on fondly was when she represented the American Cancer Society, testifying in front of the Kansas Senate for legislation to have breast

After years focused on giving to the community, Bender found her way back to her first true passion: hair. She opened her own salon and spa called Red Poppy Wigs and Cancer Care Products. She has given up the large audiences and instead is focused on helping women individually. Consistently meeting new women and helping them through such difficult times is something Bender takes pride in. “I get to make them feel better about how they will look and let them know that there is hope,” Bender adds.

The first consultation usually lasts about an hour, depending on the needs of each client. The world is completely different from a year ago. We’re edging closer to a post-pandemic world, but it’s not the same as it was. One thing that changed is the travel industry. Oh yes, a good warm vacation with sand in between your toes, salt in your hair, and maybe a fruity rum drink in your hand is just what 2021 needs.
Here’s what a vacation should not be: COLD. I know we live one state away from some of the best skiing in the world, but just hear me out.

I’ve never seen a mountain. I went to Denver once, but it was cloudy. As I said, I don’t believe in cold vacations. All of my vacation beliefs are traced back to my parents. It’s how I was raised—completely normal. But I do have questions for you:
I swear, if I get left on top of a mountain by myself, I will click off those skis and walk sideways down the mountain. Given the choice of looking crazy side-walking down a mountain in boots or rolling down a mountain in a ball of snow, I’ll take crazy. No, I will not try snowboarding! I’d rather walk sideways.
What happens if I don’t want to get off the ski lift? Can I ride back down? What happens if I don’t want to go down once I’m pushed off the lift? Can I ride on someone’s back and close my eyes? Can you pull me on a sled and I’ll close my eyes?
Are the ski stick thingies a brake? I went skiing once in fifth grade on a hill in Kansas or maybe Missouri. It’s called Snow Creek. My friend’s parents took me with their family. All I remember is being cold and thinking Where’s my mommy?
How many layers of clothes should I wear? How is it even considered a vacation? Vacations are meant for as little

Then send a helicopter. Yeah, I’ve seen pictures of people smiling during their ski trip. I feel sorry for them. They look cold. Teeth chattering makes a natural smile. But it’s 2021. Sure, I’ll go. Why not?

ummer Johnson, owner of Catered Beauty Salon, was surrounded by hairstyling in her family. Both her parents are stylists, and she grew up in the hairstyling industry. Over time, she developed the same passion as her parents and, as an adult, she chose to follow their example. As a result, Johnson treats her clientele like friends and family.

Johnson has even traveled to Florida to do hair and makeup for a bridal party with a destination wedding. “For my brides, I want them to feel at ease on the day of their wedding. She says the wedding day is such a fun atmosphere, and she loves to be with the bride on her special day. There’s something deeply mysterious about chocolate, possibly due to its origins. The Aztecs believed that cacao seeds were the gift of Quetzalcoatl, the god of wisdom, and were once valued so highly they were used as a form of currency. Originally prepared as a drink, it was believed to be an aphrodisiac and to give strength to those who drank it. While not nearly as dramatic, vanilla is deeply comforting in its own way, and may be one of the world’s most popular flavors with its delectable aroma and taste. Crème brulee—vanilla custard with a burnt sugar top—is sensuous and silky, comforting and familiar on its own, but even more memorable when accompanied by small cookies, chocolate, or fresh fruit—or someone special to share it with. Happy Valentine’s Day!
Double Vanilla Crème Brulee, SERVES 4-6 Ingredients 2-1/3 c. heavy cream 1/3 c. half and half 1 vanilla bean, split lengthwise 8 egg yolks 1/2 c. granulated sugar
Directions
You will need: 4-6 individual soufflé, 4-6 ounces soufflé dishes or large ramekins, a kitchen torch (optional), and pan to function as a water bath. Heat the oven to 300 degrees. Heat the cream, half and half, and vanilla bean in a saucepan over medium heat until it comes to a boil. Immediately turn off heat. Set mixture aside to infuse for 10 minutes. Whisk egg yolks with sugar in a large bowl until combined. Gradually pour in hot cream mixture, then add vanilla extract. Strain mixture into a pitcher to smooth and to remove the vanilla bean. Using tip of a paring knife, scrape vanilla bean seeds back into custard mixture.
1/4 tsp. pure vanilla extract 1/2 c . coarse sugar, raw sugar, demerara sugar, or granulated sugar in a pinch
Arrange in a roasting pan or 13-by-9inch baking pan, and pour hot water around ramekins to a depth of about 3/4 to 1 inch, being careful not to splash water into ramekins. Bake in center of oven until custards are set, about 40-45 minutes. Remove from water bath and let cool 15 minutes. Tightly cover each custard with plastic wrap, making sure plastic does not touch the surface. Refrigerate at least two hours. When ready to serve, sprinkle surface of each custard with even layer of coarse sugar and torch the surface until sugar is melted and well browned, about 1 minute. Let crème brulee cool slightly and serve immediately.
