Welcome to the delicious world of dining and entertainment in Northern Idaho! We are in a very unique area here in the Inland Northwest; Coeur d’Alene and Sandpoint areas are intrinsically linked to the greater Spokane area. Spokane residents love to play and enjoy the beautiful scenery and outdoor life in Northern Idaho, and Spokane is Northern Idaho’s connection to our area’s international airport, local medical facilities and cultural events. We bring it all together here to help you find just the dining experience you are looking for. We keep you informed about the neighborhood hot spots and the longstanding successes of the Inland Northwest. In this issue we present to you Uva, downtown Coeur d’Alene’s newest resident Italian eatery, and some very important anniversaries for a few of our most successful local favorites. Capone's Pub and Grill is celebrating their 25th anniversary as Coeur d'Alene's hottest local Americanstyle sports pub. They started out in a tiny shack that was once a gas station and have blossomed to now have three sports pubs, also in Post Falls and Hayden. Moon Time in Coeur d'Alene is also celebrating with 20 years as the Inland Northwest's original gastro pub. They have established their following by serving Northern Idaho and Spokane with upscale pub cuisine at six locations with servers and cooks who really love their jobs. And, Sandpoint's own Pend d'Oreille Winery is celebrating 20 years of vinting excellence! My how they have grown to produce not only their awardwinning wines, but now with their gift shop and restaurant are a one-stop shop, wine and food destination. Cook like a Pro RECIPES

Want to try it at home? Here, some of the area's best chefs and barkeeps share a few of their customer favorites with you. Try your hand at making some of these tasty recipes from the pros!

SEASONS EXOTIC MUSHROOM RISOTTO Chef Scott, Seasons of Coeur d’Alene 209 Lakeside Ave., Downtown Coeur d'Alene 664-8008

INGREDIENTS

5-6 C. Vegetable or chicken broth – if packaged choose low sodium 2 Tbsp. olive oil 1 onion diced small 1 tsp. minced garlic 1 ½ C. assorted wild and cultivated mushrooms, cleaned and thinly sliced or torn. We use an assortment such as Matsutake, lobster mushrooms, king trumpet, morel and chanterelles when available. 2 C. Arborio or Carnaroli rice 1 tsp. chopped fresh thyme 1 C. dry white wine ½ tsp. kosher salt – possibly more to taste ½ tsp. freshly ground black pepper 2 Tbsp. cold butter 1 C. finely shredded parmesan cheese – not the powdery kind

METHOD

In a medium saucepan, bring the stock to a simmer over medium heat. Reduce heat to low just to keep the stock hot. In a large heavy saucepan, heat the olive oil over medium-high heat. Add the onions and garlic, stirring frequently until fragrant and soft – about 3 minutes. Add mushrooms and cook stirring until wilted and any liquids extracted are evaporated. Add the rice and cook, stirring constantly, to coat the grains, about 1 minute. Fold in the thyme. Add the wine and cook, stirring frequently, until nearly evaporated. Add 1 cup of the hot stock, salt and pepper.

RISOTTO

Cook stirring very frequently until the stock is nearly absorbed by the rice. Continue adding more stock ¾ of a cup at a time as the previous addition has been absorbed, continuing until the rice is tender and creamy, approximately 18-20 minutes. Fold in the butter and parmesan cheese. Remove from heat and adjust seasoning as desired. Serve immediately, garnish with a sprinkle of parmesan and perhaps your favorite garnish of thin slice prosciutto, Serrano ham, truffle oil or arugula gremolata. ENJOY!

INGREDIENTS 1 ½ oz. Courvoisier ½ oz. Cointreau ½ oz. cranberry juice (or to taste) ¾ oz. lemon juice ½ oz. simple syrup 3 - 4 dashes of Coeur d'Alene Bitters #17 RYAN'S CHRISTMAS COSMO

METHOD Shake all ingredients with ice and strain into a martini glass. Garnish with lime wedges or 3 cranberries and a lemon peel on a stick. CHEERS!


RECIPES KYNREDE CAFÉ SQUASH TART

SERVES 6

INGREDIENTS

CRUST:

Cut squash in half and brush the cut side with the olive oil. Bake at 375° for 30 minutes until lightly browned. Cool and remove seeds, scoop out the flesh into a bowl and mash.

Premade pie dough FILLING:

½ small butternut squash 1 tsp. olive oil 1 C. heavy cream salt and pepper to taste 6 oz. gorgonzola cheese 2 eggs plus 1 egg yolk 6-8 leaves fresh sage small bunch of scallions KYNREDE SQUASH TART

Lightly grease a 9” fluted tart pan. Roll out pie dough, lift and press to fit, trim off excess. Place parchment paper in the bottom with dried beans on top and chill for 30 minutes. Pre-bake crust in pre-heated oven for 10 minutes at 375°, remove beans and bake for another 5 minutes.

ANGELO'S GRILLED POLENTA SALAD WITH GOAT CHEESE

Mix mashed squash with ½ C. of the heavy cream and season with salt and pepper. Pour into tart shell. Layer with gorgonzola cheese slices, leaving some for garnish crumbles. In separate bowl, mix eggs, egg yolk and remaining cream. Pour slowly on top of cheese to allow mixture to settle evenly into tart pan. Place sage leaves on the surface and bake 30-35 minutes at 375°. After removing from oven, let tart rest 10 minutes before serving. Top with sliced green onion and gorgonzola cheese crumbles to serve.

INGREDIENTS

1/2 oz. fresh rosemary (chopped very fine) 4 ½ C. water 1 ½ C. polenta cornmeal (quick cooking) 2 oz. butter 4 oz. parmesan cheese (ground) 1 tsp. salt SUNDRIED REDUCTION (fold into polenta) 1 C. sundried tomatoes 1½ C. white wine ½ C. white balsamic or champagne vinegar Reduce by 1/2, cool down a little and puree in food processor. Add to warm polenta and mix together in step 8 below.

NOTE: THIS ITEM NEEDS COMPLETE ATTENTION. DO NOT LEAVE UNATTENDED.

Make Sundried Tomato Reduction In a stock pot heat the water Once liquid mix reaches boiling temperature, add salt. After the salt has dissolved, turn off the heat. Slowly whisk in the polenta. Turn the heat back on very low and add rosemary. Continue to cook, stirring frequently for 4 minutes. Turn off heat. 7. Add butter and parmesan cheese. Mix well, stirring for 2 minutes. 8. Stir in the sundried tomato reduction puree 9. Evenly spread the finished polenta into sheet pan, filling the pan to ¾ inch. 10. Allow to cool completely in the refrigerator (2 hours) 11. After the polenta has cooled, cut into square pieces and then triangles out of them 12. Grill them in a preheated sauté pan or flat top grill with olive oil

ANGELO'S GRILLED POLENTA SALAD WITH GOAT CHEESE

TOMATO VINAIGRETTE This is the dressing for the salad. Reduce in pan ½ C. of sundried tomatoes and ¼ C. white balsamic or champagne vinegar with 1 C. white wine. Cool down and puree with ½ Tbsp. of Dijon, 1 Tbsp. shallots, 2 Tbsp. lemon juice, 2 C. sunflower oil. Assemble salad with spring mix, vinaigrette, sliced black olives, goat cheese and the grilled polenta, splashing a little more vinaigrette on top. The polenta also freezes well to keep on hand for future use.

CAPONE'S Classic baseball cards, concert tickets and fun memorabilia adorn the tabletops and bar, while the walls are adorned with vintage baseball gloves and antique sports gear. Capone’s Pub and Grill is a place like no other in the Inland Northwest. And with three restaurant locations— Coeur d’Alene, Post Falls and Hayden, Idaho—they have continued to satisfy diners for the past 24 years. Tom and Teresa Capone filled a niche that needed filling by opening the original Capone’s on October 7, 1991, in what is now Coeur d’Alene’s midtown community. The original “Taxi”-inspired restaurant on Fourth Street includes the color scheme from Mario’s, the hip spot on the show. The cuisine is East Coast comfort food with a twist using the best ingredients, locally sourced meats including Heritage Meats, with freshbaked bread daily, scratch-made hand14

The Tommy’s Pastrami sandwich has been a Capone’s best-seller for years. “We use the best ingredients we can while still making it affordable,” says Teresa. The pub and grill is a cornerstone in Coeur d’Alene’s Midtown and has come a long way since it began as a little shack, having been expanded eight times during its 24 years in business—the most recent this past fall. The newest addition to the restaurant has come with more outdoor space for diners and parking and a whole lot of new kitchen space. Capone’s expanded Coeur d’Alene kitchen further enables them to better serve their customers and do larger events and catering. Their restaurant concept had a winning recipe that was well received; a

hit among locals and tourists alike, so in 2006, the couple welcomed the Post Falls Capone’s location, and in 2013, Hayden residents were delighted when a third Capone’s landed in their neighborhood. Both Post Falls and Hayden locations offer the same Capone’s formula with its pub feel, sports memorabilia-lined walls, tables and ceilings, and the same awardwinning pizza and epic tap selection. “We appreciate the community we live in and are especially grateful for our regular customers,” says Teresa. It wasn’t the season of the neighborhood pub. Gastro pub wasn’t a cliché buzz word, and opening a restaurant outside of a high-traffic commercial zone wasn’t the trend. It was the start of something. was 20 years ago. Moon Time opened as the original gastro pub of the Inland Northwest. They opened at a time when bar food was rarely more than a fatty fried or salty snack. The neighborhood bistro or pub, locally owned and operated, wasn’t the trend here. This is Northern Idaho. The

Here was a new place to be connected to your neighbors, servers that know you, familiar faces, exceptional food and great selection of beer; something worth checking out. And, this is what they created. Their motto was appropriate then and always has been: “Every

He appreciates being allowed to be creative and is inspired to keep seasonal changes as interesting as the core favorites on the menu. The food is traditional with a modern take, and the menu always has some new trendy items. Chris has turned

cook and kitchen magician. Luke says they are treated well, and it just flows through in the way they operate. Luke has been with them 12 years and feels that having good owners to work for and the people they have coming in the door helps build a crew that likes to come to work every day. “We have a lot of freedom … and a good core group that has been here a while. It’s up to us what we want to do; it lets us be creative, whether it’s creating good specials or soups.” Luke adds, “We have a chicken breast burger we now call The Lloydwich in the computer because [Llyod, a regular Porch patron], comes in and orders it all the time. I have an appreciation for the food we have—we are lucky to have the people we have here, and the owners take care of us.” Luke also coaches soccer with his kids and appreciates their ability to work schedules around everyone’s family time. “We have quite a few families back in the kitchen; it’s nice to be able to work around their schedules. … It’s just a great place to work.” Josh agrees, and he says he feels lucky working for owners who genuinely care and takes pride in their customer interaction. “People have come to expect to be treated well. I really love our guests, the people I work with, the people I work for. I think there is a different attitude here than anyplace else I have worked. People come in to have fun, not just to eat and drink.” And, it takes a lot to make that happen that way. He is constantly welcoming people, making sure they get served promptly, even throughout our interview. “The best part is the neighborhood family atmosphere, from the minute they come in the door. It’s important. It’s about the experience they have in our place,” says Josh. The common thread is that the employees really are invested in what they are doing. They raise the comfort level of their establishments with their job skills and the mere fact that they love what they do here. Here is where the owners have really hit the jackpot. They have been able to nurture great teams in all of their places, with an idea that started with Moon Time. Raise a glass and cheers! Here’s to another 20… and more.

Napoli Pizza and Pasta in Vallejo, California, is where it all began for Chef Steve Van Zeveren. After graduating high school in 1993, he was employed at a factory building transit buses. After several years, he decided it was time for a change—a big change—and went from the factory to the kitchen. He began working for an “old Italian guy” at Napoli Pizza and Pasta washing dishes. It didn’t take long before he worked his way up to making pizzas and cooking genuine Italian cuisine. After six years honing his skill under the direction of owner/Chef Antonio Guerrera, and graduating from the California Culinary Academy, Steve would move on, never forgetting the authentic aromas and flavor, along with the passion he saw the chef bring to the table daily. In May 2012, after a trip to the Coeur d’Alene area to visit friends, Steve was determined to move his family away from 24

Vallejo to the beautiful, quaint Idaho town. Less than two months later—July 1, 2012—Steve, his wife and two boys were beginning their new chapter in the Idaho panhandle. Steve was hired at the Coeur d’Alene Resort, where he worked in the bakery as well as the convention center kitchen, followed by a stint as the kitchen manager at McKenzie River Pizza Company. Sister Lisa Van Zeveren worked her way up the corporate ladder from server, to floor manager to general manager in various Napa Valley locations. Together, with his experience cooking and managing restaurants since 1998, combined with Lisa's restaurant knowledge, has created the perfect partnership. At their Italian eatery, Uva, they made their dream of running a family owned and operated business come true. Uva originally opened in the building at

the corner of Appleway and Fourth streets in May 2014. But when the location on Lakeside Avenue became available to lease, they were ready for the move downtown. They closed the doors on Appleway June 21, 2015, and less than a week later, opened up the doors at their new location, which fell on one of the single biggest tourism days in Downtown Coeur d’Alene—the Ironman competition—on June 28. They managed to accomplish a speedy yet seamless transition by running their own Ironman of sorts. Although his degree is in accounting, he took several classes at UC Davis and San Jose State University to nurture his winemaking skills. Ten years later, in 1995, the couple established Pend d’Oreille Winery in Sandpoint, Idaho. The timing was perfect, as Sandpoint was growing in importance as a tourism destination, and the Washington grape-growing region was becoming better established with new vineyard plantings and a budding opportunity to create world-class wines. In no time, Pend d’Oreille Winery would be producing a number of award-winning wines to include its Cabernet Sauvignon, Cabernet Franc, Chardonnay, Merlot, Syrah,

Steve and Julie are very much involved with the community of Sandpoint, not only through their winery, but through their participation in various events and charities.
