A WORD FROM THE EDITOR Welcome to the delicious world of dining and entertainment in Northern Idaho! This is the year for change. When you picked up this issue, on our beautiful cover you saw the new title, Sizzle’n Cuisine. After 15 years as the Cuisine de Coeur d’Alene and Idaho Cuisine, we have now added a little sizzle to the title. For those of you familiar with our publications, you know that this is the title of our website and weekly eNews. Our new Sizzle’n title combines our Spokane Sizzle and Idaho Cuisine dining guides. We are in a very unique area here in the Inland Northwest; Coeur d’Alene and Sandpoint areas are intrinsically linked to the greater Spokane area. Spokane residents love to play and enjoy the beautiful scenery in Northern Idaho, and Spokane is Northern Idaho’s connection to our area’s international airport, local medical facilities and cultural events. The new title brings it all together. Our title going forward on all our publications will be Sizzle’n Cuisine with a Northern Idaho Edition, Spokane Area Edition and a couple of new culinary twists yet to be introduced. Yes, the change includes a couple of new delicious treats for our hungry foodies! We are excited to begin this journey with this issue … stay tuned on our website and sign up for our Sizzle’n Cuisine eNews to be the first to find out more delicious details. RECENT OPENINGS There’s definitely no shortage of new restaurants cropping up all across North Idaho; from Coeur d’Alene to Post Falls, Hayden to Sandpoint, get out and explore the new flavors the area has to offer. Here is just a sampling of some of the new favorites that have opened or changed ownership during the past year. Stop in for a visit and taste for yourself what all the excitement is about.
COEUR D’ALENE EAST COEUR D’ALENE
The Downtown Coeur d’Alene staple coffee shop, which could be found on the corner of Sherman Avenue and Fourth Street for the past two decades, has moved up a few blocks—six to four be exact—to its new location. Java on Sherman—yup, you can still find them on the strip at 819 Sherman Ave.— is now housed in a much larger space, allowing the once-crowded coffee café to upgrade their offerings in many ways. They now offer a full menu for breakfast and lunch thanks to their full service kitchen and a spacious dining area. They also have a sweet outside patio for diners to enjoy during warmer months. DOWNTOWN COEUR D’ALENE
Sherman Avenue has a lot more happening now with the opening of Crafted Tap House + Kitchen in June! Once an auto repair shop, the space has been magically transformed into an urban-industrial-modern hip space. Owner Rob Berger has put together a team with general manager Chris Evans and Chef Gabriel Cruz at the helm for the creative menu. Located at 523 Sherman Ave. on the corner of Sixth Street, this new neighborhood

gastro pub is a welcome addition downtown. With the biggest selection of craft beer in Coeur d’Alene, not only are they are featuring 50 taps of crafted beer, including local brews, rare imported beers and a selection of bottled domestic beers, the beverage menu also includes several ciders and Northwest wines. The gastro-pub menu features items such as Rockafella Ya'll chicken ‘n’ waffles! What could be better? Oh yeah, the huge patio! What sets the new restaurant apart from any other downtown is its outdoor patio. At 3,000 square feet, there is more than enough seating to enjoy the warmer summer months, and when it starts to get a little chilly, they’ve got that covered with plentiful seating near their outdoor fire pits. (208) 292-4813 Owners Dave and Janet Pulis of the successful Moose Lounge have a great new spot both visitors and locals are sure to enjoy. Their new Rocker Room Rock ‘n’ Roll Sports Bar is located at 216 E. Coeur d'Alene Ave., open 4:00 p.m. daily, with giant screen TVs to enjoy sports events during the day, and great stage and sound system for this rock-and-roll music venue by night. Serving a full menu of cocktails and offering family style dining, guests will find a full bar with a seasonal drink menu, 20 rotating beers on tap, fresh locally sourced sports bar menu—and kids’ menu, too—created by Chef Jason Rex
of Scratch Coeur d’Alene, plus the best sports viewing in town with two 15-foot HDTVs, pool tables, shuffleboard, darts and more. The Rocker Room is the place to be weekends during football season, opening the doors at 9:00 a.m. for all those football fans out there to enjoy the game, great food, drinks and fun. (208) 676-2582 Chef Will Scott, formerly of Hay J’s Bistro in Liberty Lake and Oval Office in Post Falls, has partnered with Monica Scott in opening the Fork at Lakeside. Located at 309 Lakeside Ave., the restaurant opened in what was the longtime Takara Japanese Restaurant and Sushi Bar. The building has been brought to life after sitting vacant for nearly two years and has undergone a complete remodel of the restaurant space. With Will at the helm as executive chef, the casual fine-dining menu features steaks, seafood and pasta, along with gourmet soups, salads and sandwiches. Live music fills the air Wednesday and Thursday evenings. Monica leads the restaurant as general manager, with experience as manager and sushi chef for Momiji Japanese Red Maple restaurant in Post Falls. (208) 292-4392 For those of you who were sad to see the burger joint Scrud’s close earlier this year, there’s no need to worry as Schmidty’s Burgers has taken its place at 206 N. hamburgers, owners Nathan and Denise Schmidt bring their guests more than a dozen burger choices like the Hangover, adorned with a hash-brown patty, American cheese, over-hard egg and Canadian bacon. If you’re not a fan of burgers, they’ve got you covered with their Grilled Ham and Cheese, salads, chicken and fish baskets, along with starters like the Cheddar Cheese Bites, Jalapeño Poppers, Chicken Strips and Drumsticks— Schmidty’s signature appetizer. There’s beer, too; the perfect accompaniment to their mouth-watering burgers, which come with your choice of fresh-style fries or onion rings. (208) 292-4545
MIDTOWN COEUR D’ALENE
Locally owned and operated by Caleb Duke, Grumpy Monkey Coffee and Bakery not only offers customers a large, comfortable, homey space to enjoy a cup o’ Joe and pastry, but a drive-up window as well for those on the go. Genius. Ideally located at 2102 N. Fourth St. on the corner of Hattie just south of the I-90 entrance, this former pawn shop with ample parking has been transformed into a beautiful coffee café and bakery, serving up sweet and savory house-made baked goodies ranging from croissants and almond biscotti to lemon bars and … they offer a house made soup of the day daily, and now there are the recently added house-made organic salads which can

be taken to go. You will find local artists’ works displayed on the walls throughout the coffee shop. They are open daily. (208) 665-5879 Fermented foods were once the only way, before refrigeration, to enjoy and preserve a wide variety of fruits, grains and other botanical ingredients. The recent popularity of Kombucha has come from health aficionados who claim a host of health benefits resulting from pro-biotic, vitamins, amino acids and living enzymes make up this effervescent beverage. And they can be relatively tasty, too! Bare Culture Kombucha recently opened at 814 N. Fourth St. in midtown, offering the health drink on tap in a number of flavors like Acai Pomegranate, Sassy Apple and Paradise Ginger. Stop in and sample some flavors, and fill up your Bare Culture growler. Healthful breads and bars are available as well to go with your Kombucha. (208) 651-6867

Asian cuisine is popular as ever in Coeur d’Alene. Many were sad to see New York Bagels close at the Ironwood Shopping Center, 226 W. Ironwood Drive, Suite A8, late last year, but the space has been taken over by Asian Twist Restaurant. Owner Lily Li, also the woman behind Fu-ki Japanese Steakhouse in Post Falls, offers a menu that is clean,

simple and tasty, with Tappan Grill entrees such as Hibachi Chicken, Teriyaki Salmon and Jalapeño Calamari, Thai entrees such as Pad Thai, Gang Massaman (yellow curry), Pad Keo Pow (meat with basil), Thai salads, soups, and various fried-rice choices. This is another great lunch spot, as you can call ahead of time and order for pick up. Open 11:30 a.m. daily for lunch and dinner. (208) 215-2155 Earlier this year, North Coeur d’Alene welcomed the addition of a new health food store—Natural Grocers. The 15,000-squarefoot store located at 300 W. Neider Ave., the former Elmer’s location (which has relocated to 290 W. Appleway Ave.) offers customers free nutritional health coaching, including meal planning and cooking demonstrations. The company carefully selects only approved natural and organic groceries for its shelves and sells only USDA-certified organic produce. All meats are from animals raised naturally without the use of antibiotics or hormones. With consumers becoming more aware of what they are putting into their bodies, this is a great additional to the community. Good bye Fiesta Mexicana; hello Uva Trattoria. This beautifully renovated Italian-inspired casual restaurant at 2605 N. Fourth St. offers a classic menu of Italian favorites prepared by their chef, Steve who has been cooking up Italian in the restaurant industry for nearly five decades. RECENT OPENINGS Italian dishes with her appetizers, soups, salads, pastas and entrée selections, along with the kids’ menu. Pizzas are made with their “special” dough that will please any pizza aficionado and cooked in the stone deck ovens; you can taste the difference, with its crispy edge but soft and chewy crust. Everything from the Lasagna to the Chicken Marsala to the Spaghetti and Meatballs is made from scratch. Owner Lisa Van Zevern, who has an extensive background in wines, has brought in a broad selection of Italian wines to accompany the food. They offer live music Saturday evenings and hold wine dinners monthly. And look no further for a great lunch stop that’s not only affordable but delicious with choice of three artisanal 12-inch pizzas, such as the smoked salmon with goat cheese topped off with hand-shaven parmesan, or choose an Italian sandwich, think sausage, peppers and onion, with pasta salad. (208) 930-0573 Breweries are continuing to pop up all over North Idaho, and Coeur d’Alene is now home to Paragon Brewing. Formerly Sully’s Irish Pub at 5785 N. Government Way, Kerry Kieres, general manager and brewer, has teamed up with husband Chris and friends Jake Bieker and Matt Dill to bring this brewery to fruition. They built it themselves, casual pub style, and feature local artists on the walls. After nearly two years in the making, they opened their doors in May 2014, receiving tremendous support from the local brewing community. Favorite beers among customers are the Red, Amber, Hefenweizer and the Scottish Ale "jalepeño"—a seasonal brew. The plan is to offer eight styles when in full production. They also have plans to build a new brewing building and improve their back lot for festivities of the brewing kind for local breweries and for all manner of events, including family friendly. In addition to the great beer, they’ve got great food. Pete Edge has been working on an English pub-style menu for some time and all were happy to come together for their unique menu: Start off with a Summer Sausage or Scotch Eggs, a bowl of Beer Cheese Soup, a Spring Basmati salad, Tenderloin Sliders or Belly Pork sandwich. Entrees include items such as Pan-Fried Sweetbreads, Boxty Pie, Bangers, and Vegetable Hash. Tiffins and A La Carte items include Welsh Rarebit and Golden Buck, with Spent Grain Blondies and Sticky Toffee Pudding for Afters. You’ll just have to stop in if you’ve never heard of some of these and try them for yourselves. The meats are smoked in house with spent grains, and Pete uses the spent grains and the beer in recipes, makes the stuffings, rhubarb jam and most everything but the fries and buns. Trust us; you won’t be disappointed. They’ve got ridiculously good beer, and food to match, after all. Did we mention the deck out back? You will feel right at home away from the traffic side, where their “backdeckness” takes over your mood. Stop in and enjoy the unique flavors of

Partners Tom and Stephanie Applegate, Alan Logacre amd John Taylor came together to start MAD Bomber Brewing Company. Tom and Stephanie are in charge while John and Alan are on active duty as actual Bomb Squad soldiers, with boots on. Tom is now off duty but spent eight years doing the same. Tom and Stephanie are holding the fort down and get great support from their community and from other brewers along the way. The neighborhood responds with “yes”, and people have helped build their tap handles, tables and stools, and donated equipment, and their fans stop in frequently to see what’s brewing in there. The tap room seats about 65 people and sports some bombing décor and a beautiful stone fireplace. MAD Bomber offers their six flagship brews—blonde, porter, brown, pale, IPA and Indian brown—always on tap and rotates two seasonal beers. They are always experimenting but currently, for the seasonal taps, they have two EOD (Explosive Ordnance Disposal) bomb squad memorial beers. Half of the proceeds from the two beers are donated to the Wounded EOD Warrior Foundation. Right now, MAD Bomber isn’t distributing; the beer flows only from their place and you can get it 11:00 a.m. to 9:00 p.m. Friday through Sunday. Pend d’Oreille Winery closed their doors at 220 Cedar St. and reopened in the historic Belwood building, located at 301 Cedar St., in June. The building, which dates back to 1909, sat vacant and for sale, and Steve and Julie Meyer saw the opportunity to help revitalize Downtown Sandpoint. Located diagonally across the street from their former location, and still on the corner of 3rd and Cedar, the new location hosts Pend d’Oreille Winery’s tasting room, gift shop and Bistro Rouge Café. The Hogfish Bar and Grill is a great hangout catering to locals. Go a bit further to Coeur d’Alene Lake Drive, and that’s where you will find Michael D’s Eatery and lakeside dining at The Beachouse and Tony’s on the Lake. If you go by boat, just look for the blinking arrow to easily find Tony’s, one of the most popular diningwith-a-view spots on the lake.

From the time I came to Coeur d’Alene in 1997, there were few restaurants that people would mention as one that I simply must go to. Moon Time was one of them. People would say, “It’s nothin’ fancy, but it’s really special; comfortable, good service and extraordinary food!” Kind of like what you might get at home—but better—and in a much more social environment. Yes, Moon Time was and still is the pre-social-media, real social gathering public house where people gather at the end of the day to see each other’s eyes and proclaim all their suffering, their triumphs or recount the recreation of the day, the game, the work; where ordinary life becomes animated, elaborated and celebrated with food and drink. Their motto has always been, “Every neighborhood should be so lucky.” And it’s true! Here is that place you feel as connected as you are at work and in the peace as you have it at home, among familiar faces. How did they do it? It all began in 1996 when they opened Moon Time in Coeur d’Alene. John Grollmus had finished studying hotel and restaurant administration at WSU in Seattle and had relocated back to his hometown of Coeur d’Alene, where he was working at Jimmy D’s. He had come to a decision point whether to go corporate or open up his own place. Brad Fosseen was working at 74th St. Ale House in Seattle, and after some discussion, the two friends decided to join forces with another friend, and Brad moved to Coeur d’Alene to join John in their endeavor. They felt a similar concept of great beer and unpretentious wine selection with publichouse style traditional foods would work well. They combined that with the value approach of good prices with good food, believing that would bring them the neighborhood customer base they were looking for. Memories Antiques had a restaurant within that had closed and was available for rent. After some inquiring, they bought the

place, antique tables, chairs and all. It was the perfect spot for their first step into the restaurant business. The place opened up, and before you know it, the first of their family of public houses would be well on its way to being that neighborhood success. From the start, they offered betterthan-average pub fare, presenting to Idaho Northerners a whole new genre they hadn’t experienced before. Three years later, in 1999, Moon Time would be joined by The Elk Public
House in Spokane. Fast forward to 2014, and now several neighborhoods are thankful to have one: Moon Time in Coeur d’Alene, The Porch in Hayden Lake, Idaho, and in Spokane The Elk and El Que (a play on a Mexican elaboration “El K”) in Browne’s Addition, Two Seven (a play on their address at 2727 S. Mount Vernon) on the South Hill and Geno’s, a repurposed former Italian restaurant in the Gonzaga/ Logan neighborhood. One after the other, there are now six! The partners have a winning formula that spans not only age and career demographics, but also geographic locations across the Inland Empire. COEUR D'ALENE Since its transformation two years ago, The Cellar, located on Downtown Coeur d’Alene’s main strip, Sherman Avenue, has continued to grow, change and adapt to accommodate its guests’ tastes and preferences, becoming an ever-evolving menu of ideas, inspiring its patrons with its culinary creations—no matter how simple or over the top—its impeccable and enviable wine list and Enomatic self-serve wine-by-the-glass system, the restaurant’s sheer architectural and beauty of design and its supreme service to top it all off. It seems as though things at the restaurant couldn’t get much better; that was until 2014, when owners Tom and Patricia Power introduced a few more positive changes. The Cellar welcomes a new executive chef and general manager to the team, as well as longtime employee Naomi Boutz changing positions to focus on the wine program.
“IT’S A WHOLE EVENING EXPERIENCE,” SAYS PATRICIA. Behind the fresh new dishes is a seasoned chef, Matt Curmi, who recently joined The Cellar. Born in Scotland to an English mother and Maltese father, Matt learned to cook during high school in Malta, a European country off the coast of Sicily. His education is a combination of formal instruction as well as culinary instruction brought on through his world travels. His culinary journeys have taken him throughout the US and the UK, but also to Spain and other regions of the Mediterranean. In 2010, Matt brought his many cuisine types to the Northwest as chef at Bistro on Spruce. Guests can now taste the flavors of his travels when dining at The Cellar, as he has joined the culinary team as executive chef. “I hope to bring fresh and new ideas to the table that will be inspired by the Northwest,” says Matt. “I enjoy working with the team at The Cellar and creating dishes for everyone’s palate. With my travels, great chefs and teachers I have worked with, I try to bring these experiences onto the menus for our guests.” Matt, along with Sous Chef Jared Angele, are breathing new life to The Cellar’s traditional favorites, such as Flank Steak and Lamb Shank, while adding new fresh items, such as their popular Northwest Nicoise Salad. As Chef Jared says, “It's every
chef ’s dream to work in a place where your creativity is encouraged; the Cellar gives me that, and I have called it home for two years now." The Cellar also welcomed new general manager Bill Cabbage earlier this year, most recently of Northern Quest Resort and Casino. Bill has enjoyed working in the hospitality industry for the past 35 years serving guests in premier fine dining rooms throughout the Northwest and California. As general manager, Bill brings several management qualities to the team so to ensure the best service possible for their guests. As Bill says, “What attracted me to The Cellar was the commitment to quality, and the passion for fine food and spirits and providing BILL CABBAGE, NAOMI BOUTZ, exceptional service. We want our MATT CURMI & JARED ANGELE guests leaving already planning their next visit.” Longtime employee and wine manager Naomi Boutz is now focusing her efforts on the wine program and promotional events for The Cellar. Naomi’s expertise as CSW (certified specialist of wine) has developed over the years while working at The Cellar and the former Wine Cellar. This experience, as well as interaction with restaurant patrons, has allowed her to learn the Coeur d’Alene area’s palate from both the locals and the travelers who are coming here from all over the world. Syringa has developed a loyal clientele starting from the day it opened, due largely in part to its dedicated staff. Owners Viljo and Autumn Basso have been working in restaurants together since 1995; Viljo attended Portland’s Western Culinary Institute, and after an internship at Rover’s—a well-known French cuisine-inspired restaurant in Seattle—he became a full-time chef there. Autumn worked in restaurants in the Seattle area and attended Seattle’s Art Institute where she studied fashion design. While still in Seattle, Viljo added to his credentials at Cascadia Restaurant and Mashiko Japanese Restaurant and Sushi Bar. He was later asked to help open and be the head kitchen chef at Saito’s Japanese Café and Sushi Bar, a traditional Japanese restaurant in Downtown Seattle. After eight years in Seattle, Viljo and Autumn married and returned to Coeur d’Alene. In 2004, Ezra “EZ~B” Basso was born, and they made the big decision to open Syringa, Japanese Café and Sushi Bar, naming it after the Idaho state flower. Education Foundation is held in March at the Greyhound Park and Events Center. Patrons are treated to great food, wine and beer while shopping silent auction items and bidding for wonderful treats in the live auction. The Greyhound Park is central to many of the event happenings that make Post Falls a destination for fun! One of the largest events is the Coeur d’Alene Tribe’s JulyAmsh PowWow, held annually in July. This three-day event is filled with NativeAmerican activities for all to enjoy, bringing people together and signifying the spirit of the Coeur d’Alene Tribe in a celebration of heritage, diversity and culture. More than 800 men, women and children dancers take part as hundreds of tribes are represented with dancers, riders and drum groups. This event is a sharing of cultures and traditions that span generations. The art of many tribes, their traditional crafts, and the performances of tribal dancing and music is a rare opportunity to view the beauty of these diverse native cultures.

The corner of Prairie Avenue and Highway 95 is the home of the bustling Kootenai County Farmers Market. And, Tim's Special Cut Meats, offering wide variety of meats and seafood, smoking and grilling specialty foods and a broad array of wine and beer, is just a little south on Government Way. Hayden’s own destination for families with kids is Triple Play and Raptor Reef Water Park with bowling, go-karts, miniature golf, laser tag, bumper boats and other games. more eagerly working with local businesses on events that will enhance their new sense of place in this growing area. Free summer concerts in the park run from July through August. Hayden is famous for its long-standing annual culinary event, Daanen’s Oktoberfest, held annually the last Saturday in September. 2014 marks the 23rd anniversary of the original Capone’s Pub and Grill in Coeur d’Alene, Idaho, which made its debut October 7, 1991, thanks to owners Tom and Teresa Capone. The pub
fun memorabilia adorn the tabletops and bar. The only thing they didn’t do was the checkered tablecloths. Many of the artifacts are the result of Tom’s friendship—or as some may say, “addiction”— with eBay. And a lot of the pieces you’ll see at Capone’s have been donated by loyal customers. Teresa even points out an original Kootenai Electric sign that was donated by Kootenai Electric themselves. Tom is the one behind the menu, which he describes as East Coast comfort food with a little twist. Using only the best ingredients, they offer homemade sandwiches served on fresh baked bread (baked daily on site at the Hayden restaurant) and scratch-made hand-tossed pizza. Even the soups and dressings are homemade. “We use the best ingredients we can and still make it affordable,” Teresa says. The top-sellers for Capone’s are the Pastrami Sandwich, which Tom says has been their staple for years, the French Dip and the Philly Steak Deluxe. Their soups are made daily from

The original “Taxi”inspired restaurant on Fourth Street includes the color scheme from Mario’s, the hip spot on the show. It includes generations of baseball gloves hanging along the walls and ceiling. Classic baseball cards, concert tickets and
fresh natural ingredients. Their wings are not to be missed, either, as this boneless indulgence is a favorite among many. When it came time for opening their second location in Post Falls, Tom and Teresa decided to replicate the décor of the original Capone’s. And why wouldn’t they? Their recipe was well received; a hit among locals and tourists alike. “We were confident that if it worked in Coeur d’Alene, it would work here,” says Tom. Plus, Post Falls was in desperate need of a sports bar at the time. Since its introduction to the Post Falls community, it has also been very successful since opening its doors. Another neighborhood is smiling these days, thanks to the addition of the Capone’s location in Hayden, offering the same Capone’s formula with its pub feel, sports memorabilia-lined walls, tables and ceiling, and of course the same awardwinning pizza and epic tap selection. Tom and Teresa don’t take the credit for their success, saying they owe much of Capone’s success to their dedicated and loyal staff, who is at the forefront of carrying out day-to-day tasks, with both the front-of-the-house

SANDPOINT, HOPE & PRIEST LAKE Like the name itself, Trinity at City Beach encompasses the three things it takes to run a successful restaurant: good food, a great location and spectacular customer service. But what really sets this waterside gem apart is its creativity, consistency and the staff ’s commitment to the Sandpoint community. Nestled on the shores of Lake Pend Oreille in the Best Western Edgewater Hotel, Trinity is simple elegance—open and airy, with a sprawling deck just steps from the beach. Accessible by car, bike, boat or on foot, once seated, guests can take in the sun, sand, sailboats and the snow-capped Cabinet Mountains without leaving the table. A salesman by trade, Trinity owner Justin Dick moved his wife Shaunavee, their 2-year-old daughter Evelyn and 6-year old
“IT’S ABOUT THE PEOPLE, THE RELATIONSHIPS AND THE COMMUNITY INVOLVEMENT,” SAYS JUSTIN. son Jace to Sandpoint in 2007. Though his background is in business, Justin’s roots run deep in the restaurant industry. Decades ago, his grandparents opened a tiny hotel eatery in South Dakota where some of the original servers still work today. His parents started the Café Trinity on First Avenue in Sandpoint and now own a bar in town. Justin relocated Trinity to City Beach in 2009, and he says it’s the best spot around. “By 8:00 in the morning the parking lot is full,” he says. “This whole area is packed with beach cruisers and longboards, kids and families swimming and having fun.” Open breakfast through late night, Trinity is an ideal spot for locals and visitors alike, no matter what the day’s plan. Guests can bask in the aroma of a local cup of gourmet coffee while watching the morning light dance over the water, or grab a Sandpoint Breakfast Sandwich with egg, avocado,
sprouts and Fontina before heading to the marina or nearby tennis and basketball courts. Amidst the sounds of seagulls and children laughing, the afternoon brings business lunches, ladies’ card clubs and those longing for leisurely snacks and cocktails during a day of shopping downtown. Diners can start the evening with a selection from the extensive wine list and an appetizer of Portuguese Clams with garlic and chorizo or savory Steamed Mussels. A dinner of Lamb Brochette or classic Cedar Plank Salmon with Granny Smith apple slaw can be savored while soaking in the unbeatable alpenglow that illuminates the mountains at sunset. Trinity at City Beach specializes in modern-American cuisine, including influences from traditional Italian, Asian, Pacific Rim and more. Almost everything is made from scratch, and sauces are made to order. “We understand the dynamics of food are ever changing, so we like to stay on the progressive side of food trends,” says Justin. Executive Chef Thane Jenness and Sous Chef Andrew Mills grew up together in a tiny New Mexico town and cooked together while attending Portland’s Western Culinary Institute. Sous Chef Walter Hayes trained under Thane and Andrew, and while each has a unique culinary style, the main ingredient here is always passion. The chefs change the menu at TCB twice a year, and always offer multiple choices for gluten-free, vegan and vegetarian guests. They’re also cognizant of the growing number of food allergies and the growing consciousness diners have of what they put into their bodies. “From dietary restrictions, personal beliefs, local ingredients and GMOs, we do our best to design progressive food items that cater to almost every need.” And, if a guest wants a dish they don’t see, ask. “Our kitchen staff is skilled and creative. If a guest wants something that’s not on the menu, we’ll bend over backwards to make it,” Justin says. “It’s actually great for us. It gives us the ability to play with the menu

SANDPOINT, HOPE & PRIEST LAKE while continuing our own culinary education.” Trinity has a great relationship with local farmers and looks for opportunities to get more of its food from area growers. Right now, much of our romaine used at the restaurant, and the root vegetables for the Root Vegetable Burger, are sourced locally. Also local is much of the artwork. Many of the images lining the walls are the works of world-renowned photographer and former Sandpoint resident Ross Hall, who Justin calls “the Norman Rockwell of the Inland Northwest.” Trinity is a strong supporter of Sandpoint’s vibrant arts community, as well as local tourism, education, athletics and non-profit organizations. Justin encourages the staff—45 people year round, 75 in the summer—to do more than just serve meals, but to serve their community. He says it took a long time to be accepted as a local, so it’s important that they stay active at the local level. Close to 85 percent of the staff volunteers time and talent to causes they find interesting. Justin admits these aren’t typical roles for a restaurant’s staff, but through his leadership, many of them help host events and non-profit functions. “Sandpoint isn’t the wealthiest community, and we can’t all give checks,” Justin says, “but we can give services. We’ve learned to give what we know how to do best.” Today, TCB supports the Rotary Club of Sandpoint's Cycle Hard for Education (CHaFE 150), Panhanlde Animal Shelter, Panhandle Alliance for Education, Angels Over Sandpoint and Blue Haven Transitional Housing, among others. “Sandpoint Teen Center is one organization we didn’t even know existed, and once we connected we realized there was amazing synergy between us.” The organization is geared toward 14- to 17-year-olds, and one of its programs helps teens get food-handler certification. “They transition kids to be ready to work in a kitchen, and we need to hire 30 to 40 additional employees each summer. We can help them figure out how to make this a career path.” Recently Justin’s career has taken another turn. He is now a co-owner of Sandpoint’s Jalapeños Mexican restaurant. He jumped at the opportunity to help keep local restaurants owned by locals. In keeping the same menu and the same staff, the transition was seamless. Winemaker Melissa Sanborn's journey in the winemaking business began back in 2007 with husband Mike Pearson. He, the master of systems for the winery and vineyard, and Melissa, the master of the wine; the once-neglected vines nestled along the Potlatch River now have a whole new life. According to Melissa—who has her master’s degree in food science—reviving the vineyard—which remained untouched for five years—has drawn locals into the vineyard, making for a unique and satisfying experience. And the tasting room draws many from the community. When it comes to Colter’s Creek wines, they are clean and bright, and the terroir in
this valley lends a distinctive difference to the wines made here. Their wine is a result of the vineyards they maintain and the grapes they grow. Colter’s Creek wines are affordable, and they even offer wine on tap and refillable bottles. Melissa feels they have been able to connect with a lot of people that way. Economically getting a good glass of wine for $5 and something good to eat, their fans appreciate it. And even better … consumers know where those grapes are coming from. Colter’s Creek is truly a homegrown community winery. It’s not just a bottle of wine they’re selling to someone; rather it’s a relationship they are cultivating. 2013 added a new and exciting experience

STACKS AND STEAM PLANT BREWING CO. & PUB STUNNING INTERIORS TO ENJOY SIGNATURE DISHES AND HANDCRAFTED BEER Just a short trip from North Idaho to Downtown Spokane stands the award-winning historically preserved Steam Plant: restaurant, pub and brewing company. Stacks restaurant at Steam Plant serves dishes worthy to compete with its intriguing interiors. With a fantastic internal view of the catwalks, pipes, fascinating steam plant control panels and access to the interior of one of the 225-foot smokestacks, dining at Stacks is anything but boring. Named for the twin smokestacks that have been central to the Downtown Spokane skyline for nearly a century, the dining experience at Stacks allows you to drink in this one-of-a-kind building. Unique private spaces are nestled in where the original boiler room pipes still line the walls. Their signature dishes 66

are created from scratch and incorporate some ingredients produced in house, including smoked meats and fish, and many of the Steam Plant ales. The restaurant also sources many ingredients locally— including herbs from the chef ’s own garden—and maintains relationships with farmers and ranchers throughout the region. Appetizers range from Steamed Shellfish to Smoked Steelhead, Coal Bunker Cheese Bread to Kalbi Steak Skewers. Fresh soups and salads include their signature Beer Cheese Soup and the restaurant’s very own Marguerite Salad with fresh mozzarella cheese, Roma tomatoes and fresh basil placed on a bed of romaine hearts and laced with a honey and lemon vinaigrette. On the menu is a flavorsome array of entrees, including Black
and Bleu Sirloin, Chicken Al Fresco, Smoked Salmon Pasta, Parmesan Swordfish, Pork Osso Bucco, Columbia River Steelhead, and the Fish and Chips made with Scottish Ale tempura. Steam Plant Brewing Co. produces more than 10 handcrafted microbrews on site—including seasonal varieties—under the Steam Plant label, and the casual Steam Plant Pub features flatscreen TVs, game room, and both an early and late Happy Hour. Several areas around the building are perfect to hold a very memorable and picturesque special event. The Steam Plant Commons is located at the base of the west smokestack and features a fountain made of original pipes, and there are also several
unique private dining spaces carved out of the original boilers—all of which can be reserved for private events. And if you have something bigger in mind, they’ll rent the whole facility to you … imagine the possibilities! For a special treat or to share with out-of-town visitors, you must see and taste Spokane’s historical landmark Steam Plant.
