We are here to keep you informed about the dining and entertainment scene in Coeur d’Alene and the surrounding area, keeping the latest and greatest happenings magically at your fingertips. There’s definitely no shortage of new restaurants cropping up all across North Idaho; from Coeur d’Alene to Post Falls, Hayden to Sandpoint, get out and explore the new flavors the area has to offer. Here is just a sampling of some of the new favorites that have opened or changed ownership during the past year. Stop in for a visit and taste for yourself what all the excitement is about.

Rob Elder is in his element. Gone are the days of the Hot Rod Café; in with the days of Satay Bistro. Rob was the owner of the now closed Hot Rod Café in Post Falls, which was immensely popular for the formula of restaurant that it was. But Rob’s heart is in the more refined style of cuisine, and he has been able to bring the idea of the restaurant he’s always envisioned to life. Opened in September 2012, Satay—French for small kabob—offers an eclectic menu infusing Asian, Italian and Mediterranean cuisine. Chef Anthony Buttice is a young and creative chef who has worked at Beverly’s, Tito’s and restaurants in Walla Walla, Wash., area, including a four-star pasta house. He and Rob came together for the menu, the art, the experience. The restaurant seats 44 in the main room, 30 at the bar and 35 on the patio. The highlight of the restaurant is its wine cellar with its onyx floors and 500-bottle collection, many from the Walla Walla area and Colombia Valley, including Woodward Canyon, Walla Walla Vintners and Pepper Bridge. Rob is continually evolving the cellar list and adding to his incredible wine

collection. Don’t be fooled by its upscale appearance, as Satay is truly the neighborhood bistro, appealing and accommodating to all. It is a place to stop in for a casual lunch, a drink at the bar, an evening with friends, a meal with the kids. Live music fills up the restaurant on Friday and Saturday evenings, adding to its already inviting atmosphere. You will find Satay Bistro just north of the I-90 freeway. 2501 N. Fourth St. (208) 765-2555 Chef Everett Fees, with partners Justin and Angeline McLane of McLane Farms, purchased The Garnet Café from Viljo and Autumn Basso in January 2013. The breakfast and lunch café is still serving up incredible—and unforgettable—dishes, with menu items scratch made, fresh daily, in house. From the Biscuits and Gravy, Pancakes and French Toast, to Corned Beef Hash and Green Eggs and Ham; most everything they offer on their one-of-a-kind menu is all-natural—with an eye on sustainable and non-GMO—with many of the foods used from the McClane farm. You can taste the difference! Angeline makes the Chevre and yogurt that is served at the restaurant, and they serve local Bumper Crop Coffee. 315 Walnut Ave. (208) 667-2729

There are once again new owners at Franklin’s! Though new to this restaurant, Joe and Crystal Kubista are definitely not new to the business. Joe has worked in restaurants since age 14, starting as a dishwasher at family owned restaurants and working his way up to cook over the years. Crystal has experience in the front of the house while in college. The pair wanted to own their own restaurant, and when Franklin’s became available, they seized the opportunity. One thing they knew for sure is that they wanted to keep the history of Franklin’s alive. Lucky for you, you will still find the same great hoagie menu, omelets, burgers and other sandwiches, along with the Biscuits and Gravy the restaurant has been known for over the years. One thing they have added is a beer and wine license, with plans to have a beer garden during special event happenings. 501 Fourth St. (208) 664-3998 Chef Jason Rex is bringing gourmet ice cream back to Sherman Avenue, along with his own inventive house-made fire-grilled pizzas! The owner of Scratch has opened Scratch Creamery and Pizzeria in the former location of Sweet B Cupcakes on Fifth Street directly behind Scratch Restaurant.

The creamery features 13 yummy handcrafted ice cream flavors, along with rotating flavors using seasonably fresh fruit, and the pizzeria offers guests six types of artisan pizza. Since then, they have dropped the “wine” from the name but definitely not from their amazing award-winning wine selection. In fact they were selected this year for Wine Spectator magazine’s Award of Excellence for their offerings. Know that the cellar is still stocked with the best, and their self-serve EnoteK system allows wine lovers to sample wines that are usually unavailable by the glass. Put on your cowboy boots, grab your cowboy hat and head on down to Coeur d’Alene’s newest club—The Country Club! Located at 216 E. Coeur d’Alene Ave. in a newly renovated space, the club has an amazing sound system, large stage for live bands, seating for 175 and plenty of space for line dancin’. Owners Dave Pulis and Mike Lyon, both of the Moose Lounge, and Jack Tawney of Peak Fitness, have created a down-home experience in the heart of downtown, with a full bar, 20 tap beers and

wanted to offer patrons a warm and welcoming café, both in look and in spirit, along with fresh foods made from scratch ingredients, all at an affordable price. Inspired by the Slow Food Movement, the pair opened Soul: A Soup and Coffee House in June 2013. From homemade butter and roasted root vegetables, to delicious house-made soups made with the ingredients of the season, Soul truly satisfies the soul. BULLMAN'S fresh off the grill. Bullman’s has opened up its fourth location—its first in Idaho—at Coeur d’Alene’s Village at Riverstone, right across from the Regal Cinema. They pride themselves on their traditional Neapolitanstyle thin-crust pizzas baked in blazing wood-fire ovens. In addition to pizzas such as the Flathead, Crazy Mountain and Bear Tooth, all made with fresh-made daily pizza dough and sauces, the menu offers a variety of sandwiches (served until 4pm), salads, appetizers and child-sized pizzas. 2385 N. Coeur d’Alene back on the map as a destination for great quality brews with the opening of Slate Creek Brewing Co. Much like the coffee industry, when it comes to beer, people are becoming more aware and quality conscious of the brews they drink, seeking out select craft beer. Generally offering six beers on tap, four of which are their core beers and always on tap—Norse Nectar Juniper Pale Ale, 6 Weight IPA, Salmon Run Irish Red Ale and Double Black IPA; the other two are rotating. Currently their beer is available in the taproom and in glass or plastic growlers (64 oz.) and grunts (32 oz.) to go. They have limited distribution at this time, but you can find their beer at Bistro on Spruce in Midtown Coeur d’Alene. They plan to be more widely available in area pubs in the coming weeks, so keep an eye out. Stop in between 2 and 10pm Thursday

He worked his way up to assistant brewer, earned his degree in philosophy and business, and set out to attain his goal: to open his own brewing company. Trickster’s Brewing Co., opened December 2012 with his wife Emily, was the first brewery in town since Coeur d’Alene Brewing Co. shut its doors two years ago. Though only available in Idaho, you can find their beer at 40 locations around town at bars and restaurants, plus several locations in Moscow. Trickster brews include Bear Trap Brown, Cougar Bay Blonde, Coyote Morning IPA and Inspector Stonewall’s Amber Ale. Stop in any time between 11am and 7pm Monday through Saturday. 3850 N. is where you will find Chinook Steak, Pasta and Spirits at the Coeur d’Alene Casino. Chinook, with its mountain-lodge décor and elevated bar, offers a blend of fine atmosphere, fine dining and easy pricing, proving to be a significant winner of fans following dramatic changes completed in the restaurant

in 2012—formerly Ts’Elusm. They turned Chef Molly Patrick loose to create her own recipes, infused with North Idaho and Pacific Northwest flavors, for the pasta sauces and unique salads and appetizers, but keeping on the menu the prime beef—dry aged for 30 days—for which the restaurant was already so highly acclaimed. Tom and Teresa Capone have again added to the family with a third Capone’s Pub and Grill location. In addition to their Coeur d’Alene and Post Falls locations, you can now find Capone’s award-winning pizza and epic tap selection in Hayden! Capone’s was featured in the Food Network’s Diners Drive Ins and Dives and is a more than a welcome addition to the Hayden neighborhood. Northwest. Selkirk Abbey Brewing is another addition to the new North Idaho beer scene since our last issue of the Idaho Cuisine. Owners Jeff Whitman and Rob Wallace opened Selkirk Abbey—which offers the area’s first Belgian-style beer—in

BRICKS AND BARLEY June, 2012. They met at Enoteca in Post Falls back in 2007, and with help from Laughing Dog’s Fred Colby, focus on high quality beer. They are achieving their goal of producing the best possible beer they can—and they’re succeeding. With 12 brews on tap, they have something for every palate. She also had the opportunity to live extensively with family in Tuscany, experiencing the best of Italian family cooking. There’s something different on Sherman Avenue in Downtown Coeur d’Alene. Now that the restaurant offers more than just a fabulous wine list—fine handcrafted cocktails are on the menu along with a carefully chosen scotch and whiskey selection—the name The Wine Cellar just didn’t quite fit any longer. Owners Tom and Patricia Power decided to change the name to simply The Cellar, as their restaurant and bar has so much more to offer than wine now. “Primarily, we wanted to change the name because we were changing the restaurant, and we were living with the standard perception of the old name and everything that comes along with that, good, bad or indifferent,” says Tom. “By taking the ‘wine’ out of The Wine Cellar, we wanted to let people know that our focus is not just strictly wine; that we have a complete beverage program now. We spent a tremendous amount of money to acquire a liquor license, which is not an easy thing to do in Idaho. We really wanted to be able to offer cocktails to that segment of the crowd that we were never able to attract before.” It seemed natural with the evolution happening to make the name more definitive and the restaurant easier to find. They decided to change the name to The Cellar at 317 Sherman, as most people are familiar with the name of downtown’s main street. The Cellar is still home to its following of wine lovers, and, in fact, just won another Wine Spectator Award of Excellence, recognizing their true dedication to wine. Now with their signature craft cocktails, they are attracting a new following. With one of the best scotch and whiskey selections in town, guests who are into single malts or even nice blended whiskey will be impressed with the selection. And those who go for flavorful cocktails, the Basil Lemondrop and Love Potion are two of the top sellers. And you won’t just find any old bartender tending bar; The Cellar specifically trains their bartenders to hand craft each and every cocktail. They now offer Whiskey Flight Wednesday and Scotch flights. For the beer lovers, the tap selection features rotating craft beers.


THE VINOTEK LOUNGE DOWNSTAIRS ADDS ANOTHER DIMENSION IN WINE SELECTIONS BY THE GLASS THAT NO OTHER RESTAURANT HAS BEEN ABLE TO OFFER IN THIS AREA. “You’re never going to find Coors Light or Bud Light on tap. We sell them by the bottle, though,” says Tom. With a greater drink selection than ever before, Tom and Patricia decided that the menu needed an upgrade to better complement the wine, brews, cocktails, scotch and whiskey. They have revamped their menu, offering a cleaner and lighter menu with more selections. No visit to The Cellar is complete without trying one of their all-time best sellers: The Flank Steak, Lamb Shank, Linguini del Mar, Bouillabaisse and the Capricciosa Pizza are consistently on the top of many guests’ list of favorites, including Tom and Patricia’s. Another new item that has been a hit with the guests is The Cellar Grill, a plate for two for only $49. There’s a new Portobello Mushroom Salad that even non vegetarians will love. Some of the old favorites have been brought back, such as the Mushroom Cap Escargot, Baked Brie, Salmon Cakes and the Mediterranean Pizza. Many items on the menu can be made vegetarian or gluten free. The Powers originally purchased the building in 2011, which had previously housed a nightclub and Brix restaurant, and have completely transformed it. They had the building taken down to four bare walls, making for a clean slate. They took out the old floor and booths, and relocated the bar. The columns are now wrapped with beautiful stained wood. There’s new lighting and bar top, with touches of backlit onyx, bringing new warmth to the building. If you are looking for a nice quiet evening out, grab a table or enjoy the bar and sofa area on the street level where you can enjoy live piano music. If you want to enjoy a more jazzy party and to let your hair down, make your way downstairs to unwind on the sofas with a drink in hand and listen to the bands. If you are looking for a more intimate setting where you can be with 10 to 30 of your friends, a private dining room on the mezzanine overlooking the main dining room is available. “We were trying to find that happy middle ground for an overall great night out; not just go to a restaurant,” says Tom. And Patricia adds, “It’s a whole evening experience.” One must not forget one of the biggest attractions The Cellar has to offer—an Enomatic System where a self-serve wine tasting experience awaits you. The Vinotek Lounge downstairs adds another dimension in wine selections by the glass that no other restaurant has been able to offer in this area. Guests can make wine-by-the-glass purchases using a prepaid self-serve card: a one-ounce taste, a half or full glass of wine. This arrangement allows access to more varieties of wines by the glass, along with the ability to sample more expensive wines before the bottle purchase. Eight bottles of white and 16 bottles of red on tap range from average-priced wine to high-end wines, without having to commit to

the full bottle for a taste. Call it a party cellar where everyone can come together and taste what appeals to them personally. “The downstairs is a very comfortable, casual, unpretentious space where you can go and just enjoy a really neat wine experience,” says Tom.” Adds Patricia: “It’s a hands-on social event.” The Cellar experience would not be complete without the live music. The restaurant recently upgraded the sound system for its musicians, fully integrating the music throughout the restaurant and on the sidewalk outside. According to Tom, “It also gives us the flexibility so that we can provide music to each individual floor separately. For the summer time, we moved the music program back to 8pm to midnight, so prior to that there is a piano player upstairs for those who want a quieter experience for dinner. If they want to stay later they can enjoy some drinks and listen to the bands downstairs.” You’ll hear many of Coeur d’Alene’s favorite performers at The Cellar: Pat Coast, Laffin Bones, All That Jazz, Max Daniels, Jesse Kunz, Barry Aiken and many more great musical talents. THE BEST IN JAPANESE CUISINE AND SUSHI Syringa has developed a loyal clientele starting from the day it opened, due largely in part to its dedicated staff. Owners Viljo and Autumn Basso have been working in restaurants together since 1995; Viljo attended Portland’s Western Culinary Institute, and after an internship at Rover’s—a wellknown French cuisine-inspired restaurant in Seattle—he became a full-time chef there. Autumn worked in restaurants in the Seattle area and attended Seattle’s Art Institute where she studied fashion design. While still in Seattle, Viljo added to his credentials at Cascadia Restaurant and Mashiko Japanese Restaurant and Sushi Bar. He was later asked to help open and be the head kitchen chef at Saito’s Japanese Café and Sushi Bar, a traditional Japanese restaurant in Downtown Seattle. After eight years in Seattle, Viljo and Autumn married and returned to Coeur d’Alene. In 2004, Ezra “EZ~B” Basso was born, and they made the big decision to open Syringa, Japanese Café and Sushi Bar, naming it after the Idaho state flower. It quickly became a neighborhood hangout and awardwinning restaurant that attracted fans from throughout the Northwest. Fresh ingredients and a flare for originality and excellence is what set this quaint little restaurant apart from the rest. PILGRIM’S BAKEHOUSE: OLD WORLD ARTISAN BREADS When it comes to partaking around the family table, we all reminisce about our grandmother’s homemade lasagna or grandpa’s creamy fudge. Memories of these foods, crafted with loving hands, still create a longing within us for family meals, a simpler time and meaningful relationships. But, in today’s culture, it is becoming more and more difficult to keep those traditions alive. At Pilgrim’s Market, owners Joe and Sarah Hamilton and their staff have been dreaming up new ways to bring “slow food” traditions back to your kitchen and family table. EUROPEAN-STYLE BREADS Thanksgiving 2012 … perhaps the most appropriate timing for Pilgrim’s to introduce a timeless and rustic classic, since this is the one holiday dedicated to being thankful and sharing food with your “besties.” After much research, Pilgrim’s purchased a French steam-injected deck oven that promised to deliver to their extended family authentic, hardto-find crusty breads. Today, Pilgrim’s Bakehouse staff daily crafts scrumptious recipes and bakes delectable European-style hearth loaves to bring you a daily bread you can truly savor breaking with your family. And with glutenfree offerings, crusty French baguettes and flavors like Jalapeño Olive Cheddar, 5 Seed and Cranberry Walnut, there is something warm and enticing for every palate and diet.

DELECTABLE PASTRIES In addition to hearty European loaves, the Bakehouse is also creating quite the menu of scrumptious pastries and desserts to satisfy any sweet tooth. Kathy Colton, Pilgrim’s pastry chef, has been working in the food

industry since graduating from chef school in 1985. In 2012, she joined the Bakehouse team after a year and a half as a baker at the Coeur d’Alene Resort, where she discovered a now growing passion for crafting delectable baked goods. “I’m learning every day,” Kathy says. “It’s like a giant science project.” But that “science project” is consistently turning out beautiful and delicious edibles, made from the best ingredients she can find. Kathy’s favorite ingredient to bake with is chocolate— anything chocolate. And the resulting culinary delights speak for themselves.

THE GREEN SMOOTHIE MOVEMENT: SWEEPING COEUR D’ALENE! In June 2011, Pilgrim’s love affair with green smoothies began when author, speaker, filmmaker, and greens and wild edibles enthusiast Sergei Boutenko presented his talk and green smoothie demonstration, “Green Smoothie Power,” in Pilgrim’s Health Education Center. As with most of their events, Pilgrim’s marketing team filmed the class and posted it on their YouTube channel, where it quickly became their most popular video. With almost 75,000 views to date, it is now also available free on DVD at Pilgrim’s Market. Needless to say, Joe and Pilgrim’s staff were inspired by Sergei’s story and the numerous health benefits of green smoothies. So, in 2012, they launched their Fat-Tire-Powered Green Smoothie Booth, which brought yummy kale mango smoothies to the Kootenai County Farmer’s Market. This year, they

Originally opened by Viljo and Autumn Basso—owners of Syringa Café and Sushi Bar next door—the restaurant changed ownership in January 2013. Everett had been a longtime fan of The Garnet, and when the opportunity arose for him to take over the space, he couldn’t pass it up. The menu is anything but ordinary. Many of the ingredients used are from partners’ McLane Farms, dedicated to sustainable farming practices and humane treatment of their livestock. The bacon, sausage and ham come from their pigs that are fed non-GMO organic feed. In addition, they use all-organic practices, all-natural feed and do not use any hormones, antibiotics or any other non-organic medications. Menu items revolve around the farm and the seasons; goats, sheep, cattle, pigs, quail, ducks, chickens and guinea fowl. It’s a fully sustainable farm. Where else can you find fresh goat’s milk, house-made yogurt and Chevre, farm-fresh eggs—hormone-free farm-fresh duck and chicken eggs, sausage made and smoked in house from their own animals, bacon and shaved pork for their grilled cheese sandwiches? Their seafood is wild caught, not farm raised, and they only buy the best of what they are unable to produce themselves. They work with local and Northwest producers for products they can’t generate themselves, which include Small Planet tofu, White Cane Bristol Bay Sockeye Salmon, and Smoked Salmon from Girard Dominique out of Seattle. Even their mushrooms are hand picked and hand delivered in season by a “local group of guys” just for the restaurant— morels, porcini, chanterelles. Corned Beef Hash is made with their slow-roasted brisket, hand-diced potatoes and onions, and the lemon curd is delicious on toast and a variety of dishes. GUACAMOLE WITH PEPITAS AND PATACONES

Café Carambola SERVES 4-6

INGREDIENTS Guacamole: 2 Ripe Avocados, peeled and pitted 2 Cloves Garlic, minced ¼ Habanero Pepper, minced 2 Roma Tomatoes, diced ½ Small Red Onions, diced 4 Mandarin Oranges, peeled and diced 3 Tbsp. Pepitas, toasted ¼ C. Cilantro Juice of 1 Lime Sea Salt to taste Patacones: 2 Green Plantains ½ C. Rice Bran Oil (or other high-temperature cooking oil) Sea Salt

METHOD Guacamole: Mince garlic and habanero peppers until very fine and place in a medium-sized mixing bowl. Peel and pit avocados and add to the bowl. Sprinkle avocados with salt and juice of half of your lime. Mash with a fork or with a wire whisk and set aside. Dice tomato and red onion. Peel oranges and dice as well. Mix diced tomato, onion and oranges in a small bowl with pepitas and cilantro. Fold

three-quarters of this mixture into the mashed avocado. Taste and adjust flavor by adding a bit more salt and lime juice until guacamole tastes nice and bright. Place in a serving bowl and garnish with remaining tomato mixture. Patacones: Use a small skillet and heat oil in it over medium-high heat for approximately 3 minutes. Peel plantains and slice into 1-inch rounds. Carefully set plantain slices in oil, taking care not to overcrowd the skillet. Fry in batches if necessary. After 2 minutes the plantains should be light golden brown on the bottom; if they are too dark, reduce heat. Using tongs, flip slices and fry the top side of the plantains for an additional 2 to 3 minutes. Remove plantains from skillet and set on a plate lined with paper towels. Take a glass bottle with a flat bottom that is at least 3-inches wide and a sheet of plastic wrap measuring at least 8 inches. Flatten each plantain by placing each slice between folded-over plastic sheet. Gently press with glass bottle until the plantain forms a ½-inch thick patacon. Fry flattened patacones again for an additional 2 minutes per side. Drain excess oil on paper towels.

TO SERVE Sprinkle patacones with sea salt and serve immediately with guacamole.

The Hayden Creek Shopping Center is where you will find the specialty store Gourmet Way, a local specialty store. A bit further north on Miles Avenue sits a neighborhood favorite, The Porch Public House, next to the Hayden Lake Country Club. The corner of Prairie and Highway 95 is the home of the bustling Kootenai County Farmers’ Market. Hayden’s own destination for families with kids is Triple Play, with its water park, bowling lanes, go-karts, miniature golf, laser tag, bumper boats and other games. Hayden Lake hasn’t often been thought of as a happening place, but all that has changed with its revamped main street between Prairie and Hayden avenues on Government Way, which have brought a new sense of community to the neighborhood. INGREDIENTS 1 ½ lb. Chilean Sea Bass 1 Tbs. Shallots, minced 1 Tbs. Garlic, minced 3 Tbs. Dijon Mustard ½ C. Viognier ½ C. Cold Butter 2 Tbs. Cracked Black Peppercorns ¼ C. Basil, chopped ¼ tsp. Salt ¼ tsp. White Pepper

METHOD Sea Bass: Cut sea bass into 6oz. portions. Brush fillets lightly with oil and place on medium hot grill. Grill fillets on both sides until just done; fish will flake through. Sauce: In medium sauté pan, heat 1 tbsp. butter with garlic and shallots; sauté until translucent. Deglaze the pan with ½ C. Viognier and reduce slightly. Add mustard and cracked pepper and reduce until almost dry. Add the remaining butter and swirl with whisk until butter is melted and incorporated. Salt and pepper to taste. Pour sauce over the grilled sea bass and garnish with chopped basil.

Combine the prime location with excellent service, great food breakfast to late-night, a kids’ menu, extensive wine list and full bar, plenty of easy parking, 250-seat capacity (including the huge patio) and an ever-changing range of event specials like local non-profit fundraising dinners and live music, and you’ve found a community favorite restaurant. Trinity at City Beach fits a wide range of dining styles. Breakfast might mean a savory Greek Scramble in a warm basil-tomato tortilla or a quick yogurt and granola before you hit the sand, the slopes or a day of shopping in Sandpoint. With their classically trained chefs and an emphasis on top-notch service, TCB is also a finedining destination. Executive Chef Thane Jenness and Sous Chef Andrew Mills—both from New Mexico and trained at Portland’s Western Culinary Institute—bring a variety of influences and experiences to Trinity at City Beach including Mexican, Alsatian French, German and American cuisine from both the Southwest and Northwest; creating a menu that combines flavors of the Southwest while infusing a distinctly Northwest style. “We put a lot of emphasis on things like incorporating local ingredients and using

hand-cut steaks and seafood,” Justin says. “The majority of our menu items are made from scratch, and our pan sauces are made to order.” Try hearty fare like the Lamb Broschette with pistachio mint pesto Brie and Dungeness Crab Stuffed Halibut and TCB classics such as Cedar Plank Salmon topped with Granny Smith apple slaw and lemon beurre blanc. You don’t have to be a math scholar to realize this place has a little something for everyone. And yet, for all Trinity at City Beach does in the kitchen, it’s what they’re doing in the community that puts the good in the good food experience you can expect there. “This is home,” says owner Justin Dick, who relocated to Sandpoint permanently in 2007 after a decade of visiting family in the area. He has spent as much time revamping the restaurant as he has redefining community. Children and educational causes are near and dear to his heart, says Justin, the father of 5-year-old Jace and 8-month-old Evelyn with wife, Shaunavee. After earning his degree in psychology from University of Colorado Denver, Justin’s first job was conducting research on underserved school populations. Although he eventually refocused on sales, marketing and business, the impact was long lasting. “I was fortunate to grow up in a family that had a good sense of giving back,”

says Justin of his parents, who started the original Café Trinity on First Avenue. Since 2009, Justin has relocated and expanded the restaurant, broadened its menu and committed to such causes as Kinderhaven, which provides in-crisis support to children, and Team Laughing Dog Racing 24/7 for Autism. TCB hosts events such as Yappy Hour, in which pooches and pet-owners can enjoy a pint or two benefiting the Panhandle Animal Shelter, and the CHAFE 150, a Sandpoint bicycle ride, which raises money for Lake Pend Oreille School District students affected by autism. The Clearwater River Valley was planted with vines, and over the next 40 years the vineyards flourished in the soil, terrain and climate producing plump fruit perfect for making top-quality wine. Then in came the years of prohibition that

destroyed the cultivation of a promising wine industry.

Along came Coco and Karl Umiker, and Melissa Sanborn and Mike Pearson. Coco and Karl of Clearwater Canyon Winery and Vineyard planted their first vines on Coco’s grandfather’s farm in the Lewiston Orchards. Melissa and Mike bought an overgrown vineyard along the picturesque Potlach River near Juliaetta and are nurturing the vineyard and expanding Colter’s Creek Estate Winery far beyond its original glory. Coco and Melissa are the winemakers of the Lewis Clark Valley. According to Melissa and Coco, the wines here share a unique quality with clean bright flavors that distinguish the wines from this area’s specific terroir (by definition, a group of vineyards that share the same type of soil, weather, grapes and wine-making savoir-faire—contributing to the specific personality of the wines there). Considering the winemakers here are women and they share both wine

making and agricultural knowledge of their soon-to-be-official AVA (American Viticultural Area), they are distinctive in their knowledge of both the science and the heart of making wines here in this valley. The wines of the Clearwater Valley and these women are about to make a big mark on the American wine world with their craft.

CLEARWATER CANYON CELLARS Karl and Coco Umiker are both scientists; he with a degree in chemistry from the University of Arkansas and a master’s in soil science from the University of Idaho, she with degrees in microbiology, molecular biology and biochemistry from the University of Idaho and a PhD from Washington State University in food science with an emphasis in wine microbiology. Says Coco: “I studied wine spoilage in my doctorate. You have to know your


enemies to know how to make great wines consistently.” They started the Umiker Estate Vineyard in 2003 and Clearwater Canyon Cellars in 2004. Although they share ownership and workmanship in the vineyard and winery, collaborating in everything, Coco is the winemaker and has been from the start. She thought she would pursue a medical degree. She was diagnosed with ovarian cancer as a child and spent many hours in hospital care, intrigued by her developing knowledge of the many scientific processes she endured during her treatment. “I actually thought after I recovered from cancer at age 11, and recovered from it well, I would go to medical school to become a pediatric oncologist,” and she is healthy indeed. She runs and bikes— she and Karl actually met bike racing in college. As studies went on she realized she didn’t want to go back to a hospital, even as a doctor. The smell of isopropyl alcohol still makes her nauseous. However, she loved the science and stuck with the pre-med track, but went looking for a great life. “I was handed back my life. I felt like I just wanted to live it and suck the marrow out of it. I think cancer and science both got us here,” she says with a glance and a wink at Karl. It’s clear to see they are both doing something they have a passion for, together. Later, during her studies, she found herself more and more inspired by the chemistry and science of winemaking, and life shifted gears. “We got into this with a quality of life in our sights. We’re the Sandlot kids of the wine industry. We started this with nothing. There were times when we had $25 in our checking account. Karl had just finished grad school, I was in grad school. We had no money,” remembers Coco. But, when Coco’s grandfather rented them that little piece of land to plant some grapes on the family farm, they were excited to dig in and begin the fourth generation of farming there. When asked about the unique challenges about being a female winemaker Coco laughs and says she’s not sure if it’s her youthful looks or just a social assumption, but people are surprised to find out she is the winemaker, always assuming it’s Karl. She’s even been asked for identification trying to attend her own tasting event with her wine in hand.

Their science backgrounds allow them to float back and forth between the vineyard and winery as well. As Coco says, “There’s a great atmosphere around wine: you have science, you have the social aspect, you have people, you have that tangible satisfaction. Working hard at making something great, and it seems like the harder we work the better the wine is. That is not true for all things in life. It is very gratifying that way.” Coco has finished her PhD, retired from teaching (at Lewis Clark State College in Lewiston from 2009 to 2012) and Karl gave up his day job in 2011; they are now both 100-percent devoted to the wine.

“Every day we jump out of bed thinking how do we improve our wine? How do we make it better? How do we get better at what we’re doing? That’s a really exciting place to be. I’ve already seen the quality of our life—not just the enjoyment of life but the quality of our business, the wine, our customer service—has exponentially taken off.” Clearwater Canyon has a loyal following in their community, with people who consistently come to the winery buying their wines, so they started the Enthusiast Club. Says Coco: “[In the Enthusiast Club] we take people on a journey with us, getting people involved in the process of our winemaking, engaging them, learning more about who we are and how we make the wine; where we are now to where

we’re going. Your choice of wines and free shipping are nice club perks, too!”

COLTER’S CREEK ESTATE WINERY It all started when Melissa Sanborn took a trip down to Northern California more than a decade ago to tour a winery. She was studying chemistry in college at the time, and according to her, that’s when the interest was sparked in winemaking and the science behind it. “It just seemed like the right fit; like that’s where I was supposed to be,” she says. “I was drawn to it.” With the balance of science application and the freedom of creativity, Melissa decided the wine business was the direction she wanted to go. Her journey in the winemaking business started back in 2004 with husband Mike, and they’ve been making wine at Colter’s Creek since 2007. He, the master of systems for the winery and vineyard and Melissa the master of the wine; the once-neglected vines now have a whole new life. According to Melissa—who has her master’s degree in food science—reviving the vineyard has drawn locals into the vineyard, which has been a unique and satisfying experience. And the tasting room draws many from the community, bringing the rural population closer together. Being a female winemaker brings a little extra creativity to the table. “When working with my husband, I realize that women in general bring a calm and serenity to the business. Mike and I have a different way of looking at the same thing at times. I think there is a nice balance between men and women and what each brings to this industry.” When it comes to Colter’s Creek wines, they are clean and bright, and the terroir brings a distinctive difference. Their wine is a result of the vineyards they maintain and the grapes they grow. They’re creating something—something

wonderful to be enjoyed by many—with what they’ve grown themselves. “We’ve taken the approach that wine was the common drink of men and women for hundreds of years, and it’s kind of got this fanciful persona in the states,” says Melissa. But they are bringing it back to its roots. Mike and Melissa are by no mean pretentious. Their wines are affordable, even offering wine on tap and refillable bottles. She feels they have been able to connect with a lot of people that way. Economically getting a good glass of wine for $5 and something good to eat, their fans appreciate it. And even better … consumers know where those grapes are coming from! Colter’s Creek is truly a homegrown community winery. “We’re not just selling a bottle of wine to someone,” Melissa says. “It’s a relationship we are cultivating.” This year has added a new and exciting experience to the business—a baby girl, Faye. Melissa and Mike are learning how to balance both the work and family they love, multitasking even more at the winery and vineyard, nurturing a promising new future for their business, their community and their family. Melissa and Mike have a close friendship with Coco and Karl, and as winemakers in the valley they have a bond and offer support to each other. Melissa and Coco are the main winemakers pulling fruit from their local vineyards so they collaborate on occasion, help each other with resources and are pulling together to achieve their new AVA designation. [recipe] FIRE CRACKER PRAWNS

Bonsai Bistro and Sushi Bar SERVES 4

INGREDIENTS Prawns: 1 lb. Wild Mexican Prawns, peeled and deveined, leaving tail on (these have great flavor, other types will also do) 4 C. Cooking Oil 1 C. Mayonnaise 2 Tbs. Sriracha Chili Sauce (or as much as you want!) 2 Tbs. Mae Ploy Sweet Chili Sauce (any sweet chili sauce or honey will work) 1 tsp. White Pepper 1 Tbs. Garlic, minced 1 tsp. Fresh Lemon Juice ½ tsp. Dill 1 C. Corn Starch Togarashi (optional) Spun Beets and Daikon Radish Cole Slaw: Beets Daikon Radish 1/4 C. Rice Wine Vinegar 1/4 C. Sugar

METHOD Prawns: Mix mayonnaise, Sriracha, Mae Ploy sweet chili sauce, white pepper, minced garlic, fresh lemon juice and dill together and set aside. Heat 4 cups of cooking oil in a wok to 425˚ (a counter-top fryer will work for this). Dust 4 oz. of prawns in the corn starch and carefully drop them in the oil one at a time. Stir and cook for 1 minute. Remove and place on paper towels. Repeat 3 more times. In a bowl, toss prawns in your spicy mayo mix and place over slaw mix. Cole Slaw: Spin the beets and radish on a vegetable lathe; you can also julienne them. Heat rice wine vinegar and sugar until dissolved, then chill. Once chilled, toss with Daikon radish and beets.

TO SERVE Place prawns over slaw mix. Garnish with Togarashi, a Japanese chili blend. Looks great served in a martini glass.
