Froyo EarTh Husband-and-wife team steve and Karen Kraft opened froyo earth late summer 2010, and it has quickly gained popularity in its downtown location, offering its patrons a fast, tasty, healthy treat. the concept is simple: the frozen yogurt and sorbet are self serve, you select your toppings (everything from fresh fruits, cereals and nuts to candies, syrups and other treats), and just pay per ounce. froyo earth serves Yocream products, based in Portland. DoWnToWn ChurChIll’S STEakhouSE after a devastating fire gutted the building in July 2008, spokane was left wondering if its favorite steakhouse would rebuild. lucky for us, churchill’s opened its doors once again. It took the hard work of owner and executive chef, w william alles, along with a team of support and 19 months to restore the restaurant at 165 s. Post st. the beautiful rich mahogany interior furnished with beefy chairs, tables set with glistening stemware and china have been restored. but, some notable differences are that the wait staff and dining room have been dressed down slightly, and the prices have been lowered a bit, but the menu is still serving high-quality items as it

this causal diner has a long history of providing homestyle cooking and fresh cooked, handcarved meats. Dale Kleist of fast eddie’s and Mark starr of David’s Pizza have turned up the heat on the cuisine, super sized the fun and streamlined the service, not to mention the walls lined up with a lot of famous eds and almost as many tVs. they opened in february to a very welcoming south Hill neighborhood eager to see their new favorite local pub. the place was quickly a hit with their awaiting fans that patronize both their restaurants downtown and in the Gonzaga university area along with a few new neighbors just happy to see the new place on the corner of 57th and regal. busy as it is, the service is friendly and excellent right from the start. this is a place for both families and the sports bar crowd. they’re not only serving David’s world famous pizza, but also some all-star menu items from pastas, steaks and burgers to salads and sandwiches. the happy hours are very user friendly for getting happy with great prices from afternoon to late night. at press time we were hearing about patio expansion. sounds like they’re going to need it. Programs that help feed Spokane’s hungry have got a friend. It’s called Feed Spokane, a simple concept that brings together an army of volunteers, contributors and resources to distribute more than 800,000 meals annually to those in need of food in the greater Spokane area. In the restaurant and hospitality industry, many occasions arise in which perfectly good—even delicious food—is thrown in the trash because it is left over from an event, or it needs to be eaten right away. These commercial food-service operators just don’t have a way to get it into the hands of those who need it. This is where Feed Spokane enters the picture. Feed Spokane volunteers take the call, pick up the extra food and deliver it to the appropriate charitable feeding program that utilizes each and every drop. It only takes a simple phone call to participate. They really do it all, and here’s the kicker—they do it efficiently. It is truly an amazing program, with a generous group of citizens who care and share their time and resources to make it all work. “People are coming together to make sure they can serve as many people as possible,” says Tom Petersen of the Salvation Army. “This community is so wired for that.” Feed Spokane is gaining real headway in making Spokane a no-waste community that cares about those who are in need of food.

Many area restaurants are involved and more are becoming a part of this vital effort to meet the needs of our food-challenged citizens. Arby’s, the Spokane Convention Center, Davenport Hotel, Papa Murphy’s, Perkins Restaurant and Bakery, Northern Quest Casino, Satellite Diner, Prospectors, Little Caesar’s, and even The Epicurean Delight Event, are all generous contributors and supporters of the Feed Spokane movement. Industry suppliers who have faithfully donated pans and Ziplock bags to the cause include Bargreen Ellingson, Sysco, U.S. Foods, URM and Insite. Other contributors include Washington Auto Carriage, who provides a secure parking lot for Feed Spokane’s refrigerated truck, donated by Ron Wells and his son from the Coeur d’Alene Brewing Company. Greater Spokane Dietetic Association, who organizes and orchestrates the Dine Out to Feed Spokane every March in honor of nutrition month, and the Spokane Regional Health Department encourage restaurants to donate their leftover safe food to the cause. Last but not least is the Washington restaurant Association Spokane Chapter, Bakers Commodities and caring citizens who help with financial contributions on a regular and faithful basis. Everyone is important and plays a variety of roles in their contributions. “At the end of the week, a lot of high-quality product was being thrown away,” says Jerry Lynch, general manager of Arby’s, one of Feed Spokane’s original restaurants to get involved.

“Now we give it away.” Arby’s owner, Dave McGann, even donated a freezer for storage, while Red Lion donated a truckload of used kitchen utensils to better outfit the meal sites in Spokane. “Restaurants are saving and storing their leftover prepared food for pickup once a week by program volunteers, who then get the food to one of some 30 low-income meal-provider kitchens in the Spokane area,” says Tami Kennedy of Bargreen Ellingson, who serves as a board member for Feed Spokane. “This simple act has also made restaurant operators more aware of the waste in their

The idea is catching on! Now Feed Cheney and Feed Medical Lake offer similar impromptu food pickup services to get fresh hot-prepared food into local feeding systems for the hungry. Both restaurants and schools are getting involved and feeling good about contributing great food that may have otherwise gone to waste. It is a wonderful way to boost employee moral and encourage community service amongst staff or students alike. “If a bunch of people do a little, it will work,” affirms Jerry. The last thing we would want to see is someone who already has compromised health be at risk of getting sick from the food we distribute.“ Feed Spokane trains volunteer workers in safe food handling at meal sites, with an annual Serve Safe Certification Class and requires food workers certificates be held by all volunteers picking up and delivering donated food. According to Marlene Alford, executive director of the Women’s and Children’s Free Restaurant, “Feed Spokane has been instrumental in providing a way for the ‘sharing of resources’ to take place. It has opened doors to smaller agencies that are playing a vital

browne's addition & west side HiStoriC neiGHBorHood oFFerinG Great dininG, artS and eventS from browne’s addition to cheney, spokane’s west w side is home to the beautiful northwest Museum of arts and culture (Mac), the spokane International airport and fairchild airforce base in airway Heightsand eastern washington w university campus in cheney. In the 1970s and ’80s, browne's addition was considered less than desirable. r run-down houses with knee-high grass were a common sight; crime was rampant. when potential renters responded to an apartment ad and discovered its location, their response would be an automatic “no thanks.” the neighborhood was known as Hippie Haven. then, in the early ’80s, a group of optimistic neighbors began a branding campaign to put forth the neighborhood as historic—not just old. they came up with a logo and directed neighborhood funds received through a HuD grant to be spent on old-style street signs, historic plaques, a traffic turn-a-round and a replica gazebo in coeur d’alene Park. the branding campaign worked, and over the years, the perception of the neighborhood gradually changed. as the apartment occupancy rate increased, so did the revenue the building owners were willing to reinvest. today today oday,, the upscale neighborhood is now full of classy, hip and high-end condos and refurbished stately homes. take a stroll in browne’s addition to see how this t

They open the restaurant at night with sophisticated, chefprepared fine dining and are currently open Friday and Saturday evenings. At 5 pm they switch from order-and-sit-down to fulltable service. A diverse selection of imported and local wines and microbrews accompany the classic French dinner menu. Live music is a big hit every Friday night. Dinner choices include wonderfully savory offerings such as Pan-Seared Sea Scallops with a Caper and White-Wine Truffle Sauce, Steak au Poivre with Frites and Almond-Crusted Salmon with Honey-Lavender Beurre Blanc. The dinner menu is peppered with seasonal changes such as Coq au Vin and White Wine-Braised Rabbit Cassoulet. Deb and Megan are proud of the team they’ve assembled. Together with their chefs, they continue to stack up awards for
their culinary expertise. Adding to their win at the local Battle of the Chefs, Madeleine’s was voted Best Brunch two years in a row by diners voting through a local TV station. Last year Madeleine’s won their category of First Course at the highly touted Epicurean Delight, and followed that up this year by winning the coveted Dessert category with Pastry Chef Alicia’s Hazelnut and Salted Caramel Marjolaine. Last fall, voters at the Spokesman Review ate 14 Reuben sandwiches and voted Deb’s Best in Town. This spring, different judges tried Deb’s against nine others and declared a “culinary Cinderella story,” as Madeleine’s won again. Hearty and classic breakfast is now offered seven days a week. Among the favorites from the scrumptious menu of cooked-toorder dishes are omelets, apple-topped cheese-filled crepes and hearty whole-wheat pancakes with maple butter. Also available, while they last, are Madeleine’s very tasty baked maple bars.
“Our guests love to dine alfresco, whether they’re enjoying a fresh croissant and espresso, or a classic French dish,” says Deb Green, owner.
Lunch is served daily. The gourmet display cases allow for selections that offer diverse and refreshing new choices in enticing ways that are fresh all day, every day. They also offer alternative ingredients with farmers’ fresh organic produce and imported cheeses. Many of the cased items are vegetarian with vegan choices as well. Popular items on the lunch menu include Grilled Paninis, Hearty Macaroni and Cheese, Cornish Pasties, salads, Croque Monsieur and the popular Sliders—three mini burgers with caramelized onions, Gruyere cheese and Dijon on house-made white buns, served with pommes frites (fries). Dessert pastries include such European classics as Napoleons, Éclairs, Sacher Torte, fresh fruit tarts, Paris Brest and seasonal favorites like Pumpkin Fudge and Buche de Noel. Beautifully displayed, they entice guests all day long to enjoy. Peanut
butter sandwich cookies, award-winning ginger molasses and traditional Macaron de Paris are among some of the cookies available each day. It takes a highly trained pastry staff of three led by Pastry Chef Megan and Pastry Chef Alicia Purvis Lariviere to keep up with the demand for fresh pastry. Most days Meg can be found in the kitchen constructing fondant-covered cakes in incredible shapes and colors for special orders; a task she’s very suited for and ever so happy doing. Her cakes, and cupcakes as well, are quickly becoming recognized around the Inland Northwest for their delicious flavors, astonishing detail and whimsical designs. the other special occasion for which they serve brunch. After a romantic proposal on Valentine’s Day at the Eiffel Tower in Paris, Megan married Aaron VanStone with a summer wedding at the Davenport Hotel and reception, which took place on Wall Street just outside the restaurant. On the closed street, a very large chandelier-adorned tent, housed many of the 250 guests as pink- and orange-clad tables spilled out from beneath. Dozens of large vases held assorted colorful matching flower arrangements and paper lanterns together with more than 30,000 tiny lights strung across the street. Drawing on her 16 years experience, Deb orchestrated the catering for the rehearsal dinner, reception and Sunday Brunch. Meg baked the Wedding and Groom’s cakes, which were decorated with fondant and thousands of handmade gum-paste flowers. Aside from the gourmet meal and delicious cakes, each guest was treated to a hand-decorated Eiffel Tower cookie. Madeleine’s is happy to help you plan your special event. truly believes in supporting local businesses. As Bryce stresses, “There is such a huge difference” between locally owned and chain restaurants. He adds, “We absolutely rely on every penny. We have to earn your business; we have to passionately care about your business. When you have to earn people’s business—when your livelihood depends on it—you’re pretty passionate about what you do, and it shows. We hope that people recognize that we’re passionate about what we do, and we care about the people who walk through our door. We hope the next time they’re thinking about where to go, that they give the local restaurants a try. It’s all made from scratch; it’s all fresh. “People would be surprised at what a difference it makes to have your order individually made when you order it, with recipes prepared here, using fresh ingredients here. Most chain restaurants are preparing dishes that are pre-made and frozen. There is such a difference in quality, and I challenge anyone to test it themselves. Not just at the Italian Kitchen, but other locally owned restaurants as well,” says Bryce. “We have to earn your business; we don't have the luxury of spending millions on marketing, or the ability to put our businesses on the best intersections in town like the big chains do. And on behalf of every locally owned business, I urge you to support us all when given a choice! We care so much more, and it shows!" When people choose to support a local business, that, in turn, is what “drives our city and drives our economy,” he adds. “So when given the choice to go to a large national chain or a small local restaurant, to me, you got to give a local restaurant a shot. We’re confident that people would be pleasantly surprised when they do frequent these establishments." Not only do Bryce and Lyndsay value their guests, but their employees, or as they refer to them, “service professionals,” and recognize that they are an integral part of the Italian Kitchen’s success. “When we take care of our employees, our employees in turn take care of our guests, and our guests, in return, take care of our business. It’s a circle that’s valued,” says Lyndsay, and adds, “We couldn’t do this all by ourselves.” Many of the employees at the restaurant have been employed there for a minimum of five years, and the restaurant has only been open for six. “That’s a reflection of the atmosphere around here,” says Bryce. “We get great employees and we retain them.” The entire Italian Kitchen staff strives for the best. It is their goal to be “the best” Italian restaurant in Spokane. That is what, according to Bryce, helps to keep the Italian Kitchen fresh, day in and day out. That is a challenge for any restaurant, but it has paid off, as the Italian Kitchen has been recognized not only locally but nationally. “We’ve been blessed; it’s been very rewarding; it’s been successful. A much larger percentage of the population knows that we’re here. ... We’ve gotten a lot of recognition, but it certainly doesn’t come without a lot of passion and a lot of hard work.” Bryce and Lyndsay Kerr have found success in the Italian Kitchen, but more importantly, they have found success at home. “For us, it’s about a happy, healthy family. And that’s the reason we do this. We don’t do this because we’re necessarily ‘in love’ with the restaurant business. We do it because it allows us to provide a life for our kids and ourselves,” says Bryce. “When we come home at night and our three kids and the two of us are happy, that’s success, period.” [SS]

Gage lee n at i o n a l S i lv e r S p o o n awa r d w i n n e r If you ever happen to stop in at Franks Diner in Downtown Spokane, you may run into one of the best servers in the area—Gage Lee. Gage has been in the restaurant industry for more than 35 years. At age 17, she began her restaurant career in Seattle, working at various breakfast establishments while attending school. Her most memorable experience in her early career was while working at the Roosevelt in Downtown Seattle. As she recalls, “This lovely jewel of a place was very busy with busloads of tourists coming through every morning. Fast-paced and fun! I loved meeting all the different people. I enjoy hearing why they were in town and often I could help them during their visit.” Gage has proudly worked at Franks Diner, a favorite landmark restaurant in Spokane, for more than 20 years and feels blessed to be part of the Franks restaurant family. Franks has been voted Best Breakfast and Best Diner 12 out of 13 years by several People’s Choice awards. And … Gage herself received a very prestigious award in the restaurant industry. In 2009, she received the Spokane Regional CVB’s Silver Spoon Award for Best Service, and later that same year, she was again recognized and honored by receiving The National Silver Spoon Award for Best Service. “Franks Diner has touched my life in many wonderful ways!” acknowledges Gage. “One way in particular was being named the 2009 Silver Spoon Award winner and then the National Silver Spoon Champion. This was an amazing and humbling experience, and I could not be more proud! “I did not achieve this incredible honor by myself; this was a team effort as Landmark Restaurants taught me so much about how to serve and treat our guests.
Landmark Restaurants train all their servers in an incredibly supportive and caring atmosphere. The guest is the most important part of our focus. Every Landmark server could be a Silver Spoon winner!” Even though she has been honored for her impeccable service skills, she believes each serving skill you have can be honed and continually made better. The Franks team strives daily to sharpen their skills. Gage has made this a personal goal, which allows her to have constant daily growth. As Gage says, “I love people and I think our guests are the very best! Many of our regulars feel like family to me! Gage values her career and gives her all each day she goes into work. As Gage sees it, every server is a representative for their hometown and has the opportunity to present it very positively. According to Gage, “Every visiting guest has their separate needs and desires. A great server has the opportunity to help fulfill those needs. I believe we are part server and part ambassador for our hometown.” For Gage, a great server possesses knowledge, experience and energy. The server must know the menu well, understand the company’s expectations and be engaging when it comes to interacting with people. And she adds that “reading” the guests is important, too. Some guests prefer a more formal approach in which their server is non-intrusive, while others enjoy familiarity, with lots of interaction and joking. Being able to read the guest allows the server to customize that dining experience. Though she has no intention of changing careers, if she had to choose another profession, “it would include traveling and working with people. Until then, Franks is my passport to the world.”

S ervin’ it up F ro M B eH ind t H e Ba r Mari Bork got her start in the restaurant business as a server at age 18 at The Montana Mining Co., her part-time gig to make extra spending money while attending the University of Montana in Missoula. She remained there the four years she was in school, and after graduating, she set off to Spokane for law school. “I was pretty sure I was going to be an attorney, and I kind of raced through high school, raced through college, and I thought, ‘I think I want to take a year off,’” says Mari. “I started working at Cyrus O’Leary’s and was there for quite a while, and I just loved it!” Mari moved to Vancouver, Wash., where she worked at Beaches, which she believes gave her the foundation she has today when it comes to her career in the service industry. Upon returning to Spokane, she landed a job at Cavallino Lounge, where she met Chef Jason Rex, whom she currently works for now at Scratch as a bartender.

“It’s great to work at a restaurant where you are surrounded by a great group of people who appreciate you, and you can be proud of where you work. And the kind of product that you can put out—that’s important.” At Scratch, the food is always fresh and organic, using quality ingredients, and locally grown products whenever possible, and of course, artfully plated. “The food’s amazing. I like what we do here, and people appreciate what we do here.” So what is it that makes someone a good server/ bartender? “In my opinion, a good server is someone who makes the experience memorable,” says Mari. “I don’t want anyone to ever leave feeling like they didn’t have a great experience; guests should enjoy great drinks, great food and a great time.” Her key to being a successful at what she does: “Do it because you love it. And let people know you love it!”

Dry Fly Distillery LocaLLy LLy made; internationa LL LL LLyy consumed The story of Dry Fly Distillery is a bit of a fishing tale—with a twist— which is about all you’d want to add to their award-winning product. Five years ago, Kent Fleischmann and Don Poffenroth were out doing a little fishing and sipping on what was considered the world’s finest vodka when they wondered what happened to the spirit: When did it become a flavorless, odorless base for cocktails? They refuse to disclose the brand that offended their palates, but they decided that liquor needed to be made better—so that’s what they did. Instead of lamenting the demise of vodka, they quit their corporate jobs and drafted a bill that would make distilling legal in Washington State. These maverick distillers have not only provided Spokane with a treasured local business, but the entire state with a new industry. When hatching their plan, they decided to do it right. They chose to be very inefficient and take no short cuts, which is generally the way of small distilleries. They use only locally grown ingredients including their wheat, which is provided by a 105-year-old homesteaded family farm in Rosalia, Wash. The boys at Dry Fly work hard to support the community that supports them. In doing so, they have created award-wining, memorable,
world-class spirits and a heck of a fishing tale. As a result, the community is hooked. Their portfolio includes vodka, gin and limited-release, small-batch whiskies, which are sold nationally. In 2009, their vodka won The San Francisco International Spirits Competition. Our little Spokane distillery went to play with the big boys and brought home the big one! They competed against 200 other brands for the coveted title of the spirit industry. Stop by to see their impressive operation and be a part of the experience. It’s worth the visit. Adding The Flying Goat across the street has enhanced the Audubon neighborhood even further with its casual pub atmosphere and one of the most inventive and delicious pizza menus in town. With a desire for revitalizing the neighborhood and community around them, the Downriver Grill owners and brothers Jonathan and Aaron Sweatt, along with mother Vickie and step-dad Hal Dixon, collaborated with local companies to build their restaurant, researched fresh local produce and products for the menu, and hung local artwork on the walls. This passion for the Spokane community has spread to their team of staff members and is evident by the way they treat their customers. Chef Darrin Gleason came from Downriver to head up the kitchen at The Flying Goat and created a whole new type of pub menu—something Spokane had never seen before—and now The Flying Goat has been getting rave reviews all over town. The combination of the chef’s inspirations coupled with the local fresh ingredients and the fire of their 2,500-pound Woodstone oven, present a pizza at the table like no other. “The Goat” as it is affectionately referred to, is committed to providing a delicious dining experience with food and drink. Using fresh and local ingredients, they stir up sauces from scratch, feature their own house cheese blend and offer menu items named after places and special people in the neighborhood. They bake the pies at 600°F to give their own proprietary dough that fire-kissed charred crust, creating the ultimate texture and flavor. General Manager Beth McRae has created a consistently rotating draft beer selection with 15 tap handles, including a Cask Engine for a “Real Ale” fan, as well as a selection of more than 50 bottled beers. The Goat also offers growler fills of draft beer to take home with your pizza or you can take home any of their bottled beers or wines. stacy rivas S e rv i n G S p o k a n e F o r 1 0 y e a r S ! Stacy Rivas has spent a decade as a professional server in Spokane area restaurants. Her resume includes CenterStage Dinner Theatre, Ella’s Supper Club and Quinns. Now Stacy dedicates her skill and passion at Downriver Grill, where she has been serving customers for nearly seven years. To some, serving is just a job. But to Stacy, working at Downriver is more than that. “I have the luxury of working with people I consider really good friends; they’re family.” She enjoys seeing familiar faces walk through the door and sitting in her section. “Customers come because they know us,” she says. And what is it that keeps the customer returning? Of course the food, but the service is just as important. Stacy believes having a positive attitude and being personable toward the guest is a must. As Stacy sees it, guests go to the restaurant to enjoy the company they’re with, and enjoy the food of course, but that experience also involves getting good service, which she commits to from the moment she greets the guests at her table. “The beginning of the meal is the most important, so always make that first good impression.” Think of it like a first date; if the date starts out uncomfortable and uneasy, there’s a good chance it will remain that way until the date is over. Stacy recommends smiling and checking in with the guests. Wearing a smile is as much a part of a server’s uniform as is the white, buttoned-up collared shirt. Reassure them by your actions that you are there to do your part in contributing to a memorable dining experience. Stacy says that one of the reasons she has been successful as a server is due to her positive attitude and interaction with customers. She also attributes her success to her relationships with her coworkers at Downriver. “I really love the owners here; I love my job and the people I work with. I find it easy to work with people who are good, kind people.”

Merrilee Lindaman owns one of the most successful, and the original, Gourmet To Go in Spokane. Lindaman’s celebrated 26 years in business in 2010 and its warm and inviting atmosphere coupled with scratch-made gourmet foods have made them a landmark in Spokane. The restaurant sits in the heart of the South Hill neighborhood, in the shadow of historic St. John’s Cathedral. The neighbors are regulars; visitors are impressed. “Gourmet” in Lindaman’s book is food, beverages and service done well. And they do it very well. In 1984 you decided to open a restaurant called Lindaman’s. What were you thinking? I grew up in a home where the food was always made from scratch, yeast raised rolls on weekends, pies after every dinner. Our house was filled with people. We had huge holiday feasts. There was always plenty of food for friends and relatives to stay over. My parents’ attitude about opening our

home also meant opening our hearts and what followed was a revolving door of colorful guests and rich memories. It’s no surprise that I needed to create that 'community' around comforting food for my career. How did you score such a great location? Remember, 27 years ago there were only a few
cars coming and going on Grand! We got lucky! We picked a neighborhood where people could walk and ride bikes to us, in a hospital district and a main arterial heading to and from downtown. Best of all, we chose to reside in the shadow of St. John’s Cathedral, where carillon concerts happen every summer, and Manito Park is just a block away.

I remember that sometimes when I’m in Lindaman’s.” ~ Bill Stimson You’ve seen a lot of changes in the food world in 27 years. Want to share any thoughts on that? I’m wildly passionate about food. I drag my husband (willingly) to every venue that offers cool new food/applications. I go crazy reading about food trends, eating in the Napa Valley, growing many varieties of heirloom vegetables in my 5,000 square-foot garden (Thank you Alice Waters!). I’ve experimented with many of those trends over the last couple of decades. The trends that stand the test of time are the ones that I pick to showcase at the store. I’m committed to a 'to-go' format, so that does limit me from taking part in some great choices, but there is no shortage for what I can and do offer. So many trends come and go, but the biggest 'shift in thinking' over the last few years is one that will stick. The shift to more sustainable, local and organic foods is a global reality. It’s not just a trend. I look forward to a better infrastructure (ie; availability, cost and delivery system) for these items in our area. All of us in the food business or in the business of eating food, can, should and must embrace this reality. … It is our future. Now, I’ll get off my soapbox. Give me an easy question.
You don’t have a big turnover of employees. Why do you think that is? I think that early on my employees knew that they were a part of creating something. I’ve always felt that it was important for my staff to take part in the process. I’ve needed their talents and insights. As we continue to evolve, we are still all learning new things. We all need to feel part of something bigger. I’m fortunate to have every one of them in my world. Talk to me about your customers. When I’m at Lindaman’s, it seems like everyone knows each other. They do! This conversation could last for hours! I’ll try to make it short. My customers are the reason I’ve been in business for so long. I serve three generations of families. More than half of them eat more than three meals a week here, and have been doing so for 20-plus years. I met Caleb, one of my employees, when he was a bump in his mom’s belly. My customers are the people who make up 27 years of great stories. They keep me focused on what to cook and remind me of past favorites that need to come back to the menu. I know who likes rhubarb pie! It is such a good
feeling to know exactly who’s eating what you’re cooking. My job is cooking for my friends. It doesn’t get better than that. Of what are you most proud? A customer may have said it better than I can. He shared this comment with us. It speaks to the core of my goals for the restaurant: “We like the casual, convivial, European atmosphere—a good place to BE. People request their favorites every day; we try to accommodate them. We also have dishes that we try to keep on a regular schedule since so many folks use us on a daily basis: twice baked potatoes, fresh fish cakes, enchiladas, pot pies, a nightly stuffed chicken breast, to name a few. We try to keep a good selection of vegetarian and gluten-free items on the menu. Of course, we always have six to eight salads, 12 or more desserts and several casseroles. I’ve developed

567 recipes since our inception in 1984, for which I’m proud. Have you thought about a cookbook? Many times! It would require actual cooking instructions. I’m better at showing, not so good at writing technical info. It’s not so long ago that the recipes (or rather ingredient lists) were written on scraps of legal paper! I’d rather keep doing new dishes than to sit down and detail the old ones. I will do it eventually; there are too many great stories that go along with all of the recipes. Do you get tired of people asking you for your recipes? Never tired, always flattered. Where do you eat in Spokane? I love the community that Celeste Shaw has built at Chaps. Everything about Celeste and her restaurant makes me feel warm and fuzzy. Santé is also way at the top of my list. Jeremy Hansen, bringing his talent for charcuterie to our town is a bright spot. El Que for tacos and tequila, and I always enjoy Luna. I could go on, I’m leaving too many out! So, what is your husband’s favorite Lindaman’s dish? Depends on the day. For a hunting trip, it’s marinated leg of lamb, twice baked potatoes, romaine salad and cherry pie. For a fishing trip, assorted salads, cold sliced ancho pork tenderloin and Nanaimo bars. If he’s under the weather after all of his outings, he wants Greek Lemon Chicken Soup. On any other given day, it’s a chicken pot pie. He’s spoiled. You clearly have a 'coffee culture' in your store. How did that happen? We were one of only a couple of espresso machines in Spokane when we opened, if you can imagine that! It’s something we have always taken seriously. In Italy, coffee houses are called 'bars.' It’s where people start their days, and often end

them. It’s where there’s a 'meeting of the minds.' People talk politics, sports, connect and solve the problems of the world! We wanted to follow that tradition. It worked. Our coffee bar truly has an identity all its own—the 'culture of coffee.' What is caffe corretto? It’s one of the best kept secrets at Lindaman’s. Not because we want it to be; it just tends to intimidate people. When we began serving DOMA coffee, which is a whole wonderful conversation in itself, one of the owners, Rebecca, told me that in Italy, one won’t find flavored syrups to go into coffee drinks; they use liqueur. The idea was too good. So, along with my baristas, we would meet on Sunday afternoons and create these amazing little drinks. It was so much fun, we actually wrote fictional stories to coincide with the drinks. Thus, our caffe corretto was born. Top notch espresso, with a dash of this and/or that liqueur, spice or chocolate and sometimes a smidge of cream. Coffee done 'correctly.' When did you add liquor into the Lindaman’s venue? We’ve served beer and wine from our inception. The liqueurs were added for caffe corretto. Spirits followed … for fresh-squeezed, herb-muddled (artisan) cocktails. They were too irresistible to leave off the menu. What’s going on in that green area in your parking lot? Very cool! The Native Plant Society of Washington is transforming that area. They began planting last fall and will plant more in the spring. I can’t wait to see it take shape. I’m so glad they came to me. What’s next for local art on the wall? Tim Lord’s amazing work! What do you see in the future for Lindaman’s? It’s a long list, but I’ll name a couple of exciting
things. … Our goal is to have a better mode of communicating and building relationships with our base of customers, both old and new, through our new Web site, social networking, newsletters about upcoming events ie; 'Geek' Coffee Lovers Fourth Saturday with Lindaman’s and DOMA, our collaboration with STEP-UP Spokane (StepUpSpokane.com), fun with ethnic street food, music and art events, my annual spring heirloom vegetable plant giveaway, moving closer to a 'green' future, ... loads of stuff. Now, let’s go a little ‘James Lipton’. When you get to heaven: What restaurant is just around the corner? Lindaman’s! … I’ll be bellied up to the coffee bar nursing a caffe corretto. I will not be doing dishes. Who will be your guest? That’s easy. The round table of customers and employees, who have carried on the hundreds of intellectual debates in that spot, with special guests John Milton, Flannery O’Conner and Leonard Cohen. Garlic is in the Air!
w e St w i n G ow n e r r aC i e r d e M i S “ St i n k i n ’ ” u p S p o k a n e When I first met Raci Erdem, it was back in 1996, in a little white house just off I-90 in Post Falls. That was the year The White House Grill opened its doors to its small seven-table bistro, serving dishes with as much garlic as one can handle. I thought of it as my favorite little known gem. Owner Raci Erdem was then and is still entertaining guests with a little conversation, a lot of joking and a little rhythm with a hand drum. He soon had people traveling from all over North Idaho and Spokane to this little White House in Post Falls; or as he would say, “to see the foreigner in the White House.” And, the secret was out. Raci enjoyed a packed house with a waiting line on most days. It was a tasty unique flavor that came to North Idaho. The gyros, the hummus, the Turkish cigars—and yes, just a little over the top on garlic, but what the heck. If you feel a cold coming on, it can’t hurt to overdose on that healthful bulb. And so long as your date is with you to enjoy the garlic, too, who would notice? Regardless, there’s plenty on the menu that offers so many flavor sensations that there’s always something to please most any palate.

Just how did this recipe for success happen so fast? Not so fast. Raci is originally from Istanbul, Turkey. At the age of 20, he decided it was time to venture out into the world, and New York was his destination. When asked how he got to America, Raci says “I swam to America,” adding that he “jumped out of a boat in New York!” While in New York, he worked various jobs, one in particular he remembers, though not fondly, was moving heavy carpets for $50 a day, motivating him to find a new line of work. He met a girl, got married and moved to her hometown of Spokane. He worked as a server at Clinkerdagger’s and Salty’s, until he and his good friend and co-worker Dahmo decided to venture into the restaurant business together. The little white house became the White House Grill. There was no particular culinary school preparation, no recipes for what they wanted to serve. The two friends made up each recipe on the menu. They were inspired to create a place that felt like home, with people gathered round the table engaged in lively conversation, having fun, laughing, eating, drinking, the sound of music and all … the customers
literally ate it up! The place took off like wildfire and the value priced menu and festive atmosphere would bring happy diners back to this seven-table bistro regularly. People would bring their family visiting from out of town and plan to meet friends there, all to see the foreigner at the White House. Dahmo moved on and Raci kept the fun alive and his passion for the restaurant business. He says he loves every facet of the business. “You can not just look at it as ‘Come eat my food.’ It’s not just the cooking. People want to go where everything is fun!” Since that humble beginning, his original White House Grill moved down the street into a larger location with full Mediterranean décor and ambiance, and the little white house became his second restaurant—The Oval Office— with Raci’s affectionately referred to menu as “fufu food”. With menu items that include olives and feta appetizer, Thai-coconut seafood soup, Steak Sandwich made with rib eye, Cajun Chicken Fettucine and their own creations of cocktails with scandalous White House names: the Cosmopolitian, The Marilyn and the Dirty Monica. The Oval Office
popularity prompted thoughts about a Spokane location, and the West Wing idea was born. After all, it is further west. And now … Spokane is lucky enough to have the flavors of Raci’s kitchen spicing up the upper South Hill neighborhood on the Moran Prairie area with his third restaurant—The West Wing of the White House Grill. Located way atop the South Hill at the corner of East 44th and Regal, the shopping center there is chock full of restaurant variety, and the neighborhood is welcoming the West Wing with a flock of new fans. Raci attributes his success to the passion he has for working with people. “I love the restaurant business!” exclaims Raci. “But you can’t run the restaurant by yourself; you have to run the people. If you’re happy, and your people are happy, then the customers are happy. Success is in the people being happy.” He feels the best part of the job is the people. He has a knack for managing them and keeping his staff of 92 happy. Raci is happy to oblige. He is proud of his restaurants and knows it’s about great people and good food. So what’s the bottom line? According to Raci, “Who wouldn’t want to go into a fun place to eat?!” [SS]

Jason Smith has been at MAX for two and a half years, where he is proud to serve his guests food that is not only delicious, but includes a beautiful presentation for the guests’ eyes to feast on as well. Being able to interact well with people is important when it comes to being a server, says Jason. Whether waiting on a regular you know on a first-name basis, or a guest dining at the restaurant for the very first time, it is imperative that the server be able to offer a complete restaurant dining experience. There are many aspects of his job that he enjoys. “This place is forever

Joe was first inspired to be a winemaker while working toward his MBA, while doing a marketing project for a family winery. He fell for the

They believe that the terrior (soil and locale), the climate and the Columbia Valley’s angled slopes come together to create the most ideal growing conditions in the world. It just so happened that every time they were about to launch a marketing campaign, they were referred to another project that demanded all of their attention. Now they’re looking forward to another 10 years but with an essential new spin: “We’ll celebrate our milestone by striving to be a secret no more,” says Duke Mahl, owner and designer of TVS Wine Cellars Inc.
