R

estaurant industry veterans Jennifer and Michael are co-owners of The Fairhaven in Burlington. After working in restaurants their whole careers, they “finally had the opportunity to do our own thing.” Michael is a chef and designer/ builder. The couple actually bought the property for the restaurant two years ago and then Michael designed and built the building to fit their vision. The restaurant opened on March 19, 2020, right as the quarantine went into effect so original plans were set aside in favor of take-out and delivery orders. They believe that what sets them apart is the great team they are working with. Said Jennifer, 4

“Everyone really stepped up and decided to keep going after the take-out only order went into effect. It wasn’t an easy decision with all the unknowns but their commitment made it possible to stay open. In addition, the community support during the pandemic has meant everything to us; there is a lot of positivity. We’ve gotten amazing support from a lot of community members and local businesses. The Skagit Restaurants To Go Facebook page has also helped us immensely.” The team is eager to serve delicious and nourishing take-out food for lunch and dinner; and they are excited about the new menu that launched in September. Their menu consists of gourmet salads, sandwiches and sides as well as housebrewed Iced Tea and other beverages. Their specialties are Korean fried chicken sandwiches and house corned beef on their Corned Beef Reuben sandwiches. They are especially passionate about sandwiches and house-made, fresh, local ingredients. Said Jennifer, “We make all of our own bread in-house and we can’t wait to start working with Cairnspring Mills of Burlington. They are a local business that produces stone-milled flour from Skagit Valley grown wheat so our bread can be as local and fresh as possible.” Michael said, “It is super exciting to be a finalist for Skagit’s Best New Business. Everyone in the kitchen’s pretty excited. It’s a huge compliment and very encouraging.”

istrict Brewing is a new brewery located along the beautiful Riverwalk in an up and coming part of downtown Mount Vernon. Owner Mark Shintaffer was inspired to open District Brewing because he felt that there was an opportunity for a brewery in Mount Vernon. Said Mark, “My family has been in the wholesale beer business for 70 years so I can see the industry from a range of sides and lean on that experience. I wanted to do something on my own and I heard that Mount Vernon was open to new businesses. The location is also ideal to capture some people from Skagit County and other surrounding areas. I felt they would come if I built it.” The brewery opened in March, 2020 right as the stay at home order went into effect. With the commitment of his new employees and a receptive community, the brewery was able to serve their signature beer, pizza, pasta and salads for takeout orders. Now that in-person dining is allowed, customers are enjoying the newly renovated spot. In August, District Brewing was approved for a larger outdoor seating area that will remain open as long as the weather is nice. The pizzas are all named after movies in keeping with the theme of Mount Vernon’s renovated historic building – The Lyric Theater. District Brewing currently has 11 of its own beers on tap created by head brewer and Partner John Kochendorfer; ranging from a light beer to hazy IPAs. The brewery is committed to offering the best local craft, cider, and seltzer. For Mark, District Brewing was an opportunity to offer the best craft beer and provide a welcoming space for families to come and enjoy together. He hopes families will see the brewery as a “third space”; a place to hang out outside the home and work where people can gather and build a sense of community. The downstairs has a beer-hall environment with a walk-up order area and large picnic tables where people can meet their neighbor. Upstairs provides a more traditional dining space along with a bar serving a smaller selection of their beers and cider on tap. He said, “We hope families will spend a couple of hours and enjoy their day. We want it to be a fun place.” Said Mark about being a finalist for Skagit’s Best New Business, “It feels great. It reaffirms that we’re on the right path and that we must be doing more right than wrong. I’m excited that for whatever reason, people are happy we’re here and that we have community support.” 6

E

verybody has a story to share. That’s the story behind Katt’s Westside Stories on the west side of Mount Vernon.

Katt Boynton was the owner of Cravings Bakery & Café in La Conner, which was established in 2012 and relocated to Mount Vernon in 2016. Sadly, the café was closed at the end of 2018 due to two rounds of road construction. She opened Katt’s Westside Stories on the west side of Mount Vernon on June 7, 2019. Boynton said she started with just cold menu items but soon expanded into the full menu she currently offers. Representing Barker Street’s only bar, Katt’s idea was to create a place similar to Cravings, where people from all walks of life could meet, share stories, share an experience or a beverage, and perhaps discover common ground. She wanted to create a feeling of family and home in an adult-only setting. “This is my hometown,” Boynton said. “I wanted to create a bar that is a feeling, an environment that was a conversation piece when you walk in.” Katt said she believes in supporting local and achieves that goal by sourcing local ingredients for her hand-crafted cocktails, gourmet burgers, pub fare, and Sunday brunch menu. The bar does a “flight night” once a month where they sell two sipper cocktails and an appetizer and they are currently open for curbside, no contact pickup, dine-in, and delivery. When asked about what the community has meant to her business, Katt said, “The community support during COVID-19 has meant staying above water. Without support during the 119 days of take-out time, we wouldn’t be in business. My passion is cooking comfort foods, it’s therapeutic in a sense and I am thankful to be able to serve my passion to our customers. We have also worked hard to cater to our customers with kids by changing our menu during this time. We’re all in this together and we’re rolling with the punches.” Katt feels honored about being a finalist for Skagit’s Best New Business: “I think it’s a massive honor to get the recognition for the west side. The west side of Mount Vernon has been ignored because it’s seen as the run-down side of town.” gos kagit. com
