Welcome to the summer edition of Gold Coast Panache Magazine. I simply can’t believe we are at the end of another year once again. It feels like only a moment ago I was welcoming you to the first edition for the year. Already the Christmas preparations have begun and the decorations have sprung up across the Gold Coast. As always we have an amazing magazine for you this season, packed full of everything you need to get you through this celebration season - gorgeous summer fashion for you and him, delicious recipes to try over Christmas, amazing giveaways and plenty of stories to while away the holiday hours. Our cover girl for this edition is the Ironwoman powerhouse Courtney Hancock. Courtney shares with us the story of her incredible Fiji destination wedding with now husband, ex professional cricketer Nicholas Buchanon. They both look gorgeous and it is clear to see that they both have a strong connection and love for one another. It’s a special story we hope you enjoy. We also have a special feature with Channel 7’s Sunrise star Natalie Barr who was on the Gold Coast recently to attend the Gold Coast Bulletin’s Women of the Year event. Natalie shares what she thought was special about the event and the positive influence she believes this kind of awards ceremony will have on young women looking to follow their dreams. In this edition we are highlighting a special person to the Gold Coast - Sir Bruce Small. Veteran Gold Coast journalist Rachel Syers has written an incredible book that follows the life and times of Sir Bruce Small, and it offers a fascinating insight into the history of the Gold Coast and how we changed from small coastal town to bustling city. MARK EVANS How long have you been CEO at the GC Suns? I started at the SUNS in 2017. What does a day in the life of an AFL CEO look like? No day is ever the same – it could involve high level meetings with the AFL or government, catching up with corporate partners, coterie or members, dealing with media enquiries, and wherever possible supporting our highly capable executives to achieve their growth targets. You have just finished up a great year of footy - what are the goals for the GC suns in 2024? Our club has worked hard to get into a position to contend for premierships. That makes 2024 incredibly exciting as we push towards finals in the AFL and AFLW programs. The appointment of Damien Hardwick as senior coach has already generated excitement and interest in the SUNS. Why do you think it’s important for the Gold Coast to have its own AFL club? The Gold Coast deserves to be recognised on the national sporting stage. We are the 6th largest city in Australia and will continue to grow. Having AFL and AFLW teams representing the Gold Coast and delivering success will create enormous community pride and encourage even more kids and families to get involved. What role does the club have in the community and vice versa? We try to support things that are important to our community. We like to inspire kids to be active and to learn, to help those in need, to promote the Gold Coast as a place to live, work and visit, and to provide ways for Gold Coast families to interact with the club. We hope to inspire the Gold Coast community to become a bigger part of the club’s extraordinary journey. What are the main differences for players playing at the Suns versus a Melbourne club? Melbourne has larger stadia and more tribal followers of the code. There are good and bad elements with that level of passion - but it is always special playing to a large crowd at the MCG.
What does the Gold Coast offer that Melbourne or other clubs don’t? We have a wonderful environment in which to train and live – brilliant weather (incredibly different to Melbourne!), sensational beaches cafes and restaurants - and all of the benefits that go with such an outdoors lifestyle. It is a wonderful balance to offset the stresses and anxieties that go with elite sport. Also, given that most of our players have moved to the Gold Coast to progress their careers, the players and staff become very close with each other – more like a big family. Where did your love of football come from? Did you play footy as a kid? I have loved footy since I was a member of Carlton at the age of four. I always dreamed of playing in the big league and tried out with a few clubs before playing eight years in the VFL. What do you love most about AFL? The game is skilful, athletic and exciting. The sport is brilliantly run and ambitious and optimistic about creating a place for everyone in the community to be involved. What is the hardest thing about AFL? 18 clubs are all trying to win the premiership cup. It takes a lot of work, over many years and by many people, just to put a club in the frame for success. Only one team can win in each season – the others have to quickly dust themselves off and work out ways to become the best. Where do you see the club in five years time? We want our men’s and women’s teams to have secured silverware for the club, to have Heritage Bank stadium full of passionate supporters and to have deepened our footprint into the Gold Coast community. What makes a great footy club? Good footy clubs need good people, deeply committed to each other and the club, with a never ending hunger to improve and who are aware of their role to inspire the community.

A Day to Remember
When professional Ironwoman Courtney Hancock and ex professional cricketer Nicholas Buchanan said their ‘I Do’s’ on the picturesque Malolo Island in Fiji, it was a dream come true and a day they, and their guests, will always remember.
Picture this - clear turquoise waters, white sandy beaches, the breeze lightly blowing, rustling through coconut leaves, the sound of waves whispering along the shore and the warm sun kissing your skin - could there be a more perfect place to marry the love of your life? This is the exact scene that Courtney and Nicholas, along with their 100 guests, enjoyed at Malolo Island Resort Fiji, on their wedding day. But the day didn’t quite start out this way. “We woke up to rain on the morning of the wedding - no sun whatsoever! The whole island was dark and cloudy and the rumour around the island was that the mainland (Nadi) was experiencing something like a cyclone and it was heading our way! “The local Fijian Malolo staff were well prepared and started listing a few wet weather options, but our close friend Zac, who is the resort manager, told me that he had prayed all year for sun on our special day, and he promised that the sun would come out. It wasn’t looking promising, but sure enough at 1pm the sun did come out, and it was the most stunning sunshine at Malolo Island I had ever seen,” Courtney said. Though, the story of Courtney and Nicholas started long before. The two first met during the Noosa Triathlon in 2015, both with a love of sport, the beach and ocean and with similar goals and values, it wasn’t long before the two became a couple. After being together for a number of years Nicholas thought it was time to make it official, and decided to pop the question back where it had all begun - Noosa. “Nicholas proposed at Noosa beach rocks near where we first met. I thought I was working for a few days up there, but little did I know Nicholas and a good friend of mine had planned the whole thing. It was incredibly romantic and absolutely perfect” said Courtney. 16 GOLD COAST • PANACHE Magazine

The next task on the list was to find the perfect location for their wedding and for Courtney to find the perfect dress! “Both of my incredible dresses were created with a good friend of mine - Sonia Stradiotto at Sonia Stradiotto Couture, Marina Mirage,” said Courtney. Given Courtney and Nicholas’s love of the sea and the sand, a Fiji destination wedding was the perfect choice and the couple had fallen in love with Malolo Island Resort. “We booked out the whole Island at Malolo Island Resort for five nights - 48 rooms for 100 guests and a whole island all to ourselves! It felt like a total dream to have all the closest people in our lives all on the same island - there just for us. It was the best five days of my life. A favourite moment was welcoming everyone in and farewelling everyone out on the dock, we sang and danced with our Fijian family while everyone arrived. No one quite does a welcome like the Malolo family,” said Courtney. Despite the threat of inclement weather on the wedding day, everything turned out just as planned and Nicholas and Courtney became husband and wife. “It was a magical day, but I think the standout moment for me was walking down the aisle with my dad and seeing Nicholas for the first time. He had a few tears, but he just looked so happy to be marrying me, seeing his face just melted my heart and I simply couldn’t wait to hug him at the end. “Another favourite was our reception, we had the best time! Everyone was dancing, people were jumping in the pool and we went right through until our last pina colada at 4am. We were all just having so much fun,” said Courtney. But the fairytale didn’t end there. Courtney and Nick decided to begin their honeymoon in their favourite place Malolo Island Resort where they stayed for two weeks. From Malolo they headed out further into the Fiji Islands, taking a boat, a sea plane and then another boat to the beautiful Royal Davui Fiji located in the Beqa lagoon. The luxury resort is very private with only 12 bures on the adults only island, but Courtney says that is exactly where they needed to be to relax and unwind and begin life as a married couple. Courtney’s best advice for other couple’s planning or starting to plan their dream weddings is simple. “Have fun! Life is here to be lived, and I think we all get caught up in being too serious. If you are in a relationship and have met your life bestie, go out and be adventurous together, challenge yourselves, make memories you look back and smile at, try new things together, give each other time and yourself time, laugh constantly, support each other and say I love you every single day. You never know, your bestie may need to hear it when you least expect it, and always remember why you fell in love with them in the first place,” said Courtney.

Senior - Catholic Cathedral College (Christchurch, NZ). Favourite subject and why? I did enjoy learning Japanese early on in secondary school and Mathematics in the earlier years but English and Science in the senior years. Favourite teacher and why? Primary school Miss Reed - she made learning fun and books exciting. Best memory at school? Great memories with friends and creating life long friendships as well as the moment I finished final exams and then receiving university entry after what felt like a long time of studying. Academic or sporting achievement? Completing a Bachelor of Commerce majoring in Business and Accounting by age 20 and being successful throughout school in running and athletics. What did you want to be when you grew up? I had a few different ideas growing up, it was very hard for me to choose what I wanted to be. Early on I wanted to be a police officer, then a lawyer or a business owner. Is your life now what you expected it to be? If so how? To be honest I am not sure I really had expectations where or what I would do in life, I always knew that if I wanted something I had to work hard to achieve it. I really wanted to be successful in whatever I did and be the best version of myself. Chelsea Sergi Graphic Designer and Business Owner – By Juliet Creative Where did you go to school for primary and senior? I started my schooling at Holy Family Primary School (Bathurst), finishing my primary education at Bathurst Public School. I attended Mackillop Catholic College (Bathurst), from years seven to nine, I then moved to the Gold Coast and finished my schooling at Coombabah State High School. Favourite subject and why? My favourite subject was Dance. I loved dancing and the fact I could study this was amazing. Favourite teacher and why? Mrs Morrissey – She was compassionate and believed in me. She was an excellent teacher and I still value her input and faith in me. Best memory at school? I was in the school cheerleading and dance teams; I loved competing and training. This was definitely a highlight for me. Academic or sporting achievement? I was quite sporty and won Swimming Age Champion every year from primary and throughout high school. I was selected for multiple school sporting teams and won multiple competitions (cheerleading, dance, soccer, netball). I achieved the top grade in my class in Grade 12 for the subjects Business and Communications, Dance and Film and Television. What did you want to be when you grew up? I wanted to design fashion magazines and work somewhere like Gold Coast Panache Magazine and SLIM - which is what I am doing now. Is your life now what you expected it to be? If so how? In some respects, yes and others no. Growing up I never imagined I’d live on the Gold Coast or be working for myself. In saying that, I’ve been truly blessed, and I wouldn’t change it for the world - I’ve travelled, I love what I do for work, and I have an amazing husband and family; so far life has been amazing, and I’m excited to see what the future holds for me.
Stephanie Manning-Soiza Marketing and Communications Manager, QT Gold Coast Where did you go to school for primary and senior? William Duncan Primary School in Highland Park. For high school, I went to Palm Beach Currumbin State High. Favourite subject and why? My favourite subject was sports. Palm Beach Currumbin had an exceptional sports excellence program, I took up field hockey as part of my curriculum and as I progressed through to the higher grades, I also enjoyed Physical Education as a subject. Favourite teacher and why? My favourite teacher has to be Mr. Patterson from my primary school. He had an ability to engage with children and always had a happy disposition. For one particular lesson, we watched the music video of Yellow Submarine by The Beatles. It was such a fun class. Best memory at school? Palm Beach Currumbin is positioned along Currumbin Estuary. I have a fond memory of a P.E. class where we went canoeing. As we paddled upstream, we had an encounter with a pod of dolphins that swam around our canoes. Academic or sporting achievement? I participated in the regional South Coast field hockey team during high school. What did you want to be when you grew up? From a teacher to photographer and magazine editor, I had many ideas and dreams. Is your life now what you expected it to be? If so how? When I reflect on the early days of my career, I was undeniably focused on my professional life. However, as time passed what I wanted out of life has shifted. I’ve been blessed with a beautiful family, including two daughters, and love the coastal lifestyle we get to enjoy on the Gold Coast. The balance of family and lifestyle has made my life everything I could have hoped for.

Emily Jade O’Keeffe 102.9 Hot Tomato Breakfast Announcer Where did you go to school for primary and senior? For primary and some of high school I attended Cowra Primary and Cowra High School. In Year 10 I moved to Tasmania and went to Don College. Favourite subject and why? Drama Drama Drama!! Favourite teacher and why? I had many but my most favourite teacher of all time was Mrs Mutton my Year 3 teacher. She was kind, fashionable, fun and most of all very patient with me, tutoring me in math after school. This developed into a friendship with my parents and so she became apart of my life both at school and after school. She and her husband didn’t have children and so my brothers and I would spend holidays hanging with her helping her around her very big garden or making things with her carpenter husband as he renovated their house. I was a real talker and probably exhausted people, but she always loved having me around talking. I’ll never forget how valued she made me feel. Best memory at school? I really loved school. Not for the learning but for the extra curricular activities like the Students Representative Council and the school newspaper and radio station. My favourite memories were serving others in that way, throwing socials at Don College in Year 11 and 12 through the SRC to raise funds for the school, doing the school radio station Don FM in lunch time and editing the school pages and taking photos for the two page spread in our local paper The Cowra Guardian in Cowra - and all those things ended up becoming my career. Academic or sporting achievement? I won a funny award in Year 4 called the ‘Chatter Champ Award’ after talking everyone’s ear off at the school camp, Camp Wambangalang. I was the last one talking at night in the dorms and the first one up chattering away in the morning. Much like what I do now for a living. What did you want to be when you grew up? Exactly what I am now, a radio announcer. Is your life now what you expected it to be? If so how? Yes, it’s even better to be honest. I have the job I always wanted in the city I always wanted to live in. I’m living in a home that’s better than I could have dreamed of and its filled with two kids I adore and love to spend time with. I am very very blessed and when I was leaving Year 12 I wrote down a list of dreams I wanted to achieve and slowly over the years I’ve ticked the big things off. So I’m a big believer in writing your goals down and reflecting on them often to keep on track and being grateful when they come to fruition. Life is Good!

Primary Musgrave Hill State School and St Hilda’s from Year 7-12. Favourite subject and why? Drama because it was so much fun and a break from the normal boring school subjects. I loved learning everything about acting and presenting and loved performing in the school plays. Favourite teacher and why? Miss Craswell – she was my Drama teacher in the early years of high school and her classes were so informative and fun. Best memory at school? I have so many favourite memories from school. We had the best Year 12 cohort and all had so much fun in the final two years. My most favourite was when as House Captain of Karragaroo House, I dressed up as a clown in house colours for the Athletics Carnival and was surrounded by a cheer squad of other Year 12 students in house colours. Our Year 12 final camp was also so much fun. Academic or sporting achievement? Sadly no … I left those awards to the ones with the real talent!! What did you want to be when you grew up? Originally a drama and accounting teacher, but after six weeks at teacher’s college, I decided that wasn’t for me and I wanted to work at Movie World as a show presenter. Is your life now what you expected it to be? If so how? No, I was supposed to be ridiculously rich by now! Seriously, I’m very happy and grateful for where I’m at. My business iKapture Marketing & PR is going well and I have a fabulous family unit. Can’t ask for much more than that!

Michelle Henry with Kelly Slater I met Kelly Slater on St Patrick’s Day 2015 at the Palm Beach 7/11 whilst getting my coffee on my way to work. As I was pulling into park there was a van next to me and as I turned to look I couldn’t believe it was Kelly sitting in the passenger seat with a bunch of his mates. I have had a crush on Kelly since I was 14. I didn’t know whether or not to go over so I went inside to get my coffee and was waiting in line to pay when I just thought “stuff it” now or never is your chance to meet your idol. I walked over to him and he was on the phone with the window up when he noticed me standing there. He hung up the phone and rolled down the window. I said “I am sorry you probably get this a lot but could I get a selfie with you as I have loved you forever.....(OMG did I really just say that). He giggled and was so polite and said yeah sure! I was so nervous and excited that I was shaking trying to take the selfie. We both laughed and I thanked him. He is more gorgeous in real life and incredibly kind. My day was made.

Best fashion finds are a lot of the vintage designer goodies I scored years ago…they still look good 20 years later and I always receive compliments on them because they’re impossible to find now. Milan Fashion Week September 2023
Milan fashion week began in 1958 and is part of the big four fashion weeks which includes New York, London and Paris.These shows take place bi-annually in February and September. Milan fashion week hosts more than 40 shows each season, transforming the city into a tourist hub by simply creating various venues for shows selecting the most elegant and influential Palaces to become the stage for design. Milan is my favourite fashion week. In between shows I head for the three iconic streets for leading designers Via Montenapoleone, Via della Spiga and Via Manzoni. Apart from showcasing the world’s major designers, the street fashion is next level. Hands down my favourite designer is Elisabetta Franchi. I always come away with something special to add to my wardrobe. Celebrity watching is a must. I bumped into Anna Wintour at the Four Seasons Hotel. A must do is a visit to the Bulgari Hotel for their famous espresso martini and to mingle with wall to wall celebrities. A personal highlight was a VIP invite to the Palazzo Barozzi to see our Gold Coast girl Maddie BraunMarziac model for Australian label Belle Le Chic. Maddie did us proud and has a huge career in front of her. Highlights for the week: GIORGIO ARMANI Vibes Collection Shades of silver, taupe and grey transitioning into shades of green, blue, pink and purple. Outfits ranged from flowing skirts, shorts, bra tops and sheer blouses. As well as strapless dresses worn over trousers.

FENDI Shapely close fitting monochrome dresses, soft greys and apricot with white neutral tones, bold cuts and statement accessories. Coral/taupe was an outstanding colour combo. ROBERTO CAVALLI The tropical themed collection was all things bold, experimental and vivacious. DIOR Demonstrated an appreciation for black lace and sheer fabrics. BOTTEGA VENETA, LOEWE AND MAX MARA All brought sunshine to the runway with all shades of yellow. VALENTINO AND GIVENCHY Showcased blossoming floral designs. A tip for visitors attending the fashion week shows is to visit the Duomo di Milano Cathedral and Galleria Vittorio Emanuele which is an elegant 19th century shopping arcade. Here you will witness models being photographed each day during fashion week. Enjoy an espresso and people watch to your hearts content. By Liz Clift.

All That Glitters is Gold at 5th Avenue Jewellers When you think of jewellery, often diamonds, emeralds or rubies come to mind, but most great pieces of jewellery start with one precious metal that has always captured hearts and minds - gold. Nicole and Darren Daley both have more than 30 years experience in the jewellery industry and their knowledge of gold and gems would be hard to surpass on the Gold Coast. We were very excited to sit down with Nicole and Darren recently to discuss all things gold! What are the different types of gold? In Australia we generally have three purities of gold, commonly called 9, 14 and 18ct, and some use of 22ct as well. These are generally yellow, white and rose gold, although some other colours, like green (cadmium causes the green colour, but it is quite harmful to the jeweller, so is rarely used. It is seen fairly commonly in antique jewellery, on things such as lockets and pocket watches) and black are possible, but rarely used. How are each of the types created? Gold used in jewellery is an alloy of fine gold, which is 999.9 parts/1,000. There are different metals alloyed with the fine gold to create the colours, yellow gold is an even blend between the gold itself, and red (such as copper) and white (such as silver) metals. To create a “white” gold, the copper content is decreased, and the white metal increased. In most white golds palladium is the metal of choice. To create rose gold we lower the white metal content and increase the copper. The purity stamp, such as 750, denotes the minimum gold content out of 1,000 parts. It needs to be noted that under Australian standards, that gold under 375/9ct is not considered to be gold, and nor is platinum under 900 considered to be platinum. Why is white gold used instead of silver? In antique jewellery silver was used as it was the only white coloured metal available that could be worked. Platinum came into vogue a little later, once the ability to work it was achieved. Platinum and silver are very fine
conductors of electricity, as well as having many other coveted properties, which became important for military use around the time of WW1. An alternative to these metals became necessary, and white gold was created to fill this need. White gold, and platinum, are much more durable metals than silver, and are an excellent choice to make sure gemstones are securely set. White gold is finished with what is called a rhodium plating, without going into a lot of detail, this provides a uniform surface colour and mirror like finish. Rhodium itself is very expensive. Being able to correctly polish a piece of jewellery is a skill and does take time, so a person should be prepared to pay some form of fee. How do you best care for each type of gold - yellow, white, rose? Care of any metal is similar, regardless of colour. Jewellery really is not designed for a person to wear all the time, and never be taken off. Heavy activities, such as wearing at the gym, and even lifting heavy shopping bags can deform or bend a piece of jewellery. Gold can be scratched, as it is soft, and even a heavy knock can be damaging. To ensure the integrity of your jewellery it is best to bring the piece into a jeweller to have it inspected and secured. A piece of jewellery, especially a ring, should also be taken into a jeweller about every 6-12 months for inspection, and if necessary professionally polished. Do different styles of jewellery lend themselves better to each colour of gold? For example are rings better to be yellow gold and necklaces rose gold? Different styles of jewellery and what colour is chosen mainly comes down to personal choice. Sometimes using a particular colour of metal can come down to the gemstone being used. High quality diamonds, as an example, look much nicer when set in white metals, whilst lower grade, more yellowish diamonds face up

better in yellow gold. Gems, such as morganite, look better in rose or white gold, but the client really is the final arbiter. What type of gold is most popular at 5th Avenue Jewellers? White gold has been the most popular metal for quite a few years, although yellow gold never really goes out of fashion. We do not have large calls for rose gold, but of course are more than happy to make a piece in it. What have been some of your favourite gold pieces that you have created? Gold only pieces are not as commonly made as items set with gemstones, but they are an enjoyable thing to do. Darren made me a unicorn pendant almost exclusively from gold, which is my all time favourite. Although recently we have made a couple of “animals”, a monkey, a koala and a dove, which were a lot of fun to make. Can you tell us a little about the process of working with gold to shape it into your designs? There are many ways of working with gold, but in its simplest form, most pieces are begun with what is called stock gauge, which is a long square shaped bar of gold. This is then put through rolling mills, until certain widths are obtained, all the while keeping the metal workable by heating/annealing. Once the desired width is obtained the metal is shaped with various tools, such as a ring bender or pliers. The various components are then joined together using solders. Files and various grades of emery paper are then used to finalise the end shape of the piece. Stones are set and the piece given a final polish. We can also begin by carving wax and going through various processes before casting in gold. The finishing process is the same.

60g pitted kalamata olives, finely chopped 1 cup (200g) chopped tomatoes, seeds removed from large ones ¼ red onion, finely diced 2 Lebanese (short) cucumbers, seeds removed, finely diced ¼ cup (60ml) extra virgin olive oil 1 tablespoon white vinegar 1 teaspoon sea salt flakes 1 teaspoon dried oregano

1 Preheat the oven to 230°C fan-forced. 2 Wash and scrub the potatoes and pat dry. Wrap each spud in foil and place them on a baking tray. Bake for 1 hour 10 minutes.

3 Meanwhile, using hand-held electric beaters, beat the goat’s curd and sour cream on medium speed until smooth and fluffy, around 2 minutes. Add the chives, dill, lemon zest and garlic powder and beat on high for 2 minutes. This dressing can be made ahead and stored in the fridge for 2 days in an airtight container. 4 To make the salsa, combine the olives, tomato, red onion and cucumber in a small bowl and dress with the olive oil and white vinegar. Season with salt and dried oregano. 5 Once the potatoes are cooked and soft to the squeeze from a pair of tongs, remove the foil and place them on a serving platter. 6 Slice the potatoes lengthways, but not all the way through. Give them a gentle squeeze to push the flesh upwards towards the opening. 7 Top each potato with a big swipe of butter and then a dollop of curd dressing and splash the salsa all about. Drizzle with extra virgin olive oil and serve as is.

This dish has a fabulous effort–to–payoff ratio. It’s lightning quick and tastes absolutely delicious. There are plenty of great quality commercial curry pastes available, so find one you like.
INGREDIENTS • • • • • • • •
2 salmon fillets, about 250g each, skin on, scales and pin bones removed 1 tablespoon vegetable oil or coconut oil 400ml coconut cream 2–3 tablespoons red curry paste 1 tablespoon sugar 1 teaspoon fish sauce 5 makrut lime leaves, julienned 1 large red chilli, julienned
1 Cut the salmon fillets in half lengthways. Heat a large frying pan over a medium heat and add the oil. Fry the salmon, skin-side down, for about 2-3 minutes until the skin is crisp. Turn the salmon onto the remaining sides, allowing about 30 seconds to 1 minute per side until the fish is just cooked (see Tip, below). Transfer to a warm serving plate. 2 Meanwhile, heat a wok over a high heat, then add about 100ml of the coconut cream and cook for just a minute. Add the red curry paste and cook for about 5 minutes until dry, oily and fragrant. Add 1 cup (250ml) of the remaining coconut cream, the sugar and fish sauce and bring to a simmer. Stir through half the lime leaves and simmer for 1–2 minutes until thick. 3 Spoon the curry sauce over the fish, then spoon over the remaining coconut cream and scatter with the remaining lime leaves and chilli to serve.
TIP I test the fish for doneness by pinching the sides of the fillet with my fingers. As it cooks it will start to feel ‘springy’, and with practice you’ll learn when the fish is just to your liking.

1 To make a core that will always stay molten, in a saucepan and using a silicone spatula, stir the oat milk and cornflour together while bringing to a simmer until thickened. MAKES 8 INDIVIDUAL CAKES
The trick to molten centre/lava cakes is a quick hot bake that cooks the outside and leaves the centre woefully warm and runny. Some professionals have evolved this by making a separate ganache which can be frozen then inserted into the batter, which keeps a distinctly separate texture. Serve with whipped cream or vanilla ice cream.
CHOCOLATE GANACHE INSERT • • •
Oat milk 150g Cornflour (cornstarch) 5g Dark chocolate with at least 66 percent cocoa solids, callets (chips) or chopped 100g
RICH CHOCOLATE CAKE • • • • • •
Coconut oil (deodorised), for greasing mould 15g Cocoa (unsweetened chocolate) powder, plus extra for dusting 40g Oat or soy milk 350g Dark chocolate with at least 66 percent cocoa solids, callets (chips) or chopped 180g Caster (superfine) sugar 130g Plain (all-purpose) flour 200g Baking powder 4g
TIP You can bake and demould these desserts ahead of time. Store them in the refrigerator, then microwave on a plate for 30–40 seconds to reheat.
2 Pour over the chocolate in a medium heatproof bowl or measuring cup and use an immersion stick blender or silicone spatula and mix until they are completely combined. Pour into a silicone dome mould, 45mm in diameter and freeze for 4 hours, or until solid. 3 Preheat the oven to 200°C. Grease eight small chilled pudding moulds or eight holes in a large muffin tray with coconut oil and dust with cocoa powder, inverting and tapping the moulds to remove any excess cocoa. 4 Put the chocolate and sugar together in a heatproof bowl. Bring the milk to a simmer in a large saucepan, then pour over the chocolate and sugar. Whisk them together until the chocolate is melted and it is a smooth consistency. 5 Add the flour, cocoa powder and baking powder to a medium bowl and whisk gently just to combine. Add these to the chocolate sauce and mix to combine all the ingredients. 6 Use a piping (pastry) bag with a small 1cm trimmed opening or a spoon to fill the moulds halfway, then add a piece of frozen ganache to the centre. Press gently so the batter comes up to the sides, then add more batter to cover the frozen ganache insert. 7 Bake in the oven for 7 minutes, then remove and leave to cool for 2 minutes before turning out onto plates. Serve warm. These keep well once baked and can be stored in an airtight container in the refrigerator for up to 5 days. Reheat when ready to serve if preparing ahead for a dinner party. Preheat the oven to 170°C fan, then place them on a baking sheet and bake for 5–7 minutes.

101: Get To Know Your Builder
Before you embark on your renovation or building project make sure you get to know your builder. You can start by asking these essential questions before signing on the dotted line. Building your new home or starting a long awaited renovation project should be an exciting time, but sometimes people find the experience frustrating and costly, especially if they haven’t selected the right builder for their particular project. There are a number of things you should do before starting your project and engaging the right builder is the most important. Trusted Gold Coast builder of bespoke coastal and Hamptons style homes, Wycon Homes, suggests asking these essential questions when selecting a builder for your project. What is your building contractor licence number? If the builder is a company, they need a company builders licence and the company needs a supervising builders licence. This might not be the director of the company but an employee or partner. Ask for the licence. What insurances do you have in place? Make sure the builder has public liability of at least $10,000,000. Construction insurance can be a job by job cover or an annual policy. Construction insurance covers the cost of the building up until handover to the owners. This is when you will need to take over insurance coverage so you are covered in case there is a fire, theft, vandalism, etc. How much deposit do I need? Maximum deposit allowable by law is 5 percent and this will be in any home building contract. This question will check the integrity and knowledge of your builder. Are you compliant with all occupational, health and safety requirements, what systems do you have in place to be compliant with OHS? You’re probably wondering what this has got to do with me… but if the construction site is closed down by a work cover inspector, you may be waiting a few more months for your home to be completed, which may lead to compounding issues. A conscientious builder will have a full system in place. May I get a list of references from previous homes you have completed? Take the time to read through references and check them. Look for a builder who has established good relationships and an underlying trust with their clients. Taking the time to select the right builder for your project is well worth the upfront time investment. Sir Bruce Small: From Malvern Star to Mr Gold Coast All agreed Sir Bruce was no wallflower in the fashion stakes. While he always wore a smart suit when required, his flamboyant and casual style of dressing drew attention in his Gold Coast years and it’s one of the things he’s fondly remembered for. In September 1977 it became a hot topic when Sir Bruce just scraped in on the Worst Dressed Men In Australia list. With good grace and a helping of humour, Sir Bruce copped his inclusion square on the chin without getting hot under the collar. The satirical condemnation stemmed from a poll of Australian fashion writers and designers for the Sydney Bulletin. Sydney advertising executive and politician John Singleton was ranked number one. The list didn’t seem to do anyone any real harm, considering John Singleton went on to become one of Australia’s most successful entrepreneurs, receive a Member of the Order of Australia in 1994 for his charity fundraising efforts and was on the 2022 Financial Review Rich List with an estimated fortune of $768 million. Second was former Immigration Minister Al Grassby, followed by trade unionist Sir John ‘Jack’ Egerton (Gold Coast alderman in 1979, endorsed by Sir Bruce), self-proclaimed ‘royal’ Prince Leonard of Hutt, TV chef Bernard King, then- Prime Minister Malcolm Fraser, journalist Mike Willesee, radio DJ Bob Rogers, journalist John Laws and finally Sir Bruce Small. Judges included bikini designer Paula Stafford, who said of Sir Bruce: “When he’s on the Gold Coast he’s suitably dressed for most occasions, and it is very nice to see a leader in casual dress. But he got my worst dressed vote for his knick-knack ties. It’s not the string ties I object to, but the critters he has attached to them. Usually it’s a little koala made in Korea – that’s carrying things a bit far I think.” Paula confessed the list was subjective, since she voted for the PM on the ‘best dressed’ list ‘because of his conservative suits’, yet he finished sixth worst dressed. She added: “It’s a scream isn’t it?”

In response, the Gold Coast Bulletin ran a story, Sir Bruce Not So Spruce, on September 24, 1977. The article outlined how Sir Bruce was given the least offensive number 10 ranking ‘on the strength of his string ties alone’: Sir Bruce Small ... laughed, looked down at the toy koala clutching the front of his pink-black-and-green dragon like patterned cream shirt and said, “What constitutes good and bad dress is very much a matter of individual taste.” He laid out his logic that if his fashion was to be judged ‘on the tastes of Bond Street’, he agreed he would not be well dressed at all. But when it came to Gold Coast standards, he put himself in the top three for best dressed. Sir Bruce called the list good fun and said he was ‘flattered’. While always dressing appropriately for formal and solemn occasions, for the most part Bruce shunned the polished black business shoes and traditional dark tailored suit most other mayors wore.The Gold Coast was Bruce’s territory and he dressed as he saw fit for representing such a vibrant tourism destination – colourful, casual and with a pinch of pizazz. A newspaper editorial offered a similar sentiment, saying despite his style failing to impress the judges, it matched his ‘own brand of promotional charisma’: ... when it comes to tourism promotion he wears pretty well. Not everyone agrees Sir Bruce is a picture of sartorial splendour. But the Mayor’s clothes ... capture the eye and the attention. And in the business of selling a tourist city it is often a case of first in, best dressed.

Interview with the Author Rachel Syers Why did you choose to write about Sir Bruce Small?
What lessons has the life of Sir Bruce Small taught you?
Sir Bruce’s granddaughter from Melbourne, Dr Anne Small, actually met with me at his Isle Of Capri home and commissioned this biography. I knew very little about him back then - only that he was an iconic figure and a famous name to everybody over the age of 50. Now I realise writing this book is the greatest honour I think I have ever been given.
It’s actually given me more confidence, seeing how he forged ahead on every path he chose without fear or hesitation. Sir Bruce’s passion for this place and its people made him famous as ‘Mr Gold Coast’, and as a Gold Coaster myself, writing this has also sparked a deeper respect for this city.
Tell us about the process of putting this book together - what kind of challenges did you face and how did you overcome them? The process was so involved that I could only describe it as mammoth, like a giant jigsaw puzzle, but instead of 1000 pieces it is over 100,000 thousand words, facts and figures, all swirling around in individual news articles, journals, diaries, documents and the memories of the 100 people and organisations I interviewed. Luckily I knew several of the people through my 14 years with the Gold Coast Bulletin, such as Paula Stafford, Lex Bell and Karen Neilsen. To do Sir Bruce justice with a quality publication, extra time was spent on the design and production. The main challenge was time - there was never enough of it!
What was one of the most surprising things you found out about Sir Bruce Small and the Gold Coast when writing this book? One of my favourite fun facts is that Sir Bruce was the very first person in Australia to play a round of Putt-Putt when he officially opened the first Putt-Putt course in Surfers Paradise in 1969. A more meaningful discovery was that he donated every cent of his entire mayoral and parliamentarian wages to charity for 12 years straight and never took a dollar, even though he would work up to 80 hours a week - he did the whole lot virtually as a volunteer - all for the city and its citizens. No wonder people adored him so much.
What has been the reaction of Sir Bruce Small’s family to this book? I can’t even put into words what this book means to the extended Small family, but particularly Dr Anne Small, whose love and dedication to honouring her grandfather’s amazing legacy has been unwavering. It’s so wonderful for his family to see his life journey finally in place on the shelves of the National Library of Australia and shared with the whole country. How long did it take you to write and research for the book? An exact calculation is impossible because this began as one day a week for me, alongside my busy freelance journalism career, until several years of research, interviews and writing had passed and we realised it needed my absolute full focus to complete it. The first interview I held was back in 2014 and I ended up having around 100 interviews and I read every single one of the 3000 or so articles Sir Bruce diligently kept in his own extensive news clipping files. Why do you think Gold Coast history is important to tell? I believe we all feel there is a gap in the telling of our city’s history and this will help fill in some of the blanks of the 1960s and 1970s of how things really unfolded, from the cyclonic destruction of the beaches and saving the city’s tourism industry to the entire Gold Coast City Council getting sacked because Sir Bruce called for an investigation. These incredible moments have been all but forgotten but are so important to record. What do you think Gold Coasters will think of this book? Well your grandparents would love it for Christmas ha ha! Honestly, anyone over 50 will find this a magical journey to remember back to the time they rode their Malvern Stars as kids and played putt-putt, while seniors will recall the vibrancy and promise of the Gold Coast in the 1960s and 1970s. It will be a fabulous read for anyone with a Gold Coast connection. SUMMER • 2023/24 83

We started with the perfectly cooked Chilli Garlic Butter Prawns, the chilli and garlic sauce along with the refreshing salsa pairing perfectly with the sweet flesh of the prawns. The Fish Croquette Balls and Lamb Coconut Roti were next and both offered a perfect balance of heat and cool that provides a ‘zing’, but doesn’t make your eyes water and have you reaching for the nearest glass of milk. Grandma’s Chicken Curry, Vegetable Curry and Pan Seared Barramundi were the perfect mains to complement the starters. There is a distinct sense of nostalgia when served Grandma’s Chicken Curry and it is as comforting and satisfying as you imagine it would be. The mix of flavours in the vegetable curry sauce elevated ordinary garden vegetables into a beautiful dish that nourishes your body and your soul. The Pan Seared Barramundi with Yellow Coconut Curry sauce was a taste sensation, and it is clear why this dish is one of the most popular on the menu. Spice 107 also has an impressive selection of cocktails, beer and wine to perfectly complement or elevate your dining experience, and the staff are more than happy to share their favourites with you or make suggestions as to which selections will best complement your chosen dishes. Safeguarding Your Legacy: The Crucial Need for a Will to Protect Your Assets and Children In the hustle and bustle of our daily lives, contemplating the inevitability of our own mortality may seem like an uncomfortable task. Sunrise Star Celebrates our Gold Coast Women of the Year Natalie Barr, star of Channel 7’s breakfast show - Sunrise was on the Gold Coast recently as part of the Gold Coast Bulletin Women of the Year Awards, and was full of praise for the event that shines a light on the amazing work being done by women across the Gold Coast. It was the first time Natalie Barr had been involved with the Gold Coast Bulletin Women of the Year Awards and she was so excited to be part of an event that celebrates and supports the women of the Gold Coast. Sunrise featured a number of the Gold Coast Bulletin Women of the Year nominees on the show prior to the event, including young Gold Coast film-maker Aurora, who at just 12 years of age was the youngest nominee. Natalie and co-host Matt Shirvington interviewed Aurora and her mother Cat, on a segment that turned out to be one of the most popular among viewers. “These awards have really shown the rest of Australia how women are painting the town red on the Gold Coast. I was blown away and so was the rest of the country. “I think the Gold Coast should take a bow and be really proud of the culture it has created that allows women to know that they can achieve and just run for their dreams. I found it really humbling and also really inspiring, and so did so many of our Sunrise viewers who saw the stories and who wrote in,” said Natalie. On the night, Natalie enjoyed meeting many more of the nominees and all the people who had worked so hard to bring the event together - she was blown away by the
supportive feeling in the room created by so many people championing women on the Gold Coast. “You know you go to so many of these big types of events, awards nights and fundraisers, but this one felt very special. It felt like everyone in that room was supporting each other, and so it created such a beautiful energy and I really felt as someone from outside of the Gold Coast walking in there not knowing many people, that it was something special and you couldn’t help but be swept up in the positive energy,” said Natalie. Sharing hosting responsibilities with Gold Coast Hot Tomato radio host, Emily Jade O’Keeffe, Natalie was able to really enjoy the event and share in the stories of the women who were recognised. But what she felt was one of the most important things about the night and the initiative itself, was how it would inspire the next generation of Gold Coast women. “Anyone who reads about the night in the Gold Coast Bulletin, anyone who picks it up over the next few weeks, especially young women, will read about it and they will see a path forward. What was it like living on the Gold Coast then as opposed to now? It was certainly a quieter time. Many Gold Coasters will remember the Patch, the Jet Club and the iconic Coolangatta Pie Shop which served all the late-night crowds well into the early hours of the morning. That was my first weekend job, they made the Coast’s best pies and custard tarts. What school/s did you go to? I went to Tweed Primary School just down the street (I still remember the school song we sang at assembly), then onto Tweed River High School and after returning from Canada where I spent a year as a Rotary Exchange student, I completed grade 12 at Palm Beach Currumbin High School. Where do you live on the Gold Coast currently? What do you love about this area? My office has been located on Chevron Island for the past 20 years, and Surfers Paradise is home. While in the heart of everything, we have a little piece of paradise which is quiet and, on the river, just a short stroll to the beach, so it really is the best of everything at your doorstop. What do you think has been the most significant change to the Gold Coast over your time here? Development has played a major hand in changing the landscape. With it comes new people who either relocate or come to enjoy what we get lo live every day. Change is inevitable and I have learnt that to make the most of change, you need to embrace it and aim to be ahead of the curve.
Karen Phillips What part of the Gold Coast did you grow up in? I was born in Southport Hospital and grew up on the beaches of Coolangatta. My family home was in central Tweed Heads a fiveminute walk from Greenmount Beach - you could hear the waves rolling in on a still night. As a teenager it was the era of crocheted bikinis and weekends spent on the beach lathering on Hawaiian Tropic. My sister Tracey made the latest tie side fashions with her friends, and we all had patchwork tan marks from the holes. It was an idyllic lifestyle. 90 GOLD COAST • PANACHE Magazine
If someone had never been to the Gold Coast and only had one day here, what would you tell them to do? The highlights are endless, and once you’ve visited our fabulous theme parks, take a walk round Greenmount to Snapper Rocks and then up to Point Danger, or head out to the Currumbin Valley for a nature walk, there are endless things to explore. You could choose a different experience every weekend and never have the same day twice. That is the beauty of our unique city. Why is it important to you to elevate Gold Coast women in the business arena? For the past 30 years, I’ve been committed to elevating women in business through the iconic Early Risers Breakfast Series and leadership advancement programs. Eleven years ago, we launched the Women in Business Awards of Australia, with our principal program being the prestigious Gold Coast Women in Business Awards. It’s been an honour to have supported thousands of women to build capacity and provide a platform where they can develop their enterprises and propel themselves.

As Australia’s sixth largest city, it is warming and brilliant to see increased diversity in female-led enterprises abundant with great ideas, critical thinkers and innovators. What advice would you give to young women looking to make their way in business? The Gold Coast is abundant with opportunities to launch a business. The City of Gold Coast is extremely supportive of new business and there are several incubators and business networks to assist and nourish aspiring young self-starters. In early 2024, Gold Coast Women in Business Awards is very excited to launch a unique opportunity for budding entrepreneurs. With the incredible backing of the Janelle Evangelo Foundation, we will launch a Queensland first for female startups. The ‘Pitch Your Passion’ initiative will provide bursaries, business mentors and foundation support for a select number of females demonstrating an exceptional business idea, underpinning their efforts so they can bring their passion project to market. I am very excited to see what this endeavour will uncover in its first year. Where would we find you on a lazy Gold Coast Sunday? Brekkie at Ferry Road Markets or Bam Bam are two faves. A lazy walk along the beachfront at Surfers up to Main Beach and perhaps a trip to the HOTA Gallery to check out the latest exhibition. Then again walking across Chevorn to the HOTA Markets with Harry the Schnauzer and stopping at our local, Café Alfons is also a fab way to start a Sunday. Favourite places on the Gold Coast for fun, food and sun? Fresh prawns off the back of the trawlers at Main Beach, sitting in the park or taking a bike ride to the Seaway Kiosk for a crab sandwich and milkshake are a must for locals and visitors alike. Friday night after work is an easy dinner at Edgewater Via Roma at Isle of Capril watching the city lights from across the river enjoying bug and prawn risotto is a divine way to end the week.

SHEREE YOUNG Awarded the prestigious honour of the Women in Business Awards of Australia ‘Gold Coast Woman in Business of the Year’ at the 2022 Gold Coast Women in Business Awards, Sheree Young is Co-Founder and CEO of BODYSCIENCE. She is a global trailblazer in her field, and BODYSCIENCE has been named Australia’s Best Fitness Nutrition and Supplements Brand 2023 Asia Pacific Region. Based in Burleigh Heads, Sheree and her husband Greg started BODYSCIENCE 25 years ago in the garage of their home. What drives both your business and personal success? In my early years I suffered the loss of my brother to cancer and then lost my partner in a car accident. By age 26 I queried what life was all about. These early experiences have shaped the person I am - brave, driven, committed and resilient. I practice these values through a lense of kindness by being kind to everyone I care for and practising being kind to myself. This readily translates to our vision and drive to succeed in business. Greg and I are quite different operators and we use our different skills as needed. I am a Chartered Accountant and my professional and financial literacy combined with extensive operating experience are essential to guiding us to achieve growth and success. As a global industry leader, what lessons have you learned along the journey? It’s important to seek things that make you well-rounded. In my 20’s I had three jobs and supported myself through university, but I would still make time to play sports. This leans into my drive and resilience. Have you always been involved in health and wellness? Health and wellness are a big part of who I am. I guess you could say I was an adventurous child growing up with two brothers, and we’d always be outdoors, riding the bikes or camping. My love for fitness and wellness grew through all my life stages. I am an avid athletic adventurer, have run half-marathons, cycled 250kms in one day, and my passion for adventure travel has led me to cycling mountains in Europe, trail rides and treks. What is your daily wellness routine that keeps you in peak performance? In my role as CEO of BODYSCIENCE I am always incredibly busy but I have always endeavoured to live a health focussed lifestyle. If I’m not riding my bike in the morning, it will be a brisk walk or gym session. I have a deep passion for health and fitness, it’s not a chore for me to exercise in fact some say I’m a bit obsessive! But this needs to be balanced with total wellness habits, particularly good quality sleep. I also recognise the need for down time, which sometimes means saying no. Non-negotiable however is making time with my family. If you could achieve one thing, what would that be? I have already achieved more than I could have dreamt of. I am the mother of two incredible kids, the wife of a husband and business partner of 25 years and the proud Co-Founder of a rewarding and successful business. Having said that I love a challenge and have a lot more to give. THE WONDER WOMAN OF RESTAURANTS There are restaurant owners and there are restaurant owners who, along with building successful businesses, contribute and make a difference to the community. Gold Coast entrepreneur Autumn Adams from Moo Moo Hospitality Group is a woman who has done just that. Eighteen years ago, at only 25 years of age, Autumn Adams and her husband Steven opened Moo Moo The Wine Bar + Grill at Broadbeach on the Gold Coast. Being so young, Autumn was asked at the opening if she was the owners daughter! With a world class fit out and a menu to delight even the choosiest carnivore, Moo Moo immediately catapulted itself onto the restaurant scene to become one of the best steak restaurants in Australia. A few years after enjoying the success of their Gold Coast Restaurant, they opened Moo Moo The Wine Bar + Grill in Brisbane and for a couple of years, Moo Moo took up residence at The Westin, Denarau Island in Fiji. When Moo Moo started, one of the things that Autumn wanted to do, was to hold regular ladies lunches to raise money for local charities. The Moo Moo ‘Be Fabulous’ ladies lunches were launched in 2005 and for many years, these lunches ran every single month and were fully booked out in advance. In the past 18 years, Autumn and her team have raised in excess of $700,000 for charities including CareFlight, Guide Dogs Australia, the National Breast Cancer Foundation, Tour de Cure (which she participated in four times) and The Kokoda Challenge, which she also participated in for seven years. More recently in her role as Vice President of the P and C at Surfers Paradise State School, Autumn has helped the school raise over $60,000 to build a new playground. While juggling being a mum to 10-year-old Summer, and running two successful restaurants, Autumn (and Steven) have just opened the doors of their fourth restaurant BLOWFISH Ocean Grill and Bar. BLOWFISH is a world-class seafood restaurant set to blow people’s minds. “The Seafood restaurant has evolved and BLOWFISH is like nothing the Gold Coast has ever seen. “There was a definite gap in the market when it came to high quality seafood restaurants, and we have now filled that void. How did you meet? We first crossed paths while working together at One and Only Resorts in Sydney. First starting as friends, to best friends, to then a bond like no other where our love story was ignited.
How did he propose? Being brought up with the French culture and heritage, Paris has always held a special place in my heart. I would always joke that I would only ever say yes to a proposal if it was at the bottom of the Eiffel tower. During COVID, with the boarder closures, I was locked in Australia and Dean locked in Dubai. After finally getting back to Dubai, we couldn’t see each other for another 14 days as I was in quarantine. My first day of freedom, and with the entire world still in lock down, Dean swept me away for a romantic weekend to Jumeirah Beach Hotel. As I entered our hotel suite, the curtains were drawn and Dean stepped in front of me, placing his suit Jacket on, French music started playing and the curtains to the terrace were opened. Dean led me out to the terrace which was filled with candlelight and flowers which created a path to a three metre high replica of the Eiffel tower. Dean then knelt down onto one knee, saying the most beautiful words and followed with the one big question ‘Will you marry me?’. With a bottle of our favourite champagne waiting, Dean popped the champagne, poured a glass and we spent the rest of the evening watching the Dubai city lights, with the Eiffel Tower lights and candles setting the scene for a magical afternoon and evening. One that dreams are made of.
Where did you get married and what was the most memorable moment of the day? We were married at the beautiful Beechmont Estate. We had this venue exclusive for the weekend with our closest family and friends staying onsite with us. Beechmont Estate was just magical and everything we asked for. Allowing for privacy and exclusivity for us and our guests upon entering the gates of the venue. Whilst planning our beautiful weekend wedding, the most important elements for us were to have the most incredible entertainment throughout the weekend, delicious food and the finest wine and champagne. Our weekend consisted of a welcome event at Burleigh Pavilion, followed by the weekend at Beechmont Estate. A sunset soiree with flowing champagne and grazing platters on the terrace of the owners residence. We listened to a DJ and saxophonist duo performing Tulum beats and watched the sunset over the picturesque view of the rolling hills and Gold Coast in the distance. Our wedding day started with a champagne toast with a champagne fountain at breakfast with beautiful French tunes in the background. Whilst the bride and groom were getting ready for the day, we then arranged for a lunch time picnic in the Chefs garden with lawn games and a solo guitarist for our guests. The ceremony then took place on the paddock terrace overlooking the rolling hills, followed by post ceremony drinks and canapés with a solo singer and bongo performer. The reception was breathtaking inside the doors of Beechmont Estate Paddock Restaurant with a family style menu, Hamilton Band performing and a full dance floor. The evening was incredible. Something that we will hold close to our hearts for a life time.
Any unique or surprising details about your wedding? My dad is a singer/songwriter and rather than doing a wedding speech he wrote and performed a beautiful personalised wedding song which Dean and I still find ourselves humming.
Where did you go for your Honeymoon? Our honeymoon is taking place on our one year wedding anniversary where we will be travelling to Mauritius, Maldives, Paris and Italy.
Would you do anything differently? Everything was absolute perfection. We would not change a thing.
What was the standout moment of the day? As we had a full weekend, everything was just so beautiful. It’s so hard to pick one moment. Standing at the top of the aisle with my dad, seeing my groom at the end of the walkway and looking out at all of our family and friends. It was just epic. A touching moment for me was my incredible niece and nephews getting up individually and each delivering a beautiful speech, more beautiful than a dream.
Best advice for other couples? Take in every moment of the day. Don’t let the planning become a job and savour planning the small details with your future husband. Your wedding should not be just one day, it’s the planning journey that also should be counted as your wedding. Enjoy every moment of it. SUMMER • 2023/24 107

How did you meet? I was seeking some guidance on a building project and a friend suggested I speak with Rob for his knowledge and expertise. We hit it off straight away. It was very unexpected. We soon discovered that our fathers had shared similar journeys from Europe to Australia, and very quickly realised we had the same family heritage, traditions and values. We both felt a sense of familiarity, like we had found ‘home’.
How did he propose? Rob took me on an early morning walk and swim at Currumbin Beach to watch the sunrise. It was a beautiful morning and unexpectedly, he got down on one knee and proposed. We had a champagne breakfast and it was then that we made the decision to keep our wedding wonderfully uncomplicated. We wanted everyone, including ourselves, to be relaxed so we decided to keep our engagement a secret and go straight to a surprise wedding. We knew we could make it happen by using my birthday as a reason for our family and friends to all come together.
Where did you get married and what was the most memorable moment of the day? We had a very small, intimate gathering on family acreage just outside of my home town of Yamba, NSW. On reflection, the most memorable moment was simply having the most important and cherished people in our lives in one room, at one time. There was this complete circle of love around us. It was magical.
Any unique or surprising details about your wedding? Everything was a surprise! We invited our closest family and friends to celebrate my birthday and announced that we were getting married an hour and a half into the celebrations.
Where did you go for your Honeymoon? We love the ocean so we’re taking some time out to enjoy a few of the Indonesian Islands off Bali soon.

How did you meet? Brodie is actually one of my brothers friends, so we had known each other for years. We started dating after travelling through Europe together around eight years ago.
How did he propose? He took me away to Longitude 131 in Uluru for my birthday, and surprised me the following day with a romantic proposal.
Where did you get married and what was the most memorable moment of the day? We got married at El Kabron in Uluwatu, Bali. The location itself was just incredible, but the most memorable part was definitely having almost 130 of our closest friends and family there to celebrate with us.
Any unique or surprising details about your wedding? We wanted the sunset cocktail party to create the mood for the rest of the evening, so we had a DJ/Sax player out by the pool and a 360 photo booth for our guests to enjoy. We also had surprise fireworks immediately following our first dance which was definitely a highlight.
Where did you go for your Honeymoon? We took our honeymoon in two parts, as we needed to be home for my brother’s wedding and other family commitments. After the wedding we spent six weeks in Africa which was wonderful, and then enjoyed seven weeks in Greece and Italy.
What was the standout moment of the day? For us, it was just having all of our favourite people in one place, celebrating us. That will never happen again. The speeches were just perfect and seeing everyone’s reaction when the fireworks went off was something we will never forget.
Best advice for other couples? Hire a wedding planner and find a great bridal directory. We used @thebalibride which is an amazing platform specialising in Bali weddings.

transfers and weddings, particularly for the bridal cars and parties and of course, we cater and specialise in transporting VIPs, whether it’s celebrities, politicians or corporate customers,” he says. “We take care of a lot of the well-known Hollywood personalities who call Byron home, along with many A-listers who are known to visit the area from time to time when they are in Australia. “It’s fun and exciting work and it’s not something everyone gets to experience.” Jack has worn a lot of hats within the business and whether it’s driving Natalie Portman to and from film sets or answering phones, he’s done so with humble ease. “I’ve personally taken on every role, from washing cars and managing drivers to handling calls, invoicing and administrative tasks, you name it,” he says. “It’s been a process, but it’s great to see the business progressing and growing which has allowed me to operate a fleet of Mercedes-Benz Vans.” Before establishing the business, Jack faced the challenge of not having any pre-existing contacts within the exclusive realm of VIPs, celebrities and luxury hotel chains. “I persevered and I kept poking my head in the doors of Bryon’s top hotels and guest houses,” he says. “I didn’t know anyone within the VIP or celebrity circles, it all came about through organic growth, and I was lucky to get in at the right time with the right crowd, and from there I made sure I was the best in the area. “Byron Luxury Tours is now well known for its reliability, professionalism and the ability to cater to the needs of premium hotels, brands and customers.” As the business continues to grow, Jack remains focused on expansion and further solidifying their reputation. “We definitely have room to grow, particularly in the Byron area, but we’d also like to set our sights on the Gold Coast within the next year,” says Jack. It was a beautiful evening at the Oracle Boulevard Twilight Table, and everyone in attendance agreed it was one of the best yet. Guests were treated to a wonderful evening of fantastic food and entertainment. Seven restaurants came together to create an incredible five-course menu that included a selection of canapes, starters, entrees, main course and dessert, all on one spectacular long table. Attendees enjoyed an intimate Q and A with Professor Choo about his life and the lessons he has learned as one of the world’s leading fashion designers. Are you from the Gold Coast originally? If not when and why did you come to the coast? I am not originally from the Gold Coast. I grew up in Normanton, moved to Melbourne, followed by Sydney and then to the Gold Coast with my husband Bob as he had a great opportunity with Mantra Group in 2006. We saw the Gold Coast as an amazing place to raise a family. Tell us about your background - have you always worked in hospitality? If not - why the switch? Started in hospitality as my parents had a motel and I then worked for a regional airline and in Cairns hotels before joining Westfield Shopping Centres as a Marketing Manager. I have come back to hospitality after a 25 year gap! What is your current role? Co-owner of the Tyalgum Hotel, in addition to some community board roles. When did you purchase the Tyalgum Hotel? We are approaching our 1 year anniversary mid-December. What do you enjoy most about working at the Tyalgum Hotel? The team we work with and the sense of being a real focal point for the local community to come together for social club, school functions, birthdays etc. What is one of the most challenging elements of running a hospitality business? It can be 24/7 sometimes - with accommodation, bistro and the bar there is always something happening. When others are taking time off at Easter or Christmas or New Year - we are super busy - which is of course its own fun! What are you trying to achieve with the venue? We are really trying to remain true to the heart and soul of an Australian country pub, acting as a community hub, while at the same time encouraging new visitors to see us as a destination for lunch or dinner or a weekend stay. We want to enable a new market to experience the magic of the village. How do you want people to expereince and feel while they are there? Everyone who walks through the doors of the Tyalgum Hotel is our guest - and we want them to feel welcome, to enjoy the food our amazing chefs offer and to feel they can relax, listen to some live music, cool off in the pool in summer, sit by the fire in winter and generally have a county pub experience they will come back to!
What is the best advice you have ever received? Not sure if it is really advice I have received, but I read - probably on a poster - ‘wherever possible be kind - and it is always possible’ - which I certainly do not always achieve but it is a phrase I do try to remember.
What is your favourite section of the pub - the lounge? The bar? The pool? Why? I cannot actually pick one - I will say outside under the Jacaranda trees in our beer garden and in the cosy snug room with the record player!
What advice would you give to people chasing their dreams? You won’t regret trying.
Can you see yourself ever doing something else? I think I am enjoying coming full circle back to hospitality so no I can’t see myself elsewhere
People who know you, know that you love...? My family, a great theme for a party, reading and chocolate!
