s I travel around the Gold Coast, a place I have proudly called home for 30 years, I can’t help but feel the incredible energy as we edge closer to the longawaited and highly anticipated Commonwealth Games. From new infrastructure and world-class sporting facilities to a flourishing property market, our city has never looked better. T

he skin really is an amazing organ. It is the largest organ in the body and not only keeps all our inner workings in, but it also breathes, rids us of waste, cools us down when it is hot and helps us stay warm when it is cold. However, as we age, our skin loses elasticity and begins to sag from the pull of gravity. The sun is a major factor in ageing skin, especially areas like the neck. Excess skin under the chin that falls below the jawline is often referred to as a “turkey neck”. If you feel that your neck has aged unsatisfactorily, and you need to wear scarves to hide it, a platysmaplasty could be the perfect procedure for you. A platysmaplasty – or neck lift – is a surgical procedure to improve the appearance of the neck and reduce the signs of ageing and weight-loss. Neck lift procedures can help to tighten loose skin, remove excess fat, reduce a double chin, reduce jowls, define the jaw line and treat a “turkey neck”. It can also reduce the appearance of stringy muscle cords that run the length of the neck. Another type of cosmetic procedure that can improve the neck area is liposuction to remove excess fat. Neck liposuction may be performed on its own or in conjunction with cervicoplasty or platysmaplasty during the same operation. argot Robbie and the Gold Coast have proven they have serious cred. Just like her city, Margot is a natural beauty, oozing with unaffected glamour, talent and a can-do spirit that is shining brighter than ever on the world stage. The 27-year-old’s Oscars nomination for her portrayal of controversial figure skater Tonya Harding in the criticallyacclaimed movie, I, Tonya, which she also produced, was the culmination of a long awards season for the former Somerset College student. In recent months, Margot has also won AACTA and Critics’ Choice Awards and received Best Actress nominations at the Golden Globe, SAG and BAFTA Award ceremonies. Not bad for a Southport-born girl who brazenly coldcalled the casting agent for Neighbours until they allowed her to audition. The Oscars red carpet is a long way from the neatly mown lawns of Ramsay Street where Margot played the fiery, confident Donna Freedman from 2008 to 2011 – a role that earned her two Logie nominations. Margot was 17 when she joined the Aussie hit soap, having never lived away from home. She had just moved from her family home in Currumbin Valley and knew no one in Melbourne, where Neighbours is filmed. “I had never lived on my own before and everyone just pretty much took me under their wing,” Margot told WHO Magazine. “Everyone was like, ‘Okay, you will come over to my house’. Susan Kennedy (Jackie Woodburne) would invite me over once a week and cook me a roast. ‘Toadie’, or Ryan who plays Toadie, taught me to do my taxes.” From the start of her career, Margot wanted to challenge herself and pleaded with Neighbours scriptwriters to let her character go off the rails or enter rehab. However, the show’s G classification made it difficult. Margot told MSN TV at the time: “I’m really glad I get to play her and not an average, boring teenage girl. You can be an average, boring teenage girl every other day of the week. “It’s fun to be able to say and do these things you normally wouldn’t.” In 2011, Margot moved to Hollywood to chase her acting dreams. Her life took a lifechanging turn two years later in The Wolf of Wall Street with her breakout role as the uber-glamorous Naomi Lapaglia opposite Leonardo DiCaprio’s Jordan Belfort.

Margot’s thick Brooklyn accent in the film is so convincing that when she appeared on Jimmy Kimmel Live!, the host said she was surprised to learn Margot was from Australia. Since then, Margot’s career has skyrocketed from indie films (Suite Française, Z For Zachariah) to comedies (Focus, Whiskey Tango Foxtrot) and blockbusters (The Legend of Tarzan, Suicide Squad). Her latest movies include period drama, Mary, Queen of Scots (in which she plays Queen Elizabeth I with a receding hairline and scarred skin) and Goodbye, Christopher Robin, in which she portrays Winne-the-Pooh author AA Milne’s socialite wife Daphne with perfectly British aplomb. With plenty more movies in the pipeline, it doesn’t look like Margot’s shooting star is in danger of falling any time soon. “Margot is absolutely incredible,” Jared Leto, Margot’s co-star in Suicide Squad, told Australian media last year. “One of the best actresses of her generation and honestly one of the nicest people I’ve ever met.” Martin Scorsese penned a tribute to Margot for Time’s “The Most 100 Most Influential People” list of 2017, which Margot featured in. Margot also landed on Forbes’ list of the most influential people under 30. Scorsese, an Academy Award-winning director-producer, praised Margot for her “comedic genius, all-betsoff feistiness, grounded, hardscrabble toughness and emotional daring.” However, Margot, who was named the newest Chanel ambassador ahead of the 2018 Oscars, is all too aware that Hollywood is a fickle place and is taking control of her own career by taking on a producer role at her own production company, LuckyChap Entertainment. Margot’s partners are filmmaker husband, Tom Ackerley, friend/ personal assistant Sophia Kerr, and another friend, Josey McNamara. Margot hopes that by taking control behind the scenes, she can help produce female-driven content in Hollywood. LuckyChap will partner with Bold Films to produce Dangerous Odds. Margot will star as Marisa Lankester, a former cleaning lady who became an illegal sports betting empire boss. A statement from LuckyChap entertainment reads: “We are building LuckyChap off a passion

to tell female-driven stories that feel original, unique, and rebellious in nature. We found all of this in Marisa’s story and couldn’t be more excited to partner with Bold Films and 360 to bring ‘Dangerous Odds’ to the screen.” The initiative comes at a time when women in Hollywood are helping to drive the conversation about sexual harassment in the workplace. In February, following a four-month investigation, New York state prosecutors filed a lawsuit against the Weinstein Company on the basis the studio failed to protect employees from film mogul Harvey Weinstein’s alleged harassment and abuse. At the 90th Academy Awards, there were several references to the need for women in Hollywood to be treated better and equally with their male counterparts. But importantly, the Oscars seemed to shine a light on an industry in transition, perhaps to a more diverse future. When accepting her Best Actress Oscar, Frances McDormand asked every female nominee in the Dolby Theatre to stand. “We all have stories to tell and projects we need financed,” she said. “Don’t talk to us about it at the parties tonight. Invite us into your office in a couple days, or you can come to ours, whatever suits you best, and we’ll tell you all about them.” Despite her striking on-camera performances, Margot’s family didn’t always support her career. “My family has no connection to the entertainment industry whatsoever,” Margot told British Vogue. “When I started acting, everyone was like, ‘That’s fun, but when are you going to actually get a real job? And that went on for years.” A decade on and Margot’s family members are eating their words – and they couldn’t be prouder. Older brother Lachlan Robbie, known as ‘Lockie’, expressed his love for his sister on Instagram after her Oscars nomination. “Words cannot begin to describe how proud I am of you. To watch you grow into the star you’ve become over the past 10 years and to be there to see your reaction when the news (of the Oscar nomination) came through. No amount of congratulations will ever be enough. But this is your time now (sic) you earned it and showed us all that dreams can become a reality. So proud of you and your team.”

Margot has three siblings – Lockie, older sister Anya and younger brother Cameron. Lockie is a stunt performer, appearing in the 2017 movie Alien: Covenant and the forthcoming Aquaman. Cameron, 23, is pursuing an acting career. He made his debut in the 2009 Australian thriller film I.C.U. and has since starred in two short films, Gifted in 2014 and People You May Know in 2016. Margot and her siblings grew up on the Gold Coast and were raised by their single mum, Sarie Kessler, a physiotherapist, who worked hard to support her family. Margot took her mother to the Oscars as her guest. “My mum is just the sweetest person on Earth, and if I turned into her, I wouldn’t be that upset at all; in fact, it would be an honour,” Margot told GQ Magazine in 2014. Margot likes to keep a low profile on her visits to the Gold Coast, spending quality time with family and friends and visiting some of her favourite eateries, including Bam Bam Bakehouse in Mermaid Beach and Bumbles at Budds Beach. As for family plans, Margot is keeping mum but has spoken of her desire to raise children in Australia. Speaking to Carrie Bickmore on The Project, Margot said: “The kids will be in Australia. He (husband Tom Ackerley) loves Australia. He’s like, ‘I don’t know why anyone leaves Australia.” Meanwhile, Margot’s alma mater, Somerset College, is hoping their most successful drama student will return one day to open their Performing Arts Theatre which is undergoing renovation. “We’d love to get Margot out here to open the building,” said Somerset Deputy Principal Michael Brohier. “Margot’s meteoric rise to fame and stardom has been a huge source of inspiration for all students at the College, not only to those who have aspirations to do acting as a career choice. To say: ‘You do have to work really hard, you have to work really, really, really hard, but if you want it badly enough, you can totally make it happen.”

Margot graduated from Somerset in 2007, while Sophie later attended A.B. Paterson College and MacGregor State High School where she graduated as school captain in 1997. Margot mastered the trapeze. She earned her “trapeze” certificate at age eight when she attended circus school. She was once given a live rat as a gift. While filming Suicide Squad, Jared Leto, acting as would his Joker character, sent a pet rat to Margot. Margot took the rat home and fed it organic berries. Margot uses nipple cream on her lips. Margot once revealed that when she did her first sex scene with Leonardo Di Caprio, she downed three shots of tequila at 9am, just before the scene.

Our expert contributor, weight-loss surgery specialist Dr Jason Free, answers SLIM readers’ most commonly asked questions about one of the most effective weight-loss procedures. What is the laparoscopic SADI procedure? Laparoscopic SADI (Single Anastomosis Duodenoileal bypass) procedure is also known as SIPS (Stomach Intestinal Pylorus Preserving). The procedure results in the greatest weight-loss of all the commonly performed weight-loss procedures. It has the longest lasting effects, with less late weight regain which is becoming noticeable in patients who have undergone a sleeve gastrectomy in the past. Who is the ideal patient for a Laparoscopic SADI procedure? • BMI over 50 • diabetes • high cholesterol/lipids • failure of sleeve gastrectomy What is involved and how does it differ from other weight-loss procedures? The SIPS procedure is an operation incorporating a sleeve gastrectomy with bypassing part of the intestine. It is a weight-loss operation that provides the most dramatic amount of weight-loss relative to all the currently performed procedures with no increase in side effects. It has the greatest effect on improving medical disorders associated with obesity such as diabetes, hypertension, high lipids and cholesterol. As such, it is generally reserved for patients with a very high BMI (BMI>45) and those with significant medical complications due to obesity. As with all weight-loss procedures, it is a laparoscopic (keyhole) procedure performed under a general anaesthetic. The operation involves two parts. Firstly, part of the stomach is removed making a smaller stomach similar to a sleeve gastrectomy. The first part of the intestine (duodenum) is then divided just below the stomach and anastomosed (reattached) to a loop of intestine about 2 metres further downstream.

This has the effect of decreasing appetite, restricting meal sizes and bypassing food away from the metabolically active part of the intestine. This results in beneficial hormonal changes which have a positive influence on the body’s metabolism. The important thing to know about this procedure is that the bowel is divided below the pylorus. The pyloric valve and its function is preserved unlike in the gastric bypass or mini-gastric bypass. The pyloric valve has an important role in regulating the rate at which food and acid enters the intestine from the stomach. It also prevents bile from refluxing from the duodenum back up into the stomach which can cause stomach irritation. The preservation of the pylorus in the SIPS procedure maintains its important function. The problem of bile entering the stomach which can occur with the mini-gastric bypass is therefore prevented in the duodenal bypass. The preservation of the pyloric valve in the SIPS procedure also eliminates the dumping syndrome which can occur with standard gastric bypass procedures. The glucose fluctuations after a meal do not occur after this procedure. There is also a dramatic reduction in the formation of ulcers forming at the anastomosis site which can happen in standard gastric bypass. What is the history of the SADI / SIPS procedure? This procedure has evolved over many years. It is a modification of the original Duodenal Switch (DS) operation and as it has been refined over many years it is known by various names. The problem with the DS operation was that such a long segment of intestine was bypassed which resulted in many patients having malnutrition and vitamin deficiencies. Many patients also had loose bowel motions following DS surgery. In 2007, Spanish surgeon, Dr Antonio Torres, developed the loop technique, reducing two

anastomosis down to one, bypassing less intestine. This became known as the SADI procedure. This made the operation safer, with less effects on malnutrition, diarrhoea and vitamin deficiencies. American surgeons, Dr Mitch Roslin and Dr Daniel Cottam, went on to further refine the technique by bypassing the intestine even less. They were able to further decrease the potential to have long-term problems. This became known as the Stomach Intestine Pylorus Preserving Surgery (SIPS). The results of these pioneering surgeons demonstrating extremely good weight-loss and extremely low complication rates has led to its popularity. The SIPS procedure is now performed at many specialist weight-loss centres throughout the world. I have had a prior sleeve gastrectomy. Am I a suitable candidate for the SADI / SIPS procedure? The SADI / SIPS procedure is becoming increasingly useful for patients who have had a prior sleeve gastrectomy and either have not had as much weight-loss as expected or have lost weight and regained weight later. In the past, these patients have often had their sleeve gastrectomy converted to a standard gastric bypass, however evidence shows that this also may not provide robust long-term weight-loss. The SADI/SIPS procedure is showing extremely promising results after previously failed sleeve gastrectomy. The SIPS procedure has been developed to such an extent that it provides the most weight-loss, the longest lasting weight-loss, and the most beneficial effect on medical problems associated with obesity, compared to all other procedures. It has been refined to the point at which the long-term problematic issues have been minimalised making it an extremely safe and effective operation. A second chance: WHEN DIET AND EXERCISE JUST AREN’T ENOUGH Losing weight is the number one New Year’s resolution for many people and the one most people fail to achieve. As obesity rates continue to rise, more Australians are turning to weight-loss surgery to improve their health and quality of life. By Dr Jason Free

sk anyone who has undergone a weight-loss operation in recent years and almost always you’ll get the same response: “I feel so much better about life! I wish I’d done it years earlier. It’s the best thing I’ve ever done!” The results are often so life-changing that some patients can’t find the words to describe their quality of life post-surgery. Patients and medical practitioners are now fully aware of the enormous medical benefits of weight-loss surgery, including complete resolution or significant improvements in medical problems such as diabetes, hypertension, hypercholesterolaemia, obstructive sleep apnoea, and osteo-arthritic disorders. The research shows that while many medical problems respond to weight-loss, individuals who have morbid obesity rarely achieve long-term weight-loss with dietary interventions. Bariatric surgery remains the only method that culminates in sustained weight-loss with subsequent control of obesity-related complications.

Most patients requesting surgery are further motivated knowing there are massive non-medical benefits such as improved self-esteem, confidence, mobility and increased energy levels. Depression and Anxiety The Swedish Obese Subjects (SOS) trial involving thousands of obese patients demonstrated a significant decrease in depression and anxiety after surgery compared to obese controls treated with diet and exercise counselling. Self-Concept and Personality Self-concept refers to a patient’s perception of “self” including several important characteristics such as: self-esteem, body image, self-confidence, and sense of attractiveness and assertiveness. A recent published review of the literature suggests that weight-loss surgery improves self-esteem, self-confidence and expressiveness. These changes appear to be correlated with major improvements

in body image and weight-loss satisfaction after surgery. Various studies have looked at improvement in self-esteem with results ranging from 89-96 percent of patients demonstrating an improved self-esteem. Even patients who had not lost as much weight as anticipated had a dramatic improvement in self-esteem. Mobility Many obese people find it difficult to participate in activities they might otherwise enjoy and have limitations in movement and decreased mobility. Evidence shows weight-loss surgery decreases the proportion of people with a “physical handicap” due to their obesity from 50 percent down to 6 percent. Vitality The lack of motivation and tiredness many obese patients feel is dramatically improved following surgery. On quality of life scoring, an improvement in this regard demonstrated a vitality score doubled from 35 to 67. Sexuality In a study of patients following sleeve gastrectomy, 85 percent noticed having an improvement in their sexual life. Social Functioning Surgical weight-loss has been shown to decrease the mockeries and discrimination of others towards obese patients. “Public Distress” and “Social Functioning” scores on quality of life questionnaires showed significant improvements. Most obese patients consider the impaired quality of life to be the most crippling aspect of their disease, despite having medical comorbidities which can be improved. After surgery they consider the lifestyle improvement the greatest benefit. According to research, obese individuals would rather have a normal weight gain with a severe disability such as deafness, heart disease and amputation rather than be obese without any of these conditions.

Can you determine the sex of your baby by changing positions during intercourse? If you are carrying high, are you having a girl? SLIM debunks the myths with Dr Drew Moffrey, one of the Gold Coast’s leading experts in women’s sexual and reproductive health.

A

s an obstetrician, I get a lot of questions and I always give the time to answer all my patients’ queries, as I firmly believe there is no such thing as a silly question. I get excited to be asked random ideas that I have never heard before. With Dr Google nowadays, there is no shortage of advice on the web, but I would always encourage patients to consult their obstetrician before doing or consuming anything related to their pregnancy. Can changing positions during intercourse determine the baby’s sex? Trying to influence the sex of the baby and trying to determine the sex of the baby is probably one of the most frequent questions I am asked. There is a never-ending stream of theories behind trying to make that baby a little blue or pink one. Position during intercourse determining the sex of baby is a popular theory but unfortunately is not true. The sex of the baby is all dependent on which sperm reaches the egg first and position has no effect on this. Timing of intercourse is something that does have a little more impact on the sex of your baby. The X (female) sperm are larger and slower, while the Y (male) sperm are smaller and faster. Therefore, if you have sex at ovulation or just after the egg is released, then it is more likely a boy. The X sperm live longer within the uterus – up to 6 days – so if you have sex prior to ovulation you are more likely to have a girl. I’m carrying high. Am I having a girl? Guessing the sex of your baby is something everyone will try to do. Even complete strangers will give you their opinion. An ultrasound around 20 weeks is about 95 percent accurate but is also dependent on the service provider. There is now a blood test you can have from 10 weeks that will tell you the sex of the baby and give you 99 percent accuracy. The way people carry is often used to justify the sex of the baby. If you are carrying high it is often suggested that it is a girl, however there is no evidence to suggest that the way you carry determines the baby’s gender. The main factor on the way you carry is your body position, your fitness levels and the number of previous babies you have had.

Does the speed of a baby’s heartbeat determine gender? The speed of a baby’s heartbeat is often said to indicate gender. The theory is that girls have a faster heartbeat than boys. If the beat is 140 or above, it is said to be a girl. There have been numerous studies done on this topic and it has been proven to be false. Variation between 110-160 heartbeats is normal for a healthy baby. Is it safe to dye my hair during pregnancy? Patients are always worried about things that can harm their baby. I am often asked about hair dye and spray tans. These products have minimal studies on them, but both would have little effect on baby. There is minimal absorption through the skin of both dye and spray tans. Alternatives to hair dye would be streaks or highlights rather than a full dye. Do I need to stay away from cats? The other big question about harm to baby is about the family cat. Your cat itself is safe and you can cuddle your kitten as normal. What is not safe is the litter tray. Most cats have bacteria called toxoplasmosis in their faeces. Toxoplasmosis can cause birth defects and is quite serious if contracted. It is important for pregnant women to stay away from a cat’s litter tray and not be in the room when it is emptied as the dust from the dry faeces carries the bacteria. Is it safe to eat seafood during pregnancy? Pregnant women often deprive themselves of seafood. If the seafood is well cooked you won’t have any issues with bacteria in it, however you need to be careful about the quantity of seafood you consume. Mercury is an issue and the amount should be limited. If you have large fish such as shark, swordfish or marlin, aim to have one serve a week. If it is a smaller fish, such as tuna, barramundi or salmon, you can have three weekly serves. Will eating curry and castor oil bring on labour? Inducing labour is something you always need to discuss with your obstetrician as the timing and method needs to be discussed with them in full. Most theories have a small element of truth to them.

These include the notion that curries can induce labour. Cumin, which is found in many curries, is known to stimulate oxytocin production. Oxytocin is the hormone needed to labour effectively. Unfortunately, the amount of cumin needed to induce labour would require a woman to consume several kilograms of curry. The same applies to castor oil. The way this works is by inducing vomiting and diarrhoea. I would strongly recommend against this method. Does having sex in late in pregnancy induce labour? There are numerous successful ways to induce labour. The main one is intercourse. There are several reasons behind why this is successful. Male sperm contains prostaglandins that help soften and open the cervix. There is also the trauma of the penis hitting the cervix which helps release the woman’s own prostaglandins. When a woman reaches orgasm, this also assists inducing labour as it causes contractions of the uterus and the release of oxytocin from the brain. Does raspberry leaf and acupuncture help induce labour? Raspberry leaf can help induction. This tea has been used for generations for all sorts of remedies. The tea helps to relax the smooth muscle in the uterus thereby increasing tone and strength of contractions. It is important that women DO NOT take raspberry leaf tea during the first trimester. Acupuncture is also shown to help induce labour. You can start acupuncture from 37 weeks. Can I count on breastfeeding as a contraceptive? The last big myth that is important to dispel is that breastfeeding will stop women falling pregnant. Prolactin and oxytocin are very important hormones affecting breastfeeding. Prolactin does inhibit ovulation but is only released at night in pulses from the pituitary gland within the brain. When women reduce the amount of feeding overnight, they reduce the amount or prolactin released and because of that ovulation can return. Often women will spontaneously ovulate without realising it and therefore it is important to have contraception from 6 weeks post-partum.

he first gold medals of the 2018 Commonwealth Games will be up for grabs in triathlon on the first day of competition. Leading the charge at Southport Broadwater Parklands on April 5 will be local heroes Ashleigh Gentle and Matt Hauser.

You had an incredible 2017 – winning the ITU World Triathlon Final in Rotterdam, the Hamburg ITU Triathlon Mixed Relay World Championships and a third national junior crown. What were the highlights? The feeling of being at the top level of your sport and being able to match it with your childhood heroes was most exciting thing to come out of 2017 for me. The team success in Hamburg was an incredible start to my European season and to cap it off with the Junior World Championship was a dream run. Being selected in my first Commonwealth Games team was also a pretty epic feeling. Are you pinching yourself or do you feel your career is only just beginning? My level of confidence has risen to new heights after last year and to have the unwavering backing from Triathlon Australia and the QAS only adds to that selfassurance. I’ve always had self-belief and as long as I keep on setting new targets and goals, I’m super excited for what the future holds and motivated to progress from my junior age group to the senior ranks. What is your favourite leg? If I was to choose one leg it would probably be the run. I came from a cross country/ track background in school, but I’ve learned to love the other two legs just as much now. How did you get into triathlon? I excelled in running from a young age holding a few Queensland State records 32 SLIM MAGAZINE AUTUMN 2018

on the track, but I also had a big passion for AFL and cricket. Triathlon came quite naturally to me. I was the kid to try any sport I could poke a stick at. My running coach in Hervey Bay, Brian Harrington, introduced me to the sport and I fell in love with the variety of the three disciplines instantly. Then came the challenge of mastering all three.

Jamie Turner and the squad, and living in Spain for nearly four months. My first WTS win in Montreal was my most memorable moment, alongside Rotterdam Grand Final. I didn’t have my best race in Rotterdam, but I held onto 2nd in the World Rankings, which was a career best. Noosa will always be a very special event too. It’s a race I look forward to every year.

How much does it mean to you to have the Commonwealth Games on the Gold Coast? It’s massive that I’m going to be competing in my first Commonwealth Games on home turf and a mere 20 minutes from where I live. It will mean the world to have my family and friends there cheering me on throughout the race and I certainly believe that will push me and every other Australian to give that little bit extra on the day.

How does it feel to be Australia’s leading lady of triathlon? I never really thought that one day I would be considered the leading lady, but I have worked extremely hard and I just love to get out on the race course and do the best I can.

Will you get a chance to watch any other sports at the Games? Triathletes are lucky in that we are one of the first events to kick off the games proceedings. Fortunately, I’ll get the opportunity to soak up the rest of the Games and watch some of the other Aussies do battle with their fellow Commonwealth competitors. It will be awesome to see some of my mates race in the swimming events - also athletics, beach volleyball and cycling.

How did you get into triathlon and did you excel at other sports as a child? I played a lot of team sports. I made representative touch football teams first, but also played netball and did cross country and athletics at school. I started triathlon when I was 14 and at one stage tried to keep up all the team sports too. I loved triathlon, so I stopped netball and then touch football.

You had an amazing 2017 – becoming the first athlete to win four straight Noosa Triathlons and the fourth Australian woman to win a World series triathlon. What were your most memorable moments? 2017 was certainly a year to remember. I made massive changes in January, relocating to Wollongong to train with

You made your Olympic debut in Rio. What are your career goals? My next big goal is the Commonwealth Games, but the longer-term goal is to make Tokyo 2020 Olympics and come home with a medal.

How are your preparations going for the Commonwealth Games? They are going well. I took time at the end of 2017 to really rest and reset. It was a great year, but it took a lot out of me. I allowed time to build back into things sensibly, and our squad started at the AIS in Canberra, and now we are in Wollongong where things have started to get more intense. The body is holding up well and I am healthy, so I’m in a good position to keep up the hard work leading into the Games. What will it take to deliver a home town victory? The Commonwealth athletes in triathlon are the strongest in the world right now, so it will no doubt be a very competitive and exciting event. I am doing everything I can to be prepared for the conditions and race tactics, so I will feel ready and focused. I’ll also be excited for the extra strength I’ll feel from the hometown crowd, and I hope that the Aussies will get behind the triathlon. Will you get a chance to watch any other sports at the Commonwealth Games? The women’s triathlon is the first medal event of the Games, so luckily I will have the opportunity to see a lot of sports. I’m looking forward to the netball, swimming, athletics, cycling, hockey, marathon and some of the gymnastics too.

Skye Nicolson has an angel in her corner as she fights for Games glory In 1994, the unthinkable happened. Gold Coast Olympic boxer Jamie Nicolson and his 10-year-old brother Gavin were killed in a horrific car accident on the Pacific Highway. Jamie, a 22-year-old boxing world championship bronze medallist and the 1991 world No 1, were driving south from their Yatala home to Nerang for a training session when tragedy struck. The loss of a child is a grief that lasts forever, and as Pat and Allan (Senior) Nicolson’s world came crashing down, they tried their best to get on with life, even though they felt they were just going through the motions. A year later, on 27th August, 1995, the couple welcomed daughter Skye into the world and the darkness lifted. Jamie and Gavin are the brothers Skye never knew but who are the inspiration behind her

gold medal assault at the Commonwealth Games. A medal on home soil will be Skye’s ultimate prize and a step closer to her dream of becoming the best female boxer in the world. “I was born in 1995 but I feel like I know them because they’re constantly talked about,” Skye said. “I’ve seen videos of Jamie fighting and people say we have really similar boxing styles, both counter-punching southpaws.” Skye, 22, narrowly missed selection for the Rio Olympics (she would have been almost 21) but fought back to become Australia’s first woman to win a bronze medal at the 2016 world titles. Although Skye’s heart lies in Queensland – in the ring at Albert Boxing Club – the determined pugilist now trains at the Australian Institute of Sport in Canberra. The 57kg lightweight recently travelled to the mountains of Baguio, in the Philippines, where she trained with the Filipino national team. “The high altitude, amazing sparring partners and great training environment have been a huge part of my preparation,” Skye said. “I trained there in the lead-up to the world championships where I received the bronze medal and I believe it definitely helped play a part in my success there.” Skye said she had seen women’s boxing grow rapidly since its inclusion as an Olympic sport at the 2012 London Games. “I think the growth and quality of women’s boxing has just skyrocketed since then and still is, nationally and internationally,” she said. Skye acknowledged that she had changed what people might think about female boxing. “Sometimes you can really shock them (male sparring partners). They don’t expect you to be as good or as quick or as strong as you are. “I am definitely more of a girly girl than a tomboy. I get my hair and nails done and

love an excuse to get all dressed up and wear make-up. “Pink is definitely a favourite colour of mine too. But when it’s training time and competition time I am all business.” At age 12, Skye fell in love with boxing and describes the sport as “addictive.” “It gives you an adrenaline rush like you couldn’t imagine,” she said. “It has consumed my life ever since and I wouldn’t change a thing. Boxing has helped me grow into a confident, healthy and determined woman and has taken me all around the world. “I am so thankful for the opportunities boxing has given me. “Mum and dad have always been extremely supportive. I’m so lucky to have parents that care as much as they do, and I wouldn’t be where I am today without their guidance and support for all these years. They’re my biggest and proudest fans and I’m so glad I can do what I love and make them proud doing it.” Skye will be supported at the 2018 Commonwealth Games by her family and many friends. “I’m so excited there are so many people coming to watch me. Being at a home Games is going to be so surreal. “I am so used to competing in front of foreign crowds and getting to compete in front of all the Aussies is going to be such a rush. I can’t wait!” Although Skye will be fighting for the brothers she never knew, her main motivator is the thought of hearing the Australian anthem played. “I love the feeling of my hard work paying off and turning my dreams into a reality,” she said. “Feeling your arm being raised in victory at the end of a fight is an indescribable feeling. Standing on the podium and watching the Australian flag being raised is the greatest feeling I’ve ever experienced and it motivates me to feel that feeling again over and over.” SLIM-MAGAZINE.COM.AU 33

The Honourable Peter Beattie is a former politician who served as the 36th Premier of Queensland from 1998 to 2007 and Leader of the State’s Labor party from 1996 to 2007. In February 2018, he was named Chairman of the Australian Rugby League Commission. He also served as Queensland’s Trade Commissioner to North and South America based in Los Angeles from 2008 to 2010. The Gold Coast 2018 Commonwealth Games will be the largest sporting event Australia will see this decade and the biggest sporting spectacular ever staged on the Coast. I thought I might as well keep going and have a run around. I enjoyed it. What is your role as a GOLDOC board member? I have been extremely lucky to have been asked to be on the board during the bid and then the ongoing role. To see what happens behind the scenes has been an amazing experience.

Glynis Nunn-Cearns, OAM, is best known for winning an Olympic gold medal in the heptathlon at the 1984 Olympic Games in Los Angeles. The 57-year-old is the only Australian to have won an Olympic multidiscipline athletics event. In the boycottaffected 1984 Games, she defeated the great American Jacqueline Joyner (later JoynerKersee) by three points. What were your top three highlights as an athlete? One of the main highlights is the Olympics. Everyone dreams of being an Olympian. Then as an Olympian you have that ‘pie in the sky’ dream of being a medallist. I was one of the lucky ones that their dreams all came true. Another would be the Brisbane 1982 Commonwealth Games because it was basically my home Games. I had been teaching in Brisbane in 1981, so I had a number of students that came out to support me and being a Toowoomba girl, there were many friends and family there. Another special highlight would be my first ever State medal as a 10-year-old. I won the state cross country and my dad was so excited he ran alongside me for the last 100 metres. My parents were so invested in my development as an athlete. I was blessed. They never pushed me, they just supported me. Do you still compete? I still compete, but only every now and again, and I certainly do not train for it. It is just for fun. I have been there and done that, so I support the Pan Pac Masters Games when it is here on the Gold Coast. It is a great competition for older athletes to become involved in, get fit for and certainly socialise. I love the interaction and normally help the other competitors while I am there. I did compete in the world masters in Brisbane in 1994. I was three months pregnant, but no one knew. I had been training to try and make the 1994 Commonwealth Games team and got injured so when the injury got better,

in a regional area – the first time we have had equal medals for men and women, the first time a fun run has been held for the community as part of the marathon – how exciting – and the largest number of events for the para-sport program. How can it not be the best Games ever. Australia always delivers, and this will be nothing different. We have some fantastic people working on delivering the Games and I think on the night of the 15 April, there will be many proud people sitting back enjoying what has just taken place.

Do you think the Gold Coast can deliver the best Commonwealth Games in history? Absolutely, we can deliver the best Games ever. This is the first time it has been held

What are your favourite sports/ athletes to watch? I am obviously going to enjoy watching the track and field. I am also going to enjoy the netball, basketball and cycling. Any of the sports will be great and the public have the opportunity to see something that has never been seen before on the Gold Coast.

Mike Victor is currently Vice President of the Australian Commonwealth Games Association. His cycling achievements include a 1987 Meritorious Medal from Cycling Australia and service as Chief Executive Officer of Cycling Queensland from 1985 to 1997 and President of Cycling Australia from 2000 to 2009. Also a member of the Union Cycliste Internationale (UCI) Solidarity Commission from 1996 to 2010, Mike was Cycling Competition Manager for the Brisbane Commonwealth Games in 1982 and the Melbourne Commonwealth Games in 2006. He was a member of the Advisory Committee organising the 2010 World Cycling Championships (WCC). He has officiated at two Olympic Games, nine Commonwealth Games, seven World Championships and numerous UCI events in Australia, New Zealand and Japan. In 2005, Mike was awarded an Order of Australia Medal for services to the sport of cycling.

Sam Coffa has served Australia for more than 40 years as an outstanding athlete and sports administrator. He was also Victorian Champion from 1959 to 1969 and a six-time Australian Champion. He was Deputy Chairman of the 2006 Melbourne Commonwealth Games Bid Committee and 2006 Melbourne Commonwealth Games Organising Committee. Sam was made a Member in the General Division of the Order of Australia for his service to sport.

What you need to know about heart health

T

here are many risk factors that predispose a person to a heart attack. Prominent Gold Coast cardiologist, Dr Shailesh Khatri, of the Cardiac Centre, said Sarah Hajduk is among a unique group of young heart attack patients without the usual cardiac risk factors. SLIM spoke with Dr Khatri. Dr Khatri, is Sarah Hajduk one of your youngest heart attack survivors? Sarah is not my youngest patient. Unfortunately, I have a number of patients younger than her. What can cause a heart attack at a young age? There are many risk factors that predispose a person to a heart attack. We know of the traditional risk factors such as smoking, high blood pressure, diabetes, high cholesterol, family history, obesity and being overweight, physical inactivity. There are some non-traditional risk factors especially in women such as hypertension during pregnancy, gestational diabetes (i.e. diabetes during pregnancy),

persistent weight gain after pregnancy, autoimmune disorders, radiotherapy for breast cancer, depression and menopause. The usual cause of a heart attack is plaque rupture that can lead to either complete or incomplete blockage of the artery. This compromises the blood flow to the heart muscle which in turn causes heart muscle damage. Other causes include coronary artery spasm, coronary artery dissection (a tear in the heart artery) or Takotsubo cardiomyopathy (a stress-related heart attack without any blockage of the arteries as seen on an angiogram). What is the average age of a heart attack victim? (men and women) The majority of the patients with heart attack are older (great than 65 years of age) but up to one-quarter of them are below 65. What are the symptoms of a heart attack? Do men and women have different symptoms? Symptoms of a heart attack are: chest pain, usually dull, heavy, tightness or pressure, commonly described as “like an elephant sitting on the chest.” The sensation can go

up to the throat, neck and arm. This can be associated with shortness of breath, nausea, vomiting, sweating, feeling lightheaded or dizzy. These are the classic textbook symptoms but unfortunately quite often patients do not present with all these symptoms. Females tend to present with more atypical symptoms hence it can be harder to recognise the symptoms of a heart attack. What steps can people take to help prevent a heart attack? Have an active lifestyle, exercise regularly, meditate, have adequate rest, reduce stress levels, maintain the right body weight, eat healthy, seek medical advice if there are any symptoms and avoid making a selfdiagnosis by going on the internet. How can you tell the difference between heart burn and a heart attack? Heartburn is a burning chest pain, usually due to gastric reflux or ulcer but sometimes it can be very difficult to differentiate from angina or heart attack. So, if in doubt, seek medical attention. We are happy if it turns out to be not due to the heart but if it is due to the heart, then a patient can end up with serious consequences such as permanent heart muscle damage or even death. If you suspect you are having a heart attack, what should you do? If you suspect the symptoms are due to a heart attack, then call the ambulance. The number is 000 and not 911. Do not drive yourself or with anyone else.

A

shmore mum Sarah Hajduk was a fit and healthy 41-year-old when she suffered a heart attack. An avid swimmer and walker with a healthy BMI, good cholesterol and no family history of cardiovascular disease, Sarah says she is lucky to be alive – thanks to her first-aid knowledge, quick thinking and an expert medical team. “I woke up at 2am and felt a sharp pain in my chest,” the former flight attendant recalls. “I had pins and needles in the side of my left arm and I knew from my experience with first-aid training working in the airlines that I was having a heart attack. “My mum and my (four-year-old) daughter Michelle were asleep. I walked into mum’s room and said to mum: ‘Call an ambulance. I’m having a heart attack.’

“Mum was carrying on like a lost chook, but I kept very calm. It was like I was in a meditative state and I think it helped me to deal with it. “A special ambulance for heart attack patients came within five minutes. It’s like a four-wheel drive with heart equipment. “A lady put heart monitors on me. I had a shooting pain and I knew I was having a heart attack. It showed on the heart monitor. I was conscious the whole time. “I wish I could remember the ambulance lady’s name. She was amazing. I bumped into her down the track and she remembered me. She said she always will remember me because I was the same age as her. She was so shocked.” After life-saving treatment by the Pindara Private Hospital emergency team, Sarah was referred to Dr Shailesh Khatri.

“My main artery was 99 percent blocked and a stent was put in. I would have been caput if that didn’t happen.” Although Sarah doesn’t fit into the heart attack victim stereotype – a paunchy middle-aged man whose idea of exercise is lifting a drink from the nearest bar – she now realises that she had been lulled into a false sense of security. Now 46, Sarah believes relationship stress was a contributing factor to her heart attack and she is now warning others about the risks. “It’s a silent killer and it affects women of all ages, not just men,” she said. “Stress is related to female heart disease because women carry stress in their hearts. “I was going through a lot of full-on stuff, but I was living a healthy life. I wasn’t drinking or smoking, and I had excellent cholesterol. I was fairly fit and did a lot of walking and swimming, but I was under relationship stress.” “I did not look like your usual candidate for a heart attack. A lot of health professionals were very shocked by it.” Looking back, Sarah recalls feeling a little off-balance a week before the attack and she noticed white spots in her eyes. “I had these symptoms six months prior to my heart attack,” she said. “I would sometimes feel dizzy and would have to lie down. I would shut my eyes and it would go away after five or ten minutes. I had my eyes tested and they were fine. “A week before my heart attack, I felt a little off-balance and a little dizzy. I felt a slight pain near the heart area. “I went to a local GP and did a heart monitor test. The doctor said it wasn’t normal and I was told to come back in a week’s time.” Five years after her near-death experience, Sarah is spreading the message that heart disease isn’t just a men’s problem. In fact, it is the single biggest killer of Australian women and women are three times more likely to die from heart disease than breast cancer. Younger women – aged 25 to 45 – are still at risk. Although the risk of a heart attack climbs for men after age 45 and for women after age 55, women are up to three times as likely to die of their heart attack, which researchers believe is because both women

patients and medical staff are more likely to see the disease as a “male issue.” Researchers led by Dr Chris Gale of Leeds University and colleagues from Sweden’s Karolinska Institute analysed the outcomes of 180,368 patients who suffered a heart attack between the start of 2003 and the end of 2013. Looking at the gender of those who had heart attacks, as well as the age at which they were hospitalised, scientists calculated the “excess mortality” - the measure of how much a patient’s life has been cut short - for both, and found the figure was three times higher for women. While Sarah’s road to recovery isn’t without its bumps, she is embracing life and her work as a lifestyle support officer. “Having a heart attack can affect confidence and make you feel very tired,” she said. “Many heart attack survivors suffer depression. “It has been a long journey getting my strength back but I’m finally feeling healthy again. “I train three times a week. I’m concentrating on slow exercise, slowly working myself up to cardio. I usually do 10 minutes on the rower or bike followed by weights. I’m rebuilding all my strength and working on myself mentally through yoga and meditation. “Since my heart attack, I have a heart check every two years. I take cartia, which is a blood thinner, and I have my heart monitored as it can jump beats. I can feel it when it happens, but I just have to get on with things. “I have a great personal trainer, Kjae, and she is helping me to achieve my health goals. “In July, I am doing a fitness model competition for mums over 40 and Kjae is training me for that.” Sarah also credits her daughter Michelle, 9, their dog, Milo and her supportive friends and family for helping her get through the rough times. “Michelle is my rock and I love her to bits. Milo has been great as I go walking with him every day and he is great company.” In our fast-paced world of social media and a largely overworked population, Sarah said it was important to make a conscious effort to slow down.

“In our life now, it is 24/7,” she said. “We’re constantly busy and we never take time out for ourselves. “The biggest lesson I have learnt is just to have down time for you because you’re the most important person and if you don’t look after yourself, no one else can.” Sarah’s tips for a healthy heart: • Enjoy life and spend as much time as possible with friends and family. • Exercise moderately – don’t over-strain your heart. • Try to stay positive. • Watch comedies and surround yourself with positive friends and family. • Talk about your problems – don’t bottle it up. • Take part in yoga, meditation and walking. • Slow down and really appreciate the beauty that is around you. Take down time to relax and enjoy the little things in life, like going for bush walks and walks along the beach… just taking in nature and feeling the sand underneath your feet. By Lara Frawley

ustralians have improved their intake of quality protein-rich foods but are still falling short of the recommended daily amount. According to figures from the Australian Health Survey released by the Australian Bureau of Statistics, six out of seven Australians are not getting enough protein. While there has been an increase in consumption of lean meats and alternatives such as fish, eggs and tofu, only one in seven – or 14 percent of respondents – met the recommended daily serves on a regular basis. For most adults and children over nine years of age, the recommendation is 2.5 lean protein-rich serves each day but the figures showed the national average is 1.7 serves. Dietitian and author Susie Burrell said the figures show a positive trend towards leaner forms of protein but most Australians are still not getting enough and that can impact weight control. “Australian adults are very good at eating protein at dinner but often our breakfast and lunch choices are meals we pick up on the go and they can be carb heavy at the expense of protein. “Aiming for at least one protein-rich food such as eggs at each meal is the key to reaching daily protein targets. “Eggs are one of nature’s handiest whole food packages and they provide us with a very high-quality protein that contains all the essential amino acids. “Sometimes we think that natural whole foods are expensive or difficult to prepare but eggs are one of the most affordable grocery items and they can feature in so many simple meals.” Research by the CSIRO has found it is okay to eat eggs every day and higher egg consumption is associated with having a better quality diet. Recent studies have also shown the good cholesterol in egg yolks is a vital component of cell membranes and helps our bodies make Vitamin D and hormones.

“Eating an egg a day is an easy and healthy way to find that extra serve and reach the dietary guidelines,” Susie said. The ABS data showed adults were more likely to meet the recommend intake of good quality protein-rich foods than children (17 percent compared with 4.5 percent) and males were more likely than females (18 percent and 10 percent respectively). Signs you’re not getting enough protein • You’re frequently hungry If your meals leave you feeling hungry, you might need more protein in your diet. Feeling hungry every one to two hours might be a sign that you should add more protein to your diet. • You experience energy lulls A heavy training schedule combined with work or family can wear you down. You may feel tired during the day, and it can be hard to isolate exactly why. The answer might be not enough protein. • You’re struggling to recover from workouts If you’re following a training plan, you should have recovery days – and the occasional recovery week – built into your schedule. Recovery days might mean stretching followed by an easy run around flat roads. Whatever form it takes, you should feel refreshed after a recovery day. Protein intake is needed as part of a recovery nutrition protocol to help with restoration and repair of muscle tissue.

How to get more protein in your diet Tips from dietitian and author Susie Burrell 1. Start the day with a protein-rich breakfast to help control appetite through the morning. Good options that contain 20g of high quality protein include two eggs on wholegrain toast, Greek yoghurt with fruit or a protein-based smoothie. 2. Keep your protein-rich snacks on hand to grab in between meals when you are busy - good options include a handful of nuts, a hardboiled egg or Greek yoghurt and berries. 3. Bump up your protein intake at lunch by basing your meal around fish, chicken or eggs such as a frittata, tuna salad or chicken stir-fry. 4. Keep a good quality protein powder at home to add to your favourite baked goods or smoothies. 5. Aim for your last meal of the day to include a palm-sized serve of lean protein and lots of vegetables to support weight control. THE WORST SPORTS FOR YOUR KNEES BASKETBALL The constant running, jumping, falling and contact that are essential to the game can have a lasting effect on the knees. If you love the sport, work on preventative exercises to lower the odds of injury. If you notice that your knees crack and pop or become painful during exercise, work on foam rolling regularly. Foam rollers range between $20 and $50 and can be used to release tension and tightness between muscles, smooth and lengthen muscles, and break up adhesions and scar tissue. TENNIS Competition tennis, singles tennis and racquet ball can impact the knees. The short runs and quick pivots required to play racquet sports can result in serious injury if done for prolonged periods. LIFTING WEIGHTS Knee pain that is associated with weight lifting is often caused by squats and lunges. During squats, the back of the kneecap is subjected to 7.5 times more force than usual. Patellar tracking problems, tendinitis and chondromalacia patella can cause knee problems for weight lifters. Patellofemoral pain, also known as runner’s knee, refers to numerous conditions that cause pain around the anterior portion of the knee.

MOVEMENT 50 percent of age-related joint degeneration is thought to be related to disuse, so keep in mind the adage of use it or lose it. MUSCLE Maintaining muscle strength prevents abnormal and dyssynchronous joint movement, which leads to rapid, sometimes exponential joint degeneration, the same as in any mechanical setting. Maintaining muscle strength is imperative in reducing joint wear. MASS Excess body mass increases joint reaction forces, so try to keep to a healthy weight range. Be as fit and as healthy as you can while maintaining a happy and healthy lifestyle. MAINTENANCE Appropriate exercise is important, so run if you can; when you can’t run, walk; when you can’t walk, swim; when you can’t swim, cycle. At age 50 many people’s knees don’t like running but walking, swimming and cycling are effective substitutes. Finding a low impact exercise that works for you is the key. MERRIMENT All the above is much easier if it is done in a fun, friendly environment. There is a quote in the Christopher McCandless’s story, ‘Into the Wild’ that fits: “Happiness isn’t real unless it is shared.” So, organise yourself to be with a group of friends and find a common shared love of exercise or some form of energy-burning activity. ommonwealth Games medal contender Eloise Wellings (nee Poppett) is a woman on a mission. The 35-year-old mother and two-time Olympian is the fastest Australian woman over 10,000 metres in Olympic history and is the co-founder of Love Mercy, a foundation working to empower communities in Northern Uganda to overcome poverty. On the way to the Gold Coast, Eloise is championing the Love Millions Challenge, clocking up kilometres with the aim of reaching a combined 1,000,000 kilometres by the GC2018 Closing Ceremony on April 15. That’s further than running from the Earth to the moon and back. Every kilometre Eloise runs between now and the Commonwealth Games will help her Love Mercy team hit the 1,000,000km for the Millions Challenge. Businesses have committed to contributing funds at key milestones and Eloise is encouraging runners and walkers from around the world to join the initiative and add their kilometres to the cause. The foundation’s jewel is the Cents for Seeds program where Ugandan women receive a loan of $30 worth of seeds. They turn that into 150kg worth of crops, which they sell to buy other food, and to send their children to school. The budding entrepreneurs then return the original seeds and use the remaining to grow another crop and from there they become self-sustaining farmers. Love Mercy was founded in 2009 after Eloise met Ugandan runner, Julius Achon, a two-time Olympian, Ugandan team

captain and flag bearer at the Sydney 2000 Olympics. Julius was forced to be a child soldier when he was captured by rebels at age 12. One morning on a routine training run in Uganda, Julius literally stumbled upon 11 orphaned children living at a bus shelter. These children, who had been affected by Africa’s longest-running war, were without food, clothing, housing or education, with some of the children unable to remember their own names. From that day on, Julius took the children on as his own family. To date, the Love Mercy Foundation has funded almost 11,000 loans and aims to fund loans to 20,000 women by 2020. Distance running can be a lonely discipline and Eloise is grateful for the deeper purpose that the charity provides. “I think about Love Mercy all the time when I’m running,” Eloise said. “A lot of our meetings are over the phone when I’m running. They’re recovery runs. I wouldn’t take my phone to the track with me, but it’s definitely brought a deeper purpose to running.” Eloise’s Olympic dream started at a young age. She began to show promise as a middle and long-distance runner at age 10. Having qualified for the 2000 Olympics at

16 years old, she suffered a heartbreaking stress fracture, her first of 11, and was unable to compete at the Olympics in her own backyard. Eloise didn’t give up on her dream. Despite more injury setbacks and missing the 2004 Athens Olympics and 2008 Beijing Olympics, Eloise’s lifelong goal finally came true in 2012 when she represented Australia at the London Olympics in the 10,000m and 5000m track events, placing 21st and 23rd respectively. At the Rio Olympics, Eloise became the highest placed Australian female athlete in the history of the 10,000, finishing 10th in a personal best time of 31:14.94min. She followed her career-best result with a ninth placing in the 5000m final. Eloise burst into tears when she was told immediately after the 10,000m race that she had just become the fastest Australian woman in the history of the event. “I was just told that by Bruce McAvaney, which was ‘pretty special,’ in Bruce’s words. It made me burst into tears,” Eloise said after the race. GC2018 will be Eloise’s second home Games. She made her Commonwealth Games debut in Melbourne in 2006, placing fourth in the 5000m, and still considers it a career highlight. “The Melbourne Commonwealth Games was incredible,” she said. “I’ve been to two Olympics since then, but Melbourne was just amazing. It was incredible just running in front of a home crowd and having all my family and friends there. It was just a great stepping stone for the rest of my career as well.”

ver wondered why the relaxed, yoga-loving woman in the gym is smiling and slim, while you’re frantically turning over the bike pedals, stressed from juggling work, family and a muffin top that just won’t budge? Cortisone could be the culprit. Cortisol is the hormone we love to hate. Known as the stress hormone, scientists have known for years that elevated cortisol levels can contribute to weight gain, blood pressure, cholesterol and heart disease. It can also interfere with learning and memory, immune function and bone density. The adrenal glands, which are located at the top of the kidneys, produce the protective hormones, cortisol, DHEA, adrenaline and noradrenaline. They operate in the same way as shock absorbers in a car and help us bounce back from everyday stress. When we face a real or perceived stressor, these hormones allow glucose to be released from cells to power the heart and muscles to act. In huntergatherer times, it meant running away from danger.

Today, in the absence of physical danger, the body pumps out cortisol and glucose to power the muscles and help us run away to safety, but there is no running away, and that extra energy is felt as restlessness and irritability. Excessively high levels of adrenaline caused by stress may cause glucose overload, insomnia and heart damage. They decrease levels of the happy hormone, serotonin, and increase levels of fats in the blood. Healthy, balanced levels of cortisol help control blood sugar levels and blood pressure, regulate metabolism, reduce inflammation and ensure memory formation. W

hen Barbara looked through some family photos taken on a recent holiday, she felt a jolt. Despite the idyllic beach setting, all she could see was her stomach and what she describes as a generous muffin top spilling over her shorts. She was 48 years old, married with two teenage sons and working full-time as an accountant. During an appointment at my clinic, she told me she was fed up with always feeling tired and thought she might have chronic fatigue syndrome, a thyroid problem or the beginnings of menopause. Barbara said her weight was normal until she had children. From that time, she carried an additional 6-8 kilograms that she couldn’t shift, even though she exercised regularly and often starved herself. The more she exercised and starved, the more weight she seemed to gain. When I asked Barbara about her eating patterns, she said she ‘ate like a bird’ during the day, but for dinner she usually consumed more food than she should. She often drank two or three glasses of wine to wind down from her hectic day and would generally ‘hunt down’ some chocolate. When she went to bed, she felt exhausted but wired and she didn’t sleep soundly as she used to. When her alarm went off at 6am, she awoke annoyed with herself for overeating at dinner and for the chocolateeating frenzy, and headed to the gym. She loved taking the cycle class because it was loud and fast, and she pushed herself to burn off the calories ‘inhaled’ the previous night. After the gym, she raced to work. Barbara’s workday was filled with client meetings and regular deadlines. Because she was so busy during the day, she didn’t plan her meals and often grabbed a muffin and double-shot latte for breakfast, followed by a salad sandwich or smoothie and another double-shot latte. In the afternoon, she drank tea and snacked on a handful of naturally flavoured and coloured jelly snakes or jelly babies in the belief they were a healthier choice. Dinner was often based around pasta

because it was easy to make and her sons liked it. Even though she went to bed at the reasonable time of 10pm, Barbara only slept for around six hours. Lying in bed, she was in the habit of checking Facebook and responding to texts. This made her feel wired instead of tired. Barbara’s cortisol levels were three times the recommended level. I asked her if she lost weight when on holidays and she said she did. This is very common for people with cortisol overload – when their body is calm, they unintentionally lose weight. She didn’t use relaxation techniques and her poor nutrition choices caused her blood sugar levels to rise and become deposited as belly fat. Barbara’s high cortisol levels caused insulin resistance that put pressure on her thyroid hormones because changes in one hormone create a cascading effect. Barbara’s blood tests also revealed she was prediabetic. Having watched her mother and aunt become Type-2 diabetics in their mid-fifties, she was motivated to make some changes. MY ADVICE TO BARBARA My surprising advice to Barbara was to eat more food. But there was a catch. She needed to cut our processed foods and increase her intake of high-quality protein such as fish, grass-fed beef and free-range chicken, and of high-quality fats. Barbara also admitted to a ‘generous pour’ when serving wine, which meant she drank more than the standard 100ml drink size. I advised her to cut out alcohol during the rebalance. I also told Barbara that the exercise she was doing was counterproductive: she participated in ‘stationary bike rage’. After a frantic race to the gym, there was another race to secure a bike for the cycle class followed by 45 minutes of loud music and profuse sweating. This only served to increase her cortisol levels and prevent weight-loss.

BARBARA’S RESULTS Barbara balanced her calorie intake across the day by eating three meals and two protein-based snacks. Because she wasn’t hungry, she didn’t eat whatever food came across her path in the evening, and she didn’t need a big dinner because she was well nourished. She also worked on winding down before going to bed, and she banned her phone from the bedroom. She said this helped with her energy and concentration during the day. At 3pm, when she used to have a mid-afternoon slump and reach for lollies, she now grabs a handful of nuts to eat with her cup of tea. After 12 weeks, Barbara’s blood tests showed normal fasting insulin, glucose levels and cortisol levels. Her LDL (bad) cholesterol level dropped from 3.6 to 3.3. When she stepped on the scales measuring body composition, they revealed a reduction in weight, increase in muscle mass and greater cellular hydration. She said: “I like what I see in the mirror. simmer gently for 35-40 minutes, or until water is absorbed and rice just tender. 2: Remove saucepan from heat and stand for a few minutes, then fluff rice with a fork. Keep warm. 3: For the stir-fry: Place a wok or large frying pan over high heat. Add oil and when hot after one minute, add onion and cook for one minute. Add garlic, ginger and cook for one minute, until fragrant. Add chicken and cook for two minutes, stirring constantly, or until just golden brown. 4: Add mushrooms and cook for one to two minutes, tossing well, then add pak choy, separating the leaves, and cook until just wilted. 5: Add soy sauce, sweet chilli sauce and oyster sauce and toss to coat ingredients. MAKES APPROX. 15 SQUARES, 10MINS, 0 COOK INGREDIENTS 150g of butter (or coconut oil), melted 220g of sweetener (rice malt syrup or raw honey) 20g (or 4 tablespoons) of raw cacao powder 1 teaspoon of cinnamon powder 130g rolled oats 230g your choice of nuts and/or seeds 1 heaped tablespoon of chia or flaxseeds, preferably ground 80g desiccated or shredded coconut METHOD 1: In a small pot, combine the butter, sweetener, cacao and cinnamon over a low heat, stirring until combined (a few minutes). 2. For a tastier slice, toast the oats, seeds and

coconut in a large pan over a low heat for 5-10 minutes, stirring often (the coconut will colour). Or if you prefer, simply combine the dried ingredients raw. 3. Allow to cool a little (if you’ve chosen to toast) and process the dried mix to your preferred texture. Add the wet ingredients and mix together until well combined. 4. Use a big wet serving spoon to press firmly into a small slice tin lined with baking paper. 5. Place in the freezer for 10 minutes to set. 6. Once set, remove from the tin and cut into squares.

SALLY FITZGIBBONS Shares her Health Secrets

S

ally Fitzgibbons is one of the world’s best female surfers but there was a time when the 27-year-old’s career almost went down a different track. Sally was a champion middle distance athlete in her teenage years. After getting the taste of gold at the Youth Olympics in 2007 – winning the 800 and 1500 metres – Sally set her sights on representing Australia on the track. “Ever since I can remember I loved everything about the Olympics and Commonwealth Games,” she said. “In training I was always rounding that last bend on the track envisaging I was going for gold. I was infatuated with our Sydney Olympics and went as a 10-year-old to watch Cathy Freeman hold the weight of the nation on her shoulders as she ran the 400 metres of her life. “I can still feel the energy of that night, the roar of the crowd when Cathy crossed the line for gold. The whole of Australia had the utmost respect with what she had achieved. “After that night I wanted to be the next Cathy Freeman. I dreamt of becoming an Olympic gold medallist or a world champion at the age of eight and I told myself I’d stop at nothing to become the best athlete I could possibly be.” Sally played a lot of different sports when she was young, including surfing, soccer, touch football, cross country running and athletics. But it was on the athletics track that she showed the most promise. Sally trained under renowned track coach Ian Hatfield alongside Ryan Gregson who went on to represent Australia at the Olympics in the 1500m. Ian, a Level 4 coach in Wollongong, said Sally was unique. “You don’t come across too many like Sal in your career,” he said. “She did everything asked of her and was always on time. She just had that competitive spirit, fire in the belly. “I used to call her ‘The One More’. ‘One more’, she’d say at the end of the session, ‘just one more rep, Ian, just one more’.” While Sally’s athletics soared, she was also winning junior surf contests. She lived near the beach in Gerroa, 133km south of Sydney, and spent her childhood torn between the two sports.

In 2007, Sally qualified for the World Youth Athletics Championships, but it clashed with a surfing event. The two sports could no longer be juggled, and the surf beckoned. “She came and saw me, and I said, ‘Sal, you go for it mate, you’re going to do a lot better financially going surfing than in athletics and that’s a mere fact, that’s not knocking athletics,” Ian said. The lure of the ocean took hold. “I ended up chasing my world champion dream in my chosen sport of surfing,” Sally said. “I think the call of the ocean was too strong as I have lived less than 100 metres from the ocean my whole life.” Sally, who has her sights set on the world titles this year, has a holistic view on training. “I place a huge importance on balancing all elements in my own training to get the absolute best results both physically and mentally,” she said. “Whether it’s strength work in the gym, cardio sessions, mobility, core, stretching or meditation, I feel you need it all.” Sally has developed an app, The All Australian Beach Body, which includes two 12-week workout programs suited to people of all ages, abilities and sporting backgrounds. I like scrambled eggs to keep me fuelled through my morning surf sessions and the prawn stir-fry is nice and light for a night meal. What makes cooking so special? I like to cook for my family and friends and something I have started doing is writing little notes in the book of who I cooked the meal for and what we liked about it or how we might change it. I have only just started doing this, but it is already fun to flick through the pages and see which recipes I have done since Christmas.

Sally and Ian: A Special Bond Sally Fitzgibbons has maintained a close bond with her old athletics coach, Ian Hatfield. The pair often catch up when Sally is not overseas on the world professional surfing circuit. “When Sally is in town long enough, she’ll ring me and ask if she can come down and do a session with me,” Ian said. “There’s usually 40 athletes lining up wanting a photo or autograph and she’ll spend three-quarters of an hour talking to them. That’s the type of person she is. “I just bought Sally’s new book for my 15-year-old granddaughter because she is right into health and fitness.”

Coconut Scrambled Eggs with Asparagus on Toast SERVES 2

The key to cooking good scrambled eggs is to keep the temperature low and gently fold the eggs over themselves. The nutritional value here is bolstered with spinach and some roasted asparagus, which is high in immune-boosting antioxidants as well as potassium, folic acid and Vitamin C. INGREDIENTS 1 bunch asparagus, trimmed sea salt and freshly ground black pepper 2 tablespoons extra virgin olive oil 4 organic eggs 2 tablespoons coconut milk (or milk of your choice) pinch of chilli flakes 2 large handfuls of baby spinach 2 slices of sourdough toast METHOD Lay the asparagus spears on a baking tray, sprinkle with salt and pepper and drizzle with 1 tablespoon of the olive oil. Roast for 10 minutes or until tender. Meanwhile, whisk the eggs together with the milk until pale. Add the chilli flakes and a pinch of salt and pepper. Heat a frying pan over low heat and add the remaining olive oil. Pour in the egg mixture and place the spinach on top. Regularly and gently fold the eggs and spinach over themselves, until the egg starts to set but is still soft and the spinach wilts, about 5 minutes. Serve the eggs on the sourdough toast with the roast asparagus on the side.

BASE ⅔ cup almond meal ⅔ cup desiccated coconut 5 medjool dates, pitted 60g raw almonds pinch of sea salt ⅓ cup coconut oil, melted FILLING 1 ½ cups raw cashews 1 cup boiling water, plus extra for soaking 300g medjool dates, pitted 1 tablespoon maple syrup 75g coconut oil, melted 1 teaspoon pure vanilla extract pinch of sea salt TOPPING ⅓ cup raw cacao powder ½ cup coconut oil, melted 1 tablespoon maple syrup ½ teaspoon pure vanilla extract METHOD Line a 20 cm × 20 cm cake tin with baking paper. For the filling, place the cashews in a bowl and cover with boiling water. Set aside to soak while you prepare the base. To make the base, place all the ingredients except the coconut oil in a food processor and blend until you reach a sandy consistency,

about 1 minute. Remove the bowl from the food processor and pour over the coconut oil, then use a spoon or your hands to combine. Press the base firmly into the bottom of your tin, making sure there are no gaps. Place in the freezer while you prepare the filling. Drain the cashews and place in a small saucepan with the dates and boiling water. Bring to the boil, then reduce the heat and simmer, stirring constantly, for about 5 minutes or until all the water has evaporated and the dates are soft. Transfer the dates and cashews to the cleaned food processor, add all the other filling ingredients and blitz for 4-5 minutes, scraping down the edges as needed, until smooth and creamy. Allow the filling to cool for 5 minutes before spreading evenly over the base. Return to the freezer. To make the topping, combine all the ingredients and mix well. Allow to cool and thicken for 10 minutes, then pour over the filling. Return the slice to the freezer for 1 hour or the fridge for 3-4 hours to set. Use a hot, sharp knife to cut the slices into 4 cm squares. It will keep in the freezer for 1 week – if you can make it last that long!

Spicy Fish Tacos

These spicy fish tacos don’t get much easier, or much tastier! The lettuce cups make them light and gluten free but you could replace them with corn or wholegrain tortillas if you prefer. I love the spice from the jalapeno in this recipe, but feel free to discard the seeds if you don’t like yours too hot!

Where possible I recommend leaner breast meat rather than thigh for your chicken mince – just ask your butcher. If miso is a new ingredient for you, then welcome to the world of fermented goodness! Fermented products like miso help to keep up the healthy bacteria in our gut, which allows us to maximise digestion of all the nutrients in our food.

INGREDIENTS 2 teaspoons smoked paprika ½ teaspoon chilli flakes 200g flathead tails or firm white fish fillets, cut into strips 2 tablespoons extra virgin olive oil sea salt and freshly ground black pepper 1 corn cob, husk removed ⅛ red cabbage, shredded 2 radishes, trimmed and finely sliced 1 handful of coriander leaves, finely chopped juice of ½ lime 4 large cos lettuce leaves DRESSING 2 tablespoons coconut yoghurt (or yoghurt of your choice) juice of ½ lime ½ jalapeno chilli, finely diced METHOD On a plate, sprinkle the paprika and chilli flakes over the fish and add 1 tablespoon of the olive oil. Season with salt and pepper and turn to coat the fish well in the spices. Leave in the fridge while you prepare the salad. Set a steamer over a saucepan of simmering water. Place the corn cob in the steamer and lightly steam until just tender, about 2–3 minutes. Cool the corn under running water, then cut off the kernels. Combine the corn, cabbage, radish and coriander in a bowl. Add the remaining olive oil and the lime juice. To make the dressing, combine the ingredients in a small bowl and mix well. Heat a frying pan over medium–high heat and sear the fish for 1–2 minutes on each side or until just cooked through. Serve the salad in the lettuce cups, topped with the fish and the coconut yoghurt dressing.

INGREDIENTS ¼ packet (about 30 g) vermicelli noodles, broken into 2–3 cm lengths 1 teaspoon coconut oil 1 tablespoon grated fresh ginger 1 small lemongrass stalk, white part finely chopped 1 long red chilli, finely chopped and deseeded if you like, plus extra for garnish (optional) 1 clove garlic, finely chopped 200g chicken mince ½ carrot, peeled and grated 1 red capsicum, deseeded and diced 2 spring onions, chopped 1 handful of coriander leaves, chopped, plus extra for garnish 1 handful of mint leaves, chopped, plus extra for garnish juice of ½ lime 2 teaspoons tamari or soy sauce 2 teaspoons fish sauce 1 teaspoon honey

½ iceberg lettuce, separated into cups chopped unsalted peanuts or raw cashews, to serve (optional) SAUCE 2 teaspoons miso paste (light/shiro) 1½ tablespoons almond butter ½ teaspoon mirin ½ teaspoon apple cider vinegar 1–2 tablespoons hot water METHOD To make the sauce, place all the ingredients in a bowl and stir well until combined, adding more water, a teaspoon at a time, if needed. Fill a bowl with boiling water and soak the noodles for 5–10 minutes or until soft, then drain. Meanwhile, heat a frying pan over medium heat and add the coconut oil. Add the ginger, lemongrass, chilli and garlic and fry for 1–2 minutes. Add the chicken mince, breaking up any lumps and cook for 2–3 minutes until just browned, then add the carrot, capsicum, spring onion, herbs, lime juice, tamari or soy sauce, fish sauce and honey. Add the vermicelli noodles and cook for another 1–2 minutes. Fill each lettuce cup with the chicken noodle mixture and top with the sauce, extra herbs, nuts and extra chilli, if using.

INGREDIENTS 1 tablespoon rice bran oil 400g lean chicken tenderloins, chopped 2 teaspoons ground turmeric 1 teaspoon garam masala 2 cm piece ginger, finely grated 1 clove garlic, crushed 300g tomatoes, finely chopped 150g zucchini, finely chopped 150g carrot, finely chopped 320g drained and rinsed tinned lentils 1 litre salt-reduced chicken stock 150g silverbeet leaves, white stalks removed, shredded lime wedges, to serve ALMOND SPRINKLE 120g slivered almonds, toasted ¼ cup coriander sprigs 2 tablespoons chopped flat-leaf parsley

METHOD Heat the rice bran oil in a large saucepan over high heat. Add the chicken, turmeric, garam masala, ginger, garlic and tomato and cook, stirring occasionally, for 10 minutes or until the chicken is golden and the tomato has collapsed. Add the zucchini, carrot, lentils and stock. Cook, stirring occasionally, for 20 minutes or until the lentils are mushy and the stock has reduced by two-thirds. Stir in the silverbeet until wilted. Season to taste with freshly ground black pepper. To make the almond sprinkle, combine all the ingredients in a small bowl. Season to taste with freshly ground black pepper. Ladle the dhal into shallow bowls, top with the almond sprinkle and serve with lime wedges.

INGREDIENTS 200g silken tofu 4 eggs 220g ricotta 2 tablespoons thyme leaves 2 tablespoons chopped chives 600g yellow and green zucchini, cut with a vegetable peeler into long thin ribbons olive oil spray, for cooking 240g avocado, sliced ½ cup flat-leaf parsley leaves finely grated zest and juice of 1 lemon 40g pecans, toasted and roughly chopped

METHOD Preheat the oven to 200°C (180°C fan-forced). Line the base and sides of a 28 cm x 18 cm baking tin with baking paper. Process the tofu, eggs, ricotta, thyme and chives in a food processor until well combined. Season to taste with freshly ground black pepper. Pour the mixture into the prepared tin and level the surface. Tightly roll up each piece of zucchini and press it firmly into the ricotta mixture. Be sure to place the zucchini rolls close together in the tin. Spray lightly with olive oil and bake for 40 minutes or until set and golden. Rest in the tin for 5 minutes before removing. Carefully toss the avocado, parsley, lemon zest and juice and chopped pecans in a bowl. Season to taste with freshly ground black pepper. Slice the zucchini pie and serve with the salad.

Season to taste with freshly ground black pepper. With slightly damp

hands, divide the mixture into eight even portions and shape into flat patties. Place on a baking tray lined with baking paper and chill until required. To make the supergreen lentil salad, preheat a chargrill pan over high heat. Chargrill the zucchini and broccolini, turning occasionally, for 5 minutes or until tender and golden. Transfer to a bowl. Chargrill the kale, turning occasionally, for 1 minute or until crisp and golden. Add to the bowl with the other vegetables. Add the remaining ingredients and season to taste with freshly ground black pepper, then toss well to combine. Set aside until ready to serve. Heat the rice bran oil in a large frying pan over mediumhigh heat. Cook the patties, turning occasionally, for 10 minutes or until cooked and golden. Serve the patties with the supergreen lentil salad.

MAKE IT PORTABLE: Cool the patties completely and wrap tightly before transporting or transfer to airtight container/s. Place the salad in a separate airtight container. Keep chilled. Add the beans and celeriac and cook, stirring occasionally, for 10 minutes or until cooked and golden. Stir in the spinach, lemon zest and lemon juice and cook until wilted. Remove the pan from the heat and stir in the pine nuts. Season to taste with freshly ground black pepper. Serve the tuna bake with the lemony greens.

Tarragon Chicken, Ham and Leek Pie SERVES 4 INGREDIENTS 1 tbsp coconut oil 4 skinless chicken breast fillets, cut into 2cm dice 2 leeks, trimmed and thinly sliced 200g lean, thick-cut ham, cut into 1cm dice 1 x 300ml tub fresh chicken gravy 1 tbsp cornflour mixed with 1 tbsp water 1 tbsp tarragon leaves, finely chopped 1 tbsp wholegrain mustard 100ml double cream 4 sheets of filo pastry a little olive oil, for brushing (optional) steamed greens, to serve 1 tablespoon onion powder 1 tablespoon garlic powder 1 tablespoon smoked paprika

METHOD Preheat the oven to 200ºC (fan 180ºC/gas mark 6). Melt the oil in a medium saucepan over a medium heat. Slide the chicken pieces into the pan. Fry gently for 2 minutes, then add the leeks and stir-fry for another 5 minutes until the chicken is cooked. Check by slicing into it to make sure the meat is white all the way through with no raw pink bits left. Stir the ham and chicken gravy into the pan and bring to the boil. Stir in the cornflour mixture and chuck in the tarragon, mustard and cream. Bring the whole lot to the boil, then turn down the heat and simmer for 5 minutes, or until thickened. Spoon the chicken filling into a medium ovenproof pie dish or four individual pie dishes. Cut the filo pastry into strips and scrunch them up slightly, then place them on top of the filling to cover it. Lightly brush the top of the pastry with olive oil, if using. Bake in the oven for 10–12 minutes, until the sauce is bubbling and the filo pastry is crisp and golden brown. Serve with steamed greens of your choice.

Beef, Shiitake and Spring Onion Risotto SERVES 1

INGREDIENTS ½ tbsp coconut oil 225g extra-lean beef steak mince 5 shiitake mushrooms, sliced ½ red pepper, de-seeded and finely diced 2 cloves garlic, crushed 1 tsp finely grated ginger 4 spring onions, finely sliced 100ml boiling hot beef or chicken stock 250g pre-cooked basmati rice 2 tbsp light soy sauce 1 tsp sesame oil large handful of coriander, finely chopped salt and pepper 1 tsp finely diced red chilli, for garnish METHOD Melt the oil in a wide non-stick frying pan over a high heat. Add the beef and stir and cook for 4–5 minutes, or until browned. Add the mushrooms, red pepper, garlic, ginger and spring onions and stir and cook for 3–4 minutes or until the mushrooms are tender. Stir in the stock and rice and stir and cook for 3–4 minutes, or until piping hot. Stir in the soy sauce and sesame oil, remove from the heat and stir in the coriander. Chicken Saltimbocca with Spinach SERVES 1

INGREDIENTS 1 x 180–200g skinless chicken breast fillet salt and pepper 1 tsp dried sage 1 tbsp coconut oil 300g red or yellow cherry tomatoes, halved 30g baby spinach leaves 2 cloves garlic, finely chopped 1–2 slices parma ham 30g pizza mozzarella cheese, grated 1 tbsp flat-leaf parsley, finely chopped

Turkish-style Eggs with Roasted Peppers and Yoghurt SERVES 1 INGREDIENTS 100g Greek-style yoghurt 1 clove garlic, crushed 1 tsp finely grated lemon zest 1 tsp lemon juice salt and pepper 100g baby spinach leaves 1 tbsp olive oil 2 jarred red peppers, roughly chopped 2 medium eggs 1 tbsp unsalted butter ½ tsp dried aleppo or dried red chilli flakes ½ tsp sweet smoked paprika 1 tbsp mint leaves (optional)

METHOD Mix the yoghurt, garlic, lemon zest and juice in a small bowl, season and set aside. Wilt the spinach in a saucepan of boiling water for 1 minute. Drain the spinach, squeeze out the excess water and season. Warm the oil in a 14cm nonstick frying pan over a medium heat. Add the spinach to the pan with the chopped peppers, spreading them evenly over the base. Make two wells in the mixture and crack an egg into each. Cook for 5–6 minutes, so that the yolks are still soft, covering the pan with a lid for the last 2 minutes to set the whites. In a small pan, heat the butter until foaming. Swirl in the aleppo or chilli flakes, paprika and a pinch of salt and cook for a couple of seconds, then take off the heat. Drizzle the yoghurt mixture over the eggs, then top with the chilli butter and serve, scattered with the mint leaves, if using.

METHOD Place the chicken between two pieces of cling film, and using a rolling pin or wooden mallet, lightly beat until about 1cm thick. Season well and sprinkle over the sage. Melt half of the oil in a non-stick frying pan. Add the chicken and cook for 2–3 minutes. Flip the chicken and continue searing until the other side is browned and the chicken is cooked through, about 2–3 minutes. Check by slicing into it to make sure the meat is white all the way through, with no raw pink bits left. Transfer the chicken to a plate and cover with tin foil. Lower the heat to medium and melt the remaining oil. Add the tomatoes, season well, and stir-fry for 1–2 minutes. Stir in the spinach and garlic and cook until just wilted, about 2 minutes. Remove the frying pan from the heat. Preheat the grill to high. Place the chicken on top of the vegetables. Scrunch the parma ham over the top of the chicken, then sprinkle over the cheese. Place the pan under the grill and cook for 45–50 seconds, until the cheese is melted and bubbling. Serve topped with the chopped parsley.

DRESSING 3 tablespoons extra virgin olive oil 1 tablespoon lemon juice 1 tablespoon sweetener (maple syrup, honey or rice malt syrup) Flesh squeezed from baked clove garlic Sea salt and pepper, to taste METHOD • Preheat oven to 180°C. • In a small pot combine the ghee, butter or coconut oil, syrup, cinnamon and seasoning over a low heat unit the fat has melted and ingredients combined. • Place the sweet potato, almonds and the whole garlic clove in a baking dish and pour over the above mixture, tossing to coat the sweet potato and almonds well. Arrange in a single layer and bake for 20-30 minutes until the sweet potato is just cooked through. • Now prepare your chickpeas. Without rinsing the small pot, add the ghee, butter or coconut oil and heat gently to melt. Now add the chickpeas, spices and

Cleansing Thai Soup

Creamy Chicken Cauliflower Curry

This soup is my all-time ‘cleansing high’. Chillies are a ‘thermogenic’ food that help to boost your metabolic rate without exercise. How good is that?

The protein in this comforting curry satisfies the appetite and the spicy sauce will make your tastebuds dance. Cauliflower is one of the best allnatural detoxifiers.

INGREDIENTS 4 x 150g skinless chicken breast fillets 3 cups vegetable stock (ideally homemade, but if store-bought ensure it is MSG free) 3 cups water 2 tablespoons grated ginger 2 garlic cloves, crushed 2 tablespoons tamari 2 bird’s eye chillies, seeded and finely chopped 2 bunches bok choy 1 red capsicum, seeded and thinly sliced 4 spring onions, white part only, thinly sliced ½ cup coriander leaves

INGREDIENTS 4 x 150g skinless chicken breast fillets 2 teaspoons virgin coconut oil 4 spring onions, white part only, finely chopped 1 head cauliflower, finely chopped 2 ½ tablespoons coconut cream (optional) pinch of sea salt lemon juice, to taste steamed brown rice, to serve (optional) coriander leaves, to garnish

METHOD Combine the chicken, stock, water, ginger, garlic, tamari and chilli in a large saucepan. Cover and bring to the boil over high heat, then reduce the heat and simmer, covered, for 10–15 minutes or until the chicken is cooked through. Remove the chicken from the stock. Cover and keep warm. Return the stock to the heat, stir in the bok choy and capsicum and simmer until the vegetables are just tender. Thickly slice the chicken across the grain. Divide the broth and vegetables among serving bowls and top with the chicken. Garnish with the spring onion and coriander and serve.

SAUCE 4cm piece of ginger, peeled, roughly chopped 4cm piece of turmeric, peeled, roughly chopped 2 teaspoons ground cumin ½ teaspoon cayenne pepper 2 pieces preserved lemon rind, finely chopped, or finely grated zest of 1 lemon 1 ½ cups coconut cream pinch of sea salt

METHOD To make the sauce, put all the ingredients in a blender and purée until smooth. Place the chicken breasts in a glass or ceramic dish and pour half the sauce evenly over the top. Leave to marinate for at least 15 minutes. Preheat the oven to 180°C. Tear off four large squares of foil and line with similar-sized squares of baking paper. Place one marinated chicken breast on each square, then fold over all sides of the foil to seal it in a parcel. Place the parcels on a baking tray and bake for 25-30 minutes or until the chicken is cooked through. Remove from the oven and set aside. Meanwhile, heat the coconut oil in a large frying pan over medium heat. Add the spring onion and cauliflower and cook for 2-3 minutes, then stir in the remaining sauce. Simmer for 15 minutes or until the cauliflower is cooked but still firm, adding the coconut cream or a splash of water if the sauce is too thick. Season to taste with salt and lemon juice. Spoon the cauliflower and rice (if using) onto four plates and add a chicken breast to each. Garnish with coriander and serve.

id you know skin cancer is the number one cancer in Australia? It claims and disfigures so many Australian lives every year. All of us will be affected by skin cancer at some time in our lives and two out of three Australians will get a skin cancer by the time they are 70. If you’re an adult, most of the damage was done when we were kids and teenagers. The consequences haunt us long after the togs have been thrown aside. I remember the reef oil in every flavour accompanying me to the beach with no shade in sight. It was the 80’s so hats weren’t that cool either.

The competition to get the best tan was the priority in those days. I have had three basal cell carcinomas removed, including two from my face unfortunately. My sister at the age of 30 had a melanoma removed from her arm. Luckily, she caught it in time. It’s time to get serious. Here is your sun safety check list: • Stay out of the sun • Use a natural sunscreen. Your skin absorbs much of what’s put on it so avoid toxic ingredients • Get your car tinted • Get regular skin checks • Wear sunnies, hat and light clothing • Check your mate’s back Dogs get skin cancer too

Keep your dogs out of the sun! I hate seeing dogs exposed to the sun in the back of utes. My dog had melanoma and almost died. We are all too casual when we think of the sun. It is indeed very dangerous.

Australia – our sunburnt country In Australia, skin cancers account for around 80 percent of all newly diagnosed cancers. The majority of skin cancers are caused by exposure to the sun. GPs have over one million patient consultations per year for skin cancer. In Australia, the incidence of skin cancer is one of the highest in the world, two to three times the rates in Canada, the US and the UK. Sunburn causes 95 percent of melanomas Melanomas are the deadliest form of skin cancer. In Australia, one in eight adults and one in five teenagers are sunburnt on an average summer weekend. Many people get sunburnt when they are taking part in water sports and activities at the beach or a pool, as well gardening or having a barbeque. Most people don’t apply enough sunscreen or reapply it often enough. Sunscreen alone is NOT enough defense against the great fire ball! Seriously, slip, slop, slap and stay safe in the sun.

p to 30 percent of seniors are malnourished or at risk of malnutrition, according to a leading dietitian. Ngaire Hobbins, author of Nutrition for Seniors, said nutritional needs change with age and many seniors are not aware of the risks. “Research has found that up to 30 percent of older people living in the community are either malnourished or at risk of malnutrition,” she said. “This is not their fault. It is often a consequence of our lack of awareness that the nutrition needs of seniors are unique and eating must change with age to support physical and mental capacity. “It can also be partly a consequence of social isolation and/or reduced physical/cognitive capacity, which is where the invaluable support of home and community care services such as Home Instead Senior Care comes to the fore.” Ngaire has shared the top 10 myths when it comes to nutrition for seniors. 1) Your stomach shrinks as you age: Although your appetite may change, your stomach doesn’t shrink when you get older. In fact, not eating well accelerates the ageing process. 2) Weight-loss is healthy: Dieting or unintentional weight-loss should be avoided in the later years. A bit of extra padding in later life is beneficial to support your body and brain in the years ahead. 3) You need to eat less as you get older: While your metabolism slows, and energy output decreases, food and eating is what protects and fuels you and is your key to ageing well. 4) You only need to eat what you feel like: The ageing process can play tricks on our appetite and the triggers that tell us if we are hungry or full. An outright loss of appetite is not normal and could be symptomatic or an underlying health problem. If you are having problems, try to eat small meals regularly throughout the day, even if you don’t always feel like it. 5) You should follow a low-fat diet: A low-fat diet is not advisable, especially for older people. Some seniors might need to eat a bit extra to maintain weight. For most, however, eating foods containing mostly unsaturated fats is best for heart, body and brain health. Fats found in foods such as olive oil, nuts, seeds, avocado and oily fish are ideal. 6) You need to eat more vegetables: While nutrient-rich vegetables continue to be an essential part of any diet, protein

foods need to be at the centre of your plate. That’s because you need more, not less, protein as you get older. Protein keeps muscles, the immune system, body organs and brain, working and renewing minute by minute. 7) Only drink water when you’re thirsty: If you feel thirsty you are already a bit dehydrated and that’s a problem as neither your body nor brain can work at peak capacity if you are dehydrated. Dehydration can bring on confusion and delirium. It can also hamper kidney function and worsens a multitude of other conditions that commonly affect older people. 8) Supplements are sufficient: We can’t live off vitamins and supplements alone. The body works best when it is working. That means eating and digesting food. What’s more, most supplements promoted to help you live longer, boost memory, fight off dementia and more, fail to live up to their claims. And there’s another problem – many interact with common medications or just don’t work the way they would if you ate them in the food they originally came from. 9) You must always eat a ‘proper meal’: Eating regularly is essential at any age. Eating three full meals a day can be a struggle if you have a loss of appetite or find cooking too difficult or timeconsuming. If three good meals are too much of a challenge, five or six small meals or well-chosen snacks can be just as beneficial. The saying, ‘making good choices’ still rings true with old age – just make sure the ‘something’ you do eat is nutritious. 10) Malnutrition is a normal part of the ageing process: Malnutrition can affect anyone, at any age, and is not a normal part of the ageing process. However, seniors are at greater risk of malnutrition and it’s important that you don’t dismiss the warning signs as being part of ‘old age’. Bringing a pop of colour and style to Broadbeach, the Oracle Boulevard event involved a culinary tour of the iconic street’s most popular restaurants, including Mamasan, Mecca Bah and The Cuban. Starting at Mamasan, guests enjoyed Chandon S, ocean trout sashimi and crispy prawn wontons. Next stop was the Mecca Bar for spicy lamb and pine nut boureks and a cocktail made by Geoff Martin from San Pellegrino. Geoff added a Valentine’s sparkle with the refreshing combination of vodka, orange and pomegranate. The vibe continued at The Cuban with live music by Nik Conomos, while guests enjoyed a main course of ‘Ropa Vieja’, one of Cuba’s most popular and beloved dishes featuring shredded beef with garlic, capsicum, blackbean rice and tostones. The Long Red Lunch culminated with mojito cheesecake, while the ladies were treated to The Pass Sauvignon Blanc and Hesketh Chardonnay Pinot Noir sparkling. Hosted by Hot Tomato’s Olivia Scott, the fashion parade showcased Element by Talia Munroe, Sunburn and D2 for men as well as massages from Endota Spa. Goodie bags were valued at over $400 and included age-defying Nerium cream and Eco Tan. More than $4,000 was raised for the Gold Coast Community Fund.

Queen Lucy Celebrates 18 years in real estate Lucy Cole and her team put on a gala night at the new HOTA amphitheatre to celebrate nearly two decades in Gold Coast real estate. A three-time winner of the REIQ ‘Salesperson of the Year’ award, Lucy is widely recognised as a pillar of the property industry. “Everyone dressed in their finest, enjoyed cocktails and canapes accompanied by a Latin salsa band and, to close the evening, a fireworks display,” said Lucy. “It was a big thank you night.
