ast issue we introduced you to a group of SLIM readers who had taken on the challenge of being part of our reader training team. These determined women have spent the past six months training towards competing in the 2015 Gold Coast Airport Marathon. It hasn’t been an easy journey, but with hard work and determination, the girls have now crossed the finish line and exceeded all their expectations.

Skye Hamilton, 37

ALSCO Fresh and Clean Sales Executive, Main Beach Skye says she signed on for the SLIM training team to challenge herself, to tone up and close a massive weight-loss journey for her prior to this. Never having run before Skye says she was “… very unfit and lazy”, but that is no longer the case. Training as part of the team proved difficult for Skye with her other commitments, but rather than give up, she hired a personal trainer so she could stay on track and cross the finish line with her teammates. “I am fitter than ever,” Skye says. “I currently train at the gym five days a week and have a personal trainer, Tas, for an hour twice a week. This challenge has taught me that strength is important. I no longer care about my weight, I just focus on improving the shape of my body.”

Rochelle Bridge, 34

Owner of LonVitalite Skincare, Hope Island Having never run any distances before, Rochelle signed up with the SLIM training team so she could make positive changes in her life. With her never-give-up attitude and positive outlook, she has certainly done that. “It was challenging fitting training in around a start-up business and raising three young children,” Rochelle says. “But I have lost eight kilos, and am building my fitness up. “This process has taught me that you have to push through – when you think you don’t have anything left, just keep pushing.” Marketing manager, Runaway Bay Selena says she joined the SLIM training team to “… get off the couch and get fit and healthy again.” Having never run before, Selena says her fitness level was “… average, to say the least”. A stress fracture in her ankle set Selena back, but didn’t stop her. “The most challenging part of the process has been that injury. Although injured I have still maintained my healthy eating, so I still feel good and have lost 10kg since I started.”

Nurse, photographer and mum, Main Beach Lexi says she signed up to the SLIM training team to break the cycle of bad habits she was in that left her “… unconditioned, untoned and lacking energy”. “I really enjoyed the early morning group training sessions because it was so far from my comfort zone and something I've never done before. Watching the girls all dig so deep made me push even harder,” Lexi says. “The biggest challenge for me was simply finding the time to train and keep energy levels up while working long days and still caring for the family. “This training has taught me that I'm capable of much more that I think I am. I'm truly amazed with the right mindset what I can do.”

Marketing and Functions manager and owner of Sensationally Sweet Events, Ashmore Before signing on to the SLIM training team, Justine knew she needed to do something to turn her life around. “I was overweight, stressed all the time and suffering panic attacks. I was the heaviest I’d ever been and just getting heavier and more unhappy.” What a difference a few months and a lot of hard work can make. “I have lost 13kg, two dress sizes and over 65cm from all over my body,” Justine says. “My stress levels are way down and I can now run 10km without stopping. I still have weight-loss goals to achieve and I plan to reach those by September. “Being accountable to the other girls in the team made it easier; the support from the other women was really encouraging. I also have a personal trainer, Amy Fifita, who I credit my success to. Our expert contributor, weight-loss surgery specialist Dr Jason Free, answers readers’ most commonly asked weight-loss questions.

#1 I have been dieting for years, why have I not lost weight? JF: This could be attributed to a variety of reasons, and without knowing a person’s history and specifics I couldn’t say precisely, however there are general reasons which may be applicable. One such reason is our body’s ‘starvation mode’ which is discussed a lot, but often misunderstood. The human body has evolved over thousands of years to survive long periods of starvation. Scientific evidence increasingly points to the problem that confronts dieters: cutting out calories changes your metabolism and brain, so your body hoards fat and your mind magnifies food cravings into an obsession. The human frame contains about ten times more fat-storing cells relative to body weight than most animals - even hibernating polar bears, which have to endure long periods when food is unavailable. Our calorie-hoarding bodies have evolved strong mechanisms to stop weight-loss, but weak systems for preventing weight-gain. If you manage to lose 10 percent of your weight, your body thinks there’s an emergency, so it burns less fuel by slowing your metabolism. It is a very real factor that must be taken into account with any weight-management program.

#2 Who is eligible for weight-loss surgery? JF: There is a misconception that only morbidly obese people are eligible for weight-loss surgery, but this is not the case. More and more people who are overweight, but not clinically obese, are choosing weight-loss surgery as a preventative measure to ensure their persistently increasing weight does not get any more out of hand. If your BMI is over 40, or you have a BMI over 35 with associated obesity related disorders (such as high blood pressure, diabetes, high cholesterol, sleep apnoea, arthritis) the Australian National Health and Medical Research Council recommends you have weight-loss surgery. Some people who have had certain procedures on their gastrointestinal system may be unable to have certain types of weight-loss operations, and some medical disorders make the procedures extremely dangerous.

#3 Is being overweight really such a problem? JF: Quite simply, yes. There are a host of physical and emotional burdens being overweight puts on the shoulders of the person in question and society as a whole. Being overweight and obese greatly increases your susceptibility to coronary heart disease with the build-up in the arteries preventing oxygenated blood from reaching the heart as well as high blood pressure and your chances of a stroke. There is also an increased risk of Osteoarthritis, certain kinds of cancer, gallstones, reproductive issues, sleep apnoea and abnormal blood fats. But perhaps the greatest risk and one reaching epidemic proportions is Type 2 diabetes, which affects more than 10 percent of adults in this country – most of them overweight or obese. These conditions are almost always improved or completely resolved with significant weight-loss. In fact, there is well established evidence that after weight-loss surgery your health dramatically improves.

#4 Surely anyone can lose weight if they really want to. Aren’t overweight people just lacking in will power? JF: Many people seem to have little sympathy for people whose weight we perceive is a direct result of their indulgence, but research tells us that obesity is a mental illness and the reality is that compassion is called for when regarding the emotional and physical issues that are a way of life for overweight adults and children. Feelings of shame, rejection, low self-esteem and depression are common in obese adults. Despite its prevalence, being overweight still carries a social stigma leading to anxiety about leaving the house and a deep desperate loneliness. Activities we take for granted – going to the movies, public transport, and holiday travel - are often impossible for overweight people because of small seats and unsuitable accommodation. In work situations overweight people are generally labelled as being sloppy, lazy, devoid of self-discipline and morally weak with studies showing that more often than not overweight people are discriminated against when it comes to advancement despite their job competency. It is a vicious circle. Many people turn to food for comfort. This stress-based eating leads to weight-gain which in turn makes people feel bad about themselves which of course leads to more eating. Studies show that the vast majority of obese people may have short term success with dieting however fail to have long term effective reduction in weight. In these patients surgical weight-loss has been shown to have a much more dramatic effect than conservative measures and drastically improve the quality of life.

How do I know if I am overweight? JF: The best way to measure your weight is through the Body Mass Index (BMI), a weight for height measure most commonly used to test for healthy weight range. It is defined by a person’s weight in kilograms divided by the square of his height in metres. A BMI of 25 or greater is regarded as overweight and a BMI of 30 or over equals obesity. This test is a guide rather than an absolute as it does not take in the amount of actual fat in the body. There are plenty of online BMI calculators, or if you have a head for numbers, the formula is: Your weight in kilograms ÷ (your height in metres x your height in metres) = BMI. For example, 60 kilograms ÷ (1.65 metres x 1.65 metres) = 22.03.

#5 Does weight-loss surgery actually curb your appetite or just make your stomach smaller? JF: Both. Most people are aware that weight-loss surgery will remove a large part of the stomach – usually at least 80 percent. The portion of the stomach that is left, serves as the patient’s new stomach. Obviously it is much smaller in size, and therefore takes much less food to fill, and as a result fewer calories are consumed, and weight-loss results. But that is not the whole story. the two of us Pam Williamson and her husband Geoff have been given a new lease on life, thanks to Sleeve Gastrectomy surgery.

H

ealth, family and happiness have always been what is most important to Pam and Geoff Williamson. Unfortunately, over the years, their health had not been all it could be. A lifetime of shift work had led Pam to develop unhealthy eating habits and subsequent weight-gain which was impacting on her wellbeing. “I was on blood pressure medication and I just wasn’t fit and healthy,” Pam says. “I couldn’t get out and do all of the things I wanted to. “Over the years I had tried a number of diets and programs. And I have already lost over 20 kilos in three months. It has completely changed my life.” Just three weeks after Pam’s life-changing surgery, Geoff underwent the same procedure. His results have been outstanding too. “I feel completely different now,” says Geoff, who has lost over 15 kilos since his surgery. “My overall health is greatly improved and my specialist is very happy with how I am travelling – it’s difficult to say definitively, but I believe this weight-loss surgery has helped me fight the cancer. My specialist is really thrilled with my results.” Dr Free says he is overjoyed at the results both Pam and Geoff have seen, and follows up with the couple to track their progress. Weight-loss surgery options #1 Gastric Bypass

What it is: The upper part of the stomach is divided and the small intestine is attached to it so that food bypasses most of the stomach and upper small intestine where the digestive juices are formed. What this means in practice is that the amount of food you can eat is dramatically reduced. Who it suits: A high number of patients but particularly those who have health conditions such as diabetes, high triglycerides or cholesterol or reflux disease. What to expect: Robust long term weight-loss and improvements in diabetes and metabolic syndrome. Some diabetic patients are able to eliminate all diabetic medications within days or even hours of the operation. It is also extremely effective at treating gastrointestinal reflux. Downside: While there is a slightly decreased absorption of fat and carbohydrates, there is minimal chance of developing deficiencies. It is important, however, to have long-term follow up with your surgeon.

#2 Sleeve Gastrectomy

What it is: A resection of about 85-90 percent of the stomach, leaving only a 15mm tube of stomach and decreasing the amount of food that can be eaten. Who it suits: This procedure can suit most people, especially younger obese patients. It is also a common choice for super obese patients as a first step procedure leading to a gastric bypass later. What to expect: Extremely good, rapid weight-loss. In fact, expect to see about 70 percent reduction in excess weight. Most people say their appetite is reduced after this surgery. Another benefit is that there are minimal long-term problems with this type of procedure. Downside: You should be aware that this procedure is irreversible since, in effect, a large amount of the stomach is permanently removed.

#3 Adjustable Gastric Banding

What it is: A band is placed around the upper part of the stomach to create a small pouch which restricts the intake of food to varying degrees. It is intended to provide a feeling of fullness. The benefit of this procedure is that the stomach is not removed or stapled, it is completely reversible. Who it suits: Again suitable for most people but commonly those who do not want a more invasive procedure, patients at high risk for other procedures, those who understand the commitment to band maintenance and eating habits. What to expect: Minimal invasion compared to other procedures and very satisfying weight-loss. Downside: Achieving the correct amount of restriction is a fine-tuning process to maintain adequate weight-loss without causing too much restriction and leading to problems and a poor quality of life. You will need to work with the surgeon to adjust the band to vary the amount of restriction until a perfect level is achieved and be committed to the process.

#4 Revisional Bariatric Surgery

What it is: This is the correction of a gastric band to make it work better. Can also be a conversion from a gastric band or sleeve gastrectomy to a gastric bypass. Who it suits: Some patients who have already undergone gastric banding might be unsatisfied. Some have problems such as reflux or regurgitation that affect the quality of their life; others may have insufficient weight-loss following prior gastric band and sleeve gastrectomy. Revisional banding can help address these problems. What to expect: There is evidence that a gastric bypass after a band provides better and more sustained weight-loss as well as improved food tolerance and quality of life relative to conversion to a sleeve gastrectomy. Simply removing a gastric band will alleviate problematic symptoms a patient may experience due to the band, a conversion to another procedure will prevent weight regain after the band is removed. Downside: Revisional surgery involves correcting a previous procedure, thus necessitates more surgery, however the benefit of lifestyle improvement generally outweighs the risks.

At 51, after many years of fluctuating weight, Anne Stephen underwent a sleeve gastrectomy, a procedure she says has completely changed her life.

A

nne Stephen had spent most of her life being fit and healthy. Then, three pregnancies and a serious biking accident saw her weight – and her life – change dramatically. “I was a tall, solid girl as a teenager, but never overweight. I joined the Australian Army at 21 years of age in 1985 and had my first child at 26. I managed to get back to a nice weight afterwards through training in the military. “During my second pregnancy I gained a lot of weight, then six weeks after my son’s birth I had a bike accident resulting in a severe compound fracture which left me unable to use my left arm for nearly two years. I never really got my weight under control before I was pregnant with my third child. “I was over 120 kilos when my son was born (20 years ago) and I have struggled with my weight since then. My weight fluctuated a lot over the next 10 years. Being in the Army helped me maintain my weight to a degree as physical training was mandatory, however it was not easy and I was always dieting. “I was deployed to Iraq in 2003 and lost a lot of weight, largely due to eating military rations and the large workload (I got down to 75 kilos – called the ‘go on active service diet’, not recommended for everyone). I discharged from the Army in 2012 due to my injuries and have struggled with my weight ever since.” Anne says the constant focus on her weight became an emotional burden. “I was never happy overweight,” she says. “I was depressed and didn’t like shopping for special events. I would nearly starve myself for months before any big occasion or family gathering so I could look half decent.” “I was quite upset with myself for not being able to manage my weight and often clashed with my husband in relation to my excessive food intake.” 30 slim magazine winter 2015

By chance, a girlfriend of Anne’s underwent a sleeve gastrectomy which prompted Anne to look into that option for herself. It was then that she met Dr Jason Free. “When I saw Dr Free he was fantastic,” Anne says. “I wasn’t the heaviest client he had ever had, but due to my military injuries my body was not coping with my weight and he agreed to the surgery. “Once I had undergone the surgery, I spent a couple of days in hospital and then I was home and fine. I didn’t push myself. As I am retired I was in no hurry to rush back to work or to start doing anything out of the ordinary too fast.” At the time of going to print, Anne has already lost well over 20 kilos, with the weight continuing to come off. Anne says the entire process has been easier than she thought. “Since surgery my biggest problem was knowing how much food and the sort of food to eat to keep my energy levels up. If I did not eat the right food I found I didn’t have the energy that I needed to get through the day.” These challenges and learning curves are, Anne says, a very small price to pay for the new lease on life she has been given as a result of the weight-loss. “Since the surgery my life has changed for the better,” she says. “I am so much more mobile and my body is not giving me as much pain as before. “I am wearing clothes that I haven’t worn for a long time and am not embarrassed by what I look like. My husband is happy, and we agree that skinny sex is better than fat sex! “I eat when and what I want, it’s just the portion sizes that are different, as you can’t over eat. I don’t deny myself anything, which is what I have done for the past twenty years. Having this operation has definitely been a changing point in my life.”

lle Macpherson’s modelling career began with a lost bet; a friend bet her $20 that a modelling agency wouldn’t take her on. Elle took the bet, and the rest is history. I don’t really enjoy the gym so I just make sure I move my body for at least 45 minutes a day doing something I love – most outdoor sports, running on the beach, hiking, skiing.” So how does a supermodel start her day? “At around 6:30 am I eat a breakfast that often contains protein,” she said. “It is either one poached egg on sunflower or dark rye bread (wheat-free), or some Canadian bacon (no fat or preservatives or antibiotics). I also like to mix it up and will alternate with a protein shake with our new Nourishing Protein, half a banana and almond milk. I love an espresso, and will have one in the morning. 1. Connect to Nature

Spend at least one day a week disconnected from tech devices and enjoy the natural beauty of nature or art. So get out from behind your work’s computer screen, as screens will never have the same effect as the therapeutic negative ions released from the waves in the ocean or a running stream or the feel good buzz of the hormone oxytocin from the reassuring sensation of physical human touch. Avoid neglecting your real-world relationships in favour of virtual interaction.

2. Practise selflessness

Do things that positively impact the lives of others. Practice selfdiscipline in the amount of time that you spend “in your own head” and absorbed with your own life. The meaning and purpose you find in helping others will enrich and expand your life. Your life’s true meaning comes from looking out from yourself to create an emotional connection with others; from the barista preparing the cup of coffee to the customer service professional, to a mother giving to her child, life’s emotional health and wellbeing is directly derived in the ability to deliver quality service to the lives of others and focussing less on your own life.

3. Do Something Which Scares You

Learn or discover new things and test your resolve. Learned helplessness is a term used by psychologists when a person selfsabotages their ability to achieve. Negative experiences lead to a belief that you’re helpless and that you have little control over the situations in your life. It creates a self-fulfilling prophecy that life will deliver the negative consequences expected. Try to “live in the moment” and see that each day and even each moment leads to the fresh possibility that change is possible and that your past does not control your future. Let yourself go to love again after you have been hurt, forgiveness of yourself and of others is integral to the process of moving forward and applying mindfulness. The process of letting go of any negative emotional state and accepting ‘what is’ increases your emotional resilience.

4. Manage Your Stress Levels

Limit unhealthy mental habits like worrying. It achieves absolutely nothing and leaves you in an emotional state of distress. Instead try some structured problem solving. Work on cause-and-effect relationships and identify your behavioural activation, because when nothing changes (including yourself ) nothing changes. At times you will come to a conclusion that there is simply nothing that you can do to change a negative situation so “sitting with” the emotional state, rather than fighting with the negative feelings will be your greatest challenge, and subsequently your greatest strength. Model yourself on emotionally stable people, you will find that a lot has to happen for their emotional cage to be rattled. If you find it difficult to be in your headspace at a time of emotional distress, mentally remove yourself from you and ask yourself “how would x (insert name of a person you admire and respect) respond to this 34 slim magazine winter 2015

situation?” Modelling yourself on others is the fastest and most effective way to change, because what you practice thinking and behaving you eventually will become.

5. Let’s Get Physical

We all have awareness at some level that exercise can relieve stress and lift your mood through the excretion of feel-good chemicals of dopamine and serotonin. Look for small ways to add physical activity to your day, like taking the stairs instead of the elevator or parking the car a little further away from the entrance to where you’re going. To get the most mental health benefits, aim for 30 minutes of elevated heart rate or more of exercise per day. Most recent research is indicating that a daily exercise programme has the same therapeutic benefits as a low level dosage of antidepressants.

6. Sleep

The saying “Things will look differently after a good night’s sleep” has survived the ages because it is evidenced with clinical research indicating that our perception of reality is distorted without sufficient sleep, and our gross and fine motor skills can also resemble that of intoxication without sufficient sleep. Most people need seven to eight hours sleep each night in order to function at their best, so knowing your body’s natural sleep-wake cycle—your circadian rhythm—is one of the most important strategies for achieving good sleep. Psychologists refer to the following factors as sleep hygiene; setting a regular bedtime, waking up at the same time every day. Daytime nap to make up for lost sleep if you need to make up for a few lost hours. This strategy allows you to pay off your sleep debt without disturbing your natural sleep-wake rhythm, which often backfires in insomnia and throws you off for days.

7. You Think How You Eat

Learn about good nutrition and practice it. The subject of nutrition is personal and requires commitment and consistency. Remember it’s not what you do between Christmas and New Year that matters, it’s how you treat your body between New Year and Christmas. Education is key. Understanding your body’s biochemistry with, including you blood type, is the gateway to creating a diet that allows your body to be at its peak performance – whether you are about to do a cardio workout or gearing up for a long day in the office. Your body’s optimum functionality is derived from the simple equation of energy in = energy out. Sugar will give you an “instant energy hit” however its refined nature will see you “bottom out” in your physical and mental state so that you will take longer to recover. Choose foods which have a sustained energy release, such as foods with a low glycaemic index. These foods are generally “whole foods” and food groups that have not been greatly altered from their naturally occurring state. nce a professional triathlete, Taylor Cecil has dedicated his life to learning, practicing and teaching holistic health and fitness. Having reached the heights of professional sportsmanship, Taylor decided to extend his skills and knowledge base and set out to learn all he could about exactly what it takes to achieve true wellness. “I studied movement and posture, diet, body mechanics, stress management, sports specific training and injury prevention,” Taylor tells SLIM. Taylor says that when it comes to training, planning is essential. “I take a holistic approach to everything I do and training is no exception,” Taylor says. “I focus on integrating all areas of the body for balance, strength, posture, flexibility and wellness.” If you are looking to start exercising, but have never trained before, Taylor says to start off slow and simple. “Get back to basics and do it for the love of movement,” Taylor says. “It’s in you to move! Don’t be hard on yourself and understand that each session you do is a ‘drop in the bucket’. Utilise what you have around you; the walkway, the beach, the ocean, the gym. Put yourself in a culture of people who inspire you. Remember, ‘if’ you do what you have always done, you will get what you have always ‘gotten’.”

A very real risk for those just starting out – and those who have been exercising a while – is that of injury. Taylor says to focus on your posture at all times to avoid injury. “Stress and overused patterns are the main contributors to poor posture, so next time you are running or walking, keep your chest up.” When it comes to weight-loss, Taylor says not all exercises are equal. “Corrective strength training is best for your metabolism, but this needs to be coupled with the right food for your body. Eat organic foods, avoid highly processed foods, and avoid sugar. Remember, you are what you eat.” It’s all well and good having the tools to live a healthier, fitter life, but as we all know, motivation is the key. Taylor says those of us who lack motivation need to ask ourselves the questions; ‘What is your dream? What is your love?’. “If answering this is hard, you may be on a rollercoaster with exercise. SR: I have a few styles of workouts that I enjoy, and each day I see which feels best for me. I do either yoga, Pilates, boot camp, circuit, a long walk or road run. SLIM: With so much focus on diets such as Paleo, Zone, and Atkins … do you follow a particular diet? SR: No I don’t and I don’t believe in them either. I think balance and enjoyment are key, because health to me is a lifelong journey and it’s not just about the destination of a particular weight or size, it’s a holistic thing which encompasses much more than that. To me, it’s about my energy, mood, vitality, size and shape. SLIM: How do you stay motivated to exercise and eat well? SR: Since I no longer am training like an Olympics athlete I am much more relaxed on myself and choose to be more in tune with my mind and body and listen intuitively. If I want fresh air and some time to clear my head I love going for long runs and walks, likewise if I feel like chocolate I will allow myself to eat it and enjoy it and not beat myself up. Motivation is all about having a goal and intention for doing it…without that it’s very hard to stay committed. SLIM: What is your ‘treat food’? SR: Chocolate and red wine…although not together.

SLIM: What’s your favourite pick-me-up when you’re tired? SR: Organo Gold coffee as it’s much lower is caffeine than regular coffee, so much better for you. Or if I feel like something sweeter and more filling I’ll make a cacao almond milk smoothie as cacao has natural stimulants. SLIM: How important is your physical wellbeing to your mental wellbeing? I enjoy exercise because of the way it makes me feel, the clarity and energy flow I get...the fresh air does wonders for your mind. SLIM: Being in the public eye must be tough at times, how do you stay positive? SR: I don’t worry about being in the public eye, it doesn’t mean much to me. Who I am as a person and my overall happiness and health is what I value, and I truly believe that when I am focused on my overall health I am a much better to the people around me and can give much more energy to my projects and to the people I coach and mentor. Joint rt effo Think hip, knee and joint problems are only for the elderly or elite athletes? Think again. Dr Andrew Letchford, a hip and knee orthopaedic surgeon, discusses the importance of taking care of your joints.

D

r Andrew Letchford is a leading expert in arthroplasty ( joint replacement), knee reconstructions, sports injuries and acute orthopaedic trauma. He says he has seen a rise in these types of conditions in recent years, and while he offers a range of surgical solutions, he advises that prevention – rather than cure – is always the best option. SLIM: What are the most common conditions you see on the Gold Coast? AL: Hip and knee arthritic pain and knee injuries are the most common. SLIM: There is a general idea that hip and knee problems come with old age; is this correct or are you seeing increased younger patients? AL: It is correct that joint degeneration both of hip and knees is a problem that comes with old age, but I am also seeing quite a few younger patients with knee problems due to injuries, either at work or because of exercise related activity such as gym or group training sessions. SLIM: Could you tell us about some of the advancements that have been made in recent years in hip, knee and joint surgery? AL: Surgery is quite an exciting field to work in. It is at the cutting edge of modern medicine, and orthopaedics crosses over into fields of engineering and design including robotics and materials. I fully expect that within 12-18 months, I will be using robotic surgery on the Gold Coast. This will allow us unparalleled precision in arthroplasty joint replacement surgery. individually size, place and align the prosthetic componentry based on the patient’s own CT scan with micro adjustments of 0.2 of a millimetre. SLIM: Do hip and knee conditions often go untreated, with patients just suffering in silence? AL: Yes. Patients will frequently avoid dealing with some of their joint issues fearing this will require inevitable surgery. However, there are some non-surgical options that a good general practitioner can provide advice on. SLIM: What are the usual recovery times and patient outcomes for common hip and knee conditions? AL: In simple procedures such as keyhole arthroscopy, patients are admitted for day surgery. It takes two weeks for the wounds to heal, and depending upon your work requirements, an individual can return to work within days or weeks. Hip replacements and knee replacements require a bigger commitment. Patients can expect to go home five to seven days after surgery once they have satisfied physiotherapy requirements. Again, it takes two weeks for the wound to heal. By four to six weeks most patients are returning to driving their vehicles. SLIM: Could you offer any preventative advice to patients? AL: Keep fit. Whatever works for you, the individual, try and continue. If you are ultimately forced to decide upon a surgical option, then the best thing you can do for your surgeon, anaesthetist and rehab team is to be in optimal physical shape. SLIM: Could you tell us any sports or activities that a person should avoid if they have knee, hip or joint pain? AL: I don’t like to limit people, and a recent study found no evidence that running was correlated with knee arthritis. Nevertheless, I personally feel that my knees don’t like running anymore, but cycling and swimming are fine. Consequently, I have been swimming almost every day. PANIC ATTACKS

Almost one in three of us will experience panic attacks at some stage in our lives; that sickening feeling of anxiety that seems to take hold and won’t let go.

A

panic attack, also known as an anxiety attack, is a brief episode of intense anxiety that causes the physical sensations of fear. These can include a racing heartbeat, shortness of breath, dizziness, trembling and muscle tension. Spontaneous panic attacks occur unexpectedly and are not related to any external threat. A panic attack can last from a few minutes to half an hour. However, the physical and emotional effects of the attack may last for a few hours. Panic attacks are common. Beyond Blue estimates that up to 40 percent of the population experience a panic attack at some time in their lives. Without treatment, frequent and prolonged panic attacks can be severely disabling. The person may choose to avoid a wide range of situations (such as leaving their home or being alone) for fear of experiencing an attack. For many people, the feelings of panic occur only occasionally during periods of stress or illness. A person who experiences recurring panic attacks is said to have panic disorder, which is a type of anxiety disorder. They generally have recurring and unexpected panic attacks and persistent fears of repeated attacks.

The ‘flight-or-fight’ response When the body is faced with immediate danger, the brain orders the autonomic nervous system to activate the ‘flight-orfight’ response. The body is flooded with a 44 slim magazine WINTEr 2015

range of chemicals, including adrenaline, that trigger physiological changes. For example, heart rate and breathing are accelerated and blood is shifted to the muscles to prepare for physical combat or running away. A panic attack is said to occur when the ‘flight-or-fight’ response is triggered but there is no imminent danger. A person may experience the symptoms of a panic attack in harmless and apparently stressfree situations, such as watching television or while asleep. Flight-or-fight response activators include: • Chronic (ongoing) stress – this causes the body to produce higher than usual levels of stress chemicals such as adrenaline. • Acute stress (such as experiencing a traumatic event) – can suddenly flood the body with large amounts of stress chemicals. • Habitual hyperventilation – disturbs the balance of blood gases because there is not enough carbon dioxide in the blood. • Intense physical exercise – for some people, this may cause extreme reactions. • Excessive caffeine intake – the caffeine in coffee, tea and other beverages is a strong stimulant. • Illness – may cause physical changes. • A sudden change of environment – such as walking into an overcrowded, hot or stuffy environment. • Some medications and drugs – such as tranquillisers, alcohol and caffeine – may also induce panic-like symptoms.

THE FACTS • Symptoms of a panic attack include extreme anxiety and physical sensations of fear, such as increased heart rate, shortness of breath, trembling and muscle tension. • Triggers for panic attacks can include overbreathing, long periods of stress, activities that lead to intense physical reactions (for example exercise, excessive coffee drinking) and physical changes occurring after illness or a sudden change of environment. • Panic attacks can be treated with a range of therapies including medications, psychotherapy and stress management techniques.


Panic disorder

Panic disorder is the term used to describe when panic attacks are recurrent and disabling. Panic disorder can be characterised by: • The presence of recurring and unexpected (‘out of the blue’) panic attacks. • Worrying for at least a month after having a panic attack that you will have another one. •W orrying about the implications or consequences of a panic attack (such as thinking that the panic attack is a sign of an undiagnosed medical problem). For example, some people have repeated medical tests due to these worries and, despite reassurance, still have fears of being unwell. •S ignificant changes in behaviour that relate to the panic attacks (such as avoiding activities like exercise because it increases the heart rate).

What causes panic disorder?

There is no one cause for panic disorder, but rather, a number of factors, including: • Family history – People with panic disorder tend to have a family history of anxiety disorders or depressive illness and some studies suggest a genetic component. • Biological factors – Some medical conditions (cardiac arrhythmias, hyperthyroidism, asthma, chronic obstructive pulmonary disease and irritable bowel syndrome) are associated with panic disorder. • Negative experiences – Extremely stressful life experiences such as childhood sexual abuse, redundancy or bereavement, have been linked to panic attacks as well as periods of ongoing, unrelenting stress.

Symptoms of a panic attack • Heightened vigilance for danger and physical symptoms. • Anxious and irrational thinking. • A strong feeling of dread, danger or foreboding. • Fear of going mad, losing control or dying. • Feeling lightheaded and dizzy. • Tingling and chills, particularly in the arms and hands. • Trembling, shaking or sweating. • Hot flushes. • Accelerated heart rate. • A feeling of constriction in the chest. • Breathing difficulties, including shortness of breath. • Nausea or abdominal distress. • Tense muscles. • Dry mouth.

how to help yourself • Avoid ‘self-talk’ that focuses your attention on your symptoms – don’t tell yourself ‘Stop panicking!’ or ‘Relax!’. • Remind yourself that the symptoms of a panic attack are uncomfortable, but not life threatening.

Professional help

Always seek medical advice if you are not sure whether your symptoms, or another person’s symptoms, indicate a panic attack. In an emergency, call 000 for an ambulance. It is important to see your doctor for a check-up to make sure that any recurring physical panic-like symptoms are not due to illnesses, including diabetes, asthma, inner ear complaints, hyperthyroidism (overactive thyroid gland), cardiac (heart) complaints, post-partum (after childbirth) hyperthyroiditis. If the physical anxiety symptoms are caused by physical illnesses, proper treatment for these illnesses should stop the panic-like symptoms from recurring. If the panic attacks are due to anxiety, treatment options can include medications, psychotherapy, including cognitive behaviour therapy, biofeedback therapy, stress management techniques, proper breathing techniques, relaxation techniques, learning problem-solving skills, lifestyle adjustments, such as attention to diet, exercise and sleep.

For example, distract yourself by counting backwards in threes from 100, recall the words from a favourite song or concentrate on the sights and sounds around you. • Fleeing from the situation will only reinforce the perception that your panic attacks are unbearable. If you sit and allow the symptoms to pass, you gain confidence in your ability to cope.

Surfing legend Tom Carroll shares the tricks of the trade to sweating it out on a stand up paddleboard. As one of the most effective cross training activities you can do, it’s no wonder celebs such as Jennifer Hawkins, Cameron Diaz, Jennifer Aniston, Matthew McConaughey and Australia’s ultimate bachelor, Tim Robards, have been snapped SUPing (that’s Stand Up Paddleboading to the uninitiated). As an activity that’s loads of fun and simple for almost anyone to master, it’s no surprise that SUPing is quickly becoming the most popular water sport around. Australian surfing legend Tom Carroll has recently launched his own range of high-performance Stand Up Paddle Boards – Tom Carroll Paddle Surf, through Global Surf Industries. “Anyone who tries stand up paddling for the first time will feel the effects the next day,” Tom says. “What’s great about stand-up, is it’s a full body workout. When you’re paddling hard, everything is working – your lats, your back, your shoulders, your arms, even your hands and feet. Think about doing 1,500 side sit-ups with rotations per hour. That’s pretty much what you do when you go for a hard stand up paddle workout,” he said. Tom’s tips for getting the most out of a SUP workout:

“It’s important to select a board according to your weight,” says Tom. “If you’ve got too much length, it will be much harder to push all that extra board around.” Tom suggests using the manufacturer’s suggested rider weights as a guide and then having a good chat with your retailer before choosing your board length.

HEADS UP

According to Tom, the reason you can lose balance when leaning too far forward or leaning over the board is because of the significant weight of your head, compared to the rest of your body. “Keep your gaze up and become aware of the horizontal plane ahead and practice resisting the temptation to control by looking downward to the board. This does two things; one, it keeps your head over the centre of balance and two, it increases awareness of where you are. Also by maintaining a slight bend at your knees you will create natural shock absorbers, keep shoulders centred over your hips, and feel the movement throughout your body, like a dance with the water, this starts the process of awakening your stabilisers. Tom’s training tips

To up the ante on your SUP workout, Tom suggests incorporating some High Intensity Interval Training (HIIT). He suggests repeating the below routine five to 10 times per paddling session to get “one hell of a workout.” Always warm up at moderate pace (approx 60 percent), within your best form stroke for 10-15 minutes (minimum). • Paddle 100 percent for one minute. • Paddle at 80 percent of your fastest pace for three more minutes. • Rest for one minute. • Repeat five to 10 times. • Paddle at a slow pace for 10 minutes. • Stretch to cool down.

t may come as a shock to you, but we really don’t know ‘food’ as well as we think we do. We see food every day. It rides with you on the way to work. It waits for you on the shelves of grocery stores. It lives in your fridge and in your pantry. Food may even be in your garden. If we see food this much, you would expect us to know it pretty well, right? Unfortunately we have it very wrong, and our relationship with food isn’t as tight as it would seem. This reaction causes us to feel and be a certain way; and it all starts in our digestive system. We are mistaken about what ‘good food’ is; therefore our current diet is in need of a major clean up! We should be focused on foods which leave us feeling full of vitality, life and wellness. Instead, we are consuming foods which we assume are doing us good, but in fact they leave us feeling fatigued, unfocused and are making us sick. Coconut Chicken and Sweet Potato Soup Serves: 4 PREP + COOK TIME: 40 MINUTES NUTRITION COUNTS PER SERVE: 31.4g protein, 19.0g fat, 13.9g saturated fat, 27.5g carbohydrate, 4.5g fibre

½ bunch (60g) coriander 1 teaspoon coconut oil 2 garlic cloves, chopped 1 red chilli, deseeded and chopped 2.5cm (1-inch) fresh ginger, chopped 1 stalk lemongrass, crushed 2 tablespoons red Thai curry paste 3 cups (750ml) homemade chicken stock 275ml coconut cream (full fat) 500g (1lb) sweet potatoes, peeled and roughly chopped 2 skinless organic chicken breast fillets (460g), sliced thinly 1 tablespoon lime juice ½ teaspoon fish sauce 4 radishes, finely sliced radish cress, to garnish black pepper, to taste Wash coriander well. Separate the coriander leaves and stalks and chop separately. Heat the coconut oil in a large saucepan over medium-high heat. Add the garlic, chilli, ginger, lemongrass, coriander stalks and curry paste and cook for 2-3 minutes until the aromas are released. Add the chicken stock, coconut cream and sweet potatoes. Bring to the boil; simmer, covered, for 15 minutes or until the potatoes are soft. Remove the lemongrass and discard. Stand 10 minutes to cool. Carefully transfer to a blender and blitz until smooth. Return to the saucepan, add the sliced chicken breasts and cook gently for 5-10 minutes or until the chicken is cooked through. Stir through the lime juice and fish sauce, scatter with the coriander leaves, radishes, radish cress, black pepper and serve.

Trim beetroots, leaving a little of the stem attached. Finely chop the remaining beetroot stems to make up about 2 tablespoons. Set aside for the pastry. Pick a handful of larger beetroot leaves, shred finely and set aside. Pick a handful of small beetroot leaves and set aside whole. Discard any remaining leaves and stems. Make the pastry. Combine chia seeds and water in a medium bowl. Stand for 10 minutes. In a separate bowl, rub together flour, salt and butter until mixture resembles coarse crumbs. Stir in 2 tablespoons of chia seeds and reserved chopped beetroot stems. Whisk egg and oil in a separate bowl, add to the flour mixture and mix until just combined. Knead the pastry with your hands for a few minutes into a ball, cover and refrigerate for 20 minutes. Preheat oven to 180°C. Chop beetroots into quarters and place on lined baking tray with garlic, thyme and rosemary. Drizzle with half the coconut oil and season with salt and pepper. Roast for 20 minutes, remove garlic and roast for another 15 minutes until beetroot is tender. Heat remaining oil in a large frying pan over low heat, cook onions, stirring occasionally, for 20 minutes or until very soft. Add larger shredded leaves, stir for 2 minutes or until wilted. Season to taste. Roll pastry between sheets of baking paper with a rolling pin into a 30cm round disc. Place into a 2.5cm deep, 23cm (base measurement) round fluted pastry tin. Trim edges. Bake tart case in the oven for 15 minutes or until golden. Spread onion mixture on base, top with roasted beets, peeled garlic and goat’s cheese. Bake for a further 10 minutes or until cheese is golden. Whisk olive oil and juice together in a small bowl, season to taste. Add reserved small beetroot leaves; toss to coat. Top tart with chopped beetroot leaves and sprinkle with remaining chia seeds. Garinish with micro herbs and shredded carrot, if desired.

Quinoa Vegetable Filling 400g pumpkin, peeled and cubed, about 3cm cubes 300g sweet potato, peeled and cubed, about 3cm cubes 1 medium red capsicum (200g), de-seeded and cubed salt and pepper pinch of cinnamon 2 teaspoons coconut oil, melted 1 large (250g) skinless chicken breast fillet 1 cup (130g) cooked quinoa, cooked as per packet instructions Macadamia Sauce 2 cups (250g) macadamias 1½ cups (375ml) water pinch turmeric 1 tablespoon organic dijon mustard 2 tablespoons nutritional yeast salt and pepper

White Cheese Sauce 2 tablespoons coconut oil 2 tablespoons wholemeal spelt flour 1 cup almond milk 1 teaspoon paprika 1½ cups (120g) grated parmesan or pecorino cheese salt and pepper sage leaves and shaved parmesan to garnish Preheat oven to 180°C. Grease a square 8 cup (2L) ovenproof dish with coconut oil. Heat coconut oil in large saucepan over a high heat. Sauté onion for 5 minutes or until soft. Add turkey mince, cook, stirring to break up lumps for about 10 minutes or until slightly browned. Add garlic and carrot, cook, stirring for 1 minute. Add tomatoes, carrot, oregano, basil and fennel seeds. Season well. Bring to the boil, then turn down heat and simmer, covered for 5 minutes. Remove lid, simmer uncovered for 20 minutes or until sauce is thick. Remove from heat. Make a white cheese sauce. Heat oil in a small saucepan and add flour. Stir for 30 seconds. Gradually add milk, stirring until mixture boils and thickens. Remove from heat and stir in paprika and 1 cup of the cheese. Season to taste. Place one-third of the zucchini in prepared baking pan. Spread half of the turkey mixture on the bottom. Top with of the cheese sauce. Repeat these layers, finishing with a layer of zucchini and cheese sauce, topped with remaining cheese. Bake, uncovered for 35-45 minutes or until zucchini is tender and cheese is browned. Garnish with sage leaves and shaved parmesan if desired.

Parsley Crust 1 cup (70g) gluten-free breadcrumbs 1 cup firmly packed flat-leaf parsley leaves, chopped finely 1 garlic clove, minced pinch of cinnamon salt and pepper 1 teaspoon coconut oil, melted Preheat oven to 180°C. Season vegetables with salt, pepper and cinnamon and toss with coconut oil and roast in the oven for 40 minutes or until vegetables are cooked. Place chicken in a small baking dish lined with baking paper. Season with salt and pepper and pour ½ cup water into dish. Place in oven for 25 minutes or until cooked through. Stand chicken until cool enough to handle. Shred chicken with hands. Mix vegetables, quinoa and chicken. Blend all sauce ingredients in a blender until smooth. Combine all parsley crust ingredients in a bowl, mix well to combine and set aside. Add quinoa vegetable filling to a 20 x 20cm square ovenproof baking dish. Spoon macadamia sauce over the top and sprinkle parsley crust on top. Bake in oven for 15 minutes or until crust is golden and crunchy. 60 slim magazine winter 2015

Apple Strawberry Macadamia Crumble SERVES: 2 PREP + COOK TIME: 40 MINUTES NUTRITION COUNT PER SERVE: 8.8g protein, 40.2g fat, 19.9g saturated fat, 21.6g carbohydrate, 6.1g fibre

Heat the coconut oil in a large pan over a medium heat. Add the garlic and stir. Throw in the kale and use tongs to move it around the pan. Sprinkle in half of the salt, pepper, chilli flakes and lemon juice and continue cooking until slightly wilted but still crisp, about 1-2 minutes. Remove kale from heat and place in serving bowl. Sauté mushrooms and add half the remaining salt, pepper, chilli flakes and lemon. Place in bowl next to kale. Place quinoa next to mushrooms in serving bowl. Press the avocado into the remaining chopped parsley and mint. Place in bowl next to quinoa. Finally, place the sauerkraut in the middle of the bowl. Place eggs on top of kale and top with coriander. Season with remaining salt, pepper, chilli flakes, lemon and sesame seeds, almonds and serve.

Filling 3 medium apples (450g) (any variety) 1 teaspoon cinnamon 250g strawberries Crumble 1 cup (120g) almond meal ½ cup (45g) oats ¼ cup (35g) macadamias, chopped ¼ cup (50g) pumpkin seed kernels (pepitas) 1 tablespoon chia seeds ½ cup (125ml) coconut oil or organic butter 2 tablespoons maple syrup or honey 2 teaspoons vanilla extract fresh fruit to serve Preheat oven to 160°C. Cut apples into thin wedges, keeping the skin on. Place into a large steamer basket over a pot of simmering water, sprinkle the cinnamon over the top and cover. Simmer for approximately 10 minutes or until apples are tender. Slice strawberries into quarters. Place steamed apple and strawberries into 3cm deep, 18 x 24cm (base measurement) baking dish and spread the fruit across the base surface. Make the crumble. Mix all of the dry ingredients in a bowl. Melt the coconut oil or butter and pour over dry ingredients. Add liquid sweetener (honey or maple syrup) and vanilla extract. Stir well. The crumble mix should form a ball when squeezed in your hand. If it doesn’t, add some more coconut oil or butter. Spread crumble over the fruit in the baking dish, covering completely. Bake for 12-15 minutes, or until the crumble is golden. Top with fresh fruit. Serve with natural Greek yoghurt or vanilla labne (a Middle Eastern yoghurt cheese).

Easy Zucchini Gratin

recipes Powerhouse Coconut Pancakes

It’s long been a dream of mine to create a decent version of hotcakes... I found this to be my favourite so far!

Why on earth create grain free, gluten free and nut free hot cakes? Grains turn to sugar which for the most part turn to fat stores in our bodies. That, plus for me, sporadic allergy, bloating, autoimmune issues, means I tend create recipes that avoid grains and ingredients that stress out the body. It’s long been a dream of mine to create a decent version of hotcakes, which I truly miss. Using almond meal to substitute flour just doesn’t do it for me, texture wise and so with coconut flour, I found this to be my favourite so far! Makes 10-12 hotcakes.

Powerhouse Coconut Pancakes

45g (½ cup) coconut flour 170g (¾ cup) milk of your choice (I use raw milk, but if you’re non-dairy a cashew milk is delish for this) 3 pasture-raised eggs 1 teaspoon aluminium free baking powder ½ tsp vanilla powder and / or cinnamon (optional but very yummy!) Generous amount of coconut oil or butter, for the frying pan Texture option: Add ½ cup milk and 3 tablespoons tapioca flour for a more traditional texture, while still keeping all that good coconut flour in there for fibre. Get your pan on a medium heat and melt a teaspoon or two of butter or oil in it. Whisk your eggs for a few seconds in a large mixing bowl, by hand is fine. Add coconut flour, baking powder and vanilla powder and whisk and then let stand until it’s a thick goop – about a minute or two. Add milk and whisk until all combined. Spoon the thick batter into pan by the heaped tablespoon and gently spread out a little so diameter is about three inches. Fry for two minutes each side and make a stack in the oven (on low heat) to allow you to build up your collection for breaky. Blueberry compote (or any other berry for that matter!) To serve, before you start making the hotcakes, get a pot going on low with 2 cups of blueberries, a pinch of ground cinnamon and a tbsp of rice syrup or 6 drops stevia and let it cook unassisted. Then it’s all ready at the same time. Serve with a little natural yoghurt.

Easy Zucchini Gratin Pomegranate & Cinnamon Chia Pudding

Pomegranate & Cinnamon Chia Pudding

In a 300ml‘ish’ jar pop the following: 2 tbsp frozen berries of your choice 1 tbsp pomegranate seeds (to deseed a pomegranate, simply cut in half, face half down into a big bowl, and whack the skin with a rolling pin and watch them fall out easily) ½ tsp ground cinnamon 1 tsp linseeds or linseed meal 1 ½ tbsp chia seeds Fill jar 2/3 full with coconut cream and 1/3 coconut water. Give it a good shake and set in fridge overnight or at least three hours. To serve simply sprinkle a few extra pomegranate arils on top.

This zucchini gratin is such a comforting, luscious way to enjoy zucchini. If you’re over your steamed or sautéed zucchini, then this will get you back in love with my favourite green vegetable – shhh, don’t tell kale but an old flame is back in my heart! Serves four to six as a side dish or two as a main meal with a side salad. 40g butter or ghee, or coconut oil 6 medium sized zucchini, chopped into wheels ½ cm thick 1 purple onion (2 if small), roughly chopped 1 large clove of garlic 1 heaped teaspoon Provençale / French dried herb mix (if using fresh, do 2 tablespoon of chopped parsley and two thyme sprigs) a little parmeggiano reggiano / gran padano to sprinkle over the top (I use these cheeses because they are raw milk cheeses, packed with enzymes and much more digestible than pasteurised cheeses) optional nutrient boosting extras… 1 tablespoon nutritional yeast (full of B Vitamins) 1 teaspoon dulse flakes (seaweed flakes packed with minerals) Melt fats in a medium pan and pop onion in. Saute for 2 minutes. Add zucchini wheels, garlic, herbs (and nutritional yeast and dulse flakes if you’re adding those). Toss around casually for 5-10 minutes and get on with other stuff. Once the zucchini is well cooked and quite soft, grab either a fork, masher or stick mixer and mash just about 1/3 of the mixture (so there are some wheels intact and some mixture is more like a mash). Pour into a baking dish of your choosing and sprinkle your cheese on top and grill for 5-10 minutes until the top is deep golden colour. Serve either as a delicious lunch with a side salad or as a side dish to roast chicken, beef or baked fish. Dairy free note: Simply sprinkle with nutritional yeast and a little almond meal or rice crumbs on top instead of the cheese. slim-magazine.com.au 63


Slow Cooked Tamari Chicken Drumsticks

Slow Cooked Tamari Chicken Drumsticks For a family of three or four, this recipe, will provide you with two additional meals and a good batch of stock to use for umpteen other meals again, with the addition of a few basic extras each time. If you have a big family, invest in a big stock pot from a chef ’s supply store and double the batch. 12 chicken legs 1 cup stock (chicken or vegetable. if you don’t have stock, just do extra water, and chuck an extra ½ onion in and break a carrot in to and pop that in too) 1 cup water 1 inch knob ginger, cut in two and thrown in 2-3 garlic cloves 1 x 2cm piece turmeric (optional) 1 medium sized purple onion, roughly chopped 4 tablespoons tamari (wheat free soy) 3 tablespoons rice syrup (maple or honey if you prefer) 50g butter or coconut oil Pre heat your oven to 140°C. Sauté the drumsticks for a couple of minutes in two batches, with the butter and onion on stove on a high heat. Just pop the six you’ve done in a bowl while you do the other half and then add them back in. Add all remaining liquids and spices. Pop the lid on, transfer to oven 3-4 hours.

Coconut Cupcakes These coconut cupcakes are grain, gluten, fructose, nut and dairy free. And they’re delicious. Best of all you don’t need to even break out the whisk or mixer. This is the perfect recipe for whenever there are food sensitivities or allergies of varying kinds at your next get together. This recipe makes 10 large cupcakes. Dry ingredients (in one bowl) 120g buckwheat flour 40g coconut flour (for full grain-free, take out the buckwheat flour and use 80g coconut flour and increase to two eggs) 1 teaspoon aluminium free baking powder 2 /3 teaspoon bi carb soda 1 teaspoon vanilla bean powder (if you don’t have, just do two teaspoons vanilla bean extract in the wet ingredient bowl) 40g desiccated coconut

Pull out of the oven and back onto the stove and add a bunch of chopped Chinese broccoli, and 300g green beans or ½ head of broccoli, chopped. Pop lid back on for five minutes to cook the vegetables in the steam and liquid of the chicken dish and then spoon onto plates to serve, two drumsticks and green vegetables. If you like you can cook some quinoa or brown rice to serve with it also.

COCONUT CUPCAKES

Wet ingredients (in a second bowl) Place 1 egg, broken up with a fork first in the bowl (if you have egg allergy to cater for, you can replace the egg with 50ml extra of coconut milk. It will be a little less stable in texture if you wanted to make a cake, but still perfect for cupcakes). Add 160ml rice syrup (I feel better personally with low/no fructose baking when possible given that the liver can process about two pieces of fruit’s worth a day… if you don’t subscribe to that choice feel free to use honey, maple syrup, coconut sugar, coconut syrup or rapidura as unrefined natural sweetening options. You could also use stevia glycerate or erythritol if needs be, although I find them to taste very chemically). Add 120ml coconut milk (there is a little fructose in coconut milk. If super sensitive/fructose malabsorption issues, replace with nut milk or whole milk). Add 90ml melted butter (you could use ghee or coconut oil for extra dairy sensitivity). Pop the oven on 180°C non-fan forced setting. Once you’ve got everything in your wet and dry bowls, just give them each a little stir through. Combine the bowls together and stir through until just combined. Leave for a minute to firm up. Pour into your cupcake cups, leaving 1cm off the top for rising. Bake for 20-25 minutes, doing a skewer test at 20 minutes to check. When the skewer comes out clean, you’re done. For a thermomix: Pop everything (make sure butter is cooled so it doesn’t cook the egg) into the thermomix and blend on Speed 6 for 5 seconds. Reverse Speed 5 for 3 seconds. Done.

recipes Cracking Cruciferous Soup It’s like a meal title from a Dr Seuss book, and it’s cracking in more ways than taste. How’s 20 minutes in the making and $14 dollars to feed four people a delicious organic meal? Soothing, restorative and warming. I love the ‘stick mix’ method of soup making when you’re strapped for time – you don’t need to chop anything with precision, as it’s all about to be puréed. This soup forgives you, just get everything in the pan already and enjoy! 50g butter (or coconut oil if you’re dairy free) 1 medium sized red onion, rough chopped 3 medium sized leeks, rough chopped 3 cloves of garlic, peeled and smashed, no need to chop 600g cauliflower, roughly chopped 1 small head of broccoli, rough chopped ½ bunch of black Tuscan cabbage, rough chopped (or 2 handfuls baby spinach, or 4 chard/spinach stalks) 1.25 litres chicken stock (or vegetable stock if you’re vegan/vegetarian) 2 sprigs thyme 1 teaspoon Celtic sea salt (or pure salt of some kind, just not man made) ½ cup of additive free pouring cream or coconut milk (this is optional. It will add body, creaminess and a ‘stick to your ribs’ nourishment if you’re super hungry) Pop butter in the pan with the leeks and onion and soften until slightly golden. Add the garlic, vegetables, thyme and salt and sauté for a minute or two. Then top with the stock. Cook for 10 minutes, then turn off the heat and blitz with your stick mixer, adding the cream/coconut milk at this point if you’re adding it. Taste and season with salt and pepper as you like.

Even basic skills have to be learned and, with the increased popularity of electronic entertainment, many children have lost basic coordination skills. James Bustar says juggling can help develop those skills.

T

here are no shortage of distractions for people nowadays, and children are among the most distractible people on the planet. In some ways, this is a good thing; kids are exposed to much more of the world than they were even twenty years ago. But the constant barrage of electronic distractions, from cutting edge video games to plain old cartoons, has had a huge, undeniable impact on kids. It has worked to stunt many skills that were once considered standard. According to juggler James Bustar, “There’s a startling lack of hand-eye coordination among people—young people especially—and juggling helps sharpen this vital skill.” Bustar is far from the only person who thinks so. Studies have shown that, perhaps unsurprisingly, there is a direct connection between a lack of physical activity and a lack of coordination. Even something as simple as catching a thrown ball—hardly considered a difficult feat—is now slipping away as a common skill. Much like language skills, hand-eye coordination is considered a basic skill, but it isn’t really as simple as it seems. Also like language skills, the younger you are, the easier it is to learn, and the older you get, the less likely you are to learn these skills. Physical coordination isn’t something that can be learned, necessarily; it has to be developed, from as young an age as possible. While many video games do involve a degree of hand-eye coordination—or at least claim to—they don’t actually give children a sense of the world around them. They do give a sense of perception, but for the wrong thing. It gives a sense of perception through a two-dimensional window. While playing mobile games will increase response time to other video games, it doesn’t translate into a three-dimensional world. The rules for real life are more sensitive and difficult than any video game rules, and they have to be learned through experience. While ball sports are a good place to start increasing coordination, juggling is an activity that is easy to pick up, safe, and appropriate for most age levels, and yet, it requires speed, coordination, perception, and real dexterity. Juggling, like many activities that involve high levels of physical and hand-eye coordination, is also an effective stress-reliever, regardless of age. It’s long been known that physical activity has a strong, almost therapeutic effect on people. This is especially true when, like juggling, the activity requires a good deal of mental focus. Because it requires a keen sense of attention to the world in front of them. Not only is this a skill that is unfortunately lacking among the youth of many developed nations, it also helps people get out of their heads. A lot of stress comes from an unhealthy focus on distracting, scary, or otherwise unpleasant thoughts. By forcing you to interact with the world with rapid-fire precision, an act as basic as juggling will draw the mind away from these thoughts. There’s a reason that sports are among the most popular stress-relievers worldwide; they put you into a different, more present-oriented state of mind. Speaking of sports, juggling is also an excellent addition to most crosstraining regimens. It is especially useful for athletes. From rugby to golf, there’s hardly a sport on the planet that doesn’t require quick reaction times and a strong sense of perception. Unlike some training activities, where you may need weeks to tell if its working, there’s no question about how good you’re doing with juggling. From toss to toss, success and failure are clean-cut, and that means it’s easy to track your progress.
