The holiday season is a time of joy, togetherness, and, let’s face it, indulgence. With festive treats, overflowing punch bowls, and the occasional family tension, it’s easy for our healthy habits to take a backseat. But for those of us who have been diligent in maintaining our health throughout the year, the holidays can feel particularly daunting, especially when it comes to managing hormonal balance. Fear not—there’s a way to enjoy the festivities without compromising your hormonal health.

1. Embrace Moderation

The holiday season often triggers an all-or-nothing mindset: some people abandon their healthy routines entirely, indulging in everything with the promise to “get back on track” in the new year. Others might go to the opposite extreme, clinging to their health habits so tightly that they miss out on the fun. I encourage you to find a middle ground. Enjoy your favourite foods and drinks, but do so mindfully. Eat slowly, savour each bite, and remember that one meal, or even one week of indulgence, won’t undo your progress. Guilt and stress can do more harm to your hormones than the occasional treat, so enjoy the moment and then move on.

2. Prioritise Movement

During the hustle and bustle of the holiday season, exercise is often the first thing to go. However, maintaining even a light activity routine can be incredibly beneficial for your hormones. Instead of aiming for your usual workouts, focus on manageable activities like a 15-20-minute walk around the block. This not only aids digestion after festive meals but also helps keep your cortisol levels in check. Remember, any movement is better than none, and it’s a great way to naturally support your hormonal balance during this busy time.

3. Mindful Drinking

Alcohol is a staple at many holiday gatherings, but it’s

important to remember that it can have a significant impact on your hormones, particularly estrogen. Rather than avoiding alcohol entirely, which might not be realistic, try to space out your drinks. Have a glass of water between each alcoholic beverage, and sip slowly. Setting a limit for yourself, such as three drinks over the course of an evening, can also help. Always pair your drinks with a snack or meal to slow down alcohol absorption and reduce its impact on your gut and hormones.

4. Support Your Liver

DURING HER EARLY 30S, MEGAN’S LIFE TOOK AN UNEXPECTED TURN - ONE THAT NOT ONLY CHANGED HER HEALTH BUT ALSO BROUGHT THE BIGGEST SURPRISE OF HER LIFE: AN UNPLANNED PREGNANCY, 25 WEEKS IN. Megan’s journey toward weight-loss surgery began when she visited her doctor about irregular periods. At 30, she was diagnosed with PCOS, a hormonal disorder that can cause weight gain and fertility issues.

For over a year, she worked tirelessly and followed a strict regimen and even consulted a dietitian, but she struggled to lose weight. “I felt like I was starving myself with little to no results and I was really struggling with that.” Megan says.

At first, Megan looked at the Allurion Balloon but after researching options, she realised less invasive procedures weren’t necessarily long-term solutions. With the support of her family, she opted for weight-loss surgery to assist in regaining control over her health.

At the time of surgery, Megan’s Body Mass Index (BMI) was 45 which placed her in the category for either a sleeve gastrectomy or a more complex bariatric procedure. After evaluating her options, she decided on the Single Anastomosis Duodenoileal Bypass (SADI) procedure to avoid the possibility of requiring future operations, given it’s known to provide long-term results.

Pre-surgery, Megan lost an impressive 16 kilograms by following a strict diet, though her surgery date had to be delayed due to an unexpected case of COVID-19. Finally, in September 2022, she underwent the life-changing procedure and within a year, she had lost 57 kilograms.

“I’ve struggled with weight issues since I was 18 which also caused mental health issues that compounded when I was diagnosed with PCOS. But after the surgery, it felt like I’d finally turned a new corner in my life.”

She found everyday activities, such as climbing stairs, much easier, and her confidence soared as family and friends complimented her transformation. However, the biggest surprise came shortly after her one-year post-surgery check-up.

After her follow-up, Megan went for a routine ultrasound to explore her fertility options. To her surprise, she discovered she was 25 weeks pregnant.

“I didn’t believe it at first,” Megan laughs. “I was always under the impression that I couldn’t fall pregnant, so I thought the symptoms were acid reflux or constipation. But when the ultrasound screen flipped, I saw a fully developed baby. It was such a shock.”

Megan and her partner, Jarryd, were overjoyed by the news. After years of thinking pregnancy might not be possible due to her PCOS, the reality of expecting a baby felt like a dream.

Today, Megan is a proud mother to baby Jeremy. Her weightloss journey not only improved her health but also played a pivotal role in allowing her to conceive naturally.

“My GP believes that the weight-loss had a significant impact on my ability to fall pregnant and it’s been life-changing,” she says.

Having lost a total of 63 kilograms, Megan is now enjoying life with newfound energy and confidence. Even simple things, like shopping for clothes, have transformed her outlook.

“I recently went into a City Chic, where I used to shop and realised, I no longer fit their clothes. I then went into Forever New and headed for their curve section. My mum reminded me that I am no longer able to fit that style clothing eitherthat was a surreal moment,” she says.

When asked what advice she would give to others considering weight-loss surgery, Megan is direct: “Do it. It’s not easy - it’s a lifestyle change - but if you have the support, you won’t regret it.”

Megan emphasises the importance of a strong support system, noting that her family and friends played a crucial role throughout her journey.

“No one created a negative space for me. Everyone was incredibly supportive, and that made all the difference.”

As she continues to adjust to her new life as a mother, she is open to the idea of expanding her family in the future. For now, she is focused on enjoying every moment with Jeremy and maintaining her healthy lifestyle.

“I love being a mum,” she says. “Even in the hardest moments, I’m just so grateful that he’s here. It may not have happened the way I expected, but I wouldn’t change a thing.”

It is particularly useful for groin hernias, as the real-time imaging allows dynamic assessment during activities like the Valsalva manoeuvre (where patients strain).

In inguinal hernias, ultrasound helps differentiate between direct and indirect hernias by visualising their relationship to surrounding vessels, while in femoral hernias, it aids in detecting small hernias that are hard to palpate. For spigelian hernias, ultrasound is key in identifying deeper hernias that are difficult to assess clinically.

CT scans are especially beneficial for complex or recurrent hernias, providing detailed views of the abdominal wall and contents. For incisional hernias, CT can clarify the relationship between hernia sacs and surgical scars, while for inguinal, femoral, spigelian, and umbilical hernias, it offers precise localisation and visualisation of the hernia’s size and contents.

Both Ultrasound and CT scans are indispensable in the imaging assessment of hernias, with each method offering distinct advantages based on the type and complexity of the condition. Accurate imaging means better treatment planning and improves patient outcomes.

WEGOVY HAS LAUNCHED IN AUSTRALIA, ADDING TO THE RANGE OF WEIGHT-LOSS MEDICATIONS AND OFFERING A NEW OPTION FOR EFFECTIVE WEIGHT MANAGEMENT SOLUTIONS.

Although Wegovy and the well-known diabetes medication Ozempic both contain semaglutide, Wegovy is specifically approved for weight-loss and has recently been made available in Australia.

Administered as a once-weekly injection, Wegovy works by mimicking GLP-1 (glucagon-like peptide-1), a hormone that naturally occurs in the gut and helps regulate appetite. By enhancing this hormone’s effects, the medication can reduce hunger and increase satiety, which may lead to weight-loss.

Clinical trials indicate that patients using Wegovy might achieve significant weight-loss, with results showing an average reduction of about 15 percent of their initial body weight over 68 weeks, when combined with a low-calorie diet and increased physical activity.

Mitraclips inserted again though a groin vessel puncture, aid to repair the mitral valve reducing valvular leak. This allows improved heart function for most patients and discharge within a few days without the trauma of open surgery.

In addition to these innovations, newer valve repair techniques and advanced imaging technologies like 3D echocardiography and CT angiography are enhancing surgical planning and precision.

SPRING SALAD

INGREDIENTS

SERVES 2-4

• 1 handful of fresh chickweed leaves and stems

• 1 handful of salad leaves (lots of wild edibles such as dandelion, nasturtium, gotu kola, purslane, nodding top, cobbler’s pegs, oxalis, fennel, herb robert and mallow)

• ¼ fennel bulb

• 1 pear

• 1 small handful of edible flowers

MAPLE CITRUS DRESSING

• Juice of 1 orange

• Juice of 1 lemon

• 1 tablespoon maple syrup

• 1 tablespoon olive oil or cold-pressed seed oil

• ¼ teaspoon salt

This salad is what I imagine fairies eat. It is so pretty and delicate in looks and taste, and so cleansing and purifying. Chickweed is an excellent source of Vitamin C, and is rich in compounds called saponins, which act like dishwashing detergent on a greasy pan, and help break down fats in the body. The edible herbs and flowers are also bursting with fibre, vitamins and minerals. The fennel is calming to the gut and helps improve digestion. Pears also soothe the digestion, assist bowel movements and also have a low glycaemic index, helping blood sugar regulation. Edible flowers can be bought in some health food shops, or collected from your garden or local area. Common edible garden flowers are nasturtium, viola, violet, pansy, calendula, rose, hibiscus, chamomile, lavender, cornflower and dandelion flowers. This salad should definitely be eaten wearing a tiara and fairy wings — or at the very least a dab of glitter or a sparkly bindi.

METHOD

Wash and drain the chickweed and salad leaves and shake out the water, or pat dry. Place the leaves in a salad bowl.

Slice the fennel and pear into delicately thin strips. Add to the leaves and gently toss the salad.

Mix together the dressing ingredients and either serve on the side and let people add their own, or gently toss through the salad.

Scatter or delicately arrange the flowers over the top, so they don’t go soggy, and serve straight away, for maximum freshness and prettiness.

LEMON & BLACKBERRY ICING

• 1 cup (155g) raw cashews, soaked in cold water for 2 hours

• ½ cup (125ml) maple syrup

• ½ cup (125ml) lemon juice

• 1½ tablespoons lecithin

• 1 teaspoon pure vanilla extract

• A pinch of salt

• ½ cup (80g) coconut oil, melted

• ¼ cup (60ml) blackberry juice or purée (made from squashed blackberries)

NETTLE CAKE

• 2 handfuls of fresh nettle leaves

• 1¼ cups (310ml) rice bran oil

• ¾ cup (185ml) orange juice

• 2 teaspoons pure vanilla extract

• 2 cups (300g) plain (all-purpose) white spelt flour

• 1 cup (185g) raw caster (superfine) sugar

• 2 teaspoons baking powder

• 1 teaspoon bicarbonate of soda (baking soda)

BLACKBERRY FILLING

• 2½ cups (325g) fresh, fully ripe blackberries

• ½ cup (110g) raw sugar

• 3 teaspoons lemon juice

TO GARNISH

• fresh ripe blackberries

• fresh edible leaves and flowers

NETTLE & BLACKBERRY FOREST CAKE

To make the icing, put the cashews, maple syrup, lemon juice, lecithin, vanilla and salt in a blender and blend for 3 minutes. Add the melted coconut oil and blend for another 2 minutes. Tip into a shallow bowl, then cover and leave in the fridge overnight.

Preheat the oven to 180°C. Oil a 20cm cake tin and line with baking paper.

To make the cake, blanch the nettles in a pan of boiling water for 5 minutes, until soft and bright green. Drain and cool slightly, then purée using a stick blender, or in batches using a jug blender. Set a sieve over a bowl and push the purée through with the back of a spoon, to give you about ½ cup (125 ml) of nettle purée. Stir in the oil, orange juice and vanilla until combined. Sift all the dry ingredients into a large bowl. Add the nettle purée. Using a figure-eight motion, fold gently to remove the lumps, but don’t overmix; you want to keep in the air bubbles for a fluffy cake. Pour the batter into your cake tin and bake for 40–45 minutes, until a skewer poked in the centre comes out clean. Remove from the oven and leave in the tin for 10 minutes, then turn out onto a wire rack to cool. Chill in the fridge for 30 minutes before icing and filling.

To make the filling, lightly mash the berries in a saucepan with a fork to release some juice. Add the sugar and lemon juice. Bring to the boil, then reduce the heat and simmer for 10–15 minutes (or a little longer if making a double batch), stirring so they don’t stick. To check they’re ready, dip a cold spoon into the mixture, wait a few seconds, then wipe your finger across the spoon. Your finger should leave a clean streak across the spoon. Cool completely before using.

To assemble the cake, mix the icing using an electric hand mixer or stand mixer. Add the blackberry juice, teaspoon by teaspoon, for a softer consistency and a lovely colour; you may not need it all. The icing should be spreadable, but still hold its shape in peaks and waves, and shouldn’t fall out of the bowl when tipped upside down. Using a long sharp knife, cut the cake in half horizontally. Spread a 1 cm (½ inch) thick icing layer over the bottom cake half, then the blackberry filling. Top with the other cake half, spread the remaining icing over the top and garnish as desired.

UPSIDE-DOWN NACHOS

MEAT SAUCE

• 2 tablespoons extra-virgin olive oil

• 1⁄2 small red onion, finely chopped

• 500g extra-lean beef mince

• 1 x 400g can black beans, drained and rinsed

• 1 x 400g can corn kernels, drained

• 1 x 400g diced tomatoes

• 1 garlic clove, minced

• 1 teaspoon smoked or sweet paprika

• 1 tablespoon low-sugar barbecue sauce sea salt and freshly

• ground black pepper

QUICK QUACAMOLE

• 1 avocado

• juice of 1 lime

• sea salt

TO SERVE

• 50g (1⁄2 cup) grated tasty cheddar

• Plain Greek-style yoghurt

• 50g good quality plain corn chips

• Pickled jalapenos

METHOD

For the meat sauce, heat the olive oil in a large heavy- based frying pan over medium–high heat. Add the onion and cook for a few minutes, or until soft and translucent.

Add the mince to the pan and use a spatula to break it up. Cook for a few minutes, stirring occasionally. Once the mince is nice and brown, add the beans, corn, tomatoes, garlic, paprika and barbecue sauce. Season with salt and pepper, stir together to combine everything and cook until the mixture starts to simmer. Turn the heat to low, place the lid on the pan and cook for 10–15 minutes. Remove the lid and continue cooking until any excess liquid has evaporated.

Meanwhile, to make the quick guacamole, use the back of a fork to mash the avocado with the lime juice and a good pinch of salt in a small bowl.

Divide the meat sauce among bowls and top with grated cheese, a dollop of yoghurt, a generous spoonful of guacamole and some jalapenos, if you like. Finish by crushing up a handful of corn chips over each serve for that upside-down nacho experience!

lAZY LASAGNE

INGREDIENTS

SERVES 6

• 1 onion, quartered

• 2 large carrots, chopped 3 celery stalks, chopped

• 1 zucchini, chopped

• 2 tablespoons extra-virgin olive oil

• Sea salt and freshly ground black pepper

• 500g extra-lean beef mince (go for grass-fed and organic, if you can)

• 2 tablespoons minced garlic

• 2 tablespoons tomato paste

• 2 x 400g cans crushed tomatoes

• 2 teaspoons Italian seasoning or herb mix

• 1 litre (4 cups) chicken stock

• 6 lasagne sheets (wholemeal if you can get them)

• Small handful of basil eaves, roughly chopped

METHOD

Pulse the onion, carrot, celery and zucchini in a food processor until finely chopped.

Heat the olive oil in a large saucepan over medium heat and add the chopped vegetables. Season well with salt and pepper and cook for 10 minutes, stirring occasionally, until the vegetables have softened. Add the mince and garlic and use a spoon or spatula to break the mince up. Stir regularly until the mince is browned.

Add the tomato paste and stir through for 1 minute, then add the crushed tomatoes, Italian herbs and stock and stir well. Bring to a gentle simmer, then place the lid on top and cook for around 20 minutes.

Meanwhile, combine all the ingredients for the cheese topping.

Remove the lid from the pan and break the lasagne sheets into the mince mix, stirring occasionally to prevent them from sticking together. Cook the pasta to al dente according to the packet instructions – by this point, most of the liquid will have cooked away.

Preheat the grill to medium–high. Transfer the lasagne to a baking dish and dollop on the cheese topping. Grill for 10 minutes, or until golden. Spoon onto serving plates and serve topped with basil.

RED MEAT

At home, extra-lean beef mince is our primary source of red meat as it’s cost-effective, very low in fat and goes a long way, which means we can bulk sauces out with veggies and beans. A bonus of this is that we’re eating smaller portions of red meat overall, which isn’t a bad thing.

When shopping, I look for the heart-smart label or ‘extra-lean’ so I know it has the lowest amount of saturated fat. Lamb mince is also a great source of protein and iron, but is generally higher in fat and not available in extra-lean or heart-smart varieties.

CAPONATA

METHOD

INGREDIENTS

SERVES 4-6

• 2–3 aubergines (about 1kg); 2cm size cubes

• Vegetable oil for frying

• 2 celery sticks; 3 mm slices

• 1 onion; peeled and finely sliced

• 3 tbsp olive oil

• 80g capers in salt; rinsed, soaked in water and drained

• 80g pitted olives; quartered

• 2–3 tsp sugar

• 35ml (4 tbsp) red wine vinegar

• 300ml tomato passata

• 15g basil (half bunch) or flat-leaf parsley leaves; leaves roughly chopped and stalks finely chopped

• Salt and freshly ground black pepper

Heat a wide deep frying pan and add a glob of vegetable oil. Once the oil is hot, fry the aubergine in batches until golden and then drain on kitchen paper.

Blanch the celery in boiling water for 5 minutes, then drain into a colander.

Once all the aubergines are fried, gently heat the olive oil in the same pan and then fry the onion until soft and starting to colour.

Stir in the capers, olives, cooked celery and chopped basil or parsley stalks, then add the sugar, passata and vinegar. Season with salt and freshly ground black pepper and bring to the boil.

Add the fried aubergine, reduce the heat and leave to simmer gently with a lid on for 20–30 minutes, or until the flavour has intensified and the sauce has reduced and thickened slightly. Check the sweet and sour of the dish and adjust with vinegar and sugar to taste.

Once the caponata has cooked and cooled, stir through the roughly chopped basil or flat-leaf parsley.

Season to taste with salt and freshly ground black pepper

CHERRY ROCKY ROAD

INGREDIENTS

SERVES 6-8

• 185g unsalted butter

• 470g dark chocolate (70 percent or a 2:1 ratio of dark and milk)

• 43g (3 heaped tbsp) golden syrup

• 200g amaretti biscuits; broken

• 100g mini marshmallows (or large snipped with scissors)

• 100g candied Italian orange and lemon peel

• 130g almonds; flaked or nibbed

For best results, use a 30cm x 40cm x 5cm baking tray.

METHOD

Put the chocolate, butter and golden syrup into a heatproof bowl. Place over a pot with 5cm of water simmering in the bottom.

Melt gently, stirring intermittently. Take off the heat once all solids are almost melted – any last little solid pieces will melt as the chocolate is cooling.

While chocolate is melting, measure all remaining ingredients into another bowl.

Once the chocolate is all melted and relatively cool (cool enough that the marshmallows won’t melt), add the bowl of measured ingredients, stir well and pour into a tray lined with baking parchment. Level and pop into the fridge until set.

Note:

Very moreish; great given as a gift. Best served as a snack.

SPRING BRUSCHETTA

METHOD

INGREDIENTS

SERVES 8

• 350g fresh shelled peas or frozen baby peas

• 2 garlic cloves

• Juice of 1⁄2 lemon, plus extra juice and finely grated zest to serve

• Handful each of mint leaves and parsley leaves

• 30g Pecorino Romano, grated, plus extra to serve

• 80ml (1⁄3 cup) extra-virgin olive oil, plus extra for drizzling

• Sea salt and black pepper

• 4 slices of sourdough

• 2 × 100g buffalo mozzarella balls, roughly torn, at room temperature

• 8 anchovy fillets in olive oil, drained

Blanch the peas until tender, drain and refresh under cold water. Reserve 50g (1⁄3 cup) of the peas and set aside.

Finely grate one of the garlic cloves and place in a food processor with the peas, the lemon juice, mint, parsley and Pecorino Romano. Process to a fairly smooth mixture, scraping the side of the bowl if needed. Stream in the olive oil, process again to combine and season to taste. Transfer to a bowl and mix in the reserved peas. Set aside.

Grill both sides of the bread on a grill plate until golden and slightly charred on both sides. Halve the remaining garlic clove and rub one side of the grilled bread with the cut side of the garlic.

Place the bread on a serving plate and drizzle with some extra olive oil. Top with some mozzarella, follow with a spoonful of the pea mixture and finish by draping over an anchovy fillet.

Top with some lemon zest and extra lemon juice, another drizzle of olive oil, a scattering of extra Pecorino Romano and season with salt and pepper.

Cut each slice in half to serve as a snack.

CROSTOLI WITH MASCARPONE & BLUEBERRY COMPOTE

INGREDIENTS

SERVES 8

• Neutral vegetable oil or light-flavoured extra-virgin olive oil, for frying

• Pure icing sugar, sifted, for dusting

• Mascarpone, to serve

CROSTOLI

• 280g tipo 00 flour

• 40g caster sugar

• Pinch of sea salt

• 20g unsalted butter, softened

• 2 tablespoons rum, marsala or grappa

• Finely grated zest of 1 lemon

• 1 egg

• 1 egg yolk

BLUEBERRY COMPOTE

• 350g blueberries

• 100 caster sugar

• 1 rosemary sprig

• Finely grated zest and juice of 1 lemon

METHOD

For the crostoli, mix the flour, caster sugar and salt in a bowl. Add the butter and rub it into the flour until completely mixed in. Make a well in the centre and add the alcohol, lemon zest, egg and egg yolk. Whisk with a fork, bringing in a little of the flour at a time, until the dough is too stiff to work. Bring in the rest of the flour with your hands, then knead to bring the dough together. Continue to knead the dough for 6–8 minutes or until fairly smooth and quite stiff. If it is too crumbly and difficult to bring together, sprinkle in a little water, a teaspoon at a time, until the dough just comes together. Wrap in plastic wrap or baking paper and rest at room temperature for at least 30 minutes.

Meanwhile, combine all the blueberry compote ingredients in a saucepan. Stir well and cook over a medium heat for 8–10 minutes or until the blueberries have begun to collapse but still hold their shape and the syrup has thickened slightly. Allow to cool. (If the blueberries begin to collapse before the syrup has thickened, remove them with a slotted spoon and continue to reduce the syrup until thickened. Return the blueberries to the syrup and allow to cool.)

Working with one-quarter of the dough at a time (cover the remaining dough with an upturned bowl), use a pasta machine to roll out the dough. Roll the dough through a pasta machine through the widest few settings. Fold the dough into the centre from both of the shortest sides, like you’re closing a book, then rotate it 90 degrees. Repeat this a few times through the first few settings. (The folding helps encourage the finished crostoli to be light, bubbly and crunchy.) Continue all the way to the thinnest setting until the dough is about 0.5 mm thick.

Using a fluted pastry cutter, cut the rolled-out dough into strips around 16cm × 6cm. Make a cut in the middle of each strip with the pastry cutter, then tuck the ends through the cut to make twirled ribbons.

My preference is to fry this batch immediately, as you don’t want the dough ribbons to dry out, and then continue the rolling and folding once the first batch has been cooked. Alternatively, work in tandem and have someone frying and someone rolling.

Pour the vegetable or olive oil into a wok or saucepan to a depth of 7cm and heat to 180°C or until a small piece of crostoli dough dropped in the oil browns in 15 seconds. Add the crostoli in batches and fry for 1–2 minutes, turning halfway, until puffy and lightly golden. Transfer to paper towel to drain and cool.

Dust the crostoli with plenty of icing sugar and serve with the blueberry compote and a dollop of mascarpone.

CITRUS SALAD

INGREDIENTS

SERVES 4

• 50g honey

• 50ml chardonnay vinegar

• 2 tablespoons fish sauce

• 600g mixed citrus, such as pomelos, meyer lemons, blood oranges, cumquats, tangerines, grapefruit, limes, lemons or oranges

• 1 handful of green Sicilian olives, pitted and halved

• 1 handful of pistachios, shelled and roughly chopped

• 100ml extra virgin olive oil

• Flaky salt

• 1 handful of Thai basil leaves

METHOD

Put the honey in a small saucepan and place over low heat. Bring to the boil and cook, swirling occasionally, until the honey is caramelised and quite dark, but not burnt (the smell will give you some clues – it should smell sweet and like caramel, but not bitter). Once it’s in the right zone, quickly arrest the cooking by adding the chardonnay vinegar and fish sauce (be careful, it’ll spit). Leave to cool, adding a splash of water to loosen if it seizes up.

Peel all of the citrus very carefully with a sharp knife, leaving no pith on the flesh, then cut between the membranes to segment all the fresh, letting each segment fall into a bowl and then squeezing in the juice from the membranes.

Arrange the citrus segments in a serving dish, mixing up the colours and leaving most of the juice behind. Scatter the olives and pistachios over the top and dress with the burnt honey vinegar.

Dress generously with the olive oil, season well with flaky salt and freshly cracked pepper and finish with the Thai basil.

INGREDIENTS

MAKES 4

• 160g diced salted butter, at room temperature

• 200g white (granulated) sugar

• 2 eggs

• 280g plain (all-purpose) flour

• 1 teaspoon baking powder

• 500ml maple syrup

VANILLA ICE CREAM

• 7.5 egg yolks

• 500ml milk

• 500ml single (pure) cream

• 250g caster (superfine) sugar

• 2 tablespoons vanilla essence

METHOD

Using a stand mixer fitted with the paddle attachment, cream the butter and sugar until they’re pale and fluffy, and the sugar has dissolved. Add the eggs and mix until thoroughly combined.

Sift in the flour and baking powder and mix until just combined. Transfer the batter to an airtight container and refrigerate for at least 6 hours or until needed.

When you’re ready to bake the pudding, pour the maple syrup and the cream into a saucepan and bring to the boil, stirring to combine. Remove from the heat and leave to cool to room temperature.

Preheat the oven to 220°C. Shape the chilled batter into pieces about the size of a golf ball and arrange them in a single layer in a roasting tin. Pour the cream and maple syrup mixture over the top.

Bake for 15–20 minutes or until the top is golden brown. Serve the pudding immediately, topped with vanilla ice cream.

ICE CREAM

Put the egg yolks in a heatproof bowl with 2½ tablespoons of the milk and 2½ tablespoons of the cream and whisk them together.

Mix the remaining milk and cream with the sugar and vanilla in a large saucepan. Bring to the boil, stirring to dissolve the sugar, then pour the hot cream mixture into the egg yolk mixture, whisking as you go. Return the crème anglaise to the pan and cook over low heat, stirring constantly, until it reaches 83°C and thickly coats the back of a spoon.

Strain the anglaise into a bowl set over another bowl of ice and stir to cool it quickly, then transfer the mixture to an icecream machine and churn until frozen. Transfer to an airtight container and freeze until required.

SOUTHERN BUSINESS WOMENS CONNECT LUNCHEON

The Southern Business Women Connect luncheon was held in August at Currumbin RSL, which is sponsored and hosted by Community Bank Tugun, part of Bendigo Bank, to shine a spotlight on community organisations that champion diversity in the community. Hosted by Ali Plath from Triple M Gold Coast Breakfast kept the guests entertained as emcee with hilarity and fun as well as an informative, on-the-couch interview with the guest speakers. Keynote speaker, Chloe Maxwell of 4ASDKids and guest speaker Nick Marshall of Albatross Nippers provided an insight into the needs of special needs children in the community. All proceeds from the event will be donated to Albatross Nippers to enable them to continue to provide such a worthwhile program.
