Discovered at the age of 17 on a Columbian beach, Sofia Vergara has gone on to become one of the world’s most celebrated women – and she has done it all on her own terms.

B

arranquilla is a picturesque Colombian city that lies within a whisper of the beautiful Caribbean Sea. A vitally important port, the city is the economic hub of the country’s north and is an eclectic mix of time-honoured traditions and modern conveniences. It is home to the annual Carnival, a three-day celebration renowned the world over for its colour, vibrancy and cultural diversity. There is nothing reserved about Barranquilla. It is no shrinking violet, preferring to shout out its talents instead of standing meekly in a corner waiting to catch the eye. Much, one would say, like one of the city’s favourite daughters, Sofia Vergara. It was on the beaches of Barranquilla that the television star was first thrust onto the limelight, plucked from obscurity at age 17 to feature in her first Pepsi commercial. The combination of a nubile young woman with a size 32F bust and a string bikini jumping up and down on a sun-laden beach proved a heady mix... and a star was born. In a move that would set the tone for the dogged determination and far from ordinary decisions that have become synonymous with her career, Vergara stepped out of the limelight, marrying her childhood sweetheart at 18, having her son a year later, divorcing short of her 22nd birthday and even sneaking in three years of dental school. She arrived in Los Angeles via a stint as a television host in Miami. As the presenter of a travel show and then the host of a game show, Vergara attracted a large and loyal Latin audience. “When I moved to L.A., I used to go to this club,” she told Harper’s Bazaar. “At the end of the night, everybody would come outside to get their cars. I would be next to Leonardo DiCaprio and Justin Timberlake and my car was always right out in front! Nobody knew who I was, but the valets knew because they were Latin. But I haven’t been at this level until now. I’m greedy. I want to take advantage of my 15 minutes.” Hardly a conventional route to the top – and make no mistake she is certainly at the top – but Sofia Vergara is hardly a conventional individual. Like Gloria Delgado-Pritchett, the Modern Family bombshell who has made her a household name, Vergara is loud and opinionated, loving and caring and just plain funny. She has had her fair share of heartbreak too, among them the death of one brother, the deportation of another, and famously breaking up with fiancé Nick Loeb (of course, success and the affections of new beau Joe Manganiello of True Blood fame has helped ease the pain). Vergara is proud of her achievements, making no excuses for her inherent sexiness, voluptuous curves or outgoing nature. “Well, in Colombia everybody’s very voluptuous and you’re supposed to be,” she says matter of factly. “You don’t want to be skinny when all of your cousins are mermaids. You grow up thinking that’s how beauty is. “To be a pretty girl, to be a voluptuous girl, has opened many doors for me. You have to work with what you’ve got. If you have nice

cleavage or legs, show it off. Nobody’s a Miss Universe, so you have to take advantage of the one or two things you have that are good.” She makes no excuse for her trademark accent either, counting it among the pillars of her success. “When I moved to Los Angeles I decided to take accent classes, you know? Like speech classes, to see if I can fix it a little bit,” she told Women’s Health magazine. “But I spent so much money, so much time, and then when I would go to auditions I was always thinking about the pronunciation because you are supposed to put the tongue like this or—you know—like this, so then I would forget to act, and I was not getting any jobs, because all I wanted was to say the words right. And then one day I said, ‘You know what? That’s it. If I can’t get a job with my accent, then this is not a job for me’.” It is a decision that has paid off for the 42-year-old. The role of Gloria was written especially for Vergara with her input sought to ensure the character had a real Latin American feel. It is, she says, based loosely on her aunt, “who is just as funny but not as tawdry”. Now in its sixth season, Modern Family is watched by many tens of millions of viewers around the world and Gloria’s sassy likeability and edgy sarcasm has won Vergara a host of awards and plaudits. Along the way she has also appeared in a number of movies and even lent her voice to The Smurfs production but interestingly, it is the off-screen measure of her success that seems to hold the most sway for the actress. “I never wanted to be an actress just to be an actress,” she says. “I wanted to be an actress or a celebrity with a business. For me, I never even knew I could be funny or act.” Vergara’s appeal to the public in general and the Hispanic population in particular, is part of the reason that she continues to head Forbes’ list of the highest paid actresses on television. This year she is likely to earn some $50m thanks to a bunch of endorsements including Pepsi, CoverGirl, K-mart as well as Spanish-language commercials for home entertainment, laundry detergent and insurance brands. Widely regarded as Australia’s leading expert in weight-loss surgery, Dr Jason Free is passionate about changing the lives of his patients.

ramatic improvements in peoples’ health are what inspire Dr Jason Free to practice weight-loss surgery. A specialist in gastric bypass, sleeve gastrectromy and gastric banding procedures, he is based at Surgery Gold Coast near Pindara Hospital. “I’ve seen thousands of people benefit from all types of surgery,” he says. “But the most memorably satisfied patients are those who have undergone weight-loss surgery and had a massive turnaround in their health and outlook on life.” Educated in Perth and Brisbane before relocating to the Gold Coast 20 years ago, Dr Free says: “I’ve always wanted to be able to improve people’s lives by surgery and this is the field in which the benefits are so dramatic and obvious, and really improve people’s wellbeing.” The Gold Coast surgeon, who has spent time in weight-loss centres in Australia and at the University Medical Centre of Vienna, University College Hospital London and Queen Alexandra Hospital in the UK, says everyone who comes to see him has generally spent many frustrating years tackling obesity. They may also have had to battle with ill health directly attributable to being overweight including hypertension, heart disease, asthma, obstructive sleep apnoea, diabetes, back pain and osteoarthritis, as well as other issues relating to young people including reduced fertility. Furthermore, they may have also faced discrimination in the workplace. “There is well documented evidence that weightbased discrimination affects every aspect of employment, from hiring to firing, promotions, and even pay,” says Dr Free. “Some company human resource management staff even overtly say that hiring obese individuals is detrimental to their company finances because statistics show obese people have more sick days, and make more workers’ compensation claims.” Dr Free says for these patients the most striking result postsurgery is “the huge change in their demeanour and attitude and self esteem. They need less medications, are able to exercise more and those on analgesics for back pain or arthritis often can eliminate these. People with sleep apnoea are able to develop better sleep patterns and feel much more awake during the day. Almost everyone states they wish they’d had the operation years earlier.” Dr Free, who is married with three children, is an active member of the Surf Life Saving Club (Southport). “There’s a great community spirit there and it keeps us all fit,” he says. “We’ve all grown up living near the water and beaches, so we’re active in lots of water sports. One of our favourite weekend pastimes is taking our little boat out on the Broadwater, anchoring at various places, just hanging out on the boat while the kids swim around and explore the islands.” As part of his surgical career, Dr Free has volunteered in remote areas of Nepal and, as part of his ongoing development, every year 26 slim magazine summer 2015

merican Idol judge Randy Jackson, media magnate James Packer, makeup king Napoleon Perdis, reality star Sharon Osborne and even soccer player Maradona have all tackled their excess weight using weight-loss surgery. For a long time, there was a misconception that weight-loss surgery was a drastic and expensive measure, available only to the morbidly obese or Hollywood stars with access to the best care money can buy. But thanks to new, safer, more effective techniques, weight-loss surgery is becoming a very real option for those who have spent their years on unsuccessful diets. In recent months, many health experts have been calling for weight-loss surgeries to be offered through public health, given its effectiveness at resolving weight-loss issues, thus reducing the incidents of Type 2 diabetes and other weight related illnesses. In Australia, the most common procedure is laparoscopic sleeve gastrectomy, more popular than the traditional gastric band because of its technical simplicity and few side effects, says Australia’s leading weight-loss surgery expert, Dr Jason Free of Surgery Gold Coast. “The type of patients who undergo weight-loss surgery are changing,” says Dr Free. “It used to be considered an option only for the morbidly obese. But now, with emerging techniques and a variety of surgical options, many people are coming to us before they get to that stage. “Demystifying the surgeries means more and more people see it as a viable option. If you are overweight and diet and exercise haven’t worked for you, weight-loss surgery may be a very valid solution.” Here, we break down the four basic weight-loss surgeries.

#1 Gastric Bypass What it is: The upper part of the stomach is divided and the small intestine is attached to it so that food bypasses most of the stomach and upper small intestine ,where the digestive juices are formed. What this means in practice is that the amount of food you can eat is dramatically reduced. Who it suits: A high number of patients, but particularly those who have health conditions such as diabetes, high triglycerides or cholesterol, or reflux disease. What to expect: Robust long term weight-loss and improvements in diabetes and metabolic syndrome. Some diabetic patients are able to eliminate all diabetic medications within days or even hours of the operation. It is also extremely effective at treating gastrointestinal reflux. Downside: While there is a slightly decreased absorption of carbohydrates and fat, there is minimal chance of developing deficiencies. It is important, however, to have long-term follow up with your surgeon.

#2 Sleeve Gastrectomy What it is: A resection of about 85-90 percent of the stomach, leaving only a 15mm tube of stomach and decreasing the amount of food that can be eaten. Who it suits: This procedure can suit most people, especially younger obese patients. It is also a common choice for heavily obese patients as a first step procedure, leading to a gastric bypass later. What to expect: Extremely good, rapid weight loss. In fact, expect to see about 70 percent reduction in excess weight. Most people say their appetite is reduced after this surgery. Another benefit is that there are minimal long-term problems with this type of procedure. Downside: You should be aware that this procedure is irreversible as a large amount of the stomach is permanently removed.

#3 Adjustable Gastric Banding What it is: A band is placed around the upper part of the stomach to create a small pouch which restricts the intake of food to varying degrees. It is intended to provide a feeling of fullness. The benefit of this procedure is that the stomach is not removed or stapled, it is completely reversible. Who it suits: Again suitable for most people but commonly those who do not want a more invasive procedure; patients at high risk for other procedures; and those who understand the commitment to band maintenance and eating habits. What to expect: Minimal invasion compared to other procedures and very satisfying weight-loss. Downside: Achieving the correct amount of restriction is a fine-tuning process to maintain adequate weight-loss without causing too much restriction and leading to problems and a poor quality of life. You will need to work with the surgeon to adjust the band to vary the amount of restriction until a perfect level is achieved and be committed to the process.

#4 Revisional Bariatric Surgery What it is: This is the correction of a gastric band to make it work better. Can also be a conversion from a gastric band or sleeve gastrectomy to a gastric bypass. Who it suits: Some patients who have already undergone gastric banding might be unsatisfied. Some have problems such as reflux or regurgitation that affect the quality of their life. Others may have insufficient weight-loss following prior gastric band and sleeve gastrectomy. Revisional banding can help address these problems. What to expect: There is evidence that a gastric bypass after a band provides better and more sustained weight-loss as well as improved food tolerance and quality of life relative to conversion to a sleeve gastrectomy. Simply removing a gastric band will alleviate problematic symptoms a patient may experience due to the band, a conversion to another procedure will prevent weight regain after the band is removed. Downside: Revisional surgery involves correcting a previous procedure, thus necessitates more surgery, however the benefit of lifestyle improvement generally outweighs the risks.

Food, Glorious Food There are a lot of myths and misinformation surrounding eating habits after surgery. Dr Free and his team will give you a detailed dietary plan, as well as ongoing support and information, but here is a general guide. Stage 1 – Two weeks - Fluids only This first stage of the diet gives your body time to heal and recover from the surgery. It will also help the rearranged stomach structure to settle into the correct position. The size of your new stomach pouch is about the size of an egg. The fluids-only stage of the diet preserves and protects the new stomach structure. In the case of a gastric band; eating solid food too soon will cause the band to move, making the new stomach pouch bigger. This will defeat the purpose of the surgery. If you have had a sleeve gastrectomy or gastric bypass, eating solid food too early may put pressure on the staple line and cause it to perforate. Stage 2 – Two weeks - Pureed food This stage allows the body to continue to heal. At this stage of the diet you may find that you vomit if you eat too much pureed food, drink a large amount of fluids, drink with your pureed meals, or eat solid food. It is therefore, very important to take it slowly and stick to the recommended amounts at each meal. Stage 3 – Two weeks - Soft, moist food At this stage of the diet you can introduce soft and crunchy textured foods to your diet. With trial and error you will find there are some foods you can’t manage at this stage. It is very important at this point to chew all food really well to prevent pain and vomiting. You will also need to eat very slowly and stop eating as soon as you feel comfortably satisfied. Eating too much at this stage, or eating too quickly may cause pain, vomiting and aggravate your surgical wound. Stage 4 – Healthy Eating When you start this phase of the diet, you will be eating ‘normal’ textured foods. Aim for a healthy, balanced diet, which incorporates a wide variety of foods from the five food groups. It remains important at this stage to chew every mouthful to a paste before swallowing, and avoid swallowing big pieces, or tough sinewy meats which can cause discomfort. A chance to start over Hiding herself from the world, Christine Vose was morbidly obese and desperately unhappy. Until weight-loss surgery helped her to start living again.

A

t 62, Christine Vose felt like she had only been living half a life. Tipping the scales at 98 kilograms, Christine had almost given up on herself, plagued with feelings of worthlessness and battling very real depression. “I felt unhealthy, ashamed, out of control, depressed, hopeless, and worthless,” Christine says bluntly. “Because of my weight I wouldn’t socialise, I just stayed at home a lot,” she says. “I never wanted to be seen, and I felt like I didn’t deserve nice clothing. I just wasn’t good enough for anything.” It was a desperate place to be, but it wasn’t for lack of trying. “I tried many things to reduce the obesity but it was terribly hard,” she admits. “I knew what to eat and how to eat, but just could not eat that way. I watched in the mirror as day-by-day the weight inched on and I was helpless to stop it.” The cycle continued, with both Christine’s weight and her sense of helplessness growing with each passing year. When her weight began to impact on her health she looked at other options. “About 10 years ago I had gastric band surgery,” Christine says. “It controlled my weight to a degree and I lost about 10 kilograms, which brought me down from about 108 kilograms to 98 kilograms.” And that is where it stayed. Knowing she still needed to lose weight, Christine once again began the soul-destroying cycle of dieting without success, her frustration growing. In 2013, her obesity further impacted on her health, and Christine decided it was time to see another weight-loss surgeon. This time, it was Dr Jason Free, one of Australia’s foremost authorities on weight-loss surgery. That’s when her life began to change. “When I met Dr Free, he was wonderful,” Christine says. “He put me at complete ease and took the time to really listen to me. After considering my options and discussing them in light of my history I went for the gastric bypass. The shame I felt at needing to turn to major surgery was reduced by the knowledge that I was entering into a holistic plan of change. The surgery was the first step in becoming a new me… it was a tool that would reduce the physical urges and assist me in eating normally and healthily.” Christine says that while his expertise and advanced knowledge in the field of weight-loss surgery was impressive, it was his level of understanding, empathy and compassion that really changed her life. For what seemed like her whole life, she had lived with the shame of her weight problem, and now she felt she had found someone who could not only offer her a solution, but also understanding. The weight was already lifting. “Dr Free knew the horror I felt about being obese. He knew it was more than just the weight. When you are obese you are looked on as an object,” Christine says. “A human, but not quite right. I knew people looked at me and perhaps pitied me in some way. It felt like my voice had no power; that because of my obesity what I had to say was of no consequence… how could it be if I couldn’t even summon up the willpower to eat properly?

“During my meetings with Dr Free I recognised in him a deep respect for humanity and for me as a person. To him, I wasn’t just an obese person, I was a valuable person. I think this is what helped me the most.” In March 2014 Christine underwent the gastric bypass, in the capable hands of Dr Free and his team. “I was amazed at how easy it was,” she says. “I was up and walking a few hours later. I had expected a lot of pain and difficulty in mobilising, but there was no pain, just a mild discomfort.” Dr Free says Christine’s experience is a common one. “It’s amazing how people recover so rapidly and with so little pain after gastric bypass surgery,” Dr Free says. “Often I see my patients the day after their operation and I can tell from a distance who’s had a bypass compared to those who’ve have had a different procedure, because they’re the ones that look the happiest right from the start.” Christine says the procedure changed her life immediately. “It was just like magic,” she says. “The week before my surgery I was starving, the hunger pains were intolerable, but since the surgery they have gone. There is no gnawing hunger, no urge to stuff myself. And I only eat small amounts. “Since the surgery I have many times been faced with a plate of food and felt that it was too much, so I just don’t eat it. It’s astonishing but true, and every day now contains little miracles of this kind.” Since the surgery Christine has already lost over 24 kilos, and the weight-loss continues. “I am no longer obese,” she says simply. “And I am still losing weight. I am healthy and happy and I know this is different to anything I have ever felt before. It is effortless, it’s just the new me.” Dr Free says the gastric bypass procedure is one of the most successful procedures available, and results such as Christine’s are not uncommon. “Patients like Christine are often intimidated by bypass surgery because they consider it a major complicated procedure, whereas in reality it’s not very complicated, and for the extra time and skill that’s required I believe it’s definitely well worth the effort. “The patients who have the greatest benefit from this type of surgery are those like Christine who’ve had problems affecting their quality of life from previous procedures. “After travelling around Australia teaching many surgeons the skills to perform gastric bypass, I believe it is the best option in many patients.” Christine would certainly agree that it was the best option for her. “It has changed my life. I know with absolute certainty that I will never be obese again and I love it.”

The weight is over Carrying excess weight has serious negative physical and emotional implications. Conversely, says Dr Jason Free, losing weight can change your life forever.

M

ore than 14 million Australian adults are now considered overweight or obese. 14 million! That is more than the combined populations of Denmark, Singapore and Ireland. This trend of tipping the scales does not belong to Australia alone, nor is it the preserve of wealthy Western nations. It comes, we know, as a result of the imbalance between calories consumed and those we burn off. The fact that our diets now comprise a disproportionate percentage of energy-dense, fat-filled food doesn’t help, neither does an increasingly sedentary lifestyle. Weight-loss surgery specialist Dr Jason Free says that for the people carrying that extra weight, the concern goes beyond the astronomical grocery bill or finding clothes large enough to fit. Of course those factors contribute to the overall discomfort, but of greater importance is the physical and emotional burdens being overweight puts on the shoulders of the person in question and society as a whole. “Being overweight and obese greatly increases your susceptibility to coronary heart disease with the build-up in the arteries preventing oxygenated blood from reaching the heart as well as high blood pressure and your chances of a stroke,” Dr Free says. “There is also an increased risk of osteoarthritis, certain kinds of cancer, gallstones, reproductive issues, sleep apnoea and abnormal blood fats. But perhaps the greatest risk and one reaching epidemic proportions is Type 2 diabetes, which affects more than 10 percent of adults in this country – most of them overweight or obese.” The direct and indirect costs of obesity and related illnesses are putting a burden of their own on both our health system and economy. Some $40 billion was spent last year in related hospital and medical care while the loss of productivity in the work place due to obesity-related issues was estimated at almost $7 billion over that same period. Many of us seem to have little sympathy for people whose weight we perceive is a direct result of their indulgence, but research tells us that obesity is a mental illness and the reality is that compassion is called for when regarding the emotional and physical issues that are a way of life for overweight adults and children. Feelings of shame, rejection, low self-esteem and depression are common in obese adults. Despite its prevalence, being overweight still carries a social stigma leading to anxiety about leaving the house and a deep desperate loneliness. Activities we take for granted – going to the movies, public transport, and holiday travel – are often impossible for overweight people because of small seats and unsuitable accommodation. It is a vicious circle. Many people turn to food for comfort. This stress-based eating leads to weight gain which in turn makes people feel bad about themselves which of course leads to more eating. Overweight people also gravitate to less-active lifestyles because it takes so much more effort to exercise leading unfortunately to great weight gain.

The benefits of losing weight

Of course having fewer overweight people in a society has a great monetary benefit for the community, economy and health care system but these facts are certainly overshadowed by the advantages to be gained – physically, emotionally and socially – by the person in question. Losing weight takes pressure off the heart, and off the joints, and decreases the risk of diabetes and other diseases. It also allows a person to be more active and healthy. It can be, quite simply, life changing says Dr Free. “Perhaps the greatest benefits are the emotional ones,” he says. “We have had many patients, ranging from overweight to morbidly obese, who say they genuinely felt worthless when they were overweight. No person should ever feel worthless – that is so damaging to the psyche and to the heart and soul. “To see that change take place in a person; to see someone gain confidence and start to feel like they matter, sometimes after a lifetime of feeling second-class, well, that does more good for a person than you can measure. That is truly life-changing.” Bariatric or weight-loss surgery is rapidly gaining momentum providing a tangible alternative for those who have failed to lose weight through conventional diet and exercise or who simply have too much weight to lose. It also presents the ideal opportunity for the vicious obesity cycle to be broken. “If a parent is overweight there is a greater chance for their children to also have weight problems,” says Dr Free. “We do not want poor eating habits and a lack of activity to be passed from generation to generation. Conversely, a patient who loses weight and is then leading a healthy, active lifestyle can pass on these lessons to their children, and teach the next generation a better way of doing things so this obesity epidemic can be stemmed. “It’s not all lifestyle factors that lead kids from overweight parents to become obese. Recent evidence from epigenetic studies reveal that children born to mothers who have undergone a weight-loss surgery are less prone to developing obesity than their siblings born before their mothers had the procedure. Psychologist Emma Howard explains the benefits of therapy, and how to get the most out of the experience.

nfortunately, today’s society isn’t always supportive of an individual who is unhappy or depressed. We often find it uncomfortable to be around a melancholy person because we don’t know what to say to them. So a breeding ground of depression is created, because the individual feels isolated and alone. If a person doesn’t have a genuine sounding board and platform to express these feelings of melancholy, a trained psychologist can assist in changing their thinking, and helping them to lead a happier life.

IS THERAPY GOOD FOR US?

A trained psychologist (who, at best practice is endorsed by the Australian Psychological Society, and has mandatory registration with the Australian Health Regulation Authority) can give the client strategies and information to help them deal with the emotional challenges they are facing. As humans we are all in an eternal search for the feel good factor. Whether it be psychological stimulation, or a physical desire to feel the sensation of wellness, we define ourselves by what makes us feel good. It is important to identify unpleasant emotions and how they impact on our physical state. Whether it is the physical tightness in our chest from anxiety, the dull ache in the pit of our stomach from depression, or the burning waves of anger, these physical reactions are part of what drives a person to engage in therapy. 36 slim magazine summer 2015

These days, therapy or ‘psychological intervention’ is becoming more widely accepted in Australia. Now, a person may be more comfortable talking about the fact that they see their dentist for a checkup twice a year, their hairdresser once a month and their psychologist once a week. A good psychologist will enable the client to not only identify unhelpful thinking styles, they will also enable the client to repackage and reorganise these thoughts so they are actually helpful to the client moving forward.

ARE WE THINKING TOO MUCH?

Part of the cause of our community’s poor mental health is our over-thinking of subjects that range from irrelevant (who the latest celebrity is dating) to harmful (television shows exploring crash scene investigations). These distractions lead to an over-activation of our hippocampus (the primitive part of our brain which regulates the excretion of cortisol, adrenaline and noradrenaline hormones, which aid and abet the ‘fight and flight’ response). The over-activation of our adrenals has links to physical ill-health. Our challenge is to be mindful of how we respond and react to situations that can possibly be interpreted as activating the ‘fight or flight’ response unnecessarily (such as when we are cut off in traffic, or our boss wishes to have a quick word).


CAN YOU BE TOO AWARE OF YOUR FEELINGS?

A term I use in therapy sessions is ‘You’re overcooking it’. Just as a good dish can be ruined by too much heat, so too can our behaviour be tainted by over-analysing. A simple way to test if you are too aware of your feelings is to honestly ask yourself if you are mentally fatigued or physically lethargic after engaging in thought analysis.

HOW TO KNOW WHEN AND IF WE NEED THERAPY?

The most common tool utilised by most psychiatrists, psychologists, GPs and mental health professionals to determine if therapy is needed is the DASS (Depression, Anxiety & Stress Scale) or the K10 (Kessler 10 Questions). These questionnaires can be accessed online and provide a helpful screening tool to identify if you may need to discuss your current situation further. The greatest strength a psychologist will have in delivering therapy that is effective is impartiality. Impartiality for the psychologist enables objectivity.

WORK OUT WHICH STYLE OF THERAPY SUITS YOU

Cognitive Behaviour Therapy (CBT) and/or Acceptance & Commitment Therapy (ACT) have the strongest clinical outcomes so they are the treatments most easily accessed via a Medicare Australia referral from a GP or a Mental Health Care Plan. If you are an independently-financed client, with potential access to a private health cover rebate, you can choose the type of therapy you wish to receive. An overriding consideration is that the therapeutic intervention is evidence-based and can deliver outcomes. My professional opinion is that childhood relationships, experiences and memories are the pathway to understanding the adult psyche. Moreover, research indicates that as much as 70 percent of the success of your treatment is attributable to the therapeutic relationship, or, simply put, how much you like the psychologist. This is an astounding statistic which I have reiterated to the psychologists at Equilibrium Health. The psychologist has achieved a strong therapeutic connection when the client can imagine

themselves being a friend. However, the precarious role for the psychologist is to empower and equip the client so they can manage eventually without your assistance.

HOW TO GET THE MOST OUT OF THERAPY

Commitment to change is the initial building block to successful therapeutic intervention. The individual needs to engage in therapy for their own reasons, not to please a partner or family member. With an internal focus of control and a mindset which says ‘I am responsible for my world. My actions are my manifestation’, a client will have the greatest likelihood to achieve success with therapy. E

veryone experiences adversity or times in life when challenges seem insurmountable, even if those challenges are losing weight or getting fitter. Do you ever wonder why some people seem to float through while others are frantically paddling like ducks beneath the surface? The answer is resilience, says Clayton Cook, an associate professor at the School of Psychology at the University of Washington. Resilience, something that is slowly attracting more interest in the field of mental health, has two dimensions, he says. “The first is called surviving.” This is having the skills to bounce back from a setback or a tragedy. Not to ignore it, or pretend not to be bothered by it, but to deal with it truthfully and then move forward. The second element to resilience is more fascinating. It’s called the “thriving element”. That means not just surviving but using these challenges to thrive and optimise your wellbeing. You don’t have to be under stress or confronted with any major challenge in order to enhance your wellbeing, says Cook. Rather, you can implement routines, habits and attitudes that make you feel great. These may include exercising regularly, eating healthily and having a relaxation practice. You should also minimise toxic habits and relationships. The result is that you will view your life as more satisfying and meaningful and, of course, happier. You’re not just ticking things off a huge to-do list that runs your life, or going through the motions of what may now be an outdated plan that you have set in place. Rather, you can find a reason for everything you do that makes sense to you. You are also content with who you are or what you have; you don’t have to be the first, or the best, or the richest. The good news is, you don’t have to be born with resilience, you can develop it. The first step is working out what your values are and trying to live your daily life according to those, suggests Cook. For example, you may survive and thrive through the stress of an illness or a diet because your value is to be healthier and you can see how what you are doing aligns with this. It’s the failure to do this – align values and behaviours – that creates chronic stress and erodes resilience. Think about what’s important to you – being fit and well, doing meaningful work, or having great relationships. Only when you have decided what your values are, can you plan to live by these values, and live more happily. Putting habits in place like regular exercise, eating well, doing a relaxation or meditation exercise daily, and honouring healthy relationships are all behaviours that help build resilience. It is believed it takes four weeks to form a habit, so get out your planner and spend some time working out how you can not only survive life’s adversities, but thrive too. he symptoms are often horribly cruel and difficult to deal with for sufferers and their loved ones, but for millions of Australians, living with dementia is all too real. Here is a checklist of common symptoms of dementia. Alzheimer’s Australia advises to go through the list and if there are several ‘yes’ answers, a doctor should be consulted for a complete examination.

What causes dementia?

It is normal to forget meetings, colleagues’ names, or a business associate’s telephone number occasionally, but then remember them later. A person with dementia may forget things more often, and not remember them later.

2. Difficulty performing familiar tasks

Busy people can be so distracted from time to time that they may leave the carrots on the stove and only remember to serve them when the meal has finished. A person with dementia might prepare a meal and not only forget to serve it, but also forget they made it.

3. Disorientation of time and place

It is normal to forget the day of the week or your destination for a moment. People with dementia can become lost on their own street, not know where they are, how they got there or how to get back home.

Most people with dementia are older, but it is important to remember that not all older people get dementia. It is not a normal part of ageing. Dementia can happen to anybody, but it is more common after the age of 65 years. People in their 40s and 50s can also have dementia. There are many different forms of dementia and each has its own causes. The most common types of dementia are; Alzheimer’s disease, Vascular dementia, Parkinson’s disease, Huntington’s disease, Fronto Temporal Lobar Degeneration (FTLD), Alcohol related dementia (Korsakoff’s syndrome), Dementia with Lewy bodies and Creutzfeldt-Jacob disease.

Anyone can temporarily misplace a wallet or keys. A person with dementia may repeatedly put things in inappropriate places.

Everyone has trouble finding the right word sometimes. A person with dementia may forget simple words.

T

iredness is tricky. It can leave us so washed out that we’re not even sure if we used to feel any other way. Even worse, it can stop us doing the things we enjoy, including hobbies, taking time out with friends, or fitting in a sweaty session at the gym. Estimates vary, but it is thought that between three and 10 percent of patients visit their doctors because of fatigue. Often it can be hard to pinpoint the cause. While it is true that fatigue can be a symptom of a serious health problem, in most cases it is about lifestyle and what we are – or are not – doing. Here are some of the most common causes of fatigue and some easy steps to overcome them.

Poor diet An addiction to sugar is the catch-22 of tiredness. You feel tired, so you eat sugar, and after you eat sugar, you feel tired. That’s because those empty calories give you a sugar high, then an extreme low. To maintain energy, you need to eat regularly – three to four times a day – but avoid sugar, including products such as bread, pastries and cakes, and simple sugars like sugary drinks and sweets. Instead, eat fresh fruits and vegetables, complex carbohydrates and lean protein. Don’t forget to drink lots of filtered water; being dehydrated can really tire you out. Typically, sugar attacks hit about 3 – 4pm; usually the time you raid the junk machine. What you really need to eat is something healthy that will hold you until dinner, without interfering with blood sugar levels. Low fat cheese and wholewheat crackers are a great snack because the protein and complex carbohydrates will keep you satisfied. You could also try some low fat yogurt.

Stress excess Too much stress will wring you out faster than a load of washing, because of the constant flooding of the stress hormone adrenalin. In fact studies suggest that stress and depression are present in at least 50 percent of fatigue cases. Job dissatisfaction, heavy workloads, conflicts with bosses or colleagues, or threats to job security can all cause workplace stress which leads to fatigue. Other common workplace causes of fatigue include shift work, which confuses the body clock and makes both sleeping and staying awake more difficult; and Sick Building Syndrome (SBS), where the materials used in the office or workplace can contribute to lethargy and even illness. To reduce energy-sapping stress you may need to alter some of the conditions under which you work: reduce overtime, delegate, make sure you take regular breaks, or even renegotiate your position within your workplace. Irrespective of whether you are able to make any, or all of these changes, what you absolutely must not do if you want to reduce stress and fatigue is bring work home, or answer your mobile phone to work calls after hours. Finding a hobby that allows you to switch off from work will also pay positive results energy-wise.

When to call the doctor If fatigue lasts longer than two weeks or is accompanied by other symptoms such as fever, weightloss, nausea, hoarseness or muscle aches, get help. Fatigue can be related to diabetes, depression, thyroid or adrenal imbalance, and heart, liver or kidney disease.

Not enough exercise Getting more exercise may be the last thing you feel like but, ironically, studies show that increasing the amount of time you spend exercising will lower stress levels and increase energy levels. Engaging in moderate physical activity for half an hour or longer most days of the week may decrease stress, improve your mood and leave your feeling energised, say researchers at the prestigious Mayo Clinic, in the United States. Aim for 30 to 40 minutes of exercise a day and include something that gets your heart rate up as well as some stretching and resistance exercise.

Low iron levels Women need more iron because they menstruate. They also need more iron during pregnancy. Australian health research suggests about 20 to 40 percent of women of child-bearing age fall short of getting the recommended amount of iron in their diet. Red meat is a good source of iron, but if you are vegetarian, you can take an iron supplement. Have your iron levels tested by your doctor.

Poor quality sleep Having trouble getting to sleep, waking up often, or simply getting too little sleep will leave you overtired until you catch up on your sleep debt; and who knows when that might be? Here is more bad news. If you don’t get enough sleep, you’ll probably gain weight. A number of international studies show that people who sleep less than six hours a night have been shown to have a higher body mass index (height to weight ratio) than those who sleep seven to eight hours, according to Dr David Rapoport, associate professor and director of the Sleep Medicine Program at the New York University School of Medicine. Aim for eight hours of quality sleep a night and remember that the sleep before midnight, rather than after, is the most valuable. In fact, sleep researchers suggest that every hour before 12am may be worth two hours, while every one after 12am is only worth half an hour. If you are a poor sleeper, try listening to relaxing music before bedtime, making sure you have heavy curtains so your bedroom is dark, and wear earplugs if you live near a noisy road or with a snorer. If you still wake up, just relax, and count sheep or something equally as boring. Don’t look at your watch, turn the light on or watch late night television. Sweet dreams. slim-magazine.com.au 51

t comes as a bit of a shock when your body hits a speed bump in the road of life and no longer functions as it once did. It is even more of a shock when your body does not bounce back entirely from gall bladder surgery. With the advent of key-hole surgery, you look pretty much the same, but you could still be uncomfortable and perhaps experiencing digestive problems such as bloating, more frequent bowel movements and even diarrhoea. This doesn’t happen to everyone, but that is cold comfort if it is happening to you. The most significant change once you have had your gall bladder removed is that you no longer have a place to store bile. Bile is a liquid produced by the liver, stored in the gall bladder and released into the small intestine to aid in the digestion of fatty foods. In the absence of a gall bladder, bile is being constantly dripped into the small intestine, meaning your food is not being digested as well. Hence the uncomfortable feeling after eating, especially if you have eaten fatty or fried food. Makes sense, doesn’t it? You were probably advised to follow a low fat diet after surgery while your body adjusts to living without a gall bladder. It is only when you go back to eating the way you did prior to surgery that you may experience some problems. These problems usually go away over time, however you may need to make some lifestyle changes in the short term to manage them. If symptoms persist see your doctor.

How to be in the best shape of your life, no matter how old you are.

s every woman knows, staying fit can present a real challenge as you age. That doesn’t mean you can’t be in the best shape of your life in your 30s, 40s or 50s without too much strain or pain, says one of Australia’s leading motivational and fitness trainers Mark McKeon. “Even better if you start in your 20s,” he says. “The cardiovascular benefits you develop then can stay with you for years.” That said, don’t panic if you’ve never caught the exercise bug. It really is never too late to get fitter. In a well known study called the Honolulu Heart Program, people between the ages of 61 and 81 managed to double their survival rates simply by doubling the amount of kilometres they walked each day. Just wanting to get fitter is the very best way to motivate yourself to start a regular fitness programme, no matter what your age. People who are physically fit have increased vitality, less stress and depression and are able to perform most day-to-day activities with ease, says Dr Mark Wahlqvist, co-author of AgeFit and a Professor of Medicine at Monash University, Melbourne. They also have less body fat and are able to slow the bone and muscle loss that comes with age. Of course, stronger, leaner muscles mean you’ll feel more confident in stylish clothes, and strong core muscles mean you’ll reduce your chances of suffering back pain too. Exercising regularly will also help protect you from Type 2 diabetes that now affects more than 800,000 Australians, and heart disease which kills around 12,500 women each year. If you are already imagining hours spent at a gym to gain these benefits, think again. In your 20s You feel like you can conquer the world, or at least the stair climber, and you should. “In your 20s anything goes, within reason,” says McKeon. What you need is a lot of cardiovascular work to strengthen your heart, your respiratory system and your immune function, with some strength training thrown in.” McKeon recommends cardiovascular workouts of 40 to 50 minutes, five times a week. Aim to work out at a heart rate of 145 to 150 beats per minute for at least 20 minutes of each session. (Use a heart rate monitor, or simply your watch.) Try rollerblading, tennis, step classes or other aerobics classes, running, volleyball or netball. You also need one strength or resistance training session a week. We suggest weight training at home or at the gym, Ashtanga yoga, or boot camp moves like power lunges, press ups and chin ups.

Your 30s This is the make or break fitness decade. You may be trying to scale the heights in your career, or start a family. One thing is certain: you’re in a real time squeeze. Don’t give up, urges McKeon. “A lot of people drop out now, but it’s important to keep the exercise habit to maintain health and prevent creeping weight-gain.” You need an absolute minimum of 40 minutes of exercise three times a week that comprises a mix of cardiovascular and strength work. Good options include exercise circuits where you alternate between aerobics and weight training moves; jogging, tennis and boxing. Think ‘fun’ so you keep at it. Your aim is to workout at a heart rate of 135 to 145 beats per minute for at least 20 minutes of each session. “You should also be starting to do some flexibility work, such as yoga, Pilates, or just stretching,” McKeon says. “If you are really pushed for time, try an exercise DVD at home.”

Your 40s You are already starting to lose muscle mass, as much as two percent a year, so you need more strength work and to continue some cardio, says McKeon. Aim to work out a minimum of three times a week for at least 40 minutes, the ideal being two days on and one day off. “As you get older, your body takes longer to get rid of the metabolic wastes created when you exercise and to repair muscle micro tears,” says McKeon. Try brisk walking, cycling, swimming or rowing, all exercises that work your heart but are less high impact. Get your heart rate into the 125 to 135 beats a minute range for at least 20 minutes of your workout. “For extra bone strength, add a weekly resistance session. If you can find a gym you like, get some personal instruction about technique and load. Lifting weights the wrong way can cause injury. Otherwise, doing resistance moves at home with hand-weights or your own body weight is a good option. Don’t forget stretching. Get into the yoga habit now and you’ll reap the rewards for life.”

50s plus “If you’re doing anything but walking, you should have a minimum of one day between exercise days,” says McKeon. He also advises against running more than two days a week, even if you are capable of it. “Your shock absorbers are starting to wear and the exercise benefits don’t outweigh the risks of muscle damage or stress fractures.” His message: don’t go hard, go easy, but keep going. “You are now losing at least three percent of your muscle mass and strength a year unless you’re working out.” You’re also losing more bone, especially after menopause, as well as power. Weight training – lower weights and higher repetitions – will help. “Or do isometrics, for example, grabbing and holding onto something and squeezing as hard as you can. Dips, lunges and pushups are also fantastic.” Don’t forget your heart health. Work out in the 120 beats per minute range for at least 20 minutes, three times a week, with workouts of 40 minutes including plenty of stretching. Good exercise suggestions include weight training, dancing, Iyengar yoga, brisk walking and Tai Chi (for balance and even lowering blood pressure). 56 slim magazine summer 2015

check your fitness Circulation Press down on one of your fingernails for a second until your nail turns white. Release the pressure and see how long your nail takes to become pink again. If it takes less than three seconds, your blood is getting through to your capillaries without delay. If it takes longer, check with your doctor before doing any more of these tests.

Flexibility Sit facing a wall, legs outstretched, feet touching the wall. Keep your legs straight. Reach forward as far as you can without bending your knees. If you’re under 30, you should be able to touch the wall. If you’re 30 to 39-years-old, you need to get within 3cm of the wall. If you’re 40, within 6cm.

Body Strength Your task is to hold a full push-up position for 45 seconds if you are in your 20s, 30 seconds if you are 30 to 39, or 20 seconds if you are over 40. Your knees must be off the ground and your body kept straight, though your arms should be slightly flexed rather than fully extended. Make sure your weight is forward, over your hands, which are shoulder width apart, and look directly down. Don’t let your lower back arch and sag and keep your knees up and off the floor.

All of the age-related changes below can be slowed down with a nutritious diet and a regular exercise programme. • Peak bone mass is reached during adolescence. After that there is a gradual loss of bone mass with ageing. Women lose about 15 percent of their bone mass within the first five years of menopause then bone loss slows to about one percent a year. • Typical loss of muscle mass from adolescence to older age reaches 40 percent. • Before menopause most women are relatively protected from heart disease, unless they smoke or have diabetes. Within six to 10 years of menopause, women have a similar risk to men. • Lungs become harder to expand. • The body often becomes less efficient at handling glucose, raising your risk of Type 2 diabetes. • The immune system functions less effectively. • Sexual function declines. Leg Strength Your aim is to jump a distance that is equivalent or greater than your height. Start by lying on your back with your feet against a wall. Place a small mark on the floor immediately behind your head. This marks your height as a distance out from the wall. Now stand with your back to the wall, your feet together and your heels touching the wall. Have three or four practice jumps to warm up and then jump as far as you can.

Stamina This measures your cardiovascular efficiency. Find a relatively flat track that you know is 2km long. Or measure a distance of 1km in your car and simply walk up and back. Warm up first to prepare because this is a speed test. You should be able to walk (or run) the 2km in under 12 minutes. If you are over 30, allow another 30 seconds and, if you are over 40, another minute.

Recovery Immediately after you finish the stamina test, take your pulse. Your heart rate should be back under 100 beats per minute after two minutes of recovery time if you are under 30, three minutes if you are 30 to 40 and three minutes and 30 seconds if you are over 40. The quicker your heart rate lowers, the fitter you are.

Pulse Rate Morning heart rate is simply how quickly your heart is beating when you first wake and before you get out of bed. our immune system is a group of organs and special cells which help the body ward off infection and disease. Think of it as your very own army with special forces trained to deal with viruses, bacteria and parasites. It is an amazingly clever system, really; first determining the presence of a foreign substance trying to make its way around your body, and then using the ever-ready white blood cells to turf it out. That, of course, is a simple explanation of what is an exhaustively complex process. So exhausting in fact, that it wouldn’t hurt to give your immune system a helping hand. Boosting your immunity is a process, not a speed sensation. It takes a conscious effort with precise attention paid to food, exercise and rest to make a lasting overall impression.

Food

It is almost impossible to get rid of the notion that ‘you are what you eat’. Dietitians recommend a diet that is rich in nutrient-dense foods such as vegetables, fruits, healthy proteins, complex carbohydrates and good fats. Protein has many of the amino acids essential for growth and repair. Studies show that even a 25 percent reduction in the daily recommended allowance can compromise the immune system. Opt for food choices that are high in Vitamin C like citrus and kiwi fruit; Vitamin B, found in seafood, vegetables, capsicums and cauliflower; fat-soluble Vitamin A, abundant in leafy greens, sweet potato and asparagus; and fruits and vegetables like strawberries and tomatoes which are high in antioxidants. The mineral Zinc has also been linked with improved immunity functioning. Too much can be bad for you, so try and maintain a balance by including foods such as lentils, quinoa and spinach in your diet. Avoid sugars and fats which tend to suppress the immune system and keep alcohol, which has a tendency to inhibit the work of white blood cells, to a minimum.

Probiotics

The gastrointestinal tract is probably the most important defence mechanism in the fight against sickness and disease. It contains some 60 percent of the cells of your immune system and is charged with the important task of absorbing the nutrients you need while keeping out damaging molecules. Probiotics, which are good bacterias like Lactobacillus and Bifidobacterium, live in your gut and assist the immune system in correcting deficiencies and increasing the numbers of certain fighter cells. You can boost your probiotic intake with a good supplement or by eating foods such as yogurt, kefir (a fermented milk drink), some cheeses and tempeh (made from cultured soy beans).

Exercise

Consistent, moderate exercise helps to boost immunity by encouraging the efficient transportation of those valuable white blood cells around the body. Studies show that people who engage in regular activity, even just a brisk walk every day, tend to take fewer sick days. Regular exercise helps circulation, removes toxins from your system and contributes to general wellbeing.

Sleep

Most of us tend not to listen to our bodies, often pushing past the barrier of sleep in order to complete a task in our very busy day. However, sleep is essential for the body to recoup, repair itself and gather strength. Most adults need between seven and nine hours of sleep a day. Food blogger Kirsten Campbell eats out for a living, visiting restaurants and food festivals for her blog Miss Foodie. Here, she shares her advice on making healthy menu choices.

dios winter and slow braised beef cheeks. Summer is here and that winter coat of ours has to go, which means healthy eating choices. At home you’re the chef in the kitchen, so you are well behaved (most of the time) and shop for the right ingredients to keep those unwanted calories at bay. Dining out conversely, presents a world of tempting challenges. The good news is, by paying attention to a menu’s wording and by using food cues to create healthy meal choices, you too can eat healthy when dining out. A great first step is to be involved. Ask restaurant staff what ingredients are being used; sometimes healthy meals aren’t always as they seem. Avoid meals with lots of ingredients; look for meals with six ingredients or less. The more elements there are, the less control you have, and that often means more calories. Look for meals high in lean protein such as chicken, meat or fish which are served with vegetables or salad. Try eating an appetizer or side salad instead of an entrée, perhaps even go so far as having an entrée instead of a main. Dressings and sauces often contain high levels of sugar, butter and salt, which is not ideal. If your meal comes with any of these, ask to have it on the side. Even better, don’t have it at all. Going to a restaurant when you’re hungry sounds like the right idea, but it may tempt you to eat more than you should. Try making yourself a tasty smoothie before you go, so you’ll be less inclined to overindulge.

Read menus carefully and pick food with words like baked, grilled, poached, roasted, steamed and flame-cooked. Say no to crumbed, crispy, cheesy, creamy, battered or tempura. Salt is a silent killer too, so avoid words like smoked, pickled, teriyaki, marinated and soy sauce.

Careful restaurant selection will aid you greatly in your efforts to dine out healthily. Stay away from American, Chinese, French and Italian restaurants as it’s difficult to avoid their tempting carbohydrates; and definitely stay away from fast food. Instead, steer towards Japanese, Thai, Paleo, Vegetarian or Greek. Of course we don’t always get to decide where we eat, so here are some tips to help you, no matter where you dine:

ITALIAN

Avoid high carb dishes like pizza, pasta, bread and polenta. What else is there, you ask? You will be surprised how many fresh options there are. Italians love garden fresh ingredients. Try asking for your favourite pasta sauce (no creamy ones) poured over vegetables instead of pasta.

MEXICAN

Sidestep items that feature cheese and refried beans such as enchiladas. Instead go for customised dishes like tacos or fajitas where you can pile on your own salad, vegetables and meat, and skip the cheese and sour cream. Have a burrito bowl instead of a burrito, it will really reduce the carb intake. Salads are great as long as they’re not served in a taco shell or topped with cheese and sour cream.

ASIAN

It’s important to avoid dumplings, noodles, tempura and deep fried items because they have a very high fat content. You should be limiting sweet and sour dishes too as they are doused in sugar, which equates to unwanted calories. Choose grilled meats over fried; steamed rice over fried rice; dry curries over creamy coconut based curries; and fresh spring rolls over deep fried spring rolls. Avoid soy sauce too, as it is very high in salt.

STEAKHOUSE PUBS

It’s all about portion size here. Avoid ordering steaks over 500g, and say no to chips and baked potatoes filled with butter, cheese and sour cream. Instead have steamed vegetables or salad, with your dressing on the side. We tend to give ourselves free authority to eat whatever we want when dining out; we think it is all part of the fun, so if you truly want to eat healthy wherever you are, you’re going to need a strong will and stay committed to your choices. recipes Sweet potato rosti Serves 4

4 eggs 2–4 tablespoons coconut oil or other good-quality fat 1 tablespoon chopped flat-leaf parsley leaves Sweet potato rosti 600g sweet potato, peeled and grated 2 eggs, at room temperature sea salt and freshly ground black pepper Fill a small saucepan with water and bring to the boil over high heat. Reduce the heat to low so that the water is simmering, then add the eggs and cook for 5 minutes. Drain and, when cool enough to handle, peel the eggs under cold running water. Set aside. To make the sweet potato rosti, squeeze all the excess moisture from the grated sweet potato using a sieve and place in a bowl. Add the eggs and salt and pepper and mix well. Heat 1 tablespoon of oil or fat in a non-stick frying pan over medium-high. Spoon in about 2 tablespoons of the rosti mixture and shape into a patty. Cook for 2 minutes, pressing with a spatula to flatten slightly, or until golden on the underside. Turn and cook the other side for another 2 minutes until crisp and golden. Repeat to make another three rosti. Cut each peeled egg in half and serve with a rosti and a sprinkle of parsley.

Watermelon ‘cakes’ with coconut cream and poached figs

Use cauliflower rice instead of rice or mashed potato for a healthier, low-carb option.

Makes 7 ‘Cakes’

100g coconut yogurt 200g whipped coconut cream ¼ seedless watermelon (about 1.5 kg), rind removed, cut into 2 cm thick slices 30g (¼ cup) unsalted pistachio nuts, chopped Poached figs 2 tablespoons rosewater 1 tablespoon honey 2 cardamom pods, crushed 7 dried baby figs, halved For the whipped coconut cream, open a can of chilled coconut cream and spoon hardened top layer into an electric mixer (add a little honey if desired). Skim remaining cream from coconut water and add to the mixer (reserve coconut water for another use). Whisk on high speed until soft peaks form. Refrigerate to set (2-4 hours). To make the poached figs, combine 150ml of water with the rosewater, honey and cardamom pods in a small saucepan and bring to the boil over medium-high heat. Add the figs, remove from the heat, cover and set aside to cool completely. Meanwhile, fold the coconut yoghurt and coconut cream together in a bowl until blended. Cover and refrigerate for 30 minutes to set. Cut the watermelon into discs with a 6cm round cookie cutter. Place half the watermelon rounds on serving plates or a platter. Spread 1 teaspoon of the yogurt cream on each round. Top each with one of the remaining watermelon rounds and dollop 1 tablespoon of yogurt cream on top. Garnish the watermelon cakes with the pistachios and poached figs and drizzle on a little rosewater syrup. Serve immediately.

Cauliflower rice Serves 4

1 cauliflower, florets and stalk roughly chopped 2 tablespoons coconut oil sea salt and freshly ground black pepper Place the cauliflower in a food processor and pulse into tiny, fine pieces that look like rice. Place the coconut oil in a large frying pan over medium heat. Add the cauliflower and lightly cook for 4-6 minutes, or until softened. Season with salt and pepper and serve.

I love these little watermelon cakes on a hot summer’s day when I feel like something refreshing. Even though they are not really ‘cakes’, I do love the play on the idea of a layered cake and the kids will get a kick out of making them. You can flavour them with whatever you like. Zucchini noodles with basil and parsley pesto Serves 2

1½ tablespoons coconut oil, ghee or macadamia oil 3 zucchinis (about 500g in total), cut into spaghetti strips on a mandoline or slicer 1 garlic clove, crushed 10 kalamata olives, pitted and halved Basil and parsley pesto 2 large handfuls of basil leaves 2 large handfuls of flat-leaf parsley leaves 2 garlic cloves, coarsely chopped 1 tablespoon pine nuts, toasted 2 tablespoons lemon juice 12 macadamia nuts, toasted 125ml (½ cup) macadamia oil or extra-virgin olive oil sea salt and freshly ground black pepper To make the pesto, place all the ingredients in a mortar and pestle or food processor and combine to form a thick, coarse paste. Taste and adjust seasoning. To make the noodles, heat the oil in a frying pan over medium-high heat. Add the zucchini and garlic and sauté for 1-1½ minutes, or until slightly soft. Season with salt and pepper, add the pesto and olives and toss well. Continue to cook for 1 minute, or until heated through. Spoon into bowls and serve. Tip: You can also make noodles using a spiral spaghetti maker. It cuts a zucchini, carrot, beetroot or parsnip in one long, thin spiral. Kids love it!

Sponge cake 200ml coconut oil, melted 160g (½ cup) honey 2 vanilla pods, split and seeds scraped 8 eggs 125g (1 cup) tapioca flour* 180g (1¾ cups) almond meal 2 teaspoons baking powder Raspberry jam 375g (3 cups) frozen raspberries, thawed 350g (1 cup) honey juice of 1 lemon Chocolate–coconut icing 185 ml (¾ cup) coconut oil, melted 60g (½ cup) cacao powder 60g (½ cup) carob powder 1 vanilla pod, split and seeds scraped 125ml (½ cup) coconut milk 4 tablespoons honey To coat 120g (2 cups) shredded coconut Preheat the oven to 160°C. Grease a 20 x 30 cm Swiss roll tin with a little melted coconut oil and line the base and sides with baking paper. To make the sponge cake, place the coconut oil, honey and vanilla seeds in a bowl and whisk thoroughly. Set aside. Using an electric mixer, beat the eggs for 5 minutes until thick and foamy. Gradually beat in the coconut oil mixture. Fold in the tapioca flour, almond meal and baking powder. Pour the mixture into the prepared tin and bake for 25 minutes, or until a skewer inserted in the centre comes out clean. Turn the cake out onto a wire rack to cool completely. Trim the edges and the top to form an even sheet. Cut in half horizontally, so you have two equal layers. Set aside. To make the raspberry jam, combine the raspberries, honey and lemon juice in a small saucepan and bring to the boil over medium heat. Reduce the heat to low and simmer, stirring occasionally, for 20–30 minutes, or until the jam is thick. Remove from the heat and pass half of the jam through a fine sieve (this ensures the jam does not have a gritty texture). Mix the sieved jam back into the jam and allow to cool. Pour into a 500 ml sterilised jar. Refrigerate until needed. To assemble the lamingtons, thinly spread about 3 tablespoons of raspberry jam on one side of a sponge layer. Sandwich the other sponge layer on top and cut into 5 cm squares with a long, serrated knife, then set aside. To make the chocolate-coconut icing, combine the coconut oil, cacao, carob, vanilla seeds, coconut milk and honey in a bowl. Beat using an electric mixer on a low setting for 1 minute, or until smooth. Place the shredded coconut on a plate. Dip the sponge squares in the icing. Using two forks, gently toss the squares in the shredded coconut until evenly coated. Set aside on a wire rack for 1 hour before serving. Store leftover raspberry jam in the fridge for up to 3 months.

ore and more savvy women are learning the foundations of motor mechanics in a bid to take charge of the safe upkeep of their car. Peter Signorini, Grand Motors Toyota’s Service Manager, who will be teaching the basics of car maintenance at the Grand Motors Toyota Women on Wheels event in February, says many people are surprised at how easy it is to understand and perform basic mechanics. “Most women are great multi-taskers, and have the capacity to quickly understand the basics of car mechanics,” Peter said. “It’s an area they may have previously been uncomfortable with, but we find women pick up the skills very quickly and are easily able to maintain their vehicles independently.” “Women are very well suited to mechanics; they tend to have a way of thinking that is very detail oriented, very process driven with a really high standard of work. In many ways I think women make better mechanics than men.” Peter says the number one reason he believes anyone should learn the basics of maintaining their vehicles is safety. “If your car isn’t well maintained, then it isn’t safe,” Peter says. “It really is as simple as that. So I believe it’s important for everyone – male and female – to learn the basics: how to check oil, how to check tyre pressure, how the tread on your tyres should look, how to change a tyre... basic things that are very important. “The great thing about Women on Wheels is that it is just a fun evening, where attendees can ask any question they like. It’s a fun, friendly environment where everyone gets in and physically does what we are teaching. “Women on Wheels is a chance to refresh and expand your vehicle maintenance knowledge. No matter what skill level you are at, whether you are a complete first timer, or want to improve on your existing knowledge, Women on Wheels is an opportunity to do that, and have some fun at the same time.”

WHY WOMEN ARE GETTING UNDER THE HOOD Safety: If you understand the workings of your car, and how to look for warning signs, you will be safer on the road and avoid potential accidents.

THE BASICS Checking your oil level: Checking oil is something everyone can do – and should do; it’s an important one. If the oil is too high or too low, it can cause some serious engine problems. To check the oil, make sure your car engine is cool and the car is parked on even ground. Pull out the dipstick and wipe it clean, then push it all the way back in to its original position. Wait for a moment then pull it out again. Check the level of the oil. If it’s in between the high and low marks, you’re fine; if it is too low, add oil. Checking your coolant level: You may not know much about it, but coolant is something your engine cannot go without. Every car is different but your handbook will tell you where the coolant reservoir is located. It is usually a white bottle attached to one side of the engine bay. When your engine is cool look at the markings on the outside of the coolant bottle. The level of coolant inside should be sitting between the high and low markings. Do not take the radiator cap off to check coolant levels. If the engine is hot the coolant system will be under pressure and the release could burn you.

Efficiency: Your car runs more efficiently and economically if it is well maintained. Basic things such as oil and coolant levels can impact on this performance.

Checking your tyres: Taking care of your tyres is essential to the safe running of your car. You should check your tyres once a week. Look for signs of adverse tyres wear, splits in tyre walls, parts of the tyre missing, or parts of the rubber gouged. If you see a problem, take the car to a tyre specialist. The more you look after your tyres, the more they’ll look after you.

Knowledge: If you know the basics, you are more likely to understand more complex issues when they are raised with your car mechanic. You won’t be baffled by mechanic-speak.
