What makes your swimwear brand different? UNE PIECE has been created to deliver confidence and empowerment to women. We have also created a brand that truly celebrates women and the concept of diversity of beauty and body image. Although we are a start-up we give a full size range from size 6 to 16 (industry standard is only sizing from 8 to 14). How did you come up with the concept? The Original Sexie Rashie idea came about by listening to women - lots of women. Women with children that were frustrated that there was nothing that was sun smart but still made them feel and look great. The more Mum’s I spoke to, the more I realised the gap in the market. Then I sought feedback on the Original Sexie Rashie from millennials. I was blown away with their positive reaction! They are so much more sun-aware and careful with their skin than I was at that age! Young women with fair skin, active women and just women that loved the elegant look of it were telling me they would buy it. How have women reacted? The response has been incredible, we sold out our first shipment and had to push the manufacturer to finish the second! Launching during the Australian summer, the reaction was immediate. Our expert contributor, weight-loss surgery specialist Dr Jason Free, answers SLIM readers’ most commonly asked weight-loss questions I HAVE BEEN DIETING FOR YEARS, WHY HAVE I NOT LOST WEIGHT

JF: This could be attributed to a variety of reasons, and without knowing a person’s history and specifics I couldn’t say precisely, however there are general reasons which may be applicable. One such reason is our body’s ‘starvation mode’ which is discussed a lot, but often misunderstood. The human body has evolved over thousands of years to survive long periods of starvation. Scientific evidence increasingly points to the problem that confronts dieters: cutting out calories changes your metabolism and brain, so your body hoards fat and your mind magnifies food cravings into an obsession. The human frame contains about ten times more fat-storing cells relative to body weight than most animals - even hibernating polar bears which have to endure long periods when food is unavailable. Our calorie-hoarding bodies have evolved strong mechanisms to stop weight-loss, but weak systems for preventing weight-gain. If you manage to lose 10 percent of your weight, your body thinks there’s an emergency, so it burns less fuel by slowing your metabolism. It is a very real factor that must be taken into account with any weight-management program.

WHO IS ELIGIBLE FOR WEIGHT-LOSS SURGERY JF: There is a misconception that only morbidly obese people are eligible for weight-loss surgery, but this is not the case. More and more people who are overweight, but not clinically obese, are choosing weight-loss surgery as a preventative measure to ensure their persistently increasing weight does not get any more out of hand. If your BMI is over 40, or you have a BMI over 35 with associated obesity related disorders (such as high blood pressure, diabetes, high cholesterol, sleep apnoea, arthritis) the Australian National Health and Medical Research Council recommends you have weight-loss surgery. Some people who have had certain procedures on their gastrointestinal system may be unable to have certain types of weight-loss operations, and some medical disorders make the procedures extremely dangerous.

IS BEING OVERWEIGHT REALLY SUCH A PROBLEM JF: Quite simply, yes. There are a host of physical and emotional burdens being overweight puts on the shoulders of the person in question and society as a whole. Being overweight and obese greatly increases your susceptibility to coronary heart disease with the build-up in the arteries preventing oxygenated blood from reaching the heart as well as high blood pressure and your chances of a stroke. There is also an increased risk of osteoarthritis, certain kinds of cancer, gallstones, reproductive issues, sleep apnoea and abnormal blood fats. But perhaps the greatest risk and one reaching epidemic proportions is Type-2 diabetes, which affects more than 10 percent of adults in this country – most of them overweight or obese. These conditions are almost always improved or completely resolved with significant weight-loss. In fact, there is well established evidence that after weight-loss surgery your health dramatically improves.

HOW DO I KNOW IF I AM OVERWEIGHT JF: The best way to measure your weight is through the Body Mass Index (BMI), a weight for height measure most commonly used to test for healthy weight range. It is defined by a person’s weight in kilograms divided by the square of his height in metres. A BMI of 25 or greater is regarded as overweight and a BMI of 30 or over equals obesity. This test is a guide rather than an absolute as it does not take in the amount of actual fat in the body. There are plenty of online BMI calculators, or if you have a head for numbers, the formula is:

Your weight in kilograms ÷ (your height in metres x your height in metres) = BMI. For example, 60 kilograms ÷ (1.65 metres x 1.65 metres) = 22.03.

DOES WEIGHT-LOSS SURGERY ACTUALLY CURB YOUR APPETITE OR JUST MAKE YOUR STOMACH SMALLER JF: Both. Most people are aware that weight-loss surgery will remove a large part of the stomach – usually at least 80 percent. The portion of the stomach that is left, serves as the patient’s new stomach. Obviously it is much smaller in size, and therefore takes much less food to fill, and as a result fewer calories are consumed, and weight-loss results. But that is not the whole story. The other benefit of weight-loss surgeries are that in removing a portion of the stomach, we are also removing the part of the stomach that produces Ghrelin, the hormone that stimulates appetite. Removing this has a significant impact on a person’s appetite, reducing it considerably. This is a very important point for many patients whose struggle has traditionally been to keep their appetite at bay.

SURELY ANYONE CAN LOSE WEIGHT IF THEY REALLY WANT TO. AREN’T OVERWEIGHT PEOPLE JUST LACKING IN WILL POWER JF: Many people seem to have little sympathy for people whose weight we perceive is a direct result of their indulgence, but research tells us that obesity is a mental illness and the reality is that compassion is called for when regarding the emotional and physical issues that are a way of life for overweight adults and children. Feelings of shame, rejection, low self-esteem and depression are common in obese adults. Despite its prevalence, being overweight still carries a social stigma leading to anxiety about leaving the house and a deep desperate loneliness. Activities we take for granted – going to the movies, public transport, and holiday travel - are often impossible for overweight people because of small seats and unsuitable accommodation. In work situations overweight people are generally labelled as being sloppy, lazy, devoid of self-discipline and morally weak with studies showing that more often than not overweight people are discriminated against when it comes to advancement despite their job competency. It is a vicious circle. Many people turn to food for comfort. This stress-based eating leads to weight-gain which in turn makes people feel bad about themselves which of course leads to more eating. Studies show that the vast majority of obese people may have short term success with dieting however fail to have long term effective reduction in weight. In these patients surgical weight-loss has been shown to have a much more dramatic effect than conservative measures and drastically improve the quality of life.

or as long as I can remember I always struggled with my weight. I remember being a child, probably not more than 10 years old and weighing myself. At four stone, I can remember thinking that I had to lose weight (before I really had any clue as to what it all meant). I remember being an early teen in a bikini and thinking I was fat. I remember being fat-shamed in high school at a dance and one of the other kids asked me if I was pregnant! I guess I have struggled with self-esteem and weight related issues all my life. The impact this had on me was that I tended to stick to my comfort zones. I would avoid going out with my husband because I was embarrassed of the judgement I assumed people were thinking of me. I was embarrassed for my husband having to go out with someone as enormous as me so I encouraged him to go out without me. If he had mates coming over to watch the footy, I would go into my room before they came over because I didn’t want them seeing how much weight I had put on since they last saw me.

I knew that surgery was just a ‘ tool’ for me to use to get me to my goal, not a magic wand that would fix all my problems just by having the surgery. I was ashamed of myself and my lack of self-control. My ‘wake up’ moment came when we were on holidays on the Gold Coast in March 2016. We were staying at a very fancy five-star hotel and I wanted to treat us to a half day spa experience. It included massages, body scrubs, and foot rubs - I was very much looking forward to it. When we got there, it was lovely until they gave us a ‘one size fits all’ robe and got us to change. My ‘one size’ did not fit me - I couldn’t close it over the front of me and had to put a towel on underneath to hide my modesty. I was so embarrassed and self-conscious for the whole day, particularly during the massages. On the same trip, we also went to an inflatable waterpark, which looked like a lot of fun. I couldn’t even pull myself up onto the equipment out of the water. Two lifeguards had to pull me up like a beached whale onto the inflatable and each time I fell into the water they had to help me up again. I gave up in the end as it was so degrading and I didn’t want them to hurt themselves pulling me up. I hated the way I looked and felt within myself but ate through my feelings all the time. I started every day with the best of intentions but by the end of the day had stuffed it and vowed to start again the next day. Coming home after that holiday, I started looking into surgery to help me get my life back. I researched the gastric bypass surgery thoroughly and decided it was what I needed. I knew that it was just a ‘tool’ for me to use to get me to my goal, not a magic wand that would fix all my problems just by having the surgery. I took three weeks off work so I could recover as much as possible.

When I woke up from the surgery I felt tight but had no pain, no discomfort. I made sure I got up and about as soon as possible after the operation. I think I amazed the nurses because I walked the halls so much. I also drank little and often because I was motivated to go home as soon as possible. I stayed one night in the hospital and just made sure I rested as much as possible when I got home. I did begin to wonder whether the surgeon had even done the operation as I felt so good! I can honestly say I haven’t had a day of pain, sickness or nausea since the surgery, and I feel wonderful. Life is so great right now. I was operated on 13th June 2016 and weighed 138 kilos when I started the countdown to the op, and I reached my goal weight of 75 kilos in March 2017. I currently weigh 72 kilos and have lost almost 65 kilos. I am now in the process of stabilising my weight and letting my head catch up to my body. I eat mostly low carb, and no sugar now, and I can honestly say I never get hungry. I do have to remind myself to eat sometimes as food is no longer the only thing on my mind. I am definitely more confident than I used to be. My husband and I love to go out for dinner now, but I usually just get an entree or a take home dish which will last for about two meals. I am such cheap date now! Sometimes I can’t believe the reflection in the mirror is me; it still catches me off guard. I can cross my legs without issue, there’s spare room on the seat when I go to the movies or when I am on a flight (I used to have to squeeze myself in or worry about whether I’d fit the seat). I’m much more active now. I go to Parkrun on a Saturday morning, we go stand up paddle-boarding when the weather is nice, and I dabbled in a bit of roller derby just because I could. My next adventure will be to ride a Segway with the family as it looks like a lot of fun! As for what the future holds, I am booked in for a tummy tuck, breast lift and augmentation to rid myself of the excess skin I have since losing all my weight. This will complete to new me and is something I’m really looking forward to. Now, I can honestly say that I am finally happy.

aryl Esler was a fit young man, but a career in truck driving took a toll on his health. “I am half Maori so I have always had a large muscular build,” Daryl says. “But I was never overweight until the last 15 years or so when I became a truck driver. “I wasn’t doing as much physical work anymore during this time so the weight piled on.” Having been fit and healthy in the past, Daryl tried to address his weight, in a variety of ways. “I tried every diet, pill and shake,” he says. “I would lose 10 or 20 kilos but then it would slowly creep back on. “My biggest downfall was that I loved food, and ate it in excess.” At his heaviest, Daryl tipped the scales at 208 kilos. “Being so morbidly obese affected everything in my daily life,” Daryl says. “From constantly sweating just doing the smallest things, to constant pain in my back and knees, to having problems getting up and down out of a chair, the list goes on.” It was a lightbulb moment with his family that led Daryl to make a permanent change. “What made me decide to really do something about my weight was a weekend my wife and I spent babysitting our youngest granddaughter,” Daryl says. “I realised I couldn’t do anything to help my wife with our granddaughter. I couldn’t even play and enjoy my granddaughter, as I was just too overweight and in too much pain. “It was a lightbulb moment that made me realise that if I didn’t change, I wouldn’t get to enjoy my family, and I might not even see my grandchildren grow up.” It was then that Daryl and his doctor began to look into surgical weight-loss options. “For the first time I had a GP that wanted to help me and not put me in the too hard basket,” Daryl says. “He organised the referral to see a weight-loss surgeon on the Gold Coast.” Daryl says that’s when everything changed. “The first appointment with the surgeon was a bit nerve-wracking, but he made me feel very at ease instantly. The only downfall was when he weighed me. That’s when I found out I weighed 208 kilos. I knew I was big, but in my wildest dreams I didn’t think I was that heavy.

“My journey to my surgery was a little challenging, but I had made my mind up that I no longer wanted to look like this and feel constantly in pain and restricted to what I could do. I knew surgery was right for me and I was committed to it.” By the time Daryl’s surgery day arrived, he had already lost 25 kilos and was ready to take the next step to have a longer, more enjoyable life. “The surgery was a little overwhelming, but after a week after the surgery I knew I had a better life coming my way. “It has now been seven months since my surgery, and I have lost 61 kilos. My life has changed so drastically it is difficult to even put into words. “Life post-surgery is amazing. I have more energy, I don’t suffer from asthma like I used to, I sleep better and my wife tells me I don’t snore like I used too. “However, I have found it is the small things that I am happiest about. “I can take my wife to the cinema now and actually be able to sit comfortably in the seats (we could not go to the movies before as I was too large to sit in the seats); I can get on a plane without needing the largest seating and largest seat belt. “I can run and play with my grandchildren. I have taken up Enduro motorbike riding again, which I haven’t done in over 12 years - I have already been on two three-day rides this year. “I could go on and on with the positive benefits I have already received. SLIM talks to Dr Drew Moffrey, one of the Gold Coast’s leading names in women’s sexual and reproductive health What inspired you to specialise in Obstetrics and Gynaecology? When I was a medical student and saw my first baby birthed I was just mesmerised by it and have had a passion for it ever since. Helping women birth their babies is a privilege and I feel very lucky to be involved in it. I love the fact that it is also a great mix of surgery and medicine which most specialties are not. Obstetrics is still an art form as much as a science. With pregnancies occasionally you have to go with your gut feeling of the patient and baby rather then what a test is telling you. That is what makes a great obstetrician over a good one.

What are some of the changes, in both technology and practice, that you have seen over the years? Non-invasive prenatal testing has made a massive leap forward in the last 5 years. Basically, they can now separate babies’ DNA from mother’s blood via a simple blood test, and test it for genetic problems such as downs syndrome and other conditions. This avoids invasive testing such as amniocentesis. It has been a massive step forward in obstetrics. Of course, Geneveve now is the next big development in gynaecology. Women’s sexual health is a large area of medicine that has been neglected and because of this Geneveve is going to change so many women’s lives. Men’s sexual health is

discussed so openly, but a women’s sexual health is secret women’s business not to be openly discussed. With Geneveve, women now have a safe, effective way to restore their sexual function after child birth that will led to massive improvements in their sexual function and pleasure.

He describes it as revolutionary. “There is some really great research behind the machine that proves it is going to revolutionise the treatment of women’s sexual health,” Dr Moffrey says. “After a women births a baby their number one concern is vaginal laxity. This is rated higher then weight-gain, stretch marks and incontinence. “Vaginal laxity affects a woman sexual function and in turn can affect her selfconfidence and also the relationship with her partner. “The problem is no one wants to talk about women’s sexual function. So much time and money is invested into men’s sexual health but very little is spent on women’s sexual health. What is the most rewarding aspect of your job? Every baby I see born is amazing. I love seeing the looks on new mums and dads faces. I especially love it when it has been a long hard road to that point. Those patients I have helped through difficult times of miscarriage or other medical conditions and when they finally are holding their baby in their arms it’s such a special time.

CHOOSING AN OBSTETRICIAN – Dr Drew’s tips for getting it right “Go with someone who you have a rapport with rather than just someone you have been recommended or picked off the internet. I recommend meeting a few different doctors to find out which is the best for you. It is such an important time in your life so you never want to be rushed or feel that you aren’t being listened to. Have a think about what is important to you for your pregnancy and ask those questions first up. Other questions you should ask are such things as does your obstetrician give you their mobile phone number? Who do you call in an emergency? How long does an appointment last? How often do you see them? What care do they provide after you birth your baby? You can also ask about their rates of vaginal delivery over caesarean and complications.”

This way I have my weekly goals in place and all I have to do is stick to it. I treat my calendar very seriously and I feel amazing at the end of the week when everything is completed. If you have everything planned and running smoothly, everything around you will fall into place.

Start the day right I never used to be a morning person but now I love it. I am always up at 5 or 5:30am, I scull a glass of warm water, apple cider vinegar and lemon then I make a cup of dandelion tea followed by an hours work then I start on the lunches before my kids wake up. I feel I am organised for the day by doing this then I can go and train at 9:30am once I have dropped my kids off to school. This morning routine is gold for me, I see

the sun rise, its quiet and I feel like I start the day off very calmly. This quiet time always involves me eating my overnight oats which have been soaking all night in the fridge, I simply add some cinnamon, berries and chia seeds. This hour gives me everything I need to take on whatever the day throws at me, if you are not a morning person it’s never too late!

POSITIVITY IS KEY Having a positive attitude is extremely important to living a fitter, healthier life. If you can surround yourself with positive people and create a really nice circle of friends it is going to have a huge impact on your day to day life. Negativity is something I do not give any energy to, I make a conscious decision to surround myself with those who inspire me and who give me the right type of energy. Being able to stay on track with your health and fitness goals requires a positive outlook so to make it easier for you to achieve your goals and love every minute of it find yourself a fitness buddy, an online program, a local gym or community that is full of like-minded people. emory problems are commonly thought of as a problem relating to older age. The somewhat depressing news published in the British Medical Journal in 2012 however revealed cognitive decline starts in our forties and fifties, indicating it’s never too early to be putting in place ways to help preserve cognitive function. Boosting memory begins by addressing the fundamentals of how memory is formed. It starts with what your brain has deemed worthy of your focus and then applying your full and undivided attention to encode the information. Much of what we think we forgot is less of a failure of memory and more of an encoding problem. In our multitasking environment, frequent task switching quickly exhausts the brain and reduces our ability to create new memory. Sufficient sleep is the second crucial component. To learn anything well, after studying a subject, getting eight hours sleep will ensure the learning is consolidated into long-term memory that also facilitates easy recall. Chronic sleep deprivation increases daytime sleepiness, reduces attention and our speed of processing information. Worse still it increases the risk of the formation of false memories where your imagination creates its own version of reality. Long days, poor sleep and insufficient leisure time reduce performance in the workplace, which is why taking two to three fifteen-minute brain and technology breaks across the day helps to restore energy, improve sleep patterns and leads to better thinking. Mental performance is enhanced by daily aerobic exercise that increases cerebral blood flow, elevates mood, and reduces stress. A study from the University of British Columbia showed how regular aerobic exercise leads to an increase in the size of the hippocampus, the area of the brain involved in verbal memory and learning. Exercise has also been linked to a greater release of brain derived neurotrophic factor or BDNF, that boosts focus, memory and mental sharpness. Enhanced working memory can be achieved through meditation practice; the additional bonus here being it also leads to structural changes in the brain associated with increased gray matter volume, along with improved psychological wellbeing and emotional regulation. Enhancing memory can be as simple as remembering to pay better attention, sleep, move and meditate. ith a slew of female disappearances in America, various attacks on women in Australia and an overall increase in sexual assaults in the last ten years, women are becoming more frightened and cautious when travelling in public. According to a study conducted last

year by Plan International Australia, 1 in 3 young Australian women do not feel safe being out in the city after dark. However, women are urged more than ever to live without fear. Personal trainer Nikki Snow is an ambassador for Australia’s highest rated security and life-safety monitoring centre,

Despite the debilitating effect fear can have on our bodies and minds, Nikki believes that there’s no reason to be afraid and women can – and should - live freely, courageously and with ease. ELIMINATE IRRATIONAL FEARS

“So many women fear the unknown but what we need to do is recognise if a fear is rational or irrational. Rational fears such as falling, which we are born with and is a product of our evolution, are an important survival tool. Phobias are, by definition, an irrational fear. For example, fearing something that is unlikely to be able to actually hurt you, such as clowns or cockroaches. Anything that can help eliminate these irrational fears contributes to wellbeing and frees us up to deal solely with legitimate threats. Another example of an irrational fear is a fear of flying. There is a 1 in 29.4 million chance that you would be killed in a plane crash but nevertheless 25 percent of people are affected by this phobia. By controlling our irrational fears, we can concentrate on real issues. We need to confront fear and ask ourselves if it is rational and using your own belief systems can help make day to day fears less scary, manage anxiety and improve your quality of life.”

“Preparation is key. When walking alone late at night be prepared and put the power into your own hands. Fear is only in the mind so once you meditate and make this a regular habit you will find that the fears will slowly disappear. Exercise releases endorphins in your body that trigger positive feelings and the foods we consume also have a strong impact on our emotions. Preservatives, sugars, chemicals all can put our body out of balance so fill it with healthy whole foods to have a clear mind.”

CONTROL YOUR OVERREACTIVE IMAGINATION FEAR IS ONLY IN THE MIND “Next time you have a fear, irrational or not, write it down. Look at your list of fears and try to figure out ways you can overcome them or work through them. If that doesn’t work, find a friend or family member to help you or seek professional help. Also at times of panic stop negative/overactive scenarios playing out in your head. One way to do this is to acknowledge what your ‘story’ is. nce it hits you that you are ageing, it can be quite disconcerting. It all just creeps up, and before you know it—wham -the door with the big sign that says ‘youth’ on it slams shut behind you. It’s not an easy decision to embrace ageing, but according to Kate Marie, founder of the Slow Ageing movement, that’s exactly what we need to do if we are to achieve peace and happiness. “Since my own obligatory mid-life crisis in my 40s, I’ve followed a lot of research on happiness and ageing – and you know what? It consistently shows that older people are happier,” Kate says. “So instead of wallowing in your fears about the hard parts of getting older, try focusing on the positive.” Here are eight reasons to embrace ageing:

1. We enjoy simple pleasures more

As we get older, we discover interesting, sometimes previously hidden, parts of ourselves. Because we no longer have the hang-ups of youth—school, university, new relationships, new careers, young children—there is little to prevent us exploring these. It is easier, therefore, to seek out new adventures and make new friends along the way.

Near enough is now good enough When we embrace ageing, we get to a stage where we throw unrealistic expectations out the window and look for situations that are viable in our life situation. This doesn’t mean we drop the bar entirely, though. I just no longer want to invest 80 percent of my energy getting the last 20 percent perfect. Instead, I want to enjoy my life with less time spent striving to be perfect and time spent being grateful for small mercies.

3. Positive thinking becomes easier

As we get older, we tend to think more positively. (Well, not all of us I suppose, but then we won’t tolerate those “glass half empty” people as much!) There are numerous reasons for this, one of which is that we realise we want to live the best life we can in the remaining available time.

4. Trusting is easier

What is the point in not trusting others? What kind of emotions does distrust invoke? Usually, not positive ones! To embrace ageing is to decide to trust a little more and to become vulnerable. This opens the door to all sorts of new experiences, new friendships and new knowledge.

5. Emotional intelligence improves

Our emotional intelligence improves with age. Getting older increases our ability to let go of negative emotional reactions to situations and deal with those feelings in more productive ways. We simply decide not to fight for every detail and not to sweat the small stuff. The capacity to regulate our reactions greatly improves our mental well being.

6. Implementing healthy behaviours becomes easier As we get older, we have no choice but to recognise the importance of eating the right foods, exercising regularly and decreasing stress. We feel amazing when we start to implement healthy practices into our lives at any age. As we begin losing friends and family members to cancer and heart disease, it’s our wake-up call to positively change our lifestyles.

We rally around each other to do the projects we’ve talked about for years and now have the money and time to complete. I’ve been incredibly lucky and now enjoy all sorts of support from the relationships I’ve nurtured, particularly those started in the last two decades.

8. We learn the art of reflection

We want to be efficient with the time we have left—something we keenly realise is unknown. This bittersweet understanding means the good things in life really stand out. We become grateful. We don’t want to keep repeating our mistakes, so we get better at viewing our actions from another’s point of view. Age is just a number So next time you notice yet another spot or new wrinkle, ignore it. Or fix it! You have the choice to use your time any way you like. We can frame things differently if we choose to. We can choose to embrace ageing with an understanding that we have probably spent the first 50 years in a hurry with no time, wisdom or awareness about what it all meant. The understanding that we are ageing enables us to focus on the many positives associated with moving into a brand new—and potentially very rich—phase of our lives.

Robotic-Arm Assisted Surgery

D

r Andrew Letchford is among the first surgeons in Australia to offer patients the revolutionary RoboticArm Assisted Surgery. Dr Letchford has long been a leading name in arthroplasty ( joint replacement), knee reconstructions, sports injuries and acute orthopaedic trauma. Now he is breaking new ground with the RoboticArm Assisted Surgery for partial knee replacements, a procedure that is only available at Gold Coast Private Hospital, part of the Healthscope Group, and Pindara Private Hospital part of the Ramsay Group. model specific to your knee, which he uses to pre-plan your partial knee replacement. During surgery, Dr Letchford guides the Robotic-Arm based on your specific plan. This allows him to remove only the diseased bone, preserving healthy bone and soft tissue, and assists him in positioning the implant based on your unique anatomy. “Robotic-Arm Assisted Surgery affords us absolute accuracy,” Dr Letchford told SLIM. “The surgeon’s hand is guiding the arm, however we cannot go outside the boundaries we have set. It is accurate to 0.2 millimetres. “Post-operatively, what it means is that because we are creating a much smaller incision, so the patients really do recover a whole lot quicker. “It used to be that this type of surgery required a patient to be in hospital for about a week. With this Robotic-Arm Assisted Surgery, my patients are routinely going home on the second day after surgery. “Then, when they come back to see me two weeks after surgery, they are moving a whole lot more normally, with a much wider range of motions.”

EXERCISE

Appropriate exercise is important, so run if you can, when you can’t run, walk, when you can’t walk, swim, when you can’t swim, cycle. At age 50 many peoples knees don’t like running but walking, swimming and cycling are effective substitutes. Finding a low impact exercise that works for you is the key.

DON’T WORRY BE HAPPY

All of the above is much easier if it is done in a fun friendly environment. There is a quote in Christopher McCandless’s story Into the wild that fits: “Happiness isn’t real unless it is shared”. So organise yourself to be with a group of friends and find a common shared love of exercise or some form of energy burning activity. This will turn a resolution into a permanent lifestyle choice.

Just look at the most recent red carpet events, shapeless bodies are out and strong sculpted bodies are in. 3. Meditate Having the correct mental attitude changes everything. Being calmer not only results in better cognition and clearer thinking (which leads to better lifestyle choices). Lowering your stress also has positive physiological effects on the body, including lowering cortisol, which is the hormone involved in fat storage. 4. Get enough sleep Along with meditation it is important to get enough rest, if you don’t get enough sleep your body will not recover properly, negating the positive effects of an otherwise healthy lifestyle. Sleep deprivation also effects and increases cortisol, making it very difficult to lose fat. Even with 4am call times the actors I have worked with make sure they get themselves at least seven hours sleep. 5. Be consistent It takes more than one session in the gym to shape an action hero and more than one meditation session to be composed and relaxed at all times. Ensure you are taking at least one positive step each day and you will move closer and closer to that action hero look.

Then according to Dr Debra Villar, you may be suffering from Urban Woman Syndrome. In her new book, Urban Woman Syndrome, Dr Villar writes how a woman’s work and life demands have taken a toll on their physical, emotional and spiritual health. “The state of our health worldwide is at crisis point,” Dr Villar says. “Our modern rushed lifestyle has resulted in an increase of chronic lifestyle disorders such as autoimmune diseases, infertility, stress and hormonal imbalances. The inability to physically adapt to our cultural and behavioural environment has given rise to what are called ‘mismatched diseases‘. “Our physiology, brain and chemical makeup is the same from 10,000 years ago, however our environment has changed drastically. Our food has become food products loaded with preservatives, sugars, additives and colours. Our work life has become sedentary with the increase use of computers and other digital devices. Our life demands have caused an increase in chronic stress and mental health concerns, where one in five Australians suffer from some form of mental illness. “Urban Woman Syndrome affects not just our wellbeing but also that of our families,” she said. Dr Villar says awareness and education is key to stop the rapid increase of lifestyle related disorders such as Urban Woman Syndrome, allowing individuals and families to make informed healthier choices. MOVE FOR BE T T ER HEALT H Choosing good food can sometimes be hard, especially when labeling and food marketing can confuse the consumer with titles such as “sugar free” “fat free” and “natural flavours”. These labels are usually on products that are not only high in sugar but are full of preservatives and additives. An easy way to monitor your sugar intake is to remember when reading food labels is that four grams of sugar equals one teaspoon of sugar. The recommended intake of sugar is five teaspoons a day, with the average Australian consuming 29 teaspoons a day. The way to avoid sugar, preservatives, colours and other nasties is to shop in the fresh produce aisle. Consuming only fresh produce can take time to plan, however by eliminating food products and eating real food will allow your body to repair, heal and thrive.

Studies have shown that even 10 minutes of meditation increases relaxation and reduced stress. Exercise. Exercise increases endorphins, the ‘feel good’ hormones.

Your chest shouldn’t move and all the movement should come from your diaphragm expanding. Weight-loss blogger Lisa Wells shares her tips for success How do you define addiction as opposed to a lack of willpower? Addiction is a gripping, all consuming, mind controlling behaviour. When you are in addiction, you think you don’t have a choice over your thoughts and actions. Your thoughts and actions are controlling you. Willpower is akin to inner strength, when you are using willpower successfully, you realise you do have a choice over your thoughts and actions. You control your thoughts and actions. Willpower is the ability to resist short term temptation in order to meet a long term goal. If there is a lack of willpower and inner strength, one is more likely to slip into the clutches of addiction. What was your lightbulb moment to begin my weight-loss journey? I remember sitting out on the patio with my journal and I was pretty upset because every day, no matter how hard I tried, for the life of me, I could not work out why every day I would say to myself that I

wanted to eat healthy, yet every day I would end up stuffing my face with food that I didn’t want to eat. That wasn’t a main light bulb moment but it was a moment of awareness that started the journey from stuffing my face to facing my stuff. If you could give 3 key tips to someone struggling with their weight, what would they be? TIP 1 – It’s never about the food, it’s not about what you eat or don’t eat. It’s about what emotions you are stuffing down. As I say “Each day you have the opportunity to face your stuff or stuff your face.” Can you write about what you are feeling or going through? Sometimes we don’t even know what we are feeling and that is ok. Sometimes I just write - ARGH I’m feeling icky and I don’t know what to do to get myself out of this funk. Once it’s out, you feel better. It’s ok to feel crap, take some time in private to feel it and then the energy of that emotion can move through you and out of you. TIP 2 – Love yourself anyway. This is a biggie. Can you eat that cake and love yourself anyway? Can you eat those chips and love yourself anyway? By starting to love yourself exactly as you stand, right

Weight-loss surgery is proving to be life changing for many overweight people, but the resulting excess skin can lead to physical and emotional problems. The Lotus Institute offers a range of surgical and non-surgical solutions.

Losing anything from 20 to 200 plus kilos, individuals who undergo these surgeries may reduce their chances of developing hypertension, cardiovascular disease, Type-2 diabetes, gastocoesophy reflux disease (GORD), snoring and sleep apnoea, and the psychological effects of being overweight. “However, in its place is a slimmer, fitter, healthy version of themselves with areas of loose skin commonly in the upper arms, breasts (in both females

and males), abdomen and back/hips, and inner and lower thighs and buttocks. “This has led to another area of plastic and reconstructive surgery called Massive Weight-Loss Surgery, where areas of excess skin can be resected in all or some of these areas.” Dr Widdowson is an expert in such procedures and says a patient can be transformed from an internally “slim” individual whose skin seems far too big for them, to an eternally grateful patient who feels confident and can present to society the body they feel they have inside. “These procedures, of course, are not confined to the “massive” weight-loss patient, but also to the individual who has developed some droopiness of breasts, abdomen, thighs, or arms from multi-pregnancies and fluctuating weight (510 kilos),” Dr Widdowson says. Wild Barramundi with Coconut Broth INGREDIENTS

250ml coconut milk 250ml chicken stock 4cm lemongrass, white part only, sliced finely 3cm piece of galangal, grated 3 shallots, peeled and sliced 2 coriander (cilantro) roots, chopped 2 kaffir lime leaves, sliced finely 1 small red chilli, seeded and chopped 15ml fish sauce ½ teaspoon caster sugar 3 oyster mushrooms, sliced 50g enoki mushrooms, chopped 15ml lime juice 50ml vegetable oil 250g wild barramundi fillet 12 sugar snap peas, cleaned 1 handful coriander leaves 2 kaffir lime leaves, sliced finely 1/2 large red chilli, sliced

METHOD

In a small saucepan, bring coconut milk and stock to the boil. Add lemongrass, galangal, shallots, coriander root, lime leaves, chilli, fish sauce and sugar. Simmer for approximately 15 minutes. Taste the mixture and add more fish sauce, chilli or sugar to suit your taste. Blend the mixture using a stick blender or blender, then strain through a colander or sieve. Discard pulp. Add the mushrooms and simmer for a further two minutes, then add the lime juice and set aside until required. Pre-heat oven to 220°C. Heat a little oil in a heavy-based frypan, and when it starts to smoke, place the barramundi into the pan, skin-side down. Cook for approximately 30 seconds then transfer the pan to oven and cook until the fish is ready, approximately 6 minutes (times will vary depending on the thickness off the fish). Transfer fish to a serving bowl. Bring the broth back to a simmer, add the sugar snap peas and simmer for another minute, ladle the broth over the barramundi and garnish with coriander, kaffir lime leaves and chilli.Remove the scallops from the shell and salt lightly. Wash the shells in cold water. Heat a little oil in a frypan and cook the scallops for 30–40 seconds each side (cooking time will vary according to scallop size). Place the scallops back on to the shells, spoon over a little hot & sour dressing then place a little of the salad on each. Top with the crispy turmeric.

6cm piece of turmeric, peeled and julienned 100ml vegetable oil 75g smoked trout, bones removed 2 kaffir lime leaves, finely sliced 2cm piece of lemongrass, white part only, diced 50g baby shiso (Japanese mint) 2 shallots, peeled and sliced 1 large red chilli, seeded and sliced 1/3 cup coriander leaves flesh of 1 green mango, chopped 90ml hot and sour dressing 8 half-shell scallops, cleaned

Rock Ling Stir-fried with Gai Lan, Garlic Stems, Coriander and Baby Corn INGREDIENTS

250g rock ling fillet (or firm white fish), cut into bite-sized pieces 75ml soy sauce 250g tapioca flour 1 teaspoon chilli powder 250ml vegetable oil 1 garlic clove, peeled and minced 100g baby corn, cut in half lengthways 200g gai lan (Chinese broccoli), chopped 3 garlic stems, cut into 1cm lengths 1 large red chilli, seeded and sliced 2 spring onions, chopped 30ml stir-fry paste 50ml chicken stock or water 50ml shao xing wine 175g coriander leaves ½ lime METHOD

Tip: Rockling is great for stir-frying as it holds together really well. If it’s not available, use any other firm white fish fillet.

Combine fish and soy sauce in a bowl, then coat the fish in tapioca flour and chilli powder. Heat the oil in a wok or frypan until it’s smoking, add the fish and fry until golden brown. Remove fish and drain on paper towels. Set aside until required. Pour most of the oil out of the wok, leaving just enough to stir-fry. Add garlic clove, baby corn, gai lan and garlic stems, continue to stirfry for approximately 2 minutes. Add the chilli, spring onions, stir-fry paste, stock and shao xing. Return fish to the pan, add half the coriander and stir to combine. Transfer the mixture to a serving bowl and garnish with remaining coriander and lime.


METHOD

Combine turmeric and oil in a small saucepan. Cook on medium heat, stirring continuously, until turmeric darkens slightly and becomes crisp. Remove from the heat, drain on paper towels and set aside until required. In a bowl combine the trout, kaffir lime, lemongrass, shiso, shallots, chilli, coriander, green mango and half the hot and sour dressing. Stir to combine. Remove the scallops from the shell and salt lightly. Wash the shells in cold water. Heat a little oil in a frypan and cook the scallops for 30–40 seconds each side (cooking time will vary according to scallop size). Place the scallops back on to the shells, spoon over a little hot & sour dressing then place a little of the salad on each. Top with the crispy turmeric.

Lemongrass Pannacotta with Peanut Praline, Watermelon Granita and Pineapple 300ml full cream milk 75g caster sugar 3 gelatine leaves, soaked

INGREDIENTS

Granita 400ml watermelon juice 75ml vodka 75ml champagne 15ml lemon juice 75g caster sugar Pannacotta 2 lemongrass stalks, chopped roughly 4 kaffir lime leaves, chopped 400ml coconut milk

Praline 100ml water 200g caster sugar 100g chopped roasted peanuts Garnish 200g pineapple, diced into small cubes 4 Vietnamese mint leaves, shredded

METHOD

Make the granita first by combining all granita ingredients in a saucepan. Heat to a gentle simmer, and do not boil. Pour the mixture into a tray and freeze. When the mixture starts to freeze, use a fork to scrape through the mix. Do this every half hour until you have a flaky ice slush. To make the pannacotta, place all ingredients in a saucepan and bring to the boil. Reduce heat and simmer for a further 10 minutes. Strain, then set aside to cool slightly. Pour into martini glasses and allow to set for at least 4 hours. Meanwhile, make the praline by combining the water and sugar in a saucepan. Stir over low heat until sugar dissolves. Increase the heat and bring to a boil, without stirring, until mixture is a caramel colour. Remove from the heat, stir in the peanuts and pour onto a lightly greased, or silicon paper lined, tray. Allow to cool and set, then grind in a mortar and pestle or a food processor to a course powder. To assemble, top pannacotta with pineapple, sprinkle over some praline and top with a mound of granita. Sprinkle over more praline and a little of the shredded Vietnamese mint. Serve immediately. Crispy Tofu with Peanut Sauce, Pickled Vegetable and Herb Salad This is so delicious it will convert even the most reluctant tofu sceptics. Serves 4 • Prep: 1 hour + 2 hours pickling Cook: 30 minutes • Moderate

PEANUT SAUCE

1 large red chilli, finely chopped 4 cloves garlic, crushed 2 tablespoons palm sugar 1 tablespoon rice vinegar 2 tablespoons light soy sauce 1 tablespoon dark soy sauce ½ cup water 1⁄3 cup peanuts, roasted and finely crushed Combine all the ingredients in saucepan and bring to boil. Turn down heat and simmer for a few minutes. Remove from the heat and set aside.

PICKLED VEGETABLE AND HERB SALAD 4 cups Vietnamese pickled vegetables 2 cups Chinese cabbage, shredded 2 cups bean sprouts 1 cup spring onions, sliced 1 cup mint leaves ½ cup Vietnamese mint leaves 2 tablespoons soy sauce juice of 1 lemon sesame seeds, toasted, to garnish

Combine the pickled vegetables with the cabbage, bean sprouts, spring onions, and the mint and Vietnamese mint leaves in a bowl. Dress with the soy sauce and lemon juice. Toss gently and sprinkle with sesame seeds.

CRISPY TOFU

400g medium soft tofu ½ cup rice flour vegetable oil, for deep frying Cut tofu into 5 cm (2 in) cubes and toss with rice flour. Heat about 3 cups of oil in a wok and fry tofu until golden and crisp on all sides, about 5 minutes. Drain on paper towels. Transfer to a serving platter and spoon over the peanut sauce. Serve with the pickled vegetable and herb salad.

Vietnamese Rice Paper Rolls with Duck and Hoisin Dipping Sauce Though these rolls are associated with Vietnamese cuisine, variations can be found all through South-East Asia. Makes 24 • Prep: 1 hour Cook: 2 hours • Moderate

HOISIN DIPPING SAUCE

125ml Hoisin sauce 1½ tablespoons rice vinegar 125ml water 3 teaspoons peanuts, roasted and crushed 1 red bird’s eye chilli, chopped In a saucepan combine the Hoisin sauce, rice vinegar and water over medium heat. Bring to boil and then remove from the heat. Allow to cool then stir in the peanuts and chilli before serving.

Chef ’s Tip: These are best made and eaten within a few hours, but the duck and vegetable ingredients for the rice paper rolls can be made the day before. The key to making rice paper rolls is not to soak the wrappers in water that’s too hot. Use tepid or even cold water, and as soon as the wrappers are just starting to become pliable, remove and drain. They will reconstitute to a softer texture when the moist ingredients are added.

RICE PAPER ROLLS

100g rice vermicelli 24 small rice paper rolls 500g duck meat, cooked and shredded 1 medium carrot, peeled and julienned 1 Lebanese cucumber, peeled and julienned 1 cup bean sprouts 1 butter crunch or other soft lettuce, washed 1 cup Thai basil or perilla small bunch of garlic chives Bring a saucepan of water to the boil and add the rice vermicelli. Simmer for a few minutes. Drain and refresh with cold water then drain again. Set aside until needed. Dip a rice paper sheet in a bowl of tepid water until just starting to become pliable. Wipe off excess moisture with a clean tea towel. Place on a flat clean surface and add a small amount of duck meat, then some of the carrot, cucumber, bean sprouts, lettuce and a few basil leaves. Make sure you do not overfill – keep the contents neat and compact. Turn up the bottom of the wrapper to cover the filling, then carefully turn the two sides in on top of the first fold and roll up half way. Place a garlic chive along the fold, allowing the end to protrude from the top and roll up the rest of the wrapper. Transfer to a tray and keep covered with a damp tea towel or plastic wrap. Repeat this process until all the rolls are made. Serve on a platter with Hoisin dipping sauce in a bowl on the side.

Chef ’s Tip: When stir frying quality beef over 300 g, it is best to stir fry in 2 batches, rather than risk ‘stewing’ the meat in the juices that can come out of the beef if the pan is too crowded. In this recipe, substitute the snake beans with green beans if you wish.

Chef ’s Tip: If serving as a shared dish (it will serve 6–8), the salmon can be broken into large pieces and tossed gently through the salad. Serve on a large platter, garnished with the peanuts and crispy fried shallots.

Stir Fried Curry of Beef with Wild Ginger, Snake Beans and Holy Basil This is inspired by a traditional pork stir fry, but the pork has been substituted with beef – our favourite red meat Serves 4 • Prep: 25 minutes Cook: 10 minutes • Easy

INGREDIENTS

2 tablespoons vegetable oil 500g beef fillet or similar, cut into stir fry strips 3 tablespoons Prik King Curry paste 3 tablespoons fish sauce 2 tablespoons dark palm sugar 2 tablespoons water 6 kaffir lime leaves, roughly torn 1–2 tablespoons wild ginger (krachai), shredded 200g snake beans, cut into 2½ cm lengths 1 cup holy basil (or Thai or sweet basil) 2 large red chillies, deseeded and julienned steamed jasmine rice, to serve

METHOD

Heat the oil until smoking then add up to half the beef fillet. Stir fry over high heat just until the meat starts to colour. Remove the beef to a plate and repeat for the rest of the beef making sure that the beef does not stew in its juices. Once all the beef is cooked, put back in the pan with the red curry paste. ·Add the fish sauce, palm sugar, water, lime leaves and wild ginger. Stir fry until the sugar and fish sauce combine. Add the snake beans, basil and red chilli. Stir fry briefly, about 30 seconds, until the basil wilts. Chargrilled Salmon with Hot and Sour Dressing and Pickled Vegetable Salad Though this may seem a complicated dish, once the preparation is done the final cooking time is very short. It features one of our favourite fish and makes a colourful, healthy and delicious addition to a shared Asian meal. Serves 4 Prep: 1½ hours + 2 hours pickling Cook: 20 minutes • Moderate

HOT AND SOUR DRESSING 1½ tablespoons fish sauce 1½ tablespoons rice vinegar 60ml water1 tablespoon sugar 1 garlic clove, peeled and chopped 1 small red chilli, finely chopped 1 tablespoon lime juice

In a small saucepan, combine the fish sauce, vinegar, water, sugar, garlic and chilli. Heat to dissolve sugar and then remove from the heat. ·Stir in the lime juice. Set aside until required.

MARINATED SALMON

4 salmon pieces, each 150g, skin off 2 red bird’s eye chillies, chopped 2 garlic cloves, crushed 2 teaspoons caster (superfine) sugar 2 tablespoons fish sauce Place the salmon in a bowl. Add the remaining ingredients and make sure the salmon is covered well. Marinate for 30 minutes.

PICKLED VEGETABLE SALAD

2 cups Vietnamese pickled vegetables 2 lemongrass stalks, white part finely sliced 2 cups mixed Asian herbs - mix of coriander, Vietnamese mint, perilla or Thai basil 2 golden shallots, peeled and finely sliced Add all the ingredients to a bowl and pour over the hot and sour dressing. Set aside.

TO FINISH

2 tablespoons roasted, coarsely crushed peanuts 2 tablespoons crispy fried shallots Heat an oiled barbecue to medium and chargrill the salmon for 3–4 minutes on each side, or until cooked to your preference. Remove from heat. To serve as individual portions, place the cooked salmon on each serving plate. Place some salad on top of each piece of salmon. Garnish with the peanuts and crispy fried shallots. Serve immediately.


Yuni’s Javanese Coconut and Pandan Cake One of our wonderful cooking school assistants, Yuni, grew up in Java where her mother made this cake to have with afternoon coffee. It’s a very typical example of an Asian sweet snack – dense and sticky from the glutinous rice flour and rich with grated coconut and coconut cream. We love it, but the texture as with most Asian sweets, does tend to polarise a Western palate used to lighter style cake.

INGREDIENTS

500g sticky rice flour 1 egg, lightly beaten 1 cup caster (superfine) sugar 2 cups coconut cream 1 teaspoon pandanus essence (optional) 1 teaspoon salt 2 cups of freshly grated coconut, store bought or homemade

METHOD

Preheat oven to 180º. Grease and line a 23 cm square cake tin with baking paper. Combine all the ingredients in a mixing bowl and stir until combined. Transfer the mixture to the baking tin and bake for 40–45 minutes until golden and crispy on top. When cool cut into 5 cm squares and serve with tea or coffee. Chef ’s Tip: An easier option to grating your own coconut is to buy already grated coconut – available in the frozen section of most Asian supermarkets. You can substitute with 1 cup each of desiccated coconut and shredded coconut.

Coconut and Mango Panna Cotta with Mango and Passionfruit Salad This a one of the easiest dessert recipes and it takes no more time to multiply the recipe to feed a large party. Any seasonal fruits can be used. In winter, when mangoes are out of season, use strawberries. A shot or two of Malibu, Cointreau or other liquor is also a decadent addition to the fruit salad. Serves 6 Prep: 30 minutes • Cook: 10 minutes + 4 hours to set • Moderate

PANNA COTTA

50ml water 100g sugar 1½ gelatine leaves titanium strength or 3½ leaves gold strength 100ml coconut cream 200ml mango purée 200ml pure cream Bring the water and sugar to the boil then remove from heat.

Soften the gelatin sheets in cold tap water then squeeze out excess water before stirring into the warm sugar syrup. Cool to room temperature. Place the sugar syrup and coconut cream in a large bowl and mix together. Stir through the mango purée. Whip the cream to soft peaks and carefully fold through the mango mix. Divide the panna cotta mix between 6 glasses and refrigerate for a minimum of 4 hours to set.

THE SALAD

2 mangoes, peeled and cut into 2 cm dice-sized pieces 3 passionfruit1 tablespoon caster (superfine) sugar Combine mangoes, passionfruit pulp and sugar in a bowl and stir to dissolve the sugar. Broccoli & Pea Soup INGREDIENTS

5 garlic cloves, unpeeled 1 brown onion, roughly chopped 1.5 litres chicken stock 200g broccoli, roughly chopped 2 celery stalks, roughly chopped 300g peas 150g spinach ¼ loaf sourdough bread 1½ tablespoons olive oil, plus extra for drizzling parmesan cheese, to serve sea salt and cracked black pepper, to season

Serves 4 : Cooking Time: 1 hour 40 minutes

Preheat the oven to 180°C. Grease a baking tray with a drizzle of olive oil. Place the unpeeled garlic and onion on the baking tray. Place the tray in the oven and bake until garlic and onion are roasted (garlic will be soft when ready). Remove from the oven and leave to cool slightly. Peel the garlic. Put the chicken stock in a large pot and place over medium heat. Add the broccoli, celery, peas and spinach to the pot. Add the onion and garlic. Bring the pot to a boil, then reduce the heat to a simmer and cover. Cook for 30 minutes with the lid on, then remove the lid and cook for a further 30 minutes. Season with sea salt and cracked black pepper, then remove from the heat and allow to cool for 10 minutes. Meanwhile, remove the crusts from the bread, tear into bite-sized chunks and add to a mixing bowl. Drizzle with olive oil and toss to ensure the bread is coated, then season with a little sea salt. Heat the olive oil in a large, non-stick frying pan over medium heat. When hot, add the bread, ensuring it is spread out evenly with no pieces on top of the other (do it in two batches if you pan is too small). Fry the bread until it is crunchy and brown on the bottom. When the bread is done on one side, turn each piece individually with a pair of tongs and cook again until browned. Remove from the pan and set aside in a bowl. Using a blender, add the soup and purée in small batches until smooth. When you are ready to serve the soup, heat it in a pot over low heat. To serve, add soup to each bowl, top with the bread croutons, cracked black pepper and grated parmesan cheese.


Osso Bucco & Pork Shoulder Lasagne INGREDIENTS

1 oregano sprig 1 rosemary sprig 1 thyme sprig 1 continental parsley sprig 500g osso bucco 500g pork shoulder, chopped into chunks 1 tablespoon sea salt 1 tablespoon cracked black pepper 2 tablespoons olive oil 1 onion, roughly chopped 10 garlic cloves 3 tablespoons red wine vinegar 800g tinned whole peeled tomatoes 1 litre beef stock 1 box lasagne sheets 300g mozzarella cheese, grated 60g parmesan cheese, grated ½ bunch continental parsley, roughly chopped Béchamel Sauce 65g butter 40g plain (all-purpose) flour pinch of nutmeg 600ml milk 1 bay leaf

Serves 6 : Cooking Time: 4 hours and 30 minutes

METHOD

Gather the oregano, rosemary, thyme and continental parsley and tie together securely with a length of kitchen string to make a bouquet garni. Season the osso bucco and pork shoulder with the sea salt and cracked black pepper. Place a large pot over medium heat and add the olive oil. When hot, add the osso bucco and pork shoulder, browning on all sides. Add the onion and the garlic. Add the red wine vinegar and scrape all of the brown from the bottom of the pot. Add the tomatoes and beef stock and stir well. Cover, bring to the boil and then reduce to a low simmer. Cook for 2 hours. Remove the lid and reduce for a further 30 minutes, stirring frequently. (You will know when dish is cooked because the meat will be tender and fall apart.) Pick out the bouquet garni, bones and any fat from the osso bucco and break up all the meat with a wooden spoon. To make the béchamel sauce, place a saucepan over low heat and add the butter. When the butter is melted, add the flour and nutmeg stirring to combine well. Continue stirring while pouring the milk into the saucepan in a thin stream until it is all combined. Add the bay leaf and simmer until the béchamel has thickened. Remove the bay leaf and set aside in the fridge. Preheat the oven to 180°C and grease an ovenproof dish with olive oil. Lay a layer of lasagne sheets on the bottom of the dish. Spoon over the ragù and top with béchamel. Add a layer of mozzarella cheese, parmesan cheese and continental parsley. Top with a layer of lasagne sheets and repeat the layers finishing the dish with a top layer of béchamel and mozzarella. Place into the oven and cook for 40 minutes. Remove and leave to stand for 15 minutes before serving.

Mushroom & Thyme Risotto INGREDIENTS

1.25 litres chicken stock 2 tablespoons olive oil 500g mushrooms, thinly sliced 5 thyme sprigs, leaves roughly chopped 1 teaspoon sea salt, plus extra for serving 1 teaspoon cracked black pepper, plus extra for serving ¾ onion, diced 2 garlic cloves, crushed 300g arborio rice 2 tablespoons white wine vinegar 30g unsalted butter 50g grated parmesan cheese, plus extra for serving flat-leaf (Italian) parsley, finely chopped, to garnish

Serves 4 : Cooking Time: 1 hour

METHOD

Heat the chicken stock into a saucepan over low heat. Cover and leave to simmer. Heat 1 tablespoon olive oil in a large non-stick frying pan over medium heat. When hot, add the mushrooms and thyme and season with the salt and the cracked black pepper. Cook until the mushrooms are browned. Then carefully add the mushroom mixture to the hot stock. Cover the stock and simmer for 15 minutes. Heat the remaining olive oil in a large frying pan over low heat and add the onions and garlic. Sweat the onions, stirring constantly, until they are soft but have not coloured. Add the rice and continue to stir, cooking until the edges of the grains have become translucent. Add the white wine vinegar and cook until the liquid is absorbed. Increase the heat to medium and using a ladle, add the hot stock to the pan, one measure at a time, ensuring the rice is being constantly stirred as it absorbs the liquid.

Low-Carb Diet NUT AND OAT GRANOLA WITH ORANGE ZEST Ingredients: 1 large egg white pinch of cream of tartar 2 tablespoons tahini 2 teaspoons stevia granules 2 teaspoons mixed spice or ground cinnamon 20g flaked almonds 30g pecans or walnuts, roughly chopped 2 tablespoons macadamias, roughly chopped 1 tablespoon sesame seeds 1 teaspoon julienned orange zest, plus extra to serve 2 cups (225 g) raw (natural) rolled oats 600ml skim milk 320g low-fat Greek-style yoghurt

Method: Preheat the oven to 170°C (150°C fan-forced) and line two baking trays with baking paper. Beat the egg white in a bowl with an electric mixer until frothy. Add the cream of tartar and beat until soft peaks form, then beat in the tahini, stevia granules and spice until combined. The mixture will be thick but not airy. Fold in the nuts, sesame seeds and orange zest. Add the oats and use your fingertips to gently rub them through the mixture until everything is coated. Spread the mixture evenly over the prepared trays, keeping little clusters of mixture together for extra texture. Bake for 15 minutes, stirring gently after 10 minutes, or until it is just starting to smell toasted. The mixture will not brown very much but will start to feel dry. Remove from the oven and cool completely on the trays. For each serving, place ½ cup (45g) toasted muesli in a small bowl and add 75ml milk. Serve with 40g yoghurt and a sprinkling of extra orange zest. Store the granola in an airtight container for 2–3 weeks.


recipes SALMON AND BROCCOLI PESTO WRAPS Ingredients: 2 pieces mountain bread (or 2 slices Herman Brot bread) 220g low-fat cottage cheese or low-fat fresh ricotta 400g tinned salmon, drained, skin and bones removed, flesh flaked 200g baby rocket leaves 2 Lebanese cucumbers, thinly sliced lengthways into ribbons or chopped 300g cherry tomatoes, halved BROCCOLI PESTO 150g broccoli florets 40g pecans or walnuts 80g avocado 2 teaspoons lemon juice

Method: To make the broccoli pesto, steam the broccoli in a steamer basket over a saucepan of simmering water for 3 minutes or until tender but still crisp. Set aside to cool. Place the pecans in a food processor and pulse until the nuts are roughly chopped. Add the cooled broccoli and pulse until finely chopped and combined. Add the avocado and lemon juice and blend until just combined. Season with freshly ground white pepper. Spread the pesto evenly down the centre of the wraps. Top with the cottage cheese or ricotta, the salmon and half of the rocket. Roll up to enclose the filling. Serve with the cucumber, tomatoes and remaining rocket alongside.

CHICKEN AND ASPARAGUS SALAD

BERRY YOGHURT JELLIES Ingredients: 1 × 9g packet lite strawberry or vanilla berry jelly crystals (Aeroplane jelly brand) 1 cup (250ml) boiling water 1 cup (280g) low-fat vanilla Greek-style yoghurt, plus 120g extra, to serve Method: Place the jelly crystals in a heatproof bowl, add the boiling water and stir until the crystals have dissolved. Stir in ¾ cup (180ml) cold water. Cover and refrigerate for 30 minutes or until lightly set. Add the 1 cup (280g) yoghurt, then whisk until the mixture is smooth and well combined. Transfer to a measuring jug, if desired,

as it makes it easier to portion. Divide the yoghurt jelly among four x 1 cup (250ml) capacity glasses, then cover with plastic film and refrigerate for 3–4 hours or until set. Serve the jellies each topped with one-quarter of the extra yoghurt.

Ingredients: 400g chicken tenderloins 2 teaspoons lemon juice 1 clove garlic, crushed 2 bunches asparagus, trimmed olive oil spray, for cooking 250g marinated artichoke hearts from a jar, halved lengthways 300g cherry or grape tomatoes, halved 200g baby rocket leaves 40g parmesan, shaved

WALNUT, HERB AND LEMON DRESSING 1⁄3 cup (40g) finely chopped walnuts 2 tablespoons finely chopped flat-leaf parsley 1 tablespoon olive oil finely grated zest of 1 lemon 2 tablespoons lemon juice

Method: Combine the chicken, lemon juice and garlic in a bowl and set aside to marinate for 10 minutes. To make the walnut, herb and lemon dressing, place all the ingredients in a screw-top jar. Seal the jar and shake until combined. Season with freshly ground black pepper. Thinly slice half a bunch of the asparagus on the diagonal and set aside in a large bowl. Heat a chargrill pan or barbecue over medium–high heat. Drain the chicken, shaking off any excess marinade, and spray lightly all over with olive oil. Chargrill the chicken for 3 minutes, then turn and cook for a further 2–3 minutes or until cooked through. Transfer to a plate and set aside to rest. Spray the artichoke hearts and remaining asparagus lightly with olive oil and chargrill for 3–4 minutes, turning occasionally until nicely charred. Cut the asparagus in half widthways. Add to the bowl with the raw asparagus, along with the artichokes and cherry or grape tomatoes. Pour over the dressing and toss to combine, then set aside for 5 minutes to allow the flavours to develop. Add the rocket and toss until combined. Pile onto a serving platter or divide evenly among four bowls and top with the chicken and parmesan.

Is good advice always GOOD

FOR YOU? I

n a sea of busyness and uncertainty we can become a vacuum for advice that will help calm our angst at uncertainty, sucking it up from any outlet that’s willing to share it - and there are plenty. I’m a self-proclaimed advice magnet. I seek it out, I spend more money on ‘helpful’ books then I should admit, and there are days that even my tea leaves seem to be trying to send me a message. The majority of times though this frenetic advice seeking is simply a cover for the discomfort I feel in the uncertainty of what’s next. The hope that someone somewhere will have the silver bullet that will rescue me from the swamp of unrest I’m currently sinking into. That’s not to say that good advice isn’t good in this state but just because you hear good advice doesn’t mean it’s good for you. As you step forward into your next thing - it might be a new venture, a new project, or even just working with a new team - you might find yourself scrabbling for advice, clutching onto what others have done as though it’s gospel. But just because it worked for ‘Susie’ doesn’t mean it will be work for you. How can you discern whether advice is good for you, and when should you run in the other direction? The following are a few guidelines that I’ve found useful to consider before you make any drastic changes.

WHEN IS ADVICE SOMETHING YOU TAKE WITH A GRAIN OF SALT? 1. When it’s unsolicited - Just because someone’s got an opinion doesn’t mean you need to swallow it. If it comes your way without you asking say thanks, pick out any gems if there are any, and move on. Quickly. 2. When it’s not about you - All of us see the world through our own lens. The friend who hates their job and starts a lobby group for you to leave yours could be an indication of the type of advice that is not actually about you. If it doesn’t feel right for you, move on. 3. When you’re hangry - or tired or at the wrong end of a bottle of champagne – You’ve need to be in the right frame of mind to take advice on board. If you’re not - defer the conversation - even for 5 minutes, reset and then come back in.

WHEN IS ADVICE SOMETHING YOU 1. When you’ve asked for it Yep, you’ve given the other person permission to share their opinion, it’s highly likely you are seeking a solution for something you think they might be a valuable contributor on. Be specific though - the ‘what do you think about my entire life’s choices?’ may not be that helpful. 2. When their expertise exceeds yours - If the other person has a deep expertise or experience in the area that you are seeking advice for it’s highly likely that this advice is worthy of your time. It might not match for your situation, but they have wisdom to pass on that could be like a breathe of fresh air in a car at the end of a family road-trip; with three teenage boys. 3. When they have YOUR success at heart - Those who actually ask you questions first, seek to clarify what would be helpful to you now, and who, at the end of the day want nothing but the best of success for you. That person is the person I’d listen to. If they tell you to back yourself, then that’s pretty good advice too.
