Vegetable Noodles - An Absolute Delight
One of the best ways to make your dish healthy and nutritious is adding your favorite veggies. You can prepare vegetable noodles in plenty of different ways with veggies or even your favorite protein! One of our favorite noodles are made by A-Sha Dry Noodle! Ingredients: 2 packs of A-Sha vegetable noodles 1 teaspoon of chopped ginger 1 teaspoon of chopped garlic (2 to 3 cloves) 1 teaspoon oyster sauce 2 to 3 finely chopped chilies 1 tablespoon dark soy sauce 1 tablespoon Shaoxing wine or Sherry wine 1 tablespoon vegetable oil A pinch of ground white paper 1/4 cup of red bell pepper (julienned) 1/4 cup of carrot (julienned) 1/4 cup finely sliced mushroom 1 cup shredded cabbage 1/4 cup bean sprouts 1/4 cup chopped snow peas 1/4 cup chopped spring onions 1/2 teaspoon sugar Salt to taste
Cooking Instructions:
In a medium sized pan bring 6 cups of water to a boil and then add vegetable noodles Be careful not to overcook the noodles. You can also keep the noodles from sticking by adding one tablespoon of oil in the water. Chop veggies in equal proportions Once the noodles are cooked, turn off the flame, drain the water from the pan and rinse noodles with cold water Add vegetable oil to a wok and heat thn add garlic and ginger to the pan and stir After a minute add chopped chilies in the wok and stir for 30 seconds Once ginger, garlic, and chilies turn brown add carrot, mushrooms, red bell pepper, cabbage, and snow peas and stir them properly for 2 to 3 minutes Add cooking wine to the wok and mix it effectively with all the veggies Lastly add bean sprouts and stir for a minute on medium flame Add boiled noodles in the wok and toss together all ingredients Once all ingredients are thoroughly mixed, add soy sauce, and oyster sauce to your liking and mix Top with chopped spring onions and stir the ingredients again for a minute
