LETTER FROM THE EDITOR I opened the front door and stepped outside – the chill of cool rain lingering in the air mixed with the aroma of dew-drenched cedar trees… the first hint of FALL. Who doesn’t love the entrance of autumn! Mother nature adorns herself in hues of auburn, forest green, and pumpkin spice and glides onto the world’s stage scented with nutmeg and cinnamon. And with her comes Halloween, pumpkin patches, hayrides, football, and October fest! In this issue we bring you brilliant bits of October, focusing on food and beverage. We have a number of fabulous restaurants in Oklahoma City, and the food review section provides you with a glimpse of local, tasty treats. And for the meals you would prefer to make yourself in the comfort of your own home, we provide you with information concerning healthy food ideas, including some great recipes. We also include articles about hotspots for a funfilled Halloween, trends in 2012 fall fashion, and décor ideas regarding color and food.

The lights begin to dim. Ladies gather around and sit along the white-tiled stage and wait for the best time of the year to start. Everything goes pitch black and quiet. All at once, the lights beam onto the runway, the music starts, and fashion icons wait patiently. During fashion week, every viewer in their polarized aviator shades gazes at each model sashaying down the runway in the new fall fashion and trends.

Fall is the “trend setter” season of the year. New and iconic designers are introduced with their new fashion lines. For fall 2012, you don’t want to miss out on these fabulous fall trends. Fashion trends recur every couple of decades, but with a twist of new detail or a combination of two trends. It may be worth cleaning out your grandmother’s closet this year to find these vintage fall pieces! Here are the top 5 “must have” trends for your closet.
Leather! The fresh smell of genuine leather always puts me at an ease. Leather is an iconic look this season around the globe. The leather jacket gives a finishing touch to all “out on the town” and evening attire. Not only are we seeing lots of leather jackets, but we are also seeing trimmed and detailed leather garments. For instance, leather piping on suiting jackets, trims of skirts, and collars of the shirt gives a woman that savvy and chic look to her outfit.
The Perfect Peplum. This look has been a tremendous hit around the fashion world for many years. The Met Gala awards in May had many actresses and designers in divine dresses with all types of peplums. Some may think that the peplum sticks out too much from a form fitting look. In reality, this look is a great match for every body type. For the petite lady who wants to look trendy, she can still put on a sleeveless jeweled collar peplum top to define her short waist. For the straight figured ladies, the peplum still defines the waist but also gives the illusion of being taller. Peplums are not just for tops; they can also be on a skirt or a dress, which provides a fun and flirty look. From a detailed peplum long gown to summer tops and now on jackets, you are sure to see this classic look recycling!
Color block. This trend was recreated in this past spring collection with bold and bright colored pants and tops. As you transition into the colder weather and start to layer up your wardrobe, you will still see the color block idea. Instead of cropped red pants and a chambray buttonup, pair your favorite colored stretched skirt with some bright colored Hue Tights. Finally, it is Fall! It is the time of year you want to turn on your Crockpot and make some tasty, warm comfort food. The only problem is typically “comfort food” comes with side dishes that boast a high calorie count and can do a lot of damage to your waistline. Luckily, for us, fall is a great time of year for seasonal fruits and vegetables. 16

Zone, Paleo, Weight Watchers, and Atkins are just a few more popular terms for styles of eating. While we use the word “diet” a lot in the gym, we are not referring to a change in eating habits for the short term. “Diet” refers to a way of life. My “diet” is a way of eating that I try to stick to at least 80% of the time. We want to focus on high quality food with high quality ingredients. There is almost no better time to find high quality food than right now.

Mashed Cauliflower
The word carbohydrate has developed a bad rap. Lots of people claim to be on a low-carb or no-carb diet. The truth is: fruits and vegetables are carbs. They are good for you and should be a staple on your table. We all need fruits and vegetables in our diets. They provide powerful antioxidants, vitamins, and energy. It is best to get these things from a real food source rather than a pill or powder.
With that said, don’t be afraid to fill at least half your plate with some seasonal carbohydrates in the form of vegetables! Cauliflower may not sound that exciting, but with a few modifications, it can be a
Ingredients: 1 head fresh cauliflower 1 cup chicken stock ¼ tsp fresh cracked pepper 2 cloves garlic, crushed Directions: Cut cauliflower head into small chunks. Place all ingredients in a medium saucepan or Dutch oven and bring to a boil. Reduce heat to medium heat, and cover, allowing cooking for 20 minutes or so until the cauliflower is very tender and easily mashed with a fork. Carefully pour cauliflower and all ingredients into the bowl of a food processor, or keep in pan and use in an immersion blender or hand mixer to mash. If the mashed cauliflower seems too dry, add in some additional chicken stock. (The recipe is from Paleo Comfort Foods: Homestyle Cooking for a Gluten-Free Kitchen by Julie and Charles Mayfield) No fall meal is complete without dessert. Yes, I said dessert. Being smart about what goes on your plate doesn’t mean you can’t enjoy the fruits of fall... literally! Warm desserts are a staple in many households this time of year, such as pies, SO6IX.COM

brownies, cakes, and cobblers. Anyone can still enjoy that same sweet satisfaction, but in a more thoughtful way. Apples are a perfect fall food. They are in season and taste delicious in multiple types of dishes. Baked apples are a dish that I grew up with, and to this day they leave my sweet-tooth satisfied.
Baked WalnutCinnamon Apples Ingredients: 4 apples 1 c raisins 1/4 c walnuts 1/4 tsp cinnamon 1/2 tsp natural vanilla extract 1/2 c water Directions:
Heat oven to 375 degrees. Remove core and pierce apples with a fork in several places around the center, to prevent them from bursting. Mix raisins, nuts, cinnamon, and vanilla in a small bowl. Fill center of each apple with mixture. Place in a glass baking dish and pour water into pan. Cover with foil and bake for about thirty minutes or until tender. Serves four. The moral of the story is that you can still enjoy fun foods with a few easy tweaks and modifications. The local farmers market in your town is a perfect place to stock up on seasonal goodies. Be adventurous and try new things. If a plentiful amount of vegetables and seasonal fruits are a part of your diet, then you are well on your way to falling in love with healthy eating. 18

It’s that time of year again; the cooler weather is here, and there’s candy for the taking. You can be anyone or anything you want with a visit to the metro’s many costume shops. This season we have six tips that will make your Hallows Eve the funkiest yet. Ghouls Gone Wild You don’t want to miss the 6th annual Gazette’s Halloween Parade on Saturday, October 27th. The action starts at 7pm, hustling you through midtown and downtown. Last year this parade had over 60,000 attendees. 20

A concise and easy-to-understand parade route is available on the Oklahoma Gazette’s website. Get up close and personal this year: for twenty-five dollars, you can join as a walking group, marching band, or fly your freak flag on your very own bicycle. If you want to spend fifty dollars, you’re welcome to put a motorcycle, float, or car into the fray. Remember: No one under eighteen is allowed in the parade march. You can always volunteer as well. You’ll get a free t-shirt and make many new friends helping out. Route marshals and crews for assembly and shutdown are needed.

Cimarron Opera’s Villains Weekend On Friday, October 5th and Saturday, October 6th, the Cimarron Opera presents to you its Villains Weekend. Starting at 7pm, the show is running at Davenport’s, near the Couch Restaurants complex on the OU campus corner. Come to 344 4th Street in Norman and be beguiled by professional actors and singers as you’re spooked through the creepy, crafty evil of opera. Tickets are $18 and $15 for students and seniors. Be advised that space is limited. Children’s matinees on October 6th and 7th begin at 2pm at Davenport’s. Wolves and Witches, A Not-Too-Scary Children’s Matinee, is an interactive show featuring the

Downtown Library After-Dark
Bright Night of Not-SoFrightening Fun of Harry Potter
Who doesn’t remember an old fashioned lock-in fondly? The downtown library at 300 Park Avenue will again be hosting a spookfest for the kiddies. There will be pizza, snacks, video games like Guitar Hero and not-too spooky seasonal movies. This event will be chaperoned by library staff. The event is for children from 11-17. On October 26th, the Science Museum of Oklahoma will present one of their best “Bright Night” events. Your children can spend the night creating slime, turning water into imaginary blood and many other cerebral experiments. Major Dan Rooney, an F-16 fighter pilot in the Oklahoma National Guard was returning home from a second tour-of-duty in Iraq. When his plane landed, the captain of the aircraft announced that on board were the remains of a Corporal Bucklin. Out of respect for his heroic service to our country, the captain asked the other passengers to remain on board and in their seats while the casket was deplaned. The casket was taken off the aircraft and covered in a flag. 24

Corporal Bucklin’s twin brother walked to meet the rest of his family. Major Rooney looked back to the cabin and noticed the other passengers were up, disregarding the captain’s request. Rooney could not put Corporal Bucklin’s young son Jacob from his mind. Thinking of his own wife and children, he made a commitment right then to devote himself to bettering the lives of spouses and children of veterans who never make it back or come home gravely wounded. In 2007, Major Rooney founded the Folds of Honor Foundation, a nonprofit 501C-3 charitable organization dedicated to helping the loved ones left behind by war. The dependents of our service men and women are often invisible victims. Family members pay a high price mentally and emotionally, but these wounds aren’t as easy to see as physical pains. A million spouses and children of the deployed have had their lives forever altered by the death or severe injury of a soldier. Ninety percent of the children of soldiers do not qualify for federal scholarships. The Folds of Honor Children’s Scholarship Fund strives to make certain that no military family is left behind without the necessary resources to begin to heal and move on to a better life. Scholarships are available for K through 12 aged children of service members killed or who have come home 90-100% disabled from the combat zones of Operation Iraqi Freedom, Operation Enduring Freedom, and Operation New Dawn. The CSF scholarships help cover tuition, tutoring, uniforms, textbooks, afterschool programs, and approved summer camps. There is also an immediate use scholarship for children and spouses pursuing higher learning at a two or four year institution. These gifts are yearly, and
must be reapplied for annually. Over 4,200 PGA facilities volunteered for the Fifth Annual Patriot Golf Day last year, and this Labor Day turnout was even greater. In 2007, Major Rooney asked golfers to aid FHF by adding one dollar to their greens fees. His request resulted in over one million dollars in donations. In the past five years, golfers have raised 12.8 million dollars on behalf of veterans’ families. Patriot Golf Day receives support from the PGA and the United States Golf Association. The Rose Creek event in Edmond was a roaring success. On October 5th, Gallardia opens to the public for the Fairways for Freedom Gala. Renowned golfer David Feherty will be the speaker. At Rose Creek, there will be a Twin Peaks fundraiser on October 8th to benefit another service organization, Warriors for Freedom. The charity hopes to raise close to $150,000 with sponsorship from beer giant Budweiser. Partnering with the Folds of Honor Foundation and Warriors for Freedom, Budweiser continues its long commitment to the brave members of the armed forces to whom we all owe so much. This baseball season, Budweiser will unveil its “Walk-Off a Hero” campaign. Budweiser will give $5,000 to FHF for every walk-off win. This generous gift is a boon for FHF, allowing the charity to expand its services to more families in need. I had the honor of speaking with Major Ed Pulido today while he was on his way to Muskogee to speak with some POWs. Now the Senior Vice President of Public Relations and Military Affairs for FHF, Ed became involved with the service group in 2008. His two young daughters were SO6IX.COM

both awarded scholarships. Pulido has a book coming out this year titled Challenge, Triumph, and Change. “It’s the Mr. Ed story,” he told me humbly. A movie Major Pulido worked on is now showing in 1,400 different theaters nationwide. In the film, Last Ounce of Courage, a veteran rallies his small town to deep patriotism. Pulido founded the service organization Warriors for Freedom, whose mission is “to be America’s resource dedicated to supporting and improving mental, physical, and holistic services for our nation’s active military, veterans and their families.” Both the FHF and WFF fundraisers are underwritten with the generous help of corporate sponsors like Budweiser. “We couldn’t do it without Budweiser,” said Pulido, “they’ve given 2.5 million to the cause thus far and have provided over twenty $5,000 scholarships for our members to date.” Go to the websites below and learn more. “I could sit here for hours. What a nice atmosphere!” Have you ever been to a restaurant and had this thought? On the flip side, you might also have been to a restaurant and thought, “ I really need to get out of here!” Besides the obvious factors of cleanliness and food quality, design actually plays a major role in a customer’s dining experience, and restaurant owners spend a lot of time and money to get their desired effect. Warm color pallets (reds, golds, oranges) are said to increase hunger, and are often used in food chain logos and designs. Fast food chains use quite a bit of yellow in their designs. Research shows bright yellow not only makes customers hungry, but it also makes them want to hurry! Cool colors (blues, greens, purples) evoke knowledge, calmness, and tranquility. Because of the calming effect of some blues, a person’s heart rate and appetite can actually decrease. Use these color palates in rooms you need for relaxing or in the places of lingering conversation. 40

To translate these concepts into your home, try using the warm colors in the areas you plan to use as hubs for entertaining, such as the kitchen. A warm color pallet is sure to evoke an energetic dinner party. You’ll be subliminally encouraging your guests to have fun, eat, and stick around. Use cooler colors in your bedrooms and bathrooms for a calming effect. Every designer knows the layout of a room is just as important as the items in it. For your kitchen, the most effective layout is a carefully calculated representation of the “triangle theory.” Position the fridge, sink and stove in as close to a perfect triangle as possible. This allows for efficient and easy cooking, and gives the kitchen the correct design flow. If you’re planning a special event or dinner party but have no time to repaint, fear not. Use your party’s color
theme to translate some of the same desired effects. The color scheme of your event can create an elegant party on even a limited budget. Choose one color you love in multiple shades or saturations. For example, if you have a red tablecloth, choose a deeper red for flowers in the centerpiece, or even a dark orange for the chargers around your plates. Next, choose one metallic (copper, bronze, gold, silver) and one dark color (black, brown, deep purple) for accents. Your combination of various hues, a metallic, and a deep color will create the texture and depth your guests are only used to seeing in magazines and upscale banquets. Christi Watson of the Vapor Hut in Moore suffered from asthma for years. Like many smokers, she just wasn’t having any luck quitting. SAM BARNETT Sam Barnett is the owner/operator of Twin Peaks Restaurants. He currently operates two locations in Oklahoma, one in Oklahoma City and another in Tulsa. Sam has almost 20 years of experience in the restaurant business: he has opened 19 restaurants, served as the director of operations for a 100 million dollar company, and directed 26 restaurants in 11 different states. Sam has provided jobs and managed over 4,000 employees at any given time. His extensive experience and professionalism teamed with a fantastic concept in Twin Peaks has led to tremendous success in both Oklahoma locations, which in turn led to rapid expansion of the concept. Sam is currently expanding the concept to Little Rock, Fort Smith, and Fayetteville, Arkansas, as well as two more locations in Oklahoma City and another location in Tulsa. Sam also understands the importance of giving back to the community and helping people where possible, hence, his considerable monetary contributions and volunteerism with such great charity organizations as Folds of Honor, Warriors for Freedom, Gum Ely Foundation, Carry the Flame, and Pros for Vets. On October 8th, Twin Peaks is putting on a huge charity golf tournament at Rose Creek Golf Course benefitting Warriors for Freedom and the Gum Ely Foundation, and 100% of the proceeds will go directly to the charities. Sam is an avid outdoorsman who enjoys hunting and fishing every chance he gets, as well as playing golf, working out, and riding his Harley. BRITTANY LEEMASTER Brittany Leemaster is the Director of Private Events and Marketing for Mickey Mantle’s Steakhouse in Bricktown. Known for its exceptional cuisine & service, Mickey Mantle’s Steakhouse opened its doors in 2000 and has since become one of the hottest spots in OKC frequented by celebrities, athletes, and the business crowd as well as stylish locals. Brittany joined the Mickey’s team in 2004, while attending the University of Oklahoma, and since then she has become known as “the face” of Mickey Mantle’s Steakhouse. Her passion for marketing and customer service planted her into her current position, and to this day she continues to develop a reputable brand for Mickey’s. Brittany is also an experienced event planner and keeps busy executing private events, special occasions, networking events, & dinner programs for the restaurant. Brittany serves as the liaison between Mickey’s and the general public, is highly involved in the OKC community through civic groups such as Bricktown Rotary, and has created a strong rapport for the restaurant with its guests throughout the metro. Brittany continues to think of innovative and exciting ways to market and promote Mickey Mantle’s Steakhouse

standards for the entire company. As a devoted professional, she also finds time to travel to Texas to help promote their sister restaurants, Kirby’s Steakhouse and Woodfire by Kirby’s.
