Happy New Year!

New Year’s is always one of my favorite times. While other holidays help you enjoy and treasure what you have in your life, New Year’s is about making changes. Whether you have health and fitness goals, personal life changes, or new financial moves to be made, it is an exciting time of improvement for us all in many different ways. While I have big fitness goals I want to accomplish this year, more traveling, and of course financial ones as well, my biggest focus for 2020 is to be more open and vulnerable in my personal connections with people. Many of us live our lives so closed-off and protected out of fear and anxiety that we miss out on wonderful experiences. At least, I know I do, and I hope my New Year’s resolutions help change that for me, even if it’s just a little bit at a time. We have an awesome issue for you this month! First of all, the Okie Honor Award winners. So many votes were cast this year, and I’m truly happy for and proud of all the winners. We watched throughout the final top 5 voting as businesses and individuals worked hard to be seen as #1 in their field by the local community. That’s exactly what these awards are all about: local businesses and people being shown appreciation and respect for all their hard work by the people they service every day. So a big congratulations to every one of our Okie Honor winners and runner-ups this year!

In accordance with New Year’s resolutions, we made the focus of this food issue Healthy Eats at all our favorite local restaurants. It’s not always easy to eat healthy when you go out, but we have given you some pretty great options. A special shout-out to our new lead photographer, Ms. Laynie Pritchard. This is her first issue shooting with So6ix Magazine, and I have to say she absolutely knocked it out of the park. I also want to say thank you to our new art director, Kristen McGregor, and brag about what an awesome job she has done this month. She has been the lead graphic designer at So6ix for some time now, and she took on a whole new batch of responsibilities with her promotion to art director this month. She has been nothing short of phenomenal. I’m very proud and thankful for the awesome team at So6ix and couldn’t be more excited to work with them in 2020. Thank you,

miocoalition.com There are so many great things about Oklahoma, and one of those is how many delicious, original and wonderful Okie Made foods there are. You’ll find something for every taste bud. These local owners are putting their heart and soul into the foods they know and believe in. Buying local helps our state continue to grow, keeps our communities unique and supports these local makers. As always, we encourage you to buy local when and where you can!

WARM POTATO SALAD

FRIED PORK CUTLETS

INGREDIENTS

INGREDIENTS

INSTRUCTIONS

INSTRUCTIONS

1. Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 30 minutes. Drain, cool and slice thin.

1. Season the pork with 1 tablespoon of the dry marinade.

• 8 or 9 russet potatoes, medium-sized • 6 slices bacon • 1 cup white onion, small dice • 2 tbsp flour (Shawnee Mills) • 2 tbsp white sugar • 2 tsp kosher salt • 1/2 tsp celery seed • 1/4 tsp cracked black pepper • 3/4 cup water • 1/3 cup vinegar (apple cider preferred, but white distilled will work)

2. Place bacon in a large, deep skillet. Cook over medium-high heat until evenly browned. Drain, crumble and set aside, reserving drippings. 3. Sauté onions in bacon drippings until they are golden brown. 4. In a small bowl, whisk together the flour, sugar, salt, celery seed and pepper. Add to the sautéed onions and cook and stir until bubbly, then remove from heat. Stir in water and vinegar. Return pan to the stove and bring to a boil, stirring constantly. Boil and stir for one minute. Carefully stir bacon and sliced potatoes into the vinegar/water mixture, stirring gently until potatoes are heated through.

• 8 thin pork cutlets • 2 tbsp Daddy Hinkle’s dry instant marinade • 1 cup flour (Shawnee Mills) • 1/2 cup canola oil • 1 tbsp unsalted butter • Parsley and lemon (for garnish) • 1 packet brown gravy (Shawnee Mills)

2. Combine flour with the rest of the dry marinade and set aside on a plate. 3. Heat canola oil over medium-high heat. Add butter. When butter is melted and the pan is hot, add pork in batches so as not to crowd the pan. 4. Cook for 2-3 minutes on the first side and 1-2 minutes on the other. 5. Remove from pan and set on a plate or wire rack. Garnish with parsley and lemon. Serve with warm potato salad and Shawnee Mills brown gravy.

ENJOY!

Q: Can I expunge (seal) my criminal record?

A: Most likely you are eligible to file for an expungement of a criminal record. It depends, however, on the type of offense you were convicted of and the amount of time that has passed since your conviction. Cases that have been dismissed or in which you were acquitted after trial are eligible right away for expungement. Some misdemeanors are eligible right away as well. Violent crimes are generally not expungeable without a pardon from the governor.

Q: How do I go about the process of expunging my criminal record? A: The expungement statute in Oklahoma (22 O.S. 18) recently changed for the better and allows for more offenses to be expunged. However, the process requires the assistance of a knowledgeable attorney to ensure it is done correctly. My office handles many of these matters, and all it takes is a phone call to set up a free consultation to review your record and see if you are eligible. The entire process from start to finish takes about 6 months.

Q: What happens once the case is expunged?

A: Once an expungement order is signed by a judge, the judge will order the OSBI, any local police agencies involved in your arrest, and the local court clerk for the location of your offense to completely seal any/all records pertaining to your arrest or prosecution so that nothing is available to any public background checks.

MEET ACE!

Owner: Leigh Aicher & Michael Hale This inquisitive ball of fluff loves meeting new people and saying hello! Ace is a Maltipoo who just loves his Fromm Grain Crunchy O’s and Vegetables. He is very friendly and doesn’t shed, so cuddles are a must from this sweet boy. Ace is a very smart pup – his favorite trick is falling to the floor when you say “Bang, bang!” He also likes to play dress up in costumes and clothes, which will come in handy when he becomes a therapy dog one day. Don’t hesitate to stop and say hello to Ace if you see him prancing about!

guide

Eating healthy doesn’t have to be overly complicated, and calories don’t always need counting. Here’s a great, easy guide to get your healthy eating habits started!

P r e pa r e Meals

Cooking ahead of time and prepping to-go containers or bake-ready pans will help you take charge of what you are eating.

Make Small Changes

Begin replacing unhealthy foods in your diet with healthy alternatives. Try swapping a small bag of chips for a banana or apple at lunch.

Read Those Labels

Check for hidden sugars and unhealthy fats. Some foods claim healthy eating while the labels say otherwise.

Drink Wat e r

KETO BERRY SMOOTHIE INGREDIENTS:

• • • INSTRUCTIONS: • •

1 1/2 cups frozen strawberries 1 1/2 cups frozen raspberries, plus more for garnish (optional) 1 cup frozen blackberries

• • •

2 cups coconut milk 1 cup baby spinach Unsweetened shaved coconut, for garnish (optional)

It sounds simple, but drinking the proper amount of water each day will help your body flush out waste and toxins and leave you feeling healthier all around.

Choose M o d e r at i o n

A common unhealthy habit is eating too much, whether it’s snacking or having large meal portions. Cutting back and eating in moderation will help you on your path to healthy intake.

In a blender, combine all ingredients except for coconut. Blend until smooth. Divide between cups and top with extra raspberries and coconut, if using.

concoction. The Manhattan is the perfect spot for an after-work drink or weekend get-together with friends. They label themselves as the ‘neighborhood bar in Downtown OKC,’ and it’s certainly a fitting description. The friendly staff are very attentive and were happy to steer us in the right direction with the menu. Their Famous Rococo Crab Cake tantalizes the taste buds with a perfect mix of both sweet and savory and a generous serving of crab pieces. The dish is presented with the perfect amount of breading and served with a light salad topped with a creamy balsamic dressing. If you love the mayo sauce, as we did, you’ll want to ask for a bit extra, as it’s served with a light drizzle. The New England Lobster Roll was perhaps what we were most excited to sink our teeth into. The remarkably fresh meat and lightly toasted roll complement each
