L E T T E R F R O M T H E S TA F F Happy July! We are completely immersed in summertime, and my-oh-my, is it feeling fine! Okay, sure, I could do without the 95- to 100-degree heat, but in all I honestly wouldn’t trade the summer nights, pools, eats, activities and events galore. It’s one of the best times of the year. Whether you’re seven or seventy, there’s a different kind of feeling during summer, almost like a summertime freedom – even if you are post-grad and working 40+ hours a week. Needless to say, I love it. You know what I love almost as much? This food issue! Food bonds us all. It’s a conversation piece, a time to count our blessings, a reason for making new friends, a provoker of laughter and reminiscing, and a way to show your love. There is joy in food. This issue was a complete delight to put together, from beginning to end. Maybe it was because of the new wonderful people I met, and seeing the passion behind what they do, and maybe a little bit of it was for the fact that I was able to taste delicious food almost every day for two weeks! That’s never a disappointment. Our Eat Local spread is a combination of restaurants that are locally owned and operated

and/or use local ingredients in various dishes on their menus. I love that it’s the new “thing” to be all about local products here in Oklahoma. It’s so important for cities to support their hardworking and dedicated citizens. I hope you’ll try one, two or all of these spots and give a little back to those who are giving a lot to us. July is a month full of activities across the state. We hope you’ll (safely) celebrate our freedom, the summertime heat, time spent with friends, and food! BACKYARD Watermelon Mojito Credit: callmepmc.com INGREDIENTS: • 2 cups watermelon • 12 mint leaves • 1 cup ice • 2 oz rum • 1 lime, cut into wedges • Fresca soda (can substitute tonic, club soda, Sprite, 7-Up, etc.) • Watermelon, lime and mint for garnish

INSTRUCTIONS: 1. To a shaker, add watermelon, mint, ice and lime wedges and muddle, crushing the ice and lime to release flavors. 2.

Add rum and shake.

Fill glasses with ice and pour half full with watermelon mixture. Finish filling glass with Fresca and stir to combine.

Garnish with watermelon wedge, mint stem and/or lime wedge.

TIPS & TRICKS Dishes: Keep It Easy

No one loves doing loads of dishes during or after a get-together with friends. First and foremost, it takes away half the fun, and who wants to slave away for days on end washing up dishes? Stick to paper or plastic! You don’t have to do plain white. Stop by your local party store, like Party Galaxy, for a fun pattern or a bright floral, and pick up colored napkins to match. Oh-so-trendy! 10

Smoked Salmon and Cream Cheese Cucumber Bites Credit: bakerbynature.com Cool, creamy and delicious! What more do you need on a summer day? We just can’t stop with the personal bite-sized servings. INGREDIENTS: • 2 English cucumbers, peeled and cut into 1” rounds • 1 pound smoked salmon, cut into bite-sized pieces • 1 8-oz package cream cheese, softened • 3 tbsp fresh dill, chopped • 1 tbsp horseradish • 1 tbsp heavy cream (optional) • Toothpicks or tiny party forks INSTRUCTIONS: 1. Place cream cheese, dill, horseradish and cream in a large bowl. Beat until well combined. 2. 3.

Spread 1 teaspoon of cream cheese on top of each cucumber slice, then top each slice with a bite-sized piece of smoked salmon. Insert a toothpick down the center to keep in place. Serve immediately, or keep in refrigerator until needed.

Fill tall frosted glass with crushed ice and add the juice. Top each glass with a scoop of sherbet and serve.

Don’t stop at just the table – if you have trees or a nearby surface, decorate that too. A cost-effective decoration tip: Grab bandannas in your color theme. Fold them diagonally, connect them by knotting the corners together, and hang. So simple, and often you can find bandanas at your local craft or dollar store for $1.

People dig individual, personal-sized food, so why not serve easy eats at your backyard bash? This one is so fresh and summery! INGREDIENTS: • Fresh mozzarella balls • Prosciutto • 1 ⁄2 pound salami, sliced thin • 12 oz jar roasted red peppers • 6 oz can black olives • 1 bag leaf lettuce or mixed greens • Skewers • Balsamic vinaigrette INSTRUCTIONS: 1. Alternate ingredients on the skewers. The ingredients are totally customizable to your preference. 2. Drizzle with balsamic vinaigrette, or serve with dressing on the side for dipping.

This is almost too easy … why didn’t we think of it sooner! Who likes bugs flying in and around their drink while they’re trying to enjoy the great outdoors?

NO ONE. Simply take a cupcake liner and turn it upside down over the lid of your drink. Using a straw? Poke a hole so the straw can slide through. It really is that simple.

TIPS & TRICKS Berries as “Ice”

No one enjoys a watered-down cocktail or flavored drink. Make your drinks as watered-down-proof as possible by freezing fruit that goes with the drink flavor and using it as ice cubes. For a mojito, try throwing in a bunch of frozen blueberries, or for a lemonade, throw in a few frozen strawberries or raspberries to complement the lemony flavor.

DIY food and drink bars are all the rage right now, and quite frankly, we can’t get enough. Ice cream just goes hand-in-hand with a warm summer day or evening. This simple setup lets your guests enjoy their ice cream how they please, with as many or as few toppings as they want.

WHAT YOU’LL NEED: • Ice cream • Cups, bowls or mason jars • Chocolate syrup & caramel syrup • Spoons • Toppings: candy, sprinkles, fresh fruit, whipped cream, nuts, dried fruit, etc. INSTRUCTIONS: Set up by placing everything on an easily accessible table. Put the toppings in individual bowls with spoons. Make sure the ice cream is kept cold enough so that it doesn’t melt. You might want to keep it in a bucket surrounded with ice.

INGREDIENTS: • 8 oz mixed berries (raspberries, blackberries, etc.) • Juice of 1 lime • 3 1⁄2 tbsp sugar • 16 oz Greek yogurt • 1 ⁄2 cup + 2 tbsp coconut milk (with cream) • Big pinch of salt 1. 2. 3.

INSTRUCTIONS: Mix together the berries, lime juice and 1 tablespoon of sugar. Let sit for 10 to 15 minutes, then mash roughly with a fork. Set aside. In a separate bowl, mix together the Greek yogurt, coconut milk (with cream), 2 1⁄2 tablespoons sugar, and salt. Fold in the berries, juice and all. Fill ice pop molds and freeze for about 30 minutes to an hour, then insert the ice pop stick halfway. Freeze until solid, about 4 hours or overnight.

PUPPY OF THE MONTH Great Dane We introduce to you … the mini horse! Oh wait, it’s just a Great Dane. This is one of the largest dog breeds, but you could call them gentle giants. The Great Dane is an extremely sweet and affectionate pal to have around. They love to play and are oh-so-great with children. However, their height and weight isn’t for everyone. You probably know this 42-year-old superstar from Los Angeles, California for her acting in famous films like “Shallow Hal,” “Proof,” the “Iron Man” saga and “The Avengers.” Paltrow was also married to infamous Coldplay lead vocalist Chris Martin for 11 years, until they announced their separation in March 2014. Paltrow has always voiced her opinion on being healthy and eating right, but she’s come much more into the spotlight for this in recent years, as she started her own lifestyle company and published two cookbooks. This year Paltrow gained some support, but also backlash, over her challenge to eat healthy and wholesome food for a week on $29 in food stamps. She only made it four days before breaking, but her perspective has been forever altered by how difficult it was to eat wholesome and nutritious food on that kind of budget. She made things like black bean taquitos, black bean cakes with grilled corn salsa, brown rice kale, and roasted sweet potato sauté with poached eggs. Her lifestyle site, goop.com, showcases everything from shopping to traveling, and includes tons of great food articles on topics like how to cook a proper egg and why fermented foods matter. Is it possible to fall in love with a 65,000-square-foot golfing entertainment facility? Because we just did. So much, in fact, that we might just marry it! Okay, okay, just kidding, but in all seriousness, we could not be happier that Topgolf has finally branched into Oklahoma City and is gracing us with its greatness. Topgolf opened over Father’s Day weekend in June and business has been booming. This is the 17th location for the company. Topgolf OKC is comprised of 102 climatecontrolled golfing bays, a rooftop terrace including bars, games, and fire pits, a full-service restaurant and over 3,000 square feet of private event space. Each bay is equipped with state-of-the-art technology with high-definition flat-screens, interactive touch-screens for player scores and with seven competitive games, comfortable chairs and couches, and complimentary Topgolf golf clubs for both men and women. This eliminates the hassle: all you have to do is bring yourself and you’re good to go. However, you can opt to bring your own clubs if you prefer! Topgolf has an app available for free download that allows users to change the channel on the TV in the bay, access their personal game history, view leaderboards, and check out upcoming events, news, offers and so much more. Honestly, we could go on and on about how great Topgolf is. For years now, Oklahoma City has really been making headway in becoming a fantastic entertain-

ment destination for all ages and interests, from the food scene to live music to sporting events. Topgolf is an entertainment destination that houses many genres of activities under one roof (a very large roof). Ladies, don’t think this place is just for the men, because that couldn’t be farther from the truth. There is something here for everyone, at any age (if you can stand on two feet). We spoke with Topgolf OKC Director of Operations Jonathan Buckley, and he explained that more than half of their guests actually describe themselves as non-golfers. It is really significant that such a place can introduce people to the sport who may otherwise never have played! It keeps getting better: Topgolf OKC created 450 jobs for the metro and is giving many people really great career opportunities. If you’re not ready to take a swing at golfing (pun intended), then come for the food. They’re serving up fun creations like Mushi (Mexican sushi), the Mac Daddy Burger (a juicy burger topped with mac and cheese) and Injectable Donut Holes. (Yes, it’s okay to play with your


food!) There is a wide variety of options, and they’re made from only the freshest of ingredients, so you definitely won’t be disappointed. This is a spot we’re really, really excited about. We’re excited for the customers who will make memories here with their friends and family. We’re excited for the newbies who will discover a new love of golf, for the new careers being made and for the countless smiles and endless laughter that are to be had here. It’s summertime, and your garden is finally starting to produce! (No pun intended). Herbs are a perfect addition to many dishes, adding great flavor and depth. EATS Tucked in the heart of Deep Deuce and not even a year old, Slaughter’s Hall is making a mark on the food scene in Oklahoma. Slaughter’s Hall is cool without trying too hard. Though it has a very rustic and minimalist feel, this sandwich shop is still cozy and quaint. I almost want to refrain from calling it a sandwich shop, because it is so much more than that. Slaughter’s Hall is easily making a name for itself amongst mac and cheese lovers and beer connoisseurs alike. This eatery is serving up delicious and interesting sandwiches along with six different kinds of mac and cheese. SIX! As if making a decision between a perfectly crafted Cuban sandwich or a big dish of mac and cheese wasn’t hard enough! They pride themselves on East Coast-style food, all while using the freshest of ingredients and sourcing locally when they can. They feature over 30 beers on draft was well as more than 60 different kinds in cans and bottles. The list is constantly changing, so it’s a fun spot to stop in after work with friends to see what beer you haven’t tried yet. This place feels comfortable yet trendy, and I love it. Don’t be fooled by the fact that they have more beers on tap than we have fingers: it’s still a family-friendly spot with great food. Our taste buds were in heaven. Each dish we tried was made completely fresh and packed full of flavor, especially the Fire Mac and Cheese! They’re known for their pastrami and corned beef sandwiches, but we wanted to give a few others a try!

INGREDIANTS Yield 6 servings

PREPARATION 1. In a Kitchen Aid or heatproof mixing bowl, beat the egg whites with 1⁄4 cup sugar until soft peaks form. Set aside.

In the meantime, in a small saucepan, combine the remaining 1 ⁄2 cup of sugar. Add 1 1⁄2 cups water and bring to a boil. Boil without stirring until the syrup reaches the soft ball stage, 230235 degrees (110 ̊ C). Slowly add the egg whites and beat until the meringue is cool and very stiff. Set it aside until ready to use.

In the small saucepan, heat up the 1⁄2 cup soy milk, but do not boil. Add the gelatin into the warm milk. Remove from heat and set aside.

4.

In an electric blender, blend the cream cheese with the warm soy milk until smooth.

5.

In the mixing bowl, beat the heavy cream until stiff.

6.

Fold the cream cheese and soy milk mixture into the meringue, then add the whipped cream and continue to fold until smooth.

7.

Pour into a martini glass or any mold you wish, then let it set in the refrigerator for 2 hours.

Once set, you can garnish with seasonal berries and sherbet as desired.

Belle Isle has been a local favorite in the community for many years now. They brew their own beer and incorporate many er local aspects into their offerings. Their Longhorn Honey Pepper Bacon Cheeseburger is made with house-made con (not many people can say they do that!) and the beef is from local cattle that is fed the leftover spent grain from the brewery. JONATHAN KRELL HEAD CHEF OF PARK HOUSE

Meet Chef Jonathan! Jonathan Krell is the chef over at the Park House, located in the Myriad Gardens. He’s serving up delicious creations from only the freshest of ingredients. We’re lucky to have Chef Jonathan and his immense talent here, as he used to be bicoastal and he’s now a converted Okie. Don’t worry though, the influences of the eastern and western U.S. haven’t left him. He grew up in Huntington Beach, California, with his Martha Stewart-inspired mother. As a child he moved around a lot, and he was able to experience a lot more than the average kid. He was exposed to great food at an early age, even eating sushi at five years old. He remembers always wanting to be a chef, as early as elementary school. He was often photographed in the kitchen or holding cookbooks, and he immersed himself in the kitchen world before he could even drive. As he got older, Jonathan decided to pursue his other lifelong passion: music. He ended up working as an audio engineer for about eight years. This was yet another time in his life when he was able to travel around a lot, but on a grander scale. He got exposed to more and more food, and he found himself cooking late at night on the tour buses with whatever he could find. Eventually the traveling became too much and Jonathan got burned out. Never being in one spot for long, he was losing touch with friends and missing his family. He decided, why not give cooking a try, if he loved it that much? He went around to all of his favorite restaurants in Philadelphia and told them he would work for free if they would teach him what they knew. After learning quality knowledge and skills, he moved on to opening restaurants with various partners. He opened an Asian fusion restaurant in Old City Philly, and eventually a second spot that was turned into a barbeque grill. He would do a little bit of everything in these restaurants. Krell isn’t afraid to get creative. He would smoke the syrup from the soda machine and serve up smoked Coca-Colas with his barbeque. Eventually Jonathan’s brother bought him a nonrefundable ticket to Oklahoma, where he was living, for Jonathan to come experience it on a little mini vacay. He quickly he fell in love with the city and moved here himself. Jonathan describes Oklahoma, now his home of eight years, as clean, laid-back and populated by genuinely nice people. Jonathan has been with Park House since they opened. The Myriad Gardens grows certain produce for the Park House when they can, making this the ultimate stop for local eating. Jonathan is proud to be here, and he loves that Oklahoma is now catching up to the big-city food trends. But at the same time, we’re kind of ahead, in our own way. Our food scene is unique and ever-growing. Just in case you were wondering, the only thing Jonathan can think of that he isn’t too fond of food-wise is lima beans. You can visit Chef Jonathan and taste his lovely creations at The Park House in the Myriad Gardens.
