Is it just me or did it feel like not that long ago we were all complaining about the frigid temperatures and how we couldn’t wait for the warmer months, especially getting closer to summertime? It’s here, its here! I’m all about these warmer days and being able to get outside and participate in different activities and adventures. I’m thinking a road trip, windows rolled down, music turned up, and soaking up the sun is much needed soon. Speaking of cars, here is our May automobile issue for you! Looking to buy a car soon? You’ll find some of the hottest cars of 2014 and a rundown of each one inside. Paul Folger, news anchor on KOCO5, is our feature of the month and he was a blast to work with. He is a car lover himself and has some great insight when it comes to automobiles. We had such a great afternoon following Paul around in “a day in the life of Paul Folger.” We were able to eat delicious hot dogs at the infamous Coney Island on Main Street, play with puppies at the wonderful Central Oklahoma Humane Society, and see
behind the scenes of KOCO. It will always be a memorable day for me and the “news nerd” in me. Now that we have the OKC Energy, I can’t wait to get out and attend a home game or two this May! If you’re in town on Memorial Day Weekend, come out to Paseo Arts Festival, it’s going to be a blast, especially supporting local art. I’m also really excited to see the Amazing Spider-Man 2 and Maleficent, both premiering this May! May truly is one of my favorite months and such a great time of the year! About me: I like the smell of rain, the touch of waves, the taste of berries, the sight of flowers, the sound of laughter, and the feeling of being fully alive.

McLaren has found a new way to streamline their already ridiculously fast cars. It's trying to get rid of the windshield wipers. Chief engineer Frank Stephenson said McLaren is investigating the use of ultrasonic waves to clear windshield of bugs and weather instead of the old clunky rubber blades, according to Apple Geek. Sound waves measuring 30kHz would be sent across the windshield, creating a force field that would stop anything from touching the glass. The glass would require less cleaning and maintenance while giving the driver a better view of the road. Similar technology is used on jet aircraft today. WHITE WATER RAFTING & KAYAKING
A $32 million Whitewater Rafting and Kayaking Center is underway in the Boathouse District on the
Oklahoma River. It is easily accessible to metro residents as well as visitors seeing as it’s located right at the crossroads of our nation on I35 and I40. This state-of-the-art adventure facility will be one of the few in the world. Fun fact: it’s being designed and developed by the same team that developed the UK’s Lee Valley White Water Centre for the 2012 London Olympics. The center will be an 11-acre area for family fun and elite athlete training, alike. Recirculating channels pumping city water will ultimately create II-IV class rapids that will be able to offer a range of experiences for those who are kayaking, canoeing, and rafting. Complete with a conveyer system to return paddlers to the top of the channel is the perfect way to provide hours of fun and entertainment for the entire family. Construction is underway and estimated for completion in 2015.

As most have noticed, the entire nation has seen a dramatic increase in *obesity rates over the past few decades. More shocking than that, Oklahoma has rapidly made the jump from the bottom to the top of the obesity charts in one of the quickest rises in history. As of 2013, Oklahoma ranks sixth in the nation for obesity. A staggering 32.2 percent of adults are obese in Oklahoma. The numbers don’t get much better for the children either, where 28.2 percent are considered obese. As many know we are a state that relies heavily on vehicle transportation from point A to point B, instead of say, walking or biking. As a state that loves their fried food or food in general, and that wasn’t necessarily laid out for pedestrians or biking, we have to make a conscious effort moving forward to change the status quo. Whether it be becoming more active, making healthier food choices, learning to choose the right options out, or even just bringing awareness to the general public, there’s so much we can all start doing today to make a difference tomorrow. *A person is classified as obese if his or her BMI is equal to or exceeding 30.

SOUTHERN CUISINE Walking up to the restaurant that bares the name of Oklahoma City sports icon Kevin Durant, I was already impressed with the outside of the building. Its exterior design combines modern elements with a building that fits in with the surrounding buildings that make up the Bricktown district. Bright LED lights inside the sidewalk lead you all the way to the front door and past it to a beautiful patio sitting directly on the canal. The interior of the restaurant is very impressive. Everything in the restaurant is very modern and has the look of an upscale restaurant combined with elements of a New York nightclub. I was graciously treated to a tour of the restaurant from the general manager who was obviously very proud of his restaurant and for good reason. He took me to Kevin’s private room where I was told he comes for dinner after each home game and usually with a few of his Thunder teammates. Its a beautiful banquet room located in the northwest corner of the restaurant and is also available for private parties and has its own full service bar. He then showed me to the wine cellar in the center of the restaurant. Its a very impressive 2 story cellar that glows in Thunder blue and stocked with a wide selection of wine and champagne. I was very surprised to find out the original plan was for this area to be Kevin’s private table. The main portion of the restaurant is divided into the dining area and the bar area. The bar is lit in Thunder blue LED lights and surrounded by a room full of flat screens. I was able to try an wide range of menu items. I started by choosing two popular starters recommended by the waitress, Deviled Eggs with Smoked Trout as well as Chicken Wings. The Deviled Eggs had the classic flavor and were in a satisfying portion. The Chicken Wings were phenomenal. Using only wings and not drumsticks, they were powder-seasoned in a lemon pepper Parmesan that was absolutely delicious. One of the entrees I sampled was the Blackened Stuffed Catfish, which is a generous fillet that is stuffed with jumbo lump crabmeat and shrimp medley. It was cooked perfectly and had a pleasant combination of flavor. Another entree selection was the Fried Chicken and Waffles. This popular southern dish is done right at KD’s. The fried chicken has a delicious classic batter that is well suited for the sweet and savory combo. Finally, off the dessert menu came out Peach Cobbler and White Chocolate Cheesecake. The cheesecake was delicious and I was really enjoying it until I tried the most amazing Peach Cobbler I’ve ever tasted. It was nothing short of amazing and topped off the whole experience.

ITALIAN SAUSAGE & SPINACH CANNELLONI WITH GLUTEN-FREE PASTA For the filling: 1 c. ricotta cheese 1/3 c. shredded parmesan cheese ½ c. fresh baby spinach, cooked and excess water removed ½ c. Italian sausage, cooked, fat drained 1 tsp. garlic, finely chopped ¼ c. yellow onions, small diced 1 ea. whole egg pinch kosher salt
For the pasta: 1 ½ c. garbanzo bean flour 2 ea. whole eggs 2 ea. egg yolks 3 fl. oz. olive oil 3 fl. oz. water
Make sure the spinach has been cooked and well drained to remove any moisture; spinach will need to be squeezed to remove all excess liquid. Mix together all filling ingredients. Once filling has been prepared, place in piping bag. Cut large opening in tip of piping bag – there is no need to use a pastry tip for this. Incorporate all ingredients for pasta in stand mixer using dough hook attachment. Once dough has come together (may still appear dry in spots – that’s okay!), remove from mixer bowl, knead a few times to incorporate if necessary, and place onto floured surface (granite or marble work best), divide into 4 pieces. Working with one quarter of the dough and generously floured surface, roll out dough until paper-thin. Trim up edges to make a square, then, divide into smaller squares, about 3 ½ inches by 6 inches. NOTE: This dough can be very sticky and will most likely stick to the rolling pin and counter if enough flour isn’t used while rolling out. The dough on the surface may seem impossible to remove, but using a thin metal spatula and a little patience, you can gently scrape up each sheet of dough. To Assemble: Take prepared pasta sheets and pipe the filling down the center of the pasta, lengthwise. When filled, roll the pasta over the filling, making sure the pasta overlaps on the other side to create a seam. Place finished cannelloni together in a casserole dish, making sure that all the seams are down. Cover with your favorite marinara sauce and shredded mozzarella cheese. Bake at 375 degrees for 10 minutes, or until warmed through, and cheese is bubbly. so6ix.com | MAY 2014
