Hello April! Spring is officially underway! How beautiful is this time of year? It makes me so happy to see everything turning green, everyone coming out from hibernation and all of the great local events kicking off! I’m all about activities and good food, which come to life during the spring and early summer. And you know what else comes with spring? Food Truck Season!
With spring also comes gardening season. I have a little green thumb myself. My grandma and papa were great gardeners and they taught me most everything I know. There is still much to learn, though. No matter your skill level, let us walk you through some different aspects of cultivating a garden: what veggies can be planted next to each other, how to make your own compost, and more.
We are extremely excited to be partnering with the food truck industry in Oklahoma City. Each month we’ll proudly showcase different trucks to give you an in-depth look at their delicious eats, their history and ownership, and where you can find their next appearance.
This season always excites me! It’s so full of adventure, new life, beautiful scenery and great food. I hope you take the time to slow down and enjoy each moment this spring and really soak it in. Living in Oklahoma, you know how short the season is – blink and it’s gone. I hope you have a wonderful month full of new memories and great food.
Raise your hand if you think everything is better with bacon. You’re not alone! Not only is bacon delicious, but it’s widely used in many different ways here in Oklahoma. From meals to snacks to desserts – there’s something for just about everyone. We take you through some of the city’s favorite bacon dishes this month. We’re warning you, it will make you hungry!
Love & Light,
Lauren Wright

BACON! Whether you’re a bacon fanatic or just like a little here and there, most of us can agree that any dish is probably going to be better with bacon. I’m not sure America will ever leave its bacon phase, and we’re eating our way right through it with you. Bacon comes in many different forms – thinly sliced American breakfast bacon, thick-cut pork belly bacon, and even vegan “bacon” – and there are a million different ways to prepare and serve it. We’re going to show you just a few of the delicious options around town. Keep calm and bacon on!

Depth to Cover Seed
It’s that time of year when it’s starting to get warm enough to plant flowers, vegetables and fruits. April and May is a busy time in Oklahoma for gardening. Whether you’re new to the game or have been growing your own garden for decades, there is always something new to learn to get the best results out of your efforts. We hope you find these tips helpful, but if there’s one piece of advice we can give for your gardening efforts, it’s to enjoy the process and be patient.
april •
April is a major month for planting in Oklahoma. Plant your veggies and spring flowers once the soil starts warming to roughly 60 degrees in the daytime.
•
Lay down new seedlings (as long as there are no more freezes in the forecast) and feed them with water and a balanced fertilizer.
•
Now that it’s getting warmer, you’ll want to put down your mulch to control the weeds and conserve water.
May •
If you didn’t get to it in April or the weather wasn’t good enough yet, you can continue to plant flowers in May. Make it a Mother’s Day activity!
•
May is a great time to finally purchase that hanging basket you’ve been eyeing.
•
Get rid of standing water; mosquitos start to get heavy this month.
•
If you’re growing tomatoes, you can stake or cage them now.
•
It’s time to plan annuals in the flower beds and containers!
June • • •
Monitor your garden for pests and treat the plants and soil if necessary. Try making a homemade chemical-free pesticide. At this point you should be regularly watering and fertilizing. Some veggies and fruits require a later planting. Plant those now for the second harvest.

Good Neighbors & Bad Neighbors What can be planted together and what can’t? There are guidelines to gardening, and oftentimes gardeners might not be aware that certain plants and foods do better when planted together and others do better when separated. Maybe one attracts a certain bug that might love its neighbor and harm it, or maybe one needs a lot of space to grow and will encroach on the other. It’s helpful to know who can be roomies and who can’t.

Compost is necessary for most gardens to ensure the soil is up to par and the plants are getting the nutrients they need. It’s a homemade fertilizer that is often much more organic than the chemical kind you can buy at the store. It does take a little bit of work, but you don’t have to put in daily effort.
Compost 101
What You Need: A bin, trash can, tub or boxed area you can build your compost pile in. Shovel or compost aerator
add These: NITROGEN Grass, vegetable and fruit waste, weeds, coffee grounds, manure from herbivores, eggshells
CARBON Dead leaves, hay or straw, pine needles, sawdust, shredded paper or cardboard
Don't add: X
Animal products
X Oily or fatty food X Manure from carnivores
Be Sure: To keep the pile moist. If you’re not getting adequate rainfall to start breaking down everything, you’ll need to water the pile of compost. You don’t want it soggy, but you do want it damp. To turn the pile. Around every two weeks, you’ll need to aerate the pile by turning it over and around with a shovel or a compost aerator.

My Plants Are Turning Yellow! Help! Don’t fret. Even longtime gardeners still occasionally have a yellowing plant. Here is what you should look for and how to fix it.
Overwatering WHAT TO LOOK FOR:
HOW TO FIX:
Leaves look yellow, or like the green is draining from the leaf.
Relax on the watering. Some plants don’t take as much water as you’d think. Also, this could be a problem of poor soil drainage, in which case the roots are literally drowning. Add sand to the soil, try drilling a hole in the bottom of the pot if there isn’t one already, or replant in a raised bed.
Lack of Sunlight WHAT TO LOOK FOR:
HOW TO FIX:
Leaves are drooping and it looks like the green is draining out.
Reposition your plant to get more adequate sunlight. Also, read on the package of seeds or the previous pot to see whether the plant requires full, partial or minimal sunlight.
Potassium Deficiency WHAT TO LOOK FOR:
HOW TO FIX:
Only the edges or tips are starting to turn yellow, with the center staying green.
Your plant is suffering from potassium deficiency. Try switching out your compost with a more fruitor veggie-rich waste. Bury old citrus rinds (orange, lemon, etc.) from your breakfast or dinner.
Nitrogen Deficiency WHAT TO LOOK FOR:
HOW TO FIX:
The outside of your leaf and the center veins are turning yellow.
You need to switch up your compost with something more organic. Try adding in manure or coffee grounds to enrich it.
Magnesium Deficiency WHAT TO LOOK FOR:
HOW TO FIX:
The leaves are showing white stripes along the main veins.
Epsom salts are full of magnesium. Add some to your soil, or you can use a lime.
Pest Problem WHAT TO LOOK FOR:
HOW TO FIX:
If your leaves are turning yellow and you notice little holes or actual insects on the leaves, you have a pest problem.
Spray the plant with an insect-killing soap. There are many natural remedies out there you can try before resorting to pesticide products.

Coffee +Gardening It seems like everyone is on a coffee kick right now. It’s long been a daily routine for most of us, but now they’re making coffee-flavored lip balm, coffee donuts, coffee this and coffee that. But what you might not know is that coffee is a great addition to any garden. Next time you’re about to throw out your coffee grounds or dump the leftovers down the drain, think about your garden!
Compost
If you make your own compost, add your leftover coffee grounds. They are a valuable source of nitrogen.
Mulch Leftover coffee grounds actually make great mulch. They aid in retaining water, keeping the temperature even and helping to control weeds. If you spread enough around the base of the plants, you can ensure your plants will be well insulated and hydrated during the day.
Pest Control Pesky slugs and snails love to make their way through gardens, but one thing they don’t love is coffee grounds! They strongly dislike it for some reason and tend to steer clear, so if you can keep a barrier around the plants, you could be saying goodbye to these pests.
Nitrogen Deficiency If you find that your plants’ leaves and veins are turning yellow, you could have a nitrogen problem. There’s an easy organic fix to that – coffee grounds! There’s plenty of nitrogen in them. Just spread the amount you need and voilà!
Carrots & Radishes Galore Want to produce twice as much of these crunchy veggies? Mix your carrot and radish seeds with coffee grounds and watch them flourish.

PAMPER YOURSELF
DIY FACIAL 1 Get Clean
Pull your hair back and remove dirt and oil from your skin. Gently wash your face with the appropriate cleanser for your skin type. Rinse and pat dry.
2 Exfoliate
You need to get rid of dead skin and really unblock your pores by exfoliating. Use a gentle face scrub on dampened skin and massage in small circles with your fingers. Once fully covered, rinse and pat dry.
3 Steam Time
Here you want to soften your skin and increase circulation. Soak a towel in hot water and wring it out. Check the temperature is okay, then lay it gently on your face. You can also stand above a steaming pot of water with a towel draped over your head like a tent. Never let anything too hot get near or touch your skin.
4 Cool-Down Mask
Find a mask that works for your skin type and follow the instructions on the package.
5 Moisturize
Now that your face is clean and free of dead skin cells and you have opened up your pores, it’s time to moisturize and stay looking young! Try to use a moisturizer with sun protection if you can. The less sun exposure, the better!

They’re smart and eager to please, so you should be able to train them fairly easily. EATS Fresh, fast and flavorful: just a few words that come to mind when thinking about the amazing Zoës Kitchen. This delicious Mediterranean inspired chain is growing at an exponential rate, and we’re lucky to have four metro locations, two in Oklahoma City, one in Edmond and one in Norman. We dined at the location on Memorial, near Quail Springs, and upon walking in we couldn’t help but notice the bright and colorful environment. We’re pretty sure it’s impossible to stay in a bad mood here. The staff is friendly and the food is equally fresh and bright. The menu is inspired by founder Zoë Cassimus’ family recipes and the idea of fresh-from-the-garden food, so quality is guaranteed. You can truly taste the freshness in every single bite. Even though it’s technically a fast-casual concept, every dish is made from scratch in the kitchen. Absolutely nothing is fried and there are definitely no microwaves. Zoës leans heavily on grilling, and you’ll find many different grilled lean meats and veggies paired with the freshest of fruits,, herbs and such. Gluten-free, vegetarian or vegan? You’ve come to the right place. Most of the menu is one of these or can be tweaked. It’s refreshing to have a place you can come to where you know your dietary needs will be safely met without compromising flavor or quality. You’ll love the presentation of each dish as well. They say we eat with our eyes first, and you’ll definitely notice the quality and brightness of the nutritious ingredients you’re putting in your body. Zoë means “life” in Greek, and this idea is embraced in each and every aspect of Zoës Kitchen. If you are like us you can’t get enough of Zoës, you’ll want your friends and family to taste it, too. Lucky for us, Zoës caters for parties and events of all sizes. We’re happy and full of wholesome goodness after our experience, and we can’t wait to visit Zoës again and again (oh, and again!).

Provision Kitchen, a bright eatery located in busy and ever-growing Nichols Hills Plaza, has quickly become a local favorite. Provision Kitchen offers eats in many different styles, both takeaway and dine-in, prepared from the freshest local and organic ingredients. Provision’s goal is to bridge the gap between truly healthful eating and absolutely delicious food without sacrificing convenience. You won’t find processed, packaged or genetically modified ingredients or artificial sugars here. This extra-tasty food is nutrient dense, plant focused, produce heavy, diet friendly and calorie conscious. Provision Kitchen is bringing the farm-to-table concept to life in a remarkable way with its own family-owned, USDA-certified organic farm, located just seven miles from the restaurant. If you’re looking for a place to help you get on track with a healthier lifestyle or to help with meal prep for the week, this is your place. You won’t be able to get enough!
Anchor Down has to be one of the coolest spots in town. If you’ve never been, the first thing you’ll notice is that this corn dog eatery sits inside a container park. The atmosphere is amazing! Their menu is small but nothing short of delicious. They’re whipping up interesting corn dogs with different meat options, like a chicken sausage dipped in a savory onion batter and a smoked cheddar dog. You cannot go wrong with their loaded tots. They have two options: chili cheese tots with a ghost pepper ranch drizzle, or pizza tots, smothered in tomato gravy and Swiss cheese. Prepare to be addicted. Anchor Down offers some amazing house cocktail creations to pair with your corn dog, hot dog or burger. We recommend the Rosemary, Baby! It’s refreshing and delicious, with Hornitos plata, rosemary simple syrup, grapefruit, Himalayan salt and lemon. It’s patio season, so get out there!

The Sushi Bar has been such a longtime favorite of Oklahoma sushi lovers that the owners decided it was time for a second location in northwest Oklahoma City. The Sushi Bar serves an extensive variety of sushi, sashimi and entrées. Their sushi menu is one of the largest in the city, and it’s definitely creative – and we love everything on it. They have just about every kind of roll you can think of, plus ones you definitely wouldn’t! Just to give you an idea, the Renegade Roll is tempurafried jalapeño stuffed with cream cheese, fresh salmon and cucumber, topped with sweet sauce and sesame seeds. Okay – now we’re hungry! They also do weekly specials that are always a must-try. This is a great place to celebrate an occasion or to just go out for a great cocktail and sushi roll after work.
For the last four years, La Brasa has made many stomachs very happy with its delectable international cuisine. La Brasa is located in the historic Kamps building in the heart of the Asian District. Its cuisine comprises many different flavors and culinary cultures from around the world. Chef and owner James Vu infused his traveling experiences into each dish, and you can taste the love in each one. Peruvian cuisine is full of fresh ingredients, with blends of Spanish, African, Chinese and Japanese traditions, as well as Latin influence, so we can promise each one is full of flavor and spices. La Brasa is known for their Polla a la Brasa, a whole chicken marinated for 36 hours and slow-roasted over charcoal – it’s incredible. There’s an abundance of great dishes, and you can’t go wrong with any choice. La Brasa also does brunch, and it’s a must-try!
COOKING WITH CHEF LOGAN DONNELL
BAKED EGGS
INGREDIENTS:
• • • • •
1 ½ tbsp butter 1 tsp diced shallot ½ cup diced shiitake mushrooms 1 cup baby cello spinach 1 sprig thyme
• • • • •
1 tbsp sherry cooking wine Salt & pepper 4 slices cooked bacon (not crunchy) 2 tbsp shredded white cheddar cheese 2 eggs
PREPARATION:
1.
Preheat the oven to 375°. Melt the butter in a sauté pan over medium-high heat. Add shallot and sauté for a few minutes. Add mushrooms and spinach and cook until softened, 2 to 3 minutes. Add the thyme and sherry and continue to sauté for another 2 to 3 minutes. Season with salt and pepper to taste.
2.
Line each well of the muffin pan with slices of precooked bacon. Place the sautéed stuffing mixture in each well and then add shredded cheddar cheese. Crack an egg into each well.
3.
Bake in the oven until egg whites are set but the yolks are still runny, roughly 10 minutes.
4.
Gently remove the baked egg from the muffin pan. Serve with french fries or home fries if desired. Enjoy! so6ix.com | APRIL 2017

FOOD TRUCK FEATURE
THE FLYING PIG BBQ
After spending 30 years in the healthcare business, including over 20 as a registered nurse, Dave decided it was time for a change of pace and lifestyle. Over the years, he was always the one to have big cookouts at his house. His friends and family couldn’t get enough of his delicious BBQ, and he would often hear “Please open a restaurant!” He decided to put all of his love, effort and energy into his food truck creation, The Flying Pig BBQ! There’s a reason why he and his truck have won so many awards in such a short amount of time – it’s insanely good. The basics of the menu stay the same, but they’re always adding new delicious specials, like the Loaded Avocado. If you haven’t tried The Flying Pig BBQ yet, you’ve been missing out! It’s a very active truck and you can find them operating almost daily. They are serving up some seriously tasty smoked eats that will have you finding The Flying Pig wherever it lands. 54
